What is agave nectar?

The opening line of this paragraph in the article by Mr. Nagel states:

"The principal constituent of the agave is starch, such as what is found in corn or rice."

This is absolutely false. There is no starch in agave. The source of carbohydrate in agave syrup is inulin, a polysaccharide made up primarily of strings of fructose units. Starch is a polysaccharide made up of strings of glucose molecules. They are significantly different, and this difference is why agave syrup is naturally sweet.

The very basis of the argument presented by Mr. Nagel is false.

The Process

The agave plant is a succulent, similar to a cactus. The agave sweetener comes from both the Salmiana agave plant and the agave Tequilana (Blue Agave) which are both organically farmed in Mexico and certified organic by USDA approved certifiers. As the salmiana plant grows it produces a stalk called the "quiote" and when this is removed, a natural liquid called "aquamiel". The liquid is collected from the plant, while Blue agave pinons are harvested and shredded to remove the similar juice. Either can be naturally processed thermally or by enzymes into agave nectar.

The juice of the plant is not naturally sweet. The string of connected fructose units that makes up the major proportion of inulin does not have a sweet taste, but when the fructose units are separated (the process is called hydrolysis) by the addition of an enzyme, similar to digestion, or thermally for most blue agave, the syrup becomes quite sweet. That is the entire processing chain for agave nectar. There are no additives, other ingredients or chemicals in Madhava agave nectar. It is absolutely pure and organic and GMO free.

? Mr. Nagel claims that agave syrup is a "refined corn fructose" similar to high fructose corn syrup. This is absolutely false. There is no relationship between agave syrup and high fructose corn syrup in any way, including the source of the product, or the manufacturing process.

? Mr. Nagel refers to a "confidential FDA letter" from Mr. Martin Stutsman, claiming that agave is fraudulently labeled. We contacted Mr. Stutsman at the United States Food and Drug Administration, and his response made it clear that there was never a "confidential FDA letter". He did publish a public letter referenced in an FDA document as "FDA letter from Martin Stutsman to Dr. Eric

Wilhelmsen (Wilhelmsen Consulting), May 8, 2000", regarding evaporated cane juice, a topic wholly unrelated to agave syrup.

? He continued in his response to us that the paragraph in Mr. Nagel's article inaccurately reflected the substance of his comments in the document.

In fact, Mr. Nagel fabricated the entire story of the letter. Mr. Stutsman is a lawyer, not a doctor. The quotes were completely taken out of context from the document, and the quotes never referred to agave syrup at any time. Nagel goes on to further misrepresent Mr. Stutsman's intent in the published document by weaving in other inaccurate information that is thoroughly unrelated to the original document. Mr Bianchi's subsequent statements on labeling issues are false and without merit.

Mr. Nagel is clearly caught red-handed. He has misrepresented the words of a government official, lied about the facts, and twisted the information to achieve his own agenda. This strategy is repeated throughout the article.

? Mr. Nagel continues his deceptive writing by referring to a quote by the late Dr. Varro Tyler in his book, The Honest Herbal. The first line of the paragraph is a direct quote from the book. Nothing else in that paragraph remotely resembles anything else found in Dr. Tyler's book. Mr. Nagel is trying to claim that agave syrup contains large quantities of saponins, and that they can be harmful to health. Here is the debunking of that paragraph:

1. Dr. Tyler does not include the variety of agave plant used for agave syrup.

2. The entire discussion is about the use of the sword-shaped leaves and the stem. Agave syrup is produced from the natural liquid in the plant. The saponins are isolated from the leaves of the plant.

3. There is no documented evidence to suggest agave syrup contains worrisome levels of saponins and the entire rest of the discussion about health dangers is fabricated and false.

Sugars

People are going to continue to consume sweet food and drink. There are only three categories of choice to sweeten food. Those are artificial sweeteners, stevia, or caloric sweeteners from natural sources, sugars.

Most people will not choose artificial. Many will not choose stevia. That only leaves the category of sugars. In this group, agave is a good choice due to its organic quality, ease of

use, neutral flavor, low glycemic index and the fact that less is used to equal the sweetness of the others in the category.

The sweeteners in this category are composed of three primary sugars used to sweeten foods: glucose, fructose and sucrose. These sugars belong to a class of compounds known as carbohydrates. "Saccharide" is a term that denotes sugar, or substances derived from sugar. Monosaccharides are simple or single sugars; disaccharides are derived from two joined monosaccharides and when they are hydrolyzed, or separated, they yield two molecules of simple sugar. Strings of more than two sugar molecules are called polysaccharides. This category includes compounds such as starches, cellulose and inulin.

Glucose and fructose are monosaccharides. Glucose and fructose are found abundantly in nature in fruits and plants. Sucrose is the disaccharide formed by the joining of glucose and fructose, also known as table sugar. When comparing their relative sweetness, glucose is the least sweet tasting, sucrose is next, and fructose is the sweetest of the three sugars, measured as 1.4 times sweeter than table sugar. Because it is so sweet, people typically use less fructose when sweetening foods compared to sucrose.

? In the article by Mr. Nagel he states , "fructose is not what is found in fruit. Commonly, fructose is compared with its opposite and truly naturally occurring sweetener, known as ‘levulose' (made by nature)..."

Another fabrication. In fact, levulose is just another name for fructose. There are various nomenclatures used in the scientific naming of compounds. Fructose and levulose are exactly the same thing; the names are interchangeable. It is no different than if you called your father, "dad", and your sibling called your father, "father". He would still be the exact same person. Fructose and levulose are different names for the exact same thing: a sugar found in nature.

Mr. Bianchi also is quoted to say that the body does not recognize the fructose in agave. This is another false piece of propaganda which demonstrates just how far he is reaching. If this were true, it would have no impact on us. He immediately contradicts himself with the claims of detrimental effects caused by the overconsumption of fructose.

Using Sugars

Sugars can be compared to each other in their ability to raise blood sugar levels by using the Glycemic Index. The scale is set from zero to 100, where low numbers do not have much impact on blood sugar levels, and high numbers raise blood sugar levels quickly. Fructose is very low on the scale. Because agave syrup is high in fructose, it has a rating of 32 or lower. Honey, which has a higher proportion of glucose to fructose, has a Glycemic Index of 58. Sucrose has a Glycemic Index of 68, and glucose, serving as the index standard, is 100.

All sugars, whether fructose, glucose, sucrose or others, contribute 4 calories per gram to our total diet. 1 teaspoon of sugar = 4 grams = 16 calories

In addition to calories, sugars sweeten our foods offering a desirable taste and adding enjoyment and pleasure to our dining. During cooking and Baking, sugars allow for browning and the unique consistencies of syrups, candies, frostings and frozen desserts. The varieties of sugars, such as crystallized table sugar, brown sugar, raw sugar, molasses, honey and agave nectar, among others, contribute different properties and flavors to foods.

When you add your own sugar to foods you are in control of how much sugar you use. Most people would never add as much sugar as do the food manufacturers. Moderate amounts of sugar can certainly be enjoyed as part of a healthy diet for an active individual. Natural sugars are easily metabolized and utilized by the body, offering a very efficient source of fuel for physical and mental activity.

Of course, sugars should be used in moderation in the diet. This can control calories and help create a diet that is dense in nutrients.

Impact of sugar on health and disease

? The remainder of Mr. Nagel's article works to link agave syrup with the increased incidence of obesity, diabetes, metabolic disease, and the general rise of morbidity and mortality in the population. This is an overconsumption issue involving far more than the occasional use of agave. Here are the facts:

• Rats that are fed a high fructose diet become obese and will develop the chronic diseases associated with obesity: insulin resistance, diabetes and metabolic disease.

• No one should eat a diet that reflects this type of experimental diet.

• Too much sugar in the diet, whether from fructose, glucose or sucrose, can be unhealthy. Diets high in sugar promote tooth decay and periodontal disease; create an overabundance of calories and a deficit of nutrients. This scenario typically leads to weight gain and the development of chronic disease.

• Active individuals can include a moderate amount of added sugar in their diet without negative health consequences. When calorie intake is balanced with physical activity, sugar serves as an efficient source of fuel for muscles, the brain and the central nervous system.

• According to the World Health Organization (2003), individuals can healthfully include 10% of their daily calories from added sugars. This translates into 200 calories for a 2000 calorie diet, or 12½ teaspoons of added sugar daily. Clearly, one can safely add a couple of teaspoons of sweetener to a cup of tea or coffee, or have a little sweetened food without worrying about their risk of developing disease.

• Agave syrup, which is sweeter than other sugars and low on the Glycemic Index scale, is a good choice to include as one of the added sugars in your diet because you will use less sugar (and therefore fewer calories) and minimally raise blood sugar levels.

We all want to live healthier and longer lives. Diet and nutrition plays a key role, impacting our health and our ability to perform physically and mentally now and into the future. Food offers us not only sustenance, but also pleasure and enjoyment. Remember that nutrition is a science based on facts. We are making great advances in our understanding of the science of foods and nutrition. Beware of people with hidden agendas using fear tactics to influence your choices. Don't take their opinion at face value. What are their credentials? What conflicts of interest do they have? If they do not disclose conflicts, then assume that they are manipulating the truth.

Most of all enjoy food. Think about what you need to eat to promote whole health. Don't overindulge, but don't deprive yourself of the bounty of wonderful tastes, either. Use celebrations as occasions to enjoy your favorite foods and try new ones. A teaspoon or two of sugar easily fits into the diet of an active, healthy person. Grilling meat over an open fire is something our ancestors have been doing for thousands of years. But people today who are indulging in chicken and cheeseburgers face a lot of concerns that our ancestors never even dreamed of. These include air pollutants and cancer-causing compounds. Research has proven that grilling meats creates two types of compounds that can lead to cancer. More so, both briquettes and lump charcoal spew hydrocarbons and soot particles as they burn, which encourage global warming contribute to many health problems. However, the majority of us cannot resist barbeque. So instead of dodging barbequed food, learn to grill without the guilt and fewer health risks.

Barbeque emissions are well below those from motor vehicles and the industry in rank, but its environmental effects are just as harmful given that burning charcoal contributes to smog and global warming. Lump charcoal is actually made from charred wood, which is a factor in deforestation. It can be compared to fuels that we use in furnaces and water heaters, such as oil, gas, and wood. Like these other fuels, charcoal produces soot when it is burned. These particles in soot are air pollutants and microscopic solids which are inhaled and deposited in the lungs. Particle pollution is associated with asthma, strokes, heart attacks, lung cancer, and reduced life expectancy. Once animal fat drips onto the flame of a charcoal or gas grill, carcinogenic compounds rise with the smoke and are deposited on the meat. These compounds do not form on vegetables, as it is a reaction with animal-based foods that generates the harmful effects. However, any food that is over-charred contains other types of cancer-causing substances.

Grilling is a method of cooking that adds to the formation and deposit of cancer-causing substances on meat, as both substances deposited are undesirable and carcinogenic. The high heat of grill cooking produces more harmful chemicals than oven roasting or Baking a lower temperature, but beef and chicken must both be cooked at temperatures high enough to destroy E. coli and other harmful bugs.

By simply limiting the animal protein portion and making vegetables and grains a larger part of the meal, you can minimize the carcinogens and maximize your intake of cancer-protective vitamins and natural compounds. Humans cannot directly use sucrose, and it is metabolized in the body to glucose which needs the hormone insulin to help convert it into energy.

Insulin is produced in the pancreas, and a lack of it, or the body’s failure to use it properly, is referred to as diabetes. There are two types of diabetes:

Type 1: A total lack or deficiency of insulin due to the pancreas producing insufficient quantities of insulin, or even none at all. This is often seen in young people and is generally cause by the immune system attacking the insulin-producing sells in the pancreas. The treatment for type 1 diabetes is to introduce insulin to the blood, normally by means of injections, plenty exercise and the adoption of a high carbohydrate low fat diet.

Type 2: This is strongly associated with obesity and weight, and is due either to insufficient insulin production by the pancreas (but not as deficient as for Type 1 diabetes) or an inability of the cells of the body to properly use insulin. Type 2 diabetes does not always require insulin injections, and can be treated by exercise, diet and weight control. However, there are occasions where insulin injections are also required. It tends to affect people older than those with Type 1 diabetes and 90% of cases are of this type.

Both types, however, are connected with an excess of glucose in the blood, into which most sugars are converted. A diet low in sucrose will go a long way towards helping people that suffer from either type of diabetes, and control of carbohydrate intake should include a reduction in the intake of sucrose in the form or beet or cane sugar. This accepted, then if you need a sweetener, a saccharide free natural sweetener would appear to be the logical choice.

You could opt for a synthetic sweetener, but they also have their problems. There is evidence that saccharin could be a carcinogen, and ‘aspartame’ disease is not a myth. The other artificial sweeteners also have sufficient questions that natural sweeteners would appear to be the obvious choice. But which? That is the question. Let’s have a look at some and check out their pros and cons.

The first is Stevia. This is a South American herb that is 400 times sweeter than sucrose and yet is very low in calories and does not affect diabetics. Used throughout most of the world, it has not been approved by the FDA as a food additive due mainly, it would appear, to lobbying by the American sugar corporations. This is understandable, since mass substitution of sugar by stevia in processed foods is entirely possible, but would cost the sugar corporations billions.

However, it is available to purchase from health food stores, and does not appear to possess the problems that aspartame does. Unlike that sweetener, it can be used in Baking and cooking, and is ideal for diabetics and people suffering from yeast infections such as candida. Such infections are aggravated by sugar in the colon, since yeasts love sugar, but they cannot survive on stevia. The safety of stevia has been proven through hundreds of years of popular use without any problems.

However, there are others. Luo Han Guo is a sweet Chinese fruit of which extracts are marketed as a natural sweetener. The plant it comes from is the Momordica grosvenori, a member of the cucumber squash family that grows in the mountainous areas of southern China. The sweeteners it contains are called mogrosides that are terpene glycosides, of which there are five different forms, the main one being termed mogroside-5.

The extract is available in the form of a powder consisting of around 80% mogrosides, and possesses around 250% of the sweetness of sucrose. This, too, can be used in cooking; because it is stable to heat and contains about 2% of the calories of ordinary sugar (one half teaspoon is equivalent to 25 teaspoons sugar). Not only that but, like stevia, there are no known side effects. It has been used for many centuries in Chinese medicine in the treatment of gastrointestinal conditions and conditions of the respiratory tract. Unlike natural sweeteners, luo han has been found to be useful in helping to manage diabetes since it does not cause insulin levels to rise and are not involved in energy production, so have no effect on your weight. The mogrosides from luo han are also under study as inhibitors of certain tumors, and might be able to inhibit skin tumor growth. Other possible medical advantages include helping to reduce atherosclerosis and heart disease, so would appear to be a useful sweetener to use in your coffee!

Finally, xylitol. It was during World War II that Finnish scientists rediscovered xylitol that had been previously used in Germany as a sweetener in the late nineteenth century. The sugar shortage resurrected this substance that can metabolize without the need for insulin.

Xylitol is a substance that is found in some fruits and vegetables and also in corn cobs. In fact, it is a product that appears in animal metabolism, and so is perfectly safe. It is known to help support the immune system, and to help reduce the effects of aging. It possesses antibacterial properties due to its 5-carbon ring and has been approved by the FDA. Xylitol can replace sugar in most of its domestic uses, including in Baking and as a natural sweetener. It is also used extensively in chewing gum as a sweetener that does not cause dental cavities due the acid caused by bacterial attack on the sugar.

However, one use to which xylitol cannot be put, nor any of the other natural sweeteners mentioned here, is in fermentation. Try these for your wine or beer and you will be very disappointed at the low alcohol level of your brew! This is also, however, one of the benefits of xylitol: it cannot feed the yeasts that cause candida or any other yeast infection. Although it is a saccharide, it is the same as the others in this respect.

So, which of these natural sweeteners should you take? The choice is yours since each has its own benefits with very few disadvantages and certainly no recorded side effects that we know of. Use stevia for superior sweetening effects, and make up a concentrated solution of it in water for your cooking. Use luo han if you have gastrointestinal problems, and use xylitol if you want fresher breath and to protect your teeth.

Use none for brewing or winemaking, and use any of them if you are diabetic. The choice is yours. These sweeteners are available at your local or internet health food store.

Health experts keep changing the storey on fats. First we were told that polyunsaturated fats were better than saturated fats. Then it was discovered that refined polyunsaturates were favorite targets for free radical attack. Next, monounsaturated fats took center stage and have remained in the spotlight ever since. The Mediterranean Diet, with its high intake of olive and other oils high in monounsaturates, offers several important safeguards against cardiovascular disease, cancer and overall mortality. (Laino, de Largeril, Kokkinos, Trichopoulou). While monounsaturated fats are important for maintaining optimum health and smooth supple skin, it’s the kind of fatty acids and antioxidants they contain that make up the real story.

Designer Oils

Dark green unrefined “extra Virgin” olive oil has a delightful full bodied flavor due to its natural antioxidants. Not only are the oils of various olive cultivars distinctive, they all help fight arterial plaque buildup. (Visioli) Olive oil has a long history in Europe as both food and medicine, and carbon dating of seeds found in spain have shown that the use of olive oil dates back 8,000 years. Gourmet chefs usually prefer particular oils for various uses in making dressing, marinades, and sauces for dipping. Olive orchards have now achieved a status second only to that of vineyards.

Macadamia nut oil is another designer oil that is fast gaining a reputation among chefs and health experts. The nuts originated in Australia where they were staples in the diets of the Aborigines. In 1881, they were introduced in Hawaii and in the 20th century, made their way to California where several cultivars are now grown. Like olive oil, macadamia nut oil is rich in antioxidants and contains the highest levels, greater than 80 percent monounsaturates, primarily polmitoleic (omega-7) than other oils. Macadamia nut oil products found in mass market are typically refined, with many of the antioxidants removed. The highest levels of antioxidants in macadamia nuts are found in the shells. During cold processing, some of these antioxidants leech into the oil, increasing its antioxidant potential. (Quinn) unrefined and organic oils have a golden color, pleasing nutty aroma and buttery flavor. Scientists have found that macadamia nut oil lowers, LDL cholesterol and triglycerides, and may help prevent stroke. EFA Supplements

The essential oils (Fish oils, flaxseed, GLA, DHA), which are available as liquid and packaged in black bottles, must be stored in the Refrigerator even when they have not been opened. You cannot heat or cook with them. Essential fatty acid supplements are convenient to take and have specific therapeutic value.

Cardiovascular and Nerves – Consumers have been advised to eat more fish rich in Omega-3 to reduce their risk of cardiobascular disease. However, experts worry that eating several servings of fish each week may not be safe especially during pregnancy, dursing or trying to conceive. The most frequent mistake people make with powdered stevia is measuring out too much. Very tiny amounts of the powder can greatly sweeten. Liquid extracts can be measured out in drops until the right amount of sweetening is achieved. Often just one half to one teaspoon of the liquid achieves the same effect as one cup of white sugar. If a powdered form is used, mixing it with hot water is recommended in order to create a more workable concentrate. Hot liquids seem to release the sweetening power of stevia more rapidly. This concentrate should be refrigerated and measured out with an eye dropper. Baked goods sweetened with stevia do not brown as much, and using stevia in recipes with distinct flavors like lemon, cinnamon, carob, etc. achieves better results than adding it to blander food items. Baking with stevia takes some getting used to. Stevia can also be added to other sweeteners like honey to lower their caloric content. People who cook with stevia often add it to honey or molasses to potentiate sweetening power in smaller quantities.

Stevia works particularly well on dairy products, fruit dishes, beverages and fresh desserts. It can be combined with other sugars such as molasses, honey, maple syrup, fructose etc. in order to minimize their use. (NOTE: Stevia does not work well with yeast breads which require caloric forms of sugar to rise.

Description

Stevia is a small perennial shrub with green leaves that belongs to the aster (Asteraceae) or chrysanthemum family of plants. They grow primarily in the Amambay mountain range of Paraguay but over 200 various species of stevia have been identified around the globe. Stevia rebaudiana is the only species at present which possesses an inordinate ability to sweeten. Its common form is known as stevioside, a fine white powder extracted from the leaves of the plant. Phytochemistry STEVIOSIDE/REBAUDIDOSIDE COMPOUND DUO: The leaves of the stevia shrub contain specific glycosides which produce a sweet taste but have no caloric value. Stevioside is the primary glycoside involved in this effect. Dulcoside and rebaudioside are also major glycosides contained in the herb. Glycosides are organic compounds which contain a sugar component (glycone) and a non-sugar component (aglycone). The glycone constituent may be comprised of rhamnose, fructose, glucose, xylose, arabinose etc. The other portion may be any kind of chemical compound such as a sterol, tannin, carotenoid, etc.

Stevia leaves also contain protein, fibers, carbohydrates, phosphorus, iron, calcium, potassium, sodium , magnesium, rutin (flavonoid), iron, zinc, vitamin C and vitamin A. Human physiology cannot metabolize the sweet glycosides contained in stevia leaves, therefore they are eliminated from the body with no caloric absorption. Stevia, unlike aspartame, can be used in Baking because its sweet glycosides do not break down when heated. Definition Stevia is an herb with incredible sweetening power. Its ability to sweeten is rated between 70 to 400 times that of white sugar. Typically, it has a mild licorice-like taste and is completely natural in its biochemical profile. What makes stevia so intriguing is that unlike other natural sweetening agents, its is completely calorie-free, never initiates a rise in blood sugar, and does not provide “food” for microorganisms like bacterias and yeasts.

Stevia may well be the most remarkable sweetener in the world and yet its recognition in this country remains relatively low. Consider the extraordinary attributes of the stevia plant and its extracts:

  • • It is diabetic-safe.
  • • It is calorie-free.
  • • It is 50 to 400 times sweeter than white sugar.
  • • It does not adversely effect blood sugar levels.
  • • It is non-toxic.
  • • It inhibits the formation of cavities and plaque.

  • • It can be used in Baking and cooking.

    A Brief History

    Stevia is a plant indigenous to mountainous regions of Brazil and Paraguay. For centuries, this herbal sweetener has been used by native cultures to counteract the bitter taste of various plant-based medicines and beverages. The Guarani Indians of Paraguay have used this potent sweetener in their green tea for generations. The name they designated for stevia leaves was “sweet herb.” In addition, these native peoples have historically used stevia as a digestive aid and a topical dressing for wounds and other skin disorders.

    In the sixteenth century, Europeans became aware of the herbal sweetener through the Spanish Conquistadors. In the late 1880s, Moises S. Bertoni, director of the College of Agriculture in Asunción, Paraguay, became extremely intrigued by the stevia plant. Its reputation was that it was so sweet that even just a small leaf part could sweeten an entire container of mate tea. Be rtoni wanted to find out if this was true. After several years of studying the plant, he wrote about it in a local botanical publication. In 1905, Bertoni published an important article about the incredible sweetening power of the stevia plant, which he considered superior to sugar and extremely marketable. Other articles written by Bertoni note that stevia is unquestionably superior to saccharine because it is nontoxic and has significant therapeutic benefits. It sweetens with unprecedented potency and can be used in its natural state.

    The first stevia crop was harvested in 1908 and subsequently, stevia plantations sprang up in South America. In 1921, the American Trade Commissioner to Paraguay, George S. Brady, wrote that although the herb is an extraordinary sweetener with remarkable properties, little had been done to commercially cultivate the plant. He suggested that stevia may be an ideal sugar product for diabetics and strongly advised that American companies pursue its importation.

    During the decade of the 1970s, the Japanese developed a new method which could better refine the glycosides contained in the stevia leaf. The result was a compound called ste-vioside which is from 200 to 300 times sweeter than white sugar. The Japanese approach artificial sweeteners with great caution and they believe stevioside to be safer and more effect i've than other non-nutritive, chemical products. Stevioside is considered superior in its ability to sweeten; however, it does not exhibit some of the other therapeutic actions found in whole stevia leaves .

    Stevia enjoyed substantial popularity during the 1980s as a natural sweetener and was found in a variety of consumer products. In 1986, however, the FDA abruptly seized stevia inventories and in 1991 claimed it was not suitable as a food additive. Advocates for stevia claim this happened because the herb is a natural, powerful, inexpensive and non-patentable sweetener, and therefore poses a threat to pharmaceutical sweeteners and sugar-alcohol sweeteners like mannitol, sorbitol and xylitol. At this writing, stevia has received approval by the FDA to be sold only as a dietary supplement, not as a sweetening agent.

    Currently, stevia is commercially grown in Paraguay, Brazil, Uruguay, Central America, Israel, China, Thailand, and the United States. It is considered an important natural sweetener in both Japan and Korea, and has been safely used in these countries for decades. Extracts of stevia and related products make up a considerable portion of the Japanese market for natural sweetening agents. They use stevia in sweet sauces, pickles, beverages, etc., making Japan one of the largest single consumers of stevia in the world. Today, because the demand for stevia is escalating, several Paraguayan organizations are looking to expand the commercial cultivation of the plant. Currently, Canadian researchers and chemists are working to provide even better stevia supplements and may even end up teeming with governmental agencies to raise stevia crops as economic replacements for tobacco leaves (Bonvie, 64). Stevia has not been officially approved by Canadian agencies, but it is still available for purchase in tea form.

    While aspartame and saccharine continue to dominate the non-caloric sweetener scene, a remarkable herb called stevia remains relatively obscure. Why would a substance that is much sweeter than sugar, can be used in Baking (unlike aspartame), is diabetic-safe and calorie- free remain unknown and unused? Unfortunately, the FDA has managed to unfairly keep stevia out of the American market due to a long history of unwarranted regulation. Recently, however, due to the passage of specific legislation, limited purchase of stevia products is now available.

    Anyone who suffers from blood sugar disorders or who needs to limit their caloric intake should know about the remarkable properties of stevia. Stevia offers an ideal alternative to other sugars or sugar substitutes. Moreover, the herb has numerous therapeutic properties and has proven its safety and efficacy for hundreds of years. In spite of FDA efforts to ban this herbal sweetener, stevia’s comeback has begun amidst a glut of approved artificial, pharmaceutical products that pose significant health risks. The story of stevia illustrates the struggle which many natural products have experienced in gaining the FDA stamp of approval. Patents, politics and profits are all involved in determining the selection of products we are allowed to purchase.     Fats and Oils: Clearing the Confusion

    Aside from tax forms, it's hard to find anything more confusing to consumers than fats and oils. Fat-free diehards still don't know that fat is essential for the brain, hormones, cellular membranes: life itself. The clueless still use shortening, margarine and damaged grocery store vegetable oils. But what worries me more is that supposedly educated consumers aren't even getting it right. Should we be surprised since their doctors probably don't know the truth?

    Mistakes made by your customers. They:

  • * Don't know monounsaturated fats are the key to health.
  • * Think olive oil is the healthiest choice.
  • * Buy junk olive oil without knowing it.
  • * Make olive oil toxic with misuse.
  • * Use grapeseed oil for its smoke point without regard to its pro-inflammatory fatty acids.
  • * Think all polyunsaturated fats are created equal.
  • * Believe flax oil is just the same as fish oil.
  • * Think healthy oil must be heavy and flavorless or strongly flavored.
  • * Don't know that oil has zero carbs.
  • * Don't know that all oils have the same number of calories.

    Let's clear up these myths so consumers can get busy being confused about something else:

  • * A compelling number of studies clearly demonstrate that we should get about 80% of our fats as monounsaturated fats, a key to the health benefits of the Mediterranean diet. Monounsaturated fats (omega 9) have been shown to lower total cholesterol, increase HDL, improve blood sugar management and help prevent cancer.
  • * Properly prepared olive oil is a decent choice because it is relatively high (around 70%) in monounsaturated fats. However, macadamia nut oil is much higher (84%). Macadamia nut oil is also lower in saturated fat and significantly higher in vitamin E, already making it a healthier choice.
  • * Any time something becomes quite popular, pretenders ride the wave. It is beyond suspicious that more Italian olive oil is sold than is actually produced. Much of what consumers think is "Extra Virgin" olive oil is actually a blend of refined olive (health benefits dramatically reduced) and even other oils (hmm, allergies anyone?). I review this in greater detail in The Hamptons Diet, my latest book, due out in May. For increasingly obvious reasons, the specific oil I recommend in it is MacNut™ Oil. It is the genuine article and the only product processed in the plant in Australia so there is no chance of contamination with another nut. This is a premium oil with processing quite superior to that from other countries.
  • * Overheating oil causes the formation of toxic free radicals and trans fats. Many don't realize that olive oil's smoke point is only 300-325:; so grilling, stir-fry and even Baking become problematic. MacNut™ Oil is blessed with a 410: smoke point and great shelf stability.

Now, because of vegetable oil use, junk food and animal feeding practices, Americans consume a 20:1 imbalance of pro-inflammatory omega 6. My recent book, The Allergy and Asthma Cure, tells more about the many health conditions worsened by inflammation. Now you can see that grapeseed oil is literally adding fuel to the fire.   • * Flax oil is great stuff if you buy it fresh, keep it cold and use it promptly. However, the EPA and DHA we prize so much in fish oil is not present in flax oil. To convert omega 3 to EPA and DHA, first be genetically adept and then avoid illness, age, stress, alcohol, aspirin, bad fats or sugar and deficiencies of the B's, C, Zinc and Magnesium. The same factors affect conversion of omega 6 into GLA.
  • * Some consumers have become accustomed to flavorless oils. Others grin and bear food that all tastes like olives. (Good olive oil tastes like olives.) Yet another reason I head the Scientific Advisory Panel for MacNutTM Oil is that it delicious cold or hot. It enhances recipes with a buttery richness but doesn't mask other ingredients.
  • * How can we tell consumers and not sound sassy that all oils are all zero carbs. They are oils, okay? There are only 3 classes of macronutrients: proteins, fats and carbs.
  • * Likewise, oil is oil when it comes to calories. Even 10-W-40 has 9 calories per gram. Protein and sugar are about half that. What is important is the type of fat in the oil and monounsaturated is the best.

    I hope this helps you educate consumers about the proper use of fats. Unfortunately, that still leaves a long list of other things they've been misled about.

    Feeling stressed out? Looking for some time to relax and cool off, but just too busy to get away? Give yourself a spa treatment at home.

    Creating your own home spa experience is easy and the benefits are many. With some common household items and a few essential oils, you can luxuriate in your own special spa experience while recharging and renewing mind, body and spirit. Indulge with a few close friends for a unique, shared experience.

    Aromatherapy Adventures

    Using concentrated plant oils derived from flowers and plants, aromatherapy offers an ancient healing art that has gained newfound respect in the modern world. Aroma chemicals transfer quickly into the body, and researchers are finding unique ways to employ this ancient technique, including medical applications.

    Studies find that lemon balm or lavender oil reduces behavioral problems in older people with dementia (BMJ 2002; 325:1312-3). Rosemary has been found to improve memory and enhance mental functioning (Int J Neurosci 2003 Jan; 113(1):15-38).

    Only a drop or two of an essential oil is needed to receive their unique healing benefits. (Always dilute essential oils; never use or apply them directly to your skin without watering them down.) Essential oils can help you relax, rejuvenate, improve your memory and increase your energy.

    Some essential oils are reputed to reduce pain, kill bacteria, speed healing of injuries and help fight inflammation and infection (Natl Meeting, Amer Chem Soc, 8/02).

    Bathing Beauties

    When you feel like you're ready to spa, take the phone off the hook, unplug the TV and set aside a special, unbothered time and day for your at-home spa experience. Next, turn your bathroom into your special place. Light fragrant candles, put on your favorite soft music and fill the tub.

    When running the water you should select a water temperature that fits the effect you desire, according to Valerie Gennari Cooksley, RN, author of Healing Home Spa (Penguin). Water temperature that approximates your normal body temperature produces a sedative effect. On the other hand, hotter water-that which hovers around 100 degrees-induces sweating and helps cleanse and detoxify. In any case, limit your time in hot water to about 20 minutes. If you use cold water, only stay immersed for a few short minutes to rejuvenate and close the skin's pores.

    Try adding about 10 drops of either lavender or ylang-ylang oil to a warm bath to aid in relaxation and to release tight muscles. Don't rush; soak for at least 20 minutes and let the fragrant water vaporize your cares. Dry off with a fluffy towel and wrap yourself in your favorite bathrobe.

    Other bath enhancers you can add to your soak include oatmeal to soften the skin, seaweed for deep cleansing, Epsom salts to relieve aches, and Baking soda to alkalize the body. Herbal sachets can be made by placing dried herbs in a muslin bag and dropping the bag into the water to release fragrances and healing chemicals.

    Fantastic Facial

    The facial is a standard spa procedure. Hold your face over a steaming bowl of hot water that contains lemon juice or a few drops of lemon essential oil for about 15 minutes. Use a towel over your head to hold in the steam.

    When your face is well moisturized, apply a facial mask. On dry skin, use either puréed, ripe avocado or a mask of honey and kelp. If your face is oily, apply either puréed, ripe bananas or a mask of peppermint oil and honey. If you are not sure of your skin type or have mixed skin, green clay can be used for a balanced facial. Green clay is rich in minerals while being antiseptic and healing, notes Valerie Ann Worwood, author of The Complete Book of Essential Oils and Aromatherapy (New World Library). With the addition of warm water, it creates an instant facial mask. (You can also use prepared facial masks; ask about them at your health food store.)

    To apply the mask, begin at the forehead using upward strokes. Go easy around the eyes. Afterwards, put cucumber slices over your eyes and relax. Keep the mask on for about 15 minutes. Wash your face with warm water and then apply a moisturizer. Your skin should feel supple and look radiant.

    Pleasant Pampering

    Worwood recommends a few drops of rosemary oil and one tablespoon of Baking soda in a basin of warm water to soothe your feet. Soaking your feet for about ten minutes softens the skin and nourishes the nails. After drying off, combine one-half cup sea salt with one-half cup of cooking oil, preferably olive, canola or sesame. Gently massage into each foot to stimulate reflex points and remove dead skin. Rinse and pat dry. Finish with a pedicure.

    This salt scrub can be used on any part of the body to eliminate toxins, increase circulation, improve lymphatic movement and cleanse the pores. A popular European treatment, it is especially helpful for parts of the body that store water, such as the tummy and thighs. Rinse completely after the scrub and apply moisturizer to dry areas.

    Since hands can age quickly, Worwood suggests using oils of rose, sandalwood and geranium for dry or neglected hands. You can also mix one-half cup of sugar with one-half cup cooking oil and a few drops of one of the above essential oils. Massage into each hand to moisturize and pamper your overworked hands. Rinse and apply your favorite lotion to seal in moisture. A gentle manicure adds the finishing touch.

    Healthy Hair

    Your special spa day wouldn't be complete without pampering your hair. Noted dermatologist David Bank, MD, suggests looking for shampoos that contain such gentle cleansers as avocado, borage oil, grapeseed oil, sunflower oil and wheat germ oil. Your shampoo should also contain moisturizing substances, such as aloe vera, to help give your locks shine and bounce.

    Check your hair's condition. Oily hair-that which feels greasy within a day of washing-responds best to frequent washing with minimal conditioning. A bad case of the frizzy tangles is a sign of dry hair, which needs a moisturizer-rich shampoo.

    Revive From the Inside With Green Drinks

    During your spa day, sip green drinks. Green drinks made from aquatic plants such as spirulina, seaweed and kelp contain needed minerals to nourish skin, hair and nails; these plants have been used for centuries to promote health and longevity. In addition to being high in minerals, they are also low in fat, high in fiber and rich in protein.

    The marine vegetables found in green drinks help detoxify the body, support the lymphatic system, alkalize the blood and tissues, and support a healthy thyroid. Many natural food stores carry green drink powders that can be added to juice or water. Sipping on a green drink can enhance the cleansing action of your home spa treatment, balance blood sugar levels and maintain your energy level during the day.

    Few of us can resist the seductions of freshly baked bread, warm and fragrant, poised on the edge of a steaming bowl of soup or painted with an aromatic swath of rosemary scented oil. Even those of us from the most culinary challenged households can recall the pleasures of the simple plump white dinner roll or flaky biscuit piled in a basket on the dinner table.

    Bread has blossomed from sideshow status beside the dinner plate to a full-scale mealtime headliner, a scrumptious star enriched by nutritious grains, herbs, fruits and vegetables.

    Contemporary cooks build meals around crunchy cornbread or chewy focaccia, presenting soups or salads as satisfying counterpoints. Want to jump into the bread Baking basket or hone your skills?     Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years.

    That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; Baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting.

    "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications.

    "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing.

    "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside.

    "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while.

    "Then there are quick breads that use Baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans.

    "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits.

    "To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness.

    "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat.

    "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by Baking in a preheated cast iron skillet.

    "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables.

    "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it.

    "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes.

    "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good."

    Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well:

    "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen.

    "Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine flour, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day.

    "I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with split pea soup.

    "Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."

    "The ocean is alive with energy and abundant sea life," says Susie Galvez, owner of Face Works Day Spa in Richmond, Virginia and author of Hello Beautiful (MQ Publications). "It's an abundant source. Sea products are rich in minerals like magnesium, potassium, iron and zinc, all of which are known for their deeply cleansing and antibiotic properties. When we think of the sea, we think of health, invigoration, the feeling of being alive and yet peacefully calm."

Today, sea plants still provide beauty benefits.     Seaweed's Beauty Benefits

    "Pollution, stress, fatigue and bad eating habits all affect the body," says Anne Mok, LaC, a certified Chinese herbalist and co-owner of Cornerstone Healing in Brooklyn, New York. This leads to vitamin and mineral deficiencies that can result in broken capillaries, loss of firmness, skin lesions, dry scaliness and more.

    The good news, Mok says, is since seaweed is packed with easy-to-absorb proteins, vitamins, minerals and lipids, it can protect against environmental pollution and ward off aging by nourishing and moisturizing the skin. "The seawater in seaweed is similar to human plasma, so it's an ideal way to get the nutritive benefits from the sea, vitamins A, C and E, and the minerals zinc, selenium and magnesium we need through the process of osmosis. Boost the effect with a few drops of aromatherapy bath oils like rosemary and lavender. It'll help hold the heat in and improve your cleansing program." Rinse off and "you'll feel your skin tighten, due to the high iodine content of the seaweed," says Cox. "Your skin should also feel softer and firmer."

    Seaweed and algae body wraps are ideal ways to beautify the skin, rid your body of toxins and boost well-being and health. "It starts a program of detoxification very rapidly," says Dr. Page, who has also written Detoxification: All You Need to Know (Healthy Healing Publications). "It's amazing how it encourages weight loss and cellulite reduction." "Seaweed wraps are the most effective cellulite treatments," says Mok. "Seaweed and seaweed mud, especially, stimulate the cells to improve cellular activity and increase the efficiency of lymphatic fluid, which helps break down toxic deposits that can result in cellulite.

    "It's excellent conditioning for the skin and leaves it soft and glowing," says Claudia Spagnolo, spa director for the DeFranco Spagnolo Salon and Day Spa in Great Neck, New York.

    Revitalize With Sea Salts

    Sea salts contain minerals-such as calcium, potassium, magnesium, sodium, iron, sulphur, phosphorus and chlorine-that have a delightfully rejuvenating and revitalizing effect on skin.

    "Sea salts enhance the youthful healthy glow of the skin," says Spagnolo. "It creates a deep pore cleansing from shoulder to toe, removing rough, dry skin, helping to purify and slough off dead skin cells. It's great for an all-over exfoliation, and leaves the skin smooth and refreshed."

    "Sea salt has wonderful drawing properties, promoting the removal of toxins from the skin," says Galvez, author of Ooh La La Effortless Beauty (MQ Publications). "It's high in mineral content and nourishes the body."

    Sea salt also "guards against moisture loss, so it's ideal for dry skin and helps prevent aging," says Mok. In addition, it can be used to treat acne, eczema and psoriasis. Often done before a massage in spas, a "salt glow," which uses a vigorous scrub of coarse sea salts mixed with essential oils, rejuvenates and revitalizes the skin. Sea salt is also readily available at health food stores so you can do the same at home.

    Mineral-rich Dead Sea salts pack a salinity of 32%. "When bathing with Dead Sea salt you don't even need to use soap because the minerals remove redundant fat and dirt," says Mok. Dead Sea minerals are often used in shampoos, conditioners and shower gels. "Galvez adds, "Dead Sea mud mineral and vitamin content is very close to that of humans, and therefore treatments using the mud penetrate deeply."

    Ah! Home Spa

    It's easy to turn your bathroom into an oasis of calm and create a private spa to call your own.

    For a sea cure bath, mix together half a pound of sea salt and a pound of Baking soda, add to a warm water bath and soak until the water has cooled, says Mok. "It's excellent for soothing itchy and dry skin and helps detoxify by pulling out toxic waste from the pores." Aromatherapy oils, like lavender, make your soak in the tub even more relaxing and luxurious. "It's a great way to de-stress after a long day at work."

    A seaweed wrap can release water retention and leave legs looking their sleekest, notes Mok. "Just soak legs in a bath of warm water and Epsom salts for 5 minutes, then pat dry. Apply a seaweed mask and wrap legs with plastic wrap and a warm towel. Relax for 15 minutes. Remove towel and plastic wrap and rinse."

    You can also try a sea salt rub by mixing two cups of kosher salt with one cup of olive oil until it forms a thick paste. (Be careful: the oil is slippery.) "While in the tub or shower, massage it into your skin using long strokes toward the heart, starting with your feet," says Galvez. Rinse off with warm water, use a soft washcloth to remove any residue, pat dry and apply moisturizer. "Your skin will be silky smooth and wonderfully hydrated." To create a spa environment at home, details make all the difference. "Think of your favorite beach get-a-way and go with an ocean theme," says Cox. "Include something for each of the senses." For example, put on a CD that has nature sounds. To capture the color of the water, use sea-colored towels. For scent, light candles that produce the scents of flowering plants (such as plumeria or citrus). Add "ocean" fragrance beads. When taking a bath, "use shells to scoop out sea salts or dehydrated sea weed and put them around the tub as decoration," says Cox. Smooth on a moisturizer with a sea-scented lotion when you finish your spa treatment.

    When you make an at-home sea spa experience a regular part of your routine, you reap a bounty of beauty and health benefits. "In just 20 minutes you can have a mini-vacation," says Galvez. "It's cleansing and relaxing."

    Then you will be ready to dive back into reality with renewed zest.
