Guarana comes from the Amazon basin, and has been used by the natives of the Amazon rain forest to treat conditions such as diarrhea, arthritis, fatigue and even to reduce hunger. It is, in fact, a climbing plant of the Sapondacaea family, although it is the fruit for which it best known. Each contains a single seed that contains around five times the amount of caffeine of a similarly sized coffee bean. An interesting piece of trivia is that the reason why such seeds are rich in caffeine is that the substance is poisonous to certain pathogens that would otherwise attack the berry. The same is - true of all seeds that contain caffeine: it is a means of self-defense. Obviously it is an effective defense since the berries appear to relatively immune to such common plant diseases. Guarana is named after the Guarani tribe of South America, and the language is spoken by many in the area around Paraguay, Bolivia and Brazil, and also parts of Argentina. In fact over 67% of Paraguayans speak the language. There is a myth that when child of the Guarana village was killed by an evil god, a more benevolent deity planted the child's left eye in the forest and the right eye in the village. Guarana also contains tannins at levels of up to 12%, including catechin and some proanthocyanadins. The astringency of these tannins represents a problem to their use in the beverage and food industry, although the substance is regarded as safe by the FDA. They have little if any nutritional value and can react with alkaloid and proteins to form unwanted complexes. Were it not for tannins guarana would be more acceptable to the food industry. However, it is for their energy-boosting properties that the guarana berries and seeds are most prized by many. The fact they it has been traditionally used as a stimulant and aphrodisiac indicates that there is something behind these claims. Studies on mice, hamsters and other animals have supported these effects. It has been found to posses the two desirable properties (to some) of stimulating the nervous system and curbing the appetite. Fiber often has been called roughage, as it technically is a food component that is undigested and processed through the gastrointestinal tract. Since it readily absorbs water, it helps to add to the bulk that is required in order to form a good bowel movement. Fiber is often described as a complex carbohydrate, which consists of the polysaccharide and lignin substance that often gives structure to the cell of a plant and is the portion of plant food that is not digested. Fiber which is insoluble has the capability of passing through the intestines intact and unchanged. Unlike fats, carbohydrates, and proteins, fiber does not give the body nutrients or fuel for energy, and has no caloric value. Dietary fiber can only be found in plant components including vegetables, fruits, and whole grains. Primarily, there are only two types of fiber: soluble and insoluble, with some foods containing both types. Soluble fiber is eventually digested in the large intestine, causing it to have limited bulking power. CLA is conjugated linoleic acid, a compound known as a trans fatty acid due to its stereochemistry, and while trans fatty acids are generally regarded as harmful, CLA is not because it is conjugated. This means that it has alternate single and double bonds in the backbone carbon chain, and the overall energy of the molecule is therefore reduced. Linoleic acid itself is one of the omega-6 fatty acids, the 6 referring to the double bond at the sixth carbon from the omega and of the carbon backbone chain. It is believed to be the cause of heart disease and obesity due to its increasing use in the diet at the expense of omega-3 fatty acids. When the molecule is conjugated, however, the fatty acid has different chemical properties to the standard isomer, and natural CLA is mainly found in cattle products, such as beef and dairy products. Conjugated linoleic acid is present in cattle because it is formed when linoleic acid is converted to oleic acid by rumen bacteria, that are responsible for the microbial fermentation of the feed of ruminant animals such as sheep and cattle. When oleic acid is formed, so too is CLA. However, the form used in supplements is manufactured from vegetable oils, and therefore suitable for use by vegetarians. The usual vegetable oils used are safflower oil and sunflower oil. It is believed to possess several beneficial properties, including antioxidant and anti-cancer properties, but it is for its ability to reduce body fat that it is best known to most people. A growing amount of information is being collected on the use of CLA as a supplement in the weight loss industry, although there are as yet no definitive mechanisms that explain its action. However, recent studies have indicated it possess properties that can help to reduce the levels of low density lipoproteins in the blood, and reduce the possibility of atherosclerosis due to LDL oxidation by free radicals. It is also theorized that CLA in some way regulates the prostaglandin biosynthesis that controls the level of hormones in the body that can regulate growth. CLA is also purported to increase thermogenesis, and so promote the loss of body fat and overall weight. Although most studies on the effect of conjugated linoleic acid in reducing body weight have been carried out on animals, recent animal studies have indicated that might not so much reduce weight, as to increase muscle bulk while reducing that of body fat. The end result, therefore, is not a loss of weight, but a leaner body that has more muscle and less fat. All it needs is the results on animals to be transferred to humans, and this, of course, is frequently the case. However, initial studies on the use of CLA in the human diet have been very positive, so the signs are good. Most scientific progress in human biochemistry has been obtained by virtue of prior studies on animals. These studies, of course, have been beneficial to the animals, making them leaner and much fitter than they otherwise would have been. It is believed that the same will be true of humans taking CLA as a supplement. In fact, recent studies are Split about 50/50 with regard to the effects on humans. While some studies have shown no benefit, about an equal number have shown a positive benefit in the reduction in the mass of fat in the body. Since sesame lignans can also be used in conjunction with CLA to reduce fat by increasing the level of fatty acid oxidation in the liver, than the benefit of CLA seems obvious. The antioxidant effect of CLA is one possible explanation for its anti-cancer properties, though there are others. Its antioxidant properties also have an anti-catabolic effect, in that it can help to prevent the wastage of muscle tissue. The FDA has published studies that attest to these anti-cancer properties. Diabetics, however, should consult with their physician before taking CLA as a supplement, since there is a body of thought that it reduces sensitivity to insulin. Others believe the opposite, so more studies might be needed in this aspect of the substance before it can be said to be safe for use by diabetics. Over recent years, the American diet has increased significantly in its content of the undesirable linoleic acid, due to its ubiquitous presence in margarines, and has reduced in CLA due to modern farming methods. Cattle feeding techniques have resulting in a reduction of CLA in meat products and milk, although eggs are still a rich source, and the CLA in eggs can resist temperatures used in normal cooking methods such as frying, boiling, etc. It is this CLA deficiency in the diet that has been proposed as one of the reasons for the current obesity problem in the USA. The European diet contains more beneficial fatty acids in general than the American diet.
However, there is an increasing body of evidence being accumulated that collectively that suggests almost unequivocally that CLA can help you lose body fat. If there has ever been an overlooked vegetable, it would definitely be fennel. Some people have an aversion to its licorice-like scent, while others feel as if fennel is a bizarre and obscure vegetable that they have no interest in learning how to prepare. However, those who have discovered it know that ignoring fennel is a waste of a versatile vegetable’s amazing flavor and healthful benefits. Even those who already cook with fennel might find that they aren’t taking advantage of its versatility. 'Please pass the broccoli': not something that many mothers hear from their children. In fact, not many children appear to like any green vegetables let alone broccoli. This is not important at such a young age, but there comes a time when the health benefits that broccoli brings become almost essential to your good health and well being. Parents are right, but your children won’t believe you. Some say that the nutritional punch of broccoli is stronger than that of any other vegetable. Is this claim justified? Let’s have a look at the evidence and the facts and you can judge for yourself. First the ‘ordinary’ nutrients of broccoli: vitamin C (more than oranges) and A, folic acid and calcium and also lots and lots of fiber. However, this wonderful vegetable contains not only high levels of calcium, but is also the one of the richest vegetable sources of magnesium. Calcium needs magnesium in order to be properly incorporated into your bone structure, and so broccoli is a very important calcium/magnesium source for vegans that do not drink milk or eat any other dairy products. It is also rich in protein, containing 3% by weight and is also rich in iron. It is therefore an important part of the diet of women during menstruation when iron is important to enable the blood to maintain its proper erythrocyte levels. A deficiency of iron in the diet of women can lead to anemia and render them more susceptible to infection. However, it is more than just iron that renders this vegetable an important part of the female diet. Broccoli has been established to be of major importance in preventing cancer. It is likely the most potent anti-cancer vegetable in your diet, and it has been established over 20 years of study that broccoli can help to prevent cancers of the breast and the cervix. The indoles that it contains prevent estrogens from promoting tumor growth, and it also contains beta-carotene, a strong antioxidant that destroys the free radicals that can also cause cancer. However, there is more to broccoli than just that. Broccoli contains the highest concentration of sulforaphane of all the cruciferous vegetables that include Brussels sprouts, cabbage, cauliflower, rocket and turnip, amongst many others. When you chew broccoli, the glucosinolate glucoraphan is converted to sulforaphane, not by the enzymes in your saliva, but by the actual physical damage done to the plant by the act of chewing. It is glucosinolates that provide the slightly bitter taste many people experience when they eat vegetables such as brussels sprouts and broccoli, and that likely renders them somewhat unattractive to children! Sulforaphane is an isothiocyanate containing the NCS functional group, and is actually bound loosely to the sugar as sulforaphane glucosinolate. It is the loose binding that allows it be released on chewing. Broccoli sprouts are its richest source, and it is a strong antioxidant which is why it is so effective in reducing the possibility of certain cancers. When fighting cancers, your body produces phase-II enzymes, and since sulforaphane induces these enzymes, it stops the carcinogens before they can damage your DNA. This is achieved through the enhancement of the transcription of the proteins that suppress the tumors. In layman’s terms, it is the generation of tumor suppressant proteins from DNA that kills off the tumors before they can destroy the DNA. There is even more however. Indoles have already been mentioned, and those in question are predominantly indole-3-carbinol (I3C) and 3,3-diindolylmethane (DIM). The latter is generated from the digestion of the former and possesses very potent anti-cancer properties. However, this indole can affect your health in ways other than just as an anti-cancer agent. It can modulate the immune system in a way that renders it suitable for the treatment of a number of viral infections, and is also believed to be a possible answer to the problem of bacteria that have become resistant to antibiotics. It appears to operate synergistically with Interferon-Gamma, a cytokine that helps to prevent viruses from replicating within the cells of the body, to strengthen the MHC-I Complex, a part of the human genome that supports the immune response to viral attacks. To put it plainly, broccoli can aid your resistance not only to certain cancers, but also to attack by viruses and some bacteria. It is not only cancers of the cervix and breast that broccoli can help to prevent, but also of the lung, prostate, larynx and bladder. I3C also helps to support the function of your liver in detoxifying your blood as well as supporting the cellular reproduction without which your body could not maintain itself after damage. Broccoli is therefore an important vegetable to men as well as to women, not only for its anti-cancer properties, but also as a general antioxidant and consequent free radical scavenging properties. Its high fiber content is equally Split between soluble and insoluble vegetable fiber, and so meets your dietary needs of both types. Cruciferous vegetables such as broccoli have been singled out by health organizations the world over as essential to your diet, and you should eat them regularly. Once daily would be good, but more is recommended if possible. As stated at the start, strong tasting vegetables containing glucosinolates might not be attractive to children and younger people, but their phytochemical content (the foresaid indoles and isothiocyanates) render them very potent antioxidants and anti-cancer foods. Taken in relation to other foods, an ounce of broccoli contains as much calcium as a glass of milk, more vitamin C than a similar weight of orange, and a medium floret has more fiber than one slice of bran bread. It is rich in vitamin A and of course there are the other antioxidants and anti-cancer phytochemicals already detailed. There are many ways of cooking broccoli to maintain its nutritional content, but if you do not like broccoli, then there are supplements available. You can purchase pure broccoli extract or an extract from a mixture of cruciferous vegetables. The choice is yours, but of one thing there can be no doubt. (Other good protein sources include chicken, cottage cheese, lean red meat, yogurt and milk, all organically sourced whenever possible.) Supplemental fish oil is another omega-3 possibility because “mercury is found in the muscle of fish and not in the oil,” according to OSU’s Jane Higdon, who suggests consulting your health care practitioner for advice. “If I was going to take a fish oil supplement, I’d look for one that the manufacturer is testing for PCBs (an industrial pollutant),” such as products that meet California’s Proposition 65 standards. Don’t forget to stock the fridge with fresh produce. But all that sun and wind can dry your summer skin, making it uncomfortable and parched-looking. Moisture counteracts the discomforts that summer elements can bring, allowing your fresh, dewy look to shine through. Knowing how to hydrate your skin is the key. Skin Structure Skin consists of three layers, each with a different function: Natural Moisturizers Do you have dry skin? How well your skin holds moisture depends on the arrangement of cells within the stratum corneum. Fat contained in this layer, as well as natural moisturizing factor (made by the epidermis), also keeps skin moist. Unfortunately, as you age, the amount of natural moisturizing factor produced by your skin decreases. Skin Care 101 Obviously, anything that affects the all-important epidermis can dry out your skin-sun and wind both rob skin of moisture. For starters, just say no to tobacco. Smoking tightens the skin's abundant blood vessels; this reduces the flow of oxygen and nutrients, creating dryness. Smoking also breaks down elastin, the protein that gives skin its flexibility. The next step is to add water from within. Everyone wants thick, lustrous hair. Think of the allure attached to the locks of Samson and Lady Godiva and-fast-forward to the present-the full heads of Antonio Banderas and Julia Roberts. " We're naturally attracted to hair as humans; it catches the light, it frames the face, we like the feel of it," says Catherine Jones, ND, LAc, a resident naturopathic physician at Bastyr Center for Natural Health in Seattle, Washington. "Fair or not, historically in many cultures, rich, thick hair has been a sign of fertility and strength." Along with that allure, latching onto natural ways to have great-looking hair gives you the benefits of looks and health. Every hair starts with a shaft that grows from a root. "The root is contained deep within the hair follicle," says Dr. Jones. "Each one has a sebaceous or oil gland, which supplies the hair with necessary lubrication as it approaches the surface of the scalp." Each hair follicle has its own growth cycle, including a resting period, the telogen phase, when hair falls out. Because of these constant hair phases, each of us loses, on average, about 100 hairs a day. " The number of hairs the average person loses in a day tends to increase in the fall as the leaves fall from the tree and tends to decrease in the spring as the bulbs emerge from the soil," Dr. Jones says. "We really are connected to nature." Stress-due to rapid weight loss, infection, anemia, prolonged illness, hormonal changes, hypoactive thyroid disease, autoimmune conditions, eczema or psoriasis-can influence hair growth and loss. Hair consists of proteins, lipids (fats), carbohydrates and pigment (gray hair has reduced pigment; white, none at all). Each shaft's structure is divided into a medulla, a cortex and an outer cuticle. " The cuticle is coated with an outside lipid-like layer, which protects the hair," says Dr. Jones. "As the hair grows out of the follicle, the cortex and cuticle become keratinized and harden." Dry or damaged hair is more susceptible to breakage. "The condition of the cuticle affects how the light reflects off the hair, giving it highlights and luster," Dr. Jones says. "Luster is affected both by what occurs inside the body as the hair is developing and what happens to the hair after it has grown from the shaft." Sun, heat, moisture, pollution and hair products, dyes and bleaches can all dull the hair. "Applying chemical solutions to the hair, color, permanent waves or curl relaxers, damage the protein molecules that wrap around the shaft, leaving hair brittle and dull," says Christina Pirello, author of Glow: A Prescription for Radiant Health and Beauty (HP Books). Conditioners and oils can leave a residue or weigh hair down. Hair sprays and products that contain alcohol can dry and damage the hair, as can using blow dryers and curling irons. To combat hair-raising havoc, feed your hair natural nutrients for health. Silica and plants that contain silica/silicon both strengthen hair and promote growth. "Silica is a good mineral for hair health," says Walter Siegordner, founder of The Aurora Group, a personal care company. "It helps in the keratinization process of the cells that produce hair." " Silica is a mineral that is involved in the synthesis of bone and connective tissue," adds Dr. Jones. "The hair follicle contains connective tissue so silica may promote the health and function of the follicle itself." Silica-containing herbs include nettles (Urtica dioica), horsetail (Equisetum arvense), oatstraw (Avena sativa) and alfalfa (Medicago sativa). Sea plants like seaweed and kelp also provide vital nutrients. "Sea plants are essential ingredients in many natural shampoos and can be used to fortify damaged hair," says Pirello. "They're rich in vitamin A that prevents the build-up of dead skin cells, which can clog the hair follicles, inhibiting the growth and health of the hair, and also contain vitamin B, linked to the prevention of oily hair, baldness and dandruff. Calcium found in sea plants is essential to the structure of the hair shaft." Eaten on s daily basis, sea plants are rich in nutrients that help maintain healthy, shiny hair, free of Split ends, Pirello says. Try wakame in soups and salads, kombu or kelp in bean and vegetable dishes, nori in sushi, and hiziki and arame as side dishes. Since hair health is affected by digestive health, the fiber found in whole grains also helps. "Fiber prevents accumulation in the intestines that can result in the formation of toxins," says Pirello. Miso, she adds, is especially good hair food. It "is rich in living enzymes that ease digestion, fortify the quality of the blood nourishing the body and hair, and provide us with essential oils, vitamins and minerals." Key nutritional support includes adequate protein and amino acids, essential fatty acids such as cold-pressed flax seed oil and fish oil, copper, vitamin A, vitamin E, vitamin D, biotin, iron and vitamin B5 (pantothenic acid). Zinc and selenium can help combat the effects of hyperthyroidism, which can result in thinning, lackluster hair. Vitamin C can boost adrenal health. "When the adrenals are overtaxed and become fatigued, hair follicles will go into a resting phase," says Dr. Jones. (If you have a medical condition, she adds, check with your health care practitioner first before taking supplements.) In Traditional Chinese Medicine, hair is associated with the kidneys' qi, energy that originates in these organs, and with blood quality. " From the traditional Chinese perspective, excess amounts of fat, protein, dairy, sugar, alcohol and salt in the diet acidify the body, damage the Kidney qi and are not good for the hair," says Dr. Jones. A diet rich in vegetables and grains is a great way to support healthy hair. "Iron and mineral-rich foods are considered blood builders and hair tonics. Foods such as blackstrap molasses, seaweed, nettles, and the herb polygonum multiflorum (also known as He Shou Wu and Fo-Ti) have been used throughout the years. Fo-Ti has also been used to prevent graying of the hair and support the immune system." " Hair is extremely strong but at the same time it's extremely delicate," says Barsoum Bouchar, a cosmetologist and owner of the Virtuoso Salon in Birmingham, Michigan. "Many products work against the hair texture, so the cuticle is always raised. This causes tangles and Split ends. With blow dryers, chemicals, colors and styling elements, the hair is tremendously abused." If you don't have to chemically treat the hair, he says, don't. When replenishing the hair it's important to remember that it's composed of 97% protein and 3% moisture, says Bouchar. Shampoo cleanses the hair and removes buildup. "A moisturizer brings moisture back into the hair and smoothes the cuticle down, which is what makes hair shiny and gives it bounce. The one key ingredient in both shampoo and moisturizers is aloe vera. It heals the hair." " Avoid products with harsh surfactants like sodium laurel sulfate and propylene glycol," warns Siegordner. "These decrease the circulation in the scalp, reducing the pathway for nutrition to the hair bulb." Conditioners that aren't natural can also cause build-up. "When you apply heat to the hair through blow drying or styling, you end up 'burning' the hair," says Bouchar. To stimulate hair growth, add a few drops of essential oils of rosemary, lavender and thyme to jojoba and almond oils, and rub into the scalp. Leave it overnight and then rinse it off. " Essential oils have antimicrobial and antifungal properties, stimulate the circulation to the hair follicles and combat dryness. They also smell good," says Dr. Jones. For hair that's not chemically treated, "a vinegar rinse cleanses the hair, removes build-up and boosts shine," says Bouchar. Use one part vinegar to ten parts water, apply after a shampoo, comb though and rinse it off. To naturally lighten the hair, use the same ratio in a lemon rinse for five minutes for, say, four days in a row, and then stop. If you want to color your hair, choose natural elements, too. "The best natural dye is henna," says Bouchar. "It's organic, just like hair is." Blonde hair becomes warmer with a coppery tone, brunette hair takes on a mahogany hue, gray hair looks like highlights. To find a good natural hair stylist, Bouchar suggests asking which products they use and why. If your hair is chemically treated, it's especially important to work with a stylist you trust for the best care. Keep your eye on the big picture when it comes to hair health. Even those of us from the most culinary challenged households can recall the pleasures of the simple plump white dinner roll or flaky biscuit piled in a basket on the dinner table. Bread has blossomed from sideshow status beside the dinner plate to a full-scale mealtime headliner, a scrumptious star enriched by nutritious grains, herbs, fruits and vegetables. Contemporary cooks build meals around crunchy cornbread or chewy focaccia, presenting soups or salads as satisfying counterpoints. Want to jump into the bread baking basket or hone your skills? Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years. That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting. "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications. "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing. "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside. "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while. "Then there are quick breads that use baking soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans. "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits. "To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness. "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat. "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet. "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables. "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it. "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes. "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good." Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well: "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen. "Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine flour, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day. "I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with Split pea soup. "Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."

Energy Cycles by Sylvia Whitefeather Energy Times, August 2, 2003 Feeling stressed out and exhausted from an overburdened schedule? Regenerating your personal energy necessitates defusing stress. Stress and lack of energy don't just frazzle your nerves; they can leave you depressed, anxious and vulnerable to a long list of health problems. According to J. Douglas Bremner, MD, a psychiatrist at Emory University, Atlanta, when your brain overcharges on prolonged stress, your body pays a heavy, tiring price. "If stress has effects on the brain and neurological function, then stress has effects on all parts of the body, including the heart, blood vessels, immune system and digestive system," says Dr. Bremner, author of Does Stress Damage the Brain? (Norton). "The long list of damaging effects can include heart disease, memory impairment, depression and even increased susceptibility to stroke and cancer." A Good Night's Sleep Although getting a good night's sleep is a basic part of lowering stress and boosting energy, many of us seem to be tossing and turning through an epidemic of insomnia. The fact that so many people appear to suffer from disturbed and unsatisfying sleep may signal not only a personal energy lack, but also a deeper health crisis developing on the horizon. Lack of sleep, along with stress, not only contributes to those lackluster afternoons of the blahs, but it can also derail your basic body rhythms, weaken your immune system and make you age quicker. Researchers at the University of Chicago report that lack of sleep may deplete your get-up-and-go by upsetting basic metabolic functions and interfering with hormones. Pretty serious stuff: When people in this experiment cut back their sleep time to about four hours each night, their bodies behaved as if they were twenty years older and they started showing signs of developing diabetes. These effects happened in only a week of missing sleep (The Lancet, October 23, 1999). The drastically reduced sleep schedule slowed the thyroid gland, reducing the production and action of thyroid hormones. As a result, metabolism slowed and the non-sleepers developed that awful sluggish feeling too many of us know and hate. Stress from lack of sleep also coaxed the adrenal glands into releasing extra amounts of cortisol, a stress hormone whose purpose is to force the body into providing short-lived energy boosts. But after a while the body flames out, its ability to cope with daily demands drained even further. "We found that the metabolic and endocrine changes resulting from a significant sleep debt mimic many of the hallmarks of aging," says Eve Van Couter, PhD, professor of medicine at the University of Chicago and director of the study. "We suspect that chronic sleep loss may not only hasten the onset but could also increase the severity of age-related ailments such as diabetes, hypertension, obesity and memory loss." And when are you are constantly short-changed of sleep, it builds up an accumulative effect. Particularly susceptible are busy parents, shift workers, menopausal women and college students. One way to take back your energy from this metabolic madness is to get twelve hours of sleep a night for a week. But aside from hitting the snooze button a few hundred times, a possible antidote to this cortisol nightmare may be vitamin C. Fight and Flight The human body, which evolved before the advent of Split-level houses and SUVs, was built to survive life-threatening, physical danger. When it encounters modern-day stress, such as traffic jams and credit card bills, it releases extra cortisol, heightening the body's immediate ability to run or fight. As a result of cortisol release, senses go on high alert, heart rate speeds up, blood flow to muscles increases, and the immune system mobilizes to deal with what it thinks is an imminent crisis. However, unlike physical danger that rapidly resolves (either you get away from what's trying to harm you or it does you in), today's stress drags on and on (at least till the next exit on the expressway), and the cortisol in the body continues to circulate. The long-range result of persistent cortisol is a drop in energy, rampant fatigue and lowered immunity. You feel constantly tired and you get sick more often. You may also gain weight. But researchers at the University of Alabama at Huntsville have found that large doses of vitamin C "reduce...the levels of stress hormones in the blood and also reduce...other typical indicators of physical and emotional stress, such as loss in body weight, enlargement of the adrenal glands, and reduction in the size of the thymus gland and the spleen," according to P. Samuel Campbell, PhD (American Chemical Society, 1999). Dr. Campbell believes that our prehistoric ancestors probably consumed large amounts of vitamin C in a tropical diet rich in fruits. "If so, the physiological constitution we have inherited may require doses far larger than the present RDA (the amount the government recommends) to keep us healthy under varying environmental conditions, including stress." Iron Out the Fatigue If you are a premenopausal woman, a lack of iron may also be draining your body of energy. According to experts, as many as one of every five women who menstruate may suffer anemia caused by a lack of iron. This type of problem is also frequent in teenagers and during pregnancy. (But before you take iron supplements, talk to your health practitioner to make sure this is the source of your fatigue.) "Women with heavy menstrual flow have the greatest risk (of anemia)," points out Susan Lark, MD, in Healing with Vitamins (Rodale). Dr. Lark recommends eating more iron-rich foods (like organic red meat) even if you are not anemic, since a mild iron deficiency can drag you down into the doldrums. Vegetarians necessarily eat fewer iron-rich foods than do meat eaters. But if you take a vitamin C supplement when you consume such iron-rich vegetables as lima beans, pinto beans and spinach, your body can absorb more of the iron in these foods. The Krebs Cycle: Keep the Wheel Turning All of your cells make the energy that keeps you going. This process, a complicated chemical reaction called the Krebs cycle, transforms fatty acids and carbohydrates into ATP (adenosine triphosphate) for cellular energy. Mitochondria, small structures in each cell, are the centers of this energy production. Energy production requires oxygen. The more oxygen available to the cells, the more energy is produced. Deep breathing and moderate exercise are simple, quick ways to oxygenate the body and boost energy. That is why walking, jogging and other physical activity wakes up your brain and restores pep. If you've been looking for ways to feel more energetic, take a deep breath and go for a long walk before you sit down to your rejuvenating lima beans and vitamin C. Today, its lure is just as compelling and hair remains an important form of self-expression and self-image. A healthy head of hair is more than an asset to your appearance. A hairstyle can reflect a mood, an attitude or a personal style, while unkempt hair may reveal the status of one's emotional or physical health. Even a "good" hair day vs. a "bad" hair day can significantly determine how your frame of mind takes shape. We can't always control the frizz factor or the humid weather that makes our curls fall flat, but many natural approaches are available to allow us to put our best looking follicle forward. Whether your hair is sleek and stylish, long and slinky, spiky punk rock-hip or wash-and-wear, botanical-based products and proper nutrition can bring out the very best in your locks. Don't Fool Mother Nature No matter how often you cut, dye, perm or blow-dry your hair, Mother Nature, with the help of your DNA, has blessed you with a quite specific quality and quantity of hair. Styling may work to change the appearance of your hair, but nothing can change your genetics. Every hair on your body, from the soft down on your arms to the coarser, longer hairs on your head, grows from a cell-lined indentation called a follicle. The hair follicle consists of three cylinders; the central cylinder determines whether your hair is straight, wavy or curly. Each hair shaft alternately grows or goes into a dormant phase. "At any one time, approximately fifteen percent of the one hundred thousand or so hairs on the head are resting, while the rest are growing or lengthening," say Arthur Balin, MD, PhD, and Loretta Pratt Balin, MD (The Life of the Skin: What It Hides, What It Reveals, and How It Communicates, Bantam). Hair constantly comes and goes, falling out consistently even when it is healthy. Consequently, a normal head can shed up to one hundred resting-phase hairs a day. When hair is subjected to harsh chemicals and treatment, even more may fall out. If you're concerned with hair loss, gently pull on a small section of hair; if fewer than five hairs come out, hair loss is within normal range. What's Your Type? Normal hair is an elusive commodity in these stressed-out days of over-washed, over-dried and chemically treated hair. If your tresses look frizzy, tangle easily or generally lack moisture, they're probably dry. Dry hair lacks the proper oil content to maintain an ample sheen and is usually dull-looking. To gain back a natural shine, cut back on shampooing and use a natural conditioner formulated for dry hair. Look for essential oils such as jojoba, evening primrose, blue chamomile, and white camellia, and B vitamins (such as panthenol) and aloe vera, suggests Aubrey Hampton, founder of Aubrey Organics. Drinking plenty of water, eating a diet that's not ultra-low in fats and using a humidifier may also help improve dull-looking dry hair, points out David E. Bank, MD (Beautiful Skin: Every Woman's Guide to Looking Her Best at Any Age, Adams Media). (Excessively dry hair may be a significant sign of metabolic disease. If you don't notice a marked improvement in your scalp after taking measures to improve dry hair, or your hair is abnormally dry, consult your health practitioner to see if stronger cures should be implemented.) Too Much Oil Hair that appears greasy within 24 hours after shampooing is oily. In that case, try gentle shampoos and herbal rinses with essential oils including quillaya bark, amino acids mixed with saponins, non-coloring henna and peppermint. For an oily scalp and dry ends, condition only the ends. Styling products should be oil-free. For thin or flyaway hair, products with natural thickening agents such as panthenol can help pump up the volume. Color treated and damaged hair can benefit from sulfur-containing amino acids; check your natural foods store for hair care products that contain horsetail, coltsfoot and cysteine. Tea tree oil products are effective when you are trying to control dandruff and a problem scalp. The Must-To-Avoids If the label lists sodium lauryl sulfate, steer clear, warns Hampton. And, says Dr. Bank, sodium C-14-16 olefin sulfonate, a harsh chemical found in cheap shampoos, is the worst of the worst when it comes to offensive hair care ingredients. "You also need to watch out for sodium chloride-table salt-in the ingredient list. It's a cheap ingredient to thicken shampoo and strips the hair of oils." Feed Your Head To optimize shine and fullness, improve your nutrition, says Bruce Miller, MD, author of The Nutrition Guarantee (Summit Publishing Group). "Good nutrition is as essential to healthy, attractive hair as it is to clear, glowing skin," notes Dr. Miller. "Your hair directly reflects your care and feeding of it." Your hair consists of about 97% protein, containing nineteen of the twenty-two amino acids that form protein, explains Dr. Miller. If you skimp on quality protein, your hair may reflect this amino acid imbalance by breaking, cracking and Splitting. Hair follicles pass on the nutrients you consume, nourishing the new cells that form the growing hair shaft. As the hair gradually pushes upward, the shaft is continually lubricated by the busy sebaceous glands. For a smoother transition through the shaft and undamaged hair, lecithin provides a welcome dose of lubrication, as well as the important B vitamins choline and inositol, vital to healthy hair. In fact, the B vitamins are crucial to the growth of full bodied, healthy hair. The more hair your parents retained, the greater your chance of keeping yours. Think Diet If you're interested in optimal hair health, think nutrition. Eating for the sake of your curls is a lot like eating for overall health: plenty of fresh fruits and vegetables, healthy grains and lean sources of protein, including tofu and other soy-based foodstuffs. To support healthy hair, some experts advocate foods high in biotin, including brown rice, brewer's yeast, bulgur, green peas, lentils, oats, soybeans, sunflower seeds and walnuts. The natural phytochemicals in green tea may aid hair, while ginkgo biloba improves circulation to the scalp. Don't forget your daily vitamins and be sure to take an iron and B12 supplement. Chinese Treatment Herbs from China show great promise for helping hair. He Shou Wu, made from Polygoni multiflori (the eastern wild rose), is reputed by devotees to restore color, slow hair loss, and help hair grow back. VITAMIN A and CAROTENOIDS Vitamin A Vitamin A is a generic term for a class of fat-soluble substances called retinoids, which can either be consumed preformed or synthesized by the liver from plant pigments called carotenoids (see 'Carotenoids', below). An essential nutrient, vitamin A is perhaps best known for its role in vision. The outer segments of the rods, a type of light-sensitive cell in the retina of the eye, contain a pigment called rhodopsin (or 'visual purple') that mediates vision in dim light. Cone cells mediate color vision via three additional pigments. Both rods and cones are surrounded by pigmented epithelial cells that store vitamin A. Rhodopsin is formed from a protein called opsin and a vitamin A-dependent compound called 11-cis retinal. As light strikes the rods and cones it is absorbed by the pigment molecules, and retinal is Split off from opsin. This chemical change allows an electrical impulse to be sent to the optic nerve and thus to the brain. The pigment must then be regenerated from opsin and retinal. Repeated small losses of retinal during this process require a constant replenishment of vitamin A to the eyes. Vitamin A also plays an extremely important role in epithelial cell differentiation. Cell differentiation is the process by which a cell undergoes a change to a specialized cell type, allowing it to perform particular functions in the body. It is not yet understood precisely how vitamin A is involved in this process. One hypothesis is that it directly affects gene expression through its interaction with chromatin, a complex of DNA, RNA and protein in the cell nucleus. These interactions affect the process of transcription of DNA to messenger RNA, leading to synthesis of a specific group of cellular proteins. Each one of us carries in our DNA a unique genetic blueprint. This genetic material is the same in every cell of our bodies. It is only because of this mysterious and magical process of differentiation that we have specialized cell types - and therefore eyes, ears, lungs and hearts. Vitamin A is necessary, either directly or indirectly, for the healthy growth and functioning of many of our tissues and organ systems, including the eyes, the skin, the bones, the reproductive system, and the natural defenses. It is not yet known whether this requirement is due to the role of vitamin A in cell differentiation or whether there are other physiological processes for which vitamin A is essential. Carotenoids Vitamin A is related to a class of nutrients called carotenoids, including alpha and beta carotene, lycopene and lutein. Carotenoids are botanical pigments whose colors range from red to orange to yellow. Some carotenoids, particularly beta carotene, can be converted into vitamin A predominantly in the intestinal mucosa and to some extent in the liver. Carotenoids are completely non-toxic; their conversion into vitamin A is well-regulated by the body, making them extremely safe sources of this essential nutrient. In addition to their role as safe sources of vitamin A, carotenoids are powerful nutrients in their own right. Their primary claim to fame is their powerful antioxidant action, particularly against singlet oxygen. Singlet oxygen is an 'excited' ion of oxygen which, while not technically a free radical, is nonetheless highly reactive. It causes 'oxidative' reactions which can impair or destroy membranes, enzymes and DNA. It can also lead to the formation of free radicals which can cause additional damage. Certain carotenoids such as beta carotene, because of their chemical structure, can neutralize singlet oxygen by absorbing its extra energy and dissipating it throughout the carotenoid molecule, releasing the energy as heat and converting the singlet oxygen back to 'normal' oxygen. One molecule of beta carotene can quench up to 1000 molecules of singlet oxygen. In addition to their role as singlet oxygen quenchers, carotenes provide antioxidant protection against free radicals as well. In nature, they protect plants from photo-oxidative reactions; in humans, certain carotenoids, notably beta carotene, may help protect the skin from such reactions. Other carotenoids may provide more localized protection to particular organs. Lutein and zeaxanthin, for example, are selectively concentrated in the retina of the eye. Along with vitamins C and E, carotenes are among the most important nutrient antioxidants in the human body.
