Sulfites are chemical compounds which occur naturally in several animal and plant products. These chemicals are sulfur - based which is commonly used as food enhancer or preservative. Sulfites can effectively prolong the shelf life of food and also prevent discoloration of food. Foods which may contain sulfite include baked products, canned goods, junk foods, vegetable juices, fruit juices, apple cider, some teas and other processed food items. Sulfite - containing ingredients may include sulfur dioxide, potassium bisulfite or potassium metabisulfite and sodium bisulfite, sodium metabisulfite, or sodium sulfite.

Allergic reaction to sulfite is not that rare. In fact, the Food and Drug Authority have established "1 out of 100 people" prevalence rate that is hypersensitive to sulfite and its products. Any person may develop allergic reaction to sulfites any time of his/her life. Studies revealed that the cause of such hypersensitivity is still unknown. More studies are still ongoing. Initial results have stated that the allergic effects can be mild or life – threatening. In late 1980's, the FDA released a memorandum on prohibiting the use of sulfite on fruits and vegetables that are commonly eaten fresh and raw such as lettuce, apples, guavas and the like. Nonetheless, asthma, nasal and sinus congestion, rhinitis, postnasal drip, headache and bronchospasm may also be experienced by the individual as an effect of sulfite consumption. In addition, vertigo may also be a manifestation of sulfite hypersensitivity.

Studies have found that the allergic reaction brought about by the compound sulfite can significantly lower blood pressure thus resulting to decreased cardiac output which can eventually lead to insufficient tissue perfusion. Thus, dizziness is experienced or even loss of consciousness. Vertigo or dizziness is a kind of feeling in which your surroundings seem to be moving around even though there is no actual movement. In cases of severe vertigo, the person may experience nausea and vomiting. This will greatly affect your daily functioning since the person with vertigo may have difficulty walking or even standing on his/her own. This will significantly result to loss of balance and increase the risk of fall.

There is no direct treatment of sulfite sensitivity. However, the symptoms can be alleviated in a palliative manner. The one and only way to prevent the occurrence of allergic reaction is to avoid food products with sulfites or food items which are likely to have sulfite content. Therefore, if you have sulfite allergy, you must be vigilant on what you eat. Carefully check labels of processed and preserved foods and when eating out, politely as the waiter or chef if the food you like contains sulfite or ingredients which contain such chemical compound.

In the modern world we are familiar with different kinds of cuisine and we even focus on it sometimes. Garcinia is a little-known fruit that can be found growing extensively in India and Thailand. Used for centuries as a Condiment, garcinia is also known as Malabar tamarind or Gorkapuli. The garcinia fruit is about the size of an orange and orange in color. However, it looks similar to an acorn squash in appearance. The individuals who were taking the garcinia-chromium lost an average of eleven pounds, while the control group reported only a four-pound weight loss.

Garcinia has been found to be beneficial in curbing the appetite, which aids in weight control and obesity. One study on animals found appetite reduction in lean and fat rats and mice. The animals ate less, and when hyroxycitric acid was added to their diets, their body fat decreased, but body protein was unaffected.

Garcinia is also thought to help burn fat through thermogenesis. When there is not enough thermogenic activity, weight gain can result. The thermogenic activity in garcinia is responsible for helping to increase heat production, specifically in brown fat, which is the body fat surrounded by blood vessels and energy cells. Brown fat is harder to lose because it requires more heat to burn.

Horse RadishThe horseradish plant is a perennial plant that is part of the Brassicaceae family, which includes mustard, wasabi, broccoli, and cabbages. Native to southeastern Europe and western Asia, the plant is popular around the world today. The horseradish plant grows up to five feet tall and is mainly cultivated for its large, white, tapered root. The intact horseradish root has hardly any aroma. However, when cut or grated, enzymes from the damaged plant cells break down to produce allylisothiocyanate, which often irritates the sinuses and eyes. Once grated, if the plant is not mixed with vinegar or used immediately, the root darkens and loses its pungency. It quickly becomes unpleasantly bitter when exposed to air and heat.

Horseradish has been cultivated since ancient times. The Delphic Oracle in Greek mythology told Apollo that horse radish was worth its weight in gold. Horseradish was known in Egypt by 1500 BC and has been used by Jews from Eastern Europe traditionally in Passover. The plant is discussed by Cato in his treatises on agriculture. It is thought that horseradish is the plant known as Wild Radish by the Greeks. Both the root and leaves of the horseradish plant were used as a medicine during the Middle Ages, with the root used as a Condiment on meats in Germany, Scandinavia, and Britain. This herb was taken to North American during Colonial times. It is not certain as to where the name horseradish come from. Some believe that it derives by misinterpretation of the German Merettich as mare radish. Others think the name comes from the coarseness of the root. For at least two thousand years, horseradish has been cultivated. It was brought to America by early settlers and used to treat conditions such as pain from sciatic, colic, and intestinal worms. The Wasabi rhizome, the underground fleshy stem of the wasabia japonica plant, is prized not only for its fiery flavour but also its effect in detoxifying the liver. However, make sure that you are getting the real McCoy since many restaurants in the USA do not use the genuine paste.

The wasabi is a plant of the cruciferous family, the same family as cabbage, broccoli, turnip, radish, horseradish and mustard, and is native to Japan and Korea and now grown on the Pacific coast of Canada. It grows best in temperate to cold climates, especially in mountainous areas where there are plenty of cold streams.

Anybody who regularly enjoys sashimi and sushi should be familiar with the wasabi rhizome, that green lump of paste lying on the side of the plate. It is hot and fiery, although not in the same way as the chilli pepper that is fiery on the tongue and in the mouth. This tends to affect the sinuses more, and leaves a sweetish taste once the initial heat has dissipated. However, it is not always what it should be.

The last comment there refers to the practise, especially in the USA, of using dyed common horseradish as wasabi paste, so be careful of that since the two are not equivalent in the health benefits they impart to your body. Although of the same family as the horseradish, and sometimes termed the Japanese horseradish, ordinary horseradish does not have the same health benefits as genuine wasabi, and does not contain the same active ingredients so do not confuse the two.

Real wasabi is normally used grated, and there are specific techniques that should be used to grate wasabi rhizomes to bring out the fullness of the flavour. True grated wasabi should be of a natural pale greenish color rather than the brighter green normally associated with sushi restaurant wasabi.

Traditionally, wasabi rhizome is used as a Condiment with sushi, although their leaves can also be used in salad dressings and or as a delicacy pickled in soy sauce or sake brine. The genuine vegetable is difficult to cultivate which explains why ordinary horseradish is dyed and used in its stead, and the vast majority of non-Japanese do not know the difference because it is likely to be all they have consumed under the name of wasabi. The health benefits of the genuine article, however, are considerable greater.

So that’s what it is, but what does it do? What are the health benefits of wasabi rhizomes and why are they considered to be so good for your liver? Wasabi rhizomes contain substances that are very effective in detoxifying you liver, and that are also very strong antioxidants that provide you with good overall health benefits in their capacity to destroy the free radicals created by the pollution of modern living.

The active antioxidants in the rhizome are precursors of isothiocyanates, which are known as phytochemicals. These are chemicals that can protect or prevent diseases through its antioxidant properties. The term ‘precursor’ means that the isothiocyanates are synthesized by your body from the nutrients contained in the wasabi rhizome. Other examples of phytochemicals that you may have heard of are carotenoids, flavonoids and polyphenols that also possess antioxidant properties.

Other antioxidants are vitamins A and E, which is why these are used in anti-wrinkle creams, since their anti-oxidant effect helps to prevent the free radicals destroying the skin cells in the dermis and epidermis that leads to the wrinkles associated with aging. Wasabi is equally effective as an antioxidant, although it has other properties that are important to your liver.

The liver is your body’s chemical plant. That is where most of the chemical reactions take place that are essential for life. If your liver is unhealthy you can develop diseases such as hepatitis and cirrhosis, and a healthy liver is essential for life let alone a healthy life. Apart from creating the wide variety of enzymes needed to process your food, and controlling the vast majority of the biochemistry of your body, your liver is also your detoxification plant that coverts toxins into biodegradable molecules that your waste disposal system can evacuate without harm. Phase I coverts the toxin to a form that your body can further process (the bioactive form), and Phase II breaks it down into a form that your kidneys can handle and eject it in your urine. They allow your body to cleanse itself of toxins, and without this process you would be less healthy and more prone to cancers and other undesirable conditions and diseases in your body.

It is becoming more important in this modern age with its increasing natural and synthetic pollution that your liver is working at peak efficiency. Your liver is equally as important to you as your heart and brain, and without it you cannot survive. An interesting fact is how wasabi rhizome came to be traditionally served with raw fish. It was likely found healthier to include a dollop of this green paste with your sushi than not, and so the use of common horseradish might be somewhat questionable if it has less of an effect.

Beating the Aging Odds

All of us grow older, but aging is a choice. You have it in your power to retain much of the health, vitality and beauty of your youth. It boils down to a simple fact – retard oxidative stress and you’ll retard the aging process. The 70 million people who make up the “boomer” generation and are getting ready for an active retirement welcome this news.

Stress and Cortisol

The early twentieth century “stress doctor” Hans Selye, M.D. was renowned for his work on the human adaptive response and the effects of stress on aging. He taught that every stress leanves an indelible scar, and the organism pays for its survival after a stressful situation by becoming a little older. That’s because stress raises levels of the adrenal hormone cortisol. It increases internal generation of free radicals, disrupts normal metabolism and leads to aging conditions. Because of this, cortisol has been dubbed the age-accelerating hormone.

The more stressful our lifestyle and the level of environmental hazards we are exposed to, the higher cortisol levels will climb in an effort to jump-start our adaptive response. Coupled with a poor diet, this is a recipe for pre-mature aging. At least eleven major aging factors are related to high cortisol levels:

  • Breakdown of collagen and elastin in muscles, joints, and bone
  • Memory loss and reduced cognitive function

If you eat garlic because it's good for your heart, you swallow a plant renowned through human history: Garlic was eaten by Roman soldiers for courage; Egyptian slaves ate it to build strength; Christians, Moslems and Hindus include it in their sacred books. Others have used it as an aphrodisiac, a vampire deterrent and a magical charm.

Garlic has a long history as a culinary and medicinal herb that people either love or hate. Its pungent aroma and warming flavor captivates or repels, but its wealth of natural chemicals does great things for your heart.

Garlic (Allium sativum), a member of the onion family, is native to Siberia but, in modern times, has become a treasured naturalized citizen grown all over the world. Garlic's use in folk medicine dates back about 7,000 years, making it one of the oldest known medicinal foods or herbs.

In modern times, garlic is generally used as a Condiment lending a unique, pungent flavor to dishes, but in medieval times, garlic was cooked and eaten as a vegetable in its own right. Today you can revel in a wealth of garlic choices, consuming garlic raw, cooked in various recipes, as a dried concentrated powder, as a fresh liquid extract or as aged garlic powder.

Fortunately, since raw garlic juice or oil can often irritate the stomach lining, especially in people with sensitive stomachs and delicate digestive systems, garlic supplements and cooked garlic are both helpful for heart health.

Aged Garlic Extract

Aging garlic significantly reduces its irritating compounds and makes it easier on the stomach.

In the aged form, all of garlic's healthy sulfur-containing compounds are converted to water- soluble compounds that retain garlic's natural health benefits. In addition, the pungent odor of the garlic is greatly reduced, an outcome many people desire.

When a group of researchers at Brown University studied the effects of aged garlic extract on people's cholesterol levels, they found that after six months, cholesterol dropped about 6% (Am J Clin Nutr 1996; 64:866-70).

In another study from Brown, researchers found that aged garlic extract reduced platelet adhesion, a sticky blood problem that can cause vessel blockages (New Drug Clin 45(3):456-66). When platelets are less sticky, they are less likely to form blood clots that can cause heart attacks.

Garlic and Heart Disease

A growing body of research shows that a clove of garlic a day can significantly reduce your risk of heart disease.

A four-year study of 280 people who took dried garlic powder three times a day found a striking reduction in the types of arterial plaque blockages that threaten the blood supply to your heart. Interestingly, in this particular study, women displayed a greater reduction in plaque than men (Atherosclerosis 2000; 150:437-8).

Another study found that garlic may also keep important blood vessels more supple and less likely to spasm. Arterial spasms have been linked to heart attacks and other cardiovascular problems in women.

Aortic Complications

As you age, the aorta, one of the main arteries that carries blood, may harden, reducing blood flow from the heart and placing damaging stress on a number of other bodily organs. In research at Ohio State University, people who took garlic supplements had 15% less aortic stiffness than people who avoided garlic (Circulation).

In this study, scientists found that the older people enjoyed the greatest cardiovascular benefits from daily garlic use.

Researchers believe this extra benefit is linked to the fact that as you age, the endothelial tissue in the linings of the aorta and other blood vessels become less responsive to the need to dilate (expand). As a result, when more blood flow is required, and the heart pumps faster, these vessels take more of a beating from the friction of blood passing through them.

That restriction in dilation has two damaging consequences: In one instance, vessel walls can be injured. In response to these injuries, cholesterol collects on artery walls, plaque forms and the blood supply to the heart muscle can be restricted, leading to a heart attack. In other cases, arteries can restrict blood flow to the heart simply because of the inability to expand sufficiently.

The Ohio State researchers found that arteries in folks aged 70 to 80 benefited the most from taking garlic. But those in their 60s also benefited significantly.

Garlic's natural antioxidant properties can also help protect the heart from damage after surgery (BMC Pharmacology 9/02).

In a study performed on lab animals, researchers found that oxidative stress, a source of cell damage that takes place after surgery, dropped when the animals ate a diet that included garlic.

Oxidative stress can seriously reduce cardiac function, limit the amount of blood the heart can pump and cause permanent damage to the heart muscle.

Garlic Against Blood Clots

Under normal circumstances, blood clots serve a useful purpose: Cut yourself and a blood clot stops the bleeding. Without this clotting ability, you might bleed to death. But if your blood is too prone to clotting, these clumps can cut off blood supply to your heart and other organs, endangering your life.

In a study of apparently healthy individuals whose relatives had already suffered from heart disease, researchers found that their blood formed thick, tangled blood clots, increasing their risk of heart problems (Circulation rapid access 9/23/02). These blood clots are made of a substance called fibrin, a protein in the plasma that can form elastic threads that cut off blood flow.

While these researchers recommended aspirin as an anti-clotting measure for people at risk of heart disease, garlic can also help break up fibrin and possibly lower your chance of heart problems (Pharmatherapy 5(2): 83).

The fibrin that forms clots is produced by blood cells called platelets. Other scientists who have looked into garlic's benefits believe that one of its natural chemicals called ajoene may keep platelets from producing excessive fibrin and gumming up the flow of blood through arteries.

Are you a glutton for gluten, the sticky protein found in bagels and many other breads? Unfortunately, not everyone can enjoy the taste of fresh-baked bread because it contains this natural substance that can cause allergic reaction or intolerance in susceptible folks.

And while not everyone who suffers from food allergies or intolerances has a problem with gluten, other foods that can cause distress include items like watermelon, fish or even the benign-seeming peanut butter and jelly sandwich.

Still, with a little guidance, even if you have an allergy or two, you can enjoy meals and reduce food-related difficulties when you make food choices wisely.

According to the Food and Drug Administration, more than one in 50 adults and one in 12 children in the US suffer food allergies. But the problem may be even larger. Researchers believe even more of us have food allergies and don't know it: many food allergies and intolerances may be mistaken for irritable bowel syndrome or conditions like chronic fatigue syndrome.

Unhappy Digestion

The involvement of the immune system in an allergy represents the dividing line between intolerance and allergy. A food allergy strikes when the immune system attacks food ingredients as though they were threatening substances. Usually, proteins trigger these physiological alarms. The most common food allergens include wheat, soy, peanuts, shellfish, eggs, fish, tree nuts, milk and watermelon. Fortunately, many children who suffer allergies outgrow them as their bodies mature.

Signs of a food allergy may include a rash, hives, nausea, stomach pain, diarrhea, itchy skin, shortness of breath, chest pain, swelling of the airways and a condition called anaphylactic shock, a serious occurrence that can cut off breathing and requires immediate medical help.

If you believe you have a food allergy, see your health practitioner. If you have reasons to suspect an allergy to a particular food, avoid it altogether.

Intolerance Versus Allergy

Food intolerances are more common than allergies. They happen when food irritates the digestive system or offers substances that the digestive tract cannot break down. A food intolerance, however, does not provoke the immune system into an attack. The most common foods that cause intolerance are wheat, rye and barley; they all contain gluten.

Figuring out an intolerance generally requires adding and eliminating foods to gauge your response. Signs can include nausea, stomach pain, gas, cramps, bloating, vomiting, heartburn, diarrhea, headaches and irritability or nervousness. If you suspect you have a food intolerance, keep a food diary-recording what you eat and how you feel afterwards.

In addition, an elimination diet, wherein you avoid certain foods and track your responses, can help determine food intolerances. After you have dropped certain foods from your diet, reintroduce them, one at a time, until you eat a food that causes a return of your problems. These foods should then be permanently avoided.

Inflamed Intestines

Celiac sprue is a particularly severe inflammatory response to wheat or other grains containing gluten. According to the National Science Foundation, one in every 200 Americans suffers from this often misdiagnosed condition. That's more than a million of us!

If left untreated, celiac sprue can cause anemia, contribute to osteoporosis by limiting calcium absorption and increase the risk for intestinal cancer. Signs include headaches, weight loss, nutritional deficiencies, fatigue and neurological symptoms. The only treatment is to avoid all grains that contain gluten.

According to researchers in England, celiac sprue is often mistaken for chronic fatigue syndrome, type 1 diabetes or irritable bowel syndrome and can result in infertility (Med J Austral 2004 May 17; 180(10):524-6). Because sprue can confuse health practitioners, many people spend years trying to find an answer to their discomforts before finding that a gluten-free diet relieves their pain.

According to the Celiac Sprue Association, if you have gluten intolerance you should avoid durum wheat, semolina wheat, rye, kamut, spelt, barley, triticale and often oats. Some people find they can tolerate spelt, a distant cousin to wheat that's high in fiber and contains more protein (talk to your practitioner). Oats are generally well-tolerated by most people with gluten intolerance, but because oats are often processed on the same machinery as wheat, they may have traces of gluten. If you are gluten intolerant, you can still eat rice, corn, soy, potatoes, beans, sorghum, quinoa, millet, buckwheat, arrowroot and amaranth.

Problem Foods

Other food ingredients can trouble digestion. They include:

  • • Lactose: Up to 20% of Americans are lactose intolerant (Har Health Lett 2003 Dec; 29:6-7), reacting badly to milk products because they lack the enzyme necessary for digesting lactose (milk sugar). For these people, milk, ice cream and cheese cause gas, bloating, abdominal pain and diarrhea.
  • • MSG (monosodium glutamate): A flavor enhancer, MSG can cause allergic responses in susceptible individuals.
  • • Sulfites: Food preservatives-often found in baked goods, wines, snack foods and Condiments-have been found to cause hives, nausea, shortness of breath, diarrhea and, in some cases, anaphylactic shock.
  • • Food colorings: These items may cause allergic-type responses in some people.

    Fermented Foods

    If you have what seem to be allergies and intolerances, fermented foods that contain beneficial bacteria (probiotics) can aid the functioning of your digestive tract. Yogurt, kefir, buttermilk and sauerkraut supply active bacterial cultures and are generally easy to tolerate because they are predigested. According to researchers at Tufts University, yogurt can improve your digestive health and soothe difficulties linked to allergies and intolerances (AJCN 2004 Aug; 80(2):245-56).

    In addition, yogurt and other probiotic foods have been found to reduce the recurrence of irritable bowel flare-ups and may help reduce the risk of colon cancer. Yogurt improves gut microflora, increases bowel transit time and enhances immune response. Probiotics are also available as supplements.

    Helpful Hints

    If you have problems with certain foods or additives, becoming an amateur food detective can make meals more pleasant. Before eating a packaged food, always read the label; if you are unsure of the ingredients, contact the food manufacturer. But, in any uncertain situation, if you are in doubt of a food's ingredients, do without. Better to avoid food problems than realize too late that you've eaten a food that has upset your digestion.

    Some people find their food intolerance comes and goes, often depending upon the amount eaten and how often a food is consumed. For example, some people with lactose intolerance find they can have a little milk in their coffee or on their breakfast cereal one day a week, but have problems if they drink milk on two consecutive days.

    While deciphering which foods in your diet cause you problems can be time consuming, the reward for eliminating these nutrients, better digestion, is great. Don't give up! Persevere and, eventually your digestion will thank you.
