Research proves the healing potential of monk fruit on cancerpatients

Monk fruit, which is already widely used as both an ingredient for traditional Chinese medicine and as a substitute for sugar, may also have beneficial properties for fighting cancer. Researchers from the Beijing University of Agriculture conducted studies of a monk fruit compound called mogroside V, and found that it can prevent the growth of pancreatic cancer cells, or even trigger them to die. Mogroside V is also a powerful antioxidant. Monk fruit may also provide health benefits by reducing how much processed sugar people eat.
"Mogroside V was used to treat several models of pancreatic cancer. It was shown to trigger death in cancer cells and prevent them from developing or spreading any further. Chinese researchers theorized that the plant-based compound disrupted the STAT3 signaling pathway that cancer cells used for communication."

Research pilot explores industrial hemp

Although the Washington state legislature has allowed hemp to once again be grown in the state, there are still some questions and uncertainties about growing the product. For now, those growing hemp are doing it for research purposes to monitor what the future growers will need it to do in order to create an industrial hemp harvest. Despite the four different types of licenses being granted, there is still some caution because of the plants close relationship it to marijuana. Hopefully some restrictions will change and beneficial aspects of the hemp can be produced, such as CBD oil.

Growing industrial hemp to harvest for food, fiber and other uses is becoming more common especially in Canada. Now Minnesota wants to begin allowing the cultivation of Hemp. Thanks to legislations, Hemp crops have doubled in Minnesota in the last few years and are continuing to grow. The Ag and Renewable Energy Committee of the Kandiyohi County as well as the City of Willmar Economic Development Commission have been working hard to increase production to help farmers while assuring the public that there is no danger from getting high off this particular type of crop.
"According to the Minnesota Department of Agriculture, there is a 101-acre field of hemp being grown in Chippewa County."

Houses passes bill allowing individuals to grow hemp

Under a new bill in West Virginia, licensed individuals may be able to begin growing hemp. This bill would expand the list of growers by accepting those who have passed the application process. Currently only the Department of Agriculture and colleges/universities are allowed to grow. There is a misconception that hemp and marijuana are the same things. Hemp is a different type of cannabis with a lower THC level. Hemp is much more of an industrial product than it is a drug and, therefore, has been misclassified. This would offer an expansion for industry in West Virginia.

There is concern over a rumor that the DEA seeks to create a brand new schedule I class of drugs just for marijuana extracts, known as CBD. They must go through a scheduling action to get approval, but many are outraged over the possibility of losing access to any medicinal product made from Cannabis. This can include non-psychoactive drugs. Some are trying to soothe the panic by stating that it doesn’t include hemp products. As long as it is not a drug, it is not restricted. We will have to wait and see how this plays out.

The horseradish plant is a perennial plant that is part of the Brassicaceae family, which includes mustard, wasabi, broccoli, and cabbages. Native to southeastern Europe and western Asia, the plant is popular around the world today. The horseradish plant grows up to five feet tall and is mainly cultivated for its large, white, tapered root. The intact horseradish root has hardly any aroma. However, when cut or grated, enzymes from the damaged plant cells break down to produce allylisothiocyanate, which often irritates the sinuses and eyes. Once grated, if the plant is not mixed with vinegar or used immediately, the root darkens and loses its pungency. It quickly becomes unpleasantly bitter when exposed to air and heat.
Horseradish has been cultivated since ancient times. The Delphic Oracle in Greek mythology told Apollo that horse radish was worth its weight in gold. Horseradish was known in Egypt by 1500 BC and has been used by Jews from Eastern Europe traditionally in Passover. The plant is discussed by Cato in his treatises on agriculture. It is thought that horseradish is the plant known as Wild Radish by the Greeks. Both the root and leaves of the horseradish plant were used as a medicine during the Middle Ages, with the root used as a condiment on meats in Germany, Scandinavia, and Britain. This herb was taken to North American during Colonial times. It is not certain as to where the name horseradish come from. Some believe that it derives by misinterpretation of the German Merettich as mare radish. Others think the name comes from the coarseness of the root. The common thought in Europe is that it refers to the old method of processing the root called hoofing, in which horses were used to stamp the root tender before grating it.
For at least two thousand years, horseradish has been cultivated. It was brought to America by early settlers and used to treat conditions such as pain from sciatic, colic, and intestinal worms. Horseradish provides antibiotic action that is recommended for respiratory and urinary infections. The volatile oil in horseradish has the ability to work as a nasal and bronchial dilator. Internally, it has been used to clear nasal passages, alleviate sinus problems, help with digestion, work as a diuretic, aid with edema and rheumatism, and cleanse various body systems. Also, horseradish has been used to stimulate digestion, metabolism, and kidney function. This herb helps promote stomach secretions to aid in digestion. Hoodia Gordonii is a South African succulent plant of the family Apocynaceae. They are remarkable similar in appearance to cacti, although they are totally unrelated to them and grow predominantly in the region of Central Namibia in the south west of Africa, up to the southern regions of Angola. They are most commonly found in rocky ground and on the plains.
There are several species of hoodia, some of them grown domestically, and it is Hoodia gordonii that is used as an appetite suppressant in hoodia weight loss pills. Although the plant has historically found use in the treatment of infections and gastric problems, most interest is displayed in its use by the bushmen of the Kalahari Desert to suppress their appetite during long hunting trips when food and water are scarce.
The active ingredient was isolated in 1977, and given the name P57: the product is therefore often referred to as Hoodia P57. It was patented by its discoverers, the CSIR (South African Council for Scientific and Industrial Research) and a license granted to UK company Phytopram, who worked together with Pfizer to isolate the active ingredients and manufacture them synthetically. This was found to be very difficult, if not impossible, since any synthetic form of the extract failed to display any hunger-suppressant properties.
Finally, the rights to the main ingredient were released by Pfizer in 2002, thus indicating that it was of no commercial benefit to them. The main problem they admitted with synthesizing P57 was not only the difficulty in doing so, but also that there were side effects of the extract on the liver caused by other components that could not be removed. No synthetic form of hoodia is therefore available, and only the natural plant is used in current Hoodia 57 preparations.
The rights of the San Bushmen to the plant were recognized by the CSIR in 2002, and not only do they receive a proportion of the profits of marketing hoodia, but also the plant is protected with wild-harvesting licenses provided to only certain individuals and companies. Due to the rising popularity of the hoodia weight loss industry, the plant has been named as an endangered species in the wild.
It is believed that the active ingredients are steroidal saponins that can fool the body into believing it is full. This theory is based upon the effect on appetite of glucose concentrations in the blood. Your appetite is controlled by the amount of unconverted glucose in your blood, and glycogen in the liver. When you eat carbohydrates, they are digested and converted into glucose which is absorbed into the bloodstream.
Under normal conditions your blood glucose levels increase to a level where a signal from hypothalamus stops you feeling hungry. Insulin is then secreted from the pancreas to prepare your cells to use that glucose in the mitochondria to create energy by means of the Kreb's Cycle, or Citric Acid Cycle as it is also known. This reduces the concentration of glucose in the blood, and once it reaches a certain level the body begins to use its emergency energy supply, glycogen, that is stored in the liver.
A signal then informs the brain that more glucose is needed. You then feel hungry again, and this cycle is repeated several times a day in a normally healthy person. This cycle is controlled by certain hormones in the brain, specifically in the ventromedial center of the hypothalamus, where it is believed that the ATP (adenosine triphosphate) availability controls the release of the hormones involved.
ATP is the molecule of energy, and as the concentration of blood glucose and of glycogen drop, then the amount of ATP produced also drops and this is detected in the hypothalamus, which reacts by releasing ghrelin. Increased leptin increases the feeling of satiety and ghrelin increases the feeling of hunger. Serotonin acts on the brain to increase the effect of leptin in the hypothalamus, and therefore make us feel less hungry, or more satiated.
It is believed that hoodia gordonii, or the Hoodia P57 component of it, fools the brain into believing that your blood glucose or glycogen levels have reached the point at which it should trigger a satiated response, so that you stop eating even though your ATP levels might be low. The steroidal saponins that it contains is believed to be ten thousand times more effective than glucose in stimulated the secretion of serotonin.
Hoodia has also been found to contain a number of glycosides, including pregnane glycosides that some studies have indicated to help control appetite of the subjects tested. Most of these tests have been carried out on animals, although Hoodia weight loss preparations are offered in a form standardized on both steroidal saponins and pregnane glycosides.
Hoodia gordonii is becoming so popular as a weight loss product that its export is being monitored by the South African government. It has become so endangered that, since 2005, only hoodia grown on commercial farms is permitted an export license, and exporters must obtain a license from the Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES). Importers also require a permit from the US department of Agriculture, and a CITES certificate is also needed to re-export the finished product.
Because of this, more hoodia weight loss pills are being sold than there is hoodia gordonii to produce them. It is not uncommon for cacti such as the prickly pear cactus from Mexico, to be used, or for low concentrations of hoodia to be bulked up with fillers. Neither of these is of any use as an appetite suppressant, the former having no active ingredients whatsoever and the latter containing only traces.
If you are purchasing hoodia, therefore, be aware of this. Request sight of the CITES certificate and USDA permit, and also the analysis results by an authorized laboratory to confirm that the product is what it purports to be. Otherwise, there is some evidence that Hoodia gordonii can help you reduce weight, although to date there are only four recognized analytical laboratories registered to analyze the active content of hoodia weight loss products.
Finally, check for the analysis certificates. All Hoodia weight loss products should be analyzed by each of three methods: Microscopy, High Performance Thin Layer Chromatography (HPTLC) and High Performance Liquid Chromatography (HPLC) - all there are needed. The four authorized laboratories are: the University of Mississippi, Chromadex labs in Irvine California, Alkemist Pharmaceuticals and Advanced Laboratories, Smithfield, NC.
No others will do, so if your Hoodia weight loss preparation has not been analyzed using the three methods by one of these laboratories, don't buy it, even if it can show the CITES and USDA documentation.

Colloidal trace minerals are just as important to our health and well being as vitamins. Practically since birth we have had it pounded into us that we must eat our vitamins if we are to be healthy. The fact is that vitamins are of little use to you without minerals which are as essential for your metabolism as any vitamin is.
The essential minerals are the inorganic equivalents of the essential organic vitamins. They work together to maintain the biochemistry that keeps you alive. Take calcium, for example. That is a mineral needed for healthy teeth and bones, among many other things, but it is no good without vitamin D. Magnesium and potassium are also needed for healthy bones. Take blood clotting: vitamin K is the blood clotting vitamin, but blood will not clot without calcium.
How is energy generated in your body from the carbohydrates and sugars that you eat? They are converted to glucose that is converted to energy in every cell in your body and used in-situ. Your heart gets the energy to beat from cells in the heart – energy does not float around the blood waiting to be used. It is generated by means of the production of a substance known as ATP – adenosine triphosphate of which phosphorus is an essential component. Without the mineral phosphate none of us would be alive – nor would any form of life for that matter. ATP is the universal molecule of life.
So far we have discussed some of the seven major minerals: calcium, magnesium, potassium, phosphorus, sulfur, sodium and chlorine. There are many more that your body needs, and estimates vary from 45 to 70 trace minerals, without which you would find it difficult to function properly. Although your body can make many of the organic substances needed for life from vitamins, amino acids, fatty acids and proteins, it cannot make minerals which have to be taken in as part of your diet. They must be taken in your regular diet or as a supplement.
In the USA a major mineral is one that is needed in amounts greater than 100 mg (0.1g) a day, and trace minerals are required at less than 100 mg a day. So one that is needed at 100.1 is major, and one at 99.9 mg is trace. Is there a difference in the source of trace minerals, or would any source be good enough? The answer lies in the construction of the human body, and the way in which it absorbs minerals.
Your body is not designed to absorb metallic minerals. The way that such minerals are available in your diet is as part of larger organic molecules, and this is the way they must be taken as a supplement. Thus, you can’t just drink a soluble metal salt because it will pass straight through you with only around 5% absorption, if it doesn’t poison you first. For supplement purpose, metallic minerals are chelated, or combined with larger organic molecules such as proteins and amino acids, and this increases absorption to as high as 50%.
The necessity of trace minerals in the human diet was not discovered, as much as the result of a number of studies on various societies and remedies that appeared to have no basis for their effects. The Hunzas and Azerbaijanis, for example, are known to live very long lives, and investigations into this showed their diet was very rich in colloidal trace minerals from glacial water and food grown in soil enriched by that water.
It was through studies such as this and also investigation into the metabolites obtained from liver extracts that indicated the importance of many trace minerals. Take arsenic, for example. A known poison in larger quantities, trace quantities have been found to be metabolized by the liver, and while no studies have been carried out on the use of arsenic as a trace element in human biochemistry, studies on rats and human liver extracts have indicated that it could have a part to play in normal growth and reproduction.
Trace minerals take part in many enzyme reactions, and physicians now agree that many health conditions could be enzymic in origin. It follows, then, that trace elements are important in maintaining good health. It is certainly true that we cannot live without any of the seven major minerals. And it is just as certain that many of the trace minerals are just as import to human biochemistry as the major ones. It is certainly true of vegetables, which are less complex biological entities than humans, and if tomatoes need at least eight known minerals for good growth then it is certain that we will need a lot more. No studies are needed to convince us of that.
Take zinc, for example. Zinc is essential for proper liver function, wound healing and reproduction: spermatogenesis, the proper development of the primary and secondary male sex organs, and all area of the female reproduction process. Zinc is classed as a trace element, as is selenium, a deficiency of which can lead to heart disease, mental retardation and impaired function of the thyroid. Selenium deficiency is not common in the West but is in China where many areas are depleted of selenium. However, if zinc and selenium are known to be essential, how many of the other seventy or so trace minerals are also essential to human health?
The trace minerals in general are believed to protect us from some degenerative conditions, the effects of environmental pollution and help to protect us from the effects of an excessive intake of toxic minerals. Although there have been insufficient studies carried out on most trace minerals, it is known that they should be taken in chelated form, metallic in nature or not.
It is also known that such minerals should be taken as a balanced mixture as found in nature. A bullet approach, using an individual mineral to treat a certain condition, could lead to an imbalance in the body, and severe side effects, some of which might not yet be known. What is known is that certain minerals are tolerated by each other in specific relative concentrations, but if this balance is upset then they can inter-react and produce unpleasant side effects on, for example, the delicate balance of minerals in the blood.
It is becoming increasingly clear that modern farming methods have resulted in mineral depletion of the soil, and that our normal diet now only contains a small number of the minerals that our forefathers were taking. Plants draw up minerals from the soil when they grow, and we take in these when we consume them or the animals that live on them. Saturation of the soil year in year out by chemical fertilizers low in or devoid of trace minerals has resulted in a sterile environment for our feedstock, and has made colloidal trace mineral supplements almost mandatory for good health.
Today’s plants can contain fewer than 20 minerals, compared to the 70 plus of our ancestors. Life expectancy is increasing in spite of our increasingly poor diet rather than because of it, and is due more to medical advances than to advances in agriculture. A mineral supplement does seem necessary, but when you take one it should be balanced so that no one mineral is in excess at the expense of another.
This helps to reduce the possibility of overdosing on an individual substance while maintaining a natural balance of minerals in your body to make sure that your normal biochemistry is not interrupted by some deficiency or excess that has yet to be discovered. While this might seem a spurious argument, you can be certain that those in the past that used cadmium and lead as cosmetics would rather have known the effects of these toxic substances that eventually killed them.
So use chelated trace mineral by all means, but make sure that they are balanced and tested so that nothing is present that can upset the normal balance of minerals in your body. If they work for tomatoes they should work for you!

That is why it is essential to supplement this framework with the vitamins and minerals needed to maintain a good bone density at those periods in your life when bone density is liable to deteriorate.
This begins to happen between the ages of 30 and 35 and in women and accelerates during the menopause, when your ovaries stop producing the hormone estrogen that is necessary for the maintenance of healthy bones. Through time, your bone mass drops creating first a condition known as osteopenia, or reduced bone mass, and then osteoporosis, when your bones become brittle, porous and very prone to fractures.

Calcium is the most common mineral in the body, and the vast majority is in the bones and teeth. Phosphorus is also essential for healthy bones because as stated earlier, the bone consists of collagen that is hardened by calcium phosphate. The two main uses of phosphorus are in bone structure and animal metabolism, since phosphates are also essential for the vast majority of the energy-production chemical reactions within your body.
Calcium has other functions within the body other than bone, however, including exchange of fluids within and between cells, the maintenance of your heartbeat and in blood clotting. Vitamin D is necessary to help calcium be absorbed from your diet, through the membranes of the duodenum. More calcium is absorbed there than in the small intestine, and the calcium is also most available to the body when it is in a water-soluble form.
In fact, the reason that stones form in your kidney for example, is that the calcium is rendered insoluble through the formation of calcium oxalate from the oxalic acid in foods such as rhubarb and soy. High fat diets can also slow down the absorption of calcium.
Estrogen plays a significant part in bone physiology, and is an important factor in the maintenance of bone density in women. Bone is living tissue, and is constantly being absorbed and remodeled throughout life. The part played by estrogen is to maintain a proper balance between the osteoclasts, the cells that reabsorb bone tissue, and osteoblasts, the cells that form new bone tissue.
When estrogen is deficient, this balance is lost and rather than bone formation and resorption occurring constantly, they take place in spurts so that first an area of new bone will be formed, then resorption will occur some weeks later, resulting in a structure where there are cavities between areas of bone. With time, these cavities will increase and weaken the integrity of the bone structure.
However, that is not the whole story. The effect of estrogen is to limit the active period of osteoclasts so that the areas of bone resorbed into the body are relatively small so that the removed bone cavity can easily fill up with new bone by the osteoblasts, which are invigorated by estrogen. When estrogen is deficient, not only is the activity of the bone-forming osteoblasts reduced, but the bone-absorbing osteoclasts activity is not regulated, and they form deeper holes in the bone structure than the osteoblasts are able to fill.
The net result is bone loss, with more bone being reabsorbed than is being formed. The end result of all this is spongy bone tissue with many tiny hole and also with larger areas of missing bone. Eventually this passes a critical point and the bone fractures during normal use. A simple jump from one step to another can fracture a bone at its weakest point, such as at the hip joint where the neck of bone is thinner.
Not everybody is at the same risk, and there are certain risk factors that you should be aware of, each of which could increase the chances of you developing weak bones. The condition particular affects white or Asian women, and those who have a small frame. If you smoke and drink an excessive amount of alcohol, you will also be more prone to osteoporosis, although exercise can help you to avoid it. An inadequate intake of calcium and vitamin D will also contribute, and magnesium is an essential part of strong bone development.
The U.S. Department of Agriculture has carried out surveys that indicate American women to be taking only 50% of the calcium recommended to maintain a healthy bone density. However, it is not only dietary calcium that is needed for the formation of bone, but also magnesium and boron, and vitamin D also helps with the absorption of calcium in the gut.
If you are on steroids then they can render you more prone to brittle bone disease. Unfortunately the symptoms of osteoporosis do not become evident until there has been a significant amount of bone loss, which is why post menopausal women, and those over 65, should have a bone density scan (DXA test). It is important to understand that osteoporosis is not a disease as such: you cannot ‘catch’ it, but it develops as the result of a gradual reduction in the minerals that maintain the density of your bone structure.
Your diet is important in helping you prevent bone loss and osteoporosis later in life, and your lifestyle is also important. Reducing your daily alcohol intake will certainly help, and cigarette smoking further retards the activity of the bone-creating cells. Calcium and vitamin D supplements will help, but do not restrict yourself only to these.

When you examine the minerals involved, it is not surprising that remineralization is so much more effective for healthy plants than current methods. “Agriculture in the last several decades has mainly relied on three minerals—nitrogen, potassium and phosphorus, known as NPK,” says Joanna Campe. “Lately they’ve begun to add more minerals, maybe up to twelve, but that’s still nothing compared to the broad spectrum of a hundred or so minerals provided naturally by mineralized soil.”
Another great aspect to mineralization is that it can help eliminate our heavy reliance on petrochemicals (oil-based products). Modern farming relies on chemical fertilizers that are petrochemical based. “We can shift from an economics of scarcity to an economics of abundance by switching from reliance on chemical fertilizers to remineralizations.” Campe says. “Fossil fuels are quickly disappearing, and rocks are the most abundant resource on the earth.”
This kind of economic effectiveness should come as great news to the organic food industry. According to current statistics, the U.S. buys nearly half of all the organic food produced in the world, and only 0.2 percent of its farmland is dedicated to organic growing. Much of the food produced is also of suspect quality. The reason for this scarcity and lack of quality lie partially in the expense and difficulty of growing organic food due to the poor soil. Such problems would be easily remedied by the next logical step in natural food production—remineralization—making it possible for farmers everywhere to grow natural food easily and within economic boundaries.

Exotic Herbs From The Amazon Basin

Although many traditional herbal medicines have yet to find complete scientific corroboration in the West, it follows logically that people wouldn't use an herbal product for centuries if it didn't work.
Many of the popular herbs we all recognize as having great health benefits were only recently considered pretty exotic. Even green tea - a staple in China for centuries -has only lately gone main stream.
So it will likely be with herbs from the Amazon basin and its environs. The Amazon basin is one of the most bountiful environments on the planet. Explorers and botanists from the West have looked to this region for generations for the "next big thing." Of course, in many cases, the "next big thing" has already been in use for centuries.
In this issue of Ask the Medicine Hunter, we're going to look at some energizing and life- stimulating herbs that also happen to have great antioxidant properties, too. Best yet, many of them are available to us here from companies that practice fair trade policies.
Let's take a look at some of the herbal powerhouses coming out of the Amazon (and its nearby neighborhoods):
Maca (Lepidium meyenii) has been cultivated for a long time at least 2000 years. Related to brassica family plants like radishes, mustard and cabbage, its foliage does actually look somewhat radish-like, but grows close to the ground.
Maca is cultivated by the Andean people in Peru's central highlands, and contains a plethora of beneficial compounds that enhance overall health and vitality. The tradition of cultivating maca is an old one some strains have been found in Incan sites that date from 1600 B.C. During early European colonization, maca was used by the local native culture as a form of currency, much of the way cocoa was used by the Aztecs, further north in pre-Columbian Mexico.
Maca thrives in high altitudes - between 10,000 and 16,000 feet. The harsher the conditions, the better it grows, or so it seems. In fact, efforts to grow the plant in Central Europe haven't been as successful - maca seems to enjoy its home turf the best. In Peru, maca is a popular and beloved nutrient-packed superfood, and is commonly powdered and mixed into drinks at roadside stands throughout the Andes.
Q. I've heard of maca being used for healthy libido - are there any other benefits?
A. Maca is a natural energizer, and although it is recognized for it's libido enhancing abilities, it has other uses, too, acting as an adaptogen - similar to rhodiola or ginseng. In fact, in South America, maca is known as "Peruvian Ginseng." Though maca is not ginseng at all, some of the benefits of both plants are similar.
In any event, maca is recommended for boosting the immune system, menopause support, and hormonal balance in general. For daily use, maca is most recognized as a great source of energy and all-day endurance. Alkaloids from maca root may be partially responsible for both maca's energizing and libido boost. Research shows that maca affects the hypothalamic-pituitary (HPA) axis - boosting energy and overall aphrodisiac prowess in men and women. Maca contains novel compounds called macamides and macaenes, which have been proven in animal studies to significantly enhance energy, stamina and sexual function reasons people have been so consuming maca for 2000 years.
There are other serious reasons why maca is such an excellent plant. One group of compounds in maca is the isothiocyanates-aromatics constituents that are responsible for the "hotness" of mustards and radishes - fellow members of the brassica family. Isothiocyanates from other members of the brassica family may reduce the risk of breast and stomach cancer. Although the same constituents specifically from maca haven't beentested, it's plausible that they could have the same effects.
Q. I've heard a little about guarana extracts - is it just caffeine?
A. Guarana is widely loved for its mild stimulating effect, which is due to caffeine. But this is by no means this Amazonian herb's sole beneficial compound. Guarana (Paullinia cupana) is so logically ingrained in the culture of Brazil that it's practically a rival (actually out-sells) Coca-Cola in its soft-drink form. Like many other indigenous herbs, guarana was in use locally well before European settlement. Its Latin name comes fromthe German botanist C.F. Paullini, who first encountered the herb in the 1700s. This evergreen vine typically climbs fairly far up the Brazilian forest trees. The seed is the part that gets used. In one clinical study, guarana boosted the memory alertness of participants, even when the caffeine level per dose was a low 9 mg., as compared with approximately 100 mg for a cup of coffee. This effect suggests that other agents than caffeine contribute to a feeling of well being.
Guarana also contains powerful antioxidants including catechin, epicatechin and proanthocyanidins, which protect cells against destruction from free radicals, and impart benefits to the body's tissues and blood. The small seed of this plant is powerful in its health benefits.
Catuaba (Erythroxylum catuaba) is a common tree found in South America from Brazil to Peru, in the same genus as the coca plant. Catuaba contains components known as alkaloids. These alkaloids (called catuabine A, B, and C) are probably responsible for themental boost most people get when they take catuabe-based supplements or mixes.
There may be little confusion regarding catuaba, because various species and genus typesuse the common name. As a result, "catuaba" gets bandied around a lot, and one person'scatuaba may not be the next. Read labels carefully. The catuaba I've had the best luck with is Erythroxylum catuaba.
One of my favorite drinks in the world is coffee, and I'm sure at many people reading thisconsider it the essential part of their morning, too.
The part of coffee that we use the most is the seed of the coffee fruit - which appears as a bright, red berry. Most of the time, this fruit is sloughed off and left behind in the process of making coffee - it's really too delicate to last long in hot conditions.
But advances in technology have tapped a previously discarded resource. Though the fruit of coffee is available in any coffee-growing economy, a high antioxidant commercial extract of "coffee cherry" is now available from the fruits of coffee plants in Mexico.
Coffee fruit has many of the attributes of other dark-colored, anthcyanin-rich fruits. Coffee fruit (also referred to as "coffee cherry") appears not to be just another antioxidant, however. Current research on this once-forgotten, former castoff shows impressive abilities to decrease tumor size, and possibly even prevent their formation in the first place. It seems that the elements in coffee berry activate T-lymphocytes in such a way that mammary tumors are shrunk or simply put on hold. It will be fascinating to see how this science plays out.
Muira Puama Bark:
Muira puama (Ptychopetalum olacoides) grows between 15 to 45 feet high. Native to theAmazon basin of Brazil, the dried bark has been used for centuries as a traditional energysupport. Components include beta-sitosterol, campesterol and lupeol.
Muira puama, like other central nervous stimulants has been researched lately for its ability to boost memory retrieval and protect neural (brain) tissue. Who knows? Maybe this traditional ingredient could someday be on the cutting edge of natural medicines fighting Alzheimer's, much the way green tea and turmeric are currently. In one unpublished French study of 262 men with low libido and poor erectile function, 62% experienced significant improvement after taking an extract of Muira puama for two weeks.
Acai (Euterpe acai) berry is a traditional favorite (and readily available) food source for people in the Amazon. The tree is a tall-growing palm with berries that provide - a rich source of anthocyanins, potent purple pigments with extraordinary high antioxidant activity.
Once harvested, acai fruits decay rapidly. As with coffee fruits, special processing is the surest way to make certain the nutrients of acai berry make it to those of us outside the Amazon basin.

The health and wealth of this region has been strengthened by Rep. Farr’s focus on the environment, education and the economy. Rep. Todd: Congressman Farr, thank you for taking the time to speak with us! Id also like to thank you for all the great things you’ve done for our community, form funding marine sanctuaries and authoring the Ocean’s Act to expanding Pinnacles national Monument. The League of Conservation Voters and others have recognized you as an “Environmental Hero”. And, you’ve worked hard to support the economic vitality of central coast’s $3 billion agriculture industry which includes a substantial organic segment. Our backyard here is also the home of a robust group of nutritional supplement manufacturers. An estimated 187 million Americans are currently taking dietary supplements as part of their daily healthy diet. In California, we’ve got 792 natural product manufacturers and distributors. Where do you stand on the state of our industry?
Congressman Farr: Well, thank you for the introduction and for asking to talk to me about nutritional supplement issues. I am very supportive of this industry and include myself in the 187 million Americans taking dietary supplements. I think supplements offer many safe and viable tools to maintain your health. The continued growth of this industry is an indication of both consumer confidence in the products and the products’ ability to fill the gaps where conventional medical care falls short.
Todd: It is estimated that by 2030, more than 70 million Americans will be over the age of 65 and the cost of health care could reach $16 Trillion per year. A recent study by the Lewin Group showed that by taking certain dietary supplements, seniors can lead healthier, more productive, independent lives while saving billions in reduced hospitalizations and physician services. Do you share our view that a Wellness Revolution is needed to counter the dilemma of an aging population versus shrinking health care support in the future?
Congressman Farr: Our health care system is definitely facing a challenge, especially as the Baby Boomers hit their 60’s and Americans are living longer than ever before. As a Baby Boomer myself, I am well aware of America’s aging population and the impact that will likely have not only on our social institutions but also our fiscal well-being. I agree that dietary supplements do play and will play an even larger role in the future as more seniors look for a way to augment their diets in order to stay healthy and active longer than past generations.
Todd: Our industry is regulated by DSHEA (the Dietary Supplement Health and Education Act), which was passed unanimously by Congress in 1994 to create a reasonable regulatory framework for access to, information about, dietary supplements. But many say that the FDA and DSHEA weren’t adequately funded to do the job as tasked. “Supplements are unregulated” is a false argument we sometimes hear. To ensure that the FDA is able to carry out the law as Congress intended, Representatives Dan Burton (R-Ind.) and Frank Pallone (D-N.J.) introduced H.R. 2485, the DSHEA Full Implementation and Enforcement Act of 2005. Did you support this bill and where does it stand today?
Congressman Farr: I think the DSHEA is a critical law and was proud to support it when Congress considered it in 1993 and 1994. I would certainly support H.R. 2485 if it came up for a vote in Congress. Unfortunately this bill has not moved since it was first introduced and referred to the Subcommittee on health in the house energy and commerce committee. Since this is an election year we have a tight schedule with only about 60 legislative days scheduled before we adjourn. That means it’s likely Congress will only finalize bills such as the appropriation bills that fund government before adjournment.
Todd: Our business climate has included some valid and rigorous challenges to improve our industry, from good manufacturing practices (GMP), to allergy labeling, to implications of Prop-65 in California. It’s disconcerting that a new bill, H.R. 3156 The Dietary Supplement Access and Awareness Act would try to capitalize on misconceptions about the industry. In an era of declining health care and declining insurance coverage, this bill would regulate supplements as prescription drugs. Among other things, it would also require adverse event reports to be turned over to the FDA, even though other foods, including those with identical ingredients, do not have the same requirements. This has the potential to be the next Prop-65-like Lawsuit mill. The result of H.R. 3156 would be chilling. It will knock smaller producers out of the market. It will result in higher prices for all supplements. It will decrease the availability of health-giving supplements to the public. What’s your feeling on this?
Congressman Farr: I am similarly concerned about H.R. 3156 and would oppose it if it came up for a vote in Congress. Like H.R. 2485, this legislation has been referred to a subcommittee on Health in the House Energy and Commerce Committee without any further action. The supplement industry has worked in good faith with the FDA since passage of DSHEA and H.R. 3156 would re-invent a wheel that isn’t needed. Instead, adequate funding as proposed in H.R. 2485 would provide ample oversight for the industry.
Todd: According to a recent study, 72% of the general population believe the government should fund more research on health benefits of nutritional supplements. Do you agreen and what can be done to meet this need?
Congressman Farr: I definitely agree that the federal government should play a bigger role in support of research regarding the health benefits of nutritional supplements. As a member of the House Appropriation Committee, I sit on the subcommittee that has jurisdiction over the FDA’s budget and I know the tight fiscal restraints the agency is under. I’ve worked with my colleagues to provide adequate funding, but it’s an uphill battle especially when we’re in a “robbing Peter to pay Paul” kind of situation. I recommend that people within the industry organize and use your consumer base to actively lobby Congress for additional funds. I’m fond of reminding people that the squeaky wheel gets grease – so let every Congress member and Senator know how much this issue matters to you.
Todd: When there is overwhelming scientific evidence that nutritional supplements provides relief for a disease condition, it currently takes a lawsuit to get the FDA to relent and allow the claim. Even then, the FDA strictly limits the claim and requires a disclaimer that does more harm than good in communicating this important information to the public. There is a new bill, H.R. 4282, The Health Freedom Protection Act that would end FDA and FTC censorship of health information. As an example, the 50% of all adult males who suffer from an enlarged prostate could receive relief from that condition by consuming a simple and safe ingredient, saw palmetto derived from the fruit of the dwarf American palm tree. The FDA censors that information. The public deserves a better opportunity to be informed about omega-3 EFA and heart disease, folic acid and birth defects, phosphatidylserine and cognitive impairment. Do you agree and do you support this bill?
Congressman Farr: I agree the public needs to access to the best information possible so they can make well informed choices about their health. I likely would support H.R. 4282 if it came up for a vote in Congress. Unfortunately this bill is in a similar situation as other we’ve mentioned in this interview – and again because of the tight schedule of an election year, it’s unlikely action will happen this year.
Todd: According to the barometer study, 85% of the US population is currently using some type of dietary supplement. Do you? Looking at your busy schedule from co-chairing the House Oceans Caucus to your seat on the Travel and Tourism Caucus, you are one busy congressman! Are you popping nutritional supplements please tell us!
Congressman Farr: I do take some nutritional supplements, though they vary and since Ginkgo Biloba isn’t among them I cant remember their names off-hand! One product I do use faithfully is Airborne to help me combat germs and colds that I might get from sitting on an airplane. But, like many Americans my life is over-scheduled and combined with the amount of air-travel I do, I find nutritional supplements helpful as I try to stay healthy despite my hectic lifestyle.

OXYGEN AND ANTIOXIDANTS As we all know, “Oxygen is critical to life,” but is itself a double-edged sword. While oxygen is necessary to sustain life and for natural defense against microbes, too much oxygen in our cells can lead to the production of “free radicals” (mitochondrial respiratory chain) or ROS (Reactive Oxygen Species). Free radicals come in many forms - singlet oxygen, hydrogen peroxide, superoxideperoxynitrite, to name a few - but all have one commonality. Each has an unpaired (unbalanced) electron, a situation it remedies by stealing an electron from a stable molecule. This sets off a domino effect of oxidation, a chain reaction that usually ends up damaging cellular integrity and compromising overall health. Nature has a defense system in place to protect these processes in the form of antioxidants. Whether endogenous (produced by the body, such as liver enzymes, SOD, coenzymes and sulfur-containing compounds) or exogenous (obtained through the diet, such as vitamins C & E, bioflavonoids, carotenes, etc.), antioxidants “quench” free radicals by donating an electron to stabilize a molecule, thus controling the chain reaction and stopping the oxidation “domino effect”. ANTIOXIDANT-RICH FOODS Research suggests that eating plenty of foods high in antioxidants helps to slow the processes associated with aging and protect against many chronic diseases. Maximizing one’s antioxidant power will enhance overall health. Fruit and vegetables contain both nutritive and non-nutritive factors that can affect oxidative damage and enzymatic defense and might contribute to redox (antioxidant and prooxidant) actions. A new “6-a-day” study looked into the effects of fruits and vegetables on markers of oxidative stress and antioxidative defense in healthy nonsmokers by The Danish Institute for Food and Veterinary Research in Denmark. The study found that fruits and vegetables increase erythrocyte glutathione peroxidase activity and resistance of plasma lipoproteins to oxidation more efficiently than do the nutritive factors (vitamins and minerals) that the fruits and vegetables are also known to contain. Certain berries, such as blackberries, also contain salicylates, which are also linked to heart health and prevention of atherosclerosis. The protective effects of fruits and vegetables intake on both heart disease death and deaths in general have previously been demonstrated but researchers at the Human Nutrition Research Center on Aging at Tufts University, Boston. Quercetin is an anti-oxidizing flavonoid found in many berries (such as cranberries, bilberries, blueberries, strawberries, etc.) and can prevent CVDs (coronary vascular diseases), according to a recent Finnish study. All these natural plant polyphenols are responsible for the colors of many red and purple berries, fruits, vegetables and flowers. GOVERNMENT GUIDELINES The new federal guidelines released earlier this year by the U.S. Department of Health and Human Services (HHS) and U.S. Department of Agriculture (USDA) recommend eating more fruits and vegetables, combined, than any other food group -- five cups or about 10 servings a day for most adults. The amount of fruits and vegetables recommended has increased for men and women of every age. “Fruits and vegetables are the "good news" story of the new Dietary Guidelines for Americans for food-loving consumers, the industry and America's public health”, stated the Produce for Better Health Foundation (PBH). Eating a variety of colorful phytochemical-rich fruits and vegetables has been associated with lower risk of some chronic diseases such as cancer and heart disease. Many authoritative organizations such as the National Cancer Institute and The American Heart Association recommend getting phytochemicals from whole foods, such as fruits and vegetables, rather than from individual component supplements. The Scottish government is promoting healthy eating through a scheme designed to increase purchasing of fruit and nutritional foods. Scottish health minister Andy Kerr said, "This initiative shows that healthy eating can be good for customers and good for business." Scottish women are said to have the highest rates of death from lung cancer in the world as well as the highest rates in Europe for coronary heart disease. They also have low consumption of fruits and vegetables, shown in studies to help protect against some cancers and benefit heart health. ROS (Reactive Oxygen Species) Free radicals and oxygen free radicals play an important role in the development and progression of many brain disorders such as brain injury, neurodegenerative disease, and Down syndrome. Oxidative stress is an important factor in the etiology and pathogenesis of diabetes & is also linked to other host of degenerative health conditions. Fortunately, antioxidants are available to support the body’s defense and fight disease and aging. Examples of “Fast acting antioxidants” in the body (serum) are: uric acid (polyphenols), ascorbate, bilirubin, vitamin E (the later two are lipid soluble). Examples of “Slow acting antioxidants” are glucose, urea nitrogen etc. In short, free radicals, reactive oxygen species (ROS) and reactive nitrogen species (RNS) are generated as by-products of normal cellular metabolism. Their deleterious effects are minimized in vivo (in the body) by the presence of antioxidant systems. How do Antioxidants work? Antioxidants are substances in plants that help maintain health. Antioxidants protect against damage to cells caused by too many “free oxygen radicals,” which form because of the effects of oxidation. Smoking, sunlight, heavy exercise, and pollution all increase oxidation in the body. Most people would benefit by eating more (five to nine or more servings) fruits and vegetables & colorful plant foods, such as purple, dark green, yellow, orange, blue, and red ones, each day. These have healthful pigments along with antioxidant nutrients such as vitamin C, carotenoids, beta-carotene, lycopene, lutein, zeaxanthin, vitamin E, selenium, flavonoids, and other beneficial substances. There are numerous ways in which these antioxidants affect, but can be explained in two groups: Alpha (a) Effects: This refers to the scavenging or neutralizing of free radicals. These effects do not change the way humans (or animals) feel. There are also no noticeable health, psychological or emotional benefits. While there are no obvious changes, increased total antioxidant intakes are associated with decreased tumor rates, prevention of heart attacks and increased longevity. Beta (ß) Effects: These are the changes on health, psychological or emotional state that you or others will notice. In this case, the antioxidant is affecting metabolic processes (enzymes) with consequent changes in the physical (improvement in joint movements, improved skin condition, tissue damage recovery), emotional (better ability to cope with stress) or psychological state (increased alertness). The ORAC value Because most of the active nutritional components in fruits and vegetables are antioxidants, accurate measurement of antioxidant activity serves as a good indicator of potential health benefit. Scientific opinion runs high that ORAC (Oxygen Radical Absorption Capacity) will eventually become a government standard of reference for overall daily fruits and vegetables intake. ORAC units are a measurement of the ability of food to stop oxidation. It is most generally expressed in terms of Trolox equivalent per gram (µmole Trolox equivalents (TE)/g). POPULATION DATA A survey done by the National Research Council indicates that only 10% of the US population consumes the recommended five servings of fruits and vegetables per day. The equivalent to eating 5 mixed servings of fruits and vegetables per day is about 1,670 ORAC units. Based on scientific evidence it is suggested that daily antioxidant intake should be increased to between 3,000 and 5,000 ORAC units per day, per human subject, in order to reach a significant antioxidant capacity in blood plasma and other tissues. The U.S. Department of Agriculture (USDA) this year issued a new food pyramid aimed at convincing Americans to eat more fruits, vegetables, whole grains, and lean proteins such as dairy, meat and beans. While the USDA publicizes its pyramid with much fanfare, the agency implements policies that subsidize the consumption of nutrition-poor, high fat and processed foods, while offering no incentive to farmers to grow healthful crops.
The Pyramid Versus Farm subsidies
A recent Associated Press (AP) article* contrasted the pyramid recommendations with a breakdown of this year’s $17 billion in direct subsidies to farmers.
Overproduction Leads to Lower Prices
U.S. farm policy leads to the overproduction of nutrition-poor, fat and starch-laden foods. As a result, the prices of these foods go down, while healthy food remains less affordable.
A related AP story describes the barriers faced by poor families who would prefer a more nutrition’s diet but end up eating cheap, unhealthy food. Adam Drewnowski, director of the University of Washington’s Center of public Health Nutrition is quoted: “Energy-dense foods rich in starch, sugar or fat are the cheapest option. As long as the healthier lean meats, fish and fresh produce are more expensive, obesity will continue to be a problem for the working poor.”

90% of Americans Carry Chemical Stew in their Bodies
The third national report on human exposure to Environmental Chemicals, issued this summer, shows that most people in the U.S., and especially children, carry a dangerous mixture of chemicals in their bodies. Nevertheless, the Center for Disease Control (CDC), authors of the report, issued a press release focusing on progress made in a few areas—and most media looked no further than the optimistic press release.
The CDC sampled the blood and urine of thousands of subjects across the country for 148 environmental chemicals. This study found a significant decline since previous reports in exposure to secondhand smoke and in lead levels in children’s blood.
Despite the positive headlines, however, the study documented the presence in human bodies of dozens of pesticides and toxic compounds used in consumer products. Among the findings:
Body Burden and the wellness Revolution
This Study—the latest indication that all of us carry a “body burden” caused by widespread chemical use in our society—shows the need for a system that relies on organic agriculture and alternative pest controls. The constant exposure to toxics we experience today is a major cause of chronic illness, including cancer, birth defects or abnormal development, brain or nervous system damage, hormonal and reproductive imbalances, and impaired immunity, to name just a few.

Women and Children Especially Vulnerable
Most Americans carry toxic pesticides in their bodies, according to a recent report. Often, the so called “body Burden” of these chemicals is well above government-defined safety levels. Included are pesticides linked to cancer, birth defects, low birth weight, declining sperm counts, and infertility.
Chemical Trespass, by the Pesticide Action Network, analyzes data collected by the Center for Disease Control (CDC) from blood and urine analyses of 9,282 people. Among the findings:
Pesticides residues and metabolites were found in every subject. The average person had 13 pesticides in his or her body. The Average 6 to 11 year old was exposed to certain organophosphorus (OP) pesticides at four times the levels deemed acceptable by the environmental protection agency. Children are especially susceptible to dietary pesticides since they eat more food on a body weight basis than adults.
Organochlorine (OC) pesticides were found as significantly higher levels in women. This probably reflects women’s higher body fat content; OC pesticides are stored in fatty tissue.
Mexican-Americans showed the highest pesticides exposure, probably due to their disproportionate employment in agriculture. However, the statistics did not include occupational information.
Many pesticides used widely in the past, such as DDT and chlordane, are still found in our bodies, even in children born years after they were banned.
Cause for Alarm?
The CDC, which tested for 116 environmental chemicals, stressed that presence of these chemicals in the body does not necessarily indicate disease and called for more study of the dosages that should cause concern. The Pesticide Action Network sharply criticized this approach as a “Failure to protect public health.” Much evidence links long-term, low-level exposure to chronic illnesses, the group said, and the problem is more acute when one considers the additive effects of combining chemicals.

The search for clean teeth, healthy gums and fresh breath is not just a modern obsession, but an age-old fixation. Dental historians believe that ancient cavity rates ranged from 1% among Eskimos, with their highly carnivorous diet, to 80% among members of Egypt’s royalty, who feasted on dainties that included many high-carb delights. So it’s no surprise that most ancient cultures had their favorite oral hygiene therapies.
In Indian, the tooth scrubber of popular choice was twigs taken from the neem tree. Small wonder: This tropical evergreen’s therapeutic versatility sports and impressive 4,000-year-old track record, earning it the nickname of “village pharmacy.” Indians who went abroad carried neem with them, and they put the entire tree-bark, fruit, leaf, root, seed-to health-enhancing use. One famous Indian emigrant, Mahatma Gandhi, was a keen neem enthusiast; after returning to his native land, Gandhi held prayer meetings under a neem tree.
Today, neem’s beautiful branches grace a vast swath of the Southern Hemisphere, including Australia (which may become the biggest neem-producing nation over the coming decades), Fiji, sub-Saharan Africa, Central and South America and the Caribbean. This remarkable plant’s Sanskrit name, arista, says it all-“perfect, complete and imperishable.”

Your dentist is actually the second one to drill your pearly whites. The first drillers are the germs that reside in your mouth-or, to be more accurate, the acids these wee beasties produce. Their handiwork: dental caries, or just plain cavities. These bacteria are also responsible for gum disease, which can lead to tooth loss if unchecked. What’s even worse, low-level inflammation caused by disordered gums may create the kind of blood-vessel havoc associated with heart problems.
Neem extracts act against a variety of detrimental microbes, which may explain its time-tested success in helping to keep teeth whole. Scientists at India’s Zydus Research Centre found that individuals who used a neem dental gel twice a day for six weeks enjoyed significant reductions in both plaque-the gummy, bacteria-harboring stuff that accumulates on teeth-and gum disease (International Dental Journal 8/04).
Neem’s fame is spreading among Northern Hemisphere consumers. It is becoming an herbally aware toothpaste ingredient valued for the fresh feeling its cool astringency imparts to the mouth. Neem is also a prized component of other health and beauty products, such as bath powders, lotions, shampoos and soaps.
In India, neem is a vital weapon in the arsenal of Ayurveda, that country’s system of traditional medicine. Practitioners there mash the leaves into a paste to alleviate chickenpox and warts, and brew them into tea to break malaria’s feverish grip. The leaves also make a soothing soak for fungus-infected feet.
Indian scientists are also hard at work studying neem. They’ve distilled the substances that account for neem’s ability to fight bacteria, fungi and parasites (including the pests that infest pets). Researchers have explored neem’s other traditional usages; in one study, a bark extract was able to ease ulcers (Life Sciences 10/29/04). What’s more, neem is esteemed for its contributions to Indian agriculture; the seedcake makes a nutritious feed supplement and bees that feed on neem are free of wax moths.

Stevia is a small perennial shrub with green leaves that belongs to the aster (Asteraceae) or chrysanthemum family of plants. They grow primarily in the Amambay mountain range of Paraguay but over 200 various species of stevia have been identified around the globe. Stevia rebaudiana is the only species at present which possesses an inordinate ability to sweeten. Its common form is known as stevioside, a fine white powder extracted from the leaves of the plant. Phytochemistry STEVIOSIDE/REBAUDIDOSIDE COMPOUND DUO: The leaves of the stevia shrub contain specific glycosides which produce a sweet taste but have no caloric value. Stevioside is the primary glycoside involved in this effect. Dulcoside and rebaudioside are also major glycosides contained in the herb. Glycosides are organic compounds which contain a sugar component (glycone) and a non-sugar component (aglycone). The glycone constituent may be comprised of rhamnose, fructose, glucose, xylose, arabinose etc. The other portion may be any kind of chemical compound such as a sterol, tannin, carotenoid, etc.
Stevia leaves also contain protein, fibers, carbohydrates, phosphorus, iron, calcium, potassium, sodium , magnesium, rutin (flavonoid), iron, zinc, vitamin C and vitamin A. Human physiology cannot metabolize the sweet glycosides contained in stevia leaves, therefore they are eliminated from the body with no caloric absorption. Stevia, unlike aspartame, can be used in baking because its sweet glycosides do not break down when heated. Definition Stevia is an herb with incredible sweetening power. Its ability to sweeten is rated between 70 to 400 times that of white sugar. Typically, it has a mild licorice-like taste and is completely natural in its biochemical profile. What makes stevia so intriguing is that unlike other natural sweetening agents, its is completely calorie-free, never initiates a rise in blood sugar, and does not provide “food” for microorganisms like bacterias and yeasts.
Stevia may well be the most remarkable sweetener in the world and yet its recognition in this country remains relatively low. Consider the extraordinary attributes of the stevia plant and its extracts:
A Brief History
Stevia is a plant indigenous to mountainous regions of Brazil and Paraguay. For centuries, this herbal sweetener has been used by native cultures to counteract the bitter taste of various plant-based medicines and beverages. The Guarani Indians of Paraguay have used this potent sweetener in their green tea for generations. The name they designated for stevia leaves was “sweet herb.” In addition, these native peoples have historically used stevia as a digestive aid and a topical dressing for wounds and other skin disorders.
In the sixteenth century, Europeans became aware of the herbal sweetener through the Spanish Conquistadors. In the late 1880s, Moises S. Bertoni, director of the College of Agriculture in Asunción, Paraguay, became extremely intrigued by the stevia plant. Its reputation was that it was so sweet that even just a small leaf part could sweeten an entire container of mate tea. Be rtoni wanted to find out if this was true. After several years of studying the plant, he wrote about it in a local botanical publication. In 1905, Bertoni published an important article about the incredible sweetening power of the stevia plant, which he considered superior to sugar and extremely marketable. Other articles written by Bertoni note that stevia is unquestionably superior to saccharine because it is nontoxic and has significant therapeutic benefits. It sweetens with unprecedented potency and can be used in its natural state.
The first stevia crop was harvested in 1908 and subsequently, stevia plantations sprang up in South America. In 1921, the American Trade Commissioner to Paraguay, George S. Brady, wrote that although the herb is an extraordinary sweetener with remarkable properties, little had been done to commercially cultivate the plant. He suggested that stevia may be an ideal sugar product for diabetics and strongly advised that American companies pursue its importation.
During the decade of the 1970s, the Japanese developed a new method which could better refine the glycosides contained in the stevia leaf. The result was a compound called ste-vioside which is from 200 to 300 times sweeter than white sugar. The Japanese approach artificial sweeteners with great caution and they believe stevioside to be safer and more effect i've than other non-nutritive, chemical products. Stevioside is considered superior in its ability to sweeten; however, it does not exhibit some of the other therapeutic actions found in whole stevia leaves .
Stevia enjoyed substantial popularity during the 1980s as a natural sweetener and was found in a variety of consumer products. In 1986, however, the FDA abruptly seized stevia inventories and in 1991 claimed it was not suitable as a food additive. Advocates for stevia claim this happened because the herb is a natural, powerful, inexpensive and non-patentable sweetener, and therefore poses a threat to pharmaceutical sweeteners and sugar-alcohol sweeteners like mannitol, sorbitol and xylitol. At this writing, stevia has received approval by the FDA to be sold only as a dietary supplement, not as a sweetening agent.
Currently, stevia is commercially grown in Paraguay, Brazil, Uruguay, Central America, Israel, China, Thailand, and the United States. It is considered an important natural sweetener in both Japan and Korea, and has been safely used in these countries for decades. Extracts of stevia and related products make up a considerable portion of the Japanese market for natural sweetening agents. They use stevia in sweet sauces, pickles, beverages, etc., making Japan one of the largest single consumers of stevia in the world. Today, because the demand for stevia is escalating, several Paraguayan organizations are looking to expand the commercial cultivation of the plant. Currently, Canadian researchers and chemists are working to provide even better stevia supplements and may even end up teeming with governmental agencies to raise stevia crops as economic replacements for tobacco leaves (Bonvie, 64). Stevia has not been officially approved by Canadian agencies, but it is still available for purchase in tea form.

The introduction of refined sugars into the modern diet has had tremendous negative health consequences on world health. For example, diabetes, especially insulin-independent diabetes (Type 2), is growing rapidly in the United States particularly among children. This type is partly due to the inability of insulin to effectively transport sugar to receptor sites and into cells, where the sugar can be metabolized. Instead of being "burned up," sugar builds in the blood, creating a potentially serious health problem. This inefficiency can occur for a number of reasons, including: insufficient insulin production due to pancreas dysfunction (though many Type 2 diabetics produce excess insulin); the inability of insulin to carry sugar to receptor sites; a defect in the insulin; or a defect in the receptor that does not allow for the sugar to be transported through the cell membrane. Even if one does not have diabetes, it is important to maintain healthy blood sugar levels through proper diet, exercise, and weight management. This is especially important in children who were recently found to obtain 14% of their daily calories from sweet drinks (sodas), overtaking white bread as the primary source of total daily caloric intake. Regardless of the reason, a number of botanicals, in addition to key lifestyle recommendations, have been shown in modern research to support healthy blood sugar levels by enhance sugar metabolization. (Cinnamomum aromaticum syn. C. cassia*) is one botanical that has been shown to have a positive effect on potentiating the effects of insulin.

Spices have been used historically to increase metabolism, raise body heat (thermogenesis), improve digestion and assimilation, and potentiate the effects of other substances. For this reason, in many herbal traditions, small amounts of hot pungent spices were added to many traditional compounds. Regarding sugar metabolization, a study by the United States Department of Agriculture (USDA) looked at the potential effects of 49 spices on insulin function (Broadhurst et al. 2000). These researchers found that cinnamon was the most bioactive in directly stimulating cellular glucose metablosim, i.e. the ability of cells to utilize sugar. The same researchers followed up with constituent studies and determined that it was water-soluble compunds in the extract that had this insulin-potentiating effect. This was followed by a clinical trial (60 subjects), also with involvement of the USDA, on the effects of cinnamon for potentiating insulin. The equivalent of 1, 3, and 6 grams (g) of cinnamon powder (approximately 1/4 to 1.5 teaspoons) reduced blood glucose levels 18-29% in 40 days (Khan et al. 2003).
There was a significant increase in efficency between the 1 and 3 g doses, but an insignificant increase between the 3 and 6 g doses. One mechanism of action that has been postulated is that cinnamon increases the activity of PI-3 kinase, an enzyme that is critical in regulating the ability of glucose to be transported into the cell, where it can be utilized as energy. In addition to its ability to potentiate insulin, the cinnamon also supported healthy triglyceride and cholesterol levels, both important health benefits in general.
There is an additional benefit of using cinnamon for many Americans; like many spices it is a potent thermogenic agent. This means it can be used as a healthy adjunct to a weight loss program that includes dietary modification and proper exercise. The excessive consumption of simple sugars in conjunction with poor diet and sedentary lifestyles can cause unhealthy blood sugar levels while providing themogenic support can have long-lasting health benefits.
There have been a number of popular articles on the recent studies. This had led some to ask if crude cinnamon powder can be used with the same effect and safety. This has not been tested. As with all spices, cinnamon is rich in essential oils. Essential oils have beneficial effects, but the insulin-potentiating effect was found to occur in the water extract. This would suggest that many of the oil soluble compunds were lost in the processing. Also, essential oils can be stimulating and irritating, one of the reasons they are generally used in small amounts as flavoring agents. Therefore, it would be best to look for products that contain the water extract to ensure you are delivering the preparation that most closely reflects the preparation used in the studies.
Maintaining healthy weight and increasing lean body mass are key components in the supporting healthy blood sugar levels. Recently it was reported that only two days of inactivity resulted in a decreased level of insulin sensitivity. Therefore, supporting healthy blood sugar levels is extremely important for those wanting to maintain a healthy lifestyle. In obesity, or in those with a significantly higher percentage of body fat over lean muscle (body mass index greater that 25), it is very difficult for insulin to do its job effectively. The reason is quite simple: fat cells can prevent insulin from actually reaching insulin receptor sites; the fat physically blocks the receptor, and the sugar that should have been burned off through cellular function remains in the blood. It is important to know that, in such cases, there is often nothing at all wrong with the pancreas (the insulin-producing organ), the insulin, or the receptor sites. The fat simply prevents insulin and sugar from reaching their target. In many cases, people are over-producing insulin in an attempt to get more sugar to the receptor sites. After awhile, the pancreas can become exhausted and no longer produce adequate amounts of insulin. Therefore, a primary therapy for supporting healthy blood sugar levels is proper weight management through diet and exercise.

Recent research has supported the fact that garlic shows excellent potential in the treatment of cardiovascular diseases. Disorders of the heart and the circulatory system claim more lives than any other disease. It is the obstruction or clogging of the coronary arteries which causes more deaths that any other factor. The arteries, which supply the heart with blood and oxygen, become increasingly narrower as plaque builds up over time. When blood supply becomes so restricted that a certain portion of the heart is deprived of oxygen, a heart attack occurs.
The two greatest predictors of heart disease are high blood pressure and high blood serum cholesterol levels. Both of these determinants are directly impacted by the therapeutic action of Garlic. What is particularly relevant about the role of Garlic in coronary heart disease is that several studies done on rabbits found that even pre-existing atherosclerotic deposits and lesions could actually be reversed if garlic was consistently consumed.4
Granted, the above study has not been performed on humans, however, its implications are extremely significant. It is important to remember that it is not always what we are eating that causes heart disease, but what we are not eating. Studies like the one just described suggest that even if our diets were high in cholesterol, adding chemical compounds like the ones found in garlic may keep us from developing cardiovascular disease. This might explain why some cultural groups which consume high fat diets do not suffer the coronary consequences so typical of our population.
What is particularly exciting about the potential of garlic for anyone suffering from heart disease is that it can help reverse the disease and substantially reduce the risk of a second heart attack. The longer garlic is used, the better its results are. For example; people who have heart disease showed more improvement after the third year of garlic therapy than before. A possible explanation for this is that using garlic consistently over time progressively reverses hardening of the arteries, therefore the longer the garlic usage, the less the risk of heart attack.5 The New York Times ran an article on garlic in their September 4, 1990 edition. Concerning heart disease and garlic, it stated:
“...most exciting to those attending the conference, which was co-sponsored by Pennsylvania State and the Federal Department of Agriculture, were the results of a three year study in India among 432 coronary patients who had already suffered one heart attack. The patients were randomly divid ed into two groups, with one group receiving daily supple ments of garlic juice in milk. Those who took the garlic sup plements suffered fewer additional heart attacks, had lower blood pressure and serum cholesterol levels and were less likely to die during the study. After three years, nearly twice as many patients had died in the group not taking garlic . . . Patients who drank the garlic supplement were more likely to report such subjective benefits as an increase in vigor, energy and sexual desire, improvements in exercise tolerance, and a decrease in joint pains and asthmatic tendencies.”

WASHINGTON (AP) - Remember when your mother told you to eat broccoli? Scientists say they've proved mother knows best.
Dr. Paul Talalay of Johns Hopkins University School of Medicine said in a paper published today that studies in his lab show broccoli is rich in sulforaphane, a chemical that works as a powerful anti-cancer compound in laboratory mice. Studies have shown that a diet rich in cruciferous vegetables such as broccoli, Brussels sprouts, cabbage and cauliflower, can lower the risk of cancer of the bowel, stomach and breast. How those vegetables caused the effect wasn't clear.
Now, Dr. Talalay said, it appears that at least one anti-cancer ingredient in the vegetables is sulforaphane. It works by causing cells to expel cancer-causing toxins. He said this is the first time a high-potency compound has been isolated from vegetables and has been shown to accelerate the detoxification process in cells. Dr. Talalay said his team isolated sulforaphane from broccoli, then fed it to a group of mice. When cells in the mice were examined after five days, the scientists found that the chemical had triggered enzymes known to neutralize carcinogens within cells. Research, Dr. Talalay said, will shift to the long-term cancer-fighting effects of the chemical. "Our prediction is that sulforaphane will block tumor formation in animals and presumably in man," he said. Nutrition and medical scientists are trying to find ways to prevent cancer through a diet rich in foods that have anti-tumor properties.
In earlier studies, Dr.Talalay said, he and others have shown that certain proteins in cells, called Phase I enzymes, can take innocent chemicals and turn them into carcinogens, or compounds that can give rise to cancer by disrupting the genetic pattern in cells. Other proteins, called Phase 2 enzymes, he said, tend to block formation of carcinogens. Sulforaphane, he said, is a potent activator of Phase 2 enzymes. "There is mounting evidence that if you are able to raise the Phase 2 enzymes, this will divert the carcinogenic compounds from damaging the [genes]," Dr. Talalay said. "By tilting this balance toward Phase 2 enzymes, we can achieve protection from cancer." The Hopkins researchers will conduct tests to determine how much broccoli must be consumed to establish an effective anti-cancer level of sulforaphane in cells. Over a decade of research has been done on cruciferous vegetables and there are large databases that confirm that cruciferous vegetables substantially reduce the risk of disease, specifically cancer. Studies show substances in these vegetables that have anti-cancer properties which cause the body to speed up production of enzymes, therefore being capable of neutralizing cancer agents. The studies also show these prevent damage to our DNA and slow the aging process. In women, metabolic processes are regulated which eliminate the bad (and maintain the good) estrogen, therefore substantially reduce the risk of breast cancer. Shortly after the NCI study was released, John Hopkins School of Medicine revealed similar studies.
Due to these study results, the National Cancer Institute, the American Cancer Society, the National Academy of Sciences, the U.S. Department of Agriculture, John Hopkins School of Medicine and the FDA have all reached out to inform the public of the anti-cancer compounds found in cruciferous vegetables, and are advocating the daily consumption of these vegetables. The average American has been eating only 4 and one half pounds of these vegetables per year!

The United States eats well, a little too well, according to experts. Amply supplied with a large supply of high-calorie food, our diets might seem to be chock full of every conceivable nutrient. Well, to the question "Getting all the right vitamins, minerals and other nutrients?" the most appropriate answer seems to be "Not exactly." Eating a lot doesn't equal eating a lot of the most important vitamins and minerals. So, which vitamins and minerals are likely to show up in short supply in the typical American diet? Calcium certainly sits at the top of list. According to the most recent Continuing Survey of Food Intake by Individuals, which is conducted by the United States Department of Agriculture (USDA), women and girls age 12 and up are not consuming adequate calcium from their diet. Research reveals that about 1200 mg. day suffices for those over age 50 and 1000 mg a day should be adequate if you're between the ages of 19 and 50. But the calcium campaign does not end in early adulthood. Bone mass begins to deteriorate at about age 30. Menopausal hormonal changes can exacerbate bone brittleness. Medical conditions, including cancer, liver disease and intestinal disorders; prescription drugs; tobacco and alcohol indulgence; or a decline in activity, especially the weight-bearing kind, also jeopardize bone strength. According to the National Osteoporosis Foundation, about one in every two American women will break a bone after age 50 due to osteoporosis. That translates into about half a million fractured vertebrae and more than 300,000 shattered hips. Frequently, those breaks are life-threatening.
The critical role of calcium in many body functions is perhaps the most extensively clinically documented among nutrients. Researchers in the Department of Medicine, Oregon Health Sciences University in Portland, reviewed epidemiological and clinical studies conducted over the past two years on the relationship between dietary calcium and blood pressure (J Am Coll Nutr October 1999: 398S-405S). "Nearly 20 years of investigation in this area has culminated in remarkable and compelling agreement in the data," the researchers report, "confirming the need for and benefit of regular consumption of the recommended daily levels of dietary calcium." Investigators at the State University of New York, Buffalo School of Dental Medicine, presented results of their studies of calcium and vitamin C and gum disease at the June 26, 1998 meeting of the International Association for Dental Research. Two separate inquiries revealed that people who consumed too little calcium as young adults, and those with low levels of vitamin C in their diets, appear to have nearly twice the risk of developing periodontal disease later in life than folks with higher dietary levels of either nutrient.
Calcium: Much Documented Researchers offer extensive evidence of calcium's benefits on many fronts: n Osteoporosis poses a threat to older men as well as women, according to Randi L. Wolf, PhD, research associate at the University of Pittsburgh Graduate School of Public Health. Dr. Wolf presented her award-winning study to an October 3, 1999 meeting of the American Society for Bone and Mineral Research. Dr. Wolf suggests that men increase their consumption of calcium, particularly after age 80, to avoid age-related declines in the amount of calcium absorbed. According to Dr. Wolf, "It appears that the hormonal form of vitamin D, which is the main regulator of intestinal calcium absorption, may have an important role. We are conducting more research to better understand the reasons for why calcium absorption declines with age in men." n Scientists at Tufts University in Boston did some earlier work on the calcium-vitamin D connection and reported it in the September 4, 1997 New England Journal of Medicine. Using the National Academy of Sciences (NAS) increased recommended daily intake of 1200 milligrams of calcium and 400 to 600 international units of vitamin D for people over 50, the Tufts researchers found that with supplementation of the nutrients, men and women 65 and older lost significantly less body bone and, in some cases, gained bone mineral density. n Two studies published in American Heart Association journals show that atherosclerosis and osteoporosis may be linked by a common problem in the way the body uses calcium. The September 1997 Stroke revealed that, in a group of 30 postmenopausal women 67 to 85 years old, bone mineral density declined as atherosclerotic plaque increased. Researchers reporting in Circulation (September 15, 1997) advanced the theory that the osteoporosis-atherosclerosis connection may be related to a problem in handling calcium. n For people who had colon polyps removed, taking calcium supplements decreased the number of new polyps by 24% and cut the risk of recurrence by 19%, according to researchers at the University of North Carolina, Chapel Hill, School of Medicine. The study, published in the January 14, 1999 New England Journal of Medicine, was a first in crediting calcium with anti-cancer properties.
The D Factor
Without adequate vitamin D, your absorption of calcium slips and bone loss can accelerate, increasing the risk for fractures. Fifty percent of women with osteoporosis hospitalized for hip fractures at Brigham and Women's Hospital in Boston had a previously undetected vitamin D deficiency (Journal of the American Medical Association, April 28, 1999). University of Pittsburgh Cancer Institute researchers told participants at the April 14, 1997 meeting of the American Association for Cancer Research that vitamin D "significantly inhibits highly metastatic, or widespread, prostate cancer in animals," suggesting its potential for treating men with similar conditions. Few foods that Americans eat, except dairy, contain much vitamin D, but we can usually synthesize sufficient amounts from as few as five minutes' exposure to the sun. But as skin ages, its ability to act as a vitamin D factory decreases. According to Michael F. Holick, the director of the Vitamin D, Skin and Bone Research Laboratory at Boston University Medical Center, upwards of 40% of the adult population over age 50 that he sees in his clinic are deficient in vitamin D. Recently, the National Academy of Sciences (the official body that decrees the required amounts of necessary nutrients) increased the daily recommendations of vitamin D to 600 IU for people over 71, 400 IU for those aged 51 to 70 and 200 IU for people under 50. The best dietary sources, apart from dependable supplements, are dairy and fatty fish like salmon. Four ounces of salmon provide about 300 IU.
The Facts About Fats
The American lust for low-fat, high-carbohydrate diets filled with sugary foods has exploded into nothing short of "obsession," according to experts at the General Research Center at Stanford University Medical Center (Am J Clin Nutr 70, 1999: 512S-5S). That mania oftens robs us of the crucial balance of omega-3 and omega-6 fatty acids typical of the Mediterranean diet that protect us from heart disease by controlling cholesterol and making blood less likely to form clots. These fatty acids cannot be made by the body but are critical for health: n Omega-3 fatty acid (linolenic acid) comes from fresh, deepwater fish (salmon, mackerel, sardines) and vegetable oils such as canola, flaxseed and walnut. n Omega-6 fatty acid (linoleic acid) found primarily in raw nuts, seeds and legumes and in saturated vegetable oils such as borage, grape seed, primrose, sesame and soybean. The American Heart Association recommends limiting total fat consumption to 30% of daily calories. Saturated fats like those in dairy and meat products as well as vegetable oil should comprise 10% of total calories; total unsaturated fat (fish oils, soybean, safflower nuts and nut oils) should be restricted to 20 to 22% of daily calories.
Be Sure About B12
Vitamin B12 presents a particular problem for the elderly because older digestive systems often don't secrete enough stomach acid to liberate this nutrient from food. (The elderly have no problem absorbing B12 from supplements, because it's not bound to food.) Vitamins generally moderate the aging process but, ironically, that process and the diseases that frequently accompany it affect vitamin metabolism (Schweiz Rundsch Med Prax 83, 1994: 262-6). And because of those changes, we need more of certain vitamins. This is the case for vitamins D, B6, riboflavin and B12. Crucial for health, B12 is necessary to prevent anemia, and, according to recent studies, needed (along with folate and B6) to help stave off heart disease. B12, with thiamine and niacin, boosts cognition (Adv Nutr Res 7, 1985: 71-100). Screening for vitamin B12 deficiency and thyroid disease is cheap and easy and can prevent conditions such as dementia, depression or irreversible tissue damage (Lakartidningen 94, 1997: 4329-32). In the January 5-12, 1999 issue of Circulation: Journal of the American Heart Association, the AHA urged doctors to screen levels of homocysteine (the amino acid byproduct of protein digestion that damages arteries, causes heart disease and, possibly, strokes) in patients at high risk for heart disease. They also recommended all Americans to up their daily levels of vitamins B6 and B12, as well as folic acid. Since fruits, vegetables or grains lack B12, vegetarians need B12 supplements. And they're a good idea for the rest of us, too.
Folic Acid Benefits
Folic acid made headlines in the early 1990s when the U.S. Public Health Service declared that "to reduce the frequency of neural tube defects [spina bifida, or open spine, and anencephaly, a lethal defect of the brain and skull] and their resulting disability, all women of childbearing age in the United States who are capable of becoming pregnant should consume .4 milligrams (400 micrograms) of folic acid per day." This recommendation followed voluminous research that showed taking folic acid was associated with a significantly reduced risk of birth defects. (The advisory is based on the fact that nearly half of all pregnancies are unplanned. If you think you are pregnant, consult your health practitioner for supplementary advice.)
A Team Player
Folic acid's efficacy intensifies when it works with other nutrients. Among many studies on the preventive powers of folic acid on birth defects, one published in The New England Journal of Medicine (327, Dec. 24, 1992: 1,832-1,835), disclosed an even greater decrease in neural tube defects when supplements of folic acid contained copper, manganese, zinc and vitamin C. As a warrior against homocysteine, folic acid joins the battalion of B12 and B6 in detoxifying this harmful protein. At the University of Washington's Northwest Prevention Effectiveness Center, researchers recently analyzed 38 published studies of the relationship between folic acid, homocysteine and cardiovascular disease and, according to associate professor Shirley A. Beresford, MD, folic acid and vitamin B12 and B6 deficiencies can lead to a buildup of homocysteine.
Canadian researchers reported in the Journal of the American Medical Association (275, 1996: 1893-1896) that men and women with low folic acid have a 69% increase in the risk of fatal coronary heart disease. This 15-year study of more than 5,000 people stressed the need for dietary supplementation of folic acid. Folic acid also has been credited with the potential to protect against cancers of the lungs, colon and cervix. It appears to help reverse cervical dysplasia, the precursor cells to cervical cancer, especially for women taking oral contraceptives, which may cause a localized deficiency of folic acid in the cells of the cervix. According to Shari Lieberman, PhD, and Nancy Bruning, authors of The Real Vitamin & Mineral Book (Avery), folic acid derivatives work with neurotransmitters, the chemicals that permit signals to be sent from nerve fiber to nerve fiber. A lack of folic acid can cause some nervous-system disorders, such as depression, schizophrenia and dementia; it also may be related to some forms of mental retardation. Other supporting roles of folic acid, according to researchers: the formation of normal red blood cells, important for preventing the type of anemia characterized by oversized red blood cells; strengthening and improving white blood cell action against disease; limiting production of uric acid, the cause of gout.
The Best Sources
Many foods are rich in folic acid: beef, lamb, pork and chicken liver, spinach, kale and beet greens, asparagus, broccoli, whole wheat and brewer's yeast. But experts believe that only 25 to 50% of the folic acid in food is bioavailable. Processing also reduces an estimated 50 to 90% of its content. Folic acid supplementation overcomes these obstacles with little risk, as it has no known toxicity. Women taking folic acid who are current or former users of oral contraceptives may require additional zinc. And be sure to augment your folic acid supplement with its synergistic counterpart, vitamin B12.
Focus on Fiber
The American Heart Association came out squarely behind fiber in a June 16, 1997 issue of its journal Circulation: Double your daily intake to lower cholesterol and the risk of heart disease. The American diet is consistently low in fiber, notes Linda Van Horn, PhD, RD, author of the article. Twenty-five to 30 grams a day from foods (or supplements) are not only heart healthy but seem to aid weight control.
Getting enough iron? An estimated 25% of adolescent girls in the United States are iron deficient, according to an October 12, 1996 issue of the British medical journal The Lancet, which reported that girls who took iron supplements performed significantly better on verbal tests than those who took a placebo. "Teenage girls should be regularly tested for iron deficiency because rapid growth and the onset of menstruation during puberty increase the body's need for iron," says Ann Bruner, MD, of the Johns Hopkins Children's Center and a lead author of the study.USDA data reveal that women up to age 50 also tend to get much less than recommended levels of iron, a lack of which leads to anemia, a deficiency of red blood cells, hemoglobin or volume of blood. For kids, deficiency is more common from six months to four years and during the rapid growth spurts of adolescence when the body is growing so quickly that the body's iron stores may sink to dangerous levels. Vegetarian women run the greatest risk for deficiency, as meat is iron-rich; foods like beans, grains and vegetables also contain some iron. Supplements, of course, supply easily absorbable iron. And to absorb iron from vegetarian sources, take vitamin C with your meals. That boosts the amount of this mineral you will take in. Bear in mind, however, that certain folks-older men and post-menopausal women-generally have adequate dietary supplies of iron. Of greater concern, in fact, is excessive iron, and for these folks iron-free multivitamin and mineral supplements are available.
Ante Up the Antioxidants
Antioxidant nutrients help protect the body from oxygen-scavenging molecules called free radicals. The products of pollution, the body's own metabolic processes and other sources, free radicals are linked to heart disease, cancer and other chronic health problems. The most important antioxidants, which include vitamin C, E, beta carotene, and selenium, are often lacking in the American diet. Plus, optimal amounts of vitamin E cannot be consumed from food. You need supplements. The bottom line: even though we live in a land of plenty, you can still miss vital nutrients. So make sure to consume these vital substances.
Source of Missing Nutrients In the search for the nutrients missing from America's diet, one big help is the sprout. The sprout is truly one of nature's heavyweights: fresh, tiny and moist, its power punch of vitamins, minerals, protein, chlorophyll and disease-busting phytochemicals land it in a weight class far beyond that of its full-grown competitors. Size does NOT matter to this nutritional giant. A championship belt currently wraps around the miniscule broccoli sprout, catapulted into the ring by Paul Talalay, MD, professor of pharmacology and molecular sciences at Johns Hopkins University. Dr. Talalay discovered that the seedlings contain substantially more of the cancer-fighting substance sulforaphane than mature plants (Proc. Natnl. Acad. Sci. USA, 94, 10367-10372). Sprouts, the quintessential health food of the Sixties, provide a wonderfully varied and versatile way to get your daily greens. Raw or cooked, strong or mild, vegetable and grass sprouts and their algae cousins add low-calorie texture to recipes and a rich, diverse complement of nutrients and fiber.
Ancient Asia to the Modern Lab
Asians stir-fried sprouts as one of the earliest fast foods as long as 5,000 years ago. The ancient Chinese relied on sprouts for year-round vegetables in colder regions of their vast country. Today, researchers studying sprouts and adult plants have identified their important chemoprotective and other health-bolstering substances. In Paul Talalay's research project at Johns Hopkins, scientists found that three-day-old broccoli sprouts contain up to 50 times more sulforaphane than mature plants, which prompts the body to produce an enzyme that prevents cancer tumors from forming. Uniform levels of the compound saturate the shoots, unlike the chemically uneven adult plants. The Brassica family of broccoli and cabbage is richly endowed with phytochemicals that also help reduce estrogen levels associated with breast cancer. Other phytochemical compounds in the Brassica family are associated with the prevention of stomach and lung cancers. Most of the initial landmark work on phytochemicals' cancer-fighting powers has taken place since 1989 under the aegis of the National Cancer Institute's "Designer Food Program," which isolated, for example, the isoflavones in beans that seem to neutralize cancer-gene enzymes.
Strong Suit: Soy and Spirulina
The isoflavones and phytosterols in soy produce an estrogenic effect that appears to relieve menopausal symptoms and help prevent breast cancer. Soy foods expert Mark Messina, PhD, has done extensive work on the subject, some of which has been published in the Journal of the National Cancer Institute 83, 1991: 541-6. Researchers also have synthesized a bone-strengthening form of soy isoflavones called ipriflavone, following impressive clinical trials in the treatment of osteoporosis (American Journal of Medicine, 95 [Suppl. 5A] (1993): 69S-74S). Spirulina and other micro-algae are fascinating organisms that inhabit a niche between the plant and animals kingdoms. Named for its tiny spirals, spirulina, a blue-green algae, grows in saline lakes but is cultured for maximum nutritional content. In her book Whole Foods Companion (Chelsea Green), Dianne Onstad notes that spirulina contains "the highest sources of protein, beta carotene and nucleic acids of any animal or plant food." Its nucleic acids, she says, benefit cellular regeneration; its fatty acids, especially GLA and omega-3 acids, make it one of the most complete foods. Sprouts, like any other produce, should be rinsed thoroughly before serving. People at high risk for bacterial illness-young children, the very elderly or folks with weakened immune systems-should limit their consumption of raw sprouts. But no matter how you eat them, you may find more spring in your step from these tiny, sprouting nutritional wonders.

We need fat to absorb vitamins, to keep our brains sharp, to survive. But not all fats are our friends. Find out which ones are the heroes and the villains in your diet.
In a lot of cases health fads don't live up to their hype. But the case for consuming more good fats-the omega-3 fatty acids found primarily in fish, flax and hemp oils-is strong and growing stronger. As a nation we eat too little of these good fats, and our health would improve greatly if we relied a little less on the bad saturated fat in burgers, skipped the ugly trans fats in fries and indulged in more salmon and other seafoods.
Fish and the Heart
Need proof? A wealth of research supports fish oil's desirable effects, especially on heart health. While many people believe that heart disease is primarily a problem for men, women who have passed through menopause are just as susceptible to heart problems.
" [Our] findings suggest that all women, and most likely men, would benefit from regular fish intake," says Alice H. Lichtenstein, DSc, director of the Cardiovascular Nutrition Laboratory at Tufts University in Boston. "A tuna fish sandwich counts, as does almost any other type of fish that is baked, broiled, grilled, or poached." But she points out that fried fish, which is often cooked in hydrogenated oils, is not helpful.
In research on more than 200 women, performed at the Jean Mayer US Department of Agriculture Human Nutrition Research Center on Aging at Tufts, scientists found that the arterial blockages among women who dined on fish were less (and impeded blood flow less) than in women who hardly ever ate seafood. Fish was especially helpful for women who had diabetes, a disease that makes you more prone to heart and circulation problems (American Journal of Clinical Nutrition 9/04).
These effects are important: Heart disease is the number one cause of death for women, and older women who suffer from diabetes are particularly susceptible. The number of people with diabetes has been increasing of late, mainly due to the fact that Americans are overweight. Right now about 18 million people have diabetes and another 20 million are expected to suffer this condition in the next four decades.
" This study shows that following the current guidelines of eating at least two servings of any type of fish per week slows down the progression of heart disease in women with coronary artery disease (CAD), especially those who were also diabetic," says Dr. Lichtenstein, coauthor of the study. "We further found that eating one or more servings per week of fish that is rich in omega-3 fatty acids, such as tuna or other dark-fleshed fish, is equally effective."
Dangerous disruptions in heartbeat, known as arrhythmias, may also be affected by fish oil. "[E]xperiments show that fatty acids from omega-3 fish oils are stored in the cell membranes of heart cells and can prevent sudden cardiac death or fatal arrhythmias," notes Alexander Leaf, MD, medical researcher and professor at Harvard University.
Fat for Your Brain
The right kind of fat is also crucial for the function of your nerves and brain tissue, which is 60% to 70% fat. Incorporating omega-3 fatty acids into those cells can help keep your brain firing on all synapses. It may lower your risk of Alzheimer's disease, an irreversible form of mental deterioration that kills 100,000 Americans a year. About a thousand people a day in the US are found to have Alzheimer's, and experts believe that over the next 40 years 14 million of us will be doomed to being enveloped by the mental fog this condition produces.
Research indicates that our brains probably need omega-3 fats for protection against the kind of damage that causes our mental capacities to slip. Once Alzheimer's starts, deterioration accelerates because brain cells start losing these fats.
In experiments performed at the David Geffen School of Medicine at UCLA (Neuron 9/2/04), scientists looked at how a lack of docosahexaenoic acid (DHA, one of the omega-3 fats found in fish), affected the cellular processes that lead to Alzheimer's. They found that the part of brain cells that receive signals from other brain cells, the receptors, are vulnerable to damage from chemical reactions that take place inside the cells. However, DHA offers antioxidant protection against this destruction.
When brain cells were denied DHA, the cells' receptors suffered extra harm. But when fish oil was present, brain cells were protected. In addition, animals that received extra omega-3s were better able to learn and find their way through mazes.
Greg Cole, PhD, senior researcher on this study and a professor of neurology at Geffen, says, "We saw that a diet rich in DHA, or docosahexaenoic acid, dramatically reduces the impact of the Alzheimer's gene [which made the animals more susceptible to Alzheimer's]. Consuming more DHA is something the average person can easily control. Anyone can buy DHA in its purified form, fish-oil capsules, high-fat fish or DHA-supplemented eggs." Fishes rich in omega-3s include salmon, halibut, mackerel, sardines and herring.
Protecting Kids from Asthma
A surprising benefit of omega-3s has been found in pregnant women and their newborns: Pregnant women with asthma who eat fish rich in omega-3s during their pregnancy lower their children's risk of asthma.
Not just any fish will do. The study (American Thoracic Society International Conference 5/25/04) discovered that mothers who ate fish sticks during pregnancy doubled the asthma risk in their kids. " Fish sticks are deep-fried, and they contain omega-6 fatty acids, which encourage inflammation of the airways," says study co-author Frank Gilliland, MD, PhD, professor at the Keck School of Medicine at the University of Southern California. "Oily fish [like salmon and trout] contain omega-3 fatty acids, which appear to be anti-inflammatory, and lead to the reduced potential for developing asthma and allergies."
The USC investigation showed that when women with asthma ate oil-bearing fish during pregnancy, the risk of asthma for their children dropped more than 70%. The more fish that mom consumed, the less likely her baby was to develop asthma. Unfortunately, the study did not find the same benefit in women without asthma.
" A family history of asthma is a very strong risk factor for a child developing asthma," Dr. Gilliland says. "It appears that oily fish interacts with the genes involved in the predisposition to develop asthma, and somehow reduces the risk."
Although most of us try to avoid accumulating unsightly fat around our hips, the right kind of fat plays an integral part in the functioning of our bodies and may even keep us alive. Fats don't get much better than that.

Once frowned on by conventional farmers, organic food has won respect from everyone concerned about the health of both the earth and the people who inhabit it.
Today, organic farming is considered one of the most rapidly growing areas of American agriculture. Organic foods sales topped $9 billion in 2002 and grew about 20%, up to almost $11 billion in 2003 (Organic Trade Association).
So when you buy organic, you join an expanding market that takes advantage of great-tasting, good-for-you food. Long ago, when the practice of farming was first devised, all farming was organic farming. So today's organic movement is bringing farming back to its roots.
But, safe to say, that is not what's motivating most consumers. A main reason for the popularity of organic food derives from the reassurance that organic foods, raised without artificial chemicals and pesticides, cut your exposure to toxic residues. A growing body of research shows organic food is richer in beneficial natural substances, too.
" Organic food and organic farming represent a philosophy that goes beyond just the quality of the food," says Steve Meyerowitz in The Organic Food Guide (Globe Pequot). "It strives to maintain the integrity of the entire food chain-plants, soil, air, water, animals and people. We are all part of the same ecosystem."
By eating organic, you eliminate pollution both from your body and the earth. Because our bodies are made of the animal and plant products we consume, our internal, physiological ecosystem and the earth's environment are inexorably entwined.
Chilling Arctic Evidence
As evidence of this connection, consider what's happened in the Arctic. Researchers who have analyzed Arctic water, ice, snow, soil and plants have found that chemicals used in farming and industry in other parts of the world have traveled north and accumulated in alarming quantity. How and if these chemicals break down depends on sunlight and the amount of organic matter contained in Arctic waters (American Chemical Society, 9/11/03).
" Once pollutants enter the water column, their behavior is poorly understood-particularly the processes that govern their lifetime and concentrations," says Amanda Grannas, PhD, a researcher at Ohio State University. "Such pollutants are now being found in wildlife, from fish to seals to whales, and even in people living in the Arctic."
Dr. Grannas and others looked at the pesticides lindane and hexachlorobenzene (HCB), two chemicals that have migrated to Arctic waters. Lindane is used by American farmers to treat seeds before they are planted. HCB, banned in the US in 1984, is still used in other countries to protect wheat from fungus.
The scientists found that sunlight at the top of Arctic waterways can help break down some pesticides. At lower depths, however, cut off from the sun's rays, pesticides can remain largely intact. In this research, lindane proved to persist much more readily than HCB.
" Lindane is one of the most persistent of pollutants," warns Dr. Grannas. "This could be because it's photochemically inert, whereas pollutants like HCB degrade relatively quickly. The main message is that pollutants can behave quite differently. These pollutants already affect local ecosystems, and could have repercussions for human health."
Organics Means More Benefits
Researchers are also finding that organic produce contains larger quantities of beneficial natural chemicals. For instance, one study (Journal of Agriculture and Food Chemistry 2/26/03) showed that berries and corn grown organically can have almost 60% more polyphenolics. Polyphenolics are antioxidants plants use for protection against disease and which are good for humans. Researchers believe that when crops are grown conventionally, protected by pesticides and herbicides, they produce fewer of these substances. " This really opens the door to more research in this area," says Alyson Mitchell, PhD, assistant professor of food science at University of California at Davis, who led the research.
These scientists compared levels of total polyphenolics and vitamin C content in marionberries (a type of blackberry) and corn grown organically, sustainably or conventionally, and also looked at chemicals in strawberries grown either sustainably or conventionally. (Sustainable farming falls between the organic and conventional methods, and concentrates on farming that's self-sufficient-for example, feeding cows hay you've grown yourself, and then using the cows' manure to fertilize another crop.) They found that organic marionberries and corn had 50% to 58% more polyphenolics. The sustainably grown strawberries had 19% more polyphenolics. And all the organic produce contained more vitamin C.
Self-Defense for Plants
According to Dr. Mitchell, the organic crops contained the high levels of polyphenolics you'd expect to find in wild plants, suggesting that, on conventional farms, pesticides reduce the necessity for plants to make these protective, natural chemicals. " If an aphid is nibbling on a leaf, the plant produces phenolics to defend itself," she says. "[P]henolics guard the plant against these pests."
Pesticides kill insects like aphids and thereby reduce the antioxidants produced by the plant. " This helps explain why the level of antioxidants is so much higher in organically grown food," Mitchell says. "By synthetically protecting the produce from these pests, we decrease their need to produce antioxidants. It suggests that maybe we are doing something to our food inadvertently.
" We know [polyphenolics] are beneficial [to human health], but we don't know what types of polyphenolics are beneficial, or in what quantities," Dr. Mitchell notes. " Originally, the question was just really intriguing to me. I found that the higher level of antioxidants is enough to have a significant impact on health and nutrition, and it's definitely changed the way I think about my food."
Vitamin C in Oranges
Meanwhile, nutritional research on the vitamin C in oranges turns up similar results: organic oranges are richer in this antioxidant nutrient than conventionally grown oranges (Great Lakes Regional Meeting, American Chemical Society, 6/2/02).
The more common supermarket oranges are significantly larger than organically grown oranges, and they have a deeper orange color. Because of their larger size, "we were expecting twice as much vitamin C in the conventional oranges," says Theo Clark, PhD, chemistry professor at Truman State University in Kirksville, Missouri.
But when he isolated the chemicals in the oranges and further refined his search with nuclear magnetic resonance (NMR), spectroscopy demonstrated that organically grown oranges possess 30% more vitamin C than the conventionally grown fruits-even though they are only about half as large.
Dr. Clark isn't sure why organic oranges are richer in vitamin C, but he says, "...[W]e speculate that with conventional oranges, [farmers] use nitrogen fertilizers that cause an uptake of more water, so it sort of dilutes the orange. You get a great big orange but it is full of water and does not have as much nutritional value.
" However, we can only speculate. Other factors such as maturity, climate, processing factors, packaging and storage conditions require consideration." Along with analyzing oranges, Dr. Clark and his research team questioned about 70 people to measure their concept of the nutritional value of organic oranges. In this survey, 85% of the respondents thought that organic oranges have a higher nutritional content than conventionally grown fruit.
Dr. Clark's laboratory work shows that "they were right on." In Dr. Clark's view, these issues are important because consumers have a right to know the real nutritional content of organic produce, and the fact that analyses show that organic fruit has much more vitamin C validates the benefits of eating organic.
Both plants and animals protect themselves from disease with many of the same chemicals. The natural substances that, in a farmer's field, defend vegetables from insects and microbes before they are harvested for your dinner go to work defending your body after you eat and digest them.
When you eat organic you bolster your health with more of these natural wonders. No wonder organic is becoming so popular!

Do you or don't you read food labels when you shop? If you don't, you're missing out on a prime source of information about your meals. If you want control of your health, focus on package labels and pick your foods carefully.
The large print on food labels focus on what are called macronutrients: carbohydrates, fat and protein. Some of the smaller categories convey information about vitamins, fiber, and minerals, as well as the totals of fat and saturated fat contained in food. So, you have no excuse for claiming ignorance about your diet: the truth is in the labels.
Food labels can be confusing to the uninitiated. Go into a big food store and you can be faced with what seems to be a forest of food information: more than 15,000 labels. Add to that fact that every year more than 30,000 new food products can be introduced to the marketplace, and what you're faced with is a jungle of food labels.
That overwhelming wealth of food label information doesn't mean you should throw up your hands in dismay and give up reading and deciphering labels. You should arm yourself against that sea of labels with knowledge and, by understanding them, end your confusion and build your health.
A hundred years or so ago, food labels were only required to list the name of the food contained inside the package. The contents, quality and processes used to make the food were often a mystery. Little or no disclosure to consumers was made about how their food was created.
By the early 1920s, the federal government, via the Food and Drug Administration (FDA), began requiring food companies to list the net weight of food on labels as well as the names and addresses of food processors and distributors. Finally, by the 1970s, listing basic nutritional information was mandated in a uniform way so that shoppers could have some basis for comparing foods. Then, in 1990, the Nutrition Labeling and Education Act made major alterations to the kinds of labels that had to be included on food packages.
The FDA and the US Department of Agriculture (USDA) required significant changes to food labels that were supposed to make it easier for consumers to eat healthier diets. The labels requirements of 1994 included five major changes:
Consumer questions regarding food labels have led researchers to look into ways to help shoppers comprehend what food labels tell them. These studies are designed to help consumers match up their nutrition requirements with the foods they buy.
For instance, at the University of Illinois at Urbana-Champaign, scientists have devised a label tool called See It, Do It, Teach It to help people improve their diets through comprehension of food label information. " One of the goals of the project was to help...teenaged girls and menopausal women understand how they can get the daily requirement for calcium into their diet in order to help prevent osteoporosis," says Karen Chapman-Novakofski, PhD, associate professor and nutritionist in the school's College of Agricultural, Consumer and Environmental Sciences.
According to the See It, Do It, Teach It program, you should think of food labels as consisting of two sections:
" Much more attention has been paid to what people should limit rather than the nutrients needed. The average consumer doesn't know, for instance, how much vitamin A 10% of the Daily Value is, or how much calcium 25% of the Daily Value is," Dr. Chapman-Novakofski says.
Upping Calcium Intake
In their eight-week study of people's calcium consumption (Journal of Nutrition Education and Behavior 4/04), the University of Illinois research team found that people didn't know how much calcium was in the food they ate.
After the initial part of the study, in which participants were shown how to look for calcium on labels, "the post-test revealed that the participants significantly increased their calcium intake to 821 mg per day, up from 372 mg per day," notes Dr. Chapman-Novakofski.
" That's a lot closer to the daily requirements of 1,200 mg per day for men and women over 50, 1,000 mg for men and women aged 19 through 50 and 1,300 mg per day for [youths aged] 9 to  years," she adds.
Parts of the Label
The first item at the top of a nutrition food label tells you the portion size that the label measures. An important point to remember: these sizes are determined individually by each manufacturer. Consequently, all of the other values on the label are measured per portion.
So, if you are comparing foods made by two different companies that employ very different portion sizes in their nutritional calculations, your label comparisons may be complicated.
Another fact to be aware of: the listed portion size may be an odd division of the food within the container and not reflect a common-sense division. For instance, some food packages are labeled as containing 2.5 portions.
And, to make things even more interesting, small boxes of candy that you might think contain barely enough for one helping may be labeled by the manufacturer as having two or more portions. As a result, if you eat the whole box, you often have to at least double the number of indicated calories, etc. to figure out the nutrients and calories you are consuming.
The section of the label that notes calories, calories from fat and percent daily values is listed under the portion size. Here you are told how many calories you consume when you devour one portion and how many of those calories are derived from fat.
This label focus on fat originated when consumers and dietitians were very concerned about Americans' fat consumption and hadn't yet switched their focus to carbohydrate consumption as a prevalent dietary health priority.
Also included on the label: the daily value percentages aimed at showing you how much out of a total day's intake of various nutrients a portion bestows upon you.
These percentage numbers are based on a theoretical analysis of a diet that contains 2,000 or 2,500 calories a day. (A notation at the bottom of the label tells you whether the calculation is based on 2,000 or 2,500.)
If you've been eating a low-carb diet (or are planning this type of diet), the section of the label that lists carbohydrates may be especially useful. Under this heading, the label lists the totals for fiber and sugar.
No matter what diet you are on, dietary fiber is desirable, since it represents indigestible carbohydrates that both pass through you without conveying any calories and keep beneficial bacteria in your digestive tract healthy.
Most people want to limit their sugar totals, however, since this nutrient may raise your risk of being overweight and, when you eat a lot of it, may contribute to immune problems.
Interestingly enough, when food chemists compute what is in food, they perform lab tests known as assays to distinguish its ingredients. (The manner in which these tests are performed are very strictly regulated by the FDA.)
In fact, just about every nutrient listed on a food label is determined by laboratory test except for the carbohydrate content: the amount of water, fat, crude protein and ash are determined this way. But the total carbs are computed by simply subtracting the total of the other ingredients from the total amount of food, a kind of process of elimination.
So while fat and protein are measured with precise lab tests, carbohydrate totals are figured by the leftovers. (The water and ash, by the way, are not usually listed on food labels.)
Within the general carbohydrate group, are several categories of carbohydrates that produce very different effects in your body. These categories can be divided into sugar, sugar alcohols, dietary fiber and a collection of various chemicals that include organic acids, flavonoids, gums, lignans and others.
According to the FDA, the food label only has to list the total carbs, sugar and dietary fiber. But some food companies now list things like sugar alcohols.
Blood Sugar Effects
Not all of these types of carbohydrates behave the same way in your body. For example, when your body digests table sugar, it turns immediately into blood sugar. So sugar and most other carbohydrate is what we call "digestible carbohydrate." Other carbs, such as sugar alcohol or glycerine, can be digested but do not turn to blood sugar. Still others, such as dietary fiber, are indigestible and pass through your body without impacting your blood sugar level.
To date, the FDA has not focused on these important biochemical differences and treats all carbohydrates alike. This means that when you look at a food label, you do not see a number for the carbs that impact your blood sugar level. To do so, simply subtract the number of grams of fiber from the total number of carbohydrate grams.
Recently, the phrases "low carb," "net carb" and "impact carbs" have begun to appear on food labels. These are not defined by the FDA; they were put on labels by by companies to help consumers pick out foods that are acceptable on low-carb diets. To arrive at the total of net carbs, food companies subtract the total amount of fiber and sugar alcohol from the total carbohydrates.
Since the body cannot digest fiber, this nutrient (which is still important for good health) is not calculated into the total amount of carbohydrates. As for sugar alcohols, while-technically speaking-these are carbs and they do have calories, they have little effect on blood sugar and usually are not counted in total carbohydrates.
According to the American Dietetic Association, people with diabetes who are managing their blood sugars using the carbohydrate counting method should "count half of the grams of sugar alcohol as carbohydrates since half of the sugar alcohol on average is digested.
" Fiber is not digested, however. If the serving of food has more then 5 grams of fiber one should subtract the grams of fiber from the total carbohydrate grams." As you can see, when it comes to food, as in most things, knowledge is power. If you want power over your health, you need power over the food you eat. The road to that power is by reading food labels. What's in the food you're eating every day may surprise you.

Got chicken? Americans can't seem to get enough of this bird. Last year each of us ate, on average, just about 80 pounds of chicken, a whopping increase over the 49 pounds we each devoured in 1980 and an eight-pound increase from 1995. Part of this food's popularity comes from its lean image as a healthier, less fatty alternative to red meat (don't forget to take the fatty skin off). Chicken's also a cheap protein source: At many popular supermarkets you'll find weekly specials at about a dollar a pound.
But at health food markets, chicken can cost upwards of $1.69 a pound. These birds may be touted as raised in an organic, stress-free environment and on a vegetarian diet, free of antibiotics. For many people, this poultry is a better buy.
The Alternative Chicken
Most of the supermarket chicken you pick up in grocery refrigerated cases are broilers, birds bred to mature in about eight weeks. In comparison, in the '60s, chickens needed 14 weeks to become adult poultry. Conventionally-raised broilers eat grain mixed with whatever's cheapest on the market, such as recycled cooking oil that's been used to fry fast foods and animal parts.
These birds reside in chicken coops the size of football fields and don't see the light of day until transported to the slaughterhouse. On the other roost, alternatively raised chickens are brought up in a variety of ways (see box), but usually enjoy a more relaxed life and diet.
Chickens on the farm receive antibiotics for two reasons: To fight off the diseases that can run rampant through a crowded chicken coop and to encourage faster growth.
Antibiotics Stimulate Growth
Mark Cook, PhD, professor of animal science at the University of Wisconsin at Madison, explains, "Gut bacteria trigger an immune system assault, which makes chickens a little feverish, suppresses appetite and slows growth. Antibiotics stimulate growth indirectly, by keeping bacteria levels down, and preventing the immune reaction." When birds get sick, they often get dosed with even more antibiotics.
This widespread antibiotic use has come home to roost and may contribute to the growth of bacteria that, frequently exposed to chemicals, have evolved ways to keep from being killed by pharmaceuticals.
This development threatens human health. Bacterial infections that people contract, once easily cured by penicillin or other drugs, are now tougher to eradicate. For instance, campylobactor, a common bacteria found in chicken, and responsible for some food poisonings, now demonstrates signs of resistance to drugs like floroquinolones. A powerful class of antibiotics, floroquinolones used to dependably conquer this infection.
"Floroquinolones are an extremely important class of antibiotics, used to treat many types of infections such as urinary tract infection, a wide variety of gastrointestinal illnesses, pneumonia, almost everything," says Kirt Smith, DVM, PhD, epidemiologist, acute disease epidemiology section, Minnesota Department of Health.
A study by Dr. Smith, published in the New England Journal of Medicine (340, 1999: 1525-32), showed that the percent of floroquinolone-resistant campylobactor appearing in infected people in his state-Minnesota-climbed from a little over 1% in infected people during 1992 to 10.2% in 1998. He and other scientists strongly suspect that the rise is a direct consequence of the Food and Drug Administration's (FDA) decision to allow floroquinolones in poultry feed beginning in 1995.
Although it was nearly impossible for Dr. Smith to trace the precise origin of campylobactor poisoning, he believes chicken was usually the source-and not just U.S. chicken. Many of the infected people had returned from Mexico and other countries.
"Sales of floroquinolones for poultry use in Mexico has increased dramatically," notes Dr. Smith.
Many alternative chicken producers do not use any antibiotic-laced feed at all. Other farmers adjust the feed to lower gut pH, making it more acidic and lowering chances of bacteria. At the U. of Wisconsin, Dr. Cook is developing antibodies to suppress the immune response to bacteria so chickens won't need antibiotics to spur growth. Buying and dining on chicken raised with little or no antibiotics could beneficially lower your risk of contracting a hardy bacterial infection. Better to catch campylobactor from an antibiotic-free chicken than a conventional chicken, speculates Dr. Cook. "There's less likelihood the bug will be resistant, and a better chance your problem can be cured with antibiotics," he explains.
And, looking beyond your own immediate health risk, buying antibiotic-free chicken makes a small contribution to stopping the spread of antibiotic resistant bugs. A Matter of Taste Conventionally raised chickens get little exercise and live only eight weeks, so they're tender but bland.
"There's not much taste in a modern chicken. Free range or organically grown, older birds usually have more taste," notes Dr. Cook.
The days of barnyard chickens happily clucking and strutting around in picturesque nature have disappeared with the family farm. Today, chickens lead a meager existence. After hatching, baby chicks are tossed into a gigantic hen house that is home to up to 30,000 birds. Their short lives are lived within the United States Department of Agriculture (USDA) mandated 3/4 square foot per chicken. In that squeeze, birds can catch "chicken influenza," especially in winter when it's too cold to let in much fresh air.
Laying hens don't experience much more of a peaceful existence. These birds live their years with about five other hens, so crowded they can't flap their wings. Cages, suspended in the air, let eggs roll into a holding area. So they don't peck each other, hens are often debeaked, a painful process that can cause infection.
Hens go through natural laying and "dry" cycles. Growers manipulate this cycle by "forced molting," depriving hens of food for four to 14 days to keep them constantly laying. By the end of two years, hens are worn out. Their inactivity weakens their bones enough that electrical stunning, the usual method for knocking chickens out before slaughter, shatters their bones. So some wind up being plucked and boiled alive, according to Mary Finelli, program director for farm animals and public health at the Humane Society of the United States. The meat from these hens, tougher than other birds, was probably in your deli lunch sandwich. It's also used in the school lunch program or may end up in dog food.
"Generally, organically-grown broilers and hens have it better because room to move is part of the organic certification process," says Finelli. Finelli suggests visiting chicken suppliers to find out how chickens are treated. Or, she advocates a Humane Society book listing reliable firms. For a local producer call the society: 202-452-1100. According to a Consumer Report report, some growers force chickens out the last week of their lives to brand them "free range." So free range isn't a prime standard for choosing a decently raised chicken. However, turkeys thrive outdoors, so choosing free-range turkey is often a good idea for better tasting poultry.
In any case, organic is your best bet for chicken without pesticides. Make it your main choice for your 80 pound yearly consumption!

What's in your food, and where does it come from? To most American consumers, that question may seem unimportant. But the answers might surprise you. Your food's origin and processing can make a big difference in its nutritional value, for better and for worse. Increasingly, concern over the quality of food and its influence on health are persuading shoppers to take a greater interest in their food. The result: More visits to natural food stores and more sales of organic food.
Once upon a time, food used to be just food. Crops were grown on family farms, and animals were raised in barnyards. But today, corporations have conquered food production in a big way. Agribusiness is just that-a big business in which animals and plants are treated like assembly-line items and raised on factory farms.
While the term "organic" gets tossed around endlessly in the media, the term is often misconstrued. According to the United States Department of Agriculture (USDA), "Organic food is produced by farmers who emphasize the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations. Organic meat, poultry, eggs and dairy products come from animals that are given no antibiotics or growth hormones."
In addition, organic farmers generally do not use pesticides, sewage sludge or synthetic fertilizers. This type of food is also produced without genetically modified organisms and is not subject to radiation used to zap the bugs on food. Today, USDA-approved certifying agents inspect the farms where organic food is raised to ensure organic standards are followed. In addition, the companies that process food and handle organic food have to be USDA-certified. Meeting these standards allows companies to use the USDA's organic label on foods that are at least 95% organic in origin. Labels for foods that contain between 70% and 95% organic content can use the words "Made With Organic Ingredients," but cannot use the seal.
While the debate over the nutritional benefits of organic food has raged for decades, recent research is beginning to turn up evidence that organically grown fruits and vegetables may contain extra helpings of vitamins and other nutrients. A study at Truman State University in Kirksville, Missouri, found that organically grown oranges contain more vitamin C than conventional supermarket oranges (Great Lakes Regional Meeting, Amer Chem Soc, 6/02).
Theo Clark, PhD, the Truman State professor who investigated the organic oranges, says that when he and his students began their research, "We were expecting twice as much vitamin C in the conventional oranges" because they are larger than organic oranges. To his surprise, chemical isolation combined with nuclear magnetic resonance (NMR) spectroscopy revealed that the organically grown oranges contained up to 30% more vitamin C than the conventionally grown fruits-even though they were only about half the size. "We speculate that with conventional oranges, (farmers) use nitrogen fertilizers that cause an uptake of more water, so it sort of dilutes the orange. You get a great big orange but it is full of water and doesn't have as much nutritional value," Dr. Clark says. "However, we can only speculate. Other factors such as maturity, climate, processing factors, packaging and storage conditions require consideration."
If you want to avoid pesticide residues in your food, research shows that going organic can make it much less likely that you or your family consumes these unwanted chemicals. Research, for instance, into the diets of children (Enviro Hlth Persp 3/03) shows that dining on organic fruits and vegetables, and organic juice, can lower kids' intake of pesticides.
These scientists took a look at the organophosphorus (OP) pesticide breakdown products in the blood of kids ages two to five who ate conventional supermarket produce and compared it with the OP found in organic kids.
The children on the organic diet had less OP in their blood than the other kids. As a matter of fact, the children on the conventional diet had six times the dimethyl metabolites, dimethyl being a pesticide suspected of affecting nerve function and growth. "Consumption of organic produce appears to provide a relatively simple way for parents to reduce their children's exposure to OP pesticides," note the researchers. "Organic foods have been growing in popularity over the last several years," says Jim Burkhart, PhD, science editor for the journal that published the study. "These scientists studied one potential area of difference from the use of organic foods, and the findings are compelling."
On the way to tonight's dinner, researchers have created genetically modified organisms (GMO), plants and animals that have been transgenically engineered. In the food world, that means organisms containing genes inserted from another species. Chances are if you eat food purchased at the typical supermarket, those comestibles contain GMO ingredients. In the United States, food companies are not required to label for GMO content.
A growing number of American consumers are upset about not being told about the GMO products in their food. But industry scientists, worried that informed consumers may someday turn their back on GMO foods, consider consumer ignorance to be an acceptable state of affairs.
For instance, the American Society of Plant Biologists (ASPB) is fighting regulations that would require GMO labeling. According to ASPB President Daniel Bush, PhD, of the University of Illinois at Urbana, "The language...(in these types of regulations) is based on a system of beliefs of what is 'natural,' rather than a scientifically defined set of criteria focused on content and nutritional value. This is a radical departure from food labeling up to now, which is designed to maximize useful information for consumers concerning what is in the food they are buying."
Dr. Bush continues, "There are, of course, examples of voluntary labeling standards in the food industry that reflect how foods are processed, such as organic foods. The voluntary organic labeling standards were sought by the organic food industry. Kosher foods are also labeled as having been produced in accordance with specific beliefs. However, mandatory labeling of targeted production methods has never before been required and we believe would obscure rather than clarify important issues of food safety."
In other words, Dr. Bush opposes GMO labeling because he feels it would unnecessarily stigmatize GMO food items. Others are not so sanguine about the safety of GMO foods.
The arguments against GMO foods include:
These types of risks have motivated industry groups to urge more regulation of GMO crops. The Food Marketing Institute, the Grocery Manufacturers of America (GMA) and the National Restaurant Association, plus seven other food groups, are worried that GMO plants grown to produce pharmaceutical drugs could contaminate the food supply and destroy consumer trust in food.
Mary Sophos, a vice president of GMA, warns, "To minimize the possible risks, a clear system of regulatory enforcement and liability needs to be in place. Until then, no permits for new field trials or for commercialization should be issued because there is no room for trial and error."
These food industry groups have voiced their concerns to the Food and Drug Administration (FDA) and the USDA. Last year, the USDA forced ProdiGene Inc., a biotech firm, to dispose of 500,000 bushels of soybeans contaminated with a drug meant to treat diabetes. What are the chances of more GMO accidents? No one knows. But if you buy and eat organic, you minimize your risk and maximize your chances of dining on safer food.

Most folks wouldn't seek the distressing distinction of suffering chronic fatigue syndrome. Aside from a dizzying array of discomforts associated with the malady, the lack of a definitive cause, and few remedies offered by the medical establishment, scornful skeptics lob accusations of laziness or boredom or just plain moodiness. "Snap out of it!" they say, with little sympathy or understanding. "Just get moving!"
But if you're one of more than 3 million Americans affected by chronic fatigue, you know your problem is not all in your head. Your symptoms are real and they extend far beyond mere tiredness. In addition to a debilitating sense of fatigue that can make everyday existence feel like an overwhelming struggle, you may suffer from impaired concentration and memory, recurrent sore throats, nagging headaches, muscle and joint pain, swollen lymph nodes and fitful sleep. The persistence of any one of these effects alone could be debilitating, but the overall diminished capabilities of the chronic fatigue sufferer can become the most discouraging aspect of the disease.
But before you give up hope on kicking this energy-sucking ailment, look to natural ways to boost your immune system and regain your stamina for a more healthy and productive life. New research points to powerful, energy enhancing supplements which, combined with a nutritious diet and stress reducing techniques, can help you reclaim your body from a swamp of sluggishness.
Part of the public's misconceptions about chronic fatigue syndrome (CFS) may stem from vague definitions of exactly what it is and its causes.
In the '80s, CFS was often mentioned in the same breath as the Epstein-Barr virus, which garnered much notoriety as the "yuppie flu": a state of chronic exhaustion that often plagued young, overworked professionals, as the media trumpeted. CFS was initially thought to be the result of the Epstein-Barr virus, and the two were often considered to be the same thing. Since the Epstein-Barr virus causes mononucleosis, the term "chronic mono" was also thrown around to refer to long-lasting states of fatigue.
Today, CFS is defined as a separate disorder from the Epstein-Barr syndrome. Researchers have found that CFS is not caused exclusively by the Epstein-Barr virus or any other single infectious disease agent. According to the Centers for Disease Control (CDC) in Atlanta, CFS may have multiple causes, in which viruses or other infectious agents might have a contributory role. Some of these additional possible culprits include herpes simplex viruses, candida albicans (yeast organisms), or parasites.
According to the CDC, a person can be definitively diagnosed with CFS when she or he experiences severe chronic fatigue for six months or longer that is not caused by other medical conditions, and must have four or more of the following problems recurrently for six consecutive months: tender lymph nodes, muscle pain, multi-joint pain without swelling or redness, substantial impairment in short-term memory or concentration; sore throat, headaches, unrefreshing sleep and postexertional malaise lasting more than 24 hours.
Even if you are not diagnosed with CFS, you could still probably use some help in fending off fatigue. You may suffer from another poorly understood condition like fibromyalgia, which causes similar symptoms of exhaustion and pain with additional stomach discomfort. You may cope with another ailment like hypoglycemia or low thyroid function that zaps your energy. Or you could be like almost every stressed-out American adult trying to do it all at the expense of your well-being. Though researchers still search for a definitive cause for CFS, one thing is certain: Constant stress and poor nutritional habits weaken the immune system's ability to ward off a host of debilitating viruses and organisms. So before you run yourself down and succumb to a chronic condition, learn how you can build up your defenses now.
Some of the most exciting new research in CFS treatments focuses on NADH or Coenzyme 1, an energy-enhancing nutritional supplement. This naturally-occurring substance is present in all living cells including food, although cooking destroys most of it. Coenzymes help enzymes convert food and water into energy and NADH helps provide cellular fuel for energy production. A recent study conducted at Georgetown University Medical Center in Washington, DC, and reported in the February 1999 issue of The Annals of Allergy, Asthma & Immunology, showed that chronic fatigue sufferers improved their condition significantly by taking Enada, the stabilized, absorbable, oral form of NADH. The researchers found that 31% of those who took the supplement achieved significant improvement in relief of their symptoms, and a follow up study showed that 72% achieved positive results over a longer period of time.
Coenzyme-A and Coenzyme Q-10 (Co-Q10) are related coenzymes also necessary for energy production.

Kumquat juice is supposed to help clear up bronchitis. Lemon juice with a pinch of table salt eases a sore throat. Lime juice in warm water soothes aches and cramps from the flu. Tangerine juice can break up mucous congestion in the lungs. Along with citrus' vitamin C, these fruits also supply carotenoids, antioxidants that provide disease-preventing benefits. Citrus also often contain calcium, potassium, folate (a B vitamin that fights against heart disease), iron and fiber.
Fruits are loaded with phytochemicals, naturally occurring chemicals that give fruit their vibrant colors. Yellow, red and orange fruits are also high in flavonoids, like quercetin, a substance which fights cancer. Basic Detox By Harriet Epstein Trying to stay healthy and clean in a dirty world can prove a difficult task. The rise of modern industry and agriculture has meant the widespread accumulation of toxins in our environment that can cause health problems.
As Kenneth Bock, MD, and Nellie Sabin point out in their book The Road to Immunity (Pocket), "Fat soluble chemicals are readily absorbed by the body but are difficult to excrete. To be excreted, they must first be enzymatically converted into water-soluble substances. Some of them can't be converted at all."
Bock and Sabin point out that a 1990 survey by the United States Environmental Protection Agency (EPA) that looked at people's tissues found that everyone the agency examined had styrene (a chemical used to make plastic) and xylene (a paint and gasoline solvent) stored in their bodyfat.
The toxins that you encounter every day are not only present in air and water, but also may be found in food and medicines. If we eat beef that's been exposed to pesticides, those chemicals may be shunted into our bodyfat. Pesticide residues in fruits and vegetables may end up in a similar place.
To cope with chemicals, the human body has evolved methods for detoxifying. When we breathe out we often release inhaled toxins. Other toxins are purged through urine, feces and sweat.
One of the chief organs responsible for cleansing the body is the liver. This organ utilizes a pair of chemical pathways for breaking down and eliminating toxins. In our hectic, industrialized world, this flow of toxins can overwhelm the liver's ability to detoxify. In addition, the dual processes the liver uses to eliminate noxious substances may become unbalanced, allowing toxins produced by one pathway to build up to dangerous proportions.
Once liver function falters, toxic havoc ensues. Toxins may remain in the body, often stored indefinitely in bodyfat. The body's detoxifying systems may be swamped with toxins.
In protecting the liver and enhancing its detox functions, many naturopathic practitioners recommend the herb milk thistle (silybum marianum). According to Steven Bratman, MD, and David Kroll, PhD, authors of the Natural Health Bible (Prima), milk thistle helps the liver cope with its toxic load. Consequently, milk thistle is frequently used in Europe for liver problems like jaundice.
Bratman and Kroll point out that milk thistle "is one of the few herbs that have no real equivalent in the world of conventional medicine." As Lise Alschuler, ND, medical director at the Bastyr Natural Health Clinic, told Natural Digest, "Milk thistle protects the liver against toxic damage (and) helps prevent damage to the rest of the body."
The compounds in milk thistle that help zap toxins, known as silymarin, protect the liver by binding with substances that would otherwise interact with the liver and slow its function. They also help the liver repair itself and regenerate new liver cells.
As an extra bonus, silymarin acts as an antioxidant, protecting liver cell membranes from oxidative damage.
Dandelion has a place as another traditional treatment for toning the liver and boosting the body's filtration system. The leaves are a cornucopia of antioxidants and nutrients including B vitamins, vitamins A, C and D, plus boron, silicon, potassium, magnesium and zinc. They help detoxify by acting as a mild diuretic: they cause the body to eliminate excess fluid.
But herbalists worldwide have found the compounds in dandelion root most useful for helping alleviate liver and gall bladder malfunction. (If you think you suffer these difficulties, consult your health practitioner.) Two unique and helpful natural substances found in dandelion root are chemicals called germacranolide and eudesmanolide. The root, according to the Natural Health Bible, has traditionally been used to speed up a sluggish or congested liver as well as detoxing the body by eliminating constipation. Research indicates dandelion root may stimulate bile flow (Arzneimittel -forschung 9, 1959: 376-378).
Juniper berries (Juniperus communis), may also be taken with dandelion as a diuretic. This botanical, often used to combat urinary tract problems, is also an anti-inflammatory (Phyto Res 1, 1997: 28-31).
Heavy metals rank as dangerous toxins unleashed by modern industry. As Michael Murray, ND, and Joseph Pizzorno, ND, explain in the Encyclopedia of Natural Medicine (Prima), metals like lead, mercury, cadmium, arsenic, nickel and aluminum can "accumulate within the (body) where they can severely disrupt normal function."
Public health experts estimate at least one in five Americans has been a victim of heavy metal poisoning. Lead may be the most common villain. In your everyday life, you may be ingesting metals from your cookware, from pesticides, cigarette smoke, dental fillings, polluted fish, and chipping house paint.
Signs that you may suffer from toxicity linked to heavy metals: Unusual fatigue, Persistent headaches, Unexplained muscle pains, Anemia, Ringing in the ears or dizziness and Tremors.
Of course, if you think you suffer from heavy metal poisoning, you should see a knowledgeable health practitioner as soon as possible. Murray and Pizzorno recommend an array of precautions to protect yourself against heavy metals in the environment:
Take a daily multivitamin and mineral.
Take extra amounts of vitamin C and B-complex.
Take amino acids that contain sulfur (taurine, cysteine and methionine) and high sulfur foods like onions and garlic (or supplements). (Consult your pharmacist of health practitioner before taking individual amino acids.)
In addition, Leo Galland, MD, in his book The Four Pillars of Healing (Random House) offers these tips for keeping your digestive tract functioning at top capacity:
Take supplements of lactobacil-lus acidophilus and lactobacillus plantarum, friendly bacteria that in-habit the large intestine. These microorganisms can help break down toxins and eliminate them.
Use aspirin and ibuprofen as little as possible. They increase the permeability of the digestive system, allowing allergens and other problematic substances to enter the body.
Do not use antacids. The stomach's acidic environment is designed to kill ingested bacteria and parasites.
To fight digestive problems or heartburn, cut back on saturated fat; eat smaller meals. Chewing on calcium tablets after meals may help. Foods that can exacerbate heartburn include coffee, alcoholic beverages and very spicy foods.
Dr. Galland also recommends not eating for four hours before bed.
Environmental Free Radicals
Detoxing the body may also require taking antioxidant nutrients to fight off what are called free radicals.
Free radicals are caustic molecues thought to be involved in causing many chronic problems such as cancer and heart disease. Free radicals are created within the body and its cells every time a metabolic activity takes place. While the human body has developed its own mechanisms for defending itself against these byproducts of metabolism, exposure to pollution, radiation and other toxins may overburden the body's free radical burden. Scientists believe that taking extra antioxidant nutrients like vitamins C and E and carotenoids (natural substances found in many vegetarian foods) may help prevent damage by free radicals.
Environmental oxidizing agents include ionizing radiation (from industry, sun, cosmic rays, x-rays) ozone and nitrous oxide (from auto exhaust) heavy metals (mercury, cadmium, lead) and cigarette smoke, along with other chemical and compounds from food, water and air. Free radicals are believed to play a role in more than sixty different health conditions, including the aging process, cancer and arteriosclerosis. (Proc Natl Acad Sci USA 1993;90:7915-7922).
The good news? Reducing exposure to free radicals and increasing intake of antioxidant nutrients can shrink the risk of these health problems.
"Antioxidants can't get rid of heavy metals and solvents," says Dr. Glidden, "but they do cut down on the damage they do while they're there. As toxins wander through your body, they generate metabolic reactions, resulting in free radicals. And anti-oxidants mop them up." The liver is the last line of defense in handling toxins; supplements help it regenerate itself.
The body itself does produce enzymes like Superoxide dismutase (SOD) catalase, and glutathione peroxidase which can defend against and defuse many types of free radicals.
Supplements of these compounds are also available to augment the body's supply.
These building block nutrients include the minerals manganese, zinc, and copper for SOD and selenium for glutathione peroxidase. Many vitamins and minerals act as antioxidants. Dr. Crinnion recommends a multivitamin with "a lot of B, especially magnesium."
Since chlorinated pesticides like DDT "rob the body" of B1 and Vitamin A, he says, it's a good idea to supplement these as well.
In addition, acidophilus, a beneficial bacteria that grows in the digestive tract (and found in yogurt) may restore immunity hurt by pollutants. A study on women with recurrent vaginal candidiasis found that acidophilus cut their infections by 300% (Annals Int Med 1992; 116:353-357.)
Another immunity enhancer, colostrum, a natural immune enhancer that promotes cellular repair (Food Res Intl. 1995, 28(1):9-16) can also help the immune system battle pollution.
Vitamin C vs Pollution
A study of vitamin's C's antioxidant properties, conducted by University of Buffalo epidemiologists, and presented at the Annual Meeting of the Society of Epidemiologic Research, revealed that people with higher levels of vitamin C in their blood serum have lower levels of a marker of oxidative stress.
"It is well known that oxidative stress (cell damage caused by free radicals) plays a role in arteriosclerosis, cancer, pulmonary disease and other chronic conditions," said Holger Schunemann, M.D. a research assistant professor of social and preventive medicine at the University of Buffalo and lead author on the study.
"In this population, vitamin C was negatively associated with oxidative stress, suggesting it may play a role in protecting against these diseases." Vitamin C is the "greatest antioxidant," says Dr. Crinnion. "It has even been shown to clear lead from the blood."
A powerful fat-soluble antioxidant, Vitamin E scavenges free radicals protecting cells from oxidative damage. Vitamin E, "reverses toxicity of various toxic chemicals," says Dr. Walter Crinnion, "it is also a stabilizer of membranes." A study published in the American Journal of Clinical Nutrition regarding antioxidant vitamin supplementation and lipid peroxidation in smokers even indicates that an antioxidant-supplemented drink can reduce lipid peroxidation and susceptibility of LDL to oxidation in smokers and may ameliorate the oxidative stress of cigarette smoke.

Unfortunately, completely avoiding toxins in today's world is probably impossible. Civilization and toxic chemicals accompany each other hand in rubber-glove-encased hand.
