The superfood status of sweet potatoes continues to grow. In addition to having fewer calories than a regular potato and containing vitamin A, vitamin B, and antioxidants, researchers are saying that the water they are boiled in could be super healthy as well. A study found that the proteins extracted from sweet potatoes when they are boiled can help with weight loss and lipids. This has lead t further research on how best to get the proteins out of the used water and insert them into an more easily digested medium.
- Sweet potato is known to be a bit of a super food because it has fewer calories than a regular potato.
- They are also a fabulous source of Vitamin A for healthy eyes, Vitamin B for energy and immunity and contain antioxidants that carry anti-aging properties.
- In order to get the most nutrition out of the vegetable, we should perhaps be thinking outside the box in our consumption methods.
