Iron holds a crucial role in the physiology of the body. It is a central part of the haemoglobin and myoglobin molecules. Iron is indispensable to the body’s ability to transport gases into and out of the cell. It is necessary in many important enzymes that are involved in energy production, metabolism, and DNA synthesis. Some iron is lost when red blood cells are broken down and excreted in the bile. However, because of iron’s importance, the body is able to conserve iron at all costs, as the kidneys do not eliminate the metal.
The dark side of iron supplementation comes when iron is consumed in amounts that are excessive to the body’s needs. Although unbound iron is more likely to cause oxidative challenges through the generation of free radicals, excessive iron supplementation in any form can cause huge problems for the cell. The Overload of iron can cause deterioration of the gut lining, vomiting and diarrhea, abdominal and joint pain, liver damage, loss of weight, and intense fatigue. In children, acute doses as low as 3 grams can cause death.

Disorders in iron accumulation contribute to a whole host of other disease states, all of which are degenerative in nature. Studies have shown that chronic iron Overload contributes to increased infections, cancer, arthritis, osteoporosis, diabetes, and various congenitive dysfunctions. The only way to remove excess iron is through blood letting, unless you are a woman with regular menses. That is why, for men, iron Overload can provide quite a problematic issue. Recent research has found that long-term supplementation with iron at doses less than 5 mg/day can lead to iron-Overload toxicity. Because of this, it is recommended that the upper limit of iron intake be at 5 mg/day when considering a product’s rating. Any product that contains iron at a daily dose greater than this limit is penalized with this rating criterion.

Inflammation is a normal part of the body’s defense against pathogens. The increase in body temperature, flood of toxic free radicals and inflammation-signaling proteins, and release of killer macrophage cells are the main signs of an inflammatory event that is the body’s long-established means of defending against a clear and present danger. This adaptive response can now become a cause for debilitating disease. It is even thought that the aging process may be linked to the very defense mechanism that keeps us healthy when we are young. As we grow older, our ability to regulate inflammation begins to diminish. Instead of protecting us, inflammation becomes silent and systemic, allowing degenerative disease to take root. The symptoms of silent inflammation are extremely different from acute inflammation of redness, heat, swelling, and pain, and can lie undetected until it has been around for far too long.
Silent inflammation causes the body to turn on itself, as its immune system begins attacking its own organs. Over time, inflammatory cytokines such as C-reactive protein, interleukin-6, and inflammation producing eicosanoids like prostaglandin E-2 and leukotrienes B-4, start to destroy tissue all over the body. In response to this attack, the body produces even more inflammatory cytokines and free radicals, which creates a self-perpetuating cycle. Silent inflammation damages arteries, destroys nerve cells and organs, compromises the immune system, and promotes cancerous growths. Copper is an essential trace mineral that can impair the ability of white blood cells to fight infection with even the slightest deficiency. If the body does not get a sufficient amount of copper, hemoglobin production decreases, causing copper-deficiency anemia to potentially result.
There are a variety of enzyme reactions that require copper. Copper is essential as a cross-linking agent for elastin and collagen. It is also a catalyst for protein reactions and is also needed for oxygen transport. Copper is used for the metabolism of essential fatty acids. Copper deficiency can result in a variety of symptoms. Among these symptoms are diarrhea, inefficient utilization of iron and protein, and stunted growth. The development of nerve, bone, and lung tissue can be impaired in babies and the structure of these body parts may also be altered.

The following nutrients are helpful in combating copper deficiency. The dosages recommended are for adults unless otherwise specified. For a child between the ages of twelve and seventeen, the dosage should be reduced to three-quarters the recommended amount, while one-half the recommended amount should be used for a child between six and twelve. A child under the age of six should use one-quarter the recommended amount.
Copper should be taken in dosages of 5 mg daily for a month, and then reduced to 3 mg daily. This helps to restore copper in the body. It is recommended that a copper amino acid chelate is used. 30 mg of zinc should be taken daily, as it is needed to balance with copper. This amount should not be exceeded and a zinc chelate form should be used. Iron should be taken as directed by a physician, as copper deficiency may cause anemia. Be sure to use a chelate form and do not take iron unless anemia is diagnosed. Additionally, a multivitamin and mineral complex should be taken as directed on the label since all nutrients are necessary in balance.

Potassium And Magnesium

Potassium and magnesium are the two most common minerals found within the cells of your body. They each have specific individual functions within your body, and together help to maintain the correct balance of electrolytes and the proper functioning of smooth and striated muscles. That includes allowing muscles to relax properly rather than to cramp.
Before discussing this, let's have a look at the major individual properties of these two metallic minerals with respect to the body's biochemistry.
Magnesium is needed to ensure the proper functioning of the sodium/potassium pump. This is a complex topic, and we shan't dwell on it at length here, although the basics are that it is responsible for the movement of ions into and out of cells. Sodium and potassium ions are moved in opposite directions across the cell plasma membrane, three sodium ions being pumped out for every two potassium ions pumped into the cell.
This is of particular importance to nervous cells responsible for transmitting impulses in response to specific stimuli. In the event of a magnesium deficiency, this pumping action is impaired and the sodium/potassium balance within and without the body cells are imbalanced. This in turn impairs the response of nerve cells to stimuli. Both magnesium and potassium can be depleted through the use of diuretics, in which case a magnesium supplement can redress the imbalance.
There are several consequences of such an electrolytic imbalance, some having potentially serious consequences. Many can cause death if left untreated, although the symptoms usually allow appropriate medical treatment prior to the condition becoming fatal, such treatment frequently involving administration of magnesium and potassium. Among these are:
Calcium Overload in certain heart cells that reduces the effective use of oxygen and ATP and causes overactive contraction of the heart muscle.
Spasms in coronary blood vessels.
Over-activity of the striated muscle fibers, leading to cramps in the calf and thigh muscles, for example.
Cramp and pain in the smooth muscles of hollow organs such as the bladder or uterus that can also cause premature labor.
Several heart problems caused by an increase in energy consumption and a calcium Overload and potassium deficiency that leads to cardiac ischemia and arrhythmia that continue to create a serious medical condition and hazard to life. Potassium, that can stop the heart if given in excess, can be just as harmful if present in too small a concentration.
The whole situation creates a self-perpetuating cycle that can be broken by a magnesium and potassium supplement that restores the correct gradient of potassium and magnesium across the cell membrane, improves the function of the sodium/potassium pump and reduces the excess cellular calcium by replacing it with magnesium.
This only works if both potassium and magnesium are taken together: just either alone is no good. It also takes time for the effect to occur, so the supplement is not suitable for emergency use. A regular supply can prevent the condition occurring.
There are many other properties that magnesium and potassium possess with regard to the body's biochemistry such as the effect of magnesium in activating certain enzymes. However, in discussing relaxation, both of these essential minerals have a significant part to play.
It has been mentioned that a magnesium and calcium deficiency causes spasms and cramps in the smooth and striated muscles, and the corollary is also true. Magnesium and potassium can be used to relieve such cramps, and relax muscle tissue. Hence, because it can relax excited smooth bronchial muscle tissue, magnesium can be used to relieve asthma attacks. The intravenous administration of magnesium is, in fact, an accepted and proven clinical treatment for acute asthma attacks.
In the same way, magnesium has been used to treat muscle spasms and cramps. Again, it is not an immediate treatment for emergency use, but can be used over a period of days to treat athletes with a history of muscle spasms. Such spasm frequently occur after prolonged periods of exercise, when magnesium and potassium, among other electrolytes, can be lost through a combination of sweating and urination.
However, this is not the only means by which magnesium is lost from your body cells, and probably not even the main one. Less obvious, but likely of more importance, is the transfer of magnesium from the plasma into the red blood cells (erythrocytes). The amount by which this occurs is directly proportional to the more anaerobic the exercise, hence the need by athletes and weightlifters for more magnesium. It can be rapidly lost through exercise with insufficient oxygen, and cause their muscles to cramp up.
Magnesium deficiency is common in Americans, although factors such as high calcium intake, alcohol intake, diuretics, and kidney and liver disease are more responsible for this than a dietary deficiency. Potassium is readily available in bananas, brown rice, potatoes, tomatoes and oranges and dietary deficiencies are not common although supplements are readily available.
Magnesium is also known to play an important part in the secretion and use of insulin by the body. Supplementation with magnesium can help diabetics to make best use of insulin, become more tolerant to glucose and improve the fluidity of the membrane of red blood cells. The mineral; also has a small but definite effect in lowering blood pressure. Other uses for magnesium supplements include congenital heart failure, where higher magnesium contents lead to greater life expectancy and chronic fatigue syndrome (CFS) where magnesium supplements can significantly increase energy levels.
Other uses to which your body puts potassium other than to allow proper muscle contraction and relaxation and to maintain the balance of electrolytes in the body, includes the function of brain and nerve neurons. This, however, is academic since should your potassium levels drop by 50%, death would result.

Chloride: The Forgotten Essential Mineral
Chloride is an “essential” mineral for humans. It is abundant in ionic trace mineral preparations. It is a major mineral nutrient that occurs primarily in body fluids. Chloride is a prominent negatively charged ion of the blood, where it represents 70% of the body’s total negative ion content. On average, an adult human body contains approximately 115 grams of chloride, making up about 0.15% of total body weight.1 The suggested amount of chloride intake ranges from 750 to 900 milligrams per day, based on the fact that total obligatory loss of chloride in the average person is close to 530 milligrams per day. As the principle negatively charged ion in the body, chloride serves as one of the main electrolytes of the body. Chloride, in addition to potassium and sodium, assist in the conduction of electrical impulses when dissolved in bodily water. Potassium and sodium become positive ions as they lose an electron when dissolved and chloride becomes a negative ion as it gains an electron when dissolved. A positive ion is always accompanied by a negative ion, hence the close relationship between sodium, potassium and chloride. The electrolytes are distributed throughout all body fluids including the blood, lymph, and the fluid inside and outside cells.2 The negative charge of chloride balances against the positive charges of sodium and potassium ions in order to maintain serum osmolarity.
Pivotal Roles of Chloride in the Body
In addition to its functions as an electrolyte, chloride combines with hydrogen in the stomach to make hydrochloric acid, a powerful digestive enzyme that is responsible for the break down of proteins, absorption of other metallic minerals, and activation of intrinsic factor, which in turn absorbs vitamin B12. Chloride is specially transported into the gastric lumen, in exchange for another negatively charged electrolyte (bicarbonate), in order to maintain electrical neutrality across the stomach membrane. After utilization in hydrochloric acid, some chloride is reabsorbed by the intestine, back into the blood stream where it is required for maintenance of extracellular fluid volume. Chloride is both actively and passively absorbed by the body, depending on the current metabolic demands. A constant exchange of chloride and bicarbonate, between red blood cells and the plasma helps to govern the pH balance and transport of carbon dioxide, a waste product of respiration, from the body. With sodium and potassium, chloride works in the nervous system to aid in the transport of electrical impulses throughout the body, as movement of negatively charged chloride into the cell propagates the nervous electrical potential.
Deficiency of Chloride
Deficiency of chloride is rare. However, when it does occur, it results in a life threatening condition known as alkalosis, in which the blood becomes overly alkaline. A tedious balance between alkalinity and acidity is in constant flux, and must be vigilantly maintained throughout the entire body. Alkalosis may occur as a result of excessive loss of sodium, such as heavy sweating during endurance exercise, and in cases of prolonged vomiting and diarrhea. Symptoms include muscle weakness, loss of appetite, irritability, dehydration, and profound lethargy. Hypochloremia may result from water Overload, wasting conditions, and extensive bodily burns with sequestration of extracellular fluids. In a situation in which infants were inadvertently fed chloride-deficient formula, many experienced failure to thrive, anorexia, and weakness in their first year of life.3
Excessive intakes of dietary chloride only occur with the ingestion of large amounts of salt and potassium chloride. The toxic effects of such diets, such as fluid retention and high blood pressure, are attributed to the high sodium and potassium levels.4 Chloride toxicity has not been observed in humans except in the special case of impaired sodium chloride metabolism, e.g. in congestive heart failure.5 Healthy individuals can tolerate the intake of large quantities of chloride provided that there is a concomitant intake of fresh water. Other situations in which increased blood levels of chloride are seen include diseases of improper waste elimination that occur in kidney diseases. Excess chloride is normally excreted in the urine, sweat, and bowels. In fact, excess urinary excretion of chloride occurs in high salt diets. Excessive intakes of chloride can occur in a person with compromised health in addition to an unhealthy diet. However, those that follow a healthy diet and lead an active lifestyle may need to consider supplementing their diet with this important mineral.
Chloride vs. Chlorine
The mineral supplement chloride is very different from the gas chlorine. While elemental chlorine is a dangerous gas that does not exist in the free elemental state in nature because of its reactivity, although it is widely distributed in combination with other elements. Chloride is related to chlorine however, as one of the most common chlorine compounds is common salt, NaCl. Chloride is a by-product of the reaction between chlorine and an electrolyte, such as potassium, magnesium, or sodium, which are essential for human metabolism. Chloride salts are essential for sustaining human metabolism and have none of the effects of isolated chlorine gas.
Sources of Chloride
Chloride occurs naturally in foods at levels normally less than 0.36 milligrams per gram of food. The average intake of chloride during a salt-free diet is approximately 100 milligrams per day. Unfortunately, chloride is found commonly combined with undesirable dietary sources. The most common of these negative sources is table salt. Table salt is made from a combination of sodium and chloride ions. Other unhealthful sources include yeast extracts, processed lunchmeats, and cheeses. Healthier sources of chloride include kelp (seaweed), ionic trace minerals, olives, rye, tomatoes, lettuce, and celery, although not in large enough amounts to supply the needs of an active adult.6 In its original form, however, chloride is leached from various rocks into soil and water by years of weathering processes. The chloride ion is highly mobile and is transported to closed basins, such as the Great Salt Lake, or oceans.7
Chloride is a highly important, vital mineral required for both human and animal life. Without chloride, the human body would be unable to maintain fluids in blood vessels, conduct nerve transmissions, move muscles, or maintain proper kidney function. As a major electrolyte mineral of the body, chloride performs many roles, and is rapidly excreted from the body. Active adults that eat a healthy diet devoid of salt and illnesses in which vomiting and/or diarrhea are profuse warrant the supplementation of additional chloride. Replacement of chloride is essential on a daily basis to maintain regular metabolic function. Chloride is safely utilized by the body, without negative health effects. During the thirties and forties of a woman’s lifetime, progesterone production can decrease resulting in shorter intervals between periods. For example, when the ovaries produce progesterone for only 9 days rather than the normal 14, menstruation may occur every 24 days rather than the usual 28 days. In addition, low levels of progesterone coupled with an estrogen dominance can cause the lining of the uterus to build up leading to abnormally heavy menstrual flows or even spotting between periods. Many women who are in perimenopause (the years just prior to the onset of menopause) experience these symptoms in combination with intensified PMS. Weight gain, bloating, headaches, irritability, depression, and anxiety are common complaints for women in their late thirties and throughout the forties. Frequently, these women had no cycle-related problems in their earlier years and suddenly become all to aware of a whole host of troubling symptoms. More often than not, a drop in progesterone and an estrogen Overload are to blame.
Just because a woman no longer ovulates or has a menstrual cycle does not mean that she no longer needs to achieve a proper ratio of hormones. On the contrary, it is during these years that the right kind of hormonal supplementation needs to be implemented or menopausal symptoms and diseases like osteoporosis may develop. Today, estrogen replacement therapy (ERT) is recommended for many postmenopausal women with the assumption that it can help pre vent heart disease, osteoporosis and possibly Alzheimer’s disease. Estrogen: The Hidden Culprit
As mentioned, many women who suffer from a whole myriad of perplexing and distressing symptoms can be unsuspecting victims of an estrogen dominance. It is important to keep in mind that when estrogen is not balanced out by adequate amounts of progesterone, a whole array of diverse symptoms may develop, many of which are easily misdiagnosed and subsequently, mistreated.
In addition, we hear so much about keeping our estrogen levels up as we approach menopause, we rarely consider the fact that we may be suffering from an estrogen Overload during pre-menopausal years. Most physicians neglect to discuss the very real effect of an estrogen dominance, but I can assure you that it is all too real. Enduring very heavy periods, developing sore and tender breasts, retaining water, bloating and serious bouts with depression are more of a problem for many pre-menopausal women in their forties than one would assume. In addition, most of us are unaware of the fact that a woman can have regular periods and not be ovulating. A continued lack of ovulation or impaired ovulation can also create a progesterone deficiency leading to an abnormal buildup of the uterine lining which is never sufficiently shed. The incomplete removal of the endometrium can lead to endometriosis, uterine fibroid cysts, fibrocystic breasts, bloating, depression, heavy or irregular periods and possible malignancies.
IS ALL ESTROGEN BAD?
Certainly, all estrogen is not bad; however, it would seem that most women suffer from a dominance of estrogen and a lack of progesterone. Estrogen is the hormone that initiates female puberty, causing the development of the breast, uterus, fallopian tubes etc. It also contributes to female fat distribution. Prior to menopause, estrogen levels drop causing an eventual cessation of the menstrual period.
Most conventional physicians will recommend estrogen replacement therapy to offset the risk of osteoporosis and to prevent cardiovascular disease, two actions which are still questioned in many scientific circles. The focus on estrogen therapy may be misguided in many cases. More and more evidence points to the fact that when progesterone levels are where they should be, conditions like PMS, osteoporosis, etc. dramatically improve. Unopposed or synthetic estrogen poses a number of health risks which most women will recognize immediately through their own personal experience.

THE PRECARIOUS ACT OF BALANCING HORMONES
The very delicate relationship between progesterone and estrogen levels is what creates hormonal balance. Today we frequently hear the phrase, “she’s suffering from a hormonal imbalance.” What exactly does a hormonal imbalance imply, and why is it so prevalent among women of all ages? The simple truth is that our twentieth-century life style creates a great deal of health risks not previously experienced by earlier generations.
Many of these new, modern factors adversely effect our endocrine systems, not to mention our overall health as well. Consequently, when we need to synthesize certain levels of progesterone, we may be lacking the proper nutrients or, as may be the case with women who have used birth control pills, our ovarian functions may be impaired. As a result, an excess of estrogen may develop predisposing us to a number of unpleasant symptoms. Unprecedented degrees of mental stress combined with exposure to toxins, pollutants, preservatives, chemicals, and drugs can impair a woman’s ability to produce progesterone. In addition, the consumption of sugary foods lacking in whole grains, overcooked, over processed, and fatty foods devoid of the raw enzymes we were meant to ingest can also wreak havoc with our glandular health. The consumption of hormonally fattened beef and poultry is certainly a concern, and may explain why premature puberty occurs in some children who are exposed to unnatural sources of animal estrogen.
Why is there more infertility now that ever before? Why do seemingly healthy young women suffer from all sorts of menstrual disorders and unprecedented levels of PMS? Why is osteoporosis such a threat today, and why is breast cancer killing so many relatively young women? Why do so many of us plow through perimenopause and postmenopause, perplexed by a wide variety of ills that threaten our emotional and physical well-being? All of these questions are profoundly linked to hormonal factors and almost always reflect an estrogen dominance and a progesterone deficiency.
I did not know that such a scenario even existed and like most women, did not understand that too much of certain kinds of estrogen can be extremely harmful. Furthermore, because I assumed that estrogen levels continued to decline as I got older, I never considered the possibility of a pre-menopausal estrogen Overload. It is crucial to remember that when estrogen is unopposed by adequate levels of progesterone, a hormonal imbalance occurs. Unopposed estrogen is undesirable to say the least, and explains why so many women suffer from estrogen-related ills even as they approach menopause.

THE FDA AND STEVIA
While stevia in no way qualifies as an “artificial sweetener,” it has been subject to rigorous inquiry and unprecedented restraints. In 1986, FDA officials began to investigate herb companies selling stevia and suddenly banned its sale, calling it “an unapproved food additive.” Then in 1991, the FDA unexpectedly announced that all importation of stevia leaves and products must cease, with the exception of certain liquid extracts which are designed for skin care only. They also issued formal warnings to companies and claimed that the herb was illegal. The FDA was unusually aggressive in its goal to eliminate stevia from American markets, utilizing search and seizure tactics, embargoes and import bans. Speculation as to why the FDA intervened in stevia commerce points to the politics of influential sugar marketers and the artificial-sweetener industry.
During the same year, the American Herbal Products Association (AHPA) began their defense of the herb with the goal of convincing the FDA that stevia is completely safe. They gathered documented literature and research on both stevia and other non-caloric sweeteners. The overwhelming consensus was that stevia is indeed safe, and the AHPA petitioned the FDA to exempt stevia from food additive regulations.
Food Additive vs. Dietary Supplement
FDA regulations of stevia were based on its designation as a food additive. The claim was that scientific study on stevia as a food additive was inadequate. Ironically, extensive Japanese testing of stevia was disregarde—regardless of the fact that this body of documented evidence more than sufficiently supported its safe use. Many experts who have studied stevia and its FDA requirements have commented that the FDA wants far more proof that stevia is safe than they would demand from chemical additives like aspartame.
Stevia advocates point out that stevia not a food additive, but rather, a food. Apparently, foods that have traditionally been consumed do not require laborious and expensive testing for safety under FDA regulations. The fact that so many toxicology studies have been conducted in Japan, coupled with the herb’s long history of safe consumption, makes a strong case for stevia being accepted by the FDA as a safe dietary substance. Still, it was denied the official GRAS (generally recognized as safe) status and designated a food additive by the FDA.
The FDA Reverses Its Position
As a result of the Health Freedom Act passed in September of 1995, stevia leaves, stevia extract, and stevioside can be imported to the United States. However, ingredient labels of products that contain stevia must qualify as dietary supplements.
Stevia had been redesignated as a dietary supplement by the FDA and consequently can be legally sold in the United States solely as a supplement. Its addition to teas or other packaged foods is still banned. Moreover, stevia cannot, under any circumstances, be marketed as a sweetener or flavor enhancer.
SUGAR, SUGAR EVERYWHERE
Ralph Nader once said, “If God meant us to eat sugar, he wouldn’t have invented dentists.” The average American eats over 125 pounds of white sugar every year. It has been estimated that sugar makes up 25 percent of our daily caloric intake, with soda pop supplying the majority of our sugar ingestion. Desserts and sugar-laden snacks continually tempt us, resulting in an escalated taste for sweets.
The amount of sugar we consume has a profound effect on both our physical and mental well-being. Sugar is a powerful substance which can have drug-like effects and is considered addictive by some nutritional experts. William Duffy, the author of Sugar Blues, states,“The difference between sugar addiction and narcotic addition is largely one of degree.” In excess, sugar can be toxic. Sufficient amounts of B-vitamins are actually required to metabolize and detoxify sugar in our bodies. When the body experiences a sugar Overload, the assimilation of nutrients from other foods can be inhibited. In other words, our bodies were not designed to cope with the enormous quantity of sugar we routinely ingest. Eating too much sugar can generate a type of nutrient malnutrition, not to mention its contribution to obesity, diabetes, hyperactivity, and other disorders. Sugar can also predispose the body to yeast infections, aggravate some types of arthritis and asthma, cause tooth decay, and may even elevate our blood lipid levels. Eating excess sugar can also contribute to amino acid depletion, which has been linked with depression and other mood disorders. To make matters worse, eating too much sugar can actually compromise our immune systems by lowering white blood cells counts. This makes us more susceptible to colds and other infections. Sugar consumption has also been linked to PMS, osteoporosis and coronary heart disease.
Why Do We Crave Sweets?
Considering the sobering effects of a high sugar diet, why do we eat so much of it? One reason is that sugar gives us a quick infusion of energy. It can also help to raise the level of certain brain neurotransmitters which may temporarily elevate our mood. Sugar cravings stem from a complex mix of physiological and psychological components. Even the most brilliant scientists fail to totally comprehend this intriguing chemical dependence which, for the most part, hurts our overall health.
What we do know is that when sugary foods are consumed, the pancreas must secrete insulin, a hormone which serves to bring blood glucose levels down. This allows sugar to enter our cells where it is either burned off or stored. The constant ups and downs of blood sugar levels can become exaggerated in some individuals and cause all kinds of health problems. Have you ever been around someone who is prone to sudden mood swings characterized by violent verbal attacks or irritability? This type of volatile behavior is typical of people who crave sugar, eat it and then experience sugar highs and lows. Erratic mood swings can be linked to dramatic drops in blood sugar levels.
Hypoglycemia: Sign of Hard Times?
It is rather disturbing to learn that statisticians estimate that almost 20 million Americans suffer from some type of faulty glucose tolerance. Hypoglycemia and diabetes are the two major forms of blood sugar disorders and can deservedly be called modern day plagues. Hypoglycemia is an actual disorder that can cause of number of seemingly unrelated symptoms. More and more studies are pointing to physiological as well as psychological disorders linked to disturbed glucose utilization in brain cells. One study, in particular, showed that depressed people have overall lower glucose metabolism (Slagle, 22). Hypoglycemia occurs when too much insulin is secreted in order to compensate for high blood sugar levels resulting from eating sugary or high carbohydrate foods. To deal with the excess insulin, glucagon, cortisol and adrenalin pour into the system to help raise the blood sugar back to acceptable levels. This can inadvertently result in the secretion of more insulin and the vicious cycle repeats itself.
A hypoglycemic reaction can cause mood swings, fatigue, drowsiness, tremors, headaches, dizziness, panic attacks, indigestion, cold sweats, and fainting. When blood sugar drops too low, an overwhelming craving for carbohydrates results. To satisfy the craving and compensate for feelings of weakness and abnormal hunger, sugary foods are once again consumed in excess.
Unfortunately, great numbers of people suffer from hypoglycemic symptoms. Ironically, a simple switch from a high sugar diet to one that emphasizes protein can help. Spring is the traditional time for cleaning and setting things in order; time to go through and throw out. Our homes and yards are ready for a thorough cleaning, airing out and rejuvenating. And so it is with the body. Spring is a great time to cleanse the body of toxic material that has accumulated throughout the winter months.
Most people suffer from an accumulation of toxins from time to time. It is not uncommon because of the environment in which we live. There are contaminants in the air, water and food. The body’s own natural functions also causes a degree of toxicity. Excessive amounts of certain hormones can be a problem. Toxicity can impair the body’s ability to function efficiently. This can lead to different physical problems and disease.

My kids are getting completely Overloaded on sugar at school from meals and treats -- my daughter comes unglued and cant study. When i went to grade school, there was no lunch and no sweets available. What a change in society... Amanda Shrewsbury - Spring City, Utah...
You're right to be concerned about school food programs, especially since budget restrictions have led a number of districts to use major fast-food companies as food service providers -- and even worse, to let soda companies stock school beverage machines.
Fortunately, the tide is starting to turn. Los Angeles is just one of a number of cities that are banning soda from their school buildings. Other districts are going so far as to offer organic lunches to there students. you may want to contact your school superintendent, as well as members of your local school board and let them know how you feel about what's best for your children.

When toxins accumulate in your tissues, you can become fuzzy and sluggish. Here's how a New Year's internal cleansing can make you feel fresh and energized.
What's your New Year's resolution? Losing weight? Getting fit? Kicking the [fill-in-the-blank] habit? Whatever the shape of your dreams for 2005, it won't be easy launching a self-improvement program unless you give your body a fresh start. Where to begin? Detoxification-an internal cleansing that can supply the energy you need to succeed in achieving your goals.
No one can avoid toxins in our contaminated world, so many of us suffer from toxic Overload, which can lead to fatigue, digestive problems and reduced immune function. " When we get out of balance, we get congested and toxic," says Elson Haas, MD, founder of the Preventive Medical Center of Marin in San Rafael, California (www.elsonhaas.com), and author of The New Detox Diet (Celestial Arts), "and our bodies' regular elimination systems cannot keep up with it. We have problems with our skin, our intestines, our sinuses. We also become deficient in vitamins, minerals and essential fatty acids. Most people have both congestion and deficiency, and they would benefit greatly from detoxification."
Toxins Within, Toxins Without
Life's fundamental activities-breathing, eating, walking around-generate waste in the form of free radicals, the unstable molecules that can ravage cells and tissues. What's more, Dr. Haas says that just "being under stress, being afraid, being anxious all produce more free radicals in the body" (like when a work deadline hits on the same day your car dies). When you add to your internal toxins all the noxious items coming from the outside, including the dietary ones, the recipe is very unhealthy.
" People are making poor choices in what they're putting in their mouths," says Dr. Haas. "They're taking in too much refined flour and sugar. There's a common problem in our country I call 'obese malnutrition'-people eating too many calories and not getting enough nutrition. People do a lot of junky fats and have a deficiency in the essential fatty acids that help protect cells."
Our bodies are also awash in manmade poisons such as food preservatives and additives, and residues from pesticides and herbicides. "The amount of toxic chemicals we are exposed to in our environment is staggering," says Susan Lark, MD, clinical nutrition expert and author of The Chemistry of Success (Bay Books). She notes that the average American is exposed to 14 pounds of such assorted chemical junk each year.
The body, however, does do its own housekeeping-and all of our cells detoxify every second of every day. "It's always a balance of garbage in, garbage out," says Dr. Haas, who has 30 years of experience in helping people detoxify. "Some of the toxins we break down into smaller components, some we just dump into the intestines for elimination."
Problems arise when there's more dirt than the internal maid service can sweep away. Dr. Lark notes that toxins wind up being stored in cells, especially fat cells, where they can hang out for years. When they are finally released "during times of low food intake, exercise or stress" complaints can range from tiredness to dizziness (sound familiar?).
That's where detoxification comes in, says Dr. Haas: "I think detoxification is a vital health care tool, particularly in this day and age when people are exposed to too many chemicals."
The process of detoxification starts with cleansing the intestinal system. Alternative health practitioners observe that discombobulated bowels can become overly permeable (a condition called leaky gut syndrome) and allow in all sorts of things that they shouldn't, such as semi-digested food particles, leading to inflammation and complaints that include rashes and joint pain.
Cleansing can be as simple as cutting down on what Dr. Haas calls the SNACCs-Sugar, Nicotine, Alcohol, Caffeine and Chemicals-or as thorough as a complete diet-and-supplement program with colonic irrigation (a sort of super-enema, professionally administered; if you're interested, contact the International Association of Colon Hydrotherapy at 210-366-2888 or www.i-act.org). The more powerful the program, though, the more likely you are to experience toxicity reactions such as nausea and headaches because of the volume of material being released. As Dr. Haas puts it:
" If you did water and green salads for a week, you'd detoxify more intensely than if you just gave up sugar and white flour." If you're feeling extremely rundown, take a gentle approach at first or consult a nutritionally aware practitioner, especially if you have a preexisting medical condition.
Getting more fiber is essential. Laurel Vukovic, a natural health teacher and author of 14-Day Herbal Cleansing (Prentice Hall), suggests following this daily regimen for two weeks: a teaspoon of psyllium (a fiber supplement); at least seven daily servings of fruits and vegetables, especially fiber-rich ones like apples, cabbage and carrots; and six glasses of water, along with daily exercise. Extra fiber "supports the intestines in eliminating the larger amounts of toxins that are released," says Vukovic, "prevent[ing] their reabsorption into the bloodstream." Some people find premixed cleansing formulas convenient; check your health food store shelves.
Fasting is a more intense detox approach that, according to Dr. Haas, "promotes relaxation and energization of the body, mind and emotions, and supports a greater spiritual awareness." He especially recommends fasting in the spring and autumn, which are times of transition. Some people do water-only fasts, but fresh vegetable juices are probably a better option, particularly if you haven't fasted before. Juices and plenty of fresh water also help cleanse the kidneys, another vital detox route.
Instead of juices you can use a special cleansing formula, such as the Spring Master Cleanser: 2 tablespoons freshly squeezed lemon juice, 1 tablespoon pure maple syrup and 1/10 teaspoon cayenne pepper in 8 ounces of spring water. Dr. Haas recommends drinking eight to 12 glasses daily (and rinsing your mouth after each glass to protect your teeth from lemon's acids), augmented by water, laxative herb tea, and peppermint or chamomile tea.
Try fasting for a day to see how you feel. Dr. Haas suggests starting out by fasting from early evening through the night, and eating a light breakfast the following day. Subsequent fasts can gradually increase in length-experienced fasters may go up to two weeks without food.
Break your fast properly; for juice or cleansing formula fasts, eat a raw or cooked low-starch vegetable, such as spinach or other greens. "Go slowly, chew well and do not overeat or mix too many foods at any meal," says Dr. Haas.
Don't forget your liver, the organ that transforms noxious chemicals into substances your body can eliminate. The herb milk thistle, used since ancient times as a liver tonic, contains silymarin, which protects the liver from pollutants and helps it renew itself after toxic damage. Dandelion not only promotes the flow of bile from the liver, which helps clean out the junk, but also acts as a diuretic, helping the kidneys do their job. Green-food supplements, such as spirulina and cereal grasses, help neutralize toxins.
To maintain your cleansing gains, eat a healthy diet after detoxing. Focus on fresh organic foods, especially produce, beans and peas, whole grains and seeds (add organic poultry if you eat meat). Organic yogurt provides healthful probiotics, while fresh fish and ground flaxseeds provide omega-3 fats.
Clean Living Pays
The body's largest organ-the skin-provides a valuable contaminant exit path. Sitting in a hot tub or sauna "benefits the internal organs of detoxification," according to Dr. Lark, "by lessening the amount of toxins they must process." When sweatin' out the bad stuff, drink plenty of water and replace the calcium, magnesium and potassium lost through perspiration.
Another way to stimulate skin circulation is dry brushing, which also removes dead skin cells for a healthy glow (and is easier to fit into a daily routine). Using "a moderately soft, natural vegetable-fiber bristle brush" (Dr. Lark's suggestion), work in from the hands and up from the feet with light, short strokes that always move towards the heart. Vukovic says that a hot towel scrub is another option; put three drops of lavender essential oil in a basin of very hot water, dip in a rough terry washcloth and wring out, and then rub the skin briskly, starting with your feet and working your way up.
Once you've detoxified your body, you can start in on your immediate surroundings. Dr. Haas warns against using plastic food storage containers: "When food is heated in plastics some of the plastic material ends up in the food, especially if the food contains acids." Use glass containers instead. He also recommends avoiding aluminum pots and pans, and using stainless steel as an alternative.
Dr. Haas has seen what a good detox program can do: "It's amazing the kind of results people get-looking and feeling younger, more vital and healthy. They say, 'I'm sleeping like a baby,' they have fewer aches and pains. They have more peace in their bodies. I think detoxification is one of the keys to preventive medicine." Even those of us from the most culinary challenged households can recall the pleasures of the simple plump white dinner roll or flaky biscuit piled in a basket on the dinner table.
Bread has blossomed from sideshow status beside the dinner plate to a full-scale mealtime headliner, a scrumptious star enriched by nutritious grains, herbs, fruits and vegetables.
Contemporary cooks build meals around crunchy cornbread or chewy focaccia, presenting soups or salads as satisfying counterpoints. Want to jump into the bread baking basket or hone your skills? Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years.
That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting.
"There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications.
"Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing.
"There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside.
"But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while.
"Then there are quick breads that use baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans.
"Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits.
"To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness.
"The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are Overloaded with one type of wheat.
"Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet.
"Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables.
"Spelt is the closest to wheat flour in consistency but some people can be sensitive to it.
"Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes.
"Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good."
Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well:
"Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen.
"Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine flour, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day.
"I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with split pea soup.
"Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."

If you feel like your busy life is holding your health hostage, green foods may be the SWAT team that sets you free. "Green foods are worth a king's ransom as far as your health is concerned," says Betty Kamen, PhD, author of Betty Kamen's 1,001 Health Secrets (Nutrition Encounter). "Green foods capture solar energy, using it to produce chlorophyll, which gives it its distinctive green color. Since we obtain our food by eating these plants or by eating the animals that eat these plants, this process is the source of human life."
"Green foods are renewal foods," says Ryan Bradley, ND, of the Bastyr Center for Natural Health in Kenmore, Washington. "They help to counteract the nutrient depletion caused by stress and by caffeine intake. They're nutrient dense, grounding, balancing, and soothing in their energetic nature."
Ideally, your meals should supply you with greens, but "...99.9% of the population doesn't get three to five [daily] servings of leafy green vegetables like kale, collard greens and spinach," says Jordan Rubin, NMD, PhD, CNC, author of Patient Heal Thyself (Freedom Press). Green foods can bridge that gap.
"Green foods have become popular because it's a convenient way to get your servings," says Dr. Rubin. "You get the equivalent of two large salads with one serving of powdered green food. Green, Green Grasses
Fast-growing plants, such as wheat and barley cereal grasses, contain the most chlorophyll and the deepest green color.
"Wheat grass was one of the country's first multi-vitamins," says Dr. Rubin, who is also the author of Restoring Your Digestive Health (Twin Streams Health). "Certified organic cereal grasses pull a vast number of nutrients from the soil."

"Chlorella is the richest food on the planet in chlorophyll," says Dr. Kamen. "It's also high in protein and rich in beta-carotene and minerals.
"One of the truly amazing facts about chlorella is its ability to oxygenate the blood," Dr. Kamen continues. "If your blood doesn't have enough oxygen, you can become listless and lethargic. Chlorella actually increases your hemoglobin, the oxygen transporter in your blood, so there is more oxygen present. Green Foods from the Sea

Lower rates of breast cancer were reported in Japanese patients eating a diet high in kelp (Nutr Cancer 1983; 4:217-22). Kelp has also been shown to reduce DNA damage induced by several known carcinogens (Mutat Res 1993; 303:63-70).
Sea greens contain omega-3 fatty acids, fats that boost heart health. "Sea vegetables may prove to be a more sustainable source of omega-3 fatty acids than the dwindling fish populations," says Dr. Bradley.
To incorporate sea greens into your diet, start by putting them on your lettuce and tomatoes.
"Sea vegetables can make a great addition to salads," says Dr. Bradley. "They're high in nutrition and add flavor because of the sodium. They also add texture, giving salads more crunch."
Other ways to green up your diet:
* "Kelp comes packaged in three-foot-long dried strips and is prepared by cutting the long strips into smaller two- to three-inch strips and boiling them for about ten minutes. You remove the kelp, and then you can use the broth in soups, salads and other dishes. Kelp simmered with vegetables or tofu and served in miso soup is an Okinawan favorite," says Dr. Willcox.
* Wakame (one of Dr. Willcox's favorites), a type of kelp, has a taste and appearance that may remind Westerners of spinach lasagna.
* Nori seaweed can be used to wrap sushi and rice balls and also to season salads, soups and noodles.
"Seaweed tastes great and if used wisely, should not tip you into sodium Overload," says Dr. Willcox.
Go for the Green
More and more people are realizing and enjoying the benefits of green foods. Dr. Bradley recommends keeping your green foods consumption simple. Add powdered greens, dried tablets and liquids to juice, mix them into smoothies or a protein shake, and sprinkle the powder on salads. Mixed in water, greens can be used as a morning tonic and help replace some of the nutrients like magnesium and B vitamins depleted by coffee and other caffeinated beverages, which act as diuretics.

Just as you wouldn't clean a closet by merely closing the closet door, you can't clean your body by closing your eyes to the toxins that assault our bodies every day. The modern world is filled with natural and manmade chemicals that can accumulate within and cause long-term health problems. So, in between bouts of housecleaning, an internal cleansing can keep your bodily systems feeling as clean as your sparkling household.
While modern life would be impossible without the chemicals that go into the gadgets and machines on which society thrives, these materials have a dark side: Each day we are exposed to hundreds of substances that have infiltrated our food, water and air. They lurk in our cleaning products, fabrics, personal care products, automobiles and even the building materials in our homes and offices.
"While our [bodies have] systems of detoxification to deal with and eliminate chemicals to which we are exposed, the sheer volume of these chemicals can overwhelm these detoxification mechanisms, causing these non-lifegiving substances to stay in our bodies where they can damage our health," says Steven Horne, AHG, herbalist and natural health consultant in St. George, Utah.

Water, Water Everywhere and How Your Health Can Shrink
Substances in the beverages you consume every day may contribute to the collection of toxins in your body.
A growing water problem, for instance, flows from the medications excreted into sewer systems and groundwater.
These drugs have already affected the environment: Estrogen from contraceptives have contaminated lakes and rivers, and caused deformities in fish while impairing the fertility of water animals and the birds who feed upon them. TCE is also found in adhesives, lubricants, paints, varnishes, paint strippers, pesticides, spot removers and rug cleaning fluids, and it has entered the drinking water in many places.
Detox for Metabolic Balance
"Detoxification is the missing link in Western nutrition and an important but unexplored medical therapy," says Elson M. Haas, MD, author of The Detox Diet (Celestial Arts). Dr. Haas believes that when the body accumulates wastes that are not properly eliminated, disease often results: "The key to maintaining metabolic balance is to maximize nutrition and eliminate toxins." Dr. Haas has seen improvement in cholesterol levels, blood pressure readings and pain levels after his patients have detoxed.
When your body accumulates toxins, cells can stagnate and suffocate. To offset these problems, the body uses its built-in system of detoxification to remove toxins and cellular waste products.

The Dangers of Oxidized LDL Cholesterol
While many people have heard that high cholesterol levels may negatively affect normal heart function, few people understand exactly what cholesterol is, or how it can become harmful. Cholesterol is a white, waxy substance produced in the liver by all animals, and used for a variety of necessary activities in the body. Your liver also manufactures two main kinds of carrier molecules which transport cholesterol throughout the system: Low Density Lipoprotein (LDL) and High Density Lipoprotein (HDL). Cholesterol is either carried out by LDL from the liver to all tissues in the body where it is deposited, or carried back by HDLs which remove cholesterol deposits from the arteries and carry them to the liver for disposal. Because of this, LDL cholesterol is considered damaging, while HDL is considered protective. Problems occur when there is too much LDL cholesterol in the body and not enough HDL.
When the body becomes Overloaded with fat, an over-abundance of LDL particles are manufactured to process it, and they in turn become elevated in the body to a degree that the liver cannot handle. Rich in fatty acids and cholesterol, these particles are highly susceptible to free radical attack (oxidation). Once oxidized, LDL particles are no longer recognized by the body, which attacks them with immune cells. Immune cells which are bloated by oxidized lipids (called foam cells) are a key factor in the development of “fatty streaks” — the first sign of excess arterial fat accumulation. The bloated immune cells accumulate in artery lesions and create plaque in blood vessels, leading to obstruction and constriction of the vessels. Plus, these lodged foam cells continue to secrete free radicals into the bloodstream, making the problem worse.
The development of lesions in the arteries is not an uncommon problem. Arterial (and all blood vessel) walls are composed of a chemical matrix which holds the endothelial cells in place. That endothelial layer is the first and most important line of defense in preventing large molecules, such as cholesterol and fat, from entering the vessel wall. This matrix is composed of proteins, collagen, elastin, and glycosaminoglycans (amino sugars). Arterial lesions can be caused by suboptimal collagen and elastin synthesis due to three factors: 1. Vitamin C deficiency (since Vitamin C is a key building block for collagen and elastin); 2. excessive consumption of rancid fats, or heavy usage of alcohol or cigarettes; and 3. free radical damage. Once these lesions are created, the body attempts to repair them by depositing LDL cholesterol — similar to the way one would patch a tire. If that cholesterol is not oxidized, i.e. chemically changed to a harmful, unstable molecule, then this process does not create a problem. But when arterial lesions are “patched” with foam cells, arterial walls suffer page 3 page 4 even more damage, because those foam cells release free radicals which can further damage cell membranes.
Unfortunately, most people have a lot of oxidized cholesterol floating through the bloodstream. The typical American diet, with its low antioxidant intake and overconsumption of fried and overcooked foods, contributes to the overall levels of harmful oxidized cholesterol. In fact, the average American intake of antioxidants is low even by USRDA standards, making Americans particularly prone to having high levels of oxidized cholesterol.
