First of all, remove the green tops and leaves from the roots making sure you leave a two inch stem, wash and rinse thoroughly in cold water. Leaving a short stem ensures that nutrition is not lost from the roots when they are boiled.

Place the prepared beetroot in a large pan of boiling water. Cook for 10 to 15 minutes until the skins soften. While you're waiting for the beetroot to cook, thoroughly wash the bottles, lids and rings making sure you rinse them well. Next, add salt to each jar. You will need 1 teaspoon for a quart jar and half this for a pint jar.When the beets have cooked for 15 minutes, drain the beetroot and peel the skins. A lot of people are just learning about herbs and have a lot of fear that if you tell someone about an herb they might overdose. No body wants to accidently hurt someone, but we must remember that herbs are food. So the real question is can we overdose with food and what is that in relation to a chemical overdose. Everyone should read the label on anything they put into their mouths so that they are responsible for their bodies. If we put something into our body, we are responsible for whatever action takes place.

A chemical drug overdose is extremely dangerous. There are warnings on bottles to keep them away from children and elderly people. Overdosing also includes the problem of mixing drugs, which causes serious problems. One should be sure to ask their pharmacist about the bad side affects of any drug he or she takes. The overdose of chemicals or drugs into the human body is undoubtedly dangerous and potentially fatal.

An overdose of herbs or food often causes an allergic reaction to that specific food or herb. From an herb standpoint, there are occasionally people who are allergic to a specific herb, which is why it is recommended that one starts on any herb at a very low dosage and then slowly builds up to the needed level. An overdose on herbs does not put the body into a life threatening situation. Rather, the body normalizes itself because it is simply dealing with a food.

Herbs and foods were created by nature to be safe for all people. Where as man-made chemicals are dangerous to all. One must use moderation in all things, as an overdose of herbs causes an allergic reaction that could be avoided with a little wisdom. Anyone eating any herb for the first time should begin at a low dosage and watch the bodily reaction for a couple of days. If not heavy cleansing of allergic reaction is felt, than more can be eaten.

Acidophilus is correctly named Lactobacillus acidophilus, and is one species of Lacobacillus used commercially in the preparation of certain types of yoghurt. The name refers to the fact it is found in milk (lacto), is rod-like in shape like many bacteria (bacillus) and it likes acidic conditions (acidophilus). It not only likes them, but creates them.

In fact, acidophilus thrives at a pH of 4-5 or less, and occurs naturally in the gastrointestinal tract of humans and animals, and also the mouth and vagina. It ferments milk to lactic acid, and dies in the presence of sunlight, excessive moisture and at high temperatures. Some, but not all, strains are probiotic, or ‘friendly’ bacteria that aid digestion and help to protect against harmful bacteria and their toxic emissions.

The fermentation of nutrients by friendly bacteria produce acids, such as the lactic acid previously referred to, hydrogen peroxide and other substances hostile to harmful organisms, and also reduces the population of harmful bacteria by competing for their food. There are additional health benefits that shall be discussed later, but first some comments about the stability of acidophilus to heat.

The growth rate of acidophilus reaches an optimum at around 36-37F (2.2C), and it tends to die off at temperatures much above this over a period of time. It also tends to be sensitive to oxygen and moisture, and if exposed to heat, moisture and oxygen, a supplement will lose its potency over time. This is true of all such supplements, and after purchase must be quickly refrigerated. It is possible, however, to purchase stabilized forms of acidophilus that die off slower than normal. This extra resistance is built in during the manufacturing process, and many forms of acidophilus claim to be stable. Although there will never be a truly stable form of the probiotic, these stabilized versions do last longer than those not claimed to be so.

During manufacture, the bacteria are first concentrated by removing the excess liquid by means of sedimentation, ultra-filtration, reverse osmosis and centrifuging. A substance is then added to protect the bacteria from the shock of freezing and the acidophilus freeze dried. A stabilizer is then added to maintain its properties between freezing and consumption.

It has also been found that bacteria grown at higher pH levels last longer than those at lower pH. The packaging is also important, and since the bacteria are sensitive to oxygen, nitrogen flushing the bottles will improve the stability of the product. Glass bottles are less porous than plastic, and so is the preferred packaging material for maximum stability and life. Another factor is refrigeration. If you keep the bottle in the fridge it was last a lot longer than at room temperature, but take care not to freeze it since acidophilus does not freeze well. If it is not refrigerated then it will quickly lose its potency.

The form in which you take the supplement is immaterial regarding the potency: at least initially. However, through time the powder will become less potent quicker, because it will adsorb oxygen and moisture. Otherwise the form in which it used is immaterial. So, yes, acidophilus can be stabilized, but only for a while, and if allowed to warm up to room temperature in the presence of oxygen will quickly degrade, although this takes more than just a day or two.

Many health benefits are claimed for Lactobacillus acidophilus, although your daily consumption to achieve these should be at least 2 billion CFU, and preferably 5 billion. You can also fortify the bacteria with a prebiotic of fructooligosaccharides (FOS). These provide nutrition for the acidophilus and accelerate its growth.

One thing to be careful of is assuming that yoghurt contains acidophilus. It does not contain sufficient to be of benefit to you. Commercial yoghurt acidifies over time and kills off the bacteria, so commercial yoghurt sitting on a supermarket shelf has very little beneficial bacterial content. Natural yoghurt is better, and certainly contains beneficial bacteria, but not enough to make a significant difference. A supplement is therefore needed if you are to keep your intestinal tract sufficiently healthy. If you cannot take dairy products, acidophilus is available in non-dairy form. The major health benefits they impart are:

1. Digestive Problems.

Acidophilus can control many types of digestive disorder, particularly traveler’s diarrhea. In fact if you are traveling to countries where drinking water might be a problem, also take some acidophilus and this will tend to prevent you from becoming ill. Even if you drink bottled water, there are still washed salads, beverages made with local water and showers and the like whereby you could ingest some dodgy water.

2. Constipation

Acidophilus, especially when supported by FOS, helps both to hydrate the feces, and improve their transport through the colon, an also to improve the general health and well-being of your entire intestinal system.

3. Yeast Infections (Candidiasis)

Acidophilus possess antifungal properties that kill off yeasts, particularly Candida albicans found in the vagina. This is due to the lactic acid produced by the bacteria, and there is evidence that gastrointestinal yeasts are affected in the same way by the oral probiotic. Furthermore, when bacteria and yeasts are killed off by medication, including friendly bacteria, the sites they occupied on the intestinal walls become free and acidophilus should be present to take these up and prevent any more yeast or bacterial infections. That is one reason why probiotics should be taken immediately after a course of antibiotic treatment.

4. Immune System Support

Lactobacillus acidophilus is believed to modify the balance of microbes in the intestine so as to lead to an enhanced production of antibodies, and white blood cells with increased phagocytic activity. The bacteria also appear to have some reducing properties, which can also give support to the immune system through the resultant antioxidant properties.

However, by far the most important property of probiotics are their properties in acidifying the intestinal tract, and so rendering them less attractive to harmful pathogens, and in producing hydrogen peroxide which has a similar effect. They also produce natural antibiotics, and there is now doubt that a supplement of acidophilus will provide you with several health benefits and also make you feel fitter and more alert.

Did you know there are Persistent Organic Pollutants (POPs) that can have an endocrine disrupting ability? Meaning, these chemicals can have an estrogen like and anti-androgen effect on the body, disrupting the normal function of our endocrine system which can cause all sorts of health issues.

Back in the industrial boom directly following world war II these chemicals were widely used in plastics, cosmetics, personal care products, cleaning agents, clothing, household furnishings, and decorations, food and water, fertilizers, and pesticides and fungicides. These chemicals are being banned by the government but are not gone all together yet.

Endocrine disruptor chemicals are fat soluble which means when consumed they are stored by the body in our fat stores. This makes these chemicals a persistent pain in the butt for a very long time since fat soluble substances tend to be stored and slowly released; some claim the release can be years and years down the road.

These types of toxins can easily leach into water including juices and can vaporize into the air that we breathe in to our lungs. The heating of plastic containers either by microwave or a hot cup of tea can easily leach these phthalate’s in to food or drink exposing humans to high amounts of this toxin.

Also, Parabens are high on the watch list for those health minded. Parabens are a group of synthetic chemicals used as a preservative in cosmetic and pharmaceutical products. The most common parabens are methylparaben, propylparaben, and butylparaben. These three are used as a bacteriocidal and fungicidal agent in many products we use every day. The FDA does not require approval of cosmetic ingredients before they reach the market place so cosmetic manufactures are free to use what ever they want in their products.

Parabens have been shown to have a mild estrogenic affect on the body, and are in practically all personal care products on the market today. If you are applying a name brand cosmetic onto your skin daily, take a look at the label to see if Parabens are used.

For those looking to stay away form all the above listed toxins look for products packaged in glass, PETE or HDPE bottles and containers. Look for packets lined with saran, and can linings made of polyolefins. Use biodegradable household cleaning agents and avoid sprays and insecticides. Cleaning supplies are not required to list ingredients so it is always buyer beware unless the label states it is free from PCBs, Parabens, and POPs.

Finally, when buying furniture avoid furniture that contains flame retardant PBDEs and limit children to the exposure of such furniture. Exposure to PBDEs can lead to some of the above listed symptoms and cause health problems. Staying healthy is a tough task with all the environmental toxins we face. By buying organic foods and avoid the above listed chemicals one can live longer and maintain better health over a lifetime.

Health experts keep changing the storey on fats. First we were told that polyunsaturated fats were better than saturated fats. Then it was discovered that refined polyunsaturates were favorite targets for free radical attack. Next, monounsaturated fats took center stage and have remained in the spotlight ever since. The Mediterranean Diet, with its high intake of olive and other oils high in monounsaturates, offers several important safeguards against cardiovascular disease, cancer and overall mortality. While monounsaturated fats are important for maintaining optimum health and smooth supple skin, it’s the kind of fatty acids and antioxidants they contain that make up the real story.

Designer Oils

Dark green unrefined “extra Virgin” olive oil has a delightful full bodied flavor due to its natural antioxidants. Not only are the oils of various olive cultivars distinctive, they all help fight arterial plaque buildup. Borage oil, extracted from the seed of the blue, star shaped borage flower, is gaining much attention by alternative health practitioners and main stream medicine alike for its profound medicinal properties. Whereas the oil is getting all the redit, it is actually the oil’s active component, gamma linoleic acid (GLA), which has drawn the interest of researchers. The majority of the early studies done on GLA, dating back to the late 1940’s, were conducted with the oil of evening primrose. Why GLA Supplementation?

A body with healthy biochemistry has the ability to produce GLA from the most essential fat linoleic acid. Linoleic acid is found most abundantly in the omega 6 family of oils, including safflower, sunflower, and corn oil. A prime example is the hydrogenation process utilized to convert liquid polyunsaturated oils into semi-solid, altered saturated fats for use as margarine and commercially processed foods. Hydrogenation is accomplished by subjecting the oils to temperatures in excess of 250 C, and bombarding them with hydrogen ions in the presence of the heavy metal nickel, which irreversibly changes the chemical structure of the fatty acid molecule from a healthful “cis” configuration to a dangerous “trans” configuration. When these products are eaten in excess they are known, in some cases, to block the enzymatic conversion of linoleic acid to GLA. In addition to the damaging effects of hydrogenation, certain essential fatty acid nutrient cofactor deficiencies may exist to further complicate the conversion. Vitamins pro-A, A, C, E, B-2, B-3, B-6, pantothenic acid, B-12 biotin and the minerals calcium, magnesium, potassium, sulfur and zinc are all involved in essential fatty acid (EFA) metabolism.

Particular interest should be given to those afflicted with diabetes, cystic fibrosis, asthma, alcoholism, multiple sclerosis. For a myriad of reasons, including cofactor deficiencies, these individuals lack the enzymatic ability to convert linoleic acid to GLA and must obtain a direct source of GLA for proper hormonal regulation. In addition, excessive consumption of animal fats containing acachidonic acid competes for the same metabolic pathways occupied by GLA, thus minimizing its biological action.

These potential negating effects can simply be diverted to consuming a food source or supplement containing GLA which bypasses any previously necessary enzymatic conversion and floods the metabolic pathways with beneficial GLA. Adverse Reactions to Foods and Dietary Supplements

Answers to common Questions

The Journal of the American Medical Association reports that between 60,000 and 106,000 deaths per year in the United States are caused by prescription drugs. See JAMA, April 15, 1998 – Vol 279, No. 15. Fortunately, adverse reactions to foods and dietary supplements are far more rare than adverse reactions to drugs. However, we each consume a larger variety and quantity of foods than drugs. Because of this, and because each of us can react differently, an allergic or isolated reaction to a food or supplement is a possibility. Here’s helpful information about what to do if you or someone you care for has what appears to be an adverse reaction to a food or dietary supplement.

What types of reactions could I have?

The most common adverse reaction is an allergic reaction. In order to reduce the risk of an allergic reaction, carefully read all labels and buy products from reputable manufacturers who accurately disclose the ingredients in their products. If you need help finding these manufacturers, ask your local health food retailer for recommendations.

How do I know what caused my reaction?

Take time to carefully review what might have caused the reactions. Doctors and experts in toxicology look at several different factors in trying to determine the cause of a particular reaction.

Ask yourself:

1. Is this reaction a side effect of drugs I am taking?
2. Did I eat anything different in the last few days?
3. Have I used any new or unusual cosmetics or other personal care items?
4. Could my symptoms be related to an underlying illness?
5. Am I drinking to much coffee or alcohol or smoking to much?
6. Do I have a healthy diet?
7. Am I sleeping enough?
8. Have I been exposed to anything unusual in the air or my environment?

Asking your self these questions can help limit the number of possible causes and may lead you to an answer more quickly.

What should I do if I have an adverse reaction?

Weather or not you know the potential cause of the reaction, follow these steps:

  • • Seek immediate medical attention where appropriate. If the condition is serious or could become serious, call 911 or go to a hospital emergency room.
  • • Contact the manufacturer. Responsible manufacturers print a 1800 number on their product bottles and provide knowledgeable staff who can answer questions or direct you to appropriate answers or care. If your product doesn’t include a 1-800 number, contact the retailer where you purchased the product.
  • • Report the problem to the proper government agency. The FDA and other federal agencies are responseible for removing unsafe products from the market.

    How can I reach the FDA or another government agency about my concerns?

    Various state and federal agencies employ personnel who can help respond to concerns or questions about adverse reactions. Following is contact information for some of the agencies:

  • • For emergencies, call FDA at its main emergency number (1-301-443-1240), 24 hours per day.

The desire to urinate usually starts when the bladder has reached about half its physiologic capacity. This desire is suppressed by the cerebral cortex until a suitable time and place has been chosen. Butterbur relaxes the detrusor muscle, which reduces pressure on the bladder and thus relieves the urge to urinate. Each capsule contains 50 mg of standardized butterbur, yielding 7.5 mg of the active ingredients petasin and isopetasin.     An estimated 10 quadrillion bacteria make their home in the average digestive system. Fortunately, less than one percent of the 400 different species found in the intestine are potentially harmful. The majority of intestinal flora are friendly bacteria, otherwise known as probiotics. These probiotic bacteria support good health by limiting the growth of harmful bacteria, promoting good digestion and increasing resistance to infection.*1

    Probiotic bacteria are completely non-toxic. In fact, friendly bacteria have been used safely and effectively for more than 8,000 years, proving their value to human health.*2  Most often, probiotics have been consumed as part of  cultured foods, such as acidophilus milk, yogurt, soy tempeh, and idli (cultured wheat).     Meanwhile, well-known actor Woody Harrelson, a fan of raw, vegetarian foods, professes that his devotion to uncooked veggies only reached firm ground when he became convinced they could and would taste fantastic. The tastiness of the recipes we've included with our inspection of the rarefied world of celebrity food prove that the celebrity predilection for these dishes keeps taste buds happy.

    For Love of Pie

    When preparing your holiday fare this season, taking tips from the dietary habits and favored dishes of celebrities may perk up your lunches and dinners. Healthy dishes can be delicious!
