L-Cysteine is what is known as a non-essential amino acid, meaning that it can be biosynthesized by the body and hence not an essential part of your diet. Due to its possessing a thiol side chain, it is termed a hydrophilic amino acid with an affinity for aqueous systems. Because of this it is relatively highly reactive, and is therefore an important component of a large number of enzymes and proteins. Although, after all, it is not an essential amino acid, deficiencies can occur in the young and in the old, and also in those suffering certain metabolic diseases. Dietary sources include high-protein foods such as chicken, turkey, pork, dairy products and vegetables such as cereals, broccoli, garlic and onions. The biochemistry of this amino acid begins with another amino acid known as serine, and also methionine. The latter is fist converted to homocysteine, which is then combined with serine to form cystathionine. This is then converted into cysteine and alpha- ketobutyrate. The thiol group is highly reactive and gives cysteine its biological properties. L-Cysteine possesses strong antioxidant properties due to the thiol group which easily undergoes redox reactions. Although, as with the majority of tobacco additives, its purpose is unknown there are two possible reasons for its inclusion. L-Cysteine is a known expectorant, so it could be added to promote the expectoration of mucus in the lungs which is promoted by smoking, and it also increases the production off the antioxidant glutathione that is depleted in smokers. The blood should be electrolytically neutral, or very slightly alkaline. The proper pH for blood should be 7 or just above it, and many claim that it should be 7.35. In fact the truth is that your blood pH should be between 7.2 and 7.6. Outside these limits and you could have serious health problems, with your brain particularly being affected. For those who have forgotten their school chemistry, pH is a measurement of the level of acidity or alkalinity of an aqueous solution. Anything over 7 is said to be alkaline, and below 7 is acidic. Where the pH has to be maintained at a certain level, a material called a buffer is used that counteracts the effects of other acids and alkalis to maintain the desired pH range. Buffers are very common in nature, as would be expected of life forms that depend upon water and aqueous solutions for their survival. Blood is an aqueous solution containing plasma, blood cells, nutrients and various other ingredients in both solution and dispersed solid form. The human body possesses a very effective pH maintenance system that depends on various buffers, the kidneys and the lungs. Lets have a closer look at buffers and how they work. pH is, in fact, a measurement of the concentration of hydrogen ions (H+) in a solution. The way a buffer works is to absorb or release H+ ions to keep the hydrogen ion concentration at a specific level. If there are too many H+ ions present in the blood, and it becomes too acidic, then the buffer will mop up the excess. If there are too few, and the blood becomes too alkaline, then the buffer will release more hydrogen ions into the blood. In this way the pH is maintained at the limits mentioned above. Buffers in the human body include some forms of protein, phosphates and also hemoglobin. However, if the pH variations are more than just occasional, the buffers have a limited capability, and a more permanent solution is needed. If the blood is continually becoming too acidic, the bicarbonate ion is used to clear them up. Just as bicarbonate of soda is used to clear up excess acidity in your stomach that causes indigestion, so it can be used to clear up excess acidity in the blood. But how do we get the bicarbonate into the blood? When the lungs inhale oxygen, they then exhale carbon dioxide. The bicarbonate ion, also called the hydrogen carbonate ion, is formed in the blood by dissolved carbon dioxide. The faster we breathe the more carbon dioxide we exhale and the less is left in the blood to form bicarbonate. The slower we breathe, the more carbon dioxide is available in the blood for bicarbonate. Thus, when our blood acidity increases we breathe slower, and when it decreases we breathe faster since less carbon dioxide is needed in the blood to form bicarbonate to neutralize the acid. The kidneys also help to regulate the pH of the blood, although the biochemistry involved is fairly complex, and will not be covered here. It is enough to state that the body has a number of routes by which it can control the pH of the blood. Current thinking is that alkaline and acidic foods should be balanced in your diet in order to place less of a strain on the body’s pH control systems. Since the blood pH must be slightly alkaline, then it might make sense to eat a slightly alkaline diet. However, it is not the actual food that matters, but what happens when the food is digested. Hence, orange juice is classed as an alkaline food even though it is high in citric acid and itself has a low pH. The same is true of lemons. They taste very sour, yet the result after digestion is alkaline. It is the end result that counts. After all, the stomach acid is very strong and very highly acidic, and eating slightly alkaline foods is not going to alter that. The digestive juices have to be highly acidic to break down the organic matter. It had been calculated that a mix of around d 75% alkaline and 25% acidic food is a good combination of the two types to provide approximately the desired blood pH. Among the common acidic foods are meat, fish, poultry, Plums, grains, eggs, wine, cheese and offal. The alkaline foods are most fruits and vegetables, orange and lemon juice, melons, potatoes and chocolate. Hence, it is possible to eat beef and chicken, and have the odd glass of wine so long as we eat plenty of fresh fruit and vegetables. There is nothing at all unusual with that diet, and it underlines the importance of eating a healthy balanced diet. While more greens and whole foods are definitely healthier for you, you should not eat exclusively an alkaline diet. If your blood pH is on the high side of the limit, then you can eat a bit more meat or fish, and if on the low side eat a more vegetarian style diet. It is important, however, that you eat healthily, irrespective of whether you are eating alkaline or acidic foods. Through history, the human race has adopted a more acidic diet than the ancient hunter gatherers. Grains are a relatively recent invention, introduced after the invention of stone tools to mill them, and dairy products are also relatively recent in terms of the whole of human history. Even the consumption of meat only began after mankind learned first how to trap and then developed tools to enable them to kill their prey. Human biochemistry, then, has developed from a predominantly vegetarian diet. However, protein is still very important, and while protein intake is necessary, should comprise no more than 20% - 25% of your total food intake. The rest should comprise of mainly fruits and vegetables, with whole rather than refined or processes foods predominating. Sugar was not eaten in quantity until the industrial revolution. Measuring the pH of your blood is easy to do. It is simply a matter of using pH paper strips and checking the color change with your blood. They are available at most pharmacies and health food stores. If your pH level varies from 7.4 or 7.5, then you should change your diet accordingly. Higher than this, then eat more acidic foods, and if lower you should eat more alkaline food. It is simple equation, and the changes you will have to make to your diet will be minimal. Some of these changes can be made by the use of supplements that are carefully balanced to maintain your blood in the proper pH.

Q. What exactly are maitake mushrooms? A. Maitake (pronounced my-tok-kee) mushrooms are native to the mountain forests of Japan. They are large mushrooms, some growing up to fifty pounds, characterized by overlapping, rippling caps. Mushroom Miracles by Bert Hoffman Energy Times, April 12, 2004 Mention mushrooms and few people immediately recognize these humble fungi as important tools that can be used to boost well-being. More often, folks identify mushrooms as food with a peculiar appeal. But mushrooms' potential impact on health far surpasses their culinary reputation. You don't have to stretch your imagination too far to understand why mushrooms have been much neglected in the modern, Western medical search for plants that can boost health. Unable to make chlorophyll, often dependent on the kindness of other nutrient-producing organisms for their survival, these humble fungal denizens of dark, damp spaces seem to prefer an anonymous existence that is out of sight and out of the consciousness of the scientific mind. However, mushrooms have now assumed a spot in the center of the research spotlight. Because of their potent content of natural chemicals that appear to have a strong influence on human health and well-being, during the past decade mushrooms have been the subjects of intensive studies on how they can be used to reduce the risk of cancer and to treat these diseases. Appropriately, this recent round of research began in a place that has long revered these diminutive organisms: Japan. Japan and other Oriental countries have traditionally recognized the immense value of mushrooms as both food and medicine. Food and Medicine As an ancient Chinese saying notes, "food and medicine share a common origin." And one of the very earliest Chinese medical books, Shen Noug's Herbal (Shen Noug Pen Ts'ao Jing), first noted the extraordinary beneficial effects of eating mushrooms 2,000 years ago, back in the first century. More recently, but still well ahead of Western medical experts, in 1575, Pen Ts'ao Kang Mu (a Chinese compendium of medicinal therapies), written by Li Shi Zhen, outlined the medical benefits of about 20 mushrooms. Nowadays, modern researchers believe mushrooms' usefulness stems from the fact they contain a wealth of antioxidants. But these aren't just any antioxidants. Scientists think that some of these chemicals can potentially drop your risk of cancer, significantly lower blood pressure, help the body fight diabetes, offer protection for the liver, alleviate some of the ill effects of inflammation, lessen the chance of blood clots and help the body's immune system fend off viruses and other microbes. Quite a collection of benefits for these lowly beings! The 10,000-Year Mushroom Through the ages, the reishi mushroom (also known variously as the Mannetake, or 10,000-year mushroom, and the Immortality Mushroom) has been the most popular mushroom in Chinese, Korean and Japanese cultures. The reishi mushroom is frequently depicted in a wide variety of traditional Oriental artwork and even puts in an appearance in Chinese royal tapestries. To some, reishi's power goes beyond the natural and include the supernatural. Originally grown on aging Plum trees, reishi is also sufficiently well regarded to be employed by the Japanese as a good luck charm. But you don't have to believe in the supernatural to be superbly impressed with reishi. The beneficial natural substances in reishi include steroids, lactones, alkaloids, triterpenes and polysaccharides. Large Molecules Of these chemicals, polysaccharides (complex chains of sugars) in particular have intrigued researchers looking into the way mushrooms help health. These polysaccharide macromolecules are very large (for molecules) and complex, a complexity that leads researchers to believe they are capable of conveying a huge amount of biological information that help the immune system stop cancer in its early stages. The differences in the benefits of various polysaccharides stems from their intriguing geometrical shapes. Distinctive Differences Even though two distinctive polysaccharides may contain the same number of carbon, hydrogen and oxygen atoms, their three-dimensional differences-the way they are structured and branch off in different directions-can endow them with very different health benefits. Though they all share a basic structure (usually, these molecules consist of a main chain of atoms with various side chains), the slight variations of the side chains changes their effects. By deciphering the microscopic structures of these molecules, scientists think they are beginning to uncover which ones are most effective against cancer. For instance, in isolating a particularly useful polysaccharide called beta-D-glucan from reishi, researchers have found that this substance fights tumors in lab experiments (Chem Pharm Bull 1981; 29: 3611). Maitake Benefits Meanwhile, beta-D-glucan and other extracts taken from the maitake mushroom have also been shown to possess powerful anti-cancer effects in lab experiments (Immunopharm Immunotox; 19:175). In one instance, researchers in the laboratory who were trying out various substances on prostate cancer cells found that applying extracts of maitake results in a kind of programmed self-destruction (apoptosis) of these undesirable cancer cells (Molec Urol; 4:7). In addition, another substance known as maitake d-fraction has been shown to strongly fight cancer in lab animals-in one study, their liver cancer growths were reduced by up to 90% (Ann NY Acad of Sci; 833:204). At the same time, research in China on people has demonstrated that maitake may help reduce tumors and alleviate the effects of leukemia (Alter Comp Ther 12/98; 420). According to A.S. Daba and O.U. Ezeronye (Afr Jrnl Bio 12/03; 672), "Mushroom polysaccharides offer a lot of hope for cancer patients and sufferers of many devastating diseases. " [These substances support]...a fundamental principle in Oriental medicine...[they help] regulate homeostasis of the whole body and... bring the diseased person [back] to his or her normal state." The Activity of Active Hexose Correlated Compound Active Hexose Correlated Compound (AHCC), an extract taken from shiitake and other mushrooms, is a relatively new substance that is also being researched for its anti-cancer benefits. Studies on AHCC began in Japan in the 1990s when scientists looked at how it could potentially help people recovering from liver cancer. In those tests, researchers found that giving people AHCC apparently helped them survive longer. In the future, scientists feel certain that they will uncover even more anticancer uses for mushrooms and the chemicals they contain. A key advantage to these natural substances is their lack of side effects. For instance, in research on an anti-cancer chemical called lentinan, taken from shiitakes, investigators have found that less than one percent of people experience the kind of discomfort that make them discontinue treatment. (This chemical has been used to treat stomach cancer.) But a long list of beneficial mushroom substances are probably still waiting to be discovered. More evidence of mushrooms' benefits: A study of mushroom workers in a part of Japan called the Nagano Prefecture found that these farmers enjoyed a significantly lower cancer rate than other inhabitants of that part of the country. In the rest of Japan, about one in six hundred people dies of cancer. But that rate death rate drops to about one in a thousand for mushroom raisers who eat a diet heavy in mushrooms. John Smith, PhD, from the University of Strath-Clyde, notes that "...increasing evidence [shows] mushrooms offer a remarkable array of medicinally important compounds that have yet to be evaluated by Western medical scientists." Nutritional Scorecard by Sylvia Whitefeather Energy Times, June 15, 2004 For over 50 years, the federal government has produced Recommended Daily Allowances (RDAs) as guidelines for vitamin and mineral intake. Then, in 1993, the Reference Daily Intakes (RDIs) superseded the RDAs. By applying this new designation, the government's guidelines are now supposed to represent the designated amounts that an average person should consume. With this in mind, and the fact that many experts think you should consume more than some of the RDIs, how does your nutritional scorecard add up? Answering a few nutritional questions can point you in the right direction. Perfect Protein Are you trying to lose weight? If you are, the latest thinking on weight loss opines that eating more protein may be the key to keeping your weight down. Two recent studies published in the Annals of Internal Medicine (5/18/04) found that people who ate a low-carbohydrate, high-protein diet lost more weight and had better cholesterol levels than dieters who ate fewer fatty foods. Both studies found that a low-carb diet can improve your triglycerides (blood fats) and boost your HDL, or good, cholesterol. Eating protein satisfies both tummies and taste buds. Researchers have found that the amount of protein eaten in a meal determines not only how much food you eat but also how satisfied you feel after eating (J Nutr 2004 Apr; 134(4):974S-9S). And when you feel satisfied after eating less food you improve your odds of losing weight. We need about 50 grams of protein a day to support the body's functions. The best sources of protein are eggs, meat, milk, protein shakes and yogurt. Classy Carbohydrates Does your energy level go up and down during the day? To get off the energy rollercoaster, cut down on carbohydrates, and make sure the carbs you do eat are complex. Carbohydrates have been getting some unflattering press lately. Yes, if you want to lose weight, you may want to go on a strictly low-carb diet. But for those not concerned with weight, carbohydrates are the principle source of energy for the body. What's more, even if you do restrict carbohydrates, you should still eat a tiny bit of them. Without some carbs in the diet your body cannot regulate protein or fat metabolism. According to Michael and Mary Eades, MD, authors of The 30-Day Low-Carb Diet Solution (Wiley), "Carbohydrates control insulin and insulin controls your metabolic health." So, make your carbohydrates count. Indulge in complex carbohydrates: whole grains, fruits and vegetables. In those foods, carbs are accompanied by fiber and larger amounts of vitamins and phytonutrients. Other reliable sources of complex carbohydrates are whole wheat bread, brown rice and oatmeal. Fabulous Fiber Are you concerned about your heart health? Fiber from beans, oats, legumes, nuts, rice bran, fruits and vegetables helps stabilize blood sugar and reduce cholesterol. Pectins, found in apples, pears, prunes and Plums, are a particularly useful form of water-soluble fiber. Insoluble fiber, in cereals, wheat bran and vegetables, reduces the risk of colon-related problems. In addition to adding fiber to the diet, dried beans and soybeans have been shown to lower cholesterol, improve vascular health and kidney functioning, preserve bone mineral density and reduce menopausal discomforts (AJCN 1999 Sept; 70(3 suppl):464S-74S). Fiber also promotes good bowel health and encourages the growth of beneficial intestinal flora. You need 25 to 40 grams of fiber daily. If you have cut back on your carbohydrates, be sure to take a reliable fiber supplement. Fantastic Fats Do you have problems focusing on mentally challenging tasks? If so, you should eat more fish and get more of the omega-3 fatty acids that fish and flax contain. Higher levels of this type of fat have been linked to better concentration while performing demanding intellectual work (Lipids 2004 Feb; 39(2):117-23). Fats add flavor to food, making meals taste better. Monounsaturated fats like plain olive oil and canola are liquid at room temperature and are suitable for use in cooking at high temperatures. Researchers have found that a diet high in monounsaturated fat has the ability to decrease LDL (bad) cholesterol (J Nutr 2001; 131:1758-63). Other fats, such as extra virgin olive oil and flaxseed oil, are best used in dishes that don't need cooking, such as salads. Although the RDI for fat is less than 30% of the total calorie intake, some researchers believe that if you eat healthy fat, eating too much is not a concern. Omega-3 fats are available in supplement form. Wonderful Water Do you suffer from dry skin? You may not be drinking enough water. This precious liquid is used by every cell of our bodies and makes up 60% to 75% of our body weight. Water is important for kidney function. Researchers in Italy found that drinking adequate amounts of water can help prevent the formation of kidney stones (Urol Int 2004; 72 Suppl 1:29-33). Your activity level, environment and diet influence how much water you need daily. Try to drink at least eight cups of fluid a day from noncaffeinated, nonalcoholic sources. Voluptuous Vitamins Do you exercise frequently? If you do, you need more antioxidant vitamins like natural vitamin E and vitamin C as well as a healthy supply of carotenoids. A study at the School of Applied Medical Sciences and Sports Studies, University of Ulster, found that exercisers need more antioxidants. Otherwise, their exertion may release an excess number of free radicals (caustic molecules) in their bodies and do damage to the heart arteries and other internal organs. Vitamins, in general, are defined as micronutrients that are necessary for life. They are necessary for the production of energy, a healthy immune system and hundreds of other functions in the body. Vitamins aren't the only substances that produce big benefits in small quantities. Phytonutrients are chemicals in plants that have health-promoting properties. These nutrients are getting more and more attention from researchers who are keeping score on our nutritional requirements. Mineral Crunch Do your meals contain plenty of calcium? If not, you may need supplements to keep your bones strong and help keep your weight down. One study, presented at the Experimental Biology 2003 meeting in San Diego, found that young women who consumed more calcium had better luck controlling their weight. In this research, it didn't take much calcium to make a difference in waistlines. Consuming just one more serving daily (a cup of milk or a thumb-sized piece of cheese, each of which contain about 300 mg of calcium) made, on average, about a two-pound difference. In addition, many experts recommend multimineral supplements (along with multivitamins) to promote better health. A recent study of people with immune problems, for instance, found that those kinds of supplements seem to help boost the immune system (AT News 2004 Feb 27; 398:4-5).

Showers tend to be less drying than baths, but if you prefer soaking in a tub you can use bath oil to lubricate the skin. The general public has finally warmed up to wearing sunblock in the summer, but year-round protection against ultraviolet (UV) rays is crucial to avoid premature aging. There are two types of UV rays, UVA and UVB: the former are responsible for aging and the latter for burning. Although UVB rays produce a more blatant sign of skin damage, it is limited to the epidermis, or outer layer of the skin. UVA rays, on the other hand, don't cause any discomfort, but they penetrate deep to the dermis or second layer of skin. Researchers at the University of Pennsylvania Department of Dermatology have shown that chronic exposure to sunlight can cause holes and breaks in the elastin and collagen fibers that give the skin its shape, definition and supple quality. This damage is what is known as "photoaging." Severely photoaged skin appears dry, scaly, leathery, spotted and deeply wrinkled. While the burning UVB rays are most intense during the summer months, UVA rays are prevalent year-round. Their effect on the skin is cumulative, so that the more you're exposed the more likely your skin is to age prematurely. And as only 14% of Americans wear sunscreen year-round (according to the American Academy of Dermatology), most of us are getting more UVA exposure than we realize. " New clinical evidence proves that sun damages the skin much faster than previously thought," notes Zoe Draelos, MD, clinical associate professor of dermatology at Wake Forest University School of Medicine. "It only takes small amounts of sun exposure, such as walking to the car or to the mailbox, to start skin damage." And for those who engage in popular winter sports like skiing, UVA rays are even stronger at higher elevations. Sunblocks with high SPFs (sun protection factor) guard against UVB rays but they do not block against UVAs, so many sunscreen products do not sufficiently protect against the entire range of UVA rays. Even those of us from the most culinary challenged households can recall the pleasures of the simple Plump white dinner roll or flaky biscuit piled in a basket on the dinner table. Bread has blossomed from sideshow status beside the dinner plate to a full-scale mealtime headliner, a scrumptious star enriched by nutritious grains, herbs, fruits and vegetables. Contemporary cooks build meals around crunchy cornbread or chewy focaccia, presenting soups or salads as satisfying counterpoints. Want to jump into the bread baking basket or hone your skills? Two top vegetarian chefs shared with Energy Times their passion for bread and their expertise in baking. See if you don't find that ardor contagious. Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years. That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting. "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications. "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing. "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside. "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while. "Then there are quick breads that use baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans. "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits. "To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness. "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat. "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet. "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables. "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it. "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes. "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good." Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well: "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen. "Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. I was kneading it all by hand until we got up to 12 loaves a day. "It's high in mineral content and nourishes the body." Sea salt also "guards against moisture loss, so it's ideal for dry skin and helps prevent aging," says Mok. Home Spa It's easy to turn your bathroom into an oasis of calm and create a private spa to call your own. For a sea cure bath, mix together half a pound of sea salt and a pound of baking soda, add to a warm water bath and soak until the water has cooled, says Mok. "It's excellent for soothing itchy and dry skin and helps detoxify by pulling out toxic waste from the pores." Aromatherapy oils, like lavender, make your soak in the tub even more relaxing and luxurious. "It's a great way to de-stress after a long day at work." A seaweed wrap can release water retention and leave legs looking their sleekest, notes Mok. "Just soak legs in a bath of warm water and Epsom salts for 5 minutes, then pat dry. Apply a seaweed mask and wrap legs with plastic wrap and a warm towel. Relax for 15 minutes. Remove towel and plastic wrap and rinse." You can also try a sea salt rub by mixing two cups of kosher salt with one cup of olive oil until it forms a thick paste. (Be careful: the oil is slippery.) "While in the tub or shower, massage it into your skin using long strokes toward the heart, starting with your feet," says Galvez. Rinse off with warm water, use a soft washcloth to remove any residue, pat dry and apply moisturizer. "Your skin will be silky smooth and wonderfully hydrated." To create a spa environment at home, details make all the difference. "Think of your favorite beach get-a-way and go with an ocean theme," says Cox. "Include something for each of the senses." For example, put on a CD that has nature sounds. To capture the color of the water, use sea-colored towels. For scent, light candles that produce the scents of flowering plants (such as Plumeria or citrus). Add "ocean" fragrance beads. When taking a bath, "use shells to scoop out sea salts or dehydrated sea weed and put them around the tub as decoration," says Cox. Smooth on a moisturizer with a sea-scented lotion when you finish your spa treatment. When you make an at-home sea spa experience a regular part of your routine, you reap a bounty of beauty and health benefits. "In just 20 minutes you can have a mini-vacation," says Galvez. "It's cleansing and relaxing." Then you will be ready to dive back into reality with renewed zest.

The Flex Factor by Thomas Dunville Energy Times, February 10, 2004 Arthritis, according to recent research, presents its sufferers with a Catch-22: The nagging pain of this condition can send your spirits Plummeting. But, then, the depression spurred by the disconsolate persistence of arthritic pain can make the condition worse. Part of the trick is not to give in. If you can keep a bright mood even as your joints start to ache, the pain may lessen. While nobody can offer a guaranteed, 100% effective cure for arthritis, you don't have to be a passive victim. Exercise, the proper nutrients and a positive, can-do attitude can ease arthritis pain so effectively that scientists have been able to measure the difference. While medical researchers recognize the existence of over 100 types of arthritis, most people with achy joints suffer from osteoarthritis, which is caused by everyday wear and is found in just about everyone over age 60. When this condition occurs, the body's cushioning, its cartilage, thins and the inner surfaces of joints grind together painfully. Although aging itself increases your chances of enduring achy joints, other factors can also put you in the way of osteoarthritis. If you carry too much weight, it can wear on your joints. In addition, suffering a joint injury when you're young can increase your risk of developing osteoarthritis as you age. In another prevalent form of joint pain, rheumatoid arthritis (RA), the body's immune system mistakenly attacks the membranes lining the joints, causing swelling and pain. About 2 million Americans suffer from RA, which affects women about twice as often as men. Exercise Away Arthritic Woes Weekend warriors, don't despair! Arthritis doesn't have to mean the end of your weekend athletic wars. Matter of fact, in many cases, experts now recommend exercise to reduce the effects of arthritis. While that might sound counterintuitive, a study out of the Netherlands shows that folks in the early stages of rheumatoid arthritis who work out twice a week for about an hour each session may enjoy better physical and mental health than couch potatoes who receive physical therapy. The Dutch study took 150 people, many of whom had just started to suffer from rheumatism, and enrolled them in RAPIT, an acronym for Rheumatoid Arthritis Patients in Training. Rather than letting these folks rest their inflamed joints, twice a week the research team took them to the gym where they did:
When the researchers compared the physical changes in these arthritis sufferers with 150 others with similar arthritis complaints who underwent physical therapy without organized physical activity, they found that after two years the exercisers had benefited greatly. They were stronger and more aerobically fit, could perform everyday tasks more effectively and possessed a better, more optimistic mental attitude (Arthritis and Rheumatism 2003; 48(9):2415-24). However, the exercisers who were already suffering severe rheumatoid arthritis did experience some extra joint damage, so the researchers believe this kind of program is better for those in the early stages of the disease. " This study demonstrates that participation in long-term high-intensity exercise classes decreases the level of psychological distress in RA patients," says researcher Zuzana de Jong, MD, a professor at the Leiden University Medical Center in the Netherlands. Fish Oil Lowers Arthritis Risk Fish oil-in particular, cod liver oil-may be able to help ease osteoarthritis. In looking at the effects of fish oil, researchers at Cardiff, Wales, discovered indications that "...the omega-3 fatty acids in cod liver oil can reduce cartilage degradation and inflammation in arthritic disease," according to Bruce Caterson, PhD, one of the scientists involved. Dr. Caterson adds, "Our most recent work shows that by exposing human osteoarthritic cartilage to cod liver oil in the laboratory for just 24 hours we can turn off, or reverse, the action of the degradative enzymes and inflammatory factors affecting the tissue." John Harwood, PhD, another member of the Cardiff research team, adds, "This is where science and old wives' tales coincide. Our findings are consistent with advice that taking cod liver oil in early adulthood could prevent the onset of osteoarthritis and would reduce the harmful symptoms associated with the disease." Dr. Caterson further explains that the omega-3 fatty acids in cod liver oil inhibit enzymes that break down aggrecan and collagen, substances that cushion joints. Consequently, cartilage stays healthier, inflammation is lessened and arthritic pain decreases. The anti-inflammatory action of omega-3s in fighting rheumatoid arthritis is also supported by studies performed in the US (Am J Clin Nutr 2000; 71(1 Suppl):349S-51S). Other research shows that if you take natural vitamin E along with fish oil, you may improve even further your odds of relieving arthritis or lessening its effects (JACN 10/30/00). Glucosamine Repair Glucosamine, the stuff that cartilage is made from, has been shown to lower the risk of arthritis and possibly relieve its pain. This natural substance, made from a sugar and a molecule called an amine, is a building block of joint tissue. As a result, experts believe, when you take it in supplemental form, the body may use it to repair joints that have been damaged by arthritis. For instance, an investigation of osteoarthritis of the knee performed at the University of Liege in Belgium showed that taking glucosamine could stop joints from deteriorating. The study, which involved more than 200 people suffering from osteoarthritis, found that in three years of taking glucosamine supplements, many arthritis sufferers found that their condition actually improved (Lancet 2001 Jan 27; 357). Other Arthritis Fighters Chondroitin sulfate is another material that goes into the making of cartilage. Chondroitin helps cartilage stay hydrated and permits the flow of nutrients through the joint tissues. In addition, researchers believe that chondroitin helps fight inflammation, which can otherwise cause pain and stiffness as well as joint destruction. Taken together with glucosamine, chondroitin is believed to hasten the healing of bone and cartilage. Another substance that may help ease the ache of arthritis is methylsulfonylmethane (MSM), a naturally occurring sulfur-bearing compound. "MSM appears to have anti-inflammatory effects when administered orally, intravenously or topically," says MSM researcher Stanley Jacob, MD, FACS, of the Oregon Health & Science University. That means it has shown an ability to reduce the heat, pain and swelling associated with arthritic conditions. MSM may also be able to reduce muscle spasms around joints and reduce the formation of scar tissue. Herbal Aid Herbal medicine has long been used by folks with achy joints. The yellow spice turmeric (Curcuma longa), a staple of Indian cooking, is a traditional Indian remedy for arthritis because of its painkilling properties. Ginger (Zingiber officinale), another culinary favorite, restrains the production of inflammatory chemicals called cytokines. And willow bark (Salix sp), the source of aspirin, is longer-acting and doesn't irritate the stomach lining. Those who suffer arthritis know that its pain and discomfort are often no laughing matter. But if you don't take arthritis lying down and manage to keep a smile on your face-and avail yourself of nature's remedies-you can get the upper hand on this often debilitating condition.

Suddenly, a burning sting wakes you with a jolt as you begin to urinate. One doctor visit later, you're on a strict antibiotic regimen to treat your urinary problem. Urinary tract infections (UTIs) affect 8 million to 10 million Americans, mostly women, each year. The culprit: the bacteria E. coli. Neglect may allow a UTI to spread to the bladder (where it causes cystitis), or kidneys: possibly life-threatening. The good news: medical experts recognize that a diet change and avoiding certain risk factors may help fight off UTIs. According to the Mayo Foundation for Medical Education and Research, about 20% of women experience UTI at least once, and many suffer recurrences. Sexually active women tend to incur more UTIs because of anatomical vagaries: the bladder sits just above the vagina, while the urethra, a structure from the bladder to the outside, protrudes in a tubelike ridge down the top part of the vagina to just above the vaginal opening. This structure allows sexual intercourse to push infecting bacteria into the urethra. Echinacea: This North American herb bolsters immune function and is believed to possess antiseptic and antiviral properties which may rev up the white blood cells that fight infection, reports John Cammarta, MD, in his book A Physician's Guide To Herbal Wellness (Chicago Review Press). While cranberry is most commonly recommended for prevention, other herbs can also kill bacteria and are diuretic. These include: Barberry: "The chemical berberine found in this herb is an impressive infection fighter. Studies show it kills the bacteria responsible for urinary tract infections," says author Jim O'Brien in his book Herbal Cures for Common Ailments (Globe). O'Brien recommends making a tea with one half teaspoon of powdered root bark, then put it on low boil for 30 minutes.
