Artificial sweeteners are food additives intended to replace the sweetness of sugar without the calorie intake. There are also natural sweeteners that can replace sugar, so which should you choose? Natural sweeteners such as sugar, honey and grape juice are well known, although there are also the less well known, but much more effective, sucanat and stevia.

Sucanat is dried unrefined cane sugar, and unlike refined sugar retains the molasses. Stevia, on the other hand, is a shrub, native to Paraguay, the leaf of which contains a non-sucrose sweetener, 300 times the sweetness of sugar, and which is not absorbed by the body. It is a sweetener pure and simple, with no proven health issues. It is also Japan's most popular sugar substitute.

Artificial sweeteners have been known for many years, the first and best known being benzoic sulfanide, known to you as saccharin. The health risks of saccharin have been the subject of debate for over 100 years and have yet to be resolved. Studies had shown it to cause cancer in rats, and it was placed on a list of known or suspected carcinogens.

It has been banned for use in the USA, but that was lifted by the FDA in 1991, and in 2000 saccharin has no longer required a health warning label. The issue appears to have been resolved by rats metabolizing saccharin in a way not possible in humans. However, many are still suspicious of it, and if you don't trust a food additive then do not voluntarily consume it.

The top two artificial sweeteners in the USA are sucralose and aspartame. Sucralose, discovered in the UK in 1976, is the less emotive of the two, and is chemically the chlorocarbon trichlorogalactosucrose, produced by chlorination of sucrose and 600 times as sweet. It should be stressed that a chlorocarbon is totally different to a chlorinated hydrocarbon. It is generally considered safe to use, although it is very slow rate of degradation in waste water has raised concerns that concentrations could increase with increasing popularity of the sweetener.

In 1981, on the day of his inauguration, Ronald Regan suspended the powers of the FDA on aspartame, and then a month later appointed a new FDA head, Arthur Hayes, who immediately licensed the substance. Donald Rumsfeld was on President Regan's team.

There is a strong body of evidence that aspartame is toxic to humans, although the official evidence has discredit such studies. Recent evidence that linked aspartame to cancer has been stated as irrelevant to humans. In spite of the concerns, the substance has been approved, not only in the USA but also by the European Union. This might call into question the relevance of studies to humans, but many still believe that commercial considerations are behind these decisions.

In fact, an extensive study carried out by the Italian European Ramazzini Foundation, showed that aspartame can cause a significant increase in cancers and leukemias in rats at well below the doses allowed by the EU or the US. This substance required further study by bodies with no vested interest in the outcome.

Those that believe so point to the stevia situation. This natural sweetener is banned for use as a food additive in the EU, and cannot be sold as sweetener due to the FDA not recognizing it as such. It has also been banned in Hong Kong, even though it is the sweetener of choice in Japan, with no apparent side-effects becoming endemic in that country. The USA might not approve stevia as a sweetener, but it is considering lifting its ban on cyclamate.

Cyclamate was banned by the FDA due to tests on rats indicating a possibly carcinogenic effect, but no more positive than those on aspartame. Cyclamate is permitted in Canada, where saccharin is not, and also in the UK, but not throughout the EU.

It is obvious, then, looking at the various claims and counter-claims, and the conflicting legislation between civilized countries, that the artificial sweetener industry is wrought with uncertainty. In the past, it is almost certain that commercial considerations have come before the health of the nation, and that does not engender confidence.

In fact, the only sane approach to take at this time would be to avoid artificial sweeteners altogether, and stay natural. That is not to claim that natural products are safe to eat - far from it! Many of the most virulent poisons are natural, but the well-used natural sweeteners appear to be safer at this time than any of those artificially manufactured.

There might be objections to this where diabetes is concerned, and Canada, while banning saccharin for normal use, still allows it for use by diabetics. This is the one of the two major bodies that promotes the use of artificial sweeteners: the diabetic lobby and the weight loss lobby.

It is difficult to question the obesity and weight problem that America has while at the same time arguing against the use of artificial sweeteners. However, don't forget that stevia is widely used in Japan with no reported health problems, and stevia is a natural sweetener that is permitted for use as a food additive, and that is not absorbed by the body.

However, there is also a recent 2005 study that has indicated that diet drinks containing artificial sweeteners might fool your body into believing that the sweet taste is promising energy, and when it doesn't materialize, you feel Hungry and eat more. This has been supported by animal studies.

These have shown convincingly that the sensation of sweetness induces the production of insulin with resulting hypoglycemia because there is no actual increase in blood sugar. This induces increased food intake. This has been proved with rats, and also proved was the fact that the natural response of eating less at the next meal, after sugary food, was gradually diminished in animals fed non-calorific sweeteners.

The choice is yours, but it would seem advisable to stick to natural sweeteners for the time being, at least until the studies carried out are in concurrence as opposed to offering conflicting results depending upon who is doing the testing.

Hoodia Gordonii is a South African succulent plant of the family Apocynaceae. They are remarkable similar in appearance to cacti, although they are totally unrelated to them and grow predominantly in the region of Central Namibia in the south west of Africa, up to the southern regions of Angola. They are most commonly found in rocky ground and on the plains.

There are several species of hoodia, some of them grown domestically, and it is Hoodia gordonii that is used as an appetite suppressant in hoodia weight loss pills. Although the plant has historically found use in the treatment of infections and gastric problems, most interest is displayed in its use by the bushmen of the Kalahari Desert to suppress their appetite during long hunting trips when food and water are scarce.

The active ingredient was isolated in 1977, and given the name P57: the product is therefore often referred to as Hoodia P57. It was patented by its discoverers, the CSIR (South African Council for Scientific and Industrial Research) and a license granted to UK company Phytopram, who worked together with Pfizer to isolate the active ingredients and manufacture them synthetically. This was found to be very difficult, if not impossible, since any synthetic form of the extract failed to display any hunger-suppressant properties.

Finally, the rights to the main ingredient were released by Pfizer in 2002, thus indicating that it was of no commercial benefit to them. The main problem they admitted with synthesizing P57 was not only the difficulty in doing so, but also that there were side effects of the extract on the liver caused by other components that could not be removed. No synthetic form of hoodia is therefore available, and only the natural plant is used in current Hoodia 57 preparations.

The rights of the San Bushmen to the plant were recognized by the CSIR in 2002, and not only do they receive a proportion of the profits of marketing hoodia, but also the plant is protected with wild-harvesting licenses provided to only certain individuals and companies. Due to the rising popularity of the hoodia weight loss industry, the plant has been named as an endangered species in the wild.

It is believed that the active ingredients are steroidal saponins that can fool the body into believing it is full. This theory is based upon the effect on appetite of glucose concentrations in the blood. Your appetite is controlled by the amount of unconverted glucose in your blood, and glycogen in the liver. When you eat carbohydrates, they are digested and converted into glucose which is absorbed into the bloodstream.

Under normal conditions your blood glucose levels increase to a level where a signal from hypothalamus stops you feeling Hungry. Insulin is then secreted from the pancreas to prepare your cells to use that glucose in the mitochondria to create energy by means of the Kreb's Cycle, or Citric Acid Cycle as it is also known. This reduces the concentration of glucose in the blood, and once it reaches a certain level the body begins to use its emergency energy supply, glycogen, that is stored in the liver.

A signal then informs the brain that more glucose is needed. You then feel Hungry again, and this cycle is repeated several times a day in a normally healthy person. This cycle is controlled by certain hormones in the brain, specifically in the ventromedial center of the hypothalamus, where it is believed that the ATP (adenosine triphosphate) availability controls the release of the hormones involved.

ATP is the molecule of energy, and as the concentration of blood glucose and of glycogen drop, then the amount of ATP produced also drops and this is detected in the hypothalamus, which reacts by releasing ghrelin. Increased leptin increases the feeling of satiety and ghrelin increases the feeling of hunger. Serotonin acts on the brain to increase the effect of leptin in the hypothalamus, and therefore make us feel less Hungry, or more satiated.

It is believed that hoodia gordonii, or the Hoodia P57 component of it, fools the brain into believing that your blood glucose or glycogen levels have reached the point at which it should trigger a satiated response, so that you stop eating even though your ATP levels might be low. The steroidal saponins that it contains is believed to be ten thousand times more effective than glucose in stimulated the secretion of serotonin.

Hoodia has also been found to contain a number of glycosides, including pregnane glycosides that some studies have indicated to help control appetite of the subjects tested. Most of these tests have been carried out on animals, although Hoodia weight loss preparations are offered in a form standardized on both steroidal saponins and pregnane glycosides.

Hoodia gordonii is becoming so popular as a weight loss product that its export is being monitored by the South African government. It has become so endangered that, since 2005, only hoodia grown on commercial farms is permitted an export license, and exporters must obtain a license from the Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES). Importers also require a permit from the US department of Agriculture, and a CITES certificate is also needed to re-export the finished product.

Because of this, more hoodia weight loss pills are being sold than there is hoodia gordonii to produce them. It is not uncommon for cacti such as the prickly pear cactus from Mexico, to be used, or for low concentrations of hoodia to be bulked up with fillers. Neither of these is of any use as an appetite suppressant, the former having no active ingredients whatsoever and the latter containing only traces.

If you are purchasing hoodia, therefore, be aware of this. Request sight of the CITES certificate and USDA permit, and also the analysis results by an authorized laboratory to confirm that the product is what it purports to be. Otherwise, there is some evidence that Hoodia gordonii can help you reduce weight, although to date there are only four recognized analytical laboratories registered to analyze the active content of hoodia weight loss products.

Finally, check for the analysis certificates. All Hoodia weight loss products should be analyzed by each of three methods: Microscopy, High Performance Thin Layer Chromatography (HPTLC) and High Performance Liquid Chromatography (HPLC) - all there are needed. The four authorized laboratories are: the University of Mississippi, Chromadex labs in Irvine California, Alkemist Pharmaceuticals and Advanced Laboratories, Smithfield, NC.

No others will do, so if your Hoodia weight loss preparation has not been analyzed using the three methods by one of these laboratories, don't buy it, even if it can show the CITES and USDA documentation.

Grapefruit pectin fiber is a source of soluble fiber that can bind to cholesterol and inhibit the formation of atherosclerosis. It is also effective in maintaining good blood sugar levels, and promoting a healthy colon. However, before discussing how grapefruit pectin fiber works in these ways, it is first necessary to explain how they occur in the first place.

CHOLESTEROL LEVELS

First cholesterol. This is a steroid lipid, most of which is biosynthesized by your body rather than being present in your diet. Although it has a bad name health wise, cholesterol is actually essential to good health because it helps your digestive system break down fast, it strengthens cell walls and is a major ingredient in the manufacture of vitamin D by your liver. It is also essential for the formation of several hormones, including cortisone, cortisol and aldosterone by the adrenal glands, and also of estrogen and testosterone. A bloodstream without cholesterol is therefore not good for you.

Given that cholesterol is essential for good health, then why does it have such a bad press? The root cause of that is that cholesterol is not water soluble, and to be carried round the bloodstream to where it is needed it needs some transport. For that, it uses low density lipoproteins (LDLs). However, it’s not a return journey, and to get back they must use another form of lipid known as a high density lipoprotein (HDL). The protein part is water soluble, wile the lipid part can attach to the cholesterol and carry it around the bloodstream.

The problem arises with free radicals, which are oxygenated molecules that are generated by the body’s metabolism, and also created from pollutants, such as pesticides and cigarette smoke, and the UV portion of daylight. These can oxidize the low density lipoproteins so that they can be attacked by phagocytes (while blood cells) deposited as plaques in the artery walls. This hardens and thickens the arteries, reducing the heart’s blood supply which in turn can cause strokes and heart attacks.

This can be prevented in a number ways, the major of which are by consuming plenty antioxidants in your food, mostly contained in phytochemicals (plant chemicals), reducing your LDL cholesterol levels to the minimum needed by your body, and also by increasing the HDL levels in your bloodstream by as much as possible.

Grapefruit pectin fiber can bind to cholesterol, and prevent it from being deposited in the artery walls by the oxidized LDL. A sixteen week double blind study (neither the subjects nor those carrying out the test and analyzing the results knew who were given the placebo) found that grapefruit pectin successful reduced the low density cholesterol level of 27 subjects by 10.8% and overall plasma cholesterol by 7.6%. These volunteers were at a medium to high risk of atherosclerosis due to a high LDL cholesterol concentration in their blood.

Animal studies have also been carried out, whereby animals were fed a high cholesterol diet, and those fed a high fat diet were found to have an average of 45% narrowing of their arteries, and those fed the same diet, but with added grapefruit pectin fiber, were found to have only 25% narrowing, thus corresponding with the results of the human volunteers.

BLOOD SUGAR

It is essential that you maintain a stable level of sugar in your blood since the body reacts to low blood glucose by making you feel Hungry, and thereby forcing you eat. If you are trying to lose weight you will find it very difficult if your blood sugar levels fluctuate. Grapefruit pectin can reduce the rate at which carbohydrates enter your bloodstream, and therefore the rate at which sugars are absorbed.

Hoodia is a plant that belongs to the milkweed family and consists of about twenty different species. It is a leafless, spiny plant, with fleshy finger-like stems. Garcinia cambogia is a small tree bearing a small pumpkin-like fruit of the citrus family, and is steadily appearing in an increasing number of weight loss supplements. It is indigenous to parts of Africa and Asia, and the rind is commonly used in Indian cookery.

Although the fruit is particularly sour to the taste, it is used in form of an extract of the rind and claimed to act as an appetite suppressant and also to increase the body’s capacity to metabolize fat. The active ingredient is hydroxy citric acid, otherwise known as HCA, contained in the form of the potassium and calcium salts of the acid in the aqueous extract of the garcinia cambogia rind. Garcinia cambogia extract has the effect of stimulating the emission of serotonin into the hypothalamus, and so suppresses your hunger quicker. You don’t stop eating altogether, but attain that feeling of satisfaction much quicker and so tend to eat less with each meal. Chromium is a trace element in your body, meaning that it is present only in very small quantities, yet like many trace elements it is extremely important to your health. Most people associate chromium with the shiny finish on car fenders, but it is more than that.

Chromium oxide was discovered as being a part of crocoite, better known as red lead, which is actually lead chromate, sometimes containing some molybdate and perhaps vanadium. Although it was discovered in the middle of the 18th century, it was not until 1797 that chemist Louis-Nicholas Vauquelin discovered it for what it was. He synthesized it in his laboratory in 1798, which is the ultimate proof of the identity and chemical structure of any substance.

It was eventually named chromium, after the Greek ‘chroma’ meaning color, because its compounds are highly colored, normally yellow, red and green, and it is chromium that gives emerald its green color. It is also found in low concentrations in the human body, but too low, thankfully, to color your body red, green or yellow! Perhaps Martians contain a lot of chromium!

The first indication of the potential benefits of chromium to health was when a pork kidney extract called the Glucose Tolerance Factor was discovered in 1957 to enable rats to improve their use of insulin in maintaining the effective use of blood sugar in generating energy. The GTF contained chromium, and that was believed to be the effective ingredient.

Diabetes is a condition in which people either do not generate enough insulin or cannot use it properly. Insulin is a hormone biosynthesized in a group of cells known as the islets of Langerhen in the pancreas and is a necessary part of your metabolism. Your metabolism converts carbohydrates and various sugars into glucose, and when the glucose level reaches a certain concentration in your blood, you stop feeling Hungry and the pancreas is stimulated into secreting insulin.

The insulin allows the cells to admit sugar and the mitochondria within them to convert the glucose to energy. Your body likes the blood glucose level to be maintained at between 70 and 110 mg/dl. If your pancreas cannot produce any insulin you are regarded as having Type 1 diabetes, and if it produces too little or your body cannot use it effectively, it is Type 2 diabetes. It is believed today that chromium is one of the factors involved in allowing the cells to absorb glucose, and that without it the mitochondria are unable to convert your blood glucose into energy.

Although up to 90% of Americans are thought to have a low chromium content, few are believed to be deficient and there is a big difference between the two. However, pregnant women and the elderly are particularly prone to a deficiency, as are those that consume too many sugary foods. A deficiency in chromium not only leads to an excess of blood sugar however, but also of cholesterol and triglycerides. This can in turn lead to atherosclerosis, heart disease and strokes.

Although the role of chromium in the control of blood sugar levels was discovered in the 1950s, it was not until the 1970s that it was proven. As with many such proofs it came about accidentally, through what was known as Total Parenteral Nutrition (TPN). This provided intravenous nourishment to patients who were unable to eat, and contained a mixture of the nutrients believed to be essential to life.

However, the mixture was based on current knowledge, and it was found that some patients developed the symptoms of hyperglycemia, or high blood sugar levels. This was what would have been expected of untreated diabetics, but none were diagnosed with the condition so the cause was a mystery. The physicians responsible for the treatment had no option but to administer insulin, even though there appeared to be no deficiency in the patients.

If you are with us so far, then you will realize that the insulin would not have had the expected result. That is because the condition is not caused by too much sugar or carbohydrate in the diet, and also not caused by a deficiency of insulin. However, due to the known role of chromium in the action of insulin, it was then thought that TNP solution would be improved by adding chromium. When chromium was added in small quantities of under 50 micrograms (5 hundredths of a gram) the patients’ condition improved to normal, and the effect of chromium on blood sugar levels was finally proven.

So how does chromium achieve this? In fact the biochemistry is complex, and dietary chromium works in a different way to the chromium picolinate that is the most popular form of chromium supplement. However, in a nutshell, what appears to happen is that its effect on human tissue may be through an increase in the activation of Akt Phosphorylation, which is a protein within the body cells that enables the easy absorption of glucose into the cells.

In addition to that, cell membranes contain insulin receptor sites that respond to biochemical signals from messengers such as hormones and nutrients, and it is believed that chromium might be involved in promoting the binding of insulin to these sites. Alternatively, it is possible that it may promote the reactions that occur after the insulin has bound to the receptor site, an occurrence that is referred to as a post-receptor event.

Whether chromium is involved in a post-receptor event or in binding the insulin top the receptor sites, there is no doubting the importance of the element to the overall insulin-glucose-energy metabolism, and that the trace element chromium is indeed important in helping your body cells to absorb glucose.

The main cause of any chronic disease of aging including Type II diabetes, CV disease, obesity, osteoporosis, and cancer are all caused by miss communication between signals that tell your body how to turn energy into life and the brain. The two most important signals that we know of today are given by the hormones insulin and leptin.

Leptin is an extremely powerful and influential hormone that is produced by fat cells. It has totally changed the way scientific researchers look at fat, nutrition, and metabolism in general. Before leptin’s discovery in 1994, fat was regarded as strictly an ugly energy store that most everyone was trying to get rid of. However, after it was discovered that leptin is actually produced by fat, fat became an endocrine organ similar to the ovaries, pancreas, and pituitary, as it influences the rest of the body, especially the brain.

Leptin is the most powerful regulator known to date of eating and reproduction. Your fat tells your brain whether you should be Hungry or eat and make more fat, whether you should reproduce and make babies, or whether to maintain and repair yourself. It can then be stated that instead of your brain being in control of your body, your body, especially its fat and leptin, controls your brain.

Science now believes that leptin is that hormone. So in order to break the yo-yo cycle, one must control leptin. If a person is getting too fat, the extra fat produces more leptin that is suppose to tell the brain there is too much fat stored and the excess should be burned. Signals are then sent to the hypothalamus to stop being Hungry, stop eating, stop storing fat, and start burning off some extra fat. Controlling hunger is a major way that leptin controls energy storage. Hunger is a very powerful drive that will make you do all you can to eat if it is stimulated long enough.

The only way to eat less in the long-term is to not be Hungry and the only way to do this is to control the hormones that regulate hunger. The primary hormone that does this is leptin. It has recently been found that leptin not only changes brain chemistry, but can also rewire the neurons in areas of the brain that control hunger and metabolism to do its bidding. The inability of the body to hear leptin’s signals plays significant and even primary roles in heart disease, obesity, diabetes, osteoporosis, autoimmune diseases, reproductive disorders, cancer, and even the rate of aging itself.

In a process called glycation, glucose reacts with protein which results in sticky, sugar-damaged proteins called advanced glycated end products, or AGEs for short. When protein is damaged, it can’t function or communicate properly. AGEs promote excessive inflammation and free radical damage. AGEs and free radicals from oxidation are two of the major molecular mechanisms that cause damage which leads to aging. AGEs cause skin and the lining of arteries to wrinkle and inflame, which contributes to plaque and heart attacks. They can also promote the formation of cataracts and macular degeneration leading eventually to blindness.

The glycation process has also been connected with the destruction of proteins and nerve cells that may lead to Alzheimer’s disease, memory loss, and a variety of neuropathies. Glycation and oxidation are two of the major molecular mechanisms where damage accrues, disease occurs, and death results. High blood sugar can suppress your immune system, making you more vulnerable to infection and cancer. Highly aggressive cancers outpace the availability of oxygen and therefore must use an anaerobic fuel, in the form of glucose. By consuming glucose (sugar), we feed cancer. Lastly, high blood levels of sugar form non-fiber carbohydrates and excess protein send leptin and insulin levels upward.

If there is a known marker for long life, it is low insulin levels. Insulin’s purpose is not only to regulate blood sugar, but to store excess energy for future times of need. Insulin also lowers blood glucose levels as a side effect from storing it away, not regulating it. Today, high glucose is quite normal, as our insulin levels are typically much higher than they were among our ancestors. When you are constantly bombarding your cells with insulin, they become insulin resistant. This causes insulin levels to rise, creating a hormonal derangement that has a catastrophic effect on the metabolism.

High insulin contributes to making you fat because it tells your cells to store nutrients as fat rather than to burn it. Repeated high levels of insulin cause insulin resistance. The more fat the body accumulates the more leptin the body can produce so fat works against to slow down insulin production causing insulin resistance..

High insulin causes the retention of sodium, fluid retention, excretion of magnesium, elevated blood pressure, cognitive heart failure, blood clotting, and arterial plaque formation. It is possible to sweeten your life with stevia, and without any weight gain, since it as exceptionally sweet herb. In fact it is member of the sunflower family, and is native to parts of South and Central America where it has been used as a sweetener since time immemorial. Also known as sugarleaf, it is a commercial crop, and is available as a dietary supplement.

Extracts of stevia have been found to be up to 300 times as sweet as cane sugar, although does not metabolize in the body to glucose. In fact it is thought to enhance the glucose tolerance of some diabetics, and can be used by people suffering from that condition as a natural sweetener, thus dispensing with the need for artificial sweeteners.

It is also useful for those on diets, especially carbohydrate controlled diets, and any other sweet-toothed person wanting to lose weight and still enjoy their favorite drink or desert. Many recipes have been published using stevia for the preparation of delicious sweets. So why is stevia so sweet and what other uses does it have?

Basically the sweet taste comes from glycosides, which are molecules in which a sugar is bonded to another molecule. The two main glycosides in stevia are called stevioside and rebaudioside. These are formed through glucose combined with the diterpene steviol in different ways, though some minor glycosides also contain rhamnose. Although they contain glucose, the glucose is not released into the bloodstream during digestion and the subsequent biochemistry.

It is also used throughout East Asia, including China, Korea and Taiwan, and also in South America, Israel and some areas of the Caribbean. It is available as a green powder in its crude form, and also brownish syrup redolent of licorice, but also as a more refined white powder that is likely best used as weak solution due to its sweetness.

It is totally free of calories; this may come as a surprise to many since it tastes so sweet. It is an excellent sweetener for children’s drinks since it does not cause cavities: unlike sugar it is not degraded by bacteria to produce the corrosive acid that eats into the enamel. It does not metabolize to a burst of energy that is practically addictive, since that generally then leads to tiredness and the need for more sugar to make up for it.

Stevia does not cause diabetes in any form, is not a food for yeast and it is beneficial to the pancreas. In short, it is a completely safe food supplement that has been used for centuries without ill effect, and if you want to prevent yourself from adding weight and protect against the possibility of Type II diabetes in particular, then stevia should be your sweetener of choice.

Listen up, guys. Masculinity isn’t defined by what you eat. It’s all about how well you hold up through the years, which means taking care of yourselves. So ditch the doughnuts, double burgers and draft beer, and adopt a healthier diet. Here’s how!

Back in 1982, a best-selling, humorous manifesto of masculinity known as Real Men Don’t Eat Quiche epitomized the male backlash against feminism, by then a formidable force in the American cultural landscape. But the joke, it turns out almost 25 years later, is on the men- and not just because quiche doesn’t have that many fewer calories than a Quarter Pounder. We may have maintained out mach-ness all these years by eating “manly food,” but we’ve become unhealthy and ultimately weaker because of it.

In 2000, the National Health & Nutrition Examination Survey revealed that among men 20 years and older, a whopping 65.1 million (67.2%) were considered overweight and 26.6 million (27.5%) were considered obese. Only 30.6 million (31.8%) of men 20 to 74 were considered to have a healthy weight. The fallout from such a fatness factor is that more men are dying each year of heart disease and related illnesses and more money than ever is being spent on health care (to say nothing of how poor male health affects the women and children who depend on the men in their lives). Another cheeseburger, guys?

Those numbers, though shocking at first, shouldn’t be that surprising. As a gender, men are more vain, ego-driven and stubborn than women. How does this manifest itself when it comes to wellness? Until a man is hit with his first health crisis, no matter what the age, he thinks he’s indestructible.

That’s why it’s so difficult to convince men to get regular medical checkups (which they should do especially when they hit 50). It’s not that many American men aren’t trying to lose pounds. It’s just that they are a bit misguided in their efforts. Weight-conscious men really gravitated to the Atkins diet. Why? Because at the same time the plan says to cut carbohydrates and increase protein, it gives men carte blanche to eat mass quantities of high-fat “manly” foods like beef and pork. Trading pounds for clogged arteries doesn’t seem like a good deal.

So the time has come for all American men to turn their testosterone-driven energy into changing their nutritional lifestyle. Out With the Old

But before we can embrace the new, we must wean ourselves off the old, particularly the male habit of eating food in humongous portions. New York-based nutritionist Annie Hauck-Lawson, PHD, RN, says that also requires willpower because fried foods can be addicting. “They taste so good and fat conveys a lot of flavor,” she admits. “So the best strategy is going cold turkey to get that taste off the palate.” Hauck-Lawson also suggests not beginning a meal with fried foods or fatty meats.

“The start of the meal is when you’re the most Hungry so you’ll eat the most during the first course.” She says. “If you start most lunches and dinners with a broth-based soup or a big salad, you’ll load up on high-fiber, high nutrient foods rather than high-fat foods and you’ll be too full to eat the bad stuff. Besides, food can be broiled with herbs and spices instead of being fried and still be delicious.”

Nutritionists like Hauck-Lawson strongly advise men to eat more fiber-base foods, which means adding more fresh fruits and vegetables (about five servings a day), whole grains and beans to the diet. Fiber may not sound manly, but it aids digestion, reduces the risk of colon cancer by moving waste out of your system, supports healthy cholesterol levels and makes you feel full so you won’t gorge yourself on those super-sized portions.

And when you’re eating all those nutritious and healthy new man foods, please don’t offset the benefits by washing it down with soft drinks. Did you know that a can of cola contains 39 grams of refined sugar, which is equivalent to seven teaspoons of the sweet stuff? Low-fat, high-fiber advocates have recommended a diet that is calorically fueled between 10 and 20 percent fat and includes 35 to 45 grams of fiber. Therefore, if we are going to face facts, a diet that reduces fat to 20-30 percent of the total caloric value and increases fiber to 20-30 grams/day is much more realistic and will help significantly in controlling weight, avoiding artery disease and promoting good colon health.     Nutritional developments like that of CLA couldn’t come at a better time. America is a nation obsessed with weight, but successes in battling weight seem harder and harder to come by. Is there a nutritional reason for this? Have we been barking up the wrong tree in recent years, starving ourselves for fear of gluttony rather than looking at broader nutritional reasons for fat accumulation? For example, Dr. Cook says that modern nutritional dogma is that fat is bad. “I’m not sure the dogma’s right. We need to get down to very specific fatty acids.”51 One of the most exciting developments coming from CLA research is that modern animal-raising techniques may be partially responsible for those of us who eat meat getting fat around the middle, even though our consumption of meat may have declined or, at least, stayed about the same in recent years.

    CLA has been declining in our diet. This one nutrient’s lack may mean many of us are gaining fat, despite eating less overall fat.52

    This desire to simply eliminate fats without looking at the broader nutritional picture has its roots deep in our culture. The desire to starve ourselves to lose weight goes back centuries. We have often thought weight gain came solely from lacking self-control when, often, nothing could be further from the truth.

    Take for example the experiences of conscientious objectors during World War II. These men who chose, for religious reasons, not to fight in the war, contributed in other ways. One group at the University of Minnesota underwent forced starvation to help scientists learn ways to help concentration camp victims recover after liberation.

    Science learned many useful things, but one thing stands out. The objectors grew more Hungry as they recovered and ended up weighing five percent more after they recovered than before the experiment began. (The same can be said for refugees and concentration camp victims, who also weighed more, on average after their ordeals than before.)53 This idea of dieting being the full answer to weight loss still persists, often tragically. Many have died of anorexia, obsessed with self-image. Others have died directly from ill-conceived meal replacement programs.54 In the 1980s, Americans spent $15 billion on diet soft drinks alone,55 but consumers weighed more on average when the decade was over than when it began. You’d think all of this energy and dieting spent on the effort would have helped people lose weight. (Thankfully, many people have succeeded in losing weight and keeping it off. According to Dr. Pariza, this may well be the most significant part of CLA, not so much in losing the weight, but in helping people keep it off.56)

    To drive the point home further, consider your parents. They ate a diet that was likely higher in fat than yours. They never saw “lite” versions of snacks in the store. Yet they, in general, weighed less than we do. Why? Surely exercise may have had something to do with it, but, no one has the complete answer. It seems likely that nutrition too played a role. CLA itself may hold part of the reason. As we have seen, CLA nutrition means less fat and more protein in our bodies. Recent research is showing that the amount of CLA in cows has dropped substantially since the times of our parents. In 1963, scientists found that CLA was as much as 2.81 percent of milkfat. The amount of CLA in the milk products varied with the seasons. At some times during the year, cows ate grass. At other times, they ate feed. However, in 1992, Pariza and his colleagues did a large food survey and found that this variation in CLA is no longer occurring. Furthermore, the amount of CLA in dairy products rarely gets above 1 percent of the milkfat. 57

    In another research paper in 1994, scientists noticed that Australian cows have as much as three or four time the amount of CLA in the meat from similar American animals. Why? These differences probably “reflect different feeding conditions.” 58

    Today, farmers use more efficient feeding methods that rely less heavily on natural grasses. This means less CLA in the meat we eat, and less CLA can mean a higher percentage of fat on our bodies. Consider too that skim milk contains virtually no CLA with its no fat content. This lack of CLA may actually hinder some people’s efforts to lose weight.

    The lesson here seems to be that gluttony guilt would be better focused on balanced living. Healthy lifestyles coupled with the right supplementation can make a difference. CLA, though no magic bullet, adds to this lifestyle and could be the key that finally opens many weight (and fat) management doors. It could help many people keep the weight off.

    When was the last time you exercised? During the past decade, the number of obese Americans has jumped by 50%. A big factor in this increase: lack of physical activity.

    Today, technological society seems to make everyday life effortless: car windows retreat at the push of a button, remote controls keep couch potatoes from budging off the cushions and video games have replaced non-cyber ball playing. Americans don't move around and burn off the calories they eat. Instead, our sedentary ways are causing big stomach bulges and a big bulge in health problems linked to being overweight.

    Want to lose those pounds? Consuming the right nutrients and pounding the pavement are a great start.

    Number of Large Americans Grows Larger

    Fifty-five out of every 100 Americans are now overweight. And the numbers continue to surge. To take yourself out of these alarming statistics, plan a consistent exercise program. If the thought of sweating during strenuous workouts at the gym scares you, relax. You don't have to do that much. According to a long list of research, a few half-hour walks a week can put you on the road to weight loss.

    For instance, researchers at Duke found that walking a total of only 12 miles a week can help you control your weight even if you're not dieting (Archives of Internal Medicine 1/12/04). Of course dieting and taking the right supplements will help you lose weight a little faster, but walking burns off the pounds.

    In the study at Duke, scientists gathered about 180 overweight, sedentary people and assigned them to one of four groups. The first group had to jog about 20 miles a week. The second group jogged 12 miles a week. The third group walked 12 miles, and the last group didn't do a thing.

    " We found that the two low-exercise groups lost both weight and fat, while those in the more intensive group lost more of each in a 'dose-response' manner," says Cris Slentz, PhD, one of the researchers. " Simply put, the more you exercise, the more you benefit. Just as importantly, the control group of participants who performed no exercise gained weight over the period of the trial."

    Everybody who was exercising lost weight; their stomachs and hips shrank. The folks who did nothing didn't just stay at the same weight; their weight went up.

    Dr. Slentz adds, "From the perspective of prevention, it appears that the 30 minutes per day will keep most people from gaining the additional weight associated with inactivity. Given the increase in obesity in the US, it would seem likely that many in our society may have fallen below this minimal level of physical activity required to maintain body weight."

    Sensitizing Insulin

    Insulin is released by the pancreas to help cells take in glucose. By exercising and keeping your weight down, and becoming more insulin sensitive, you potentially reduce your chances of getting diabetes. The cells quickly respond to insulin and blood sugar stabilizes.

    On the other hand, when insulin sensitivity drops significantly, the body may suffer what's called insulin resistance, a pre-diabetic condition that complicates and slows the removal of sugar from the blood. The Vermont researchers found that chromium increases the activity of a protein called Akt phosphorylation. This is a natural substance made by the body that makes cells more sensitive to insulin and speeds the movement of blood sugar into cells, where it can be burned for energy. So, in combination with exercise, which also helps the body become more responsive to insulin, chromium may help keep blood sugar under control.

    As Sandra Woodruff points out in her book Secrets of Good Carb, Low Carb Living (Avery/Penguin), "[P]hysical activity boosts the body's ability to process carbohydrate and helps reduce insulin resistance....Exercise acts much like an insulin-sensitizing drug to make the body's cells more responsive to insulin, which enables them to remove sugar from the blood more efficiently." The results of exercise and getting sufficient chromium can help support weight loss and healthy blood sugar levels. The Vermont research team found that the exercising chromium takers boosted their insulin sensitivity by almost 9%.

    Building a Lean Body

    A prime benefit of exercising while you lose weight is that physical activity builds muscle tissue.     Sea greens contain omega-3 fatty acids, fats that boost heart health. "Sea vegetables may prove to be a more sustainable source of omega-3 fatty acids than the dwindling fish populations," says Dr. Bradley.

    To incorporate sea greens into your diet, start by putting them on your lettuce and tomatoes.

    "Sea vegetables can make a great addition to salads," says Dr. Bradley. "They're high in nutrition and add flavor because of the sodium. They also add texture, giving salads more crunch."

    Other ways to green up your diet:

    * "Kelp comes packaged in three-foot-long dried strips and is prepared by cutting the long strips into smaller two- to three-inch strips and boiling them for about ten minutes. You remove the kelp, and then you can use the broth in soups, salads and other dishes. Kelp simmered with vegetables or tofu and served in miso soup is an Okinawan favorite," says Dr. Willcox.

    * Wakame (one of Dr. Willcox's favorites), a type of kelp, has a taste and appearance that may remind Westerners of spinach lasagna.

    * Nori seaweed can be used to wrap sushi and rice balls and also to season salads, soups and noodles.

    "Seaweed tastes great and if used wisely, should not tip you into sodium overload," says Dr. Willcox.

    Go for the Green

    More and more people are realizing and enjoying the benefits of green foods. Dr. Bradley recommends keeping your green foods consumption simple. Add powdered greens, dried tablets and liquids to juice, mix them into smoothies or a protein shake, and sprinkle the powder on salads. Mixed in water, greens can be used as a morning tonic and help replace some of the nutrients like magnesium and B vitamins depleted by coffee and other caffeinated beverages, which act as diuretics.

    "Incorporate a green drink into your diet once or twice a day," says Dr. Bradley. "It's the least expensive (health) insurance policy you can have."

    Basics of the Immune System

    In a world filled with pathogens and microbes, good health and resistance to disease is no accident. It requires a vigorous and vigilant immune system. The immune system should be viewed as an internal security force that is constantly checking the identity of everything entering and already existing in the body. A cell or substance may be recognized as "non-self" and a potential enemy if it does not have the right molecular make-up. A cell displaying molecules produced according to a different blueprint than the body's own code may be recognized as foreign. To eliminate alien material that may harm the body, the immune system must take swift action.

    Recognizing entities that originate outside the self forms the key to overall immune system response. This key is carried in the body by cells called macrophages (ma-kro-fajs), a name derived from a Greek term meaning "big eater." Macrophages eat or engulf foreign cells and molecules. When a macrophage encounters something that it distinguishes as being "non-self" or abnormal, it can attack the enemy with a series of assault weapons, including free-radicals (reactive substances) and enzymes, that dissolve and weaken the intruder. In fact, an enzyme produced by macrophages called lysozyme is recognized as one of nature's most powerful anti-infective agents. These chemical defenses, along with engulfment and complete digestion by macrophages, can effectively stymie invasion by disease-causing pathogens.

    Disease Invasion

    Harmful invasion can originate in the body's own cells as well as begin from outside sources. While we are constantly exposed to bacteria, viruses, fungal cells and parasites, destructive cancerous growths often start within the body.

    Every day, thousands of the body's cells mutate into possible cancers. Under most circumstances, the immune system keeps these cells under control. But when the immune "security" system slips up, these harmful growths multiply unrecognized.

    Getting Specific

    The initial immune response that recognizes invaders is called a "non-specific defense mechanism" since this immune response is generally the same toward all invaders. This counter-attack entails battling every invader pretty much identically: a macrophage can engage, dissolve, weaken, engulf, digest, eliminate. However, if, despite the initial immune efforts, the problem persists, a macrophage can tag an invader and "introduce" it to the rest of the immune system, thus recruiting more specialized types of immune cells to enter the battle. This tagging function endows macrophages with the name "antigen-presenting cells." (Antigens are substances that can provoke specific responses by the immune system.)

    Most antigens are proteins. Proteins are relatively large molecules made of smaller units called amino acids. The specific geometric organization of amino acids is what conveys uniqueness to each protein. (Your genetic code forms a blueprint for the production of your own, individual proteins.) Protein molecules produced by one human being can act as an antigen for another human being. That's why organs transplanted from one person to another can be rejected by the immune system. Unless organs are transplanted from one identical twin to another (who share the genetic blueprint for protein creation), doctors must use immune-suppressing drugs to curtail organ rejection. At the same time as these medicines prevent transplant rejection, they also make people more susceptible to infectious diseases and cancer.

    Specialized Immunity

    After one set of immune cells chemically tags antigens (invaders) for recognition, other highly specialized parts of the immune system go into action: Cells called T cells or T lymphocytes acknowledge the invaders and can take the further action (second line of defense) that is necessary to render them harmless.

    T cells get their name from the thymus (an organ located behind the sternum) where they originate. The thymus, most active when we're young, usually shrinks and apparently slows or shuts down its activity about the age of forty.

    A wide variety of T cells inhabit lymph nodes (soft, usually round, pea- or nut-sized organs) and other body areas. For instance, natural killer cells, as their name implies, are a particularly aggressive type of T cell. Another type of T cell is called T helper (a cell that supports development of immune response). T suppressors halt immune response when infection ends.

    In order to make all these different cells work in concert, cytokines or messenger molecules are produced that facilitate constant communications between all the parts of the immune system.

    The B Team

    Other organs of the immune system include:

    *bone marrow: a powerful cell producing organ where the majority of immune cells are born;

    *spleen: an abdominal organ that forms a reservoir for the production of immune cells.

    Lymph nodes oversee particular segments of the body where they collect and recycle tissue fluids. Like an early warning system, lymph nodes react when an invader is detected in the part of the body that it controls.

    Yet another step in the so-called immune cascade entails action by lymphocytes, called B cells, which originate in the bone marrow. These cells produce antibodies which are immune proteins (immunglobulins) that attack specific antigens.

    While traveling in the blood, an antibody can bind to an antigen, curtailing its harmful action. This bound up molecule forms a complex easily recognized by scavenging macrophages which make a quick meal out of the unlucky invader.

    After enemy cells are removed from the body, knowledge of this victory resides in the immunological memory prolonging your resistance toward specific disease pathogens indefinitely. That's why someone who has recovered from a disease like the measles may be impervious to reinfection.

    Rules for Optimum Immunity

    Even though the immune system consists of a complex team of hard-working cells, enhancing your immunity is relatively easy:

    Maintain a healthy lifestyle. Avoid continuous stress and negative emotions or cope with them through exercise or meditation. Consistent, moderate exercise can boost the immune system. Massage can also help although extreme care must be taken when inflammation or disease is already present.

    Sleep 7-8 hours a day. Sleep allows the body to recover and rebuild. Protein synthesis, vital for a healthy immune system, increases during the night.

    Stick to a healthy diet. Your immune system consists of trillions of cells. Consequently, nutrients important for cell health boost the immune system. A balanced low-calorie diet rich in complex carbohydrates, "good" fats (including fish oils, olive oil and flaxseed oil) along with vitamins, minerals and phytonutrient antioxidants from fresh fruits and vegetables can fortify immune cells. Plus, drinking plenty of water helps improve circulation of lymph fluid.

    These recommendations are not hard to meet once they become a part of your daily routine. However, extra immune security may be necessary during flu season, while traveling long distances (airplanes are notorious sources of pathogens) or when working extensive hours in front of a computer screen. In addition, exposure to x-rays, immunosuppressive chemicals, ultraviolet radiation (the sun) or simply aging may give your immune cells extra burdens.

    Your "specific" immune system does not respond immediately to the challenge of invasion by an infectious organism. Instead, it may require about 2 weeks for an effective reaction after antigen recognition and alerting T cells. During this period, the macrophages' non-specific defense assumes a crucial role in keeping infection in check.

    Enhanced activity by macrophages is especially important for recognizing and destroying cancer cells. The most dangerous cancers are those that can mimic normal cells and avoid the immune system's wrath. Few substances can activate macrophage function in the body (aloe vera contains substances that contribute to this process). The most powerful macrophage activator recognized by the scientific community is a sugar-like substance called beta-1,3-D-glucan. Beta-glucan, extracted from the cell walls of common Baker's yeast, when taken in certain small amounts, can prevent infection by making macrophages more active in recognizing and attacking infectious bacteria, fungi and certain viruses.

    This kind of activation can encourage macrophages to attack previously unrecognized tumor cells. As a result, tumors may be eradicated as the immune system mobilizes and produces what may be known as "spontaneous healing."

    Hungry Macrophages

    When a macrophage works overtime fighting disease, its demand for nutrients and energy increases dramatically. Vitamin C, known for its immune supporting function, seems to be especially important for maintaining fully active macrophages. Vitamin C collects in macrophages, often reaching forty times the concentration found in surrounding blood. What are conventionally considered normal amounts of vitamin C in the body may be insufficient to keep macrophages well supplied with this antioxidant.
