Fructose is a simple sugar found in many foods. Fructose recently has been mis-linked as a harmful sugar, but the issue really lies in general with consumption or overconsumption to be exact. Suggesting fructose could cause health issues when concentrated amounts are eaten is a statement which should really apply to the overconsumption issue. Used in moderation, sugars serve a purpose, to provide fuel for energy and to make other foods and beverages more palatable. As a society we are undoubtedly suffering from a lack of dietary fiber. Although it is true that we are constantly warned that diets low in fiber can actually kill us, most of us continue eating the way we always have. Our diets are full of empty calories, refined foods, sugar, and very little when it comes to whole foods. As far as fiber is considered, many of us believe that a daily bowl of cereal is more than enough fiber. Sadly, the food in many of our houses consist of white FLOUR products, cooked and canned vegetables, cookies, chips, all of which are fiber-less and artificially altered from their original state, making them less and less like actual food. The typical American eating habits have led to issues of chronic constipation, intestinal gas, bowel disorders, and a variety of infections all leading to colon cancer.

If we want to increase our fiber intake, we must first recognize what exactly fiber is, where it is found, and how it works. A lot of us would not even recognize certain foods in their whole, natural state. For the most part, whole foods from plants offer us a great amount of dietary fiber. Although food producers add natural and synthetic fiber to foods, they cannot improve on the natural fiber that is found in plants. Since ancient times, whole grains have been considered staples of the diet were consumed by the lower-class societies who could not afford the fatty, sweet, high protein diets of the upper class.

It is no coincidence that as our intake of fiber decreased, certain bowel diseases including colon cancer and diverticulitis increased. From kindergarten through 12th grade, in both grade schools and high schools, vending machines offer calorie laden candy bars, sugar-filled soft drinks, and snack foods loaded with fat and salt. Many school cafeterias actually sell fast-food to children for lunch every day. In fact, it seems almost everywhere children go and gather, visually enticing but nutritionally lacking snacks and soft drinks are sure to be available.

Determined to counteract this disturbing trend, parents everywhere are urgently seeking solutions to help their children get the nutrition they need. One answer is supplemental multivitamins. There are certainly plenty of multivitamins formulated for children currently on the market. However, these products vary considerably in quality and content. Some lack certain vital nutrients. Within a week of getting vitamin C supplements, the boy’s pain and other symptoms were completely resolved. Obviously, this little boy’s story is unusual. However, even mild food phases (such as “If It’s Green It Must Be Yucky” or “The Only Good Crust Is A Cut-Off Crust”) can result in awfully lop-sided nutrition.

 

Q. Can multivitamins help my child’s performance in school?

A. Most teachers firmly believe that nutrition and learning go hand in hand. They are convinced that children who are well nourished possess the mental stamina that’s needed to learn and retain even difficult concepts. But can multivitamins help children become better students?

Two independent research teams recently conducted randomized trials to find the answer. The researchers followed 245 school-children aged 6 to 12 years for three months. They gave half of the children multivitamin tablets every day, and half of the children placebos. When the children were tested, the children in the multivitamins group showed an increase in their nonverbal intelligence scores. Nonverbal intelligence is closely associated with academic performance.

One of folate’s vital actions is the reduction of homocysteine levels in the blood. Homocysteine is an amino acid (the building block of protein) that is normally produced in the human body. Research has shown that high levels of homocysteine can irritate blood vessels, make blood clot more easily than it should, and cause blockages in arteries increasing the risk of heart attacks and strokes .

However, study after study has proven that taking folate reduces harmful homocysteine levels. While most of this research has been in adults, a recent study looked at children’s homocysteine levels. Researchers examined over 3500 children and discovered that high homocysteine levels increased the risk for heart disease in these children, especially as they grow. The researchers leading this study reinforced how critical folate is for all children.

Other critical vitamins for children are the vitamins C and E. The rates of childhood asthma have increased significantly here in the US. There seem to be several reasons for this troubling trend, including environmental pollution and changes in the earth’s atmosphere. However, when vitamin C and vitamin E are given to children with asthma, they are able to breathe better and feel much better, too. It seems C and E, both antioxidants, keep asthmatic bronchial tubes from constricting which results in wheezing less and breathing better.

 

Q. Which minerals do children need?

A. It is absolutely crucial that children get calcium, chromium, iron, magnesium, manganese, selenium, zinc, and phosphorus every day. Sadly, however, the majority of our children are not getting the recommended amounts of many of these vital minerals. Children in America today drink more carbonated soft drinks than milk and are in the midst of a calcium crisis. Green leafy vegetables, another good calcium source, are also negligible in teen diets.

According to statistics from the National Institutes of Health, only 13.5 percent of girls and 36.3 percent of boys age 12 to 19 in the United States get the recommended daily amount (RDA) of calcium. Because almost 90 percent of adult bone mass is established by the end of this age range, children today are in danger of being part of an osteoporosis epidemic in the future as they enter late adulthood.

Lack of adequate calcium has immediate consequences for children, as well. The number of fractures among children and young adults has increased as a direct result of poor calcium intake. Pediatricians are also seeing children with rickets, a bone disease caused by low levels of vitamin D. Rickets became almost nonexistent after vitamin D was added to milk in the 1950s, but, due to lower milk consumption, is now appearing at greater rates around the country. And milk itself can be problematic for some children. Aside from alarming reports of hormones and herbicides in commercial dairy factory milk, even organic milk is not tolerated by all because of lactose intolerance and allergies.

Zinc is another mineral that’s vital for children. Because zinc is critical for normal growth and development, children need to take it every day. A study published in the Journal of the American Dietetic Association, however, found more than half of US children ages two to 10 years fail to get the recommended daily allowance (RDA) for zinc. What’s even more troubling is that zinc is vitally connected to children’s ability to process information, pay attention, as well as remember and retain new information

Subject: Exotic Herbs From The Amazon Basin

Although many traditional herbal medicines have yet to find complete scientific corroboration in the West, it follows logically that people wouldn't use an herbal product for centuries if it didn't work.

Many of the popular herbs we all recognize as having great health benefits were only recently considered pretty exotic. Even green tea - a staple in China for centuries -has only lately gone main stream.

So it will likely be with herbs from the Amazon basin and its environs. The Amazon basin is one of the most bountiful environments on the planet. Explorers and botanists from the West have looked to this region for generations for the "next big thing." Of course, in many cases, the "next big thing" has already been in use for centuries.

In this issue of Ask the Medicine Hunter, we're going to look at some energizing and life- stimulating herbs that also happen to have great antioxidant properties, too. Best yet, many of them are available to us here from companies that practice fair trade policies.

Let's take a look at some of the herbal powerhouses coming out of the Amazon (and its nearby neighborhoods):

Maca (Lepidium meyenii) has been cultivated for a long time at least 2000 years. Related to brassica family plants like radishes, mustard and cabbage, its foliage does actually look somewhat radish-like, but grows close to the ground.

Maca is cultivated by the Andean people in Peru's central highlands, and contains a plethora of beneficial compounds that enhance overall health and vitality. The tradition of cultivating maca is an old one some strains have been found in Incan sites that date from 1600 B.C. During early European colonization, maca was used by the local native culture as a form of currency, much of the way cocoa was used by the Aztecs, further north in pre-Columbian Mexico.

Maca thrives in high altitudes - between 10,000 and 16,000 feet. The harsher the conditions, the better it grows, or so it seems. In fact, efforts to grow the plant in Central Europe haven't been as successful - maca seems to enjoy its home turf the best. In Peru, maca is a popular and beloved nutrient-packed superfood, and is commonly powdered and mixed into drinks at roadside stands throughout the Andes.

Q. I've heard of maca being used for healthy libido - are there any other benefits?

A. Maca is a natural energizer, and although it is recognized for it's libido enhancing abilities, it has other uses, too, acting as an adaptogen - similar to rhodiola or ginseng. In fact, in South America, maca is known as "Peruvian Ginseng." Though maca is not ginseng at all, some of the benefits of both plants are similar.

In any event, maca is recommended for boosting the immune system, menopause support, and hormonal balance in general. For daily use, maca is most recognized as a great source of energy and all-day endurance. Alkaloids from maca root may be partially responsible for both maca's energizing and libido boost. Research shows that maca affects the hypothalamic-pituitary (HPA) axis - boosting energy and overall aphrodisiac prowess in men and women. Maca contains novel compounds called macamides and macaenes, which have been proven in animal studies to significantly enhance energy, stamina and sexual function reasons people have been so consuming maca for 2000 years.

There are other serious reasons why maca is such an excellent plant. One group of compounds in maca is the isothiocyanates-aromatics constituents that are responsible for the "hotness" of mustards and radishes - fellow members of the brassica family. Isothiocyanates from other members of the brassica family may reduce the risk of breast and stomach cancer. Although the same constituents specifically from maca haven't beentested, it's plausible that they could have the same effects.

Q. I've heard a little about guarana extracts - is it just caffeine?

A. Guarana is widely loved for its mild stimulating effect, which is due to caffeine. But this is by no means this Amazonian herb's sole beneficial compound. Guarana (Paullinia cupana) is so logically ingrained in the culture of Brazil that it's practically a rival (actually out-sells) Coca-Cola in its soft-drink form. Like many other indigenous herbs, guarana was in use locally well before European settlement. Its Latin name comes fromthe German botanist C.F. Paullini, who first encountered the herb in the 1700s. This evergreen vine typically climbs fairly far up the Brazilian forest trees. The seed is the part that gets used. In one clinical study, guarana boosted the memory alertness of participants, even when the caffeine level per dose was a low 9 mg., as compared with approximately 100 mg for a cup of coffee. This effect suggests that other agents than caffeine contribute to a feeling of well being.

Guarana also contains powerful antioxidants including catechin, epicatechin and proanthocyanidins, which protect cells against destruction from free radicals, and impart benefits to the body's tissues and blood. The small seed of this plant is powerful in its health benefits.

Catuaba Bark:

Catuaba (Erythroxylum catuaba) is a common tree found in South America from Brazil to Peru, in the same genus as the coca plant. Catuaba contains components known as alkaloids. These alkaloids (called catuabine A, B, and C) are probably responsible for themental boost most people get when they take catuabe-based supplements or mixes.

There may be little confusion regarding catuaba, because various species and genus typesuse the common name. As a result, "catuaba" gets bandied around a lot, and one person'scatuaba may not be the next. Read labels carefully. The catuaba I've had the best luck with is Erythroxylum catuaba.

Coffee Fruit:

One of my favorite drinks in the world is coffee, and I'm sure at many people reading thisconsider it the essential part of their morning, too.

The part of coffee that we use the most is the seed of the coffee fruit - which appears as a bright, red berry. Most of the time, this fruit is sloughed off and left behind in the process of making coffee - it's really too delicate to last long in hot conditions.

But advances in technology have tapped a previously discarded resource. Though the fruit of coffee is available in any coffee-growing economy, a high antioxidant commercial extract of "coffee cherry" is now available from the fruits of coffee plants in Mexico.

Coffee fruit has many of the attributes of other dark-colored, anthcyanin-rich fruits. Coffee fruit (also referred to as "coffee cherry") appears not to be just another antioxidant, however. Current research on this once-forgotten, former castoff shows impressive abilities to decrease tumor size, and possibly even prevent their formation in the first place. It seems that the elements in coffee berry activate T-lymphocytes in such a way that mammary tumors are shrunk or simply put on hold. It will be fascinating to see how this science plays out.

Muira Puama Bark:

Muira puama (Ptychopetalum olacoides) grows between 15 to 45 feet high. Native to theAmazon basin of Brazil, the dried bark has been used for centuries as a traditional energysupport. Components include beta-sitosterol, campesterol and lupeol.

Muira puama, like other central nervous stimulants has been researched lately for its ability to boost memory retrieval and protect neural (brain) tissue. Who knows? Maybe this traditional ingredient could someday be on the cutting edge of natural medicines fighting Alzheimer's, much the way green tea and turmeric are currently. In one unpublished French study of 262 men with low libido and poor erectile function, 62% experienced significant improvement after taking an extract of Muira puama for two weeks.

Acai Berry:

Acai (Euterpe acai) berry is a traditional favorite (and readily available) food source for people in the Amazon. The tree is a tall-growing palm with berries that provide - a rich source of anthocyanins, potent purple pigments with extraordinary high antioxidant activity.

Once harvested, acai fruits decay rapidly. As with coffee fruits, special processing is the surest way to make certain the nutrients of acai berry make it to those of us outside the Amazon basin.

However, these wonderful fruits not only fight against free radical damage, but help our natural digestive enzymes and boost natural immune defenses, too. In fact, current research is investigating whether compounds in acai may have a fighting effect on leukemia, too. So far, the results have been very positive.

Look for supplements made using organically-grown, fair trade acai berry. Q. What is sustainability and fair trade, anyway?

A. In current parlance, sustainability often refers to practices and programs designed and implemented to keep natural systems healthy and FLOURishing. Many such programs focus on environmental protection and preservation of traditional cultures. In the world of medicinal plants, sustainable practices include organic agriculture, species management, fair trade, and benefit-sharing programs.

In other words, sustainability pays people fair wages, puts resources back into their communities, and ensures that the resources that benefit us all are going to be around for a long time. It is an earth-friendly, people-friendly concept of commerce that happily, is taking root around the world.

Conclusion:

The traditional cultures that use - and have used - these ingredients for generations wouldn't have done so if they hadn't been effective. Cardiovascular disease is on the rise. Heart disease, stroke, and related disorders kill more Americans than any other ailments combined. In 1990 approximately one million Americans died form cardiovascular disease. Arteriosclerosis (hardening of the arteries) is the leading cause of heart attacks and strokes. Fat and cholesterol accumulate around the heart and inner walls of the arteries. This causes blood flow to slow and blood pressure to rise. Blood clotting is also a problem when the arteries are clogged which, if a clot breaks loose, can cause strokes or heart attacks according to where they end up. Heart disease is usually advanced before a problem arises. Prevention should be the first goal.

Heart disease is much less common in “primitive” societies. This is due in part to the lifestyle and diet choices of Americans. Diet is viewed as the most important factor in heart related disorders. An increased intake of sugar, refined FLOUR and simple carbohydrates may also be contributing factors. Other risk factors include a family history of heart disease, cigarette smoking, high blood pressure, type A personality, stress, diabetes, obesity, high blood cholesterol levels, physical inactivity and coronary artery disease. Changes must be made in diet and life-style in order to prevent heart disease.

DIET

Following a diet low in animal fat and refined sugars but high in fiber is highly recommended. Whole grains, almonds, fresh fruits and vegetables, a variety of legumes, skinless turkey, chicken and fish should be the main dietary elements. Brown rice, garlic, onions, olive oil, raw fruits and vegetables, sprouts, asparagus, apples, bananas, beans, buckwheat, seeds, whey powder, and yogurt are especially good for the heart. Avoid caffeine, alcohol, red meat, refined carbohydrates, and white FLOUR. Limit intake of dairy products which contain high amounts of fat. Homogenized dairy products contain an enzyme called xanthine oxidase which is believed to cause artery damage and could lead to arteriosclerosis. Use olive oil and canola oil when using fat. Avoid palm oil, coconut oil, peanut oil and cottonseed oil.

SUPPLEMENTS

Choline, inositol and lecithin: These act as fat emulsifiers in the bloodstream and can help prevent plaque buildup.

Chromium: Chromium is known for recent studies linking it to a reduced risk of heart disease. It may help prevent plaque buildup in the arteries. Low levels of chromium are thought to be a risk factor for developing heart disease. It also may help increase the beneficial HDL cholesterol and aid in lowering the LDL cholesterol.

Overview

Chitosan is a natural product that inhibits fat absorption. It has the potential to revolutionize the process of losing weight and by so doing, reduce the incidence of some of the most devastating Western diseases we face today. Chitosan is indigestable and non-absorbable. Fats bound to chitosan become nonabsorbable thereby negating their caloric value. Chitosan: A Brief History

Chitin, the precursor to Chitosan, was first discovered in mushrooms by the French professor Henri Braconnot in 1811.61 In the 1820’s chitin was also isolated from insects.62 Chitin is an extremely long chain of N-acetyl-D-glucoseamine

glucoseamine units. Chitin is the most abundant natural fiber next to cellulose and is similar to cellulose in many respects. The most abundant source of chitin is in the shells of shellfish such as crab and shrimp. The worldwide shellfish harvest is estimated to be able to supply 50,000 tons of chitin annually.63 The harvest in the United States alone could produce over 15,000 tons of chitin each year.64

Chitin has a wide range of uses but that is the subject of another book. Chitosan was discovered in 1859 by Professor C. Rouget.65 It is made by cooking chitin in alkali, much like the process for making natural soaps. After it

These groups can take on a positive charge which gives chitosan its amazing properties. The stucture of chitosan is represented schematically in Figure 2. Research on the uses of chitin and Chitosan FLOURished in the 1930s and early 1940s but the rise of synthetic fibers, like the rise of synthetic medicines, overshadowed the interest in natural products. Interest in natural products, including chitin and chitosan, gained a resurgence in the 1970s and has continued to expand ever since. Uses of Chit osan Some of Chitosan's major uses—both Industrial and Health and Nutritional—are listed in Tables 5 and 6.

Water Purification

Chitosan has been used for about three decades in water purification processes. 67 When chitosan is spread over oil spills it holds the oil mass together making it easier to clean up the spill. Water purification plants throughout the world use chitosan to remove oils, grease, heavy metals, and fine particulate matter that cause turbidity in waste water streams.

Fat Binding/ Weight Loss

Like some plant fibers, chitosan is not digestible; therefore it has no caloric value. No matter how much chitosan you ingest, its calorie count remains at

fibers, chitosan’s unique properties give it the ability to significantly bind fat, acting like a “fat sponge” in the digestive tract. Table 7 shows a comparison of chitosan and other natural fibers and their ability to inhibit fat absorption. Under optimal conditions, Chitosan can bind an average of 4 to 5 times its weight with all the lipid aggregates tested.60 (NOTE: This assessment was made without the addition of ascorbic acid which potentiates this action even further.77 Studies in Helsinki have shown that individuals taking chitosan lost an average of 8 percent of their body weight in a 4-week period.76 Chitosan has increased oil-holding capacity over other fibers.108 Among the abundant natural fibers, chitosan is unique. This uniqueness is a result of chitosan’s amino groups which make it an acid absorbing (basic) fiber. Most natural fibers are neutral or acidic. Table 7 summarizes the in vivo effects in animals of various fibers on fecal lipid excretion. As can be seen from the results listed, ingestion of chitosan resulted in 5-10 times more fat excretion than any other fiber tested. D-Glucosamine, the building block of chitosan, is not able to increase fecal fat excretion. This is due to the fact that glucosamine is about 97 percent absorbed while chitosan is nonabsorbable. Fats bound to glucosamine would likely be readily absorbed along with the glucosamine. Chitosan, on the other hand, is not absorbed and therefore fats bound to chitosan can not be absorbed.

Cholesterol Control

Chitosan has the very unique ability to lower LDL cholesterol (the bad kind) while boosting HDL cholesterol (the good kind).78 Laboratory tests performed on rats showed that “chitosan depresses serum and liver cholesterol levels in cholesterol- fed rats without affecting performance, organ weight or the nature of the feces.”79 Japanese researchers have concluded that Chitosan “appears to be an effective hypocholesterolemic agent.”80 In other words, it can effectively lower blood serum cholesterol levels with no apparent side effects. A study reported in the American Journal of Clinical Nutrition found that Chitosan is as effective in mammals as cholestryramine (a cholesterol lowering drug) in controlling blood serum cholesterol without the deleterious side effects typical of cholestryramine. 81 Chitosan decreased blood cholesterol levels by 66.2 percent.82 It effectively lowered cholesterol absorption more than guar gum or cellulose.83 Laboratory test results indicated that a 7.5% chitosan formula maintained adequate cholesterol levels in rats, despite a dramatic increase in the intake of cholesterol. 84

Detoxification-an internal cleansing that can supply the energy you need to succeed in achieving your goals.

No one can avoid toxins in our contaminated world, so many of us suffer from toxic overload, which can lead to fatigue, digestive problems and reduced immune function. " When we get out of balance, we get congested and toxic," says Elson Haas, MD, founder of the Preventive Medical Center of Marin in San Rafael, California (www.elsonhaas.com), and author of The New Detox Diet (Celestial Arts), "and our bodies' regular elimination systems cannot keep up with it. We have problems with our skin, our intestines, our sinuses. We also become deficient in vitamins, minerals and essential fatty acids. Most people have both congestion and deficiency, and they would benefit greatly from detoxification."

Toxins Within, Toxins Without

Life's fundamental activities-breathing, eating, walking around-generate waste in the form of free radicals, the unstable molecules that can ravage cells and tissues. Our bodies are also awash in manmade poisons such as food preservatives and additives, and residues from pesticides and herbicides. "The amount of toxic chemicals we are exposed to in our environment is staggering," says Susan Lark, MD, clinical nutrition expert and author of The Chemistry of Success (Bay Books). She notes that the average American is exposed to 14 pounds of such assorted chemical junk each year.

The body, however, does do its own housekeeping-and all of our cells detoxify every second of every day. "It's always a balance of garbage in, garbage out," says Dr. Haas, who has 30 years of experience in helping people detoxify. "Some of the toxins we break down into smaller components, some we just dump into the intestines for elimination."

Problems arise when there's more dirt than the internal maid service can sweep away. Dr. Lark notes that toxins wind up being stored in cells, especially fat cells, where they can hang out for years. When they are finally released "during times of low food intake, exercise or stress" complaints can range from tiredness to dizziness (sound familiar?).

That's where detoxification comes in, says Dr. Haas: "I think detoxification is a vital health care tool, particularly in this day and age when people are exposed to too many chemicals."

Digest This

The process of detoxification starts with cleansing the intestinal system. Alternative health practitioners observe that discombobulated bowels can become overly permeable (a condition called leaky gut syndrome) and allow in all sorts of things that they shouldn't, such as semi-digested food particles, leading to inflammation and complaints that include rashes and joint pain.

Cleansing can be as simple as cutting down on what Dr. Haas calls the SNACCs-Sugar, Nicotine, Alcohol, Caffeine and Chemicals-or as thorough as a complete diet-and-supplement program with colonic irrigation (a sort of super-enema, professionally administered; if you're interested, contact the International Association of Colon Hydrotherapy at 210-366-2888 or www.i-act.org). The more powerful the program, though, the more likely you are to experience toxicity reactions such as nausea and headaches because of the volume of material being released. As Dr. Haas puts it:

" If you did water and green salads for a week, you'd detoxify more intensely than if you just gave up sugar and white FLOUR." If you're feeling extremely rundown, take a gentle approach at first or consult a nutritionally aware practitioner, especially if you have a preexisting medical condition.

Getting more fiber is essential. Laurel Vukovic, a natural health teacher and author of 14-Day Herbal Cleansing (Prentice Hall), suggests following this daily regimen for two weeks: a teaspoon of psyllium (a fiber supplement); at least seven daily servings of fruits and vegetables, especially fiber-rich ones like apples, cabbage and carrots; and six glasses of water, along with daily exercise. Extra fiber "supports the intestines in eliminating the larger amounts of toxins that are released," says Vukovic, "prevent[ing] their reabsorption into the bloodstream." Some people find premixed cleansing formulas convenient; check your health food store shelves.

Fasting is a more intense detox approach that, according to Dr. Haas, "promotes relaxation and energization of the body, mind and emotions, and supports a greater spiritual awareness." He especially recommends fasting in the spring and autumn, which are times of transition. Some people do water-only fasts, but fresh vegetable juices are probably a better option, particularly if you haven't fasted before. Juices and plenty of fresh water also help cleanse the kidneys, another vital detox route.

Instead of juices you can use a special cleansing formula, such as the Spring Master Cleanser: 2 tablespoons freshly squeezed lemon juice, 1 tablespoon pure maple syrup and 1/10 teaspoon cayenne pepper in 8 ounces of spring water. Dr. Haas recommends drinking eight to 12 glasses daily (and rinsing your mouth after each glass to protect your teeth from lemon's acids), augmented by water, laxative herb tea, and peppermint or chamomile tea.

Try fasting for a day to see how you feel. Dr. Haas suggests starting out by fasting from early evening through the night, and eating a light breakfast the following day. Subsequent fasts can gradually increase in length-experienced fasters may go up to two weeks without food.

Break your fast properly; for juice or cleansing formula fasts, eat a raw or cooked low-starch vegetable, such as spinach or other greens. "Go slowly, chew well and do not overeat or mix too many foods at any meal," says Dr. Haas.

Don't forget your liver, the organ that transforms noxious chemicals into substances your body can eliminate. The herb milk thistle, used since ancient times as a liver tonic, contains silymarin, which protects the liver from pollutants and helps it renew itself after toxic damage. Dandelion not only promotes the flow of bile from the liver, which helps clean out the junk, but also acts as a diuretic, helping the kidneys do their job. Green-food supplements, such as spirulina and cereal grasses, help neutralize toxins.

To maintain your cleansing gains, eat a healthy diet after detoxing. Focus on fresh organic foods, especially produce, beans and peas, whole grains and seeds (add organic poultry if you eat meat). Organic yogurt provides healthful probiotics, while fresh fish and ground flaxseeds provide omega-3 fats.

Clean Living Pays

The body's largest organ-the skin-provides a valuable contaminant exit path. Sitting in a hot tub or sauna "benefits the internal organs of detoxification," according to Dr. Lark, "by lessening the amount of toxins they must process." When sweatin' out the bad stuff, drink plenty of water and replace the calcium, magnesium and potassium lost through perspiration.

Another way to stimulate skin circulation is dry brushing, which also removes dead skin cells for a healthy glow (and is easier to fit into a daily routine). Using "a moderately soft, natural vegetable-fiber bristle brush" (Dr. Lark's suggestion), work in from the hands and up from the feet with light, short strokes that always move towards the heart. Vukovic says that a hot towel scrub is another option; put three drops of lavender essential oil in a basin of very hot water, dip in a rough terry washcloth and wring out, and then rub the skin briskly, starting with your feet and working your way up.

Once you've detoxified your body, you can start in on your immediate surroundings. Dr. Haas warns against using plastic food storage containers: "When food is heated in plastics some of the plastic material ends up in the food, especially if the food contains acids." Use glass containers instead. He also recommends avoiding aluminum pots and pans, and using stainless steel as an alternative.

Dr. Haas has seen what a good detox program can do: "It's amazing the kind of results people get-looking and feeling younger, more vital and healthy. They say, 'I'm sleeping like a baby,' they have fewer aches and pains. They have more peace in their bodies. I think detoxification is one of the keys to preventive medicine." Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years.

That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting.

"There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications.

"Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing.

"There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside.

"But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while.

"Then there are quick breads that use baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans.

"Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits.

"To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness.

"The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat.

"Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato FLOURs, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet.

"Also investigate chickpea FLOUR. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables.

"Spelt is the closest to wheat FLOUR in consistency but some people can be sensitive to it.

"Visit a natural food store to check out the FLOURs. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their FLOUR. Or you may run into a baker who will whet your appetite with ideas and recipes.

"Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good."

Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well:

"Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached FLOUR and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen.

"Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine FLOUR, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day.

"I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with split pea soup.

"Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."

If you are over the age of 50, a quarter of your bone mass may have disappeared during the past two decades. And more of it may be exiting your body even as you read this.

According to the National Osteoporosis Foundation, about one in every two women in the US will break a bone after age 50 due to osteoporosis (bone weakening). Every year that translates into about half a million fractured vertebrae and more than 300,000 shattered hips. Frequently, these breaks are life-threatening.

Bone Nourishment

To avoid or minimize bone loss, and keep your skeleton's calcium from "resorbing" into your blood stream and eventually being excreted, your bones require constant nourishment and exercise. As Patrick Holford, author of the Optimum Nutrition Bible (Crossing Press), says, "...the bones, like every other part of the body, are continually being rebuilt. They form a structure of protein and collagen (a kind of intercellular glue) which collects mainly calcium, plus phosphorus and magnesium. Also necessary are a constellation of other nutrients including vitamins D and K."

Bone Deterioration

When this structure begins to deteriorate, the gradual bone destruction proceeds without obvious warning signs. A broken bone, the result of a porous, weakened skeleton unable to endure the body's weight, often proves to be the first evidence of osteoporosis.

The most obvious recommendation for preserving bone is calcium, since that mineral makes bone hard. Your requirement is probably more than you consume in your food.

As Cheryl Hartsough, RD, Director of Wellness at the Nemacolin Woodlands Resort & Spa in Farmington, PA, points out, "People don't take in enough calcium in their diets so we recommend supplements." Other factors besides calcium intake contribute to bone problems. As The Supplement Shopper (Future Medicine) by Gregory Pouls, DC and Maile Pouls, PhD with Burton Goldberg, points out, "A high caffeine intake, excessive consumption of carbonated soft drinks and a diet primarily of protein, salt, sugar and processed foods can all cause the body to excrete calcium. When the condition is chronic, it leads to loss of bone mass as the body pulls calcium from the bones to correct the imbalance."

Lifetime Problem

While loss of calcium in your bones may accelerate at menopause, osteoporosis is a problem that starts young: Girls generally do not build up sufficient bone mass to withstand later losses.

Since strong bones are formed during "the first three decades of life," says Laura Bachrach, MD, of Stanford University, "...osteoporosis is a pediatric disease." Consequently, youngsters should eat calcium rich, low-fat dairy products, plus plenty of leafy greens which also contain healthy amounts of calcium (as should older women to slow bone resorption).

At menopause, bone weakening may accelerate because of the hormonal shift that changes women's ratio of estrogen to progesterone. Estrogen generally retards the breakdown of bone while progesterone contributes to its reconstruction.

Those factors cause Ms. Hartsough to recommend a "combination of weight training and, of course, proper diet to build strong healthy bones as well as healthy muscle mass."

She adds that women should eat plenty of "broccoli and greens as well as sardines and salmon and soybeans. You should get some calcium and spread it out throughout the day."

Ipriflavone for Bones

A substance called ipriflavone, a natural chemical found in plants, has been found to help preserve bone strength. Although scientists are not sure how ipriflavone works to keep bone rock hard, they believe it interacts with hormones to keep calcium from being taken out (Osteo Int, 6 [1], 1996: 137).

In particular, studies that have given ipriflavone to post-menopausal women have found that it was especially effective at keeping these women from suffering weakened bones (Calcif Tiss Int 54, 1994: 377-80). A study in Italy of 250 post menopausal women aged 50 to 65 found that giving them ipriflavone, benefited their bones for at least two years (Osteoporosis Int 7, 1997: 119-125). The researchers' conclusion: "Ipriflavone may inhibit the progressive bone loss that occurs in women after menopause."

While many of us may picture our bones as an unchanging, static foundation for our bodies, the human skeleton is an ever-changing entity. Bones should carry a warning sign that says "Under Construction." If you neglect your skeleton until you're about to suffer a fracture, you invite debilitating deconstruction. But feed your bones the right stuff while challenging them with exercise and they will FLOURish.

Just as you wouldn't clean a closet by merely closing the closet door, you can't clean your body by closing your eyes to the toxins that assault our bodies every day. The modern world is filled with natural and manmade chemicals that can accumulate within and cause long-term health problems. So, in between bouts of housecleaning, an internal cleansing can keep your bodily systems feeling as clean as your sparkling household.

While modern life would be impossible without the chemicals that go into the gadgets and machines on which society thrives, these materials have a dark side: Each day we are exposed to hundreds of substances that have infiltrated our food, water and air. They lurk in our cleaning products, fabrics, personal care products, automobiles and even the building materials in our homes and offices.

"While our [bodies have] systems of detoxification to deal with and eliminate chemicals to which we are exposed, the sheer volume of these chemicals can overwhelm these detoxification mechanisms, causing these non-lifegiving substances to stay in our bodies where they can damage our health," says Steven Horne, AHG, herbalist and natural health consultant in St. George, Utah.

Added to this chemical mix, indulgences in alcoholic drinks, cigarette smoke, caffeine and over-the-counter drugs can further challenge your body's cleansing systems.

Water, Water Everywhere and How Your Health Can Shrink

Substances in the beverages you consume every day may contribute to the collection of toxins in your body.

A growing water problem, for instance, flows from the medications excreted into sewer systems and groundwater.

These drugs have already affected the environment: Estrogen from contraceptives have contaminated lakes and rivers, and caused deformities in fish while impairing the fertility of water animals and the birds who feed upon them. A study released by scientists at the Department of Energy's Pacific Northwest National Laboratory found that the fertility rate of adult male fish exposed to synthetic estrogen from contraceptive pills dropped by 50% (Envir Tox & Chem 6/03). TCE is also found in adhesives, lubricants, paints, varnishes, paint strippers, pesticides, spot removers and rug cleaning fluids, and it has entered the drinking water in many places.

Detox for Metabolic Balance

"Detoxification is the missing link in Western nutrition and an important but unexplored medical therapy," says Elson M. Haas, MD, author of The Detox Diet (Celestial Arts). Dr. Haas believes that when the body accumulates wastes that are not properly eliminated, disease often results: "The key to maintaining metabolic balance is to maximize nutrition and eliminate toxins." Dr. Haas has seen improvement in cholesterol levels, blood pressure readings and pain levels after his patients have detoxed.

When your body accumulates toxins, cells can stagnate and suffocate. To offset these problems, the body uses its built-in system of detoxification to remove toxins and cellular waste products.

In protecting itself against toxins, the body can quickly eliminate water-soluble compounds before they cause harm, excreting them in the stool, sweat and urine. "The right balance of acid and alkaline foods for each of us is, of course, the key," notes Dr. Haas. Animal products, sugar, white FLOUR, and alcoholic beverages are thought to leave acid residues in the body.

"Brightly colored foods contain powerful antioxidants that help the liver with the detoxification process," says Brenda Watson, CT, in her book Renew Your Life (Renew Life Press). "...[raw] fruits and vegetables...contain enzymes... [that are] destroyed by cooking."

These enzymes can help the body detoxify and eliminate undesirable substances. However, Watson cautions, "If the digestive system is weak...too much raw food [can] cause upset, so raw foods should be added to the diet at a pace the body can tolerate. Taking digestive plant enzymes with meals can also aid digestion."

While those foods in a normal diet can help control toxins, if you have moved toward "toxic overload," or if you want to eliminate candida-a yeast that can cause health problems-Watson recommends a detox diet:

  • *Avoid sugar and artificial sweeteners.

  • *Eat fewer grains.

  • *Avoid fruits and fruit juices; Granny Smith apples are OK, as is lemon juice in herb tea.

  • *Drink fresh vegetable juice.

  • *Avoid yeasty foods such as bread, beer, wine, sauerkraut and commercial salad dressings (olive is oil is acceptable).

  • *No mushrooms or cheese.

  • *No peanuts or peanut butter.

  • *No dairy except a little butter and plain yogurt.

  • *No coffee, tea, pepper, spices or tobacco. (A little herb tea is OK.)

  • *No pickled, smoked or dried meat, fish or poultry.

    Foods that are allowed include:

  • *Gluten-free bread

  • * Raw almond butter
  • *Eggs

  • *Vegetables low in starch

  • *Lentils

  • *Lean meats

  • *Pasta made from rice or quinoa

  • * Nuts and seeds that have been soaked overnight in distilled water

    When preparing dishes in this diet, use plenty of garlic and green foods. "Other anti-candida agents which may be used liberally include ginger, cinnamon, thyme and rosemary."

    According to Watson, following this diet is a first step toward detoxing. If you experience serious difficulties linked to environmental toxins, consult a health practitioner.

    Colostrum and Immune Health

    Many women are plagued with a constant battle with yeast infections. It is one of the most common reasons women visit a physician. It can be a very annoying condition often causing pain and discomfort. Candida albicans is commonly found on the skin, mouth, digestive tract and the vagina. Candida is a fungus found in the body all the time. Normally it does

    not pose a threat because the numbers are kept under control by the beneficial bacteria (acidophilus). When an imbalance of the bacteria occurs, the candida can FLOURish sometimes leading to serious conditions. Antibiotic therapy, oral contraceptives, douching, and female hygiene sprays can all destroy the beneficial bacteria needed in the body and allow the candida to proliferate. Antibiotics are often used to treat yeast infections when they may be the initial culprit. Broad spectrum antibiotics can destroy the beneficial bacteria in the vagina allowing the yeast to grown. Using antibiotics to treat the condition can destroy the remaining good bacteria leading to a dependency on antibiotic treatment. Pregnancy can also cause disturbances in the intestinal flora.9 Whenever a disturbance in the bacterial flora occurs, it is important to take measures to reestablish the normal balance of friendly bacteria. One study found that women who consumed one cup daily of yogurt with the live Lactobacillus acidophilus cultures had a reduction in candida infections. The acidophilus does not kill the candida but helps to encourage an environment more suitable for the the beneficial bacteria to live and grow.10 Eileen Hilton M.D., a specialist at the Long Island Jewish Medical Center in New York, followed 11 women with chronic yeast infections. They ate one cup daily of yogurt rich in live Lactobacillus acidophilus. During the last six months of the study, the women averaged only one yeast infection.11

    Another study done by Alexander Neri, M.D. a the Beilinson Medical Center in Israel followed 32 women with bacterial vaginosis. They were asked to apply yogurt with Lactobacillus acidophilus twice a day for two weeks. Then they were told to skip a week and start again. After two days of treatment, all the women had recovered. All but four remained free of symptoms for two months.12

    Other studies have also confirmed the benefits of Lactobacillus acidophilus in treating Candida albicans. Many beneficial results have been found using this natural form of treatment that enhances the body and encourages the growth of helpful bacteria rather than destroying all bacteria.

    There is no doubt that antibiotics have saved numerous lives since their development. But many health care providers in the past have seen them as a panacea for all ailments including viral infections that are not affected by antibiotic therapy. They have been overused and with disastrous results. Antibiotics are used to help the body in fighting infection, but unfortunately, they also may encourage recurrent infections caused by a destruction of the good as well as the bad bacteria lowering the immune function and leading to a dependence on antibiotics. Because of an overuse and misuse of antibiotics, some forms of bacteria are now resistant to them. Diseases which were aided with antibiotic therapy are now resistant to the treatment. Antibiotics are sometimes prescribed by physicians even when they are not appropriate.4

    Medical professionals almost felt guilty a few years ago when not prescribing some form of antibiotic when patients visited the office. After all, what good is a doctor if the patient does not leave with a cure. Fortunately, most doctors now know the detrimental affects that can follow excessive and inappropriate use of antibiotics. Most doctors now will be honest and up front with their patients when there is not a cure-all answer to their problem. An investigative reporter a few years ago visited a number of physicians around the country asking for antibiotics. It was interesting to note

    that almost all of the physicians agreed to prescribing antibiotics upon the patients request even when it wasn’t warranted. In being confronted after, most replied that they had to do what the patient asked in order to keep their practice FLOURishing. No wonder antibiotic overuse has resulted in drug-resistant strains of bacteria. The negative affects of antibiotics are well known. Antibiotics interfere with the growth of bacteria, both good and bad. But they are crafty creatures and have the ability of changing their chemistry and genes to avoid destruction by antibiotics. They want to survive and thrive. They grow at a very rapid rate allowing for a whole generation of drug resistant strains to develop in just a relatively short period of time. Alexander Fleming, who discovered penicillin, warned of the problem that could occur with resistant strains if antibiotics were overused.5 The weaker bacteria may be killed while the stronger endure. This causes the strong, resistant bacteria to invade and take hold in the body. Mitchell L. Cohen, a researcher with the National Center for Infectious Diseases at the Centers for Disease Control, issued this warning about antibiotics in 1992: “Unless currently effective antimicro b i a l agents can be successfully preserved and the transmission of drug-resistant organisms curtailed, the postantimicrobial era may be rapidly approaching in which infectious disease ward housing untreatable conditions will again be seen.” Patients, doctors, scientists and Acidophilus

    public health officials must all play their part in finding ways to reduce reliance upon antibiotics.6 Lactobacillus acidophilus is one of the most essential bacteria found in the intestinal tract. It helps to keep the disease causing organisms under contro l . Antibiotics can reduce the quantities of good and bad bacteria often allowing negative organisms to FLOURish. Broad spectrum antibiotics are the worst offenders often making way for an overgrowth of yeast which can affect the entire body. The broad spectrum antibiotics work just as they are called, broadly throughout the body, to kill just about all the bacteria around. If an antibiotic is warranted, the most specific type for the condition should be tried first in order to protect as much of the normal intestinal flora as possible.     The Challenged Child

    Difficulty in focusing and concentrating is one of the fastest growing problems for children today. Further, excessive and violent TV and computer games, lack of physical exercise, and poor diets can cause over-stimulation, internally and externally. Determining when such behavior is a problem is subject to interpretation. Too often, children are provided with a diagnosis before they are out of pre-school and are far too often prescribed pharmacological interventions such as amphetamines (Ritalin).

    The Birth of Calm Child

    My husband, Michael Tierra, originally formulated Calm Child for our own child, Chetan, then one year old, to address a wide array of potential childhood issues. His underlying intention was to use Calm Child for all children, based on his belief that most childhood emotional complaints are due to the unconscious pain of separation from the security and comfort of the womb.
