Diabetes is an inflammatory condition caused by the autoimmune system, and manifests as resting hyperglycemia. Your blood glucose levels have to be maintained within fine concentration limits: both too high and too low a blood glucose concentration can be dangerous to your well being.
Your blood glucose level is generally controlled by insulin and glucagons, both of which are biosynthesized in the pancreas. Insulin works by making the glucose bioavailable to the mitochondria to convert into energy, while glucagon, the lesser known of this twosome, stabilizes the level of insulin and mobilizes it to do its job. There are two types of diabetes, known as Type I and Type II or A and B.
Type I diabetes, also known as juvenile onset diabetes, is an autoimmune condition in which the immune system destroys Beta cells because they are recognized as being foreign. It is the Beta cells that generate insulin, and so the condition can be fatal. Patients with Type I diabetes must take insulin throughout their lives, and while potential cures are currently under investigation, none are yet available. Although insulin can be effective it does not guarantee survival, and a better form of treatment is required.
Type II diabetes is by far the more common of the two, and is a form of resistance to insulin, where the body cells cannot use insulin properly. The pancreas initially reacts to this by producing more insulin in response to the increased blood glucose level, but through time it loses its ability to produce insulin as a reaction to an increase in blood sugar, even though this occurs as a result of digesting a meal.
The exact causes of either type of diabetes are not known for sure, although the general mechanism by which they work is known. However, Type II diabetes is believed to be due to some form of interaction between genetics and environment, and it is known that the majority of Type II sufferers are obese and also over 40.
The treatment for this type of diabetes is rarely insulin, but a controlled diet, control of your cholesterol level and blood pressure, exercise and specific medicines designed for sufferers of this form of diabetes. However, there are also natural supplements that can be used to control your blood sugar levels. Diabetes was the sixth leading cause of death of the USA in 1999, with 450,000 deaths, and by 2005 had reached about 300 million sufferers world wide. It is therefore a serious and widespread condition, though Type II is less serious than Type I.

The most important means of control is to reduce your blood sugar levels. Chromium: chromium helps your body to use insulin properly. When taken in the form of chromium picolinate, it helps to replace chromium that diabetics appear to be short of. Human studies have indicated that chromium can decrease insulin levels and improve the metabolism of blood sugar in those with Type II diabetes. Some claim that chromium is harmful to health, but the general opinion is that it helps, though you should consult your doctor before using it.
Cinnamon: If you take cinnamon daily, your blood sugar levels should gradually decrease. It appears to enable your cells to make better use of the insulin your blood, although there still discussion as to the mechanism by which this occurs and of the active ingredient in cinnamon that promotes it. Since 1986, any food sold in the United States that has been irradiated must, by law, disclose that fact to the consumer, by bearing the international radura symbol as well as the words “treated by irradiation” or “Treated with radiation.” However, if the FDA has its way, all that could change. The agency put forth a proposal in April which would require that packaging only reveal a food has been irradiated if the process created a “material change” in the food, such as a change in color, texture, or taste outside of the normal variances for the food. Additionally, the FDA is proposing allowing food manufacturers to substitute the word “pasteurization” for irradiation,” which has a decidedly negative association in the American consumer’s mind.
Does irradiation = pasteurization?
The bit about swapping the term “pasteurization” for “irradiation” is not actually new. Food manufacturers have been allowed to do that since the passage of the 2002 farm bill, which broadened the legal definition of pasteurization to include “any safe process that is at least as protective as pasteurization and is reasonably certain to kill the most resistant pathogens likely to occur in food.” The California Almond Board, apparently inspired by that legislation, recently announced its decision to irradiate raw Almonds and label them “pasteurized.” However, most people still understand the old definitions, whereby pasteurization means using heat to destroy pathogens and irradiation means using ionizing radiation to do so.
Consumers want to know
What is new about the current proposal is the suggestion to lift the requirement that irradiated foods be labeled as such. And that won’t go over so well among consumers. According to a 1997 poll commissioned by the American Association of Retired Persons and Center for Science in the Public Interest, 88.6 percent of Americans want irradiated foods to be labeled. Indeed, the last time the FDA made a move to allow irradiated foods to go label free, the agency received more than 5,000 comments on the issue.
What’s at stake?
According to the consumer group Center for Food Safety, irradiation can create potentially dangerous chemical byproducts, such as benzene and toluene; cause stunted growth in lab animals fed irradiated foods; and reduces foods’ nutrition value.
Noting irradiation’s unpopularity, the FDA stated that if foods treated with irradiation were not required to be labeled, more manufacturers would probably opt to use it. The agency is particularly concerned given the E.coli outbreak last November in fresh spinach.
Fortunately, even if the proposal becomes law, there will still be one surefire way to avoid irradiated foods: buying Organic.

Although high in fat, nuts contain oils that reduce the risk of coronary heart disease. Nuts also contain potentially cardio protective components including phytosterols, tocopherols and squalene. Walnuts, Almonds, pecans, Brazil nuts and macadamia nuts were all found to be good sources of these compounds. Diets that included one or two servings of macadamia nuts a day have been shown in studies done in Brisbane Australia and Honolulu Hawaii to improve blood lipid profiles as effectively as low-fat, complex carbohydrate diets. Furthermore, scientists at the Harvard School of Public Health found that eating nuts and peanut butter reduced the risk of type II diabetes in women. The researchers suggest that nuts might replace refined grain products, and red or processed meats as a way to limit caloric intake.
The Lowly Goober Gets New Respect
Americans eat more peanuts and peanut butter than all other nuts combined. A Pennsylvania State University study of 13,000 men, women and children revealed that peanut eaters have higher intakes of several hard-to-get nutrients compared to those who did not consume peanuts. Peanut butter and peanut eaters have increased levels of vitamin A, vitamin E, folate, Calcium, magnesium, zinc, iron and phytonutrients resveratrol, beta sitosterol and p-courmaric acid. What’s more, peanut eaters also had leaner bodies than non peanut eaters. This study helps to dispel the myth that higher-fat foods automatically lead to weight gain.
The peanut Butter Diet evolved from studies such as this that showed the benefits of eating peanuts and peanut butter, particularly their high satiety factor. In one small study, ten health workers aged fifty-plus, consumed 1500 calories healthy and moderate fat (35%) diet that included two tablespoons of peanut butter eaten twice a day. The woman had at least one cardiovascular risk factor – high blood pressure, altered blood lipids or diabetes. Peanut butter was chosen because previous studies at Harvard/Brigham Women’s hospital had shown that over an eighteen-month period, three times as many women stuck with a diet that included peanut butter or peanuts, because of a hunger curbing effects.
Peanuts contain about 2 grams of fiber per tablespoon and when spread on two slices of whole-wheat bread, deliver six grams of fiber. Peanut butter makes some yummy sauces. The barbecued ribs a group of scientists and I prepared during a recent weekend at the Culinary Institute of America Greystone in California’s Napa Valley where the best I have ever eaten.
Tropical Oils
The term refers to coconut, palm kernel and palm oils. These oils contain a variety of fatty acids, but unlike olive, macadamia and peanut oils, which contain high levels of unsaturated fatty acids and are liquid at room temperature; tropical oils have high levels of saturated fats and are solid at room temperature. They are gaining popularity as food manufacturers push to replace hydrogenated oils that contain trans fats. The latest hoopla over coconut oil has been its inclusion in weight loss regimens. Two books featuring coconut products have hit bestseller lists. Moderate increase of tropical oils including coconut and palm appear to improve blood lipid profiles largely because of their high lauric acid content.
The health benefits of medium chain triglycerides (MCTs) such as caprylic and lauric have been known for some time. Lauric acid has been found to improve blood lipids and red palm oil is rich in antioxidants such as beta-carotene and tocotrienols, the vitamin E active constituent. However, there is concern among some experts that eating to many saturated fats, including the tropical oils used to make trans fat free margarine and shortening, can have deleterious effects on cardiovascular health.
In addition, there are differences in processing palm and palm kernel oils that make some choices unhealthy. According to Dr. Andrew Weil palm oil is a better choice than palm kernel oil because chemical solvents are needed to extract palm kernel oil while none are required to press the oil from palm fruit. Fractionation is used to process palm and palm kernel oil and eliminates many of their natural antioxidants, which makes them the least desirable of the tropical oils. It seems prudent to check ingredient labels for fractionated palm kernel oil and avoid it. Best of all, look for Now Organic Coconut Oil that has an impressive resume for boosting immunity. Cardiovascular disease is on the rise. Heart disease, stroke, and related disorders kill more Americans than any other ailments combined. In 1990 approximately one million Americans died form cardiovascular disease. Arteriosclerosis (hardening of the arteries) is the leading cause of heart attacks and strokes. Fat and cholesterol accumulate around the heart and inner walls of the arteries. This causes blood flow to slow and blood pressure to rise. Blood clotting is also a problem when the arteries are clogged which, if a clot breaks loose, can cause strokes or heart attacks according to where they end up. Heart disease is usually advanced before a problem arises. Prevention should be the first goal.
Heart disease is much less common in “primitive” societies. This is due in part to the lifestyle and diet choices of Americans. Diet is viewed as the most important factor in heart related disorders. An increased intake of sugar, refined flour and simple carbohydrates may also be contributing factors. Other risk factors include a family history of heart disease, cigarette smoking, high blood pressure, type A personality, stress, diabetes, obesity, high blood cholesterol levels, physical inactivity and coronary artery disease. Changes must be made in diet and life-style in order to prevent heart disease.
DIET
Following a diet low in animal fat and refined sugars but high in fiber is highly recommended. Whole grains, Almonds, fresh fruits and vegetables, a variety of legumes, skinless turkey, chicken and fish should be the main dietary elements. Brown rice, garlic, onions, olive oil, raw fruits and vegetables, sprouts, asparagus, apples, bananas, beans, buckwheat, seeds, whey powder, and yogurt are especially good for the heart. Cancer has always been a word no one wants to hear from a doctor's lips. But as a fatal disease, cancer has gone from dread to worse, passing heart disease as the number-one killer of Americans under the age of 85 (a category that includes the overwhelming majority of us). While death rates for both illnesses has dropped over the past few years, the improvement has been much more pronounced for cardiovascular disorders.
According to the American Cancer Society, 476,009 people died of cancer in 2002 (the last year for which statistics are available). Behind every one of those numbers is a web of lives tangled by cancer's relentless onslaught: A child who misses a mother's comforting arms, a bride without a father to walk her down the aisle, a spouse coming home to a dark, cold house every night. And for those fortunate enough to survive a cancer encounter, there's always the dark worry of recurrence that surfaces with every ache or twinge.
Many people think of cancer as either a random calamity of a genetically driven inevitability, but it ain't necessarily so. Diet is coming up big as a major cancer-risk player: For example, eating a lot of red meat, especially highly processed meats such as bacon, has been linked to high colorectal cancer risk in an investigation published by the Journal of the American Medical Association. On the positive side, a number of nutrients have shown cancer-fighting power, such as the recently discovered link between the B vitamin folate and reduced risk of colon and other cancers (see page 57). Ginkgo has achieved unprecedented popularity within the last decade and has become a familiar household term. Because interest in treating diseases like Alzheimer’s has escalated over the last decade, the biochemical capabilities of ginkgo in regard to brain function have been investigated and are still being researched. Ginkgo is one of those herbs that has become intrinsically connected with notions of herbal elixirs capable of pre s e rving youth and promoting longevity.
Ginkgo comes from the oldest species of tree in the world dating back some 200 million years. Some ginkgo trees have been known to live well over an average of 1000 or more years. The ginkgo tree is also known as the “maidenhair tree” and would have probably become extinct if the trees had not been cultivated in Far Eastern temple gardens and nurtured by Oriental monks.
Ginkgo is a deciduous conifer with separate male and female types. It resembles the pau d’arco tree and like pau d’arco, possesses an unusual immunity to insects and diseases. Ginkgo’s remarkable hardiness enabled it to survive the atomic blast at Hiroshima. Because of its unprecedented longevity, ginkgo biloba has sometimes been referred to as a living fossil.

Pharmacologically, there are two groups of substances which are significant compounds found in ginkgo: the flavonoids, which give ginkgo its antioxidant action, and the terpenes, which help to inhibit the formation of blood clots. The majority of scientific interest has focused on Ginkgo’s ability to improve the circulation of blood. O ver the past twenty years, scientific testing on the plant has dramatically escalated. Ha rva rd professor Elias J. Core y, Ph . D , synthesized ginkgo’s active ingredient, ginkgolide B, for the first time in the laboratory. Consequently, stepped-up research in this country and in Eu rope resulted. Ginkgo has been the subject of over 300 scientific studies and continues to intrigue scientists. Much modern research has confirmed ancient applications of ginkgo as well as discovered new ones.
Ginkgolide, the active component of the herb, is what creates most of ginkgo’s biochemical attributes. Exactly how ginkgolide B functions is not yet known. One theory is that the compound somehow interferes with a chemical found in the body called PAF (platelet activating factor). Everyone wants thick, lustrous hair. Think of the allure attached to the locks of Samson and Lady Godiva and-fast-forward to the present-the full heads of Antonio Banderas and Julia Roberts.
" We're naturally attracted to hair as humans; it catches the light, it frames the face, we like the feel of it," says Catherine Jones, ND, LAc, a resident naturopathic physician at Bastyr Center for Natural Health in Seattle, Washington. "Fair or not, historically in many cultures, rich, thick hair has been a sign of fertility and strength."
Along with that allure, latching onto natural ways to have great-looking hair gives you the benefits of looks and health. Every hair starts with a shaft that grows from a root. "The root is contained deep within the hair follicle," says Dr. Jones. "Each one has a sebaceous or oil gland, which supplies the hair with necessary lubrication as it approaches the surface of the scalp." Each hair follicle has its own growth cycle, including a resting period, the telogen phase, when hair falls out. Because of these constant hair phases, each of us loses, on average, about 100 hairs a day.
" The number of hairs the average person loses in a day tends to increase in the fall as the leaves fall from the tree and tends to decrease in the spring as the bulbs emerge from the soil," Dr. Jones says. "We really are connected to nature." Stress-due to rapid weight loss, infection, anemia, prolonged illness, hormonal changes, hypoactive thyroid disease, autoimmune conditions, eczema or psoriasis-can influence hair growth and loss.
The Nature of Hair
Hair consists of proteins, lipids (fats), carbohydrates and pigment (gray hair has reduced pigment; white, none at all). Each shaft's structure is divided into a medulla, a cortex and an outer cuticle. " The cuticle is coated with an outside lipid-like layer, which protects the hair," says Dr. Jones. "As the hair grows out of the follicle, the cortex and cuticle become keratinized and harden." Dry or damaged hair is more susceptible to breakage. "The condition of the cuticle affects how the light reflects off the hair, giving it highlights and luster," Dr. Jones says. "Luster is affected both by what occurs inside the body as the hair is developing and what happens to the hair after it has grown from the shaft."
Sun, heat, moisture, pollution and hair products, dyes and bleaches can all dull the hair. "Applying chemical solutions to the hair, color, permanent waves or curl relaxers, damage the protein molecules that wrap around the shaft, leaving hair brittle and dull," says Christina Pirello, author of Glow: A Prescription for Radiant Health and Beauty (HP Books).
Conditioners and oils can leave a residue or weigh hair down. Hair sprays and products that contain alcohol can dry and damage the hair, as can using blow dryers and curling irons.
Hair's Natural Nutrients
To combat hair-raising havoc, feed your hair natural nutrients for health. Silica and plants that contain silica/silicon both strengthen hair and promote growth. "Silica is a good mineral for hair health," says Walter Siegordner, founder of The Aurora Group, a personal care company. "It helps in the keratinization process of the cells that produce hair."
" Silica is a mineral that is involved in the synthesis of bone and connective tissue," adds Dr. Jones. "The hair follicle contains connective tissue so silica may promote the health and function of the follicle itself." Silica-containing herbs include nettles (Urtica dioica), horsetail (Equisetum arvense), oatstraw (Avena sativa) and alfalfa (Medicago sativa).
Sea plants like seaweed and kelp also provide vital nutrients. "Sea plants are essential ingredients in many natural shampoos and can be used to fortify damaged hair," says Pirello. "They're rich in vitamin A that prevents the build-up of dead skin cells, which can clog the hair follicles, inhibiting the growth and health of the hair, and also contain vitamin B, linked to the prevention of oily hair, baldness and dandruff. Calcium found in sea plants is essential to the structure of the hair shaft."
Eaten on s daily basis, sea plants are rich in nutrients that help maintain healthy, shiny hair, free of split ends, Pirello says. Try wakame in soups and salads, kombu or kelp in bean and vegetable dishes, nori in sushi, and hiziki and arame as side dishes. Since hair health is affected by digestive health, the fiber found in whole grains also helps. "Fiber prevents accumulation in the intestines that can result in the formation of toxins," says Pirello.
Miso, she adds, is especially good hair food. It "is rich in living enzymes that ease digestion, fortify the quality of the blood nourishing the body and hair, and provide us with essential oils, vitamins and minerals."
Key nutritional support includes adequate protein and amino acids, essential fatty acids such as cold-pressed flax seed oil and fish oil, copper, vitamin A, vitamin E, vitamin D, biotin, iron and vitamin B5 (pantothenic acid). Zinc and selenium can help combat the effects of hyperthyroidism, which can result in thinning, lackluster hair.
Vitamin C can boost adrenal health. "When the adrenals are overtaxed and become fatigued, hair follicles will go into a resting phase," says Dr. Jones. (If you have a medical condition, she adds, check with your health care practitioner first before taking supplements.)
Ancient Chinese Hair Secrets
In Traditional Chinese Medicine, hair is associated with the kidneys' qi, energy that originates in these organs, and with blood quality. " From the traditional Chinese perspective, excess amounts of fat, protein, dairy, sugar, alcohol and salt in the diet acidify the body, damage the Kidney qi and are not good for the hair," says Dr. Jones. A diet rich in vegetables and grains is a great way to support healthy hair. "Iron and mineral-rich foods are considered blood builders and hair tonics. Foods such as blackstrap molasses, seaweed, nettles, and the herb polygonum multiflorum (also known as He Shou Wu and Fo-Ti) have been used throughout the years. Fo-Ti has also been used to prevent graying of the hair and support the immune system."
Revive Hair Glow
" Hair is extremely strong but at the same time it's extremely delicate," says Barsoum Bouchar, a cosmetologist and owner of the Virtuoso Salon in Birmingham, Michigan. "Many products work against the hair texture, so the cuticle is always raised. This causes tangles and split ends. With blow dryers, chemicals, colors and styling elements, the hair is tremendously abused." If you don't have to chemically treat the hair, he says, don't.
When replenishing the hair it's important to remember that it's composed of 97% protein and 3% moisture, says Bouchar. Shampoo cleanses the hair and removes buildup. "A moisturizer brings moisture back into the hair and smoothes the cuticle down, which is what makes hair shiny and gives it bounce. The one key ingredient in both shampoo and moisturizers is aloe vera. It heals the hair." " Avoid products with harsh surfactants like sodium laurel sulfate and propylene glycol," warns Siegordner. "These decrease the circulation in the scalp, reducing the pathway for nutrition to the hair bulb." Conditioners that aren't natural can also cause build-up. "When you apply heat to the hair through blow drying or styling, you end up 'burning' the hair," says Bouchar.
To stimulate hair growth, add a few drops of essential oils of rosemary, lavender and thyme to jojoba and Almond oils, and rub into the scalp. Leave it overnight and then rinse it off. " Essential oils have antimicrobial and antifungal properties, stimulate the circulation to the hair follicles and combat dryness. They also smell good," says Dr. Jones.
For hair that's not chemically treated, "a vinegar rinse cleanses the hair, removes build-up and boosts shine," says Bouchar. Use one part vinegar to ten parts water, apply after a shampoo, comb though and rinse it off. To naturally lighten the hair, use the same ratio in a lemon rinse for five minutes for, say, four days in a row, and then stop.
If you want to color your hair, choose natural elements, too. "The best natural dye is henna," says Bouchar. "It's organic, just like hair is." Blonde hair becomes warmer with a coppery tone, brunette hair takes on a mahogany hue, gray hair looks like highlights.
Go Natural
To find a good natural hair stylist, Bouchar suggests asking which products they use and why. If your hair is chemically treated, it's especially important to work with a stylist you trust for the best care.
Keep your eye on the big picture when it comes to hair health. "Be proactive and treat the body holistically," urges Dr. Jones. "Nourish the glands, the organs and the vessels that are responsible for getting the necessary nutrients to the hair follicle. Pay attention to the physical, emotional and mental aspects of health. Once hair is lost it may come back but it will likely be thinner than it was before. It's important to take care of what you have."

It's a diet food, it's a health food. Any way you look at it or eat it, soy's combination of benefits and its versatility as a component of a heart-healthy diet have led to a widespread popularity that continues to grow.
No matter what your taste preference, a soy food is available to satisfy your picky palate and cater to your cardiovascular well-being.
Annual sales of soy in the US continue to grow more than 10% a year, edging toward the $4 billion mark. Today, the average American consumes about 10 mg of soy protein a day, even though the American Heart Association (AHA) recommends taking in at least 25 mg of soy to benefit your heart. Even the Food and Drug Administration (FDA) has signaled its approval of the soy bandwagon, allowing claims that daily soy can help lower the risk of cardiovascular complications.
As Good as a Drug
Researchers who have investigated how soy can help lower cholesterol and shrink the risk of heart disease have concluded that soy, in a diet with fruits and vegetables, can be as effective as cholesterol-reducing drugs (JAMA 7/22/03).
Researchers at the University of Toronto and St. Michael's Hospital compared the cholesterol-lowering power of soy and other vegetarian foods with that of lovastatin, a standard pharmaceutical used to reduce cholesterol.
In the study, scientists fed people a diet that, along with soy, had large amounts of nuts, such as Almonds and walnuts, and high-fiber foods like oats and barley plus margarine made with plant sterols (natural substances derived from leafy greens and vegetable oils). Researcher David Jenkins, PhD, a nutrition science professor, thinks these foods may be good at dropping cholesterol because human evolution makes us well-adapted for an "ape diet," one high in fiber, vegetable protein, nuts and plant sterols.
According to Dr. Jenkins, "As we age, we tend to get raised cholesterol, which in turn increases our risk of heart disease. This study shows that people now have a dietary alternative to drugs to control their cholesterol, at least initially." Dr. Jenkins also thinks that soy and a vegetarian diet can be used to maintain normal cholesterol levels.
Soy Meals
Dr. Jenkins' heart-healthy diet, designed to be easily prepared and consumed, includes oat bran bread and cereal, soy drinks, fruit and soy deli slices. For instance, in his study, a typical dinner consisted of tofu baked with eggplant, onions and sweet peppers, pearled barley and vegetables.
Dr. Jenkins adds, "The Food and Drug Administration has approved these cholesterol-lowering foods as having legitimate health claims for heart disease risk reduction. They're also being recommended by the American Heart Association and the National Cholesterol Education Program as foods that should be incorporated into the diet. And we have now proven that these foods have an almost identical effect on lowering cholesterol as the original cholesterol-reducing drugs."
Dr. Jenkins regrets that health practitioners often give drugs to people with high cholesterol instead of trying to control the problem with soy and other vegetarian foods.
Soy Safety Affirmed
Recently, some doctors have spread the story that soy may increase the risk of cancer because natural chemicals in soy act like estrogens, hormones that may contribute to breast and other cancers. However, research has failed to support this supposition.
As Dr. Jenkins points out, "the concerns have been whether soy estrogen might lead to hormone-dependent breast cancer or abnormal sexual development in children, yet we found no evidence to support this."
In another of Dr. Jenkins' studies, people were put on diets high in soy to see how their estrogen levels were affected. Then, the researchers measured estrogen byproducts in their urine. Since estrogen stimulates breast cancer cells to produce a special protein, the researchers measured the amount of this protein produced by each urine sample to calculate how much estrogen was present.
The total estrogenic activity in the urine of women on soy dropped to lower levels than it had been before they ate soy. "This finding suggests that soy may not have the estrogenic effects that were thought to alleviate menopausal symptoms but it refutes claims about its purported hormone risks," Dr. Jenkins says.
The study also demonstrated that soy can reduce the risk of heart disease by lowering levels of oxidized cholesterol, which is thought to stick to coronary artery walls and form dangerous plaques. Dr. Jenkins' other research demonstrates that soy consumption reduces cholesterol in general while also decreasing the amount of LDL (bad) cholesterol in the body and maintaining the HDL (good) cholesterol. According to Dr. Jenkins, this confirms that soy should be promoted for its important role in preventing heart disease without fear that it will promote cancer.
In another study in China, researchers compared the dietary habits of more than 350 women with breast cancer to the foods eaten by more than 1,000 women who did not have cancer (Amer Assoc Canc Res Second Annual Intl Conf Fron Can Prev Res 10/27/03, Abst 1274). They found that eating large amounts of soy did not raise the risk of breast cancer.
Of course, anyone can develop allergies to almost any food, soy included. If eating soy causes you discomfort, find another source of healthy protein (see box on whey protein above).
Isoflavone Benefit
Isoflavones, soy's plant estrogens, are believed to create some of the most significant heart-healthy soy benefits. Consequently, researchers urge those concerned about their cardiovascular health to combine a diet high in soy, fruits and vegetables with exercise for the highest level of heart protection. Cheaper than cholesterol drugs, tastier than many other healthy foods and available in so many forms, soy's popularity will certainly continue to explode. Soy burgers, soy drinks and soy just-about-everything will continue to be a big part of our lives.

There it can stimulate the process that leads to cancer cell formation (Science 5/16/02).
"The rate of colorectal cancer is much higher in the United States... than in Japan, where people don't eat a lot of fat and colorectal cancer is almost nonexistent," notes Dr. Mangelsdorf.
"Our bodies can handle slight changes in lithocholic acid that come from a normal diet, but not a high-fat diet," he says. "The current American diet can provide more fat on a daily basis than a human being was ever meant to handle."

Americans are snackers. For instance, during the Superbowl, we munch on about 125,000 pounds of pretzels, chips, popcorn and nuts a minute; 30 million pounds by the end of the game. At work about half of us snack two or three times a day. By the end of today, as a group, we'll have eaten $22 million worth of candy-almost a million dollars an hour for every hour of every day.
If you snack unwisely, these munchies can expand your waistline and sabotage your health. But if you snack wisely, you can keep your taste buds fulfilled, your brain working at top capacity and your body satisfied.
When searching for snack satisfaction, think protein. Protein bars and protein shakes keep you feeling fuller longer on fewer calories than sweets.
Second to protein, think fiber, as in fresh fruit, dried fruit, or whole grain breads and crackers.
Unlike carbohydrates that break down into sugars and may be quickly stored as body fat, protein-rich snacks release sugar into your bloodstream at a slow, steady and healthy pace. That keeps you satisfied longer on fewer calories.
"Protein is an important building block (for the body)," says Alicia Gonzalez, ND, a teaching fellow at Bastyr University in Kenmore, Washington. "It breaks down into amino acids as precursors to things like neurotransmitters, hormones and muscle."
Besides eating protein-rich snacks, eat protein with every meal and eat it first. "It will help your body absorb sugar at a slower rate."
"Protein and fiber are the best at helping the body absorb sugar at an optimal rate," says Jon Gordon, author of Become an Energy Addict (Longstreet Press).
"Protein bars release sugar at a slower rate, resulting in more balanced blood sugar levels and greater overall energy," Gordon says. "You'll crave sugar less and will have a more sustained source of energy all day long."
Protein Bars' Power
"The biggest advantage of protein bars, besides their convenience, is the fact that they do have considerably more protein, say 10 grams, than candy bars, which can contain as little as 2 grams," says Dr. Gonzalez. Total fat tends to be much less in a protein bar, too.
When choosing a protein bar, Dr. Gonzalez says, "Look for total protein content, say, between 10 and 12 grams and total fat, no more than 5 grams, and be careful with high sodium content."
"Choose a protein bar closest to nature," says Gordon. "Like one with Almonds and cashews. Nuts are full of nutrients and minerals. Nuts are also a source of fiber."
If you exercise, protein bars with whey or soy protein make for quick replacement of necessary nutrients. "Eating a protein bar an hour before exercising helps to maintain that energy boost you need and replenishes minerals you lose when working out," says Dr. Gonzalez.
Some protein bars, though, do a bait n' switch with saturated fats and trans fatty acids, says Dawn Weatherwax, RD, author of The Official Snack Guide for Beleaguered Sports Parents (WellCentered Books). "If the label says hydrolyzed or hydrogenated palm oil, that's as bad as saturated fat. People think they're doing the healthy thing by eating a protein bar but they end up getting the wrong type of fat."
Besides protein bars, other healthy and healthful snacks include whole grain bread with peanut butter and cheese on whole grain, high-fiber crackers. "Mixing fiber and protein will help you sustain your energy," says Gordon. "Yogurt is also very good."
Smooth Sailing
"Smoothies are also wonderful (snacks)," says Weatherwax. "Add protein powder, silken tofu and fruit to them and you can have them as a meal replacement."
"Nuts like cashews, Almonds, seeds and dried berries are some of the best snacks that you can eat because you're not getting all that sugar," says Dr. Gonzalez. "Nuts have a good balance of good fat versus bad fat, including essential fatty acids, which are really important for cellular health and overall well-being. A combination of nuts, seeds and dried berries provides you with a good mix of all the vitamins and minerals along with the good fats that you need to be healthy."
When snacking, think about variety. "Mix it up, have a protein bar one day, a protein shake the next," says Gordon. "Combine protein with a healthy carbohydrate and you'll have much more sustained energy throughout the day."
Fuel for Your Fire
"We're like a train, we need to keep the furnace stoked," says Weatherwax, a consulting dietitian for the Cincinnati Reds baseball team. "The goal is to eat every three or four hours. You have breakfast and lunch and you need an afternoon snack. That's the hardest one to get. Most people don't want to eat another sandwich; they want snack food. So a protein bar with a carb like a piece of fruit, an apple, orange or banana...is a great combination." "Studies show if you have moderate-size meals plus small between-meal snacks you increase your levels of energy and alertness," says Gordon. "It also optimizes your memory and performance and gives you a steady flow of energy rather than the rises and falls. Without healthy snacks your blood sugar falls and you experience fatigue and tension. Just as we need to constantly feed a fire with moderate-sized pieces of wood, we also need to continually supply our internal furnace with food that can be turned into fuel. This keeps our metabolism going strong and steady."
"You want to stay between one-third and two-thirds full," adds Weatherwax.
"Eating less in an effort to lose weight is actually deleterious in the long run," says Dr. Gonzalez. "When we don't eat our body gets mixed signals; it isn't sure when it's going to get its next meal. This makes the body want to store fat and sugar to save it just in case. On the other hand, if your body becomes accustomed to eating more often, the cells will be more inclined to use the fat up, knowing there is more food on the way."

Snacking and Exercising
When you incorporate snacks into a consistent exercise program, you boost your chances of maintaining a healthy weight.
To make a big difference in your day, Gordon says, get up a half an hour early to exercise. Next, eat a breakfast that includes protein and fiber, have a mid-morning snack, a healthy lunch, an afternoon snack and good dinner. Take a walk within 30 minutes of eating dinner and you'll give your body a double dose of get-up-and-go.
"It exponentially increases your energy production and fat burning," says Gordon. Do all these things and watch your energy soar. "You'll fuel your life with real sustained power sources rather than the quick fix like coffee that's going to give you the rise in energy and then fall."

But aromatherapy is more than just a '90s-style novelty. The practice of using aromatic essential oils for psychological and physical well-being dates back more than 4,000 years to medicinal practices in Egypt and India.
The term "aromatherapy" was coined in 1937 by French cosmetic chemist R.M. Gattefosse, who discovered the benefits of essential oil after burning his hand in a laboratory accident. Gattefosse immersed his hand into the nearest available cool liquid: a vat of lavender oil. The near miraculous soothing of his pain and rapid healing spurred him to dedicate his life to the study of aromatic plants and their therapeutic effects.
How it Works
For those who turn their noses up at this most seemingly-subtle of senses, keep in mind that the perception of smell is 10,000 times more sensitive than the sense of taste. "The sense of smell is the sense of the imagination," noted French philosopher Jean-Jacques Rousseau; this emotional connection lies at the heart of aromatherapy.
Aromas are transmitted rapidly from olfactory cells in the nose to the limbic system in the brain which perceives and responds to emotion, pleasure and memory. Scents trigger the limbic system to release neurochemicals which influence mood. Well-known neurochemicals like endorphins and serotonin help create a sense of well-being.
When you inhale essential oils, some of the molecules travel to the lungs, where they proceed to enter the bloodstream and circulate throughout the body.
Oils applied to the skin are absorbed into the bloodstream as well. Because they are oil/fat soluble, essential oils are highly absorbed by the body, where they circulate for anywhere from 20 minutes to 24 hours and are eventually eliminated through sweat and other bodily secretions.
Plant Power
Essential oils are extremely potent and volatile: approximately 75 to 100 times more concentrated than dried herbs.
Most essential oils are steam distilled from herbs, flowers and plants. Others are cold expressed from the rind of the fruit, which produces the purest essential oils because no heat or chemical treatment is involved.
The components of various oils are beneficial for a wide variety of beauty and hygiene conditions. Some of the more indispensable essential oils include:
Chamomile (anthemis nobilis): soothing properties for sensitive and inflamed skin; calming, balancing and relaxing.
Clary Sage (salvia sclarea): warming, female balancing herb used for PMS; calms anxiety, tension and stress; also used as a muscle relaxant for aches and pains.

Peppermint (mentha piperita): cool, menthol, invigorating stimulant; cleans and purifies the skin.
Rosemary (rosmarinus officinalis): stimulating and uplifting; purifying and cleansing for all skin types; warm and penetrating for massage to ease muscular aches and pains.

Oil Well
Essential oils can be utilized in a variety of ways: in electric or candle-based diffusers, to spread the aroma through a room; in sachets and air fresheners; added to shampoos and lotions; or diluted and applied to pulse points like the temples, on neck or on wrists. Undiluted essential oils should never be applied to the skin. First mix them with carrier oils: pure vegetable oils such as sweet Almond oil, grapeseed oil and apricot kernel oil. Just as you wouldn't clean a closet by merely closing the closet door, you can't clean your body by closing your eyes to the toxins that assault our bodies every day. The modern world is filled with natural and manmade chemicals that can accumulate within and cause long-term health problems. So, in between bouts of housecleaning, an internal cleansing can keep your bodily systems feeling as clean as your sparkling household.
While modern life would be impossible without the chemicals that go into the gadgets and machines on which society thrives, these materials have a dark side: Each day we are exposed to hundreds of substances that have infiltrated our food, water and air. They lurk in our cleaning products, fabrics, personal care products, automobiles and even the building materials in our homes and offices.
"While our [bodies have] systems of detoxification to deal with and eliminate chemicals to which we are exposed, the sheer volume of these chemicals can overwhelm these detoxification mechanisms, causing these non-lifegiving substances to stay in our bodies where they can damage our health," says Steven Horne, AHG, herbalist and natural health consultant in St. George, Utah.
Added to this chemical mix, indulgences in alcoholic drinks, cigarette smoke, caffeine and over-the-counter drugs can further challenge your body's cleansing systems.
Water, Water Everywhere and How Your Health Can Shrink
Substances in the beverages you consume every day may contribute to the collection of toxins in your body.
A growing water problem, for instance, flows from the medications excreted into sewer systems and groundwater.
These drugs have already affected the environment: Estrogen from contraceptives have contaminated lakes and rivers, and caused deformities in fish while impairing the fertility of water animals and the birds who feed upon them. A study released by scientists at the Department of Energy's Pacific Northwest National Laboratory found that the fertility rate of adult male fish exposed to synthetic estrogen from contraceptive pills dropped by 50% (Envir Tox & Chem 6/03). Scientists believe these defective animals are like the proverbial canaries in coal mines, reflecting health problems that may also be harming human health in ways we don't yet understand.
And clean machines can cause unclean bodies: When scientists from Queen's University (Drug Metab Dispos 2003; 31:306) examined the seminal fluid of infertile men, they found extra amounts of the chemical trichloroethylene (TCE), a degreasing agent used in the automotive and metal industries. TCE is also found in adhesives, lubricants, paints, varnishes, paint strippers, pesticides, spot removers and rug cleaning fluids, and it has entered the drinking water in many places.
Detox for Metabolic Balance
"Detoxification is the missing link in Western nutrition and an important but unexplored medical therapy," says Elson M. Haas, MD, author of The Detox Diet (Celestial Arts). Dr. Haas believes that when the body accumulates wastes that are not properly eliminated, disease often results: "The key to maintaining metabolic balance is to maximize nutrition and eliminate toxins." Dr. Haas has seen improvement in cholesterol levels, blood pressure readings and pain levels after his patients have detoxed.
When your body accumulates toxins, cells can stagnate and suffocate. To offset these problems, the body uses its built-in system of detoxification to remove toxins and cellular waste products.
In protecting itself against toxins, the body can quickly eliminate water-soluble compounds before they cause harm, excreting them in the stool, sweat and urine. Fat-soluble compounds, which make up most of the chemical toxins we are exposed to every day, are not so easily dealt with. The body uses enzymes in the intestines and liver to chemically break down these toxins and convert them into a form that can be pushed out of the body.
Your body inherits its ability to cope with toxins. But you can help the body in its detox tasks by providing nutrients that aid cleansing.
Colorful Eating Boosts Detox
Many experts believe that alkaline foods (fruits and vegetables) help the body detoxify, while meats and acidic processed foods slow the process.
"The right balance of acid and alkaline foods for each of us is, of course, the key," notes Dr. Haas. Animal products, sugar, white flour, and alcoholic beverages are thought to leave acid residues in the body.
"Brightly colored foods contain powerful antioxidants that help the liver with the detoxification process," says Brenda Watson, CT, in her book Renew Your Life (Renew Life Press). "...[raw] fruits and vegetables...contain enzymes... [that are] destroyed by cooking."
These enzymes can help the body detoxify and eliminate undesirable substances. However, Watson cautions, "If the digestive system is weak...too much raw food [can] cause upset, so raw foods should be added to the diet at a pace the body can tolerate. Taking digestive plant enzymes with meals can also aid digestion."
While those foods in a normal diet can help control toxins, if you have moved toward "toxic overload," or if you want to eliminate candida-a yeast that can cause health problems-Watson recommends a detox diet:
*Avoid sugar and artificial sweeteners.
*Eat fewer grains.
*Avoid fruits and fruit juices; Granny Smith apples are OK, as is lemon juice in herb tea.
*Drink fresh vegetable juice.
*Avoid yeasty foods such as bread, beer, wine, sauerkraut and commercial salad dressings (olive is oil is acceptable).
*No mushrooms or cheese.
*No peanuts or peanut butter.
*No dairy except a little butter and plain yogurt.
*No coffee, tea, pepper, spices or tobacco. (A little herb tea is OK.)
*No pickled, smoked or dried meat, fish or poultry.
Foods that are allowed include:
*Gluten-free bread
* Raw Almond butter *Eggs
*Vegetables low in starch
*Lentils
*Lean meats
*Pasta made from rice or quinoa
* Nuts and seeds that have been soaked overnight in distilled water
When preparing dishes in this diet, use plenty of garlic and green foods. "Other anti-candida agents which may be used liberally include ginger, cinnamon, thyme and rosemary."
According to Watson, following this diet is a first step toward detoxing. If you experience serious difficulties linked to environmental toxins, consult a health practitioner.
In a world filled with chemicals whose effects are unknown, attention must be paid to the toxins around us. As our machines grow more complex and widespread, our health difficulties linked to these mechanisms may also grow.

Lifestyle is key to bettering your odds of beating heart disease. A few simple, everyday heart-friendly habits can help your heart help you. Right now, heart attacks and other cardiovascular complications like stroke have reached sky-high levels across the US.
Nearly 60 million Americans suffer from one of the various forms of cardiovascular disease and these often fatal complications cause more than 40% of all deaths in the United States. Statistics show that nearly a million Americans succumb to heart problems every year. The humongous cost: Heart disease and stroke consume almost $260 billion annually. Heart disease is the top cause of death for older Americans and remains the leading cause of death for all Americans age 35 and older. Coronary heart disease (CHD), also known as ischemic heart disease, is the most frequent cause of death for adults in the United States-accounting for more than 500,000 deaths a year. And even though most women have had their consciousness raised about their risk of cancer, particularly breast cancer, in fact, their chances of dying from one of the forms of heart disease is double their risk of succumbing to one of the forms of cancer. And ten times more women die from cardiovascular problems than die from breast cancer.
Aging Genes Admittedly, a portion of your risk of heart problems is linked to your genetic makeup. Heart disease is often prevalent in particular families. Plus, as you grow older, your risk simultaneously grows. Nevertheless, many heart-saving lifestyle factors are under your control: * Exercise: A steady program of moderately strenuous aerobic exercise can significantly improve the health of your cardiovascular system. (Consult your health practitioner if you haven't exercised in a long time.) Experts figure that exercise alone, independent of other risk factors, cuts your risk of heart attack and stroke by at least half. * Food that you eat: The heart-healthiest diets consistently stay away from fatty meats. To protect your heart, eat plenty of fish that isn't fried plus plenty of fruits and vegetables and antioxidant nutrients (also see the story starting on page 29). Despite the importance of this dietary advice, only one of five Americans is currently devouring the recommended five servings of fruits and vegetables every day. * Blood pressure: Have your pressure checked periodically and ask your health practitioner about bringing it under control (see page 34). Despite the importance of this advice, only about half of all Americans with high blood pressure are having it treated. * Cholesterol: Have your cholesterol checked and consult your health practitioner about the levels of your HDLs (good cholesterol) and LDLs (bad cholesterol). * Smoking: Give up this habit or never start. Smoking doubles your risk of heart attack. One of five deaths from cardiovascular disease, almost 200,000 deaths a year, are smoking-related. Despite the dangers of smoking (it also increases your chances of cancer and other health problems), on average, about 3,000 teens get hooked on tobacco every day of the year. * Your weight: Keep your weight down to a reasonable level. Experts figure that every pound you gain raises your risk for cardiovascular disease. In our fast food nation, studies show that about three of five US adults are now overweight. * Diabetes: If you already have diabetes, work with your health practitioner to control your blood sugar (exercise helps). Diabetes significantly raises your risk of cardiovascular problems. The sooner you start doing something to lower your heart disease risk, the better your chances of staying heart-healthy. Women should be especially vigilant. When women develop heart problems, they are often unaware of the problem and their bodies do not cope with it as well as men's do. Because women and their health practitioners are not as aware of the heart risks in women, cardiovascular problems are often not noted in women until they have advanced; by then treatment is often less effective (www.cdc.gov/nccdphp/cvd/cvdaag.htm). Consequently, they run a much larger risk of dying within the first year of their first heart attack than do men. Plus, their chances of suffering a second heart attack within six years is also greater.
Cholesterol and Heart Health Controlling cholesterol (as mentioned before), the fat-like material running around your blood that can block arteries, is considered crucial for protecting your cardiovascular system. A new tool in the cholesterol battle is a natural substance known as potassium hydrogen d-glucarate, a chemical which your body makes and is found in fruits and vegetables. Studies on research animals have shown that potassium hydrogen d-glucarate can lower blood cholesterol, even lowering LDL ("bad" cholesterol) by more than a third. Noni, made from a tropical fruit, is another natural substance attracting attention as a possible helper for heart health and other chronic conditions. Traditionally, noni has been used to treat a wide variety of problems, including intestinal difficulties and arthritis. While some researchers are looking into its anticancer properties, it is reputed to help lower blood pressure and function as an adaptogen, boosting the body's ability to resist infection and deal with stress.
Nuts and Heart Health Back in the early days of nutritional advice for heart health, some experts recommended against eating nuts: After all, they are high in fat and it was thought that high fat diets could compromise the function of your cardiovascular system. However, studies of people who go nuts for nuts and who eat walnuts, cashews, pecans, macadamias, pistachios, Almonds and more found these nut lovers suffer less heart disease than non-nut consumers. Part of the good news about nuts, researcher believe, derives from the mineral magnesium found in nuts (and also contained in leafy green vegetables, legumes and whole grains). A magnesium deficiency may contribute to heart problems. In addition, the fats in nuts are monounsaturated, the same kind of heart-healthy fats found in canola and olive oils. Within nuts are also found a good deal of fiber, flavonoids and other natural substances that seem to protect the heart and arteries. Consequently, research indicates that if you eat nuts every weekday you may reduce your risk of heart problems by about two-thirds (Nut Rev, 2001;59:103-111). Of course nuts aren't the only vegetarian way to stay heart healthy. Foods such as oatmeal which are rich in soluble fiber, fiber that can be dissolved in water, also may lower your cholesterol. In addition, plant compounds known as sterols can improve your cardiovascular well-being. Researchers have been looking at these natural chemicals for the last 50 years and have found that they can significantly drop cholesterol (Am J CLin Nut 1995;61:392-396).
Vegetarianism vs Heart Disease A vegetarian diet, in general, conveys more health benefits than eating meat. (Though fish, which contain heart-healthy omega-3 fatty acids, also lowers the risk of circulatory disorders.) In addition, mushrooms are attracting more attention from researchers as possible sources of heart-helping compounds. In Japan, for instance, health practitioners use the maitake mushroom for treating high blood pressure and lowering cholesterol. (If you suffer from cardiovascular abnormalities, consult your health practitioner.) Maitake has already established a growing reputation for possibly fighting cancer (Cancer Prev 9/30/95;768:243-245). Adjusting to the latest advice on protecting your heart doesn't require radical changes in lifestyle. A touch of exercise, a spattering of heart-healthy nutrients: Before you know it, you can be headed down cardio road and heir to a cardiovascular system that systematically functions better than ever.
