This is a medium bodied Black Tea that is low in tannins and brews to a rich red colour. It’s a smooth and flavourful beverage with a rich aroma that makes an excellent addition to breakfast, or can be enjoyed throughout the day. Add a drop of milk and sugar to bring out its delicate sweetness.

Organic English Breakfast Tea (Camellia sinensis)

Black Tea is made from tea leaves more heavily oxidized than other tea varieties. It is during the production process that the tea leaves are broken to allow the juices and essential oils to emerge and partially oxidize or "ferment," giving Black Teas their characteristic aroma and flavour. The dried flavourful juices on the surfaces of the leaves remain relatively stable until exposed to boiling water during infusion.

In the East Black Tea is known as Red Tea, which refers more accurately to the colour of the brewed leaves. It also preserves its flavour longer, making it a favourite article of trade. Compressed bricks of Black Tea even served as a form of currency in Mongolia, Tibet and Siberia into the 19th century. Black tea still accounts for over ninety percent of all tea sold in the West.

DIRECTIONS

The art of tea has evolved to include many rites and rituals; here are just a few that can affect the taste of your tea:

• Using good water is an essential part of brewing a great cup of tea. We recommend using good quality spring, mineral, or filtered water.
• Rinse your teapot and cup with hot water immediately before brewing your tea. By keeping the water temperature high while steeping, more of the subtle aspects of your tea will be extracted from the tea leaves. Also, your tea will brew more quickly and stay hot longer.
• Water temperature is critical. For this tea, we recommend heating your water until it is vigorously boiling, then letting it cool slightly before pouring over the teabag(s).
• Use one teabag per cup of tea desired. Pour hot water over teabags, cover and steep, peeking & stirring occasionally. Optimal brewing time is between 1½ and 3 minutes, depending on how strong you enjoy your tea.
• As a tea cools, you will notice that its taste changes dramatically. Be sure to experiment and you may find more character in a specific tea than you ever imagined.
