Acidophilus is correctly named Lactobacillus acidophilus, and is one species of Lacobacillus used commercially in the preparation of certain types of yoghurt. The name refers to the fact it is found in milk (lacto), is rod-like in shape like many bacteria (bacillus) and it likes acidic conditions (acidophilus). It not only likes them, but creates them.

In fact, acidophilus thrives at a pH of 4-5 or less, and occurs naturally in the gastrointestinal tract of humans and animals, and also the mouth and vagina. It ferments milk to lactic acid, and dies in the presence of sunlight, excessive moisture and at high temperatures. Some, but not all, strains are probiotic, or ‘friendly’ bacteria that aid digestion and help to protect against harmful bacteria and their toxic emissions.

The fermentation of nutrients by friendly bacteria produce acids, such as the lactic acid previously referred to, hydrogen peroxide and other substances hostile to harmful organisms, and also reduces the population of harmful bacteria by competing for their food. There are additional health benefits that shall be discussed later, but first some comments about the stability of acidophilus to heat.

The growth rate of acidophilus reaches an optimum at around 36-37F (2.2C), and it tends to die off at temperatures much above this over a period of time. It also tends to be sensitive to oxygen and moisture, and if exposed to heat, moisture and oxygen, a supplement will lose its potency over time. This is true of all such supplements, and after purchase must be quickly refrigerated. It is possible, however, to purchase stabilized forms of acidophilus that die off slower than normal. This extra resistance is built in during the manufacturing process, and many forms of acidophilus claim to be stable. Although there will never be a truly stable form of the probiotic, these stabilized versions do last longer than those not claimed to be so.

During manufacture, the bacteria are first concentrated by removing the excess liquid by means of sedimentation, ultra-filtration, reverse osmosis and centrifuging. A substance is then added to protect the bacteria from the shock of freezing and the acidophilus freeze dried. A stabilizer is then added to maintain its properties between freezing and consumption.

It has also been found that bacteria grown at higher pH levels last longer than those at lower pH. The packaging is also important, and since the bacteria are sensitive to oxygen, nitrogen flushing the bottles will improve the stability of the product. Glass bottles are less porous than plastic, and so is the preferred packaging material for maximum stability and life. Another factor is refrigeration. If you keep the bottle in the fridge it was last a lot longer than at room temperature, but take care not to freeze it since acidophilus does not freeze well. If it is not refrigerated then it will quickly lose its potency.

The form in which you take the supplement is immaterial regarding the potency: at least initially. However, through time the powder will become less potent quicker, because it will adsorb oxygen and moisture. Otherwise the form in which it used is immaterial. So, yes, acidophilus can be stabilized, but only for a while, and if allowed to warm up to room temperature in the presence of oxygen will quickly degrade, although this takes more than just a day or two.

Many health benefits are claimed for Lactobacillus acidophilus, although your daily consumption to achieve these should be at least 2 billion CFU, and preferably 5 billion. You can also Fortify the bacteria with a prebiotic of fructooligosaccharides (FOS). These provide nutrition for the acidophilus and accelerate its growth.

One thing to be careful of is assuming that yoghurt contains acidophilus. It does not contain sufficient to be of benefit to you. Natural yoghurt is better, and certainly contains beneficial bacteria, but not enough to make a significant difference. In time, echinacea became popular with 19th century Eclectics, who were followers of a botanic system founded by Dr. Wooster Beech in the 1830’s. By 1898, echinacea had become one of the top natural treatments in America. During these years, echinacea was used to treat fevers, malignant carbuncles, ulcerations, pyorrhea, snake bites and dermatitis. In the early twentieth century, echinacea had gained a formidable reputation for treating a long list of infectious disease ranging from the commonplace to the exotic. The Lloyd Brothers Pharmaceutical House developed more sophisticated versions of the herb in order to meet escalating demands for echinacea.

Ironically, it was medical doctors who considered echinacea more valuable than eclectic practitioners. Several articles on echinacea appeared from time to time in various publications. Its attributes we re re v i ewed and, at times, its curative abilities ranged from the sublime to the ridiculous. In 1909, the Council on Pharmacy and Chemistry of the American Medical Association decided against recognizing echinacea as an official drug, claiming that it lacked scientific credibility. It was added to the National Formulary of the United States despite this type of negative reaction and remained on this list until 1950.

Over the past 50 years, echinacea has earned a formidable reputation achieving worldwide fame for its antiviral, antifungal and antibacterial actions. Consumer interest in echinacea has greatly increased, particularly in relation to its role in treating candida, chronic fatigue syndrome, AIDS and malignancies. Practitioners of natural medicine in Eu rope and America have long valued its attributes. In recent, years, German research has confirmed its ability to augment the human immune system. Extensive research on echinacea has occurred over the last twenty years. Test results have s h own that the herb has an antibiotic, cortisone-like activity.

Echinacea has the ability to boost cell membrane healing, protect collagen, and suppress tumor growth. Because of its immuno-enhancing activity, it has recently been used in AIDS therapy. Research has proven that echinacea may have p rofound value in stimulating immune function and may be particularly beneficial for colds and sore throats.3

CLA and Cancer

Because of Pariza’s 1979 research, some of the earliest studies done on CLA were to see if it could block the development of cancer. Dr. Pariza and his colleagues at the University of Wisconsin/Madison’s Food Research Institute in Madison took extracts from beef that they knew had “mutagen modulators” (this was before they isolated CLA.).15 They took two groups of mice, to one they applied this extract on their skin. On the other group, they did not apply the extract on the skin. Then, on both sets, researchers put a cancer-causing substance called dimethylbenaanthracene—DMBA for short—and applied it to the skin.

Sixteen weeks later, doctors counted the mice that had tumors and how many tumors each of those mice had. The number of mice with tumors was 20 percent lower when given the beef extract, and, significantly, the numbers of tumors on those mice that did develop cancer was half what it was on the untreated mice. This meant that this extract could, perhaps, prevent some cancers in mice and, slow tumors after they develop. (Today, Pariza writes that CLA inhibits cancer development at various stages, from initiation to metastasis.)16 After isolating CLA by itself, Pariza and others found that CLA also cut the incidence of skin tumors.17

Scientist Clement Ip at the Roswell Park Cancer Institute in Buffalo did a similar study using DMBA with rats, this time feeding different amounts of CLA into the diet and over a longer period of time. He and his team measured how many breast tumors these rats developed. As might have been expected with the earlier work, 20 percent fewer animals developed the tumors—among those receiving the most CLA—than the rats that received none, and the total number of tumors that developed was 60 percent less. In general, the data showed that the more CLA, the greater the protective effect.18 This is significant in the human world because many researchers see a link between a woman’s consumption of fat and her risk of getting breast cancer, and CLA could help modulate that. Any research to lower a woman’s chance of contracting breast cancer is useful. Today in the United States, as many as one in eight will contract the dread disease.19 In 1990, Dr. Pariza and his colleagues also found a lower incidence of cancers in parts of the stomach.20 Rats were given something called 2-amino-3-methylimidazo (4,5-f]quinoline, which can give them colon cancer. Again, the total number of aberrant growths was lower for those given CLA compared with those given safflower oil, which is rich in essential oils but not so high in CLA.21

Does this mean that CLA will prevent cancer in humans? Perhaps. You might even say probably—in some circumstances Still, science can be imprecise in predicting cancers from animal models to humans, and scientific tests must be controlled in ways that don’t mimic the complexities and confounding factors of daily life. Few of us, for example, will be exposed daily to DMBA. T h e re f o re, all the science says for certain is that CLA seems to hinder the development of cancer in these animals when the cancer is caused by one particular substance. T h a t’s a little way, at least, from saying it pre vents cancers in humans.

However, the animal models are encouraging, and often meet mathematical tests to be “statistically significant.” In fact, scientists have taken to saying CLA has an anti-carcinogenic effect without hedging. Ip himself says, “CLA is more powerful than any other fatty acid in modulating tumor development.” 22 Indeed, so excited have many scientists become that some say one day governments may want to Fortify our foods with CLA much the way we Fortify our morning bran flakes with vitamin C.23 Furthermore, since at least several ways of giving different species of animals cancer have been studied, and in all of the tests, cancer was hindered, it gives better evidence to the notion that CLA hinders cancer in humans as well. Pariza wrote, “Few anticarcinogens, and certainly no other known fatty acids, are as effective as CLA in inhibiting carcinogenesis in these models.”24 This is clear language saying scientist believe this to be a powerful nutrient in the war against cancer. However, until human research is completed, and human research is underway, the positive effects of CLA on humans as a possible preventative of cancer best be considered preliminary.

Another important point about this is: Since the breakdown and changing of fats and fatty acids like CLA occur in the liver, CLA may have unknown effects on this vital organ. One study showed that fats increase in the livers with the increase of CLA in the diet.25 Could this lead to an increased risk of liver cancer?

Scientists do not have a complete answer to that question either.26 Pariza says, however, that such problems of fat accumulation do not occur in higher mammals, and is something specific to mice and some rats.27

To many, nothing is more annoying than a persistent allergy. Runny nose, itchy eyes, hives, sneezing, coughing...Frequently, allergies seem to represent suffering with no end.

When you are sensitive to something in your environment, often your only hope for relief appears to be to flee to an elsewhere that eludes the problematic, trouble-making allergen.

Complementary measures are available that can lower your risk of allergic reactions. Heading off allergic reactions before they strike can help you enter a comfort zone that leaves nothing to sneeze at.

Limit Your Antibiotics

While people have always suffered allergies, today, many experts agree, allergies are on the rise. One possible explanation: antibiotics. For instance, research at the Henry Ford Hospital in Detroit demonstrates that kids who get antibiotics within six months of being born run an increased risk of being allergic to dust mites, ragweed, grass and animals. At the same time, if two or more cats or dogs live with them, they reduce their chances of allergies (Eur Respir Soc ann conf, 2003).

" I'm not suggesting children shouldn't receive antibiotics. But I believe we need to be more prudent in prescribing them for children at such an early age," Christine Cole Johnson, PhD, says. "In the past, many of them were prescribed unnecessarily, especially for viral infections like colds and the flu when they would have no effect anyway."

Dr. Cole's investigators found that by age 7, kids who got one or more rounds of antibiotics were:

  • • 1.5 times more likely to develop allergies
  • • 2.5 times more likely to develop asthma
  • • Twice as likely to get allergies if their mothers had allergies

    When antibiotics are necessary, they are crucial to quelling bacterial infections. However, if you or your children suffer colds or flus, diseases caused by viruses, antibiotics have no effect on your illness but could increase your chance of developing allergies.

    " Over the past four decades there has been an explosive increase in allergy and asthma in westernized countries, which correlates with widespread use of antibiotics and alterations in gastrointestinal (GI) microflora," says Mairi Noverr, a researcher on a study linking allergies to antibiotic use (104th Gen Meet Amer Soc Microbiol, 2004). "We propose that the link between antibiotic use and dysregulated pulmonary immunity is through antibiotic-induced long-term alterations in the bacterial and fungal GI microflora." While a lot of research needs to be done, it may help to Fortify the probiotic, or good, microbes in your intestines with probiotic supplements. One study has shown that giving probiotics to pregnant women helped their children avoid allergic eczema, a skin condition (Lancet 2001; 357:1076-9).

    Green Tea Relief

    Research has demonstrated that various types of tea can produce a range of health benefits. Tea drinkers can add allergy relief to that list.

    Research in Japan demonstrates that for the allergy-oppressed, green tea may help them have nothing to sneeze at. In laboratory tests, scientist found that green tea contains a substance that blocks one of the immune cell receptors which is often a part of the allergic response. The substance, methylated epigallocatechin gallate (EGCG), is believed to have a similar effect in the real world (J Agr Food Chem 10/9/02).

    " Green tea appears to be a promising source for effective anti-allergenic agents," notes Hirofumi Tachibana, PhD, the study's chief investigator and an associate professor at Kyushu University in Fukuoka. "If you have allergies, you should consider drinking it." Traditionally, many people have consumed tea as part of their effort to suppress sneezes, coughs and itchy eyes caused by allergies. This experiment supports the evidence that green tea, in particular, has a reliable effect.

    According to Dr. Tachibana, green tea's anti-allergenic benefits have not been completely established, but tea apparently has the potential to be effective against allergens like dust, chemicals, pet dander and pollen.

    Tea Antioxidant

    EGCG has also been shown to be a very active antioxidant, helping to quell the destructive effects of the caustic molecules known as free radicals. Green tea is richer in EGCG than black tea or oolong tea (a type that falls between black and green).

    Although other research has demonstrated that EGCG offsets allergic responses in lab animals fed this substance, scientists don't completely understand why it works for allergies. Researchers theorize that EGCG restricts the production of histamine and immunoglobulin E (IgE), two substances secreted in the body as part of the chain of chemical reactions that lead to an allergic reaction, says Dr. Tachibana.

    This study shows, for the first time, that a methylated form of EGCG can block the IgE receptor, which is a key receptor involved in an allergic response. The effect was demonstrated using human basophils, which are blood cells that release histamine. As of now, nobody knows how much green tea you need to guzzle to have the best protection against allergies and, of the several varieties available, nobody knows which green tea is best.

    Outside of the US, green tea is the second most popular beverage in the world, right behind water. In the US, however, black tea is more popular than green. But the allergy sensitive should think and drink green.

    Stay Away from Diesels

    Those who are allergic to ragweed or pet dander usually know they should avoid the source of their allergies. But now scientists have found that, for many allergy sufferers, diesel exhaust can also worsen sneezes and wheezes.

    Scientists at two southern California schools have shown that about half of us have inherited a sensitivity to diesel pollution that can make our allergies significantly worse (Lancet 1/10/04). "[T]his study suggests a direct way that pollution could be triggering allergies and asthma in a large number of susceptible individuals...," says Frank D. Gilliland, MD, PhD, the study's lead author. Diesel exhaust particles are thought to act as destructive free radicals in the lungs, forming caustic molecules that damage lung tissue. This irritation can cause your immune system to create larger amounts of compounds that make you sneeze and wheeze more.

    The Antioxidant Advantage

    Antioxidants, scientists believe, can help defuse this damage and ease the body's allergic responses. The California scientists looked at two antioxidant enzymes the body makes to protect the lungs called glutathione S-transferase M1 (GSTM1) and glutathione S-transferase P1 (GSTP1). Only about five of ten people's immune systems can make all the effective forms of these enzymes. The rest of us lack this protection to some degree, and the immune system in about one in five people can't make any effective form of these enzymes.

    The research team found that people allergic to ragweed who lacked these antioxidant enzymes suffered more when they took in both ragweed pollen and particles from diesel pollution.

    Breathe Easier With C

    This research may help explain why many health practitioners recommend vitamin C, a potent antioxidant, to allergy sufferers. Vitamin C "prevents the secretion of histamine by the white blood cells, increases the detoxification of histamine and lowers the blood-histamine levels," says Sylvia Goldfarb, PhD, author of Allergy Relief (Avery/Penguin).

    Scientists continue to study the allergy conundrum. Meanwhile, sip a cup of green tea and shut the window before the next truck comes by.

  • Everyone wants thick, lustrous hair. Think of the allure attached to the locks of Samson and Lady Godiva and-fast-forward to the present-the full heads of Antonio Banderas and Julia Roberts.

    " We're naturally attracted to hair as humans; it catches the light, it frames the face, we like the feel of it," says Catherine Jones, ND, LAc, a resident naturopathic physician at Bastyr Center for Natural Health in Seattle, Washington. "Fair or not, historically in many cultures, rich, thick hair has been a sign of fertility and strength."

    Along with that allure, latching onto natural ways to have great-looking hair gives you the benefits of looks and health. Every hair starts with a shaft that grows from a root. "The root is contained deep within the hair follicle," says Dr. Jones. "Each one has a sebaceous or oil gland, which supplies the hair with necessary lubrication as it approaches the surface of the scalp." Each hair follicle has its own growth cycle, including a resting period, the telogen phase, when hair falls out. Because of these constant hair phases, each of us loses, on average, about 100 hairs a day.

    " The number of hairs the average person loses in a day tends to increase in the fall as the leaves fall from the tree and tends to decrease in the spring as the bulbs emerge from the soil," Dr. Jones says. "We really are connected to nature." Stress-due to rapid weight loss, infection, anemia, prolonged illness, hormonal changes, hypoactive thyroid disease, autoimmune conditions, eczema or psoriasis-can influence hair growth and loss.

    The Nature of Hair

    Hair consists of proteins, lipids (fats), carbohydrates and pigment (gray hair has reduced pigment; white, none at all). Each shaft's structure is divided into a medulla, a cortex and an outer cuticle. " The cuticle is coated with an outside lipid-like layer, which protects the hair," says Dr. Jones. "As the hair grows out of the follicle, the cortex and cuticle become keratinized and harden." Dry or damaged hair is more susceptible to breakage. "The condition of the cuticle affects how the light reflects off the hair, giving it highlights and luster," Dr. Jones says. "Luster is affected both by what occurs inside the body as the hair is developing and what happens to the hair after it has grown from the shaft."

    Sun, heat, moisture, pollution and hair products, dyes and bleaches can all dull the hair. "Applying chemical solutions to the hair, color, permanent waves or curl relaxers, damage the protein molecules that wrap around the shaft, leaving hair brittle and dull," says Christina Pirello, author of Glow: A Prescription for Radiant Health and Beauty (HP Books).

    Conditioners and oils can leave a residue or weigh hair down. Hair sprays and products that contain alcohol can dry and damage the hair, as can using blow dryers and curling irons.

    Hair's Natural Nutrients

    To combat hair-raising havoc, feed your hair natural nutrients for health. Silica and plants that contain silica/silicon both strengthen hair and promote growth. "Silica is a good mineral for hair health," says Walter Siegordner, founder of The Aurora Group, a personal care company. "It helps in the keratinization process of the cells that produce hair."

    " Silica is a mineral that is involved in the synthesis of bone and connective tissue," adds Dr. Jones. "The hair follicle contains connective tissue so silica may promote the health and function of the follicle itself." Silica-containing herbs include nettles (Urtica dioica), horsetail (Equisetum arvense), oatstraw (Avena sativa) and alfalfa (Medicago sativa).

    Sea plants like seaweed and kelp also provide vital nutrients. "Sea plants are essential ingredients in many natural shampoos and can be used to Fortify damaged hair," says Pirello. "They're rich in vitamin A that prevents the build-up of dead skin cells, which can clog the hair follicles, inhibiting the growth and health of the hair, and also contain vitamin B, linked to the prevention of oily hair, baldness and dandruff. Calcium found in sea plants is essential to the structure of the hair shaft."

    Eaten on s daily basis, sea plants are rich in nutrients that help maintain healthy, shiny hair, free of split ends, Pirello says. Try wakame in soups and salads, kombu or kelp in bean and vegetable dishes, nori in sushi, and hiziki and arame as side dishes. Since hair health is affected by digestive health, the fiber found in whole grains also helps. "Fiber prevents accumulation in the intestines that can result in the formation of toxins," says Pirello.

    Miso, she adds, is especially good hair food. It "is rich in living enzymes that ease digestion, Fortify the quality of the blood nourishing the body and hair, and provide us with essential oils, vitamins and minerals."

    Key nutritional support includes adequate protein and amino acids, essential fatty acids such as cold-pressed flax seed oil and fish oil, copper, vitamin A, vitamin E, vitamin D, biotin, iron and vitamin B5 (pantothenic acid). Zinc and selenium can help combat the effects of hyperthyroidism, which can result in thinning, lackluster hair.

    Vitamin C can boost adrenal health. "When the adrenals are overtaxed and become fatigued, hair follicles will go into a resting phase," says Dr. Jones. (If you have a medical condition, she adds, check with your health care practitioner first before taking supplements.)

    Ancient Chinese Hair Secrets

    In Traditional Chinese Medicine, hair is associated with the kidneys' qi, energy that originates in these organs, and with blood quality. " From the traditional Chinese perspective, excess amounts of fat, protein, dairy, sugar, alcohol and salt in the diet acidify the body, damage the Kidney qi and are not good for the hair," says Dr. Jones. A diet rich in vegetables and grains is a great way to support healthy hair. "Iron and mineral-rich foods are considered blood builders and hair tonics. Foods such as blackstrap molasses, seaweed, nettles, and the herb polygonum multiflorum (also known as He Shou Wu and Fo-Ti) have been used throughout the years. Fo-Ti has also been used to prevent graying of the hair and support the immune system."

    Revive Hair Glow

    " Hair is extremely strong but at the same time it's extremely delicate," says Barsoum Bouchar, a cosmetologist and owner of the Virtuoso Salon in Birmingham, Michigan. "Many products work against the hair texture, so the cuticle is always raised. This causes tangles and split ends. With blow dryers, chemicals, colors and styling elements, the hair is tremendously abused." If you don't have to chemically treat the hair, he says, don't.

    When replenishing the hair it's important to remember that it's composed of 97% protein and 3% moisture, says Bouchar. Shampoo cleanses the hair and removes buildup. "A moisturizer brings moisture back into the hair and smoothes the cuticle down, which is what makes hair shiny and gives it bounce. The one key ingredient in both shampoo and moisturizers is aloe vera. It heals the hair." " Avoid products with harsh surfactants like sodium laurel sulfate and propylene glycol," warns Siegordner. "These decrease the circulation in the scalp, reducing the pathway for nutrition to the hair bulb." Conditioners that aren't natural can also cause build-up. "When you apply heat to the hair through blow drying or styling, you end up 'burning' the hair," says Bouchar.

    To stimulate hair growth, add a few drops of essential oils of rosemary, lavender and thyme to jojoba and almond oils, and rub into the scalp. Leave it overnight and then rinse it off. " Essential oils have antimicrobial and antifungal properties, stimulate the circulation to the hair follicles and combat dryness. They also smell good," says Dr. Jones.

    For hair that's not chemically treated, "a vinegar rinse cleanses the hair, removes build-up and boosts shine," says Bouchar. Use one part vinegar to ten parts water, apply after a shampoo, comb though and rinse it off. To naturally lighten the hair, use the same ratio in a lemon rinse for five minutes for, say, four days in a row, and then stop.

    If you want to color your hair, choose natural elements, too. "The best natural dye is henna," says Bouchar. "It's organic, just like hair is." Blonde hair becomes warmer with a coppery tone, brunette hair takes on a mahogany hue, gray hair looks like highlights.

    Go Natural

    To find a good natural hair stylist, Bouchar suggests asking which products they use and why. If your hair is chemically treated, it's especially important to work with a stylist you trust for the best care.

    Keep your eye on the big picture when it comes to hair health. "Be proactive and treat the body holistically," urges Dr. Jones. "Nourish the glands, the organs and the vessels that are responsible for getting the necessary nutrients to the hair follicle. Pay attention to the physical, emotional and mental aspects of health. Once hair is lost it may come back but it will likely be thinner than it was before. It's important to take care of what you have."

    Water keeps you alive. About 50% to 70% of your cells are made of water. So when you talk about drinks, you're talking about water plus... But, oh, what a plus!

    While water is crucial for survival, those pluses can add a waterfall of desirable ingredients to your diet, health and beverage indulgence. Even though water is the basic ingredient when you need a drink, healthy drinking has come to mean much more than H2O. The drink scene has bubbled up to include a new universe of usual and unusual liquids. When your thirst bursts upon the scene, you now have a tremendous choice of ways to quench.

    Soy Drinks

    The soy revolution in American nutrition has convincingly attacked the drink world. No matter what your age, nutritional requirements or taste preferences, it seems as though someone, somewhere, has designed a soy drink with you in mind. The most convincing health benefit of soy and soy drinks is its boost to heart health. Since 1999, the Food and Drug Administration has allowed soy drinks (and other soy products) to list soy's heart benefits. In so doing, the FDA reviewed 27 studies that demonstrated soy protein could help lower total cholesterol and LDL, the so-called bad cholesterol that can significantly raise heart disease risk. To be allowed the heart disease benefit on their labels, drinks, or other foods, must contain at least 6.25 grams of soy protein per serving, contain less than 3 grams of fat, less than a gram of saturated fat, less than 20 mg of cholesterol and not much salt. According to the FDA, if you consume four daily servings of soy, you can drop your LDL by up to 10%. That's great for heart health: each 1% reduction in total cholesterol can mean about a 2% drop in your risk of heart disease. The key research the FDA looked at included a two month study at Wake Forest University Baptist Medical Center that showed soy can help reduce your total cholesterol and LDL cholesterol without lowering your HDL. HDL, the so-called "good" cholesterol, protects heart health and keeps your heart disease risk down (Arch Int Med, 9/27/99). Meanwhile, another study published in the New England Journal of Medicine (8/3/95) found that soy produces "significant reductions" in cholesterol, LDL and triglycerides, blood fats that can otherwise put your cardiovascular sysem at risk. Isoflavones, natural chemicals found in soy, are phytoestrogens, a weak form of estrogen that is believed by many researchers to produce health benefits. Some studies show that by producing what's called a "weak estrogenic effect," these chemicals may prevent the body's own estrogen from initiating cancer. While studies exist supporting these effects, this claim for cancer prevention is still controversial. A study of Asian women who moved to the United States found that the more soy they ate, the less their risk of breast cancer (Second Intl Symp on Soy and Tr Chron Dis 9/15/96). In any case, soy protein provides complete protein: all the amino acids, or protein building blocks, that the body needs to form its own proteins are found in soy. All of this good soy news has sent sales of soy drinks and other soy foods soaring. While sales of soy foods reached a little more $850 million in 1992, by next year they are expected to climb to well over $3.7 billion. Multivitamin Water For vitamin takers on the run, water is now available fortified with a wide collection of micronutrients. The key benefit: possible health enhancement by supplying vitamins your diet may omit. As Walter Willet, MD, points out in Eat, Drink and Be Healthy (Simon & Schuster), "research is pointing ever more strongly to the fact that several ingredients in a standard multivitamin.... are essential players in preventing heart disease, cancer, osteoporosis and other chronic disease... It's the best nutritional bang for your buck." In a Russian study, a group of children, aged four to 14, with gastrointestinal diseases were fed multivitamin-infused drinks and beta carotene. The children experienced vast improvements, leading researchers to suggest Fortifying the diets of folks suffering from gastrointestinal diseases with vitamin-containing drinks.

    Green with Health

    Everyone from mom to the US surgeon general tells you to eat dark green vegetables every day. The truth is, many of us just don't do it.     In a world filled with pathogens and microbes, good health and resistance to disease is no accident. It requires a vigorous and vigilant immune system. The immune system should be viewed as an internal security force that is constantly checking the identity of everything entering and already existing in the body. A cell or substance may be recognized as "non-self" and a potential enemy if it does not have the right molecular make-up. A cell displaying molecules produced according to a different blueprint than the body's own code may be recognized as foreign. To eliminate alien material that may harm the body, the immune system must take swift action.

    Recognizing entities that originate outside the self forms the key to overall immune system response. This key is carried in the body by cells called macrophages (ma-kro-fajs), a name derived from a Greek term meaning "big eater." Macrophages eat or engulf foreign cells and molecules. When a macrophage encounters something that it distinguishes as being "non-self" or abnormal, it can attack the enemy with a series of assault weapons, including free-radicals (reactive substances) and enzymes, that dissolve and weaken the intruder. In fact, an enzyme produced by macrophages called lysozyme is recognized as one of nature's most powerful anti-infective agents. These chemical defenses, along with engulfment and complete digestion by macrophages, can effectively stymie invasion by disease-causing pathogens.

    Disease Invasion

    Harmful invasion can originate in the body's own cells as well as begin from outside sources. While we are constantly exposed to bacteria, viruses, fungal cells and parasites, destructive cancerous growths often start within the body.

    Every day, thousands of the body's cells mutate into possible cancers. Under most circumstances, the immune system keeps these cells under control. But when the immune "security" system slips up, these harmful growths multiply unrecognized.

    Getting Specific

    The initial immune response that recognizes invaders is called a "non-specific defense mechanism" since this immune response is generally the same toward all invaders. This counter-attack entails battling every invader pretty much identically: a macrophage can engage, dissolve, weaken, engulf, digest, eliminate. However, if, despite the initial immune efforts, the problem persists, a macrophage can tag an invader and "introduce" it to the rest of the immune system, thus recruiting more specialized types of immune cells to enter the battle. This tagging function endows macrophages with the name "antigen-presenting cells." (Antigens are substances that can provoke specific responses by the immune system.)

    Most antigens are proteins. Proteins are relatively large molecules made of smaller units called amino acids. The specific geometric organization of amino acids is what conveys uniqueness to each protein. (Your genetic code forms a blueprint for the production of your own, individual proteins.) Protein molecules produced by one human being can act as an antigen for another human being. That's why organs transplanted from one person to another can be rejected by the immune system. Unless organs are transplanted from one identical twin to another (who share the genetic blueprint for protein creation), doctors must use immune-suppressing drugs to curtail organ rejection. At the same time as these medicines prevent transplant rejection, they also make people more susceptible to infectious diseases and cancer.

    Specialized Immunity

    After one set of immune cells chemically tags antigens (invaders) for recognition, other highly specialized parts of the immune system go into action: Cells called T cells or T lymphocytes acknowledge the invaders and can take the further action (second line of defense) that is necessary to render them harmless.

    T cells get their name from the thymus (an organ located behind the sternum) where they originate. The thymus, most active when we're young, usually shrinks and apparently slows or shuts down its activity about the age of forty.

    A wide variety of T cells inhabit lymph nodes (soft, usually round, pea- or nut-sized organs) and other body areas. For instance, natural killer cells, as their name implies, are a particularly aggressive type of T cell. Another type of T cell is called T helper (a cell that supports development of immune response). T suppressors halt immune response when infection ends.

    In order to make all these different cells work in concert, cytokines or messenger molecules are produced that facilitate constant communications between all the parts of the immune system.

    The B Team

    Other organs of the immune system include:

    *bone marrow: a powerful cell producing organ where the majority of immune cells are born;

    *spleen: an abdominal organ that forms a reservoir for the production of immune cells.

    Lymph nodes oversee particular segments of the body where they collect and recycle tissue fluids. Like an early warning system, lymph nodes react when an invader is detected in the part of the body that it controls.

    Yet another step in the so-called immune cascade entails action by lymphocytes, called B cells, which originate in the bone marrow. These cells produce antibodies which are immune proteins (immunglobulins) that attack specific antigens.

    While traveling in the blood, an antibody can bind to an antigen, curtailing its harmful action. This bound up molecule forms a complex easily recognized by scavenging macrophages which make a quick meal out of the unlucky invader.

    After enemy cells are removed from the body, knowledge of this victory resides in the immunological memory prolonging your resistance toward specific disease pathogens indefinitely. That's why someone who has recovered from a disease like the measles may be impervious to reinfection.

    Rules for Optimum Immunity

    Even though the immune system consists of a complex team of hard-working cells, enhancing your immunity is relatively easy:

    Maintain a healthy lifestyle. Avoid continuous stress and negative emotions or cope with them through exercise or meditation. Consistent, moderate exercise can boost the immune system. Massage can also help although extreme care must be taken when inflammation or disease is already present.

    Sleep 7-8 hours a day. Sleep allows the body to recover and rebuild. Protein synthesis, vital for a healthy immune system, increases during the night.

    Stick to a healthy diet. Your immune system consists of trillions of cells. Consequently, nutrients important for cell health boost the immune system. A balanced low-calorie diet rich in complex carbohydrates, "good" fats (including fish oils, olive oil and flaxseed oil) along with vitamins, minerals and phytonutrient antioxidants from fresh fruits and vegetables can Fortify immune cells.     These recommendations are not hard to meet once they become a part of your daily routine.     Your "specific" immune system does not respond immediately to the challenge of invasion by an infectious organism. Instead, it may require about 2 weeks for an effective reaction after antigen recognition and alerting T cells. During this period, the macrophages' non-specific defense assumes a crucial role in keeping infection in check.

    Enhanced activity by macrophages is especially important for recognizing and destroying cancer cells. The most dangerous cancers are those that can mimic normal cells and avoid the immune system's wrath. Few substances can activate macrophage function in the body (aloe vera contains substances that contribute to this process). The most powerful macrophage activator recognized by the scientific community is a sugar-like substance called beta-1,3-D-glucan. Beta-glucan, extracted from the cell walls of common Baker's yeast, when taken in certain small amounts, can prevent infection by making macrophages more active in recognizing and attacking infectious bacteria, fungi and certain viruses.

    This kind of activation can encourage macrophages to attack previously unrecognized tumor cells. As a result, tumors may be eradicated as the immune system mobilizes and produces what may be known as "spontaneous healing."

    Hungry Macrophages

    When a macrophage works overtime fighting disease, its demand for nutrients and energy increases dramatically.
