![]() This product is a fermented bright reddish type of rice which is red in color due to the fact that when they cultivate it, the Chinese peasants use a mold called Monascus purpureus. In Japanese, this rice is known as koji and it means bean overgrown or grain. Most of the times this type of rice is used in order to color different kinds of food products, numbering Chinese pastries, peking duck, char siu, red rice vinegar and pickled tofu. Even though most of the times this rice is used for its color, it does change the taste of foods a little and most of the times people living in Fujian, China used it for preparing many of their local foods.
