People are being encouraged to eat the whole fruit or vegetable, peel and all. Most of the nutrients, vitamins, fiber, antioxidants and cancer fighters are contained in the peel. If the peel is unappetizing try using it in different ways such as pickling or drying so that it can be ground. Many people feel that the peel contains all the chemicals used in farming and that they need to scrub their fruits and vegetables with soap and water but a simple rinse with water is enough.
