Those people who are at greatest risk for developing glaucoma are people over the age of sixty, people of African ancestry, and people with diabetes, high blood pressure, severe myopia, or a family history of glaucoma. Smokers also have an elevated risk, as do those who have sustained eye injuries or who have used steroids for an extended period of time. About 3 percent of Americans are believed to have open-angle glaucoma, which is the most common form of this disease. Because this disorder causes no symptoms until it is quite advanced, only about half of those who have it are actually aware of it. In open-angle glaucoma, there is no physical blockage and the structure of the eye appear to be normal. However, the drainage of fluid is inadequate to keep the intraocular pressure at a normal level. The most pronounced symptoms of open-angle glaucoma are the gradual loss or darkening of peripheral vision and a marked decrease in night vision or the ability of the eye to adjust to darkness. Other possible symptoms include chronic low-grade headaches, the need for frequent changes in eyeglass prescription, and/or seeing halos around electric lights. A far less common, yet more serious, form of glaucoma is closed-angle glaucoma. Closed-angle glaucoma is much more dangerous than open-angle forms because it almost never manifests any symptoms until very late in the condition. By that time, vision may be irreversibly damaged. Glaucoma probably has many causes, with many scientists believing it may be closely linked to stress and nutritional problems or disorders like diabetes and high blood pressure. Some think that excessive amounts of glutamic acid, which is a nonessential amino acid, may be involved. Glaucoma has also been linked to deficiency in nitric oxide, which is a molecule that is critical for healthy blood vessels. Recently, the Natural Products Association has experienced a flurry of activity on the legislative front. One month ago, Natural Products Association members went to Washington, D.C. to meet with their representatives and discuss legislation important to the association and the industry. Many who could not visit Washington in person were part of our "virtual march" on Washington that delivered e-mails, petitions, and videos to Congress on the importance of natural products. Natural Products Day was a great success, boasting higher than ever attendance at our evening Congressional reception, and resulting in additional co-sponsors for S. 771, the Child Nutrition Promotion and School Lunch Protection Act sponsored by Tom Harkin (D-Iowa). The bill now boasts co-sponsorship of more than a quarter of the Senate. Its companion bill in the House of Representatives, H.R. 1363, sponsored by Lynn Woolsey (D-Calif.), has gained an additional five co-sponsors as the result of Natural Products Day meetings and now has 140 co-sponsors. These bills continue to build momentum, thanks to your support. More recently, the Natural Products Association urged supporters to contact their legislators to include an amendment to the "Farm Bill" allowing food stamp recipients to purchase dietary supplements. This provision was similar to free-standing bills that have been introduced in the current and previous Congresses by Sens. Harkin and Orrin Hatch (R-Utah) and have earned the association's support. Although the amendment advanced further than other versions in previous sessions, it did not make the final Farm Bill, which was reported out of conference today. The good news is that the Farm Bill did contain significant increases in nutrition programs and increased funding for organic farming, another supported goal of the Natural Products Association. Because of the strong effort of our supporters on the amendment's behalf, the bill was placed on Congress's radar screens and has greatly improved the chances as stand-alone legislation, S. 770, the Food Stamp Vitamin and Mineral Improvement Act, of seeing passage. We will continue to ask for support on this important bill as this legislative session progresses. In addition, the Natural Products Association has been leading the fight to protect Dehydroepiandrosterone (DHEA), and to keep this important, safe, and effective supplement available to elderly consumers. The same players behind S. 762, which would wrongly classify DHEA as an anabolic steroid, proposed S. 2470 in late 2007 as a misplaced reaction the release of the Mitchell Report, which chronicled the abuse of steroids by professional baseball players. Although DHEA has no performance enhancing attributes, this bill was proposed to limit the access of minors to DHEA. The Natural Products Association and its supporters have worked hard to inform Congress of the benefits of DHEA, and that it is not an anabolic steroid and should not be classified as one. We have been able so far to prevent any movement on the bill, but the association continues to monitor its progress and make sure that this supplement remains accessible to the seniors who need it most. In fact, it seems almost everywhere children go and gather, visually enticing but nutritionally lacking snacks and soft drinks are sure to be available.

After five months of this extremely deficient diet, he was unable to walk or get out of bed because the pain was so severe. Doctors diagnosed the boy as having a severe vitamin C deficiency after ruling out other ailments such as leukemia. Within a week of getting vitamin C supplements, the boy’s pain and other symptoms were completely resolved. Obviously, this little boy’s story is unusual. However, even mild food phases (such as “If It’s Green It Must Be Yucky” or “The Only Good Crust Is A Cut-Off Crust”) can result in awfully lop-sided nutrition.
Q. Can multivitamins help my child’s performance in school?
A. Most teachers firmly believe that nutrition and learning go hand in hand. They are convinced that children who are well nourished possess the mental stamina that’s needed to learn and retain even difficult concepts. But can multivitamins help children become better students?
Two independent research teams recently conducted randomized trials to find the answer. The researchers followed 245 school-children aged 6 to 12 years for three months. They gave half of the children multivitamin tablets every day, and half of the children placebos. When the children were tested, the children in the multivitamins group showed an increase in their nonverbal intelligence scores. Nonverbal intelligence is closely associated with academic performance.

In this Ask the Doctor, we’re going to look at the unique health components of different colored fruits and vegetables, and why they’re so important. Plus, we’ll learn about supplemental options, like fruit and vegetable drink mixes, for those days when our diets just aren’t that great.
Q. What’s the big deal about fruits and vegetables?
A. Well, for the main reason that they are whole foods – created by nature (or at least generations of farming) and are rich in a variety of nutrients. Processed foods can’t match the health benefits of strawberries or broccoli – items that have fiber, vitamins, and enzymes built right in.

Quercetin is found in apples, onions and citrus fruits (also is hawthorn and other berries and apple-related fruits usually used in traditional herbal remedies and modern supplements). It prevents LSL cholesterol oxidation and helps the body cope with allergens and other lung and breathing problems.
Clinical studies show that quercetin’s main points of absorption in the body appear to be in the small intestine – about 50%. The rest – at least 47% is metabolized by the colonic micro flora – the beneficial bacteria such as Lactobacillus acidophilus and Bifidobacterium longum. You may consider adding these beneficial bacteria (found in yogurt) either through the diet or a supplemental form.
Ellagic Acid is a component of ellagitannins – dietary polyphenols with antioxidant (and possibly anticancer) properties. Polyphenols are the basic building blocks of many plant-based antioxidants. More complex phenolic compounds, such as flavonoids are created from these molecules.
Ellagic acid is found in many fruits and foods, namely raspberries, strawberries, pomegranates, and walnuts. Clinical studies suggest that ellagitannins and ellagic acid act as antioxidants and anticarcinogens in the gastrointestinal tract.
Ellagitannins are durable antioxidants, and happily, they do not appear to be diminished by processing, like freezing. This means the benefits are still strong, even in frozen packs of raspberries or strawberries, or some of the better multi-ingredient supplement drink mixes.
In scientific studies, ellagic acid also showed an anti-proliferative effect on cancer cells, decreasing their ATP (adenosine triphosphate) production. ATP is the molecule that provides the primary energy source for the cells in our bodies. In a sense, ellagic acid seems to deprive cancer cells of their fuel.
Beta-Carotene: Probably the best-known of the carotenoids, beta-carotene is converted by the body into vitamin A. Many vegetables, especially orange and yellow varieties, are rich in this nutrient. Think summer squash, yams and of course, carrots.
Beta-carotene has long been associated with better eyesight, but it has other benefits, too. In a scientific study, beta-carotene decreased cholesterol levels in the liver by 44% and reduces liver triglycerides by 40%.
Lycopene is a carotenoid mostly found in tomatoes, but also in smaller amounts in watermelon and other fruits. Clinical studies have shown that lycopene consumption may decrease the risk of prostate cancer. In fact, high intakes of lycopene are associated with a 30% to 40% reduced risk. And, as good as beta-carotene is, its cousin, lycopene, seems to be an even stronger nutrient, protecting not just against prostate cancer, but heart disease as well.
Lutein is found in many fruits and vegetables, including blueberries and members of the squash family. Lutein is important for healthy eyes, and in fact it is found in high concentrations naturally in the macular region of the retina – where we see fine detail. It is one of the only carotenoids, along with its close sibling zeaxanthin, that is found in the macula and lens of the eye.
Lutein also supports your heart, too. In a scientific study, lutein reduced atherosclerotic lesion size by 43%. In other words, high intakes of lutein may actually help prevent coronary artery disease!
Interestingly, as is the case with lycopene, cooking or processing foods with lutein may actually make it more easily absorbed.
In clinical studies, men with high intakes of lutein (and its close cousin, zeaxanthin, found in broccoli and spinach) had a 19% lower risk of cataract, and women had a 22% decreased risk, compared to those whose lutein intakes were much lower.
Vitamin C: One of the best-known nutrients out there, vitamin C keeps our immune system strong; speeds wound healing, and promote strong muscles and joints. A free-radical fighter, vitamin C prevents oxidative damage to tissues, builds strength in collagen and connective tissue, and even reduces joint pain.
Sources of vitamin C are scattered throughout the spectrum of fruits and vegetables.
Potassium: Most Americans are deficient in potassium. For the most part, it’s hard to get too much of this valuable mineral. Potassium does great things for our hearts. Higher intakes of dietary potassium from fruits and vegetables have been found in clinical research to lower blood pressure in only 4 weeks.
Many researchers believe that the typical American diet has led to a state of chronic, low-grade acidosis – too much acid in the body. Potassium helps change pH balance to a more alkaline environment in the body and increases bone density.
This was proven in the long-running Framingham Heart Study which showed that dietary potassium, (along with magnesium and fruit and vegetable intake) provided greater bone density in older individuals.
Fiber is another food component many just don’t get enough of – especially if they’re eating a “typical American diet.” Fruits, vegetables and whole grains are excellent sources of fiber. However, fiber from a good fruits and vegetable drink mix should be derived from inulin and chicory root. This soluble fiber source not only adds to the overall amount of fiber you need (25 to 38 grams a day), but also provides a nice “nesting ground” for the beneficial bacteria that populate the intestines. And, even though some fiber has a bad rap for inhibiting mineral absorption, inulin and chicory root are “bone building” fibers – they actually help the body absorb calcium.
Flavonoids are an overarching term that encompasses flavonols, anthocyanidins, and flavones, isoflavones, proanthocyanidins, Quercetin and more. They are almost everywhere: in fruits, vegetables, grains, herbs, nuts and seeds – even in the coffee, wine and tea we drink. Flavonoids are responsible for the colors in the skins of fruits and the leaves of trees and other plants.
Flavonoids have many health benefits. They can help stop the growth of tumor cells and are potent antioxidants. Additionally, flavonoids have also been studied for their ability to reduce inflammation.
Anthocyanins: High on the list of important “visible” nutrients are anthocyanins. They color fruits and vegetables blue and red.
Anthocyanins are members of this extended family of nutmeats, the flavonoids. Typically found in high amounts in berries, anthocyanins are readily absorbed in the stomach and small intestine.
As antioxidants, anthocyanins dive deep into cell membranes, protecting them from damage. IT may be one reason why the anthocyanins from blueberries are considered such an important component in battling neuronal decline, like Alzheimer’s. Blackberries, raspberries, and strawberries are also excellent sources of this flavonoids group.
SDG lignans, (short for secoisolariciresinol diglucoside) are polyphenolic components of flaxseed, pumpkin and other herbal sources. Much of the recent research surrounding lignans has focused on flaxseed. In scientific and clinical studies, lignans from flaxseed support hormonal balance and may have cancer-preventing abilities. In fact, in one study, flaxseed lignans reduced metastatic lung tumor by 82% compared to controls.
The lignans in pumpkin seed, also considered a major source, target 5-alpha reductase activity.
This enzyme catalyzes the conversion of testosterone into the more potent dihydrotestosterone (DHT). DHT, like testosterone, is a steroid hormone or androgen. Androgens are responsible for the development and maintenance of masculine sex characteristics in both men and women. Excess levels of DHT can cause serious problems with prostate or bladder health. That’s why modulation of the 5-alpha reductase enzyme is so important – it helps maintain healthy testosterone and DHT levels. By balancing the levels of these key hormones, pumpkin seed lignans provide protection for prostate and bladder cells.
In addition, pumpkin seed has been shown to modulate the enzyme aromatase. Aromatase is present in the estrogen-producing cells of the adrenal glands, ovaries, testicles, adipose tissue, and brain. Aromatase converts testosterone, an androgen, into estradiol, and estrogen.
Inhibition of the aromatase conversion can help maintain a balance of healthy testosterone levels in women, which has been shown to strengthen pelvic muscles and reduce incidence of incontinence.
In fact, a clinical study, involving a pumpkin extract in conjunction with soy, resulted in significant support for bladder health. After two weeks of supplementation, 23 of the 39 postmenopausal women enrolled in the study showed great improvement in urinary frequency and sleep. By the end of the six week study, 74.4 percent of participants found pumpkin extract safely and significantly improved “nocturnia,” that is, the need to urinate frequently at night. For individuals with 2 to 4 episodes of nocturnia prior to the stud, and 81.8% improvement was seen – also showing great improvement in sleep quality. After all, if you don’t have to wake up every couple of hours to go to the bathroom you’re bound to get better sleep.
Beta glucan: Mushrooms are intense immune-boosting powerhouses due to their beta-glucan content. Three well-studied power-house mushrooms that contribute beta glucan to the diet include maitake, reishi and shiitake.
The most significant constituents of mushrooms are long chain polysaccharides (molecules formed from many sugar units) known as beta-glucan. These huge molecules act as immunoregualtors in the human body, helping to stabilize and balance the immune system.
This includes specific support of white blood cells, or lymphocytes, the primary cells of the immune system. Lymphocytes fall broadly into three categories: T cells, B cells, and natural killer (NK) cells.
In one clinical study, 165 patients with various types of advanced cancer were given maitake mushroom compounds alone or with chemotherapy. Cancer regression or significant symptom improvement was observed in 58% of liver cancer patients, and 62% of lung cancer patients. Plus, when maitake was taken in addition to chemotherapy, the immune cell activities were enhanced 1.2 to 1.4 times, compared with chemotherapy alone.
In another clinical study, researchers determined that Reishi increased the number of cancer killing white blood cells and made them more deadly to cancer cells.
And, in a scientific study of human breast cancer and myeloma cancer and myeloma cancer cell lines, shiitake compounds provided a 51% antiproliferative effect on the cells – inducing “apoptosis’ – the programmed cell death that should occur naturally.
While beta-glucan are distributed throughout the mushroom body, the beta-glucan concentrations are significantly higher in the mycelium – the interwoven fibers or filaments that make up the “feeding structure” of the mushroom.
Bioflavonoids are commonly found in bright yellow citrus fruits, including lemons, limes and oranges. They are responsible for the bright pigment found in the skin of the fruit, and are considered a “companion” to vitamin C, seeming to extend the value of the nutrient within the body.
Hesperidin is just one of the valuable bioflavonoids found in citrus. Hesperidin appears to lower cholesterol levels, as well as support joint collagen in examples of rheumatoid arthritis.
Epigallocatechin gallate (EGCG):
Polyphenols, most notably EGCG, or epigallocatechin gallate, are well-studied and powerful components of tea. EGCG has been shown to reduce colon and breast cancer risk. Green tea also boosts the immune system and encourages T-cell formation – part of the front-line defense of our bodies against sickness and disease.
Q. I’ve been seeing articles about fruits, vegetables and supplements touting “high ORAC value.” What does this mean?
ORAC is an acronym for Oxygen Radical Absorption Capacity, and is simply a measurement of antioxidant activity of nutrients. Oxygen radicals, or free radicals, are unstable molecules. They grab electrons from other cells to use for themselves, and in the process can damage them. It is believed that free radical activity plays a role in the development of many diseases such as heart disease and cancer, and also plays a role in aging.
Antioxidants help prevent this damage by “loaning out” extra electrons to stabilize free radicals/ Consider any fruit or vegetable with a high ORAC rating as having a lot of “antioxidant power.”

Luckily, there are many ways to get your “Daily 5”. For instance, frozen fruits and veggies retain much of their nutrient profile. Trace Minerals and Migraines An increasingly large amount of disease today may be attributable to deficiencies in the supply of trace minerals in our diets.1 How can this be the case when the availability of food in our country is unprecedented, with a supermarket on every corner? These deficiencies do not stem from a lack of quantity of food, rather they stem from the quality of food. Trace minerals can be found mainly in whole, unprocessed foods such as vegetables and fruits. Unfortunately, the large majority of fruits and vegetables found in supermarkets today are nutritionally devoid of these minerals, largely in part to the high-yield farming practices in this and other countries. The mineral content of food is mainly dependent on the amount of minerals found in the soil in which it is grown. Current farming practices leave soils with less than optimal amounts of these minerals, especially the less common trace minerals. As a result of this, our food supplies leave us at risk for deficiencies of these very important substances. Because of this situation, it is essential that every person now supplement their diet with trace minerals in order to avoid the many diseases that are attributable to this scarcity. A lack of vital nutrients leaves the body unable to function fully, leaving it vulnerable to disease. Trace minerals have numerous roles. Oftentimes, because these minerals are found in such small quantities in the body, scientists and physicians have paid little attention to their importance in health and disease prevention. However, with the advent of improved science and the recognition of the efficacy of natural medicine, we are beginning to understand how vital these elements are to our health. Trace minerals, in a sense, are akin to the numerous tiny nails, nuts, and bolts that hold a house together. At first glance, a home is made of much more than these items. However, if they are slowly removed and never replaced, the house will continue to sag and finally fall apart. So it is the same with the smallest building blocks of our bodies. Trace minerals are important in the proper functioning of enzyme systems, nerve conduction and muscle function, assisting with transfer of nourishment into cells, providing the framework for tissues, and regulation of organ functions. These ‘behind the scenes’ functions are not possible without a constant, adequate supply of minerals. Even with the many multivitamin and mineral supplements available, most of these products fall short because they do not contain large enough amounts of the trace minerals that are so important to health. Physicians that specialize in natural medicine are some of the biggest proponents of trace mineral supplementation. This type of physician is attuned to the many subtleties of the functions of the human body, and oftentimes addresses health issues with nutritional therapeutics in an attempt to bring the body’s health back into balance. This process of balance, also known as homeostasis, occurs quite wonderfully all by itself, as long as the body has the proper fuel and building materials. Unfortunately, physicians are seeing more and more diseases, which can be attributed to the body’s inability to achieve this balance. This trend towards ill health is directly related to the dearth of nutritional value in our diets today. However, practitioners of natural medicine are very excited with the many dramatic turn-arounds toward health that many of their patients have experienced with the use of mineral supplementation. A common example of this is the treatment of migraine headaches with magnesium. Recent statistics suggest that 18 percent of women and six percent of men suffer from migraine and those numbers are increasing.2 The Centers for Disease Control reported a 60-percent increase in the disease from 1980 to 1989.3 Migraine headaches occur when the blood vessels in the brain spasm and constrict. Soon after this constriction occurs, the blood vessels then reflexively open, or dilate. When the vessels become dilated, they occupy more space in the brain, activating nearby pain receptors. It is speculated that an imbalance of mineral stores in the body can lead to this spasm of the blood vessels. Many researchers have suggested magnesium plays an important role in migraine attacks. The activities of magnesium in the body include preventing blood vessel spasm, inhibiting blood clotting, and stabilizing cell membranes, all of which are involved in migraine develoment4. Magnesium concentration exerts an effect on neurotransmitter production and receptors, pro-inflammatory molecules, and other migraine-related chemicals in the brain.5 Recent evidence suggests up to 50 percent of migraine patients have lowered levels of tissue magnesium during an acute migraine attack.6 Another study discovered brain magnesium concentrations were 19 percent lower in patients during migraine attack compared to healthy controls.7 Because recent research strongly indicates a magnesium deficiency in migraine headaches, natural medicine practitioners prescribe magnesium along with other trace minerals as a primary treatment for this condition with great success. Because of their widespread distribution throughout the metabolic workings of the human body, trace minerals are integral to the functioning of one of the body’s largest organ systems, the muscles. Mainly, magnesium plays a large role in the relaxation of muscles following their contraction. Without this vital nutrient, it would be impossible for the muscles of the human body to function. Muscle cramps are prevalent in western society due to lack of intake of an appropriate amount of minerals. One easy, straightforward cure for muscle cramping is supplementation with magnesium and other trace minerals, as they allow the muscles to function smoothly and correctly. The role of magnesium in relieving cramped muscles also makes it a highly appropriate therapy for the muscle pain associated with fibromyalgia, a condition that is often treated successfully by practitioners of natural medicine. THERAPEUTIC APPLICATIONS OF ST. JOHN’S WORT DEPRESSION—AN OVERVIEW Depression is a disorder that affects millions of people, both Americans and worldwide. It takes many forms, but is usually marked by sadness, inactivity and heightened selfdepreciation. Hopelessness and pessimism are often common symptoms, as are lowered self-esteem, reduced energy and vitality, and loss of the overall capability to enjoy one’s existence. Depression is probably the most common psychiatric complaint offered to doctors, and has been described by physicians from at least the time of Hippocrates, who called it “melancholia.” The course the disorder runs varies widely from person to person. Depression may be short-term, or may occur repeatedly at short intervals. It may be somewhat permanent, mild or sever, acute or chronic. And who does depression most affect? Rates of incidence are higher among women than men (for varying reasons, some not totally understood). And men are more at risk of suffering from depression as they age, while a woman’s peak age for experi-encing depression is usually between the ages of 35-45. Depression is caused by many things—it could come about because of childhood traumas, or because of stressful life events—but more and more, doctors and scientists are pointing to biochemical processes as a main culprit in the onset of depression. Defective regulation of the release of one or more naturally occurring monoamines in the brain—particularly norepinephrine—leads to reduced quantities or reduced activity of these chemicals in the brain, bringing on the depressed mood for most sufferers. Accompanying the increase in depression cases and the emerging knowledge of its causes has been the rise of drug and other therapies in treating the disorder. The two most important are drug therapy and psychotherapy. Psychotherapy aims to resolve any underlying psychic conflicts that may be causing the depressed state, while giving emotional support to the patient. This usually involves seeing a psychiatrist and/or psychologist at regular intervals. This also may be accompanied by participation in support groups. Antidepressant drugs, on the other hand, directly affect the chemistry of the brain and its chemicals, such as the monoamines that are thought to have the most effect on depressed emotional states and moods. The tricyclic antidepressant drugs are thought to work by inhibiting the body’s physiological inactivation of the monoamine transmitters. This results in the buildup or accumulation of these neurotransmitters in the brain and allows them to remain in contact with nerve cell receptors longer, thus aiding in elevating the mood of the patient. There are other drugs, called oxidase inhibitors, which interfere with the activity of monoamine oxidase, an enzyme known to be involved in the breakdown of norepinephrine and serotonin.5 While drug therapy is something more favorable than continuing suffering from depression, for many persons who take these medications it brings on very undesirable side effects. Uncomfortable physical side effects are among the biggest complaints. Many drug users suffer from sensations of nausea, bloating, indigestion, abdominal cramping and diarrhea, and other gastrointestinal discomforts. Dizziness is often a common complaint, and there are many others. For decades, St. John’s wort has been utilized as a mood elevator, antidepressant and overall mental stimulant. As mentioned before, since times as far back as the Crusades do we have record of St. John’s wort being used in this and other capacities. Wounds were treated with the herb’s extracted oil, the insane were given the herb for its effect on both the nervous system and brain, and it was even used to cast out evil spirits (which often is linked to hallucinations and other mental instability). More recent uses in “folk” or nonstandard medicine point to St. John’s wort’s effective use not only as an antidepressant and nervous system tonic, but also for neuralgia, wounds, kidney problems, its anti-inflammatory and antibacterial properties, and of very recent interest, its use as an AIDS virus inhibitor. Michael Murray, in his book Natural Alternatives to Over-the-Counter Drugs, points to St. John’s wort’s uses for the previously listed uses, and the results of several recent clinical studies. Rebecca Flynn and Mark Roest also outline very well the benefits of the herb as shown in medical and other tests.6 The information coming from both the folk medicine and the clinical medicine worlds indicates that St. John’s wort possesses effective and safe healing properties for several disorders and ailments, and potentially many more.

CLA and the Catabolic Cascade Next fall, when you or a friend goes to the doctor to get a flu shot, notice how a low-grade fever starts. Notice how rundown you or your friend begin to feel for a day or so after the shot. It is as if you are dealing with a small portion of the disease. In some respects you are, but, in reality, the icky, yucky feelings we associate with sickness come from our body’s own response to an invasion. When the immune system goes on the o f f e n s i ve, it puts out hormones called cytokines. T h o s e cytokines cause fever and pain. Doctors call this process the catabolic cascade. It is our body that produces it. An extreme example might have been when Jim Henson, the wonderful creator of Kermit the Frog, got an extreme bacterial infection. He died within about 12 hours. Although the bacteria caused some severe reactions, it was his body’s intense catabolic response that may have been the direct cause of death. Cytokines are involved in more than just stimulating the immune system, they are involved in how the body accumulates fat, in how veins accumulate deposits and in how our body during disease can sometimes cause dangerous, rapid weight loss. CLA changes how cytokines work, but how it does it is not certain. Here’s an example of why this is important: When young animals get sick, their immune systems kick into action. Besides contracting a feve r, the animals’ growth slow s . Furthermore, weight and muscle mass can be lost, not just because of loss of appetite, but because of degradation of muscle tissue. For a poultry farmer, this can be significant. In organized farms, bacteria can abound and young chicks often face sickness. Because their immune systems are firing, the cytokines can stunt growth and, accordingly, stunt the farmer’s profits. Dr. Mark Cook was working on this dilemma in 1990 and jogging at the campus of the Un i versity of Wi s c o n s i n - Madison. During one of his regular exercise sessions, he began chatting with Dr. Pariza. As researchers do, they began talking about their work. They decided to collaborate, seeing if CLA had an effect on this problem. In 1993, the scientists at the University of Wisconsin-- Madison injected rat pups with endotoxin, the substances bacteria produce to do their damage.40 This injection activated their immune systems. They also did the same thing in two studies using chicks. In all three studies, the weight-loss was about half what it was during the other studies. In a study published in 1994, re s e a rchers also injected endot oxin into mice. To some, they gave CLA, to others they didn’t After three days, the scientists weighed the mice and discove re d that those who also re c e i ved CLA in their diets lost much less weight. Indeed, after three days they weighed as much as the c o n t rol gro u p, which re c e i ved no endotoxin at all. The CLA - f e d g roup also had a much better appetite than those that re c e i ve d no CLA with endotoxin. They also had a higher muscle mass.41 Let’s repeat that. CLA gives a higher muscle mass in rats. Stop and think about the implications. Other studies have shown, and, we will get to them, that CLA also cuts the amount of food converted to fat. In an era of increasing battles with the bulge, CLA seems to show great promise. (That weight gain seems to be involved somehow with the immune system and cytokines indicates that working with cytokines may be how CLA affects body fat accumulation.) Yes, CLA can help cut the effects of immune stimulation, but does it do that at the expense of making our immune systems less effective? Does CLA affect how the body battles disease? Not from any evidence in any study. The 1993 studies measured several immune functions, and, if anything, the immune system worked better.42 Again, these are animal studies, not necessarily involved with how humans work. However, these studies involve more than one kind of animal, making it, again, more likely to be useful in humans. Let’s speculate for a minute. When CLA cuts the catabolic cascade, doesn’t it make sense that the body would feel better, if only because the appetite is better? When CLA cuts weight loss, couldn’t that have immense benefits for patients suffering from long-term illnesses—including those illnesses that affect the immune system—who grow weak from a loss of muscle tone and from a loss of weight? For the animal industry, of course, this nutrient clearly means better production methods and healthier animals. For those same animals, it seems possible to speculate that CLA may actually work as a growth factor for their young.43 For humans, this nutrient could mean feeling better and feeling stronger while the body fights off disease. At the beginning of this booklet, we learned that CLA may be one of the most important nutrients discovered in recent years. The support for that statement should be clear. CLA, if the human studies hold true, could cut your risk for cancer, could lower your risk of heart disease, could help you feel better when you are ill, and improve muscle tone while decreasing body fat. This research has one other interesting side effect. Cook says that during much of the research, graduate students helping in the work would continually report that animals were eating less. Indeed, the animals ate up to 30 percent less while gaining weight or helping the immune system. If all animals in the world were fed CLA, and it cut feed intake by 30 percent, this would have strong implications on world starvation and feed efficiency. Especially in a world w h e re meat consumption may be growing. Cutting the amount of animal feed necessary to produce the same number of animals is vital. This, too, is a possible result of CLA.44

Light, RH Energy Times, February 11, 2004 Since your eyes are in constant use every day, exposed to the damaging energy of sunlight and pollutants that waft through the air, these delicate orbs are often in danger of wearing out. To keep this vital part of your anatomy functioning as you age, you have to feed and care for your eyes properly. Otherwise, you are in real danger of losing your vision and independence. Your vision may be in danger. Experts estimate that 8 million Americans over the age of 55 are at serious risk of blindness linked to a condition called age-related macular degeneration (AMD). AMD can wipe out your central vision and is the primary cause of blindness in Western society. While AMD causes no pain, it blurs the sharp, central vision necessary for driving, reading and other activities where you need to see either up close or straight ahead. During AMD, the macula, the part of the eye that allows you to pick out fine detail, is destroyed. The macula sits at the center of your retina, the nerve center at the back of your eye that senses light and sends optic signals to the brain. Age is not the only risk factor for AMD. Scientists have isolated a genetic defect that can lead to some forms of macular degeneration (Nature Genetics 2001; 27:89-93). Smoking and excessive exposure to sunlight are other hazards best avoided if you want to save your sight. In many cases, AMD progresses so slowly that victims of this condition don't even notice that their vision is deteriorating until much of it is irrevocably gone. Dry and Wet AMD Wet AMD occurs when blood vessels in back of the retina start to overgrow and leak blood. As this occurs, blood and other fluids push on the macula and quickly damage its sensitive nerve endings. When wet AMD occurs, you lose your central vision rapidly. If straight lines appear wavy to you, you may be suffering from wet AMD. If you notice this or other unusual vision changes, contact an eye care specialist as soon as possible. You need what is called a comprehensive dilated eye exam that can uncover signs of AMD. Dry AMD strikes the eye when light-sensitive cells in the macula slowly deteriorate, gradually blurring central vision in the affected eye. As dry AMD progresses, a blurry spot in the center of your vision may appear. Eventually, as more of the macula becomes dysfunctional, the central vision in the eye can gradually disappear. The most common sign of dry AMD is slightly blurry vision. This can make it hard to recognize faces and also make it harder to read without very bright light. Dry AMD generally attacks both eyes, but vision can be lost in one eye while the other eye stays normal. In the early stages of dry AMD, drusen, yellow deposits that gather under the retina, may form. Dry AMD progresses in three stages:
Vitamins and Minerals for AMD Fortunately, scientists have found ways to combat AMD: An analysis of a study called the national Age-Related Eye Disease Study (AREDS) shows that more than 300,000 Americans could avoid losing their sight to AMD if they took daily supplements of antioxidant nutrients and zinc. This conclusion, reached by scientists at Johns Hopkins' Wilmer Eye Institute, is based on research involving more than 4,500 adults suffering various stages of AMD. The study demonstrated that people who already had some AMD could lower their risk of the more advanced form of this condition by 25% when they took vitamin C, natural vitamin E and beta carotene along with zinc. Those suffering from advanced AMD lowered their chances of losing vision by about 19%. (Supplements did not affect the risk of cataracts or the chances of some vision loss for people in the early stages of AMD.) " Without treatment to reduce their risk, we estimate that 1.3 million adults would develop the advanced stage of AMD," says Neil M. Bressler, MD, professor of ophthalmology at Johns Hopkins and author of the current study, published in Archives of Ophthalmology (11/03). According to Dr. Bressler and the other researchers, people who now have intermediate AMD (some vision loss) in one eye have about a 1 in 16 chance of having their vision deteriorate until they have advanced AMD. They also calculate that about 1 in 4 of those with intermediate AMD in both eyes and 43% of those with advanced AMD in one eye will develop advanced AMD in five years without treatment. In their view, older people at risk of AMD blindness should take daily supplements of 500 milligrams of vitamin C, 400 milligrams of natural vitamin E, 15 milligrams of beta carotene, 80 milligrams of zinc as zinc oxide and 2 milligrams of copper as cupric oxide. Evidence also exists that a diet which is high in fat can cause AMD to progress to an advanced stage. The exceptions: The healthy fats found in fish and nuts (Archives of Ophthalmology 2003; 121:1728-37). Lutein Protection Oddly enough, some of the same pigments that color vegetables and other foods also color your eyes. And scientists believe that those pigments, which are classified as carotenoids, help protect the eyes by helping them fight off the negative effects of caustic molecules called free radicals. Free radicals are formed when the energy from sunlight strikes the eyes and disrupts the composition of natural chemicals found there. When scientists compared healthy eyes with eyes suffering from AMD, they found that AMD eyes contained lower levels of lutein and zeaxanthin, carotenoid pigments contained in egg yolk, spinach, broccoli and other dark green vegetables (Ophthalmology 2003; 109:1780). Furthermore, they found that levels of these chemicals generally decline as you grow older. " This research is a major step toward large-scale clinical studies to prove the extent to which lutein and zeaxanthin protect against age-related macular degeneration," says Paul S. Bernstein, MD, PhD, at the University of Utah School of Medicine at Salt Lake. "We know that these carotenoids are specifically concentrated in the macula of the human eye." Dr. Bernstein adds that, as you age, taking supplements containing lutein and other antioxidants may lower your AMD risk. In his investigation, people with AMD who did not take lutein had one-third less lutein in their eyes than older people whose vision was normal. Avoiding Cataracts Another eyesight hazard is cataracts, in which the eye's lens-the part that focuses incoming light onto the retina-becomes cloudy. Cataracts form when the proteins found in the normally clear lens become damaged; signs include progressively blurred vision (especially outdoors), focusing problems, seeing streaks of light from headlights and stoplights, and colors that look faded. Cataract is the leading cause of blindness worldwide, according to the World Health Organization. One of every six Americans 40 and older suffers from some degree of cataract; it affects half of all Americans who reach age 80. Nuclear cataracts, the most common form of this disorder, develop in the center of the lens and tend to grow slowly. Cataracts may also develop at the back of the lens; this form is linked to eye trauma and long-term use of certain medications, including steroids. Like AMD, cataracts become more common as people age. Up to 40% of individuals between the ages of 75 and 85 have them, compared with only 5% to 10% of those folks under the age of 65. And like AMD, sunlight exposure and smoking increase the risk of developing cataracts, as does the presence of diabetes. Lutein and zeaxanthin, the carotenoids that are so plentiful in the macula, are also found in the lens (although in lower concentrations), leading many researchers to believe that these nutrients may help drop your risk of cataract development. Early studies indicate that an increased intake of lutein and zeaxanthin reduces one's chances of needing cataract surgery, the most common surgery in the United States (American Journal of Clinical Nutrition 1999; 70(4):509-16; 517-24). Antioxidants and the Lens Scientists believe that free-radical damage is a leading cause of cataracts, and so it isn't surprising that antioxidants have proved useful in preventing this problem. Almost 500 women filled out diet questionnaires as part of a very large research effort called the Nurses' Health Study; those who had taken vitamin C supplements for 10 years or longer enjoyed the lowest rates of nuclear cataracts (Archives of Ophthalmology 2001; 119:1009-19). So the answer to lowering your risk of eye problems is clear, whether you are already in your mature years or plan to be someday: Lead a healthy, eye-friendly lifestyle, eating a diet filled with colorful fruits and vegetables. Take frequent walks and jogs around the block. And yes, when you kick back and take your just-as-frequent doses of antioxidant supplements, you're allowed to take your sunglasses off and see the world clearly.

Marilu Henner: Energy Personified! by Stephen Hanks Energy Times, January 3, 2005 Marilu Henner is an actress, dancer and author, a health, fitness and cooking guru and a devoted mom. Now she's also an advocate for nutritional supplements. In this revealing interview, she offers her thoughts on the battle to support consumer rights and to create a better health care system in America. "So, you want to know what my schedule is after I finish talking with you?" Marilu Henner says, in an almost breathless voice. "Today's Tuesday, right? Tomorrow morning I leave Los Angeles [where she lives] for New York City so I can do the Tony Danza Show first thing Thursday morning, Then, I take a 9 am flight back to LA because my son has a sleepover birthday party. I have a 7 am flight to New Jersey the next morning because I'm speaking about mental health at a conference at a big country club. The next morning, I catch a 7 am flight back to LA for my son's soccer games, one at noon and the other at 2. Whew!" Trying to keep up with Marilu Henner would make anybody feel out of breath because the woman is energy personified. At 52, her schedule includes acting in movies, on television and in the occasional Broadway show, writing books (she's authored seven, including Total Health Makeover and Healthy Life Kitchen), teaching online diet and exercise classes through her website (marilu.com), taking Pilates classes three times a week and raising two sons, Nicholas (10) and Joseph (8). But now, on top of all that, the former star of the TV show Taxi has become a health and nutrition activist, speaking out in favor of the use of dietary supplements whenever she can. This past September, Henner testified at a hearing of the House Subcommittee for Human Rights and Wellness to advocate increased funding for research and full implementation of the Dietary Supplement Health and Education Act (DSHEA). During her testimony, Marilu described why she believes consumers should have access to more information about supplements and why the products should be made more accessible through both government initiatives and private health plans. "I believe that dietary supplements should be part of a campaign to improve our nation's health," Henner testified. Energy Times recently caught up with Marilu at her Los Angeles home for a freewheeling conversation. Here, this vibrant yet down-to-earth celebrity displays her passion for health, nutrition and consumer issues. Energy Times: You've become one of the most high profile celebrities to advocate a consumer's use of dietary supplements. What was your motivation to get involved in such a public way? Marilu Henner: As a teenager, I had been a yo-yo dieter. I could be around 135 pounds and balloon up to 174. I knew I needed a different way of looking at my life. I couldn't concentrate on those stupid diets where I could lose 20 pounds in a week and then gain it all back over a weekend. But after my mom died at 58 in 1978, I said to myself, "It's not really about my body anymore, it's really about my health." I just became obsessed with health. I read everything I could get my hands on. I starting taking human anatomy classes, going to medical libraries and seeing nutritionists and doctors. And I started experimenting on myself, turning myself into my own guinea pig. It took me about eight years to put together a program. I always say that my health birthday was 1979, but it wasn't until 1987 that I could say I was living a completely healthy lifestyle. ET: Were you ever really heavy when you were performing in a show? MH: Sure. When I first performed the role of Marty in "Grease" more than 30 years ago I weighed about 175 pounds. But I hid it well. When you wear those 1950s clothes you can get away with it. ET: When did you start incorporating supplements into your health program? MH: Before I became pregnant with my first son in 1993, I had never been a supplement taker. But I started taking prenatal vitamins and dietary supplements when I was breastfeeding and they made me feel really good. After the pregnancy, I just kept taking them because I was getting the essential nutrients that I couldn't get from food alone. I was getting great stuff from my food, but with all the travel I do-you know, the eating on planes and in restaurants-I couldn't always shop for organic food. I had a doctor who understood the value of dietary supplements and encouraged me to use them. I've taken them ever since and I recommend them to my family and friends, as well as to people through my books and classes. ET: What supplements other than vitamins do you find helpful in your total nutrition program? MH: I take vitamin E, omega-3 fish oils, antioxidants, garlic, coral calcium and echinacea supplements. ET: So let's get back to why you decided to testify before Congress in support of supplement use. MH: I know that as soon as you put a celebrity face on an issue, people tend to pay a little more attention. When I was in Washington, I was able to tell Congress the personal stories I've heard about people who turned their lives around-from debilitating illness to vibrant health-when they got the information they need to make good choices. By good choices, I mean rejecting the manufactured foods of our society, with their over-reliance on sugar, meat and dairy, and the chemicals, hormones and steroids that usually accompany these products. Instead, we should be moving towards an organic, vegan diet that produces a sense of physical health. I also believe that a healthy diet includes the use of appropriate dietary supplements. ET: Do you think that government is moving fast enough to reduce the restrictions on safe supplements? MH: Things could always move faster. But I remember years ago writing letters on behalf of people who wanted supplements without needing a prescription. When I would tell people about the benefits of soy products or supplements, they'd think I was nuts. Now those ideas are mainstream. The floodgates are open and people want to know more. You can't even keep up with all the information. I think that the government knows they're not going to get away with making people have a prescription to take their vitamins. ET: What is the citizen's responsibility in all this? MH: We're in a real transitional phase and people should take responsibility to educate themselves. You have to question your doctors and recognize when something is or isn't working. You have to find a health practitioner who really knows their stuff. ET: As you said, there's so much information out there, how do you decipher it all? How can someone be an educated information consumer? MH: I know it's very difficult because there are so many options. Believe me, I've been doing this a long time and I'm glad I did the research. I think you have to read everything. You have to find a nutritionist/herbalist/doctor who's the real deal and knows what they're talking about. You have to recognize the symptoms in your own body and try to figure it out. I think if you start out with a good multivitamin, a calcium supplement, fish oils and vitamin E, that can be your base and you can't go wrong. ET: Isn't a diet built on buying organic foods much more expensive? MH: Sure, it's a little more expensive. But there's nothing more expensive than bad health. There's nothing more expensive than food being thrown away because it doesn't taste right. Organic fruit tastes so much better than the perfect-looking fruits and vegetables sprayed with pesticides. ET: What's your advice to people who want to start a workout and weight-loss program? MH: I'm always saying to people, "Look, you walk your dog, your cat stretches, your hamster runs on a hamster wheel. You're an animal, too, so go move, go do something." I know a lot of people believe that when you want to lose weight you have to go on these 1,200-calorie-per-day diets. Well, my weight is always between 120-124 pounds and I eat close to 2,000 calories a day, but everything I eat is of quality. And I burn a lot of calories because I wear comfortable shoes and I move around in my life. I'm always strong, I never get sick and I feel like an animal. ET: How do you view the future of healthcare policy in this country and where do you think nutritional supplements fit in? MH: I strongly believe that the general public needs more access to dietary supplements to maintain essential good health. American research and development has come up with really great products, but the American Medical Association and the drug companies have stigmatized supplements. So what's the result? Most Americans don't have access to safe supplements because they are not covered by their health plans, nor recognized as effective by the federal government. This really needs to be changed. I think we should take 90% of what we're spending on drugs that barely keep people alive and start spending it on prevention, nutrition and changing lifestyle habits. In this country we're all about curing the disease rather than curing the patient. We don't look at the patient holistically and try to find out how the disease developed. Your doctor should be in charge of keeping you well, not keeping you in that strange state of, what I call, "dis-ease." It's like the medical and pharmaceutical establishment wants to keep you just sick enough so you'll continue to be a paying customer. They've convinced people to think they've got to take a pill to cure themselves rather than use their own bodies. ET: Do you think medical schools will start training doctors to treat patients holistically and focus more on preventative medicine? MH: I think we're seeing a lot more nutrition and alternative medicine specialists these days. And the general public is becoming more aware of health and nutrition issues then they were years ago. There's this groundswell of people saying "Wait, I need more information. Wait, my doctor's no longer God. I can't just keep taking these pills and trying to figure out all these warning labels and side effects." ET: Do you plan on becoming more politically active on these issues? MH: Absolutely, I want to work with any organization that wants to improve school lunch programs, improve the healthcare system and get people more involved in understanding nutrition and disease prevention.

Sulforaphane Stimulates the Body's Cancer-Fighting EnzymesSecret Weapon Against Cancer Found in Broccoli Sproutsby Richard Conant, L.Ac, C.N. The health benefits of vegetables were known historically, long before researchers began seeing a connection between vegetable consumption and cancer prevention. Over the last twenty years, evidence concerning this connection has steadily accumulated. The latest and most promising findings reveal that specific vegetable constituents—"phytochemicals" to use current scientific parlance— enhance the body's defenses against cancer. This article will focus on one phytochemical in particular, a sulfur-containing compound called "sulforaphane." Found in Cruciferous vegetables such as broccoli, sulforaphane may prove to be one of our most powerful cancer prevention allies. Recent studies have shown that sulforaphane stimulates, or "induces," "Phase two enzymes." These enzymes are an integral part of the body's elaborate detoxification system that renders carcinogens inactive. This detoxification system turns carcinogens and other toxic substances into harmless molecules that are excreted from the body. We need not fear carcinogens—the body is equipped to deal with them. These findings, coupled with an appreciation of the body's ability to defend itself against carcinogens, have the potential to dramatically change the way we look at cancer and substances in the environment that "cause" cancer. We need to minimize unnecessary exposure to carcinogens, and the staggering quantity of hazardous chemicals in the environment remains an urgent health concern, for cancer and many other health problems. But, knowing the body is equipped with the means to defend itself against toxins, we do not need to fear carcinogens as perhaps we have in the past.
The natural world is full of carcinogens. What's more, even if you eat 100 percent organic food and live in a environment free of toxic man-made chemicals, you are still being exposed to carcinogens every day of your life. Food is the primary route of this exposure. Plants, for their own defense, produce over 99% of all the pesticides in agricultural products.1 Almost all foods—in their natural state—contain tiny amounts of naturally-occurring, potentially carcinogenic chemicals. The point is not to trivialize the concern over environmental toxins. The point is that the natural world is full of toxins that are not man-made. These substances have been around since before we appeared, which is why we have evolved with a highly efficient system for neutralizing them before they can damage our cells and initiate the complex process that produces cancer. Broccoli sprouts are a concentrated source of cancer-fighting sulforaphane. We cannot avoid carcinogens. What we can do is support our internal detoxification system. Sulforaphane is a powerful tool in this effort. We can start by following the often-repeated advice to eat a variety of vegetables every day, and include broccoli in our menu. There is an even richer source of sulforaphane than broccoli itself. In September 1997, a group of scientists at the Johns Hopkins University School of Medicine made a breakthrough discovery— broccoli sprouts contain ten to one hundred times more sulforaphane than mature broccoli.2 Vegetable sprouts are generally regarded as exceptionally healthy foods. Broccoli sprouts now look like a shining star, especially when it comes to cancer prevention. For those lacking the time or inclination to keep a fresh supply of broccoli sprouts on hand, broccoli spouts have been processed into an extract that is even more concentrated in sulforaphane. More on this later. What have researchers learned about broccoli consumption and cancer rates? More than 200 epidemiological studies—studies which track groups of people over time to uncover realtionships between variables such as diet and the incidence of disease—have invesitgated the connections between vegetable consumption and various forms of cancer.1 It should be understood that findings from epidemiological research are generally not regarded as conclusive; these studies are not controlled, and often use data gleaned from questionnaires, which are an imprecise method of gathering information. (In the case of diet questionnaires, for example, the study subjects may or may not record their food intakes with 100 percent accuracy.) Epidemiological studies look for trends. To be credible, these trends need to show up consistently, in different population groups. Findings from the vegetable intake/cancer studies easily meet these criteria; the number of studies is large and the trend is consistent—vegetable consumption is strongly associated with a lower risk of developing cancer. What about broccoli in particular? A paper published in the September 1996 issue of Cancer Epidemiology, Biomarkers & Prevention analyzes epidemiological data gathered from 94 studies concerning the cancer preventive effect of brassica vegetables.3 (The Brassica genus, part of the Cruciferae family, includes broccoli, cabbage, kale, cauliflower and brussels sprouts.) The data suggest that broccoli consumption reduces the risk of some of the most feared forms of cancer, including stomach and lung cancer. Now, to put these data into a balanced perspective, the researchers point out that in most of the studies reviewed, brassica vegetable consumption was reported as part of the total vegetable intake. "In hardly any epidemiological studies was the effect of brassica vegetables separated from the effect of total vegetables or other vegetables by adjusting for consumption of these variables. Therefore, it is difficult to sort out whether the observed observation was attributable to brassica vegetables, to vegetables as a whole, or to other vegetables," they noted. This uncertainty is a good example of why epidemiological studies alone do not give us open and shut conclusions. But the paper also adds that the apparent anti-cancer effect of brassica vegetables agrees with "the results of experimental studies in which brassica vegetables reduced mammary tumor incidence, hepatic tumor size, numbers of tumors per liver, tumor frequency, and the number of pulmonary metastases when given to rodents before or after a carcinogen insult."3 When you put together a plausible trend from epidemiological research with results of experimental studies that agree with the trend, and then add additional research that reveals the underlying mechanism for these observations, a clear picture begins to take shape. And, indeed, we now have a fairly good idea as to just how brassica vegetables, especially broccoli, help prevent cancer. How sulforaphane helps prevent cancer from developing. To see how sulforaphane works, let's look at a brief overview of the body's detoxification system. The detoxification of carcinogens and other toxic substances takes place in the liver, and involves two distinct enzyme-driven processes or "phases". Phase one enzymes neutralize toxins by various routes. Some of these convert toxins into substances that are immediately eliminated. However, other Phase one steps convert toxins into intermediate products which are carcinogenic themselves, and require further treatment before they can be excreted. Phase two enzymes do this vital job. Phase two enzymes deactivate these carcinogenic metabolites of Phase one, and the final breakdown product is then eliminated once and for all. (For an excellent review of this subject, see Encyclopedia of Natural Medicine, by Drs. Michael Murray and Joseph Pizzorno.4) Phase two is critical. If Phase one is in good working order, but Phase two is not, the potential threat from carcinogens increases. It is vitally important to keep Phase two operating well. This is where sulforaphane plays its cancer preventive role. Sulforaphane is a powerful inducer of Phase two enzymes.5,6 Broccoli sprouts-the ideal source of sulforaphane Sulforaphane is one among a group of phytochemicals called "isothiocyanates." (These occur in brassica vegetables largely as "glucosinolates," which are precursors for isothiocyanates2,12 When the plant is crushed, glucosinolates are converted to isothiocyanates.) Sulforaphane induces Phase two enzymes exclusively, leaving Phase one enzymes alone. This means it helps reduce the load of carcinogenic Phase one intermediates without adding to the load by stimulating Phase one.8,9 As reported by the Johns Hopkins University research group, broccoli sprouts are an "exceptionally" rich source of sulforaphane (in the form of "glucoraphanin, sulforaphane's glucosinolate precursor). And broccoli sprouts have another advantage over mature broccoli. They contain almost no indole glucosinolates, phytochemicals present in mature broccoli that "can enhance tumorogenesis."2 Broccoli sprouts as an extract, now available as a dietary supplement, takes the concentration of sulforaphane to the next level. This recently developed nutraceutical product contains a potent 20 to 1 extract of three-day old fresh broccoli sprouts. One 125 mg capsule supplies the same amount of sulforaphane as 125 grams, or about 5 ounces, of mature broccoli. Taking just one capsule a day is like eating two pounds of broccoli per week, which equals the intake of cruciferous vegetables believed necessary to obtain their health benefits. References 1.
