Food cravings are the surest way to ruin our best health intentions. Whether it be cravings for chocolate, Cakes, fresh baked bread or other more exotic cravings, they impact nearly everyone that starts a new health program or diet. While cravings typically are at their worst in the first ten to fourteen days of a new, healthy lifestyle, don't be surprised to find them resurfacing any time you feel stressed, fatigued or anxious. Food is one of the quickest ways for the body to re-ground itself and the body will instinctively crave foods that through past habits have become associated with a pleasurable experience.

Many people hold this opinion about food addiction and have heard it being spread around like wild fire. Giving in to the craving fills us with guilt and sometimes self hatred for not having the ability to overcome this craving. Our self-esteem lowers and we hear that little voice in our heads tell us what failures we are. This further lowers our self-esteem and so we satisfy our cravings because that food make us "feel better."

Ways to Deal with Cravings

  • The food you crave should NEVER enter your home. Your family may complain, but work on getting them on your side. Explain that this is for your health and sanity and you need their support.
  • When that craving gets going, get yourself a big glass of water. Drinking water will assuage your craving because the water is satisfying a need of your body. Then wait a full fifteen minutes. Set the timer and go do something else. When the time goes off it is likely that your craving will be gone.
  • If you are at a grazing table, graze at the vegetable/fruit end. But, instead of grazing, put the food on your plate and then move AWAY from the table. Find someone really interesting to talk with. And yes, keep a glass of water with you.
  • When you see someone eating what you crave, turn around, move away from them, and go look for a glass of water. Our bodies are satisfied when we give them water and that helps our cravings to stay away.

Gymnema sylvestre is found naturally in central and southern India, where it has been used in traditional Indian medicine for almost two thousand years. It is known as 'gurmar' in ancient Indian texts, a word meaning 'sugar destroyer', which gives an indication of its uses in medicine.

It is used to reduce the absorption of glucose into the body, and also reduce the sweetness of foods, both of which are desirable for those wishing to lose weight and to reduce the level of sugar in their blood. It was used for this purpose in Ayurvedic medicine, subjects being given the leaves to chew. As with many other ancient Ayurvedic remedies, this use of gymnema sylvestre has passed into modern times, and has sound scientific basis. First, however a bit more about the plant itself.

It is found predominantly in the Western Ghats, and also to the west of the mountains, around coastal Goa. It is a vinous plant that climbs on other bushes and trees, known in Sanskrit as Meshasringa, or ram's horn after the shape of the leaves from which the supplement is extracted. For what it's worth, the official name seems a mix of Greek and Latin (gymnos(Gr) - naked and Silva (L)- forest) for naked forest. That, however, is irrelevant to its uses, so let's have a look at the science involved and the active ingredients in the plant.

The main constituents are terpenoid saponins known as gymnemic acids, so one can assume that they were first found in this plant. They are glycosides, including hodulcine and ziziphin, which act as sweetness inhibitors so that there is no sweet taste in anything that is sweetened by sucrose. There are over 20 types of gymnemic acid in the leaves, of which the strongest, Gymnemic Acid 1, can suppress the sweetness even of artificial sweeteners such as aspartame.

These are not irreversible effects, and last only about 10 minutes, after which normal sweetness is detectable by your tongue. During the active period, however, a solution of normal sugar will taste like ordinary unsweetened water. However, is this just a matter of taste, or does it affect the sugar itself?

Studies have shown that animals fed the leaves of Gymnema sylvestre develop hypoglycemia, probably because it stimulates the pancreas to generate insulin that reduces the level of sugar in the blood. Further studies have shown the presence in the leaves of a number of types of acylated derivatives of deacylgymnemic acid. There are well over a dozen types of saponins known to be contained within the leaves.

Other chemicals found include anthraquinones, flavanoids, chlorophylls, querticol, phytin, a number of glycosides and anthraquinones. The bush also contains alkaloids, although these are constituents in most plants used in ancient remedies. This is by no means all of the chemicals discovered, and many of the minor benefits of using it could be due to the minor constituents of this amazing little leaf.

A study of the above constituents will reveal a few antioxidants, and it is no surprise that the extract from Gymnema sylvestre also possesses anti-inflammatory properties. Gymnemic acid is believed to have a similar chemical structure to saccharose, and the plant extracts can be used not only to reduce a craving for sugar, but also to treat digestive problems and high cholesterol levels. So what scientific evidence is there other than the obvious effects reported by those that use it?

A study in the UK in 2005 found that an aqueous extract of Gymnema sylvestre caused the secretion of calcium and insulin from mouse and human cells to be increased at a specific concentration without affecting the cellular function. This means that the supplement can be used to stimulate the secretion of insulin with people with Type 2 diabetes without otherwise affecting health. It is necessary for the growth of your body cells, for the metabolism of the fats you consume and for the biosynthesis of the fatty acids that are eventually converted to proteins and then the DNA that is essential for life. In other words, without biotin we would not be here.

However, do not get overly worried about the necessity of biotin in your diet, since the same applies to all of the other vitamins you consume. That is what vitamins are chemicals that have been identified ages ago as being essential to life. Without vitamins we could not survive which is why the vitamin supplement industry is so strong and healthy.

So, what does biotin do specifically, other than being necessary for some of the essential biochemical processes in your body? These tend to look after themselves, so what are the physical attributes that biotin provides for you? The name should give you a clue. In fact it should be familiar since it is one of the more commonly mentioned ingredients of hair care products: “Biotin for Healthy Hair” - ring a bell?

If you are deficient, you will lose your eyelashes and eyebrows in addition to your hair, depending on the severity of your deficiency. As stated, however, that is particularly rare. The biotin content of shampoos is likely useless since it is not absorbed through the skin.

So what else does vitamin B7 do for you? Lots in fact, so let's have a look at the more important of them starting with the function of your body cells in the production of energy. Biotin takes part in the Citric Acid Cycle, otherwise known as the Krebs Cycle, whereby energy is created by the conversion of carbohydrates, fats and proteins into carbon dioxide and water. It is one of the essential metabolic pathways of life, and biotin is needed to recharge the Krebs cycle with metabolites when mitochondria become deficient in these essential components.

Without them you would begin to feel tired and lack energy, and this would get increasingly worse without a biotin supplement. It is amazing that your energy is created in the mitochondria which are a part of the tiny cells that make up the tissue of your body, and equally amazing that it depends upon, among other substances, a vitamin of which very few people are even aware of.

In spite of any other effect biotin has on your body, including providing healthy hair, skin and nails, its primary role in your body is in the metabolism of proteins, fats and carbohydrates into a form that can be used by your body for the production of energy. Biochemically, it functions as a coenzyme, which is a molecule needed to help an enzyme do its work. In fact an alternative name give to biotin is Coenzyme R.

It helps in the biochemical conversion of sugars to energy, and is a component of enzymes such as pyruvate carboxylase. That enzyme is protein contained within the mitochondria that contains a biotin prosthetic group, without which it could not function to help the body to generate energy during exercise. Suffice it to say that without biotin you would find it difficult to generate energy, especially when the demand for it is at its highest.

Biotin's biochemical role is not restricted to energy production however, and it is involved in the biochemical synthesis of amino acids and also of glucose from other sugars. Glucose is the main blood sugar that is manufactured in the body from the other saccharides that you eat, such as fructose.

A reasonable level of supplementation to ensure that you do not suffer from a deficiency is around 100 micrograms daily, although up to 5 milligrams (5000 mcg) are safe for the treatment of brittle nails or hair loss. Much depends on age and it is best taken as a vitamin B complex supplement, since the B vitamins appear to give best results as a team!

So, while you can have healthy hair, skin and nails with biotin, without it you will have no energy and likely have no need for your hair, skin and nails!

Eating Healthy for Athletes

If you are an athlete, it's important for you to consider your diet carefully. Whether you've been a serious lifelong athlete or have just started to exercise regularly, this applies to you. It's been shown that people who are starting to get into shape need more proteins and other nutrients than even seasoned athletes.

So what makes up proper nutrition for athletes? Well, remember that you need to consume lost of calories if you are exercising regularly. If you aren't overweight, keep in mind that you must eat more than you normally would if you weren't training. Here's a general rule of thumb: consume 8.5 calories for every kg that you weigh. So if you weigh 100 kg (which equals 220 pounds), that would require a consumption of 850 calories for one hour of working out.

It is almost never wise to cut back on your dietary consumption at the same time as embarking on a regular exercise program. If you are considering this, be sure to consult your doctor first. At any rate, an athlete in training should never try to lose more than 2 or 3 pounds each week, at most.

Research suggests that above all, eating a variety of healthy foods is the most important thing you can do. Keep a strong balance, whether you're an athlete or even if you're not.

That means you should be taking in most of your calories from carbohydrates, which include vegetables, grains, oats, wheat, rice, bread, pasta, etc. The exact number that you should aim for is 57% of your diet.

The next largest group is the fats, which should make up about 30% of your diet. Fats are both vegetable based - eg corn oil, and animal based - non-vegetarian shortening. Butter and shortening occur in many foods like Cakes, and are examples of saturated fats. In general most of your fat intake should come from the unsaturated fats found in vegetable fats. You should use olive oil for salad dressings and for cooking.

The rest of your diet, 13%, should be comprised of protein. This means fish, poultry, lean red meat, and so on. You can also get protein from nuts.

Proper nutrition means avoiding or consuming only small portions of fried food, cookies, alcohol, candy bars, and that kind of junk food. Instead, eat plenty of fresh, raw vegetables, whole grains, fish, and lean meats.

Remember, exercise expends lots of energy and uses up important nutrients. Athletes should be sure they are eating enough to stay healthy and strong, and to ensure that they have all the vitamins and minerals their bodies need.

There are, however, a huge number of supplements currently available. Most of them have not been scientifically proven to work. Still, some athletes--such as marathon runners and others in endurance sports-- may require iron supplements. This tends to be the case with women more so than men, but you can get tested if you suspect you need more iron.

You can also see a nutritionist with a good reputation to take an overview of your diet. Also, you may have to supplement while on the road, since diet while traveling tends to be poor.

The other common dietary supplement used by many athletes is an energy snack or drink. These are very useful for athletes in training since they are often easier to consume than a full meal. Ideal if you are having trouble eating a couple of hours before a work out or soon after (both of which are good ideas). Remember though that these bars and drinks are packed with calories, so do count towards your dietary intake.

When a woman noticed her husband standing on the bathroom scale and sucking in his stomach, she said, “I don’t think that’s going to help.” “Sure it will,” he responded. “It’s the only way I can see the numbers.”

Funny line, sure. But whether you’re talking about “love handles,” a “spare tire” or the proverbial “beer belly,” having a tummy that hangs over your belt buckle is no laughing matter. It’s not even a matter of the quest for “six-pack abs” or a “washboard stomach.” It’s a matter of health.

Consider this: A recent study appearing in the American Journal of Clinical Nutrition showed that a man’s waist size can be a good predictor for the development of type 2 diabetes. A Harvard Health Professionals team, led by Dr. Youfa Wang, an assistant professor at the John Hopkins University Bloomberg School of Public Health, analyzed data from more than 27,000 men who were tracked for more than 13 years. The team found that men with larger waists or a higher body mass index (BMI) were both at greater risk for type 2 diabetes than slimmer men. (You find your body mass index by dividing your weight in kilograms by the square of your height in meters. If your waist size is 40 inches or less, a BMI of 25 or over means you’re overweight.)

“Abdominal fat measured by waist circumference can indicate a strong diabetes risk, whether or not a man is considered overweight or obese according to his BMI,” says Wang. The Harvard team found that men with waist sizes of 40 to 62 inches were 12 times more likely to develop diabetes and suggested that the current recommended waistline of 40 inches or below for men may need to be lowered.

Flatten Up

Okay, now that we’ve scared the bejeezes out of all you guys under 6-foot-4 who by your pants in the big-man store, let’s talk about what you have to do to shop anywhere in the mall. Again, this is not about looking like a Greek ab god. This is about diminishing your risk for a myriad of health problems and being able to comfortably bend over for a ground ball during the pickup softball game. And there are no shortcuts, so forget about liposuctioning those years of accumulated lard. Despite what all those TV makeover shows say, liposuction can only really enhance your body aesthetic if you lose a large chunk of the surface fat first.

“Those makeover shows have it all backwards,” says Dr. Bruce Nadler, a fitness trainer who also happens to be a plastic surgeon. “They do surgery on someone’s midsection and then have them doing intense workouts when they are supposed to be recuperating from surgery. I wouldn’t do liposuction until you see what diet and exercise can accomplish. When you have all the weight in the midsection the dangerous fat is deep within the body. So liposuction may make you look better but it won’t necessarily improve your health.”

The Gut Check Plan

Talk to any exercise expert worth their weight in body fat, including Nadler, and they will tell you that on of the biggest fitness fallacies is the notion that intense abdominal workouts and use of abdominal machines (like those sold through those interminable infomercials) are the keys to getting a flatter and more “ripped” midsection. In fact, for many people it’s not physiologically possible to achieve a flat tummy because abdominals are not designed to be flat. And the idea of “spot reduction,” exercising the area where you want to lose the fat, is now considered a myth. Research has shown that fat is lost all over your body, not just in the area that you work.

It’s not that you can’t benefit from doing abdominal exercises. Crunches, situps and leg raises, when done properly, are great for muscle tone and endurance (and you do burn calories), but the real key to achieving a wonderful waist size is losing body fat. How do you do that?

“Dropping a few inches from your midsection,” says Nadler, “depends on four things- calorie reduction through proper diet (eating very little fat, consuming complex carbohydrates and doing it all in smaller portions), stepping up aerobic activity (such as running an bicycling, which burns excess calories quickly and safely), and resistance weight training (which not only increases metabolism and helps burn more excess calories, but also builds and strengthens the abdominal wall).” Then, adds Nadler, when you’ve just about reached your waist=reduction goal, but genetics still won’t give you a flatter stomach, “that’s where plastic surgery may come in as icing on the Cake.”

Nadler also advises men not to panic if they don’t notice a substantial weight reduction during a training program. “When people are doing weight and resistance training they are too hung up on the scale,” insists Nadler. “Muscle weighs more than fat so don’t judge your progress by what you weigh, but on what your percentage of body fat is. That’s the number you want to see going down.”

So how long does it take for men with an oversized gut to lose the excess? “Depending on how much they have to lose,” Nadler says, “it takes anywhere from three to six months.” By the way, for men in their 30s and up, there are also two important side benefits to decreasing the waist size and firming up the gut: better overall posture and diminishing the potential for chronic back pain. The search for clean teeth, healthy gums and fresh breath is not just a modern obsession, but an age-old fixation. Dental historians believe that ancient cavity rates ranged from 1% among Eskimos, with their highly carnivorous diet, to 80% among members of Egypt’s royalty, who feasted on dainties that included many high-carb delights. So it’s no surprise that most ancient cultures had their favorite oral hygiene therapies.

Their handiwork: dental caries, or just plain cavities. These bacteria are also responsible for gum disease, which can lead to tooth loss if unchecked. What’s even worse, low-level inflammation caused by disordered gums may create the kind of blood-vessel havoc associated with heart problems.

Low-fat, high-fiber advocates have recommended a diet that is calorically fueled between 10 and 20 percent fat and includes 35 to 45 grams of fiber. Unfortunately, most of us, no matter how good our intentions are, will not be able to sustain this type of diet. Therefore, if we are going to face facts, a diet that reduces fat to 20-30 percent of the total caloric value and increases fiber to 20-30 grams/day is much more realistic and will help significantly in controlling weight, avoiding artery disease and promoting good colon health. Taking Chitosan prior to eating a meal can make dietary fat goals much more attainable while promoting a number of desirable health benefits. Because obesity ranks among the top ten diseases (which, by the way, are almost all related to obesity), the availability of a safe, health-promoting fat binder is desirable.

Weight control needs to be realistic and effective. Workable weight loss programs are few and far between and usually involve a life style that many of us can never incorporate.     A wealth of scientific evidence now exists which should have turned each and everyone of us into a fat “phobic.”1a-e In other words, virtually every health expert agrees that a high fat diet is directly linked to cardiovascular disease, various types of cancer and premature death. It’s no secret that excess dietary fat poses a tremendous health risk. The United States National Institutes of Health, the World Health Organization and many other scientific institutes have confirmed the frightening hazards of fat. Health proponents generally concur that excess fat can significantly shorten one’s lifespan. More than 10,000 medical papers are published every year dealing with obesity and cardiovascular disease, two of the most insidious killers of Americans. Western eating habits, which promote fatty, salty, sugary foods, have created massive widespread disease and tremendous suffering.     and obesity.2 In spite of this finding we are eating more fat and becoming fatter. The average absolute fat intake has increased from 81 to 83 grams per day over the last ten years.3 Our obsession with fatty foods has exacted an enormous toll in the form of rampant obesity, clogged arteries, hypertension, heart attack, stroke, breast cancer, etc. Many of us remain oblivious to the fat gram count of foods we routinely pop into our mouths, unaware that one fast food entree may contain more fat grams than one should consume in one given day. Take a good look at the following list of foods which have been assessed for fat content. Fast food has become a 20th-century sensation which continues to boom and expand throughout our society. Many of us literally exist on fast food, which is frequently also “fat” food. It’s no wonder so many of us “battle the bulge”, and have skyrocketing cholesterol counts. Our love affair with greasy, fried, rich, creamy foods has burdened our bodies with the dilemma of excess fat “baggage,” resulting in phenomenal amounts of money being spent on weight loss programs. Worse still, thousands of Americans are dying before their time or living extremely compromised lives only because they ingest too much fat. Why is this? The bottom line is that fats taste good!5 Many of us were raised on seemingly innocuous foods that are loaded with fat. Some of these include:

    macaroni and cheese battered fish sticks hot dogs cheese-filled casseroles pepperoni pizza burritos panCakes, waffles doughnuts pies and pastries ice cream candy bars ramen soup

    Fat is also a major ingredient in most of the snack food we constantly nibble on, including chips, crackers, cookies, and nuts. Check ingredient labels to find the fat gram content of most snack foods. You’ll be surprised to find out just how fatty these foods are. Even a healthy sounding food like a “bran muffin” can contain 36 grams of fat! No wonder they stay so “moist”. In addition to the above foods, fat can add wonderful flavor to breads, vegetables and the like, and is usually used liberally in the form of butter, sour cream, whipping cream, melted cheese, cream cheese spreads, dips, cream sauces, and gravies. Fruits can also be high in fats. Did you know that one avocado has 30 grams of fat? One half cup of peanuts contains 35 grams of fat and only one glazed doughnut has 13 grams of fat. The majority of research points to fat as a much more dangerous culprit than anyone might have imagined. Saturated fats such as lard, palm, coconut oil, and beef tallow are particularly menacing. Research scientists have found over and over again that fats can contribute to the growth of tumors in animal studies.6 The National Research Council of the National Academy of Sciences reported that even a relatively small amount of extra body fat increases the risk of certain diseases for women and may compromise their longevity.7 Even being mildly overweight may be much more risky than anyone previously assumed.8

    The Relat ionship between Breast Cancer, Fat s, Fiber And Indoles

    Dr. Leonard Cohen, of the Dana Institute of the American Health Foundation at Naylor, believes that pre-cancerous lesions found in breast tissue will develop into cancer only if they are stimulated by certain agents such as fat.9 Women increase their risk of developing breast cancer when they consume a diet high in fat and animal protein and low in fiber, vegetables and fruits. When women put on weight, they have a tendency to create more estrogen since adipose tissue produces estrogen. Certain forms of estrogen, the so-called “bad estrogens” can act as carcinogens and are anything but desirable.10 High or unbalanced estrogen levels stimulate concerous tissue in the breast. Obesity is also associated with increased breast cancer mortality.11 The three most important ways to inhibit “bad” estrogen from inducing breast cancer are:
    1. Maintain an ideal body weight.
    2. Eat a diet high in fiber and low in fat (fiber helps to sweep excess estrogen from the bowel so it does not “recycle”).
    3. Consume enough cruciferous vegetables (broccoli, cabbage, cauliflower, Brussels sprouts, kale, radishes, watercress etc.) so that adequate amounts of dietary indole-3-carbinol enter the system.12 Indoles are phytonutrients which help us balance our estrogen levels and reduce the levels of “bad estrogen” present. When combined with a low-fat, high-fiber diet, indoles can provide the body with significant metabolic protection against breast cancer.

    Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years.

    That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting.

    "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications.

    "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing.

    "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside.

    "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while.

    "Then there are quick breads that use baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans.

    "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits.

    "To reduce the fat in denser quickbreads and Cakes, use applesauce. It gives body and moistness.

    "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat.

    "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet.

    "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables.

    "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it.

    "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes.

    "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good."

    Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations.     "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen.

    If you want to keep your mental edge, better keep your physical edge. As your body goes, so goes your brain: The state of your outer body reflects the inner you.

    A flabby body leads to flabby thinking. Weight gain and toneless muscles on the outside are evidence of an out-of-tune brain and thinking processes as soft around the edges as your stomach. But staying in shape physically can boost your mental powers.

    As you age, one of the biggest threats to keeping your thoughts sharp is Alzheimer's disease, a progressive brain deterioration (dementia) that destroys your memory and your ability to think.

    Today, about 4.5 million Americans suffer Alzheimer's disease. Over a lifetime, the average cost per person suffering this disease adds up to a staggering $175,000. Consequently, according to the Alzheimer's Association (www.alz.org), this disease drains approximately a billion dollars a year from the US economy.

    Thanks to an aging population and the growing girth of Americans, the rate of Alzheimer's threatens to explode into an epidemic over the next two decades.

    Experts now believe that if you are carrying around too much weight, those extra pounds puts you at a higher risk of losing your thinking abilities. And being seriously overweight greatly expands your chances of developing this debilitating type of dementia.

    An 18-year study of about 400 people in Sweden, all aged 70 at the beginning of the research, concluded that your chances of suffering dementia significantly increases with every extra pound (Archives for Internal Medicine 7/03).

    Cholesterol Conquers Minds

    In addition to the extra risk to your thinking capacity from body fat, having high levels of cholesterol in your blood also threatens your brain's ability to reason. Researchers at Georgetown University Medical Center have found that:

    * Excess amounts of cholesterol can lead to accumulation of APP, a protein found normally in moderate amounts in both the brain and the heart.

    * Excess APP linked to cholesterol can, in turn, lead to the development of larger amounts of a substance called amyloid protein.

    * Pieces of amyloid protein can form plaque on the brain, destroying cells and leading to the development of Alzheimer's disease.

    "Past research has shown that high cholesterol levels appear to increase APP levels, which in turn leads to increased levels of beta amyloid protein and the risk of accumulation of amyloid beta peptide," says Vassilios Papadopoulos, PhD, professor of cell biology at Georgetown. "Our research showed that high cholesterol levels also increase the rate at which the amyloid beta peptides break off and form the tangles that kill brain cells." Added to that, the Georgetown scientists have demonstrated that high cholesterol seems to cause the body to boost its production of the protein, apolipoprotein E (APOE), a chemical that normally helps take cholesterol out of cells. But when APOE accumulates, this chemical leads to an excess of free cholesterol, which kills nerve cells.

    "Our study adds to the growing body of evidence implicating high cholesterol as a significant risk factor in Alzheimer's disease, and breaks new ground in showing the damage caused by excessive levels of cholesterol," says Dr. Papadopoulos.

    Since high blood pressure also increases your risk of developing Alzheimer's disease (BMJ 6/14/01), devoting yourself to a heart-healthy lifestyle (eating plenty of fiber, cutting back on saturated fat in red meat and avoiding trans fats in cookies and Cakes) can increase your chances of keeping your wits about you as you move through life.

    Brain Food

    As part of that heart-healthy lifestyle that keeps your brain functioning at top capacity, experts recommend regular helpings of omega-3 fatty acids, the type of fats found in fish, flax and hemp.

    In research that focused on people between the ages of 65 to 94, researchers have found that eating seafood at least once a week drops your risk of Alzheimer's by about 60% compared with folks who forego fish (Archives of Neurology 7/03).

    Along with fish, the scientists recommended munching more nuts, which are rich in polyunsaturated fatty acids.

    In the report on the relationship between eating and Alzheimer's, Robert Friedland, MD, of the Case Western Reserve University School of Medicine, noted: "A high antioxidant/low saturated fat diet pattern with a greater amount of fish, chicken, fruits and vegetables and less red meat and dairy products is likely to lower the risk of Alzheimer's disease, as that for heart disease and stroke."

    Wake Up Your Brain

    If your thinking has been fuzzy lately, take a nap.

    Getting enough sleep right after you learn something new helps maintain your learning abilities, according to research at the University of Chicago. In a test of how sleep can help people remember words and language, these researchers taught students to recognize a unique vocabulary spoken by a machine. After the learning session, students were then tested on their new abilities.

    The scientists found that students trained in the morning tested poorly when tested later the same evening. But when students were trained right before bedtime and then tested the next morning, their test scores soared (Nature 9/9/03).

    "Sleep has at least two separate effects on learning," according to the researchers. "Sleep consolidates memories, protecting them against subsequent interference or decay. Sleep also appears to 'recover' or restore memories."

    The concept of this research originated in observations of birds.

    "We were surprised several years ago to discover that birds apparently 'dream of singing' and this might be important for song learning," says researcher Daniel Margoliash, professor of biology and anatomy at the University of Chicago.

    While you may not dream of singing like a bird, you may dream of having a sharper intellect. Luckily, the tools for sharpening your mental powers are easy to find and put to good use: Methods for keeping your brain in shape are basically the same techniques effective for keeping your body and heart in shape.

    For years, many experts argued that the only good fatty foods were the ones you didn't eat. That was a big, fat mistake. Overwhelming evidence now shows that certain fats are not only necessary for optimal health, but that the quality of the fat you eat is probably much more important than the quantity.

    Threatening Trans Fats

    "The biggest thing wrong with the fats Americans eat today is that they are eating too many trans fatty acids," says Fred Pescatore, MD, author of The Allergy and Asthma Cure (John Wiley). "About 42,000 foods contain trans fats. These fats are linked to a higher risk of heart disease, stroke and cancer."

    Trans fatty acids are fats that form when food manufacturers add hydrogen to fat molecules, a process called hydrogenation that makes fats stay fresh longer without growing rancid. Trans fats also form when foods are fried.

    Hydrogenation extends the shelf life of refined foods like Cakes, donuts, and crackers. Unfortunately, it also creates fats that many experts believe can compromise your health. In a study of the health effects of trans fats, 26 people agreed to eat a diet that changed every five weeks, continually shifting the types of fats in their meals (American Heart Association's Scientific Sessions 2000). All of the diets in the study provided 30% of calories from fat. One fifth of the fat came from either soybean oil, semi-liquid margarine, tub margarine, shortening, stick margarine or butter.

    "We were interested in assessing what would happen when we substituted one fat for another," notes researcher Alice H. Lichtenstein, DSc, professor of human nutrition at Tufts University, Boston.

    The study showed that as people ate more trans fatty acids (in the more solid margarines) and fewer polyunsaturated fats (in the liquid oils), their triglycerides increased after each meal. Triglycerides are blood fats that boost heart disease risk.

    For instance, when these folks ate stick margarine, which is high in trans fats, their triglycerides climbed an average 18% higher than when they ate semi-liquid squeeze bottle margarine, a type of margarine that is softer because it is less hydrogenated. Stick margarine raised heart disease risk by causing a drop in HDL, or "good" cholesterol. Although butter increased HDL, it also caused a significant increase in LDL, the "bad" cholesterol that raises heart disease risk.

    Dietary Advice

    "The best dietary advice we can give people is to minimize their intake of animal and hydrogenated fats in order to reach the American Heart Association's target of 10% or less of total calories from saturated fat and trans fatty acids," Dr. Lichtenstein says. "That would mean consumers choosing low-fat and non-fat dairy products and lean cuts of meat, and the food industry decreasing the amount of hydrogenated fats used in their products." According to a study at Johns Hopkins University (Amer Coll of Card, 52nd Scientific Session, 3/30/03, Chicago), people who eat saturated fat have more visceral fat, fat surrounding their internal organs. This fat around the waist is now seen as a risk factor for heart disease and other illnesses.

    Another hidden problem in our fat consumption, according to Dr. Pescatore, hides within canola oil. Dr. Pescatore says that although many consumers believe canola oil is beneficial to health, the refined canola oil sold in the US has had its potential health benefits removed during processing.

    "People still think canola oil is healthy and eat too much of it," he says. "The problem with canola is that it is highly processed and refined....Processors hydrogenate canola oil to keep it from getting rancid."

    According to Fred Ottoboni, PhD, coauthor of The Modern Nutritional Diseases (Vincente Books), "Canola oil is lightly hydrogenated to take out the omega-3 fatty acids (the healthiest, but most unstable, fats) and then the food manufacturers filter the trans fats out. I don't worry about the trans fats in canola, but the problem is the huge ratio of omega-6 fatty acids to omega-3s."

    To get more of the omega-3 fatty acids, which are lacking in most Americans' diets, Dr. Pescatore advocates using macadamia nut oil. "Macadamia nut oil is higher in monounsaturated fats than olive oil; it is the healthiest fat with an omega-3 to -6 ratio of one to one."

    The Omega-3 Difference

    Omega-3 and omega-6 fatty acids are basic forms of fat found in oils. Fish oil, hempseed and flax oil are high in what are called omega-3s. Certain plant-derived oils like corn and soy are richer in omega-6 fatty acids.

    "Primitive humans ate a diet that contained a one-to-one ratio of omega-3s and omega-6s," says Dr. Pescatore. "Today we (Americans) eat 20 times more omega-6 than -3; that's why we suffer so much chronic disease and chronic inflammation. For instance, the Japanese eat a (much better) diet that contains a two-to-one ratio of omega-6 fatty acids to omega-3." "Not all omega-6s are bad," he adds, "we just eat too many of them."

    Switching to healthier fat isn't hard. Eat more fish. When cooking, stick to oils like olive oil and macadamia oil. The quality of your oil and your health may improve in a big, fat way.

    Lack of exercise and being overweight boosts your chances of developing diabetes. So, as America's epidemic of obesity grows, the number of people afflicted with the condition called type II diabetes is expected to soar. If you follow the typical US pattern of not getting enough exercise while indulging in a diet of too many calories from cookies, Cakes, fast food and saturated fat as your waistline gradually expands, your chances of encountering this health menace grow every day. According to the most recent estimate by health researchers, "more than half of all US adults are considered overweight or obese"(JAMA, 10/27/99).

    Those same researchers, who examined the health history and weights of more than 16,000 Americans, confirmed a fact well-understood by health practitioners who understand the chemistry of blood sugar: being overweight greatly increases your chances of not only diabetes but also high blood pressure, gall bladder disease, coronary heart disease, high cholesterol and arthritis. (If you suffer or think you suffer from diabetes, or any of these conditions, consult a knowledgeable health practitioner.)

    Insulin Insurrection

    While Type I diabetes is a relatively infrequent disease that often strikes kids, Type II diabetes is a much more widespread (and increasing) health problem experienced by 9 out of 10 adults with what is now called adult-onset diabetes.

    The popular image of someone with diabetes is, ironically, often of someone who is suffering with Type I. In simplistic terms, Type I diabetes occurs when your pancreas stops producing insulin, a hormone-like substance that, among its several tasks, helps deliver sugar from the bloodstream into the body's cells. When your body is functioning normally, insulin helps steady blood sugar levels and keeps tissues fed with nutrients.

    People with Type I diabetes often have to inject themselves with insulin. Otherwise, a lack of insulin causes dangerously increased blood sugar levels, cellular damage to blood vessels and nerves plus a high risk of heart attack, blindness, kidney failure and serious damage to your extremities that may, in the long-term, lead to amputation.

    Insulin Resistance

    On the other hand, someone beginning to suffer Type II diabetes usually has plenty of insulin being produced by the pancreas, but may be insulin resistant: for a variety of physiological reasons, the hormone is unable to do its job. That allows blood glucose to reach levels where it can wreak metabolic havoc.

    When you gain weight, drastically increase the amount of your bodyfat and lead a sedentary, couch potato existence without engaging in very much exercise, you boost your risk of becoming insulin resistant. Consequently you also boost the chances of eventually suffering Type II diabetes.

    However, a consistent exercise program (and losing weight) can alleviate or moderate some of the blood sugar problems brought on by diabetes or insulin resistance. When you exercise, your working muscles may take in more glucose from the bloodstream and stabilize your blood sugar level. That is one reason physical exercise helps to modify your body's response to blood sugar. (Of course, if you have diabetes or have not exercised in a long time, be sure to consult your health practitioner before engaging in strenuous physical activity.)

    Supplemental Help

    One of the most useful supplements employed to help control diabetes is chromium, a mineral that plays an integral role in the body's metabolism of sugar.

    In the Natural Health Bible, Steven Bratman, MD, and David Kroll, PhD, discuss a study in China of 180 people with Type II diabetes. In that study, those who took chromium enjoyed better blood sugar levels than the people who took no supplements (Diabetes 46(11): 1786-1791, 1997). In addition, a double-blind study of chromium found that the supplement could reduce the necessary oral medication by more than half in many cases (Harefuah 125(5-6): 142-145, 1993). In this study, women seemed to benefit from chromium more than men.

    Relief with Alpha Lipoic Acid

    Alpha lipoic acid, an antioxidant nutrient, helps defend nerve cells against painful damage-a condition called neuropathy-that can result from diabetes. Consequently, in Germany, doctors have been prescribing lipoic acid to people with diabetes for more than two decades.

    According to Dr. Bratman and Dr. Kroll, studies show that lipoic acid may be particularly helpful when taken with gamma-linolenic acid (GLA), a fatty acid found in evening primrose oil and borage oil. Studies of GLA have found that this fat can soothe numbness and pain and slow nerve injuries (Diabetes Care 16(1):8-15, 1993).

    Taken together, GLA and lipoic acid may synergistically improve nerve function (Diabetologia 41(4): 390-399, 1998). Blood sugar control may also improve.

    Healthy Mouth

    Two signs that you may be suffering diabetes are excessive thirst and a dry mouth. This missing liquid, especially in the mouth when the flow of saliva slows, can lead to a lack of lactoferrin, a naturally-occurring protein that fights infection in the mouth by binding iron (Jrnl of Diab Comp 7, 57-62).

    Lactoferrin's iron-binding ability destroys harmful micro-organisms like bacteria. In addition, lactoferrin stimulates the body's production of a substance called secretory IgA, which keeps disease-causing organisms out of the body and helps stabilize blood sugar (colostrum also produces this effect).

    Spice Health

    Fenugreek, a spice, has had long use as a medicine and food ingredient in the Middle East and Asia. And now modern science has begun to accumulate evidence supporting its traditional use: Several studies have shown that this seed can benefit blood sugar levels and keep blood cholesterol down.

    In laboratory animals, researchers found that fenugreek kept blood sugar levels under control and also increased HDL (good cholesterol) while dropping triglycerides, blood fats that increase the risk of heart disease (Eur Jrnl Clin Nut 44 (1990):301-306).

    Fortuitously, studies on people have supported fenugreek's benefits. In people with Type I diabetes, studies show that fasting blood sugar levels were reduced and glucose tolerance tests (measures of how well the body handles sugar) were closer to normal (Eur Jrnl Clin Nut 42 (1988):51-54). Bilberry for Eye Health

    Retinopathy, eye damage resulting from diabetes, is a serious complication of this disease and can cause blindness. Bilberry, a botanical that has been used as a folk treatment for eye health for centuries, may be able to lower the risk of this kind of vision destruction.

    Bilberry, a dark berry that grows in Europe, has been shown in a collection of laboratory tests to hold down blood sugar levels (Quart Jrnl Cr Drug Res 17(1979):139-196). Bilberry has traditionally been used to protect eyesight.

    According to the Encyclopedia of Natural Medicine (Prima), natural substances called flavonoids, found in bilberry, "have been shown to increase intracellular vitamin C levels, decrease the leakiness and breakage of small blood vessels, prevent easy bruising and exert potent antioxidant effects."

    Apparently, the body uses these flavonoids to protect the eyes' blood vessels and to keep the retina (central part of the eye crucial to preserving sight) functioning normally (Arch Med Int 37 (1985):29-35). Consequently, bilberry has been used by health practitioners in France to treat diabetic retinopathy ever since the 1940s.

    Diabetes Research

    As medical researchers look more closely into how insulin functions throughout the body, much more light will be thrown on how supplemental nutrients and your diet interact to promote the healthiest blood sugar levels.

    Low blood sugar-a blood sugar recession-can make the good times recede. While you can't live without blood sugar, too much or too little wreaks havoc on your body and mind. And when blood sugar dips low enough to cause hypoglycemia you may feel like your emotions have been shredded. Knowing how the body regulates blood sugar allows you a measure of control in keeping blood sugar in the proper groove, and makes life a little sweeter. Hypoglycemia occurs when you feel dragged out because of low blood sugar. Ironically, this low blood sugar syndrome may be caused by an overabundance of sugar in your meals and snacks. Those who point to hypoglycemia as a widespread problem claim that up to two of three women in America suffer from hypoglycemia. That would make it an epidemic of monstrous proportions. In a survey of 1000 folks complaining of hypoglycemia, published in the Hypoglycemia Support Foundation's winter 2000 edition, researchers found that low blood sugar sufferers complained of hypoglycemic discomforts in several main categories: 94% of the people in the study reported nervousness, 89% mentioned irritability, exhaustion affected 87%, depression struck 86% and drowsiness hit 73%. Other miseries included fatigue, cold sweats, tinnitus (ringing of the ears), rapid heart rate, blurry or double vision, confusion, sudden hunger, convulsions, sweating, sleeping problems, paleness, muscle pain, memory loss, crying jags, fainting and dizziness.

    Body of Evidence
    Hypoglycemia may result from munching endless sweets and never exercising (physical activity improves your body's handling of sugar). Many sufferers of hypoglycemia may view it as a disease, but the experts pigeonhole it, technically, as a condition or syndrome. R. Paul St. Amand, MD, Professor of Endocrinology at UCLA, points out that "in certain people, the body is unable to process carbohydrates without adverse consequences. Hypoglycemia, or low blood sugar, is the name often used to denote a whole disease. But more accurately it is only one of a cluster of symptoms that together make up a syndrome." According to herbalist Cynthia Hartson, ND, at Better Health Chiropractic and Natural Family Health Care in Mission Viejo, California, when you eat too many processed foods you set yourself up for a big fall in blood sugar. "...As with many conditions out there, you don't catch diseases, this one or any; you create an environment in your body that allows these symptoms (and conditions) to occur." Your body breaks down carbohydrates, including those in vegetables, fruits, breads and grains, into simpler sugars. As these carbohydrates pour into the blood in the form of glucose, cells in the pancreas secrete the hormone-like substance insulin. Insulin is supposed to persuade cells to take up this in-flow of glucose and use it as fuel. But if, during this process, blood sugar drops too low, the pancreas releases glucagon, which stimulates the release of glucose into the blood to bring blood sugar levels back up. Overindulging in sweets and processed foods may upset this blood sugar balancing act. Americans consume about 120 pounds of sugar per person annually, a voluminous avalanche compared to preindustrial times when we only took in about seven pounds a year. When you eat your way through this much sugar, Dr. St. Amand claims, your body's "...excess amounts of carbohydrates (generate) an overproduction of insulin. As your blood sugar drops, your brain tunes out. Because a massive amount of carbohydrates drives your insulin and glucagon down, the fats (stored as carbohydrates) in your body can't be released (for energy) and you crave more carbohydrates." As you continue to consume large amounts of carbohydrates, the pancreas secretes greater amounts of insulin to properly transport the excesses of circulating blood sugar. Eventually, every time you eat sugar, your pancreas may release excessive insulin, which drives and keeps your blood sugar low enough to make you feel like lying down in a corner and telling the world to go away. And there's more bad physiological news: Your adrenal glands respond to this stress by producing adrenaline and dumping it into the bloodstream in overabundance, causing anxiety, trembling and panic attacks: frequent signs of a hypoglycemic reaction. Adrenaline is supposed to stimulate the liver to release glycogen (stored sugar) to get your blood sugar back to a functioning level. But once again, as your sugar cycle degenerates, the pancreas increasingly produces more insulin to drive down your blood sugar level. Your blood sugar may drop and stay down.

    Numbers Game
    Many conventional doctors dismiss hypoglycemia as an illusion. But Dr. St. Amand states that doctors are "hung up on numbers." The glucose tolerance test, typically used to diagnose hypoglycemia, is based on numbers and the numbers often don't add up. Signs of hypoglycemia typically show up to two to three hours after a meal or snack containing lots of processed foods, when there is a rapid release of sugar into the small intestine, followed by rapid glucose absorption into the bloodstream and the consequent production of a large amount of insulin. These reactions occur so rapidly and unpredictably that catching them in a glucose tolerance test is often impossible. (Of course, see your health practitioner if you suffer persistent health problems that may be caused by a serious underlying condition or disease.)

    Diary of a Maddening Condition
    Keeping a food diary can help you discover what foods set off your hypoglycemia. Be honest, and record everything: your food, drinks, even breath mints! Note the time you eat, the time you sleep, the exercise you do, and your moods to see what triggers low blood sugar. Once you identify your triggers, remove them. When recommending ways to dodge hypoglycemia, Dr. St. Amand says, "It is not what you add but what you remove" that's most important. Items that often cause problems include:

  • * Sugar (obviously) of all kinds: table sugar, corn syrup, honey, sucrose, glucose, dextrose or maltose.
  • * Starches such as potatoes, rice, pasta and processed white breads.
  • * Fruit juices.
  • * Caffeine (coffee, tea, chocolate and soft drinks), which intensifies the action of insulin. The National Hypoglycemia Association says that foods which many hypoglycemia sufferers find to be helpful are those high in soluble dietary fiber and complex carbohydrates: whole grains, legumes and vegetables, which may be absorbed more gradually than processed items. Slower carbohydrate absorption may help prevent the major swings in blood sugar levels that foments hypoglycemia. Eating smaller meals and snacking often may ease blood sugar fluctuations. Incorporate fats into your snacks to decrease the flow of carbohydrates into your bloodstream and decrease carbohydrate cravings. Whole-wheat crackers with natural peanut butter, vegetables dipped in organic olive oil, packaged nuts and seeds, rice Cakes, and soy cheese may slow sugar absorption. Your food diary should also record your activity level, the amount of water you drink, and indicate the times you feel stressed. While your diary may show that the stresses and lifestyle items that most frequently trigger your hypoglycemia are different than those that cause problems in others, you will probably discover that exercise significantly helps to dispel low blood sugar discomforts. Exercise tones your muscles, improves circulation and aids in digestion. It increases circulation and helps your muscles metabolize sugars more effectively.

    Review Time
    Ask your relatives to find others in your family who suffer diabetes, hyperinsulism or hypoglycemia. Roberta Ruggiero, president of the Hypoglycemia Support Foundation, Inc., and author of the book The Dos and Don'ts of Low Blood Sugar (Lifetime), notes that genetics plays a large role in reactive hypoglycemia. "In a survey of confirmed hypoglycemics," she states, "it was found that approximately 64 percent of them had one or more family members who had been diagnosed with diabetes." If you know someone in your family suffers this kind of problem, you can find it helpful to see what works for them to relieve the discomforts of low blood sugar. And you can share with them what works for you. Together, you can slip the shackles of hypoglycemia and sweeten your days.
