Just like all De Cecco pasta, even spinach Specialities are made with the best durum wheat. The spinach used is not just any freezed-dried spinach, it is leaf fresh and tender spinach blanched and freezed straight after having been picked. The same one that the expert housewives would choose at the market. Only the best spinach can aspire to become a De Cecco ingredient. Linguine originated in Liguria, where they have become part of the gastronomic and culinary tradition. They are long pasta rods with a flat section and a varying thickness between 1,9 mm and 2,1 mm.
Linguine are excellent with oil and aromatic herbs based sauces, pesto above all. Thanks to their versatility they are also recommended with butter based sauces and with seafood and shellfish sauces. Another deliciuos combination is with "white" creamy sauces made with cream, mascarpone, soft and melted cheeses all mixed with spices, such as curry, saffron, radish and ginger.
