Astaxanthin is a member of the oxygenated xanthophylls, and its high level of antioxidant power likely comes from the ketonic and hydroxyl functional groups of the ionone ring structure. It is more polar than most carotenoids, and this is a likely reason for its ability to span the cell membrane layers, with the active groups close to the hydrophilic-hydrophobic interface. They are thus more readily available at the sites where most free radicals tend to be found and provide immediate protection to the cell membrane and also to the intracellular mitochondrial membrane.

Many antioxidants destroy free radicals by donating an electron, and become oxidized themselves. Astaxanthin, however, does not do this, but instead adds the free radicals to its long double bonded chain hence avoiding oxidation and rendering it much more powerful than normal antioxidants. It is unusual among antioxidants in that it is also able to cross the blood-brain barrier, and so reduces oxidative stress that can cause neurological disorders in general, and also problems with eyesight. It can also attach itself to lipoproteins to enable it to be carried throughout the bloodstream, being available anywhere that free radicals are generated. The carotenoid is also active against active oxygen species that are responsible for inflammation.

Another property is its ability to neutralize the oxygenated free radicals formed by the photo-oxidation properties of UVA and UVB radiation. Included in these are the previously mentioned highly reactive singlet oxygen and also triplet oxygen that astaxanthin is able to neutralize without becoming oxidized. In fact reactive oxygen species in general can cause oxidative stress, and they have been thought responsible for many forms of disease and health conditions, and the powerful effect of astaxanthin in targeting many of these has led it to be regarded as highly beneficial to the immune system and to health in general.

Another benefit is the ability of the substance to help prevent the oxidation of high density lipoproteins (HDL) that are responsible for carrying cholesterol in the blood back to the liver for destruction. Free radical oxidation of HDL impairs its ability to transport cholesterol, and so decreasing the level of such free radical oxidation will by definition increase the quantity of good HDL available, and hence reduce the concentration of cholesterol in the blood. Studies have proved this to be the case, and astaxanthin supplements are very beneficial to those suffering from high blood cholesterol levels, and helps protect them from heart disease and strokes.

The substance is naturally available from a wide range of marine sources, such as lobsters (where it was first discovered), shrimp, Salmon, trout and in a wide variety of red and green algae. The substance is also used as a red pigment. Carotenoids are essential, meaning that they are not produced in the human body and can only be obtained in our diets.

For that reason, the most convenient way to take it, apart from continually eating shrimp and lobster, is as a supplement. Astaxanthin is available either as a powerful antioxidant in its own right, or in combination with other substances with which it acts to provide a very strong deterrent to any free radicals that think they can freely roam your body.

It is the UV radiation from the sun that damages your skin and can ultimately lead to skin cancer. The UVA and UVB radiation are at different wavelengths and have different effects. The combination, however, causes wrinkles, skin disorders when aging, premature aging, and dry leathery skin. Part of this is believed to be due to the breakdown of the collagen in the skin that maintains its elasticity, free radical damage and inhibition of the immune system.

When UV radiation breaks down collagen it causes the accumulation of abnormal tissue. When this builds up, enzymes are produced that are intended to repair the collagen, but sometimes it does not work properly and produces a disorganized and random accumulation of collagen fibers that eventually result in wrinkles.

Free radicals are chemicals that have a free electron available, rather than having all electrons in pairs as in stable compounds. It is therefore unstable and will steal an electron from healthy tissue and so damage the cell that it takes it from. Eventually, the cells die and genetic material within the cells can be altered. This can cause wrinkling of the skin and underlying tissues or even cancer by changing the DNA and RNA contained within the cell.

The final defense of the body against cell damage is paradoxically apoptosis, which is suicide by the damaged cells to prevent them becoming cancerous. This is what you see when your skin peels after sunburn – it is deliberate action on behalf of the cells of your skin sacrificing themselves to save the body as a whole. UV exposure can prevent this from occurring which is why it can lead to some forms of skin cancer.

However, it is the action of oxidants on the skin that cause most damage. The so-called drying out of skin is largely due to oxidant damage more so than to loss of moisture. The sweat glands in your skin can produce lots of moisture, but nothing can be done about free radicals other than provide the help of antioxidants to kill them off. Antioxidants destroy free radicals with glee, and hunt them down wherever they are. The common antioxidants in your body are vitamins A, C and especially the powerful vitamin E. That is why so many skin creams contain vitamin E, and sometimes also vitamin A.

However, there are many more antioxidants than these. Astaxanthin is one. ‘Asta what?’ I can hear you say, and I am not surprised. It is not very common in health stores, but has been approved by the FDA and in Europe as a food colorant. It is a terpene carotenoid, though does not break down to vitamin A in the human metabolism as other carotenes do. It is claimed to be fifty times more powerful as an antioxidant than vitamin E and acts as an internal sunscreen in the skin by blocking the harmful effects of UV radiation at cellular level.

It is available naturally in krill, Salmon, trout, crustaceans and some bird feathers, and is extracted from microalgae. Not all sources are palatable and it is best taken as a supplement, or to protect the skin, in a cream. Another super-antioxidant is pycnogenol. However, be aware of purchasing it under this trade name in the USA, since the term has been hijacked by others who are selling a different product under that name. The true chemical pycnogenol as named by Frenchman Dr. Masquelier is a very strong antioxidant: any others are mere imitations that are not the same product.

Chemically, pycnogenol is a proanthocyanidin, a flavanol extractable from grape seed or pine bark. Any product that comes from a different source cannot be pycnogenol. That said, the product is able to strengthen the skin and prevent wrinkles through its effect in scavenging free radicals. It stops the free radicals from destroying the cells of the skin and causing premature aging. Whether the chemical is extracted from pine bark or grape seed appears to make no difference. The chemicals are virtually identical, or should be if they are from the right form of pine bark.

The polyphenols in green tea also eradicate free radicals. They too are very strong antioxidants, just one of the remarkable properties of this plant. However, none of these will be of much help unless specifically applied to the skin. If taken internally, they will do a great job of mopping up free radicals in the blood, but very little will actually reach the skin.

In order to build healthier skin, you will have to use antioxidant rich skin moisturizing lotions that apply moisture to your skin, but more importantly also apply these powerful antioxidants. If you really want to maintain good looking wrinkle-free supple skin in sunny climates, then look for one or more of the above substances as an ingredient in your moisturizing lotion.

Obtainable in your diet from oily fish such as mackerel, herring, Salmon and the like, omega-3 fatty acids play an important part in your normal growth and development, and are also crucial to normal brain function. They can reduce inflammation and protect you from heart disease and some cancers. Studies have shown the fatty acids to be particularly concentrated in the brain and to be important for cognitive processes and memory.

Omega 3 oils are also natural inflammatories, and help prevent conditions involving inflammation such as arthritis, asthma and menstrual cramps. They appear to help the immune system to fight these conditions and reduce the inflammation and its causes.

They are also important in the formation of prostaglandins that are responsible for the regulation of important functions such as blood pressure, blood clotting and immune response. They are hormone-like substances and also control the synthesis in the body of other hormones. If the balance of fatty acids in the diet is not right, then the subsequent imbalance in prostaglandin and hormone production can lead to disease.

It is in its effect on depression and mood, however, that has surprised many in the medical, profession. Ethyl-eicosapentaenoate, known as ethyl EPA, is a constituent of omega-3 fish oil and many studies have demonstrated that this substance helps cases of depression and related disorders. However, are people justified in turning to ethyl EPA to help them be cured of this condition?

In one study involving 20 people, six out of ten people given the supplement displayed significantly reduced symptoms of depression after four weeks. The effects were noticed as early as two weeks and many of the depression symptoms, such as worthlessness and insomnia, had improved after three weeks. This conformed with the results of many other studies that have been carried out world wide. In Scotland, a number of patients were studied who had failed to respond to traditional antidepressant drugs. Of the seventy patients involved in the trial, all of the patients who were treated with EPA displayed significant improvements in all the symptoms of their depression after four weeks whereas those with the placebo showed no improvement.

Of the two main components of omega-3 fish oil, EPA and docosahexaenoic acid (DHA), only the EPA has this property, and the EPA works best alone when the DHA has been extracted. Studies and tests have indicated that the DHA appears to be important for the brain’s structure, but the EPA for its function, hence the reason for the ineffectiveness of the former in relieving depression which is a function of the brain rather connected to its structure. In fact, depressed people have been found to be deficient in EPA in comparison to those not suffering from the condition. The original idea for this originated with the late Dr. Horribin who was pioneer in researching the effects of lipids on the biochemistry of the brain as far back as the 1970s. Since then the world-wide research has confirmed his theory. However, the reason why this theory works in practice is not yet understood. It has been established that a diet rich in trans fats can unfavorably affect the hormones in the brain that stabilize mood, possibly due to the fats slowing down the system of messaging within the brain. This kind of effect can cause depression.

This is likely due to the slowing down of the messages passing between the synapses. Brain cells communicate by means of chemicals that cross the synapses, or small gaps between the individual cells. They are not directly connected like normal electrical circuits. It has been theorized that the EPA speeds up the passage of these messages between neurotransmitters and neuroreceptors. Other theories have also been promoted, such as that the EPA has properties of its own that cure depression by another route altogether.

A possible clue could be in the findings of one study on a man aged 21 years old whose brain was scanned before and after EPA treatment. The result showed in increase in the mass of brain cells after the treatment. This was contrary to the belief that brain cells could neither be generated nor grown once a person reaches maturity.

An individual suffering depression who would like to treat themselves with EPA would have to buy a lot of oily fish since high doses are needed for this level of therapy. However, it is found in high concentrations in a few supplements available on the market, and when choosing you must use the highest grade of EPA you can get, with as low a DHA content as you can find.

There is little doubt now; however, that the EPA content of omega-3 relieves depression in some individuals, although more work is needed to prove without doubt that it is effective with all forms of depression.

The omnivore vs vegan argument as to who is right and who is wrong can be argued from a number of different platforms. There is the ethical issue of whether we should eat other animal life, and also the argument as which is ‘better for you’, based on arguments such as vitamin B12 is not available from a vegan diet. There is even the ‘lifestyle’ argument: does our lifestyle define our diet?

However, strictly, the only argument for or against either diet should only be made upon human biochemistry. Do both meet the needs of our biochemistry, or does one or the other lack something essential in our biochemical pathways? Obviously omnivores will lack nothing except by choice, since all foods are available for their consumption. If vegans do lack a specific chemical need, then is that available as a supplement in a form that can be effectively used in the chemistry of our bodies.

The one argument accepted by both sides is that it is essential for all animals to consume living things in order to stay alive themselves. These living thinks need not be alive at the time of consumption, but it is necessary that they eat the flesh of plant or animal life that at one time was alive and contained DNA. What that infers is that it is only vegetables that can survive on non-living tissue and this appears to be borne out in practice. No living animal known can live on inorganic matter only, but most plants can and do. Not all though, the Venus fly trap being an example.

It is easy to extend the moral problem of eating living tissue to living vegetable tissue that also contains DNA, and the argument must lie between animal and the derivatives of animals, and non-animal tissue. It has not yet been found that any organism has yet crossed the animal-vegetable divide, so the division is a valid one. That might seem obvious, but it is necessary to establish that for the argument between vegan and omnivore diets to be valid.

The consumption of protein derived from meat is not a prerequisite for size and muscle bulk, since the largest dinosaurs in the world were all herbivores, the largest being a member of the sauropod family at more than 175 tons, eclipsing the largest meat eater, the gigantosaurus at 8 tons. Thus, meat does not mean bulk. However, what has been proved is that the fastest creatures are carnivores. Hence if you want to be a top class sprinter, eat meat!

Carnivores, with their lean muscle mass and highly efficient quick use of available energy, have very short digestive tracts which are not good for digesting vegetable matter, but make best use of animal proteins and expel unnecessary mass from the body quicker. The argument in favor of the vegans is that the human digestive tract is not that of a carnivore.

In herbivores, the food takes longer to digest, and hence it remains in the digestive system longer. This means a longer alimentary canal, longer than humans have. Herbivores also move slowly, and a good example is the comparison of speed between the omnivorous chimpanzees and other small monkeys and the herbivorous gorillas and orangutans. On the one hand you have lean fast moving machines, while on the other you have large bellies and slow moving larger animals. Check out cows and sheep and compare their body fat with ours. Nor are we like herbivores.

So what are humans? Omnivores! Our teeth and intestines are those of omnivores, the teeth designed for ripping and tearing meat, and stripping leaves from trees, but also for grinding grains, and our intestines are something between the long and the short. People are able to eat and live on every type of food imaginable from brains to intestines to leaves to roots to ants and grubs.

The argument is therefore futile to consider historically. Let’s then study the advantages and disadvantages of each type of diet. Human beings are capable of life through consuming either animals or plants, or both. The argument seems, therefore, to be one of morality rather than biochemistry. However, is that really so? The vegan refusal to eat dairy products should not be taken as extremism, since the human being is the only animal species to drink milk of another species, or to use it to make other products. It is a practice born long after cattle were husbanded by humans for food. The problem with eating animal products lies not in the meat itself, but in the fat. Animal fat is saturated, which means that the fat molecule has no active double bonds in the chemical structure that can be used to break the fat down.

Animal fat also contains cholesterol, yet we cannot survive without cholesterol. It is the human band aid, used by the body to patch up damage to the cardiovascular system. Only, sometimes, too much is laid down and the arteries get blocked. However, many vegetable products have more saturated fats and cholesterol than many animal products, so a balance is called for. The unsaturated fats and oils for humans are said to be derived from seeds, such as flax seed and fish, especially oily fish. These are the Omega-3 oils. Although they can be obtained from some seeds and nuts, it has been proved that the best come from oily fish, such as wild Salmon, mackerel and sardines.

The B vitamins are essential for life. The best sources are animal sources, though you get them from some vegetable sources such as brewers years (who eats lost of that?) and others, but animal sources are the best.

Also, there is no evidence to suggest that vegans live longer than omnivores. In fact all of the evidence indicates that a middle road is the best. For human beings the healthiest diet includes both meat and vegetable tissue. The best solution to good health is neither vegan nor carnivore. Nor is it traditional vegetarian, since it is the dairy products that cause many of our dietary products.

Studies of the biochemical pathways have demonstrated that all chemicals need to sustain healthy human growth and life are not available from a classic vegan diet. Some animal protein and B vitamins are essential that cannot be obtained form a normal vegan diet. It is possible, however, to maintain life by means of supplements.

However, for the healthiest form of human life, our biochemistry, history and physiology indicate that there is a balance somewhere between the extremes of both views that is right for us, and that either diet can be sustained with appropriate supplementation based upon what is missing from one diet or the other.

So, omnivore vs vegan. Who is right: both are right if they also supplement any nutritional deficiencies in their diet with vitamins and minerals that may be lacking from one diet or the other.

The Food and Drug Administration a greed with the recall and supported the decision.

Thankfully, there is a safe solution to the dangers of high cholesterol levels. However, all foods from animal sources such as meats, poultry, fish, eggs, and dairy products contain cholesterol.

 

Q. How does cholesterol cause heart disease?

A. Although cholesterol serves many important functions in the body, too much cholesterol in the bloodstream can be dangerous. When blood cholesterol reaches high levels, it builds up on artery walls, increasing the risk of blood clots, heart attack, and stroke.

The heart is a muscle, and like all muscles, needs a constant supply of oxygen and nutrients. The bloodstream transports these nutrients to the heart through the coronary arteries. If the coronary arteries became narrowed or clogged by cholesterol and fat deposits (artherosclerosis) and cannot supply enough blood to the heart, the result is coronary heart disease (CHD). IF not enough oxygen-carrying blood reaches the heart muscle, a sharp, sudden chest pain (angina) may occur. If the blood supply to a portion of the heart is completely cut off by total blockage of a coronary artery, the result is a heart attack. This is most often caused from a blood clot forming on top of an already narrowed artery.

 

Q. What is LDL and HDL cholesterol?

A. Cholesterol and other fats can’t dissolve in the blood and, therefore, can’t travel on their own. They have to be transported to and from the cells by special carriers called lipoproteins. The two major lipoproteins are low density lipoproteins (LDL) and high density lipoproteins (HDL). LDL is most often referred to as the “bad” cholesterol whereas HDL is known as the “good” cholesterol.

LDLs carry cholesterol throughout the body to the cells. LDLs cause artherosclerosis by clogging up our arteries with the continual buildup of fat. HDL, on the other hand, prevents this fat buildup within arterial walls, by carrying it away from the arteries, to the liver where it is eventually processed and eliminated.

 

Q. What are triglycerides?

A. Triglycerides are fats used as fuel by the body and as an energy source for metabolism. Triglyceride levels fluctuate easily, changing after every meal. Increased levels are almost always a sign of too much carbohydrate and sugar intake. Triglycerides in high amounts make the blood more sluggish and less capable of transporting oxygen, particularly through the small blood vessels. High triglycerides, along with high LDL “bad” cholesterol, are considered strong and independent risk factors for cardiovascular disease, leading to a heart attack or stroke.

There are several medications physicians can prescribe for people with elevated triglyceride levels. Some of the most effective (as well as the most harmful) are the statins. The powerful, all-natural combination of pantethine and plant sterols can safely and, just as effectively, lower both triglycerides and LDL “bad” cholesterol and increase HDL “good” cholesterol.

 

Q. What is pantethine and how does it lower cholesterol?

A. Pantethine, a form of pantothenic acid (also known as vitamin B5) is found in foods such as liver, Salmon, and yeast. Pantethine lowers cholesterol by blocking its production.

Cholesterol synthesis, or the production of cholesterol in the human body, is an incredibly complex process. It involves many biochemical reactions and enzymes activity requiring several steps.

Studies have shown that pantethine inhibits several of these enzymes and coenzymes. It blocks the activity of one coenzyme involved in cholesterol synthesis, HMG-CoA, by about 50%. This results in significantly lower cholesterol production. But, that’s not all. To compensate for the lowered cholesterol production, the liver pulls LDL out of the bloodstream. The end results? Studies have shown that on average, pantethine can lower total cholesterol levels by 16%, LDL cholesterol levels by 14%, serum triglycerides by 38%, and can raise HDL cholesterol by 10%.

 

Q. What are plant sterols and how do they lower cholesterol levels?

A. Plant sterols are the fats of plants. They are found in nuts, vegetable oils, corn, and rice. Plant sterols are structurally similar to cholesterol and are able to act as a stand-in for cholesterol and block its absorption.

The liver receives about 800 mg of cholesterol every day from intestinal absorption. Cholesterol is absorbed from the intestines through receptor sites – special channels that are shaped exactly like cholesterol molecules. The cholesterol enters these channels and is then absorbed into the bloodstream. Because plant sterols look like cholesterol, they fit perfectly into these channels. The cholesterol, being blocked from absorption, remains in our intestines where it is eventually excreted.

If we eat enough plant sterols, the amount of cholesterol transported from the intestinal tract to the liver is greatly reduced. And, just like pantethine’s effect on the liver, this cholesterol reduction causes the liver to pull LDL cholesterol out of the blood, reducing both total and LDL cholesterol levels.

 

Q. Can’t we get the benefit of plant sterols and pantethine just by eating those foods that contain them?

A. These amounts of plant sterol and pantethine found in food just aren’t enough to have much of an effect on our health. In order to lower cholesterol levels, we need to take a concentrated combination of pantethine and plant sterols in just the right ratio.

Plant sterols are bound in fibers in the plants. Even if we ate lots of raw fruits and vegetables, we wouldn’t be getting many of these beneficial plant fats. There are also several forms of plant sterols. Some ratios of these plant sterols are more beneficial than others. On the average, we eat 160 to 360 mg of plant sterols a day.

While pantethine is found in several food sources, it is difficult to get beneficial amounts from our food. There are about 12 mg of pantethine in 3 ounces of brewer’s yeast and 8 mg in an average serving of liver.

 

Q. How much pantethine and plant sterol combination should I take?

A. Many studies have examined the effects of pantethine and plant sterols on cholesterol levels resulting in the determination of the most effective amounts to take of these heart healthy nutrients.

Manufacturers of high quality nutritional supplements offer pantethine combined with plant sterols in the most beneficial ratio as determined by the research. The best results are obtained by taking a combination of 400 mg of plant sterols and 200 mg of pantethine three times a day.

 

Q. Should only people with actual heart disease or those with high cholesterol levels be concerned about cholesterol?

A. No, recent studies have shown that cholesterol lowering in people without heart disease greatly reduces their risk for ever developing CHD, including heart attacks and artherosclerosis. This is true for those with high cholesterol levels and for those with average cholesterol levels.

Most physicians would never consider prescribing statin drugs to people without actual heart disease or high cholesterol levels because of the many health risks of the drugs. But the combination of pantethine and plant sterols can naturally and very effectively help those people with heart disease, high cholesterol levels, high triglyceride levels (or all three!) as well as those of us just wanting added “health insurance” for our hearts.

 

Q. Are pantethine and plant sterols safe?

A. Yes, both pantethine and plant sterols are very safe. Some people may experience some mild stomach upset when they first take pantethine. Taking the combination of pantethine and plant sterols with meals generally solves this problem.

More and more Americans are lucky enough to die of old age. Carotenoids are a class of lipid-soluble natural pigments found in plants, as well as in phytoplankton and certain fungi and bacteria. The red, orange and yellow colors seen in fruits and vegetables are from carotenoids. When various aquatic animals such as Salmon and shrimp eat plants containing some of the over 700 compounds that make up the carotenoid class, those animals are also decorated with the same brilliant colors. However, carotenoids do more than provide color - they’re powerful phytonutrient antioxidants. Beta carotene, lutein, and lycopene are some of the more well-known carotenoids, but the most powerful found to date is astaxanthin.

Astaxanthin is a fat-soluble carotenoid with a unique molecular structure that makes it an extremely effective antioxidant. The PDR® Medical Dictionary 2nd Edition defines an antioxidant as, “An agent that inhibits oxidation; any of numerous chemical substances, including certain natural body products and nutrients, that can neutralize the oxidant effect of free radicals and other substances.” Not only is astaxanthin a potent free radical scavenger, but it also can protect against oxidation, which limits the number of free radicals produced. Additionally, it’s very effective at quenching a molecule called singlet oxygen, a harmful reactive oxygen species formed through normal biological processes. Singlet oxygen possesses a high amount of excess energy that must be released to keep it from damaging other cells. Astaxanthin absorbs this energy and dissipates it as heat, and in the process returns the singlet oxygen to a grounded state.

A growing body of research is showing that astaxanthin is the creme de la creme of phytonutrient antioxidants. Studies comparing astaxanthin to other carotenoids have shown it to possess antioxidant activity up to 10 times stronger than that of beta carotene, canthaxanthin, lutein and zeaxanthin.4 A study published in 1990 conducted by Kurashige and associates compared the effectiveness of vitamin E and astaxanthin for the prevention of lipid peroxidation. The results showed that astaxanthin is 100-500 times more effective in preventing lipid peroxidation in vivo than vitamin E.5

Astaxanthin in algae provides protection against the effects of ultraviolet (UV) light exposure, and studies are showing that this protective effect is also imparted with dietary astaxanthin. Scientists believe that astaxanthin effectively scavenges the oxygen radicals produced through photo-oxidation caused by UV exposure. A 1995 study by Savoure and associates studied the protective effects of astaxanthin, beta carotene and retinol against UVinduced photo-oxidative stress. The results showed that astaxanthin is extremely effective in preventing increases of certain polyamines created through photo-oxidation, which damages skin. A particular polyamine was found to increase only 1.5-fold in subjects fed astaxanthin, whereas subjects in the control group experienced a significant 4.1- fold increase. It was concluded that astaxanthin works through a particular enzyme, increasing this enzyme’s consumption of polyamines in response to irradiation.

Research has shown that astaxanthin also offers cardioprotective effects through its ability to decrease oxidation of HDL (“good” cholesterol), which is a cholesterol transporter in the blood. It‘s well established that high levels of HDL and low levels of LDL (“bad” cholesterol) are desirable for healthy cardiovascular function, so protecting HDL from oxidation means there’s more circulating in the bloodstream. In a 1992 study by Murillo, subjects were fed dietary astaxanthin for 30 days. HDL cholesterol increased 57mg/dL, compared to the control diet (42.4 mg/dL). LDL cholesterol decreased from 12.5 mg/dL to 9.6 mg/dL. Clearly, astaxanthin exhibited an influence on the ratio of these two lipoproteins.

We can thank the lobster for the discovery of astaxanthin. Researchers working with an extract of the lobster Homarus astacus first characterized astaxanthin in 1938. It was soon discovered that astaxanthin is abundant in nature, although mostly in very low concentrations. The greatest source found is in green algae called Haematococcus pluvialis, which also contains other carotenoids such as beta carotene and lutein. I know that fish oil is good for my heart, but I was told I should also consume fish to protect my bones. Is there any truth to that?

Many people are familiar with the literature that omega-3 fatty acids may reduce the risk of heart disease, diabetes and some cancers. Animal studies, and now recent human studies, suggest a role in bone health as well, particularly in relation to omega-6 fatty acids. A long-term study in California tracked the ratio of dietary omega-6 fats to omega-3s in relation to bone-mineral density in middle- and older-age individuals. They tested BMD by dual-energy X-ray absorptiometry—the gold standard for assessing bone loss—and found that the higher the ratio of linoleic acid (omega-6) to alpha-linolenic acid(omega-3), the lower the BMD. These results were independent of age, body mass index and various lifestyle factors.

The ratios creating problems were in the range of 7 to 1 and 8 to 1 of omega-6s to omega-3s. Foods high in omega-6 (or with a high omega-6 and omega-3 ratio) are corn, safflower, sunflower, soybean, and cottonseed oils. One of the best sources of omega-3 is fatty, cold-water fish such as Salmon. The best vegetarian source is flax oil. In addition, walnuts, pumpkin seeds, canola oil (I recommend cold-pressed and unrefined), and some dark, leafy green vegetables such as kale, spinach, purslane, mustard greens and collards do have some omega-3s.
