Artificial sweeteners are food additives intended to replace the sweetness of sugar without the calorie intake. There are also natural sweeteners that can replace sugar, so which should you choose? Natural sweeteners such as sugar, honey and grape juice are well known, although there are also the less well known, but much more effective, sucanat and stevia. Sucanat is dried unrefined cane sugar, and unlike refined sugar retains the molasses. Stevia, on the other hand, is a shrub, native to Paraguay, the leaf of which contains a non-sucrose sweetener, 300 times the sweetness of sugar, and which is not absorbed by the body. It is a sweetener pure and simple, with no proven health issues. It is also Japan's most popular sugar substitute. Artificial sweeteners have been known for many years, the first and best known being benzoic sulfanide, known to you as saccharin. The health risks of saccharin have been the subject of debate for over 100 years and have yet to be resolved. Studies had shown it to cause cancer in rats, and it was placed on a list of known or suspected carcinogens. It has been banned for use in the USA, but that was lifted by the FDA in 1991, and in 2000 saccharin has no longer required a health warning label. The issue appears to have been resolved by rats metabolizing saccharin in a way not possible in humans. However, many are still suspicious of it, and if you don't trust a food additive then do not voluntarily consume it. The top two artificial sweeteners in the USA are sucralose and aspartame. Sucralose, discovered in the UK in 1976, is the less emotive of the two, and is chemically the chlorocarbon trichlorogalactosucrose, produced by chlorination of sucrose and 600 times as sweet. It should be stressed that a chlorocarbon is totally different to a chlorinated hydrocarbon. Donald Rumsfeld was on President Regan's team. There is a strong body of evidence that aspartame is toxic to humans, although the official evidence has discredit such studies. Recent evidence that linked aspartame to cancer has been stated as irrelevant to humans. In spite of the concerns, the substance has been approved, not only in the USA but also by the European Union. This might call into question the relevance of studies to humans, but many still believe that commercial considerations are behind these decisions. In fact, an extensive study carried out by the Italian European Ramazzini Foundation, showed that aspartame can cause a significant increase in cancers and leukemias in rats at well below the doses allowed by the EU or the US. This substance required further study by bodies with no vested interest in the outcome. Those that believe so point to the stevia situation. This natural sweetener is banned for use as a food additive in the EU, and cannot be sold as sweetener due to the FDA not recognizing it as such. It has also been banned in Hong Kong, even though it is the sweetener of choice in Japan, with no apparent side-effects becoming endemic in that country. The USA might not approve stevia as a sweetener, but it is considering lifting its ban on cyclamate. Cyclamate was banned by the FDA due to tests on rats indicating a possibly carcinogenic effect, but no more positive than those on aspartame. Cyclamate is permitted in Canada, where saccharin is not, and also in the UK, but not throughout the EU. It is obvious, then, looking at the various claims and counter-claims, and the conflicting legislation between civilized countries, that the artificial sweetener industry is wrought with uncertainty. In the past, it is almost certain that commercial considerations have come before the health of the nation, and that does not engender confidence. In fact, the only sane approach to take at this time would be to avoid artificial sweeteners altogether, and stay natural. That is not to claim that natural products are safe to eat - far from it! Many of the most virulent poisons are natural, but the well-used natural sweeteners appear to be safer at this time than any of those artificially manufactured. There might be objections to this where diabetes is concerned, and Canada, while banning saccharin for normal use, still allows it for use by diabetics. This is the one of the two major bodies that promotes the use of artificial sweeteners: the diabetic lobby and the weight loss lobby. It is difficult to question the obesity and weight problem that America has while at the same time arguing against the use of artificial sweeteners. However, don't forget that stevia is widely used in Japan with no reported health problems, and stevia is a natural sweetener that is permitted for use as a food additive, and that is not absorbed by the body. However, there is also a recent 2005 study that has indicated that diet drinks containing artificial sweeteners might fool your body into believing that the sweet taste is promising energy, and when it doesn't materialize, you feel hungry and eat more. This has been supported by animal studies. These have shown convincingly that the sensation of sweetness induces the production of insulin with resulting hypoglycemia because there is no actual increase in blood sugar. This induces increased food intake. This has been proved with rats, and also proved was the fact that the natural response of eating less at the next meal, after sugary food, was gradually diminished in animals fed non-calorific sweeteners. The choice is yours, but it would seem advisable to stick to natural sweeteners for the time being, at least until the studies carried out are in concurrence as opposed to offering conflicting results depending upon who is doing the testing.

Shoppers will have more information about where their food comes from under a new policy, which started this week. Labels on most fresh meats, along with some fruits, vegetables and other foods, will now list where the food originated. In the case of meats, some labels will list where the animal was born, raised and slaughtered. This is good news to most American that fear they eat foods imported form countries who do not have dumping regulations. Meaning some foods could be grown right next to a land fill that has all kinds of toxins brewing in it. Unhealthy to any who consume these foods. Commodities covered under COOL must be labeled at retail to indicate its country of origin. For fish and shellfish, the method of production, wild or farm-raised, must be specified. To fight off aging you have to understand what causes it, and the take steps to avoid these causes. It is fairly obvious that all causes of aging cannot be circumvented, but there are things that can be done to keep some of them at bay. Here, we are specifically concerned with the aging of your skin, which is the most visible form of aging. The first aspect of aging to understand is that there are two types: intrinsic and extrinsic. Garcinia Cambogia is found naturally in India and parts of Asia, and also on the Pacific coast of South and Central America all the way from Peru up to Mexico, and likes a humid forested environment. Also known as Brindall berries, garcinia is believed to act as an appetite suppressant and allows you to lose weight by diminishing your desire for food. The Malabar tamarind, as it is also known, is about the size of an orange resembling a small pumpkin, and an extract from the fruit and rind is used in several weight loss products. The health risks presented by synthetic diet pills render a natural product extremely attractive were it to be effective. So can Garcia curb your appetite? What is the scientific evidence for it, and what biochemical route would it take? Although tests on animals have been very positive, human results have been inconsistent. In some double blind tests using a placebo, weight loss was up to three times that of the control, but in others there was no apparent difference between those taking garcinia, and those given a placebo. However, doubts have been raised of the validity of some of the negative tests, so what does science tell us? The active ingredient in the cambogia extract is hydroxycitric acid (HCA), which is a powerful inhibitor of ATP citrate lyase, an enzyme that catalyzes the reaction between citrate and Coenzyme A to Acetyl CoA and oxaloacetate. Since the acetyl CoA is necessary in the synthesis of fatty acids and lipogenesis (the conversion of glucose to fatty acids), then anything that inhibits the biosynthesis of acetyl CoA must help to reduce the amount of fat stored in your body. By inhibiting this reaction, that occurs outside the mitochondria so is not a direct part of the Citric Acid Cycle, HCA should theoretically suppress the formation of fats from carbohydrates, reduce food intake and thereby induce weight loss. But that is not the only mechanism. A study at Georgetown University in Washington found that after 8 weeks of taking the garcinia extract, there was a 5.4% reduction in body weight and body mass index, and a significant reduction in low density lipoproteins (LDL) and triglycerides with an associated rise in high density lipoproteins (HDL). This is good news for those suffering from high cholesterol levels, since the LDL lipoproteins are those that carry cholesterol to the major blood vessels, and which when oxidized by free radicals deposit fatty plaques on the artery walls. These plaques constrict the arteries and the resultant atherosclerosis can lead to cardiac problems and strokes. HDL lipoproteins carry cholesterol back to the liver for destruction, and is known popularly as ‘good cholesterol’. The studies also indicated modifications to certain indicators of the status of fat deposits in the body and of appetite modifiers in the brain. In this respect they found 38% decreases in serum leptin and increases in serotonin levels of 44%, and the excretion of fat metabolites in the urine increased from between 32% and 104%. These are significant findings, and further research has indicated that HCA helps to suppress appetite. Serum leptin is an indicator of the level of fat stores in the body, and as the leptin levels in the blood reduces, the hypothalamus is given an instruction to increase the appetite so as to increase the fat levels again. However, it is believed that HCA possesses leptin-like properties, and this signal is either not generated or is modulated. The increase in serotonin has the same effect. It is known that serotonin controls the appetite, although the exact mechanism has not yet been established. What is known is that serotonin activates certain neurons and melanocortin-4 receptors (MC4R) in the brain, that not only curb appetite but also block the effect of other neurons that would normally increase appetite by blocking the effect of MC4Rs. This is how the banned anti-obesity and serotonin inciting drug Fen-Phen operated, and it appears that the hydroxycitric acid in garcinia cambogia extract acts in a similar, but safer, way. The problem with drugs such as Feb-Phen was that they created cardiac problems which could be dangerous to obese people whose hearts might have been weakened. However, now that the biological pathway by which serotonin controls weight is believed to be known, if not fully understood, the way is becoming clearer as to how safer weight loss pills, acting through appetite suppression, might be developed. It also provides a valid scientific explanation for the effect of garcinia cambogia extract which might in itself prove to be that safer way. The biochemistry supports the evidence of its effect on those wanting to lose weight, and also bolsters the claims that those tests and trials found to be negative were in some way flawed. Until the full chemical pathway is understood, the factors that can lead to flawed tests are unknown, although one could be the use of excessive fiber in some trials that could reduce the effect of the extract. One of the effects of HCA is to limit the ability of your body to convert carbohydrates into fat (the Acetyl CoA inhibition mentioned above). That, combined with suppression of your appetite and a higher rate of thermogenesis, prevents the body from storing excess carbohydrates as fat. Instead you will have increased energy levels, so you should exercise to use this up while taking garcinia extract. For this reason it is popular with athletes and bodybuilders seeking an energy source that has not yet been banned from sport. Although diet pills based on the same principle had side-effects and could make the user feel on edge, there are none known with garcinia. However, it is possible to reduce the absorption of some essential nutrients due to appetite suppression, so do not exceed the recommended dose. An excessive amount can also led to gastric discomfort, but none of these effects have been noted when the recommended doses have been adhered to.

Did you know there are Persistent Organic Pollutants (POPs) that can have an endocrine disrupting ability? The most common parabens are methylparaben, propylparaben, and butylparaben. These three are used as a bacteriocidal and fungicidal agent in many products we use every day. The FDA does not require approval of cosmetic ingredients before they reach the market place so cosmetic manufactures are free to use what ever they want in their products. Parabens have been shown to have a mild estrogenic affect on the body, and are in practically all personal care products on the market today. If you are applying a name brand cosmetic onto your skin daily, take a look at the label to see if Parabens are used. Look for packets lined with saran, and can linings made of polyolefins. Use biodegradable household cleaning agents and avoid sprays and insecticides. The question as to whether or not vegan supplements are good for strict vegetarians cannot be answered or understood without a complete understanding of the meaning of the terms ‘vegan’ and ‘vegetarian’. Where eating meat is concerned, there are several different types of diet, one extreme being the Atkins Diet where devouring animal flesh and fats is positively encouraged. However, it is not that extreme we are concerned with here, but the opposite, where no meat is eaten. Is there anything in a vegan diet that there is not in a vegetarian diet, or are vegan supplements harmful to strict vegetarians? These are questions that we shall now look at from a scientific viewpoint, since emotions are not involved in the answer to the question. It is certainly true that for many people, emotions are very much involved in the distinction between an omnivore and vegetarian, and also between a vegetarian and a vegan. Some of these have to do with the concept of eating ‘friendly furry animals’ and others to do with the ethics of breeding animal life for the sole purpose of eating it. While these concepts have nothing whatsoever to do with the scientific arguments, they have a lot to do with the various types of eating habit used throughout the world. Some reasons for a vegetarian diet are imposed by local agricultural and husbandry conditions, where meat is simply not available to most people, others due to religious beliefs and yet others to personal feelings of disgust at the moral arguments involved in eating animals that have been bred specifically for that reason. If we take carnivores and omnivores out of the equation, including those that do not eat red meats, but eat chicken and fish, what do we have? Vegetarians that eat dairy products and eggs are referred to officially as lacto-ovo-vegetarians. The reasons for the name are obvious. They eat eggs, cheese and yoghurt and also drink milk. The strict vegetarians, on the other hand, who are part of the subject of this article, eat vegetables and dairy products such as yoghurt and cheese, but omit eggs. Then, finally, we have the vegans that eat only vegetable matter and no dairy products or animal based food at all. Each of these, you would think, would have a decreasing intake of nutrients essential for healthy and healthy growth. A vegetarian diet, as opposed to that of a vegan, contains many nutritious foods that omnivores also eat, such as pulses (lentils, peas, beans), grains (wheat, oats), nuts, seeds and vegetable and fruits of any form. It can also include protein in the form of soy protein and tofu that can be formed into sausages, burgers and other meat-like products. Why vegetarians should want to make their foods look like meat is unknown, but that seems to what they prefer. The likely reason is that the majority of vegetarians and vegans became so after eating meat, and it helps them to stick to their diet by eating food in familiar forms. Many have started their diets with what they know, and have substituted soy for minced beef in their spaghetti sauce, for example, and quorn for beef in their burgers. Together with a good piquant tomato sauce it is hard to tell the difference. Other than truly meaty dishes such as steaks, then, most meat dishes can be substituted for vegetarian alternatives or substitutes. However, what does this do to the vegetarian’s nutrition? How does the vegetarian maintain a sufficient intake of minerals, vitamins and other nutrients by eliminating meat from their diet? Let’s have a look at some of the nutritional content of fish and meat that vegetarians are apparently not getting. The first is protein, the main source for most people being from the flesh of meat and fish. Protein is essential for the maintenance of healthy muscles, vital organs, skin, and believe it or not, bones. A vegetarian eating eggs has no problems with protein, since eggs and cheese are full of it. There is also the protein in soy based foods and in quorn, a mycoprotein derivative of fungi. Nuts, peas, beans, cereal grains and seeds are all rich in proteins and the vegetarian does not have a problem in consuming an adequate supply of protein. If we come to minerals, the most important for the health of your blood is iron. Green vegetables and whole grains are good sources of iron, as are pulses and some fruits. However, it is animal sources of iron that the body most easily absorbs, and in order for it to make use of vegetable sources, you should consume a good intake of vitamin C by eating plenty of fruits and green vegetables. You must take these at the same time as the vegetables that contain iron, or the iron will not be absorbed into the body. Otherwise, the vegetarian has a sufficient iron intake to maintain the health of their red blood cells. The other critical mineral is calcium, essential for healthy bones and teeth. Many dark green vegetables are good sources of calcium, as are turnips, swedes and fortified soy milk. Zinc, too, is essential and without it many enzymes could not be synthesized by your biochemistry, and it is also necessary in the male reproductive system. Zinc, too, has many vegetarian sources, such as nuts, wheat germ and whole grains, and is also contained in soy. So far in this evaluation neither vegetarians nor vegans have been seriously compromised by their diet, although there are arguments that a vegetarian diet can harm young children since there is insufficient protein available to allow normal growth and development. This is currently under debate, and it is a matter for parents to consider whether or not their children should be raised on a purely vegetarian diet. However, when it comes to a vital vitamin that is necessary for the production of red blood cells and the prevention of anemia, vegans become unstuck. Vitamin B-12 is found predominantly in dairy products and other animal products. It is claimed that cereals enriched with B-12 and fortified soy products provide this vitamin to vegans, but what are the sources of the vitamin that is used as a supplement? It is generally accepted that vegans require vitamin B-12 supplements, and also others such as calcium that they might be deficient in due to their diet. It is possible that the only real supplement needed is vitamin B-12, although many nutritionists claim that both vegetarians and vegans should take supplements to boost intake of those nutrients of which the normal route to the body is through eating foods of animal origin. There are many nutrients obtainable from animal sources that are classed as neither vitamins nor minerals, and for which there are adequate supplements to suit the needs of vegans and vegetarians alike. Further evidence is needed, however, that vegans are deficient in these since many of them have alternatives of vegetable origin that might annul their necessity. One thing, however, is absolutely certain, and that is the answer to the original question. It is absolutely true that vegan supplements are good for strict vegetarians. The reason for this is that vegan supplements are designed to replace not only nutrients that the body might be deficient in due to a strict vegetarian diet, but also those missing by the absence of dairy products such as milk, cheese and yoghurt.

It can be applied topically to relieve the symptoms of bruises, cuts and scrapes, and also for the initial treatment of burns and scalds. It has anti-inflammatory properties and can be used on inflamed or infected cuts and skin lesions. These properties are believed to be due to the high level of flavonoids found in calendula that have anti-oxidant properties and help the immune function to do its work. Among these is the powerful Quercetin with its strong anti-histamine properties. It also appears to possess anti-viral properties, though the reason for this is not clear and is still under investigation. Marigold also contains carotenoids and triterpene saponins, both of which will contribute to the medicinal effects. It is also good for the treatment of insect bites and boils, where it appears to either prevent infection or clear up any that are there. It has also been proven to prevent the seeping of blood from the capillaries in scrapes, and to promote blood clotting. Calendula was used during the First World War by British doctors to dress wounds and prevent infection. A dressing steeped in a mild solution of calendula extract was enough, and it likely saved many lives. Another plant with similar properties is the alpine Arnica, which is useful to reduce the swelling and pain of bruises. It works simply by rubbing the leaves on the area when you have a fall or a hard knock. The active ingredients here are again flavonoids, and sesquiterpene lactones along with tannins, carotenoids and thymol. These, along with the flavonoids, stimulate the circulation and carry away any fluids trapped in bruises and swellings. The sesquiterpene lactones act as anti-inflammatories and boost the immune system, helping to reduce swelling and pain. In fact terpenoid chemicals are common to many of the herbs and flowers that have found a use in the relief of pain in swelling and bruises. The same is true of Ledum, better known as Rosemary, traditionally used for the treatment of burns, ulcers dandruff, and dry skin and to get rid of lice among many other internal and topical applications. The active ingredients of rosemary (ledum) include mono-, di- and triterpenes and also the ubiquitous flavonoids and camphor and linalool. If you wash down burns, grazes and cuts with a wash of ledum extract, then you will protect the patient from infection at the time when they are most vulnerable to infectious agents. Hypericum has uses as an anti-inflammatory and antiseptic, and is therefore useful for exactly the same conditions as all of the above. It also has astringent properties, so that like Calendula, Hypericum can be used to prevent the capillary seepage that frequently leads to infections. The active ingredients here are apparently flavonoids again, with their antiseptic and anti-inflammatory properties. Considering that they are among the most common antioxidants and anti-inflammatory agents in the plant world; it is no coincidence that flavonoids just happen to be contained in the vast majority of natural treatments for scratches, grazes and bruises. They reduce swelling, pain and inflammation, and also act as antiseptics by disrupting the cell walls of bacteria. Hypericum is well known by its alternative name St. John’s Wort, where it is used in the treatment of depression. However, the active ingredients here are mainly hyperforin and hypericin, which have little to do with the topical benefits of the plant. If you have suffered from insect bites and stings, then you would have been thankful had you brought some Apis Mellifica with you. Obtained from bees, this again contains terpenes among many other chemicals, and is used paradoxically in the treatment of bee stings and other insect stings and bites. It’s amazing how many of these old remedies contain terpenes of various types and also flavonoid chemicals. It is useful for most rashes that have raised puffy lumps, such as hives. Finally, if you manage to stay out without getting any bruises, abrasions, scratches or bites, you will be very lucky. However, if you get sunburn through being out in the sun too long, just look around for some stinging nettle, or Urtica. The leaf contains polysaccharides and lectins that stop the production of prostaglandins in the body that cause inflammation. Your sunburn will ease and you be able to return home relatively symptom free from your day outdoors. These natural remedies can be hard to find growing naturally due to many factors such as the time of year or your geographical location these herbs may grow in. Medicinal Mushrooms Grown on Purple Kculli Corn Yield Life Changing Results Even though we treat them like vegetables, mushrooms aren’t really plants. They’re fungi and fungi grow much differently than fruits and vegetables. Most food plants, like strawberries, broccoli, and red bell peppers make chlorophyll from sunlight to gain the nutrients they need to grow. Scientists have long known that medicinal mushrooms help make white blood cells more deadly. But until recently, they weren’t sure how. Research has now shown that macrophages and NK cells have receptor sites specifically for beta-glucans 1-3 and beta-glucans 1-6. When the beta-glucans bind to the macrophages and NK cells, they make the lymphocytes stronger and more lethal. By increasing the lymphocytes’ strength, beta-glucans help them churn out more of the specialized chemical messengers, too. Arabinogalactins and arabinoxylans, powerful polysaccharides found in medicinal mushrooms, are potent stimulators of the immune system. These compounds increase the activity of interleukins, interferons, and a tumor necrosis factor, all key components in a healthy immune system. When medicinal mushroom extracts with high amounts of Arabinogalactins and arabinoxylans are taken, diseases are dramatically reduced. Researchers found that complex polysaccharides in four varieties of medicinal mushrooms – Agaricus blazei (Agaricus), Grifola frondosa (Maitake), Coriolus versicolor (Coriolus or Turkey Tail), and Ganoderma lucidum (Reishi) – are serious cancer fighters. The chart below explains how: Mushroom Health Benefit Agaricus (Agaricus Blazei) Agaricus not only contains the greatest number of medicinal compounds, it also contains a powerful anti-tumor polysaccharide that all other medicinal mushrooms are lacking. Recently, 100 women who were receiving carboplatin, a chemotherapy drug used to treat ovarian cancer, volunteered for an important study. Half of the women were given an extract of Agaricus mushrooms, while the other half were given a placebo or dummy pill. The researchers discovered that NK cell activity was significantly higher in the Agaricus group. The women in this group were also less nauseated, fatigued, and wear than the women taking the placebo, an important consideration for people with cancer. Maitake (Grifola Frondosa) Maitake is one of the most researched of all medicinal mushrooms. In one clinical study, the effect of Maitake mushroom compounds were studied in ten patients with cancer who were not currently taking any chemotherapeutic drugs. The researchers found that the Maitake not only significantly stimulated NK cell activity, it also repressed the cancer’s growth, and stopped the tumors’ ability to metastasize, or spread to other parts of the body. And in another clinical study, 165 patients with various types of advanced cancer were given Maitake mushroom compounds alone or with chemotherapy. Cancer regression or significant symptom improvement was observed in 58% of liver cancer patients, 69% of breast cancer patients, and 62% of lung cancer patients. Plus, when Maitake was taken in addition to chemotherapy, the immune cell activities were enhanced 1.2 to 1.4 times, compared with chemotherapy alone. Coriolus(Coriolus Versicolor) Versicolor compounds show great promise as cancer immunotherapy agents in all cancer stages. In one clinical trial, 34 patients with advanced terminal lung cancer were given Coriolus versicolor polysaccharides or a placebo (dummy pill) for 28 days. While the group getting the Versicolor felt less fatigued and sick, very important considerations at the end-of-life, there were no changes in the placebo group. Reishi (Ganoderma Lucidum) Reishi mushrooms are too tough to eat, but they’ve been used medicinally for centuries and have been extensively researched. In a safety study to determine Reishi’s effect on blood thinning mechanisms, healthy volunteers received 1.5 gm Reishi or placebo daily for 4 weeks. There were no significant changes in either group and all blood clotting measurements remained within the normal range, demonstrating its safety. In a recent clinical study, researchers determined that Reishi increased the number of cancer killing white blood cells and made them more deadly to cancer cells. Not only do Agaricus, Maitake, Coriolus, and Reishi have incredible amounts of immune boosting polysaccharides, when they are grown on Purple Kculli Corn, they also have a much higher ORAC value than mushrooms grown on other substrates. Q. What are ORAC values? A. ORAC, or Oxygen Radical Absorbance Capacity, is a measurement of the antioxidant power in fruits and vegetables. The higher the power, or ORAC value, the stronger the antioxidant is against free radicals. While free radicals are made by breathing oxygen and digesting food, and are simply the consequences of being alive, the older we get the more free radicals we make. And the more free radicals we make the more destructive they can be. Free radicals will rip membranes, wreck cells, cripple mitochondria, and ruin DNA. As this damage accumulates, even more free radicals are made. And if not stopped or slowed, this might lead to heart disease, arthritis, diabetes, dementia, and cancer. Q. How does Purple Kculli Corn increase the ORAC value of medicinal mushrooms? A. All brightly colored fruits and vegetables have very high ORAC values; and the higher the ORAC value – the greater the antioxidant power. Not only can we measure the ORAC values of fruits and vegetables, we can also measure the ORAC values of mushroom substrate extracts. Purple Kculli Corn extract has an ORAC value of 1789 (measured in umolesTE/gram). Now, remember that mushrooms are fungi, not fruits and vegetables, and they gain most of their nutrients from the ground (or substrate) they are grown on. When mushrooms are cultivated or “farmed” on substrates with a high ORAC value, they will absorb compounds from the substrate giving them a higher ORAC value, too. So growing mushrooms on antioxidant rich, high ORAC value, Purple Kculli Corn yields medicinal mushrooms with high ORAC values as well. Q. Some mushroom supplements have more than four medicinal mushrooms. Wouldn’t a mushroom supplement with seven mushrooms or more have a higher ORAC value than a supplement with only four? A. Well, more is not always better – especially when it comes to medicinal mushrooms. Some supplements have a “kitchen sink” selection of mushrooms. The makers of these supplements hope that by adding modest amounts of many mushrooms, they will end up with a product that just might have some health benefits. Clearly, it’s not how many or how exotic the mushrooms are in a medicinal mushroom supplement, it’s the substrate that mushrooms are grown on that makes the difference. Q. How can I make sure the medicinal mushroom supplement I buy contains natural and organic mushrooms grown on Purple Kculli Corn substrate? A. Become a label reader! Medicinal mushroom formulas have a statement showing accreditation from a certifying agency, such as the American Food Safety Institute, International; California Organic Farmer Association, Minnesota; or Crop Improvement Association, on the label, and have met certain criteria. They must be grown without chemicals or pesticides. The growers must be certified as organic mushroom produces by an accredited third party. And the growers must keep a record of their production and handling practices. Part I. The Stress Response
The stress reaction is a host of responses necessary for any animal to live in the world. Commonly called the fight-or-flight reation, we as humans often experience it in rapid heartbeat and increased breathing rate. It comes when we exercise more vigorously than usual, or when we are suddenly and unexpectedly frightened.
We are all different. We show a range in how strongly we experience the stress response. Most of us are usually calm and experience the stress response when an unexpected noise frightens us to alertness, or we run to first base as fast as we can in a benefit baseball game that is not on our usual playtime schedule. We breathe harder for a while and notice our hearts beating faster and harder then usual, but after a while these responses all calm down, and we are again in our usual state—out or the stress response. Others of us are very low key, and it takes a lot to disturb our physiological calm. Still others of us are very sensitive to triggers of the stress response and go into it “at the drop of a hat” and to a greater degree than do calmer people. For some, parts of the stress response are almost always engaged—never really calming down all the way—giving one a hyper-vigilant or anxious demeanor.
When a stress trigger occurs, the body puts out stress hormones, magnesium and calcium, among other things, into the bloodstream. At the same time, nerve cells begin to “fire,” telling heart and muscles to “speed up. NOW!!!” These blood, nerve and organ changes make possible the instantaneous and collective rise in the body’s heart rate, blood pressure, and other necessities for the fight-or-flight reaction.
Much research has been done on the stress response, especially on the effects of stress hormones, such as adrenaline (also called epinephrine) on body, organ and cell. You can get an idea of how widespread the stress response is-affecting every aspect of physiology—by noting some of the reactions to adrenaline, one of the major stress hormones. See Table 1.
Much study as the cellular, biochemical and physiological levels has shown that the stress response vitally involves the influx of calcium into cells, resulting in a drastic change in the cells’ internal magnesium-to-calcium ratio (Mg:Ca).
In simple solutions, such as salt water, all ions are evenly dispersed. Not so in living cells. Ions are carefully and meticulously separated in living cells, and this ion “packaging” is vital to life processes and health. Calcium ions, for the most part, are kept outside cells while magnesium ions are kept mainly inside cells. The stress response changes this. During stress response, calcium ions rush inside the cell, and this alters the internal Mg:Ca ratio. This change in ratio exhibits wide effects because, while magnesium and calcium are very similar in their chemistry, biologically these two elements function and react very differently. Magnesium and calcium are two sides of a physiological coin: they are antagonistic to one another yet comes as a team. For example:
Scientific study shows more and more that the underlying cellular change enabling the stress response is a low Mg:Ca ratio caused by a large and sudden influx of calcium into cells. This stress response subsides when the cell’s magnesium returns to its dominant presence inside cells, moving extra calcium back outside cells to its “normal” Mg:Ca ratio. This underlying principle is present in studies of nerve cell-stress hormone response, organs such as hearts, the high blood pressure response to stress, and the blood-clotting reaction during stress, among many others. See Table 2.
In the normal healthy state, the stress response occurs when necessary, and subsides when the crisis or trigger is over. Since magnesium and calcium—two essential nutrients that must be obtained by the body from its dietary environment—are so essential to this important response, it is not surprising that nutritional magnesium and calcium status can affect the response.
Let’s see how.
In the normal unstressed state, cellular Mg:Ca ratio is high. If this cannot be maintained due to lack of adequate body magnesium or an overwhelming amount of body calcium, the ratio may not be able to maintain or return itself to its healthy nonstressed ratio. In such a case, the stress response, in the absence of an appropriate trigger, can occur. This can be seen when nutritional magnesium deficits cause high blood pressure or increase blood stickiness (platelet aggregation). Additionally, since a low Mg:Ca ratio can increase adrenaline secretion as well as cells’ response to adrenaline, a too low magnesium state can keep the stress response from subsiding in a timely way. Even worse, when body magnesium becomes drastically low, this becomes a stress trigger in itself, alarming the body into further stress response with out enough magnesium to back it up, resulting in a low magnesium-high stress crisis that can end in sudden death.
In the industrialized world, we live in a state of chronic, on-going stress. This environmental reality increases our daily need for magnesium in order to maintain a healthy stress response that can calm when not necessary.
Part II. Heart Disease Is Often a Magnesium Deficiency
Clearly, an adequate amount of nutritional magnesium—in proper balance with adequate nutritional calcium—is key to a healthy stress response. And yet today we have diets dangerously low in magnesium. Add the recent additions of nutritional calcium via supplements and food fortifications meant to stave off osteoporosis, and many of us are getting inadequate magnesium plus too much calcium. This results in a large occurrence of heart disease.
Not all, but much of the heart disease in the industrialized world can be explained by the low magnesium state of these societies. People with heart disease—for the most part—are people who are in a state of magnesium that is borderline or deficient. Many studies on heart disease patients exist due to medicine’s effort to understand and treat this widespread malady. Although not intended as such, this body of research shows us what stress can do to a person in a magnesium deficient state.
Part III. Mental and Emotional Stress Deplete Magnesium
It is commonly accepted that certain traditional risk factors for heart disease exist. This include high cholesterol, high blood pressure, family history of heart disease, and other factors, all of which can be linked to a shortage of nutritional magnesium. Recent studies tell us that stresses—both sudden and chronic—with their high magnesium requirements, are also strong risk factors for heart disease.
The sudden stress of the
Emotional stress and phobic anxiety cause heart problems in patients with heart disease—a population we know to be mostly low in their nutritional magnesium status. Chronic states of emotional stress, including a history of childhood abuse, neglect or family dysfunction, depression, and panic disorder, must now be added to the list of traditional risk factors for heart disease such as high blood pressure and high cholesterol. Depression can be a symptom of low magnesium status. So can anxiety, panic attacks, irritability, hyperactivity, and over-sensitivity to loud noises. Do these newly found risk factors cause heart disease, or are they risk factors because the, as well as heart disease, can all be aspects of low magnesium status? These chronic sources of stress can increase the human need for magnesium as well as be caused by its deficit.
Emotional stress triggers in susceptible people can even bring a sudden death due to heart attack, presumably by initiating a stress/low-magnesium crisis. Such emotional “triggers” include work stress, high-pressure deadlines, social isolation and loneliness, low socioeconomic status, anxiety, war, fear of war, anger and rage. Identical stress triggers cause more human heart attacks regardless of age, race, gender, or geographic location, including continent.
Mental stress, such as working out a math problem, can be shown to have impact upon the magnesium-stress response connection, since it can bring on heart attacks in people with heart disease.
Part IV. Stress, Magnesium and Aging
We are hearing a lot about stress in the health media, and rightly so as this constant companion to our lives brings on the fight-or-flight syndrome, a stress response that, when activated, has been shown to shorten lifespan. When we realize that the stress response is exacerbated when we are low in magnesium, that we are living on low-magnesium foods for the most part, and that our lifestyles are more and more filled with chronic stresses and stressful events, we are not surprised to see that several aspects of magnesium deficiency are remarkably like aspects of the aging process.
When faced with out stressful lifestyles, coupled with a society presenting a chronically low-magnesium/high-calcium diet, what is our best defense? For many of us, magnesium supplements can help to preserve or restore a healthy Mg:Ca balance, so important to our health in these stressful times.

Congressman Sam Farr, a fifth-generation Californian, represents the state’s beautiful central coast. Our backyard here is also the home of a robust group of nutritional supplement manufacturers. An estimated 187 million Americans are currently taking dietary supplements as part of their daily healthy diet. In California, we’ve got 792 natural product manufacturers and distributors. Where do you stand on the state of our industry? Congressman Farr: Well, thank you for the introduction and for asking to talk to me about nutritional supplement issues. I am very supportive of this industry and include myself in the 187 million Americans taking dietary supplements. I think supplements offer many safe and viable tools to maintain your health. The continued growth of this industry is an indication of both consumer confidence in the products and the products’ ability to fill the gaps where conventional medical care falls short. Todd: It is estimated that by 2030, more than 70 million Americans will be over the age of 65 and the cost of health care could reach $16 Trillion per year. A recent study by the Lewin Group showed that by taking certain dietary supplements, seniors can lead healthier, more productive, independent lives while saving billions in reduced hospitalizations and physician services. Do you share our view that a Wellness Revolution is needed to counter the dilemma of an aging population versus shrinking health care support in the future? Congressman Farr: Our health care system is definitely facing a challenge, especially as the Baby Boomers hit their 60’s and Americans are living longer than ever before. As a Baby Boomer myself, I am well aware of America’s aging population and the impact that will likely have not only on our social institutions but also our fiscal well-being. I agree that dietary supplements do play and will play an even larger role in the future as more seniors look for a way to augment their diets in order to stay healthy and active longer than past generations. Todd: Our industry is regulated by DSHEA (the Dietary Supplement Health and Education Act), which was passed unanimously by Congress in 1994 to create a reasonable regulatory framework for access to, information about, dietary supplements. But many say that the FDA and DSHEA weren’t adequately funded to do the job as tasked. “Supplements are unregulated” is a false argument we sometimes hear. To ensure that the FDA is able to carry out the law as Congress intended, Representatives Dan Burton (R-Ind.) and Frank Pallone (D-N.J.) introduced H.R. 2485, the DSHEA Full Implementation and Enforcement Act of 2005. Did you support this bill and where does it stand today? Congressman Farr: I think the DSHEA is a critical law and was proud to support it when Congress considered it in 1993 and 1994. I would certainly support H.R. 2485 if it came up for a vote in Congress. Unfortunately this bill has not moved since it was first introduced and referred to the Subcommittee on health in the house energy and commerce committee. Since this is an election year we have a tight schedule with only about 60 legislative days scheduled before we adjourn. That means it’s likely Congress will only finalize bills such as the appropriation bills that fund government before adjournment. Todd: Our business climate has included some valid and rigorous challenges to improve our industry, from good manufacturing practices (GMP), to allergy labeling, to implications of Prop-65 in California. It’s disconcerting that a new bill, H.R. 3156 The Dietary Supplement Access and Awareness Act would try to capitalize on misconceptions about the industry. In an era of declining health care and declining insurance coverage, this bill would regulate supplements as prescription drugs. Among other things, it would also require adverse event reports to be turned over to the FDA, even though other foods, including those with identical ingredients, do not have the same requirements. This has the potential to be the next Prop-65-like Lawsuit mill. The result of H.R. 3156 would be chilling. It will knock smaller producers out of the market. It will result in higher prices for all supplements. It will decrease the availability of health-giving supplements to the public. What’s your feeling on this? Congressman Farr: I am similarly concerned about H.R. 3156 and would oppose it if it came up for a vote in Congress. Like H.R. 2485, this legislation has been referred to a subcommittee on Health in the House Energy and Commerce Committee without any further action. The supplement industry has worked in good faith with the FDA since passage of DSHEA and H.R. 3156 would re-invent a wheel that isn’t needed. Instead, adequate funding as proposed in H.R. 2485 would provide ample oversight for the industry. Todd: According to a recent study, 72% of the general population believe the government should fund more research on health benefits of nutritional supplements. Do you agreen and what can be done to meet this need? Congressman Farr: I definitely agree that the federal government should play a bigger role in support of research regarding the health benefits of nutritional supplements. As a member of the House Appropriation Committee, I sit on the subcommittee that has jurisdiction over the FDA’s budget and I know the tight fiscal restraints the agency is under. I’ve worked with my colleagues to provide adequate funding, but it’s an uphill battle especially when we’re in a “robbing Peter to pay Paul” kind of situation. I recommend that people within the industry organize and use your consumer base to actively lobby Congress for additional funds. I’m fond of reminding people that the squeaky wheel gets grease – so let every Congress member and Senator know how much this issue matters to you. Todd: When there is overwhelming scientific evidence that nutritional supplements provides relief for a disease condition, it currently takes a lawsuit to get the FDA to relent and allow the claim. Even then, the FDA strictly limits the claim and requires a disclaimer that does more harm than good in communicating this important information to the public. There is a new bill, H.R. 4282, The Health Freedom Protection Act that would end FDA and FTC censorship of health information. As an example, the 50% of all adult males who suffer from an enlarged prostate could receive relief from that condition by consuming a simple and safe ingredient, saw palmetto derived from the fruit of the dwarf American palm tree. The FDA censors that information. The public deserves a better opportunity to be informed about omega-3 EFA and heart disease, folic acid and birth defects, phosphatidylserine and cognitive impairment. Do you agree and do you support this bill? Congressman Farr: I agree the public needs to access to the best information possible so they can make well informed choices about their health. I likely would support H.R. 4282 if it came up for a vote in Congress. Unfortunately this bill is in a similar situation as other we’ve mentioned in this interview – and again because of the tight schedule of an election year, it’s unlikely action will happen this year. Todd: According to the barometer study, 85% of the US population is currently using some type of dietary supplement. Do you? Looking at your busy schedule from co-chairing the House Oceans Caucus to your seat on the Travel and Tourism Caucus, you are one busy congressman! Are you popping nutritional supplements please tell us! Congressman Farr: I do take some nutritional supplements, though they vary and since Ginkgo Biloba isn’t among them I cant remember their names off-hand! One product I do use faithfully is Airborne to help me combat germs and colds that I might get from sitting on an airplane. But, like many Americans my life is over-scheduled and combined with the amount of air-travel I do, I find nutritional supplements helpful as I try to stay healthy despite my hectic lifestyle. The Wellness RevolutionPerplexed about Protein? As protein and whey powders have advanced in popularity, the confusion about them has grown. In particular, protein processing technology has advanced by leaps and bounds; consumers are being presented with protein claims and counter-claims that are highly contradictory. The confusion is part of a rapid growth. Little Miss Muffet’s quiet dish of curds and whey has expanded from a minor sideline aid for weight lifters, with sales increases around to percent a year, into an explosive $1 billion a year industry, with some companies announcing sales growth of 110 percent in just the last year. THE FDA AND NON-CALORIC SWEETENERS While white sugar, turbinado, fructose, honey and corn syrup all qualify as natural sweeteners, none of these are calorie- free nor can they be used by people who suffer from blood sugar disorders. They can encourage weight gain, tooth decay, raise blood sugar quickly, and can also predispose certain individuals to yeast infections. These sugars can also contribute to indigestion, bowel disorders and, possibly, hyperactivity or ADD in children. Pharmaceutical sweeteners like aspartame and saccharin qualify as calorie-free but come with significant limitations and health risks. Saccharin has been labeled with a warning that it has caused the development of cancer in laboratory animals but is still available for purchase. In 1970, cyclamates, another class of artificial sweeteners, were banned because of the strong possibility that they are, in fact, carcinogenic. Aspartame has been marketed as a safe substance for the general public, except for those few individuals who suffer from PKU (phenylketonuria), a relatively rare disorder. Most consumers assume that aspartame is a perfectly benign compound and use it liberally. It is, in fact, comprised of phenylalanine, aspartic acid, and methanol (wood alcohol). As previously mentioned, various side effects have been associated with the ingestion of aspartame and include migraines, memory loss, slurred speech, dizziness, stomach pain, and even seizures. In addition, because aspartame contains chemicals which affect brain cell function, significant questions have been raised concerning its link to increased incidence of brain tumors (Olney). Acesulfame K, another artificial sweetener on the market, has also been linked to cancer by the Center for Science in the Public Interest. Despite the protest of various organizations and health professionals, these pharmaceutical s weeteners have been approved by the FDA and are recognized as safe.
