Indole-3-carbinol (I3C) can be found at relatively high levels in cruciferous vegetables such as broccoli, cauliflower, brussel sprouts, collard greens, kale and cabbage. I3C is produced by the breakdown of glucosinolate glucobrassicin from these cruciferous vegetables. I3C is said to be anticarcinogenic, antioxidant and anti-atherogenic.
