While monounsaturated fats are important for maintaining optimum health and smooth supple skin, it’s the kind of fatty acids and antioxidants they contain that make up the real story.

Fighting Obesity – What do I put in my child’s Lunch?

We begin the 21st century with a startling setback in life expectancy for our youth. Some experts even fear that today’s kids may not live as long as their parents. That’s despite the recent advances in medicine that have been credited with extending life span.

The Childhood Obesity Epidemic

The obesity epidemic is occurring in boys and girls in all 50 states. It’s happening in younger children as well as adolescents, across all socioeconomic strata, and among all ethnic groups. At a time when we have learned that excess weight has significant and troublesome health consequences, we see our children gaining weight to a dangerous degree and at an alarming rate. According to a 2004 report from the Centers for Disease Control, the number of over weight 6 to 11 year olds more than doubled in the past 20 years—going from 7 percent in 1980, to 18.8 percent in 2004. the rate among adolescents between 12 to 19 more than tripled, increasing from 5% to 17.1%.

An estimated 61% of overweight young people have at least one additional risk factor associated with becoming overweight. These include heart disease, high cholesterol or high blood pressure—factors that have been traditionally associated with much older adults. In addition, children who are overweight are at greater risk for bone and joint problems, sleep apnea, and social and psychological problems such as stigmatization and poor self-esteem. Overweight young people are more likely than their normal weight peers to become over weight of obese adults, adding additional risk factors such as stroke, several types of cancer, and osteoarthritis.

The consensus among pediatricians, school administrators, parents, and government officials is that healthy lifestyle habits, including healthy eating and physical activity, can lower the risk of becoming overweight and developing related diseases. Associated problems with a growing overweight population are reduced productivity, increased disability, and a greater number of overweight individuals requiring nursing home care as they move into retirement. Clearly the centerpiece of reducing childhood obesity is to reduce its health related and economic costs.

Clearly, we must tackle this problem head-on in order to save our youth. It is beginning as a grass roots movement in the classroom and will involve nutritionists, enlightened teachers, pediatricians, natural food retailers, manufacturers and suppliers of healthy foods. Listen up, guys. Masculinity isn’t defined by what you eat. It’s all about how well you hold up through the years, which means taking care of yourselves. So ditch the doughnuts, double burgers and draft beer, and adopt a healthier diet. Here’s how!

Back in 1982, a best-selling, humorous manifesto of masculinity known as Real Men Don’t Eat Quiche epitomized the male backlash against feminism, by then a formidable force in the American cultural landscape. But the joke, it turns out almost 25 years later, is on the men- and not just because quiche doesn’t have that many fewer calories than a Quarter Pounder. We may have maintained out mach-ness all these years by eating “manly food,” but we’ve become unhealthy and ultimately weaker because of it.

In 2000, the National Health & Nutrition Examination Survey revealed that among men 20 years and older, a whopping 65.1 million (67.2%) were considered overweight and 26.6 million (27.5%) were considered obese. Only 30.6 million (31.8%) of men 20 to 74 were considered to have a healthy weight. The fallout from such a fatness factor is that more men are dying each year of heart disease and related illnesses and more money than ever is being spent on health care (to say nothing of how poor male health affects the women and children who depend on the men in their lives). Another cheeseburger, guys?

Those numbers, though shocking at first, shouldn’t be that surprising. As a gender, men are more vain, ego-driven and stubborn than women. How does this manifest itself when it comes to wellness? Until a man is hit with his first health crisis, no matter what the age, he thinks he’s indestructible.

That’s why it’s so difficult to convince men to get regular medical checkups (which they should do especially when they hit 50). It’s not that many American men aren’t trying to lose pounds. It’s just that they are a bit misguided in their efforts. Weight-conscious men really gravitated to the Atkins diet. Why? Because at the same time the plan says to cut carbohydrates and increase protein, it gives men carte blanche to eat mass quantities of high-fat “manly” foods like beef and pork. Trading pounds for clogged arteries doesn’t seem like a good deal.

So the time has come for all American men to turn their testosterone-driven energy into changing their nutritional lifestyle. We have to stop eating the same high-caloric and fat-laden foods we usually consume in large doses and start pursuing a diet based on variety, moderation and balance. It’s time to start eating “new” man food: the kind of foods that will make us feel (and look) like a new man.

Out With the Old

But before we can embrace the new, we must wean ourselves off the old, particularly the male habit of eating food in humongous portions. Easier said than done because all of us, men and women, have found it hard to resist the marketing power of super sizing. Who among us wants to feel like and idiot because we didn’t double the size of pOPCorn, soda or french fries for a mere 49 cents? But resist we must.

We also have to steer clear of the killer Fs-fried food and fat. New York-based nutritionist Annie Hauck-Lawson, PHD, RN, says that also requires willpower because fried foods can be addicting. “They taste so good and fat conveys a lot of flavor,” she admits. “So the best strategy is going cold turkey to get that taste off the palate.” Hauck-Lawson also suggests not beginning a meal with fried foods or fatty meats.

“The start of the meal is when you’re the most hungry so you’ll eat the most during the first course.” She says. “If you start most lunches and dinners with a broth-based soup or a big salad, you’ll load up on high-fiber, high nutrient foods rather than high-fat foods and you’ll be too full to eat the bad stuff. Besides, food can be broiled with herbs and spices instead of being fried and still be delicious.”

Nutritionists like Hauck-Lawson strongly advise men to eat more fiber-base foods, which means adding more fresh fruits and vegetables (about five servings a day), whole grains and beans to the diet. Fiber may not sound manly, but it aids digestion, reduces the risk of colon cancer by moving waste out of your system, supports healthy cholesterol levels and makes you feel full so you won’t gorge yourself on those super-sized portions.

Hydro Power

And when you’re eating all those nutritious and healthy new man foods, please don’t offset the benefits by washing it down with soft drinks. Did you know that a can of cola contains 39 grams of refined sugar, which is equivalent to seven teaspoons of the sweet stuff? Okay, we know what you’re going to say when we mention water as an alternative. B-O-R-I-N-G! But you can’t ignore a liquid that is crucial to your hydration, digestion and metabolism. If you must drink something interesting with your meal, try an organic red wine, which can have a positive effect on cholesterol and blood pressure. (When the liquid is the meal, a smoothie can fill the bill.)

During and after your transitional phase into the new man food lifestyle, nutritional supplements can ensure that you get enough vitamins and minerals from your diet. And to women, smart is sexy.”

A wealth of scientific evidence now exists which should have turned each and everyone of us into a fat “phobic.”1a-e In other words, virtually every health expert agrees that a high fat diet is directly linked to cardiovascular disease, various types of cancer and premature death. It’s no secret that excess dietary fat poses a tremendous health risk. The United States National Institutes of Health, the World Health Organization and many other scientific institutes have confirmed the frightening hazards of fat. Health proponents generally concur that excess fat can significantly shorten one’s lifespan. More than 10,000 medical papers are published every year dealing with obesity and cardiovascular disease, two of the most insidious killers of Americans. Western eating habits, which promote fatty, salty, sugary foods, have created massive widespread disease and tremendous suffering. Studies have shown that fat is the macronutrient associated with overeating -

    and obesity.2 In spite of this finding we are eating more fat and becoming fatter. The average absolute fat intake has increased from 81 to 83 grams per day over the last ten years.3 Our obsession with fatty foods has exacted an enormous toll in the form of rampant obesity, clogged arteries, hypertension, heart attack, stroke, breast cancer, etc. Many of us remain oblivious to the fat gram count of foods we routinely pop into our mouths, unaware that one fast food entree may contain more fat grams than one should consume in one given day. Take a good look at the following list of foods which have been assessed for fat content. Fast food has become a 20th-century sensation which continues to boom and expand throughout our society. Many of us literally exist on fast food, which is frequently also “fat” food. It’s no wonder so many of us “battle the bulge”, and have skyrocketing cholesterol counts. Our love affair with greasy, fried, rich, creamy foods has burdened our bodies with the dilemma of excess fat “baggage,” resulting in phenomenal amounts of money being spent on weight loss programs. Worse still, thousands of Americans are dying before their time or living extremely compromised lives only because they ingest too much fat. Why is this? The bottom line is that fats taste good!5 Many of us were raised on seemingly innocuous foods that are loaded with fat. Some of these include:

    macaroni and cheese battered fish sticks hot dogs cheese-filled casseroles pepperoni pizza burritos pancakes, waffles doughnuts pies and pastries ice cream candy bars ramen soup

    Fat is also a major ingredient in most of the snack food we constantly nibble on, including chips, crackers, cookies, and nuts. Check ingredient labels to find the fat gram content of most snack foods. You’ll be surprised to find out just how fatty these foods are. Even a healthy sounding food like a “bran muffin” can contain 36 grams of fat! No wonder they stay so “moist”. In addition to the above foods, fat can add wonderful flavor to breads, vegetables and the like, and is usually used liberally in the form of butter, sour cream, whipping cream, melted cheese, cream cheese spreads, dips, cream sauces, and gravies. Fruits can also be high in fats. Did you know that one avocado has 30 grams of fat? One half cup of peanuts contains 35 grams of fat and only one glazed doughnut has 13 grams of fat. The majority of research points to fat as a much more dangerous culprit than anyone might have imagined. Saturated fats such as lard, palm, coconut oil, and beef tallow are particularly menacing. Research scientists have found over and over again that fats can contribute to the growth of tumors in animal studies.6 The National Research Council of the National Academy of Sciences reported that even a relatively small amount of extra body fat increases the risk of certain diseases for women and may compromise their longevity.7 Even being mildly overweight may be much more risky than anyone previously assumed.8

    The Relat ionship between Breast Cancer, Fat s, Fiber And Indoles

    Dr. Leonard Cohen, of the Dana Institute of the American Health Foundation at Naylor, believes that pre-cancerous lesions found in breast tissue will develop into cancer only if they are stimulated by certain agents such as fat.9 Women increase their risk of developing breast cancer when they consume a diet high in fat and animal protein and low in fiber, vegetables and fruits. When women put on weight, they have a tendency to create more estrogen since adipose tissue produces estrogen. Certain forms of estrogen, the so-called “bad estrogens” can act as carcinogens and are anything but desirable.10 High or unbalanced estrogen levels stimulate concerous tissue in the breast. Obesity is also associated with increased breast cancer mortality.11 The three most important ways to inhibit “bad” estrogen from inducing breast cancer are:
    1. Maintain an ideal body weight.
    2. Eat a diet high in fiber and low in fat (fiber helps to sweep excess estrogen from the bowel so it does not “recycle”).
    3. Consume enough cruciferous vegetables (broccoli, cabbage, cauliflower, Brussels sprouts, kale, radishes, watercress etc.) so that adequate amounts of dietary indole-3-carbinol enter the system.12 Indoles are phytonutrients which help us balance our estrogen levels and reduce the levels of “bad estrogen” present. When combined with a low-fat, high-fiber diet, indoles can provide the body with significant metabolic protection against breast cancer.

    The complexities surrounding the various types of cancer stem from the variety of ways in which these diseases can wreak their havoc. Luckily, the equally complex world of plants contains novel compounds that can help our bodies fight off cancer's deadly progress.

    Research Expands

    Research into these botanical compounds is mushrooming. An example: The mighty maitake, a fungus with flair, alternately known as the king (it can grow as large as a basketball, worth its weight in silver to the ancient Japanese); the prince; the Hen of the Woods (it sticks out of from trees when it grows in the wild); and the dancing mushroom to those who leaped for joy when they found one growing in its native northeastern Japan.

    Researchers today dub it with a new moniker: Herbal Heavyweight.

    Mushroom with Potential

    The maitake, with such other medicinal mushrooms as shiitake and reishi, historically has been eaten to promote general well-being and vitality. In the modern lab, however, scientists focus on the potent immune enhancing powers of maitake, which spotlight its cancer fighting potential.

    Twenty years ago, maitake, Grifola frondosa, was an obscure, largely unavailable mushroom. A series of significant Japanese studies then catapulted it into prominence-and popularity.

    Maitake Magic

    Hiroaki Nanba, PhD, of the department of immunology at Kobe Women's College of Pharmacy on Kobe, Japan, and a leading international researcher on maitake, conducted the preliminary tests on the mushroom, demonstrating that it stimulates immune function and inhibits tumor growth.

    In 1986, Dr. Nanba fed powdered maitake to mice injected with tumor cells; 86.3% displayed inhibited tumor growth.

    Dr. Nanba and his colleagues went on to run additional mouse tests, finally reporting that this potent mushroom "directly activates various effector cells (macrophages, natural killer cells, killer T-cells, etc.) to attack tumor cells."

    From then, maitake mushrooms were headed to fame as cancer ninjas.

    Stoking The Immune Engine

    Like other mushrooms, maitake is rich in complex polysaccharides, immunomodulators that successive tests after Dr. Nanba's have shown to be effective in cancer and AIDS treatment.

    The polysaccharides in maitake have a unique structure, rendering them some of the most powerful to be studied (Chem Pharm Bull 1987:35:1162-8).

    What makes maitake a particularly hot property is beta-D-glucan, its primary polysaccharide. Studies show that the body absorbs it readily, at which point it effectively stimulates interleukin-1, natural killer cells and macrophages, anti-tumor warriors that battle solid cancers (Chemotherapy 1990;38:790-6; also International Conference on AIDS, Amsterdam, 1992).

    Effective And Safe

    In addition to lab tests, trials on people have shown that maitake may offer powerful therapy against liver and stomach cancer (studies in China), breast and colon cancer (US research) and Kaposi's Sarcoma, the virulent cancer attacking AIDS sufferers.

    Importantly, studies show that no side effects or interactions accompany maitake's efficacy.

    Maitake fortunately has won the interest and enthusiasm of the scientific community. Currently, researchers at the Cancer Treatment Centers of America, headed by Denis Miller, MD, are completing an exhaustive test of the anticancer and immunostimulatory actions of maitake on folks with advanced colorectal cancer. These investigators hypothesize that the polysaccharide beta-glucans derived from the fruitbody of maitake fight tumors and boost immune function. "Though it cannot be said that maitake ...[is] the cancer cure," said Dr. Nanba in his closing remarks at the Adjuvant Nutrition in Cancer Treatment Symposium in Tampa, Florida, in October 1995, "one can safely say that they do maintain the quality of life of patients and improve the immune system, resulting in the possible remission of cancer cells with no side effects."

    More Bodily Benefits

    Maitake maven Dr. Nanba also has tested-with strongly positive results-the effect of maitake on blood glucose, insulin and triglycerides in mice, whose levels of all three substances declined when they were fed the mushroom (H. Nanba working paper, Anti-Diabetic Activity by Maitake Mushroom, 1994).

    With colleagues, Dr. Nanba showed that maitake lowered blood pressure in hypertensive rats (Chem. Phann. Bu//36:1000-1006,1988). Other studies suggest it may accelerate weight loss.

    This admirable adaptogen (meaning it helps the body adapt to stress and normalize its functions) is water soluble and may be eaten in food or taken as a supplement. Vitamin C is believed to intensify maitake's beta-glucans and enhance their absorption.

    Tea Time

    It's not just what you eat that may help protect against cancer, but what you drink as well. Research from China and Japan, where tea is the everyday drink and rates of several cancers like breast and prostate are lower, may persuade you to turn over a new leaf in your own beverage choice. One of the first studies to spark interest in tea came from Shanghai (Journal of the National Cancer Institute, June 1, 1994), where people who drank two to three cups a day were found to have about a 60% reduction in the risk of cancer of the esophagus. The reason: tea leaves contain compounds called polyphenols, potent antioxidants.

    In fact, in tests at the University of Kansas, three of these, known as catechins, far outshone the common antioxidant vitamins C and E. Clinical trials are just starting, but early results are encouraging. A team of Chinese scientists reported that in a third of people with precancerous mouth sores who drank three cups of a mixture of green and black tea the lesions shrank significantly.

    Researchers at the Saitama Cancer Center in Japan found that green tea seems to improve the prognosis of breast cancer. They followed a group of women with early-stage tumors for seven years. Those who drank more than five cups of green tea a day were only half as likely to suffer a recurrence as patients who consumed fewer than four cups a day.

    Lung Help

    And at the University of Indiana, toxicologist James Klaunig found that the lungs of cigarette smokers who drank the equivalent of six cups of tea a day suffered 40 to 50 percent less damage from the toxins in smoke, potentially lowering their risk of lung cancer and other pulmonary problems. Simultaneously, research from Purdue University suggests tea's cancer-discouraging powers go beyond being an antioxidant. Scientists Dorothy and D. James Morre showed that a tea catechin dubbed EGCG inhibits a growth-promoting enzyme on the surface of many cancer cells-happily without affecting normal cells. And researchers at the Ohio State University College of Medicine found that EGCG counteracted another enzyme, urokinase, that helps cancer cells spread. To top it off, Mayo Clinic scientists recently showed that EGCG prompted prostate cancer cells to commit suicide (Cancer Letters, Aug. 14, 1998).

    Tea Research

    So far, most tea research has focused on green tea, and investigators agree it's more potent than the black tea most Americans favor. But because both kinds come from the same plant, Camellia sinensis (it's the processing that makes the difference as black tea is fermented, green tea isn't) both contain cancer-fighting polyphenols, just in different quantities. As long as the tea you drink (even decaffeinated) is fresh brewed, it's likely to provide some benefit; powdered and prepared teas probably don't. And adding milk may dilute the effect.

    Astragalus Against Tumors

    Astragalus, an herb commonly used in Asia to boost stamina, has impressed western doctors for its potential for helping people cope with chemotherapy. As John Diamon, MD, W. Lee Cowden, MD and Burton Goldberg point out in the Definitive Guide to Cancer (Future Medicine), "Astragalus appears to protect the liver against the harmful toxic effects of chemotherapy and may be effective in treating terminally ill liver cancer patients." (They cite a study in the Jrnl of Ethnopharmacology 1990, 30:145-149.) In addition, they point out, research in Japan supports using a ginseng-astragalus combination to improve the function of natural killer (NK) cells which can boost immunity (Japanese Jrnl of Allergy, 37:2, 1998, 107-114).

    Other studies confirm astragalus' potential in fighting off cancer. Research at the General Hospital of PLA, Beijing, showed that flavonoids (pigments) in astragalus could help protect cell membranes from oxidative damage caused by ultraviolet exposure (Chung Kuo Chung Yao Tsa Chih, 21(12):746-8; 1996 Dec).

    A study of laboratory animals at Cunma University in Maebashi, Japan, found that Astragalus could help preserve immune function against the harmful side effects of chemotherapy (Chung Kuo Chung Hsi I Chieh Ho Tsa Chih, 15(2):101-3, 1995 Feb).

    Garlic Benefits

    Like a flame attracting moths, garlic bulbs have irresistibly drawn the attention of medical researchers. A study at Aarhus University, Denmark, found that skin cells in laboratory dishes treated with garlic supplements lived longer, healthier lives than untreated cells (Jrnl Ethnopharm, 1994. 43:125-133).

    Meanwhile, a long list of research demonstrates that garlic's phytochemicals may fight tumors and reduce the carcinogenicity of the pollutants and chemicals that assault us daily. A study in China reported in the American Journal of Chinese Medicine showed that garlic helped slow tumors in lab animals (1983, 11:69-73). Another study in the Journal of Nutrition found that compounds in garlic could "suppress the growth of human colon tumor cells" (126, 1355-1361).

    Added to those benefits, Robert A. Nagourney, MD, reports in the Journal of Medicinal Food (1:1, 1998, 13-28), garlic may "modify the carcinogenicity of foodstuffs." In other words, studies show that garlic can make chemicals in foods like pork less likely to cause your cells to become cancerous. (Ind J Physiol Pharmacol, 39:347-353).

    DNA Protection

    DNA, the stuff that genes are made of, face constant threats from free radicals, caustic molecules that can alter cellular structure and possibly cause genetic mutations that lead to cancer. But research into what are called oligomeric proanthocyanidins (OPC), flavonoids (pigments) derived from fruits vegetables, grape seed extract and the bark of maritime pine trees shows that OPC may be able to shield DNA from injury.

    In particular, studies of a grape seed extract called Activin have demonstrated this substance can help liver cell DNA escape a destructive process called peroxidation (FASEB, 11:3, 2/28/97).

    In these experiments, Activin demonstrated the ability to inhibit the growth of tumor cells as well as slow the replication enzymes of HIV viruses. This protective ability proved to be more potent than that of vitamin C, beta carotene and vitamin E.

    Future Promise

    What does the future promise to reveal? Scientists believe that many unexamined plants probably contain undiscovered phytochemicals that hold great potential for helping us fight the cancer epidemic.

    Certainly, if the next few years produce as many results as the past decade, the next millennium will witness a long line of cancer-prevention discoveries. Before long, you should be able to take advantage of these potent substances.

    As you gulp your garlic, tip your tea cup, mull your maitake, acquire Activin and await your astragalus, you may meditate on what may soon be added to our growing anti-cancer arsenal. Undoubtedly, scientists with a botanical bent will be uncovering more coveted anti-cancer secrets before too long.

The demand for the dressing grew every successive holiday season until Mr. Newman and Mr. Hotchner decided to go commercial: Sell the dressing and make it available to shoppers throughout North America. The profits go to charity, and Mr. Newman bestowed about a million dollars to worthy causes in the first year.

    In the early 80s, the Newman's Own brand started out with its Oil & Vinegar Dressing. Today they offer salad dressings, pasta sauces, salsas, pOPCorn, lemonade and other sauces. According to Mr. Newman, the two principles that rule the company are an insistence on top-quality products without artificial ingredients or preservatives and the donation of all after-tax profits from the sale of the products to educational and charitable organizations, both in the United States and foreign countries where the products are sold. Over $125 million worth have been donated since 1982.

    Americans are snackers. For instance, during the Superbowl, we munch on about 125,000 pounds of pretzels, chips, pOPCorn and nuts a minute; 30 million pounds by the end of the game. At work about half of us snack two or three times a day. By the end of today, as a group, we'll have eaten $22 million worth of candy-almost a million dollars an hour for every hour of every day.

    If you snack unwisely, these munchies can expand your waistline and sabotage your health. But if you snack wisely, you can keep your taste buds fulfilled, your brain working at top capacity and your body satisfied.

    When searching for snack satisfaction, think protein. Protein bars and protein shakes keep you feeling fuller longer on fewer calories than sweets.

    Second to protein, think fiber, as in fresh fruit, dried fruit, or whole grain breads and crackers.

    Unlike carbohydrates that break down into sugars and may be quickly stored as body fat, protein-rich snacks release sugar into your bloodstream at a slow, steady and healthy pace. That keeps you satisfied longer on fewer calories.

    "Protein is an important building block (for the body)," says Alicia Gonzalez, ND, a teaching fellow at Bastyr University in Kenmore, Washington. "It breaks down into amino acids as precursors to things like neurotransmitters, hormones and muscle."

    Besides eating protein-rich snacks, eat protein with every meal and eat it first. "It will help your body absorb sugar at a slower rate."

    "Protein and fiber are the best at helping the body absorb sugar at an optimal rate," says Jon Gordon, author of Become an Energy Addict (Longstreet Press).

    "Protein bars release sugar at a slower rate, resulting in more balanced blood sugar levels and greater overall energy," Gordon says. "You'll crave sugar less and will have a more sustained source of energy all day long."

    Protein Bars' Power

    "The biggest advantage of protein bars, besides their convenience, is the fact that they do have considerably more protein, say 10 grams, than candy bars, which can contain as little as 2 grams," says Dr. Gonzalez. Total fat tends to be much less in a protein bar, too.

    When choosing a protein bar, Dr. Gonzalez says, "Look for total protein content, say, between 10 and 12 grams and total fat, no more than 5 grams, and be careful with high sodium content."

    "Choose a protein bar closest to nature," says Gordon. "Like one with almonds and cashews. Nuts are full of nutrients and minerals. Nuts are also a source of fiber."

    If you exercise, protein bars with whey or soy protein make for quick replacement of necessary nutrients. "Eating a protein bar an hour before exercising helps to maintain that energy boost you need and replenishes minerals you lose when working out," says Dr. Gonzalez.

    Some protein bars, though, do a bait n' switch with saturated fats and trans fatty acids, says Dawn Weatherwax, RD, author of The Official Snack Guide for Beleaguered Sports Parents (WellCentered Books). "If the label says hydrolyzed or hydrogenated palm oil, that's as bad as saturated fat. People think they're doing the healthy thing by eating a protein bar but they end up getting the wrong type of fat."

    Besides protein bars, other healthy and healthful snacks include whole grain bread with peanut butter and cheese on whole grain, high-fiber crackers. "Mixing fiber and protein will help you sustain your energy," says Gordon. "Yogurt is also very good."

    Smooth Sailing

    "Smoothies are also wonderful (snacks)," says Weatherwax. "Add protein powder, silken tofu and fruit to them and you can have them as a meal replacement."

    "Nuts like cashews, almonds, seeds and dried berries are some of the best snacks that you can eat because you're not getting all that sugar," says Dr. Gonzalez. "Nuts have a good balance of good fat versus bad fat, including essential fatty acids, which are really important for cellular health and overall well-being. A combination of nuts, seeds and dried berries provides you with a good mix of all the vitamins and minerals along with the good fats that you need to be healthy."

    When snacking, think about variety. "Mix it up, have a protein bar one day, a protein shake the next," says Gordon. "Combine protein with a healthy carbohydrate and you'll have much more sustained energy throughout the day."

    Fuel for Your Fire

    "We're like a train, we need to keep the furnace stoked," says Weatherwax, a consulting dietitian for the Cincinnati Reds baseball team. "The goal is to eat every three or four hours. You have breakfast and lunch and you need an afternoon snack. That's the hardest one to get. Most people don't want to eat another sandwich; they want snack food. So a protein bar with a carb like a piece of fruit, an apple, orange or banana...is a great combination." "Studies show if you have moderate-size meals plus small between-meal snacks you increase your levels of energy and alertness," says Gordon. "It also optimizes your memory and performance and gives you a steady flow of energy rather than the rises and falls. Without healthy snacks your blood sugar falls and you experience fatigue and tension. Just as we need to constantly feed a fire with moderate-sized pieces of wood, we also need to continually supply our internal furnace with food that can be turned into fuel. This keeps our metabolism going strong and steady."

    "You want to stay between one-third and two-thirds full," adds Weatherwax.

    "Eating less in an effort to lose weight is actually deleterious in the long run," says Dr. Gonzalez. "When we don't eat our body gets mixed signals; it isn't sure when it's going to get its next meal. This makes the body want to store fat and sugar to save it just in case. On the other hand, if your body becomes accustomed to eating more often, the cells will be more inclined to use the fat up, knowing there is more food on the way."

    To program your body this way, don't skip meals. Have protein-filled breakfast like a protein smoothie and eggs. Follow up with healthy snacks like a protein bar or shake and regular meals.

    "Ideally, it's best to combine the macronutrients, the protein, carbs and healthy fats," says Weatherwax. "By mixing all three you actually burn more energy. One study shows that you burn an extra 35 calories."

    Nibbling on refined sweets can give you the snack blues. So let smart-snack strategies. Shift your mental outlook into high gear and use snacks wisely.

    Snacking and Exercising

    When you incorporate snacks into a consistent exercise program, you boost your chances of maintaining a healthy weight.

    To make a big difference in your day, Gordon says, get up a half an hour early to exercise. Next, eat a breakfast that includes protein and fiber, have a mid-morning snack, a healthy lunch, an afternoon snack and good dinner. Take a walk within 30 minutes of eating dinner and you'll give your body a double dose of get-up-and-go.

    "It exponentially increases your energy production and fat burning," says Gordon. Do all these things and watch your energy soar. "You'll fuel your life with real sustained power sources rather than the quick fix like coffee that's going to give you the rise in energy and then fall."

    You don't need to be told to keep on snacking. Just keep to the protein and fiber side of the snack street.

    Most folks wouldn't seek the distressing distinction of suffering chronic fatigue syndrome. Aside from a dizzying array of discomforts associated with the malady, the lack of a definitive cause, and few remedies offered by the medical establishment, scornful skeptics lob accusations of laziness or boredom or just plain moodiness. "Snap out of it!" they say, with little sympathy or understanding. "Just get moving!"

    But if you're one of more than 3 million Americans affected by chronic fatigue, you know your problem is not all in your head. Your symptoms are real and they extend far beyond mere tiredness. In addition to a debilitating sense of fatigue that can make everyday existence feel like an overwhelming struggle, you may suffer from impaired concentration and memory, recurrent sore throats, nagging headaches, muscle and joint pain, swollen lymph nodes and fitful sleep. The persistence of any one of these effects alone could be debilitating, but the overall diminished capabilities of the chronic fatigue sufferer can become the most discouraging aspect of the disease.

    But before you give up hope on kicking this energy-sucking ailment, look to natural ways to boost your immune system and regain your stamina for a more healthy and productive life. New research points to powerful, energy enhancing supplements which, combined with a nutritious diet and stress reducing techniques, can help you reclaim your body from a swamp of sluggishness.

    Yuppie Flu?

    Part of the public's misconceptions about chronic fatigue syndrome (CFS) may stem from vague definitions of exactly what it is and its causes.

    In the '80s, CFS was often mentioned in the same breath as the Epstein-Barr virus, which garnered much notoriety as the "yuppie flu": a state of chronic exhaustion that often plagued young, overworked professionals, as the media trumpeted. CFS was initially thought to be the result of the Epstein-Barr virus, and the two were often considered to be the same thing. Since the Epstein-Barr virus causes mononucleosis, the term "chronic mono" was also thrown around to refer to long-lasting states of fatigue.

    Today, CFS is defined as a separate disorder from the Epstein-Barr syndrome. Researchers have found that CFS is not caused exclusively by the Epstein-Barr virus or any other single infectious disease agent. According to the Centers for Disease Control (CDC) in Atlanta, CFS may have multiple causes, in which viruses or other infectious agents might have a contributory role. Some of these additional possible culprits include herpes simplex viruses, candida albicans (yeast organisms), or parasites.

    According to the CDC, a person can be definitively diagnosed with CFS when she or he experiences severe chronic fatigue for six months or longer that is not caused by other medical conditions, and must have four or more of the following problems recurrently for six consecutive months: tender lymph nodes, muscle pain, multi-joint pain without swelling or redness, substantial impairment in short-term memory or concentration; sore throat, headaches, unrefreshing sleep and postexertional malaise lasting more than 24 hours.

    Even if you are not diagnosed with CFS, you could still probably use some help in fending off fatigue. You may suffer from another poorly understood condition like fibromyalgia, which causes similar symptoms of exhaustion and pain with additional stomach discomfort. You may cope with another ailment like hypoglycemia or low thyroid function that zaps your energy. Or you could be like almost every stressed-out American adult trying to do it all at the expense of your well-being. Though researchers still search for a definitive cause for CFS, one thing is certain: Constant stress and poor nutritional habits weaken the immune system's ability to ward off a host of debilitating viruses and organisms. So before you run yourself down and succumb to a chronic condition, learn how you can build up your defenses now.

    Nutrient News

    Some of the most exciting new research in CFS treatments focuses on NADH or Coenzyme 1, an energy-enhancing nutritional supplement. This naturally-occurring substance is present in all living cells including food, although cooking destroys most of it. Coenzymes help enzymes convert food and water into energy and NADH helps provide cellular fuel for energy production. It also plays a key role in cell regulation and DNA repair, acts as a potent antioxidant, and can reportedly improve mental focus and concentration by stimulating cellular production of the neurotransmitters dopamine, noradrenaline and serotonin.

    A recent study conducted at Georgetown University Medical Center in Washington, DC, and reported in the February 1999 issue of The Annals of Allergy, Asthma & Immunology, showed that chronic fatigue sufferers improved their condition significantly by taking Enada, the stabilized, absorbable, oral form of NADH. The researchers found that 31% of those who took the supplement achieved significant improvement in relief of their symptoms, and a follow up study showed that 72% achieved positive results over a longer period of time.

    Coenzyme-A and Coenzyme Q-10 (Co-Q10) are related coenzymes also necessary for energy production.

    According to Erika Schwartz, M.D., and Carol Colman, authors of Natural Energy: From Tired to Terrific in 10 Days (G.P. Putnam's Sons) CoQ10 in combination with the nutrient carnitine enhances cellular energy production, thereby boosting energy levels. Coenzyme-A is required to initiate the chemical reactions that involve the utilization of CoQ10 and NADH for the production of energy at the cellular level.

    Another important energy-enhancing nutrient is D-ribose, a simple sugar that is crucial to many processes in your body. D-ribose stimulates the body's production of adenosine triphosphate, or ATP, an energy-rich chemical compound that provides the fuel for all body functions. D-ribose is essential to the manufacture of ATP and maintaining high levels of energy in the heart and skeletal muscles.

    Vitamin A: Helps protect the body against invasion by viruses that could trigger CFS, as well as bacteria, fungi and allergies. Supports the production and maintenance of healthy skin and mucous membranes, the body's first line of defense against invaders. Also supports the immune system by boosting T-cell activity and contributing to the health of the thymus, the immune-regulating gland.

    Vitamin B Complex: Depression and fatigue can result from the body's depletion of B vitamins, which can occur from stress or drinking too many caffeinated beverages. Studies have provided preliminary evidence that CFS patients have reduced functional B vitamin status (J R Soc Med 92 [4], Apr. 1999: 183-5). The 11 factors of B complex are crucial to glucose metabolism, stabilization of brain chemistry and inactivation of estrogen, which regulate the body's levels of energy and vitality. n Vitamin C: Helps prevent fatigue linked to infections by stimulating the production of interferon, a chemical that can limit the spread of viruses. Helps fight bacterial and fungal infections by maintaining healthy antibody production and white blood cells. Also necessary for production of adrenal gland hormones which help prevent exhaustion in those under stress.

    Bioflavonoids: Help guard against fatigue caused by allergic reactions; their anti-inflammatory properties prevent the production of histamine and leukotrienes that promote inflammation. Bioflavonoids like quercetin are powerfully antiviral.

    Vitamin E: Has a significant immune stimulation effect and, at high levels, can enhance immune antibody response.

    Zinc: Immune stimulant; improves muscle strength and endurance. Constituent of many enzymes involved in metabolism and digestion. n Magnesium and Malic Acid: Important for the production of ATP, the body's energy source.     "In China," she says, laughing, "they do make chicken soup, and they do think of it as healing, because they add astragalus and shiitake mushrooms. Vegetable soups with chicken or fish have high nutritional value and are easy to digest."

    The same principle applies to juices, Brett says. Juices are a good way to tastefully get more phytonutrients from fruits and vegetables into your diet. Toss in protein powder, and you can make a complete meal in your blender.

    "You get more energy from juicing," she explains, "more accessible nutrients and carbohydrates that are not bound up in fiber." Brett's additional recommendation: oatmeal.

    "It's got protein and carbohydrates combined with a lot of minerals, which you may not get from a sugary cereal," she says. "Sure, they spray some vitamins on them, but if you don't drink the milk in the bottom of the bowl, you'll miss out on them. You might as well take a multivitamin."

    Fabulous Fiber

    Look to fiber for superior energy enhancement. Natural Energy author Schwartz calls it downright "miraculous": "In terms of conserving precious energy, fiber-rich foods are your cells' best friends," she writes. "It takes smaller quantities of them to give you a full, satisfied feeling. They release all their benefits slowly, which allows the cells to extract nutrients with much less effort. Then these fiber-rich foods graciously leave the body with ease and efficiency." Among these "slow burn" foods that Schwartz says raise blood sugar slowly and steadily and maintain energy evenly:

    Alfalfa sprouts-high in fiber and low in cholesterol.

    Apples-one medium unpeeled provides 10% of the recommended daily fiber dose; unlike sweeter fruits, which are rich in healthful fiber, they help regulate blood sugar.

    Broccoli-along with such greens as cauliflower, cabbage, kale, collard greens and broccoli rabe, it's packed with fiber, vitamins and minerals n Brown rice, wild rice, other whole grains-fiber treasure troves, including barley, quinoa, millet and buckwheat.

    Corn-excellent fiber source.

    Lentils and other legumes-high in fiber, delicious beans are rich in culinary possibilities.

    Oat bran and wheat bran-mix into yogurt or add to cereal for the best available access to fiber.

    POPCorn-an excellent snack.

    Citrus for More Energy

    If constant colds and infections are draining your energy, healthy helpings of citrus fruit may be the pickup you need. According to Robert Heinerman, in Heinerman's Encyclopedia of Healing Juices (Parker), citrus fruit have been used for more than a thousand years as natural remedies for a wide variety of ailments:

    Kumquat juice is supposed to help clear up bronchitis. Lemon juice with a pinch of table salt eases a sore throat. Lime juice in warm water soothes aches and cramps from the flu. Tangerine juice can break up mucous congestion in the lungs. Along with citrus' vitamin C, these fruits also supply carotenoids, antioxidants that provide disease-preventing benefits. Citrus also often contain calcium, potassium, folate (a B vitamin that fights against heart disease), iron and fiber.

    Fruits are loaded with phytochemicals, naturally occurring chemicals that give fruit their vibrant colors. Yellow, red and orange fruits are also high in flavonoids, like quercetin, a substance which fights cancer. Quercetin also aids in prevention of cataracts and macular degeneration, according to author Stephanie Beling, MD, in her book Power Foods (Harper Collins).

    Even the US Department of Agriculture agrees on this flavonoid's benefits, noting in its phytochemical database that quercetin is an "antitumor promoter, antiasthmatic, anticarcinogenic, antiplaque, cancer-preventive, capillariprotective." (Quercetin is also available as a supplement.)

    Don't Avoid Avocados

    For a vitamin rich food, few items beat the avocado which holds vitamins E and C as well as some B vitamins (B6, niacin, riboflavin). A significant source of beta carotene, though not nearly as much as carrots or sweet potatoes, avocados also contain high amounts of the minerals potassium, magnesium, copper and zinc.

    Just 15 grams of avocado delivers about 81 international units of vitamin A as beta carotene. Beta carotene, a carotenoid in fruits and vegetables, is converted to vitamin A in the body. This vitamin, aside from providing antioxidant protection from damaging free radicals, is necessary for good eyesight, healthy skin and healing.

    In addition, the avocado, like all of these healthy foods, tastes great. Which means that you can pep up and not have to sacrifice taste for zest.

    Healthy Mind, Healthy Body

    Remember that the path to wellness begins in your mind. Stress-reducing activities like yoga, meditation and massage and aromatherapy can have a great rejuvenating effect on your body. If you can learn to handle stress effectively instead of letting it control you-and strengthen your system with the right nutrients and diet-you'll find that fatigue can be a sporadic visitor rather than a chronic companion.
