| Cayenne Pepper: An orange-red to dark red condiment consisting of the ground ripe fruits of any of several pungent varieties of capsicum. Also called red pepper. The pungent, red, podlike fruit of any of several cultivars of the pepper plants, Capsicum frutescens and C. annum. Cayenne pepper is a very hot ground spice derived from dried cayenne chili peppers. Cayenne is used in cooking spicy hot dishes. It is generally rated at 30,000 to 100,000 Scoville Units(SHU). The Scoville scale is a measure of the hotness of a chile pepper. These fruits of the Capsicum genus contain capsaicin, a chemical compound which stimulates heat-receptor nerve endings in the tongue, and the number of Scoville heat units (SHU) or (HU) indicates the amount of capsaicin present. Many hot sauces and supplement companies use their Scoville rating in advertising as a selling point. | |
