Fenugreek—An Ancient Herb with Many Uses

Fenugreek is one of the oldest herbs traditionally used in ancient Greece, Egypt and China. It has a long history of use in folk medicine and has been shown to be effective in a variety of ways. Fenugreek seed has been used to increase milk production, lower blood sugar, and improve digestion. Fenugreek seed is a very nutritious seed.

Fenugreek is an erect annual herb that grows to 30–60 cm (12–24 in) tall, with slender branches. The leaves are alternate, trifoliate, having three narrow elliptic to obovate leaves with serrated margins and an off-center or asymmetric leaf apex. The flowers are white to light blue or violet, and arranged in axillary racemes. The fruit is a long and slender 2–4 cm (0.8–1.6 in) bean-like pod, with oblong seeds.

The seeds have a strong aroma and taste similar to celery, fennel, or anise. They are often used to flavor curry powders, pickles, pastes, and masalas. Fenugreek seeds can also be sprouted and fresh or dried leaves can be used as greens. Both the leaves and the seeds have a slightly bitter taste. Fenugreek leaves are eaten in India as a vegetable while thesprouted seeds are used as salad greens or added to salads.
