Beet Root

It is a matter of personal taste when you actually harvest the BeetRoot. The smaller ones are sweeter but the older, larger ones still have plenty of flavor. First of all, remove the green tops and leaves from the roots making sure you leave a two inch stem, wash and rinse thoroughly in cold water. Leaving a short stem ensures that nutrition is not lost from the roots when they are boiled.

Place the prepared BeetRoot in a large pan of boiling water. Cook for 10 to 15 minutes until the skins soften. While you're waiting for the BeetRoot to cook, thoroughly wash the bottles, lids and rings making sure you rinse them well. Next, add salt to each jar. You will need 1 teaspoon for a quart jar and half this for a pint jar.When the beets have cooked for 15 minutes, drain the BeetRoot and peel the skins. They should come away easily but there are little reluctant.
