The scientific journal Nutrients recently published a study from New Zealand which suggests that Vitamin C plays an important part in preventing age-related cognitive impairment. A free radical is a positively charged molecule that is deficient in an electron. Whereas stable compounds consist of electron pairs, a free radical consists of electron pairs and one unpaired electron. Although such a compound is not stable, it does not immediately disintegrate but grabs the nearest electron it can find. This would normally be an electron in the nearest body cell to it, whether it is a blood cell, a cell in an artery wall or a skin cell. The result is that the cell that loses the electron is disrupted. Free radicals are formed in the body through its normal biochemistry, and also promoted by pollutants such as cigarette smoke, pesticides and traffic fumes. Excessive exposure to the ultraviolet radiation of sunlight or sunbeds also creates free radicals, as does excessive exercise, believe it or not. As stated earlier, these chemicals have only one purpose in your body: to grab an electron from wherever they can, and in doing so they destroy the cells that make up your body tissue. This can lead to premature aging, heart disease and many other problems with your health. Antioxidants such as vitamins C and E are important parts of your diet, and silica hydride is an other supplement which has been relatively recently discovered to have antioxidant properties. A component of glacial streams, this substance is generally in colloidal form, or in the form of small particles maintained in suspension by the interaction of positive and negative charges on the surface of the tiny particles of which it consists. Other beneficial effects of such antioxidants are an increase in the potential for the mitochondria to generate energy within your cells, an increase in the hydration of body cells and a decrease in lactic acid build–up that occurs as the result of exercise. The negative charges of silica hydride atoms are very strong antioxidants and can dramatically increase the energy production of mitochondria. It has been shown to do so by up to six times in Chinese hamsters. There is more on this claim for such a significant effect on your energy production later. In addition to its action as an antioxidant, silica hydride is an electron donor to other antioxidants that have been neutralized by reaction with a free radical. People with chronic fatigue syndrome feel overwhelming fatigue, and often pain as well. This is an illness that does not go away with a few good nights’ sleep. It drags on and on and doesn’t resolve itself. It steals vigor and energy over months, and sometimes even years. In this issue of Ask the Doctor, we will talk about powerful vitamins, minerals, amino acids, and herbs combined in scientifically validated formulas that people with chronic fatigue syndrome or fibromyalgia can use every day. Current research is looking at the roles of neuroendocrine dysfunction, viruses, environmental toxins, genetic predisposition, food sensitivities, yeast overgrowth, faulty digestion, or a combination of these factors. For many people, CFS is triggered by a bout with a viral illness (like a cold or the flu), or even a stressful event. CFS is usually a mix of underlying causes. It is like a domino effect in that each problem can trigger another problem, and so on. For example, fatigue and poor sleep can trigger a weakened immune system, which can, in turn, trigger yeast or bacterial infections. Q. Who gets chronic fatigue syndrome? A. CFS is more common than you might expect. It strikes people of all ages, racial, ethnic, and socioeconomic groups. Approximately 800,000 people nationwide have CFS and over six million have fibromyalgia at any given time. It is important to stress that CFS is a real illness; it is not “just in your head.” Unfortunately, sufferers of CFS may find that many healthcare practitioners discount the symptoms of this illness or misdiagnose it as another disease. This can lead to additional emotional suffering. Q. How long does chronic fatigue syndrome last? A. The illness varies greatly in its duration. Some people recover after a year or two. More often, those who recover are more likely to do so three to five years after onset. Yet for some people, the illness seems to simply persist. There are rare cases of spontaneous improvement after five years without undergoing any treatment. However, this is very unusual. Q. What are the complications of chronic fatigue syndrome? A. The patterns of CFS vary from individual to individual. However, many common patterns of symptoms are seen in CFS sufferers. These symptoms and problems interact and create new symptoms and problems. For example, infections and disrupted sleep can lead to digestive, hormone, and immune problems. Infections The most notorious pattern seen in CFS is the one in which a person suddenly comes down with a flu-like illness that doesn’t go away. These viral or bacterial infections can suppress the body’s master gland, the hypothalamus. Since the hypothalamus controls the other glands, including the adrenals, ovaries, testes, and thyroid, suppression of this gland will lead to a subtle but debilitating decrease in the functioning of all glands and their hormones. Suppressed hypothalamic function from chronic infections can then trigger sleep dysfunction. Disrupted Sleep The suppression of the hypothalamus gland can lead to poor sleep because the body confuses its day/night cycles. Because of this, people with CFS have trouble staying in the deep, restorative stages of sleep that “recharge their batteries.” Poor sleep can cause immune suppression, which may lead to secondary bowel infections. The bowel infections seen in people with CFS can cause decreased absorption of nutrients, which can lead to chronic vitamin and mineral deficiencies. Q. Is there a cure for chronic fatigue syndrome? A. Treating chronic fatigue syndrome presents a significant challenge to people with CFS and their healthcare practitioners. Recently, a published placebo-controlled study ( of which I was the lead investigator) showed that when using an integrated treatment approach, over 85 percent of CFS and fibromyalgia patients can improve, often dramatically. An editorial in the April 2002 issue of the Journal of the American Academy of Pain Management noted that this treatment, which I developed, is now a highly effective and excellent part of the standard of practice for treatment of fibromyalgia. Since this treatment addresses many different problems associated with CFS/FMS, it needs to be individualized to each patient. Medical Treatments Medications that provide symptom relief are frequently the first line of treatment chosen by healthcare practitioners for the person with CFS. These include medications for pain, sleep disturbances; digestive problems such as nausea, depression and anxiety, and flu-like symptoms. However, medications have not been universally successful because they tent to put a bandage on symptoms instead of addressing the root problems. Because of this, medications may need to be supplemented by the other supportive therapies that can address the root problems. Supportive Treatments People with CFS/FMS may be depressed, given the catastrophic lifestyle disruption these diseases may cause. They may also feel guilt and frustration because their symptoms were not taken seriously for such a long time. Fear can be a factor as employment and family relationships may be jeopardized by this illness. Therapies that help people to relax and improve coping skills may be helpful and include counseling for emotional and mental health, cognitive behavioral therapy, sleep management therapy, and massage. FEARING FATS: There's Plenty of Cause Overview A wealth of scientific evidence now exists which should have turned each and everyone of us into a fat “phobic.”1a-e In other words, virtually every health expert agrees that a high fat diet is directly linked to cardiovascular disease, various types of cancer and premature death. It’s no secret that excess dietary fat poses a tremendous health risk. The United States National Institutes of Health, the World Health Organization and many other scientific institutes have confirmed the frightening hazards of fat. Health proponents generally concur that excess fat can significantly shorten one’s lifespan. More than 10,000 medical papers are published every year dealing with obesity and cardiovascular disease, two of the most insidious killers of Americans. Western eating habits, which promote fatty, salty, sugary foods, have created massive widespread disease and tremendous suffering. Studies have shown that fat is the macronutrient associated with overeating -

The bottom line is that fats taste good!5 Many of us were raised on seemingly innocuous foods that are loaded with fat. Some of these include: macaroni and cheese battered fish sticks hot dogs cheese-filled casseroles pepperoni pizza burritos pancakes, waffles doughnuts pies and pastries ice cream candy bars ramen soup Fat is also a major ingredient in most of the snack food we constantly nibble on, including chips, crackers, cookies, and nuts. Check ingredient labels to find the fat gram content of most snack foods. You’ll be surprised to find out just how fatty these foods are. Even a healthy sounding food like a “bran muffin” can contain 36 grams of fat! No wonder they stay so “moist”. In addition to the above foods, fat can add wonderful flavor to breads, vegetables and the like, and is usually used liberally in the form of butter, sour cream, whipping cream, melted cheese, cream cheese spreads, dips, cream sauces, and gravies. Fruits can also be high in fats. Did you know that one avocado has 30 grams of fat? One half cup of peanuts contains 35 grams of fat and only one glazed doughnut has 13 grams of fat. The majority of research points to fat as a much more dangerous culprit than anyone might have imagined. Saturated fats such as lard, palm, coconut oil, and beef tallow are particularly menacing. Research scientists have found over and over again that fats can contribute to the growth of tumors in animal studies.6 The National Research Council of the National Academy of Sciences reported that even a relatively small amount of extra body fat increases the risk of certain diseases for women and may compromise their longevity.7 Even being mildly overweight may be much more risky than anyone previously assumed.8 The Relat ionship between Breast Cancer, Fat s, Fiber And Indoles

But aromatherapy-the healing power of scent-can restore equilibrium. The use of volatile plant oils, including essential oils, for psychological and physical well-being dates back thousands of years. The ancient Chinese, Egyptians, Greeks and Romans used infused oils and herbal preparations for medicinal, fragrant, cosmetic, even spiritual reasons. During the late 20th century, people started to relearn the benefits of aromatherapy and these days, aromatherapy's reputation as a soothing, healing art continues to grow. Once you've experienced the odiferous power of aromatherapy's essential oils, you'll keep coming back for more: These gently wafting odors have the power to stimulate or calm, invigorate or relax. When you enter this scented world, "there you will find nature in one of its most powerful forms-aromatic liquid substances known as 'essential oils,'" says Valerie Ann Worwood in The Complete Book of Essential Oils and Aromatherapy (Thorsons). Essential oils form what Worwood refers to as the "fragrant pharmacy," a collection of concentrated substances used in pharmaceuticals, foods and cosmetics. When you sniff the aromas of essential oils, "they enter and leave the body with great efficiency, leaving no toxins behind," Worwood points out. "The most effective way to use essential oils is...by external application or inhalation. The methods used include body oils, compresses, cosmetic lotions, baths-including sitz, hand and foot baths-hair rinses...perfumes...and a whole range of room [scenting] methods." Plant Essences As Worwood explains, essential oils are produced in various parts of different plants. As a result, it takes a great deal of specialized work to extract essential oils. About 60,000 rose blossoms are consumed in the production of an ounce (!) of rose oil. Just as the antioxidant phytonutrients we eat in vegetarian foods link our bodies to the health-promoting chemistry of plants, the penetrating nature of essential oils are thought to connect our souls to the essences of flora. "From inside comes the voice and from inside comes the scent," observed the 19th century German doctor Gustav Fechner, quoted by Robert Tisserand in The Art of Aromatherapy (Healing Arts Press). "Just as one can tell human beings in the dark from the tone of voice, so, in the dark, every flower can be recognized by its scent. Each carries the soul of its progenitor." Fechner believed that the power of essential oils to stir our deepest emotions derives from their function as a vital means of communication in the plant world. As Tisserand asks, can't we imagine that flowers "communicate with each other by the very perfumes they exude, becoming aware of each other's presence?" The Science Behind the Scent While alternative medical practitioners have acknowledged the effectiveness of aromatherapy for thousands of years, only recently have conventional medical researchers begun seriously looking into how this technique works. For instance, a study of estragole, a chemical found in basil, fennel and tarragon, determined that it could potentially ease back pain by inhibiting inflammation of the sciatic nerve. (The sciatic nerve, the longest nerve in the body, runs from the back down the leg.) The researchers discovered that estragole is "active on nerves," a conclusion that aromatherapy practitioners, who employ the scent of these oils to soothe pain, already knew. Science is verifying another piece of information long known to practitioners-that while certain essential oils can calm you down, others prod your alertness. In a study performed at the University of Northumbria in England, scientists found that sniffing the scent of lavender lulls the human brain into a comfortable, rather stupefied state, while rosemary, in contrast, can sharpen recall. As the English researchers noted, lavender "produced a significant decrement in performance of working memory, and impaired reaction times for both memory and attention-based tasks." That's probably why the odor of lavender is noted for enhancing sleep. On the other hand, the scientists found that rosemary "produced a significant enhancement of performance for overall quality of memory and secondary memory factors." However, they did point out that under the influence of both of these oils, performance slowed when tackling a battery of memory tests. Apparently, the oils mellowed people so that they had little motivation to rush through the paperwork. As Frazesca Watson notes in Aromatherapy Blends & Remedies (Thorsons): "The aroma of the oils directly affects our moods and emotions and sometimes our short- and long-term memory. Together with a wide range of physiological benefits, the aroma can help with emotional upsets such as depression, anxiety, nervous tension, anger, apathy, confusion, indecision, fear, grief, hypersensitivity, impatience, irritability, panic and hysteria." Essential oils are especially helpful at defusing stress. Watson notes, "Treatments with essential oils are therefore very helpful for all sorts of stress-related problems, so common in our modern life." As scientific research into the effects of these oils continue, conventional medical practitioners are sure to embrace them in increasing numbers. But before there were scientists around to confirm the effects of these wonderful scents, the ancient medical practitioners in Egypt and Greece attributed the origins of aromatherapy to the gods. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting. "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications. "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing. "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside. "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while. "Then there are quick breads that use baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans. "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits. "To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness. "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat. "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet. "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables. "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it. "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes. "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good." Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well: "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen. "Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine flour, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day. "I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with split pea soup. "Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."
