What Are Broccoli Sprouts?Broccoli sprouts are 3-4 day old sprouts of broccoli. Contrary to popular belief, and to many published articles on broccoli sprouts, they actually contain a lower level of nutrition than mature broccoli heads. However, the reason that many people take broccoli sprout extract as a supplement is because they contain an inordinately large quantity of a glucosinolate known as glucoraphanin, found in vacuoles within the cell cytoplasm. The cell membranes contain myrosinase, an enzyme that comes into contact with the glucoraphanin when the plant cell is ruptured, such as when chewing it. The enzyme then changes the glucoraphanin to sulforaphane, an isothiocyanate compound. It is this sulforaphane for which scientists are so excited about broccoli sprouts, and not because they are more nutritious than mature broccoli. This substance has been found to possess powerful anti-cancer properties, offering protection against cancers cause by the consumption of toxins. It is not the toxins that cause the cancer, but by-products (metabolites) of their metabolism in the liver, and sulforaphane has been found to generate an enzyme that neutralizes these carcinogenic metabolites. So if you want to increase your protection against cancer, take broccoli sprout extract. Using Broccoli Sprouts to Defeat CancerBroccoli is rich in a substance known as sulforaphane, and it has been established that broccoli sprouts, which are 3 to 4-day old broccoli plants, can contain over 20 times the sulforaphane of mature broccoli (Johns Hopkins University 1997). The significance of this is that sulforaphane helps to prevent cancers, particularly cancers of the stomach, bowel, prostate, bladder and breast. It does so by stimulating the production of Phase 2 enzymes. When toxins are neutralized in the liver by Phase 1 enzymes, carcinogenic by-products are generated that will cause rampaging cancer if left as they are. However, the body produces what are known as Phase 2 enzymes that neutralize these carcinogenic by-products. Sulforaphane stimulates the production of these enzymes, and so ensures the destruction of the carcinogenic by-products of toxin metabolism. This has been proven by clinical studies, and an extract of broccoli sprouts is very rich in sulforaphane, or the substances that generate it. A maintenance supplement of broccoli sprouts will offer protection against some of the more serious cancers.
