Since the Naturalnews.com article has been the sole source of nearly all other popular articles in public media, we want to set the record straight with science-based, reliable information to offer a more balanced resource to those interested in learning more about agave syrup. According to the description on the Naturalnews.com website, Rami Nagel is a "citizen journalist". This means that Mr. Nagel is self-employed, and not employed as an in-house journalist by the website. He wrote and published the article without any editorial or content oversight, and the editor of the website, Mike Adams, makes it clear that the article was not checked for incorrect or inaccurate information or facts. It is important to note that neither Mr Nagel or Mr Bianchi have not made themselves available for questions on their statements since the articles appearance. They remain out of sight and have entirely avoided the controversy their statements created.

What is agave nectar?

The opening line of this paragraph in the article by Mr. Nagel states:

"The principal constituent of the agave is starch, such as what is found in corn or rice."

This is absolutely false. There is no starch in agave. The source of carbohydrate in agave syrup is inulin, a polysaccharide made up primarily of strings of fructose units. Starch is a polysaccharide made up of strings of glucose molecules. They are significantly different, and this difference is why agave syrup is naturally sweet.

The very basis of the argument presented by Mr. Nagel is false.

The Process

The agave plant is a succulent, similar to a cactus. The agave sweetener comes from both the Salmiana agave plant and the agave Tequilana (Blue Agave) which are both organically farmed in Mexico and certified organic by USDA approved certifiers. As the salmiana plant grows it produces a stalk called the "quiote" and when this is removed, a natural liquid called "aquamiel". The liquid is collected from the plant, while Blue agave pinons are harvested and shredded to remove the similar juice. Either can be naturally processed thermally or by enzymes into agave nectar.

The juice of the plant is not naturally sweet. The string of connected fructose units that makes up the major proportion of inulin does not have a sweet taste, but when the fructose units are separated (the process is called hydrolysis) by the addition of an enzyme, similar to digestion, or thermally for most blue agave, the syrup becomes quite sweet. That is the entire processing chain for agave nectar. There are no additives, other ingredients or chemicals in Madhava agave nectar. It is absolutely pure and organic and GMO free.

? Mr. Nagel claims that agave syrup is a "refined corn fructose" similar to high fructose corn syrup. This is absolutely false. There is no relationship between agave syrup and high fructose corn syrup in any way, including the source of the product, or the manufacturing process.

We contacted Mr. Stutsman at the United States Food and Drug Administration, and his response made it clear that there was never a "confidential FDA letter". He did publish a public letter referenced in an FDA document as "FDA letter from Martin Stutsman to Dr. Eric

The quotes were completely taken out of context from the document, and the quotes never referred to agave syrup at any time. Nagel goes on to further misrepresent Mr. Stutsman's intent in the published document by weaving in other inaccurate information that is thoroughly unrelated to the original document. Mr Bianchi's subsequent statements on labeling issues are false and without merit.

Mr. Nagel is clearly caught red-handed. He has misrepresented the words of a government official, lied about the facts, and twisted the information to achieve his own agenda. This strategy is repeated throughout the article.

? Mr. Nagel continues his deceptive writing by referring to a quote by the late Dr. Varro Tyler in his book, The Honest Herbal. The first line of the paragraph is a direct quote from the book. Nothing else in that paragraph remotely resembles anything else found in Dr. Tyler's book. Mr. Nagel is trying to claim that agave syrup contains large quantities of saponins, and that they can be harmful to health. Here is the debunking of that paragraph:

1. Dr. Tyler does not include the variety of agave plant used for agave syrup.

2. The entire discussion is about the use of the sword-shaped leaves and the stem. Agave syrup is produced from the natural liquid in the plant. The saponins are isolated from the leaves of the plant.

3. There is no documented evidence to suggest agave syrup contains worrisome levels of saponins and the entire rest of the discussion about health dangers is fabricated and false.

Strings of more than two sugar molecules are called polysaccharides. This category includes compounds such as starches, Cellulose and inulin.

Glucose and fructose are monosaccharides. Glucose and fructose are found abundantly in nature in fruits and plants. Sucrose is the disaccharide formed by the joining of glucose and fructose, also known as table sugar. When comparing their relative sweetness, glucose is the least sweet tasting, sucrose is next, and fructose is the sweetest of the three sugars, measured as 1.4 times sweeter than table sugar. Because it is so sweet, people typically use less fructose when sweetening foods compared to sucrose.

Sucrose has a Glycemic Index of 68, and glucose, serving as the index standard, is 100.

All sugars, whether fructose, glucose, sucrose or others, contribute 4 calories per gram to our total diet. 1 teaspoon of sugar = 4 grams = 16 calories

In addition to calories, sugars sweeten our foods offering a desirable taste and adding enjoyment and pleasure to our dining. During cooking and baking, sugars allow for browning and the unique consistencies of syrups, candies, frostings and frozen desserts. The varieties of sugars, such as crystallized table sugar, brown sugar, raw sugar, molasses, honey and agave nectar, among others, contribute different properties and flavors to foods.

When you add your own sugar to foods you are in control of how much sugar you use. Most people would never add as much sugar as do the food manufacturers. Moderate amounts of sugar can certainly be enjoyed as part of a healthy diet for an active individual. Impact of sugar on health and disease

• According to the World Health Organization (2003), individuals can healthfully include 10% of their daily calories from added sugars. This translates into 200 calories for a 2000 calorie diet, or 12½ teaspoons of added sugar daily. Clearly, one can safely add a couple of teaspoons of sweetener to a cup of tea or coffee, or have a little sweetened food without worrying about their risk of developing disease.

• Agave syrup, which is sweeter than other sugars and low on the Glycemic Index scale, is a good choice to include as one of the added sugars in your diet because you will use less sugar (and therefore fewer calories) and minimally raise blood sugar levels.

We all want to live healthier and longer lives. Diet and nutrition plays a key role, impacting our health and our ability to perform physically and mentally now and into the future. Food offers us not only sustenance, but also pleasure and enjoyment. Food is present in so many parts of our lives: at celebrations, business events, family events, religious and spiritual occasions, sports outings, the focus of our family meals, intimate dinners, and sometimes just the excuse to socialize.

The extra calories can lead to weight gain and obesity, which in time can lead to chronic disease. In the short term, high sugar intakes can lead to a nutritionally deficient diet and a sense of being on an emotional roller coaster.

So be selective about your use of sugars and use them in moderation in your diet. Just like all foods, a variety will enhance the nutritional content of your diet and the flavor and tastes that you can enjoy. Since sugars come in different forms and have different flavors, they can be used most effectively in specific foods and beverages. Remember that nutrition is a science based on facts. We are making great advances in our understanding of the science of foods and nutrition. Beware of people with hidden agendas using fear tactics to influence your choices. Don't take their opinion at face value. What are their credentials? What conflicts of interest do they have? If they do not disclose conflicts, then assume that they are manipulating the truth.

Most of all enjoy food. Think about what you need to eat to promote whole health. Don't overindulge, but don't deprive yourself of the bounty of wonderful tastes, either. Use celebrations as occasions to enjoy your favorite foods and try new ones. A teaspoon or two of sugar easily fits into the diet of an active, healthy person. Grapefruit pectin fiber is a source of soluble fiber that can bind to cholesterol and inhibit the formation of atherosclerosis. It is also effective in maintaining good blood sugar levels, and promoting a healthy colon. However, before discussing how grapefruit pectin fiber works in these ways, it is first necessary to explain how they occur in the first place.

CHOLESTEROL LEVELS

First cholesterol. This is a steroid lipid, most of which is biosynthesized by your body rather than being present in your diet. Although it has a bad name health wise, cholesterol is actually essential to good health because it helps your digestive system break down fast, it strengthens cell walls and is a major ingredient in the manufacture of vitamin D by your liver. It is also essential for the formation of several hormones, including cortisone, cortisol and aldosterone by the adrenal glands, and also of estrogen and testosterone. A bloodstream without cholesterol is therefore not good for you.

Given that cholesterol is essential for good health, then why does it have such a bad press? The root cause of that is that cholesterol is not water soluble, and to be carried round the bloodstream to where it is needed it needs some transport. For that, it uses low density lipoproteins (LDLs). However, it’s not a return journey, and to get back they must use another form of lipid known as a high density lipoprotein (HDL). The protein part is water soluble, wile the lipid part can attach to the cholesterol and carry it around the bloodstream.

The problem arises with free radicals, which are oxygenated molecules that are generated by the body’s metabolism, and also created from pollutants, such as pesticides and cigarette smoke, and the UV portion of daylight. These can oxidize the low density lipoproteins so that they can be attacked by phagocytes (while blood cells) deposited as plaques in the artery walls. This hardens and thickens the arteries, reducing the heart’s blood supply which in turn can cause strokes and heart attacks.

This can be prevented in a number ways, the major of which are by consuming plenty antioxidants in your food, mostly contained in phytochemicals (plant chemicals), reducing your LDL cholesterol levels to the minimum needed by your body, and also by increasing the HDL levels in your bloodstream by as much as possible.

Grapefruit pectin fiber can bind to cholesterol, and prevent it from being deposited in the artery walls by the oxidized LDL. A sixteen week double blind study (neither the subjects nor those carrying out the test and analyzing the results knew who were given the placebo) found that grapefruit pectin successful reduced the low density cholesterol level of 27 subjects by 10.8% and overall plasma cholesterol by 7.6%. These volunteers were at a medium to high risk of atherosclerosis due to a high LDL cholesterol concentration in their blood.

Animal studies have also been carried out, whereby animals were fed a high cholesterol diet, and those fed a high fat diet were found to have an average of 45% narrowing of their arteries, and those fed the same diet, but with added grapefruit pectin fiber, were found to have only 25% narrowing, thus corresponding with the results of the human volunteers.

BLOOD SUGAR

It is essential that you maintain a stable level of sugar in your blood since the body reacts to low blood glucose by making you feel hungry, and thereby forcing you eat. If you are trying to lose weight you will find it very difficult if your blood sugar levels fluctuate. Grapefruit pectin can reduce the rate at which carbohydrates enter your bloodstream, and therefore the rate at which sugars are absorbed.

Studies have also indicated that pectin can even out your blood sugar concentration, so that you experience fewer fluctuations or sudden spikes that can make you feel either very hungry, and so binge on carbohydrates, or very satisfied so that you eat nothing at all. The maintenance of a stable level of glucose in the blood is necessary for a normal life since it is that that determine your need to eat food. If your blood sugar is low, the desire to eat high calorie carbohydrate food is uncontrollable.

This is the theory behind the so-called ‘grapefruit diet’. You eat a grapefruit prior to a meal, and allow it to be digested. The grapefruit pectin will make you feel full and so eat less, so that you can eat normal foods, but still lose weight. Many people take the grapefruit pectin in supplement form for its ease and economy of use. It is also more convenient since you don’t have to carry grapefruit around with you everywhere you go.

A Healthy Colon

Like any other soluble fiber, grapefruit pectin fiber is a dietary fiber that can help to maintain the health of your colon. In fact it is the only one of the basic four fibers of lignin, Cellulose, hemiCelluloses and pectin that is soluble. Although referred to as soluble, pectin softens and expands and provides substance and added weight to faeces in order to allow it to pass easier through your colon.

Other than ensuring the easy passage of your stool through your colon, and avoiding constipation, grapefruit pectin fiber can help to prevent excessive growth of bad bacteria in the intestine, and because it accelerates the passage of substances through the colon, there is less time for toxic or cancerous substances to be in contact with your bowel lining. However, it is important that you don't just rush into using any form of dietary fiber, but take it gradually. You start with a small intake, and then increase it slowly; since it is not absorbed through the intestine too much can lie in your colon and ferment, causing any number of intestinal problems. When used properly it can ease the symptoms of irritable bowel syndrome, but if used to excess, or too quickly, can actually cause the same symptoms, in addition to blocking the absorption of essential minerals such as iron, zinc and calcium.

Fiber often has been called roughage, as it technically is a food component that is undigested and processed through the gastrointestinal tract. Since it readily absorbs water, it helps to add to the bulk that is required in order to form a good bowel movement. Fiber is often described as a complex carbohydrate, which consists of the polysaccharide and lignin substance that often gives structure to the cell of a plant and is the portion of plant food that is not digested.

Fiber which is insoluble has the capability of passing through the intestines intact and unchanged. Unlike fats, carbohydrates, and proteins, fiber does not give the body nutrients or fuel for energy, and has no caloric value. Dietary fiber can only be found in plant components including vegetables, fruits, and whole grains. Primarily, there are only two types of fiber: soluble and insoluble, with some foods containing both types.

Soluble fiber is eventually digested in the large intestine, causing it to have limited bulking power. Soluble fibers dissolve in water and have often been linked to helping prevent blood sugar highs and lows, helping to lower blood cholesterol, lowering the risk of heart disease, helping to control high blood pressure, and encouraging friendly bacteria growth. Soluble fiber can be found in pectin, lignin, gums, mucilages, and other sources such as psyllium, beans, apples, pears, and oat bran.

We have been told that we must eat a certain amount of fiber with our meals because it is ‘good for us’. Most of us have been led to believe that this is because fiber promotes bowel motions and prevents us from suffering from constipation. It is also good for our digestive system. But how true is this, and just what are the real benefits of fiber in our diet?

First of what, what is fiber? Sure, we know there must be fiber in food such as cabbage, beans and celery because we can see it. But is all fiber actually fibrous? Of course not, so let’s first have a close look at what dietary fiber actually is.

Fiber is composed of these parts of a plant that are broken down by the action of enzymes in our digestive juices in the upper parts of our intestinal tract. Some fiber can be digested by the bacteria in our lower intestine, and some is not. So where does fiber come from? By that definition, fiber can be any part of your food, not only the stringy bits, and by definition are of vegetable origin.

Water insoluble fibers increase fecal bulk. That’s the stringy stuff in celery and string beans. It is also contained in Cellulose materials, lignin, wheat bran, whole grains and most vegetables. These have the effect of increasing the efficiency of the peristaltic movement of the intestine on the passage of chyme (the creamy fluid that exits the stomach into the duodenum) through your system.

The liquid and nutrients are progressively removed, and the fiber maintains the bulk needed for peristalsis to work properly. Peristalsis is the rhythmic movement of the intestine that forces your food right from your stomach to your rectum. It is also the basis of some forms of industrial pump that operate on the same principle. Without fiber this pump would be inefficient.

Soluble fiber includes the gum and pectin that are obtained from plant cells. They swell up the chyme, and slow down its rate of travel through the gastrointestinal system, although they have no effect on fecal bulk. Specific examples are oat bran, fruit and most vegetables (all plants contain both). A peach, for example, consists of a skin which is insoluble fiber, and the juicy pulp beneath it which is predominantly soluble fiber.

Although a distinction is made between dietary and crude fiber, they both have their part to play. The term ‘fiber’ is a wide one and it cannot be said that fiber as a whole imparts a specific health benefit. The benefits of fiber are a combination of those imparted by the full range of types of fiber and their sources that are contained in the human diet, both crude and dietary, soluble and insoluble.

So what specifically are these benefits, other than just the generalization that they are ‘good for your intestinal health’? As you likely know, it is the fiber in your diet that binds your feces together into a solid, rather than leaving it as a mobile liquid. Although around 75% of feces are liquid, the bulk of the rest is fiber, bacteria and undigested food.

Since insoluble fiber makes feces bulkier and softer it can help treat constipation, where the stool has an excess of solid content. Any substance that absorbs water and swells can help with this condition. The same is true of hemorrhoids and a condition of the wall of the intestine known as diverticulosis. Once the inflammation has subsided, a high soluble fiber diet can help prevent a recurrence.

If you want to lose weight, a fiber diet can make you feel full without the calories, since fiber is calorie-free. There is also the fact that high fiber foods have to be chewed longer before they can be swallowed, and so you are liable to eat less in the same time. However, if you are determined, all that means is that you will have to lunch longer to get the same weight gain!

There is little doubt that a fiber-rich diet contributes significantly to intestinal health, and that if the correct amount of fiber is not taken then problems such as constipation, diarrhea, diverticulosis and a lack of absorption of nutrients will occur. The peristaltic pumping motion of the whole gastrointestinal tract, from the top of the throat to the anus, is dependent on solids rather than liquids. While a semi-liquid fecal consistency will pass through your body, it will take the bulk of the nutrition extracted from your food with it. It is fiber that is needed to bulk it up and to enable the liquid to be extracted through the intestinal wall and the fibrous solid to pass on through the colon to the anus.

There are other benefits of a diet high in fiber, though they generally depend on the type of fiber. Take cholesterol, for example. High LDL blood cholesterol levels are associated with atherosclerosis, and the consequent risk of heart disease and strokes, due to the oxidation of the LDL by free radicals. When the HDL lipids carry cholesterol back to the liver, it is destroyed by the action of bile acids. Since water soluble fiber binds bile acids, it figures that some types of fiber can promote the excretion of cholesterol from the body. The fiber most effective in achieving this comes from rolled oats and also pectin.

It has also been claimed that dietary fiber might be effective in preventing cancer of the colon. The theory is that bowel cancer is caused by toxins in the feces and if the fecal matter is expelled from the body quickly, the toxins will have less time to act. Fiber promotes the expulsion of the contents of the colon. This has not been confirmed, however.

What has been confirmed is that your bowel can collect mucoid plaque that sticks to mainly your colon, and is an ideal environment for parasites and yeast infections. The National Fiber Council has stated that most people do not eat enough fiber, and the average requirement is 38g a day for men and 25g a day for women.

So eat your fiber, because fiber can boost your intestinal health and wellness.

HOW DOES IT WORK?

The Liver

Every day, the liver must process an almost unbelievable amount of blood – at a rate of three pints every minute. All the while, the liver performs over 500 physiologic functions, including protein and glucose synthesis, carbohydrate metabolism, vitamin and mineral storage, synthesis of clotting factors, urea formation, metabolism of medications, and the production of bile. The liver also assists in hormonal regulation, blood glucose control, and other regulatory functions.

Harmful substances that have been neutralized by the liver are carried to the intestines and kidneys for excretion. They are transported by bile, a greenish, watery solution that is synthesized, and continuously being excreted, by the liver. Stored in the gallbladder, a small sac cupped in the under surface of the liver, bile is also required for the digestion of dietary fats. However, in the case of toxins, bile is primarily an early transporter of the toxic compounds to the intestines, where they can be bound to fiber that helps transport them out of the body. Liver Detoxification

More recently, turmeric has been investigated for its support of healthy bile secretion, and pancreatic and gastric function.

Supplement labels can be confusing!

 

The list of ingredients on some supplement labels can tax the mind of even a Ph.D. in nutrition!  What’s worse, although labeling laws exist to counter misleading and non-uniform labeling, confusing and deceptive labeling, confusing and deceptive labeling practices continue to abound.  Here’s some help to aid you in making better sense of supplement labels.

 

1.Begin at the Bottom

 

The supplement facts panel on the label of every nutitional supplement sold in the U.S. tells you about active ingredients in a product. Before analyzing this information, look beneath the panel, where the OTHER INGREDIENTS are listed.  Here, at a glance you can begin to spot a questionable product.  Synthetic colors, flavors, preservatives, or the absence of certain information, are early warning signals.

Note: Many experts in nutrition think that suggested DV levels for some nutrients are far too low to optimize health.  This is why certain ingredients may be present at greater than 100% DV levels.

 

3.Games Labels Play

 

There is no free lunch in the world of supplements.  A bottle that costs less probably contains less – either fewer nutrients, or less effective forms of nutrients.  Educate yourself; compare ingredient amounts, forms and sources, and watch out for labeling tricks such as these.

 

“Padding” the label

Some companies may hide the quantity and quality of their ingredients by calling their formula  a “Proprietary Blend.”  This term may allow manufacturers to use a lot of nutrient from a cheap source and very little from a good source without disclosing how much of each you are actually getting. 

 

This deceptive practice is legal—as long as the secret blend:

·        Is labeled “Proprietary Blend” (or fanciful trademark name)

·        Lists individual nutrients in descending order by weight

·        Lists the total weight per serving

 

When you see the word “Proprietary,” ask: “how relevant is the first or second ingredient?”  Sometimes, the most abundant ingredients are either fillers, or inexpensive, less effective forms.

4.Understanding Herbs

 

 

Herb Forms: Powders, Tinctures, Extracts

 

The form, preparation and concentration of an herb affects its potency and influences the herb’s potential for therapeutic effectiveness.  the potency of all herb forms except standardized extracts are uncertain and depends on factors invisible to the consumer (i.e. soil quality, rainfall, seasonal climate, harvesting methods, storage methods and age).

 

            Know Your Plant Parts: Medicinal plants often have specific parts that are most effective therapeutically, such as the root for goldenseal, the leaf for raspberry, and the blossom for clover.  Products using irrelevant plant parts may cost less, but offer little or no benefit!

 

Powdered Herb

 

Often encapsulated or used as tea, powdered herbs are more likely than other forms to lose potency when exposed to air.  Fresh, high quality powdered herb may add therapeutic or nutritional value to a supplement.  Low quality powders may provide little benefit.  Look for expiration or “use by” dates.

Standardized Extracts are lab-analyzed to provide a verified amount of one or more nutritive ingredients.  In many cases, proportional amounts of other constituents are also present, retaining the natural “fingerprint” of the whole herb.  Standardized extracts are the most consistent, and often the most potent, form of an herb.  They are used in the majority of studies demonstrating therapeutic effectiveness.

Example: Standardized extracts provide a set percentage of an herb’s researched nutritive ingredient.  Useless this percentage is noted on the label, the term “Standardized” is meaningless.

 

5.Beware of False Claims

 

Is it science of is it marketing?  To avoid being misled, question all claims on supplement labels as well as in advertisements.  Although government guidelines restrict the types of claims that manufacturers can legally use to promote their products, not all companies comply.  Many promises mount to little more than marketing hype.

 

Use common sense to decide if a claim seems realistic.  Be aware of emotionally charged, misleading language in advertising.

 

When doubt, contact the company and request information to support a claim.  Unbiased research and human studies are most relevant.  If the science seems legitimate, verify that the form and dose used in product match form and dose showing benefit in studies.

With the publication of a new study in the Journal of Agricultural and Food Chemistry, they might be able to add “fights cancer” to that list as well.

The study, conducted at the University of Florida, tested the effect of pure acai juice-stripped of any lipids (EFAs) and Cellulose material on HL-60 human leukemia cells in vitro. Researchers also evaluated five other extracts or “fractions” of the fruit, which contained different mixtures of antioxidants, for their effect on leukemia cells. They found that the extracts "reduce cell proliferation from 56% to 86%, most likely by damaging the cells enough to cause them to self-destruct."

    Alcohol: The First Menstruum

    Liquid extracts are a time tested, effective delivery system for medicinal herbs. When choosing liquid extracts, read the label. You will usually see that they contain quite a bit of alcohol. Alcohol is used as a menstruum, or solvent that frees all of the constituents from the fiber and Cellulose of the plant, so that the specific medicinal constituents we want become more bio-available to the body. Alcohol has traditionally been used as the menstruum of choice because it is one of the most effective solvents (materials used to pull out the constituents of the herb) that is both reasonably priced and not too toxic on the body. Most of the herbal extracts on the market today have an alcohol content between 30 to 70%.

    Bio-Chelation: A Revolutionary Concept

    In the 1970’s Mr. Frank D’Amelio Sr., CEO and founder of Nature’s Answer®, noticed that the United States Pharmacopeia (the text that was used as a formulary for herbal processing), recommended using high amounts of alcohol to extract active constituents from the plant.     Overview

    Chitosan is a natural product that inhibits fat absorption.     Chitosan: A Brief History

    Chitin, the precursor to Chitosan, was first discovered in mushrooms by the French professor Henri Braconnot in 1811.61 In the 1820’s chitin was also isolated from insects.62 Chitin is an extremely long chain of N-acetyl-D-glucoseamine

    glucoseamine units. Chitin is the most abundant natural fiber next to Cellulose and is similar to Cellulose in many respects. The most abundant source of chitin is in the shells of shellfish such as crab and shrimp. The worldwide shellfish harvest is estimated to be able to supply 50,000 tons of chitin annually.63 The harvest in the United States alone could produce over 15,000 tons of chitin each year.64

    Chitin has a wide range of uses but that is the subject of another book. Chitosan was discovered in 1859 by Professor C. Rouget.65 It is made by cooking chitin in alkali, much like the process for making natural soaps. After it

    is cooked the links of the chitosan chain are made up of glucosamine units. Each glucosamine unit contains a free amino group. These groups can take on a positive charge which gives chitosan its amazing properties. The stucture of chitosan is represented schematically in Figure 2. Research on the uses of chitin and Chitosan flourished in the 1930s and early 1940s but the rise of synthetic fibers, like the rise of synthetic medicines, overshadowed the interest in natural products. Interest in natural products, including chitin and chitosan, gained a resurgence in the 1970s and has continued to expand ever since. Uses of Chit osan Some of Chitosan's major uses—both Industrial and Health and Nutritional—are listed in Tables 5 and 6.

    Water Purification

    Chitosan has been used for about three decades in water purification processes. 67 When chitosan is spread over oil spills it holds the oil mass together making it easier to clean up the spill. Water purification plants throughout the world use chitosan to remove oils, grease, heavy metals, and fine particulate matter that cause turbidity in waste water streams.

    Fat Binding/ Weight Loss

    Like some plant fibers, chitosan is not digestible; therefore it has no caloric value. No matter how much chitosan you ingest, its calorie count remains at

    fibers, chitosan’s unique properties give it the ability to significantly bind fat, acting like a “fat sponge” in the digestive tract. Table 7 shows a comparison of chitosan and other natural fibers and their ability to inhibit fat absorption. Under optimal conditions, Chitosan can bind an average of 4 to 5 times its weight with all the lipid aggregates tested.60 (NOTE: This assessment was made without the addition of ascorbic acid which potentiates this action even further.77 Studies in Helsinki have shown that individuals taking chitosan lost an average of 8 percent of their body weight in a 4-week period.76 Chitosan has increased oil-holding capacity over other fibers.108 Among the abundant natural fibers, chitosan is unique. This uniqueness is a result of chitosan’s amino groups which make it an acid absorbing (basic) fiber. Most natural fibers are neutral or acidic. Table 7 summarizes the in vivo effects in animals of various fibers on fecal lipid excretion. As can be seen from the results listed, ingestion of chitosan resulted in 5-10 times more fat excretion than any other fiber tested. D-Glucosamine, the building block of chitosan, is not able to increase fecal fat excretion. This is due to the fact that glucosamine is about 97 percent absorbed while chitosan is nonabsorbable. Fats bound to glucosamine would likely be readily absorbed along with the glucosamine. Chitosan, on the other hand, is not absorbed and therefore fats bound to chitosan can not be absorbed.

    Cholesterol Control

    Chitosan has the very unique ability to lower LDL cholesterol (the bad kind) while boosting HDL cholesterol (the good kind).78 Laboratory tests performed on rats showed that “chitosan depresses serum and liver cholesterol levels in cholesterol- fed rats without affecting performance, organ weight or the nature of the feces.”79 Japanese researchers have concluded that Chitosan “appears to be an effective hypocholesterolemic agent.”80 In other words, it can effectively lower blood serum cholesterol levels with no apparent side effects. A study reported in the American Journal of Clinical Nutrition found that Chitosan is as effective in mammals as cholestryramine (a cholesterol lowering drug) in controlling blood serum cholesterol without the deleterious side effects typical of cholestryramine. 81 Chitosan decreased blood cholesterol levels by 66.2 percent.82 It effectively lowered cholesterol absorption more than guar gum or Cellulose.83 Laboratory test results indicated that a 7.5% chitosan formula maintained adequate cholesterol levels in rats, despite a dramatic increase in the intake of cholesterol. 84

    What do you fear most? Bankruptcy? Floods? Heart disease? If you're like many women, breast cancer stands near the top of that dreaded list.

    But that fear doesn't permeate other cultures the way it does ours.

    A woman like Mariko Mori, for instance, 52 years old, Japanese, worries about intense pressures beginning to burden her toddler grandson. But worry about breast cancer? Hardly.

    In Indiana, Mary Lou Marks, 50, has similar family frets, mulling over her 28-year-old daughter's career choice.

    But on top of that, when Mary Lou tabulates her other worries, she recoils at the thought of breast cancer. She's heard about her lifetime risk: 1 in 8. Meanwhile, Mariko's is merely 1 in 40, according to Bob Arnot's Breast Cancer Prevention Diet (Little, Brown).

    American Problem
    Experts reporting in "Women at High Risk for Breast Cancer: A Primary Care Perspective" (Prim Care Update Ob/Gyns, vol. 5, no. 6, 1998, p. 269) say the risk of developing breast cancer for the average American woman during ages 40 to 59 is 3.9%; by 60 to 79 years of age that rises to 6.9%. A high-risk 40-year-old has a 20% chance of breast cancer in the next 20 years.

    New studies have found the effect of carrying the gene linked to breast cancer, which is responsible for only 5 to 10% of breast cancer incidence, is not as great as first suspected. Earlier estimates that the gene reflects an 80% chance of incurring breast cancer by age 70 has been recalculated to be only 37% (The Lancet, 1998;352:1337-1339).

    Complex Causesbr> Researchers agree: No one factor is solely responsible for breast cancer. Risk depends on many factors, including diet, weight, smoking, alcohol consumption, activity level and, of course, those genes.

    Regardless of their actual chance of getting breast cancer, women worry. Mary Lou faces no factors that would place her in particular jeopardy. But her anxieties about radical therapies and medical expenses paralyze her: She forgets to visit her health care provider and skips her annual mammogram appointments. Mary Lou's daughter, perhaps in reaction to her mother's gripping fears, campaigns ardently for cancer prevention, educating herself and mobilizing against the cumulative effects of known cancer risks. Smart young woman: A malignancy, after all, can take years to develop. A tumor must swell to one billion cells before it is detectable by a mammogram.

    Dietary Benefits
    Of all the tactics for reducing the risk of breast cancer, diet ranks high on the list.

    The soy-rich regimen of Japanese women like Mariko Mori, for example, helps to explain the low breast cancer rates in Asian countries (see box at center of the page).

    Tomatoes, because of their high quotient of the carotenoid lycopene, have been found to protect cells from the corrosive clutches of oxidants that have been linked with cancer in 57 out of 72 studies (The Santa Rosa Press Democrat, February 17, 1999, page A6, reporting on a Harvard Medical School study). For more on tomatoes see page 16.

    But there's no one magic anti-cancer food or diet. Eating to prevent breast cancer requires a balanced menu with fiber, healthy fats, phytoestrogens and antioxidants, all fresh and free of chemical additives.

    Modifying the balance and type of estrogen, the female sex hormone produced by the ovaries, offers an important breast cancer safeguard. Fat cells, adrenal glands and, before menopause, the ovaries, produce three "flavors" of estrogen, the strongest of which, estradiol, is believed to be carcinogenic when too plentiful or persistent in the body.

    Estrogen does its work by attaching to estrogen receptors. Receptors are particularly numerous in the epithelial cells that line milk sacs and ducts in the breasts.

    A receptor site is like a designated parking spot: Once estrogen is parked there it triggers one of its 400 functions in the body, from preparation of the uterus for pregnancy to intensifying nerve synapses in the brain.

    The food we eat can be a source of estrogen; plant estrogens, called phytoestrogens, are much weaker than the body's estrogens, but they fit the same receptors. Phytoestrogens exert a milder estrogenic effect than bodily estrogen and are capable of blocking the more potent, damaging versions.

    Finding Phytoestrogens
    Foods high in phytoestrogens include vegetables, soy, flaxseed and herbs such as black cohosh, chasteberry, red clover and turmeric. Soy is the darling of the day for good reason. Both soy and flaxseed can lengthen periods, reducing the body's overall exposure to estrogen.

    Soy also contains genistein, an "isoflavone" very similar in molecular form to estrogen but only 1/100,000 as potent. Because of its structure, genistein can attach to cells just as estrogen does; it also helps build carriers needed for binding estrogen and removing it from the body (Journal of Nutrition 125, no.3 [1995]:757S-770S). It acts as an antioxidant to counteract free radicals.

    Tumor Inhibition
    Studies have demonstrated that genistein inhibits angiogenesis (new tumor growth), slowing the progression of existing cancer.

    Soy is most protective for younger women. Postmenopausal women benefit from soy's ability to diminish hot flashes and for cardiovascular protection, especially in combination with vitamin E, fiber and carotene (Contemporary OB/GYN, September 1998, p57-58).

    Experts don't know that much about the cumulative effect of combining hormone replacement with soy, herbs and a diet high in phytoestrogens. Menopausal women who boost their estrogen this way should work with their health care providers and monitor their hormonal levels every six to 12 months with salivary testing.

    The Vegetable Cart
    Some vegetables are particularly protective against breast cancer because they change the way the body processes estrogen. Indol-3-carbinol, found in the co-called cruciferous vegetables such as cauliflower, broccoli and cabbage, diminishes the potency of estrogen. (Broccoli also contains isothiocyanates that trigger anti-carcinogenic enzymes.) These vegetables supply fiber, beta-carotene, vitamin C as well as other vitamins and minerals (Proc of the National Academy of Science USA, 89:2399-2403, 1992).

    Fiber from fruits, vegetables and whole grains reduces insulin levels and suppresses the appetite by making make us feel full, thus helping with weight control, so important to resisting cancer. Fiber also helps build estrogen carriers that keep unbound estrogen from being recirculated and reattached to the breast receptors.

    Cellulose, the fruit and vegetable fiber most binding with estrogen, also rounds up free radicals that damage DNA within cells.,p> Feeding the Immune System Despite heightened public awareness and efforts to stick to wholesome, healthful diets, experts increasingly link poor nutrition to depressed immune systems. Many Americans are at least marginally deficient in trace elements and vitamins despite their best attempts to eat well; that's why a good multivitamin/mineral is wise, even mandatory. Vitamins given to people undergoing cancer treatment stimulate greater response, fewer side effects, and increased survival (International Journal of Integrative Medicine, vol. 1, no. 1, January/February 1999).

    Nutrients tend to work synergistically on the immune system. They should be taken in balanced proportions, and in consultation with your health care provider.

    Immune Boosters
    In Research links low levels of calcium and vitamin D, an inhibitor of cell division and growth, to higher breast cancer rates.

    n Riboflavin (B2), pyridoxine (B6), pantothenic acid (B5), zinc and folate strengthen immunity. Selenium, in lab culture and animal studies, has helped kill tumors and protect normal tissues.

    n Beta-carotene and vitamins A, E and C are antioxidants. Vitamin C enhances vitamin E's effects, boosting immunity and protecting against cell damage. The antioxidant isoflavones in green tea, with soy, convey the anticancer effects of the Asian diet. Research shows actions that discourage tumors and gene mutations.

    The food you eat influences hormones. Excess sugar raises insulin, which acts as a growth factor for cancer and interferes with vitamin C's stimulation of white blood cells. It may contribute to obesity.

    Alcohol is converted to acetaldehyde, which causes cancer in laboratory animals. It affects gene regulation by decreasing the body's ability to use folic acid. It increases estrogen and the amount of free estradiol in the blood. The liver damage that accompanies high alcohol consumption frequently reduces its capacity to filter carcinogenic products, regulate hormones and break down estrogen. Studies of alcohol consumption have caused experts to estimate that drinking more than two alcoholic beverages a day increases breast cancer risk by 63% (OB-GYN News, November 1, 1998, p. 12).

    Fat Can be Phat
    Fat conveys nutritional benefits. Not all fats are bad: we can't survive for very long without certain fats. Fat can turn you into a "well-oiled" machine. But the wrong kind of fat (the fatty acids in red meats and fatty poultry) is believed to be a major culprit in breast cancer.

    Fat cells produce estrogen. Excess fat stores carcinogens and limits carriers that can move estrogen out of your system.

    Once estrogen has attached itself to a receptor, the health result depends on the type of fat in the breast. Saturated fat, transfatty acids and omega-6 fat from polyunsaturated vegetable oils such as safflower oil, peanut, soybean oil, corn oil and in margarine can increase the estrogen effect and trigger a powerful signal to the breast cell to replicate.

    Restraining Prostaglandins
    Blood rich in the essential fatty acids omega-3 and omega-9 lowers cancer risk by driving down levels of prostaglandins, which promote tumor growth. The blood and tumors of women with breast cancer usually contain high levels of prostaglandins.

    Breast tissue is protected by omega-3 fat chiefly from fish and flaxseed and by omega-9 from olive oil. Salmon once a week or water packed tuna three times a week are particularly beneficial. Fish oil supplements processed to reduce contaminates are available. Cod liver oil isn't recommended: its vitamin A and D levels are too high.

    Flaxseed is the richest known plant source of omega-3. Use a coffee grinder to benefit from the seed and oil for the full estrogen effect; sprinkle ground flaxseed over cereal or fold into baked goods. Drizzle flaxseed oil, found in the refrigerator section of your health food store, over salads or cereal. (Store the oil in the refrigerator.)

    Olive oil, especially in the context of the so-called Mediterranean diet of vegetables, omega-3-rich fish and fresh fruit (Menopause Management, January-February 1999, p. 16-19), lowers the risk of breast cancer (The Lancet, May 18, 1996;347:1351-1356).

    Selecting Organic Food
    Select organic foods for extra anticancer protection. Pesticides stimulate erratic cell action and often inhibit the estrogen carrier's ability to attach and remove estrogen from the body. Free floating estrogen then can attach to breast receptors and cause trouble.

    Buy or grow fresh, organic foods whenever you can. When grilling meat, fish or poultry, reduce the area where carcinogens may accumulate by trimming fat. Charred, well-done meat is known to be carcinogenic. When grilling, marinate meat first and reduce the cooking time on the grill by slightly precooking.

    Cancer prevention is an interlocking puzzle requiring the limitation of fat consumption, weight control, exercise, stress reduction and care for psychological and spiritual balance. Possessing more cancer fighting pieces makes you more likely to be able to complete the prevention picture.
