Kombucha Extract

Although commonly called 
the Kombucha Mushroom, Kombucha is not a mushroom. Kombucha is 
the cultured growth of beneficial bacteria and yeasts that form 
a mushroom shaped colony bound in cellulose matrix. Kombucha 
propagates or recreates another "culture" similar to itself 
during the fermentation process. When it ferments it produces 
alcohol, which is then converted into acetic acid (ie. vinegar).
