Niacin

Not everyone has the same skin type, and if you have acne, then the treatment could be dependent on your skin type. Before discussing the different acne treatments available, therefore, it will be necessary to discuss the various skin types.

Skin types are graded in a number of ways, anything from 3 types to several. Here we shall discuss more than the normal three (oily, dry and normal) but instead look at seven.

1. Normal Skin

Normal skin looks evenly colored and textured, firm and smooth without larger pores. People with normal skin probably had mild acne when at high school, but cleared up fairly quickly during the teenage years without specialized treatment or scarring. Acne in this type of skin normally requires only mild topical treatment and a mild antibiotic face wash to keep the pores clean of dead skin cells.

Treatments designed to reduce sebum production could result in dry skin susceptible to environmental damage. What must be kept in mind is that the prime cause of acne is excessive production of skin oil, correctly known as sebum, becoming mixed with shed skin cells within the sebaceous pores and plugging them. When this plug gets infected with bacteria, the immune system leaps into action to produce puss through leucocytes attacking the bacteria, and inflammation designed to create temperature conditions alien to bacteria.

If you use treatments formulated to reduce sebum production in oily skin, then you might lose the natural skin oil needed to keep your skin waterproof and resistant to the pollution and chemical agents that can cause dermatitis.

2. Dry Skin

If you got through adolescence with few or no skin problems, and you have dry hair and your skin feels dry after washing, then you have dry skin. 3. Oily Skin

Oily skin is classically associated with acne, and it is for those with that skin type that classic treatments will be prescribed, such as antibiotics and Accutane.

Sensitive Skin

Sensitive skin is associated with broken blood vessels beneath the surface of the skin, and such skin types should be treated very carefully. If creams or lotions are applied to sensitive skin they should be rubbed in very gently as it could cause bruising.

Sensitive skin is no more susceptible to acne than most other skin types although significantly less so than oily skin. For that reason, treatments for sensitive skin should be similar to that for dry skin or in most cases normal skin.

Combination skin

Combination skin has an oily zone across the forehead, and down the nose and chin, the other areas of the face being normal or dry. Such skin can also be oily along the jaw line and normal to dry everywhere else. In such cases aggressive acne treatment might be necessary in the oily zones, and more mild treatments used in the areas which are normal.

There are three other classes or skin type based upon age or condition, one being mature skin and other ailing skin and the final type, surprise, surprise, being known as acne skin. Ailing skin is caused by skin conditions other than acne, and you should get the advice of a dermatologist if you believe you have this type of skin. Mature skin on the other hand is natural and occurs with age: the skin becomes slack and loose due to a slowing down of cell growth which causes the skin to lose elasticity. There is no cure for this type of skin other than cosmetic surgery, and it is rarely affected by acne.

Acne Skin

Acne skin is normally oily and associated with blackheads, pimples and spots. It is not normally applied to serious acne conditions, being mostly associated with skin which is generally 'spotty', as opposed to mostly clear. It is debatable whether acne skin is any different from oily skin which also tends to be covered with spots and pimples, and the treatments for acne skin are no different to those for oily skin: these are Accutane, antibiotics and topical treatments such as face washes and scrubs.

If you have acne skin you must be careful about the type of cosmetics and face cleansers you use, since either could aggravate your condition. This is not restricted only to those with oily skins of course, since everyone should be aware of the effect of cosmetics and face cleansers on their skin but it is more significant with those who suffer from acne. Cosmetics cannot cause acne, but they can help to aggravate infections which have already occurred.

Although most focus is placed on those with oily skins which are more susceptible to acne, people with any type of skin should consider carefully the types of cosmetic and cleansers which they use. Contrary to what you may have heard or read, acne has nothing to do with your diet - eating fatty foods or chocolates do not cause acne, which is caused only through production of excess sebum, or skin oil, by the sebaceous glands.

Irrespective of your skin type your physician will determine the best treatment that is appropriate for your particular case of acne. This may be different for individuals and may or may not change according to skin type. Antiseptic face washes or scrubs may be appropriate for some acne cases, Accutane might be the best treatment for others, while a course of internal antibiotics such as tetracyclines may be deemed appropriate for yet other cases.

Treating acne has three distinct phases:

1. Removal of the blackheads and lesions. The removal of lesions can also involve a degree of scar removal, although that is another topic. Black heads, whiteheads and other papules can be treated by the use of facial cleansers and scrubs. They should not be squeezed since the puss inside them could be forced deeper into the skin and so lead to a more generalized infection.

2. Treatment of the bacterial infection. The typical symptoms of acne, the papules, whiteheads and blackheads, are caused by bacterial infection of the plug of sebum and dead skin cells within the sebaceous follicles. The general treatment for such infections is antibiotics, both topically and internally. Tetracycline has already been mentioned as a common internal antibiotic, and several forms of antibiotics are used in facial scrubs of which peroxides and benzoates may perhaps be rather severe for dry and sensitive skins.

3. The third phase is treatment of the causes of excessive sebum production. This is generally not entirely treatable since it is predominantly due to excessive hormonal activity at certain times of your life such as puberty, menstruation, pregnancy and menopause. However, your physician may offer treatments such as the contraceptive pill which should be used with care.

Other treatments include agents that aid desquamation, so preventing the irregular shedding of skin cells that lead to the mixture of sebum and dead skin cells that form the plug that is so easily affected by bacterial infection.

Together these three stages of acne treatment can, if not prevent the condition, certainly reduce its extent and have less of an effect on your skin, particularly if you are the off the oily skin type. Doctors will take your skin type into consideration when determining the best acne treatment for you, although all generally this will only be with respect to topical treatments: treatments that are applied to the surface of your skin.

Infertility is typically Defined as a failure to conceive after a year or more of regular intimate activity during the time of ovulation. This term can also refer to the inability to carry a pregnancy to term. About 6.1 million American couples are impaired when it comes to their ability to have children, with 2.1 million of these couples being infertile. The exact cause of the problem can be extremely difficult to pinpoint, as ovulation, fertilization, and the passage to the fertilized ovum through the fallopian tube and to the uterus are extremely complex processes. In order for pregnancy to occur, many events must work together perfectly.

In 40 percent of infertile couples, problems that affect the male partner are either partially or wholly the cause of infertility. Infertility in men is usually the result of a low sperm count or an anatomical abnormality. There are a variety of factors that can result in a low sperm count. Among these factors are alcohol consumption, endocrine disorders, exposure to toxins, radiation or excessive heat, recent acute illness or prolonged fever, testicular injury, and rarely, mumps-induced wasting of the testicles. An abnormal enlargement of veins that drain the testicles, referred to as varicoceles, can cause infertility in men. This is because the veins of the testes are no longer able to moderate the temperature of the testicles correctly, which can negatively affect sperm.

The most common causes of infertility in women include an ovulatory failure or defect, blocked fallopian tubes, endometriosis, and uterine fibroids. Additionally, some women are able to develop antibodies to their partners’ sperm, which causes the woman to almost be allergic to them. Chlamydia, a transmitted disease which affects 4 million Americans each year, also causes many cases of infertility. It is a fact that almost 90% of Type 2 diabetes can be prevented by attention to diet and the use of specific supplements. However, before having a look at these possibilities, we shall first have a look at what type 2 diabetes is so that the means of prevention can be better understood.

Diabetes is a condition, not a disease. It cannot be passed from one person to another, and there is evidence that it is hereditary since it tends to run in families. Diabetes occurs when the level of glucose in your blood becomes higher than it should be. Glucagon is secreted when your glucose levels are low, and its presence in the bloodstream stimulates the conversion of the emergency energy store in the liver (glycogen) to glucose in order to maintain this stability. Insulin, on the other hand, is released after you have consumed a meal, and your glucose levels are high. What insulin does is to stimulate the cells of your body to convert glucose to energy and either use it immediately, or store it as glycogen for use later. By means of these two substances, the level of glucose in your blood is maintained at safe levels – normally.

If something happens to the supply of insulin, then the blood sugar level will continue to rise until the bloodstreams contains too much glucose, a condition known as hyperglycemia. The symptoms are excessive thirst, a frequent desire to urinate, fungal infections or thrush around the genital area (due to yeasts and sugar fermentation), and various others such as mood swings, cramps, dizziness and a feeling of tiredness and weakness.

Type 1 diabetes occurs when the body produces no insulin, and the only possible treatment is continual insulin injections. Type 2 diabetes is Defined in two ways. Either your body does not make enough insulin for your needs, or the cells in your body cannot use the insulin produced properly. It is Type 2 diabetes we are concerned with here, and that we shall be exclusively discussing. The first is to look carefully at your diet. A healthy balanced diet is essential if you are to beat your condition naturally and avoid the potential longer term side effects. Diabetes is associated with the overweight and obese. That is not to say that only these people become diabetic, but the majority are. Most people with Type 2 diabetes are overweight, and although around 65% of Americans are overweight or obese, a considerably higher proportion of those with Type 2 diabetes are overweight.

Specific supplements that you could take include chromium picolinate that can not only be used to treat existing diabetes patients but also to reduce your chances of developing Type 2 diabetes. Studies involving the use of chromium picolinate on patients with this type of diabetes have been very positive, resulting in reduced blood sugar, lipid and insulin levels. The optimum dosage is around 500 micrograms twice daily. Such treatment has been shown to both prevent and reverse Type 2 diabetes.

Magnesium is another specific supplement that studies have suggested can lower the risk of developing this type of diabetes. Magnesium rich foods have also been found to be effective, and the fact that a magnesium deficiency can lead to diabetes supports the findings that its use can help to prevent it. Green leafy vegetables such as spinach, and beans nuts and seeds are generally rich in magnesium.

Vitamin D can also help protect against the development of diabetes. Although the research is relatively new, it has been established that the cells that produce insulin are affected by a lack of vitamin D in the blood, and low levels of vitamin D can also led to insulin resistance. If you spend more time out in the sun, you should have less chance of contracting Type 2 diabetes, although you could also take a supplement.

Although Type 2 diabetes is not as serious as Type 1, no form of diabetes is desirable to have, and ultimately both types can be extremely serious. You should do what you can to avoid diabetes, and Type 2 is easier to avoid then Type 1. Diet, weight and supplementation as described above will all help to avoid contracting this condition, so follow the advice, especially if you are overweight and have a sweet tooth.

Women and Children Especially Vulnerable

Most Americans carry toxic pesticides in their bodies, according to a recent report. Often, the so called “body Burden” of these chemicals is well above government-Defined safety levels. Included are pesticides linked to cancer, birth defects, low birth weight, declining sperm counts, and infertility.

Chemical Trespass, by the Pesticide Action Network, analyzes data collected by the Center for Disease Control (CDC) from blood and urine analyses of 9,282 people. Among the findings:

Pesticides residues and metabolites were found in every subject. The average person had 13 pesticides in his or her body. The Average 6 to 11 year old was exposed to certain organophosphorus (OP) pesticides at four times the levels deemed acceptable by the environmental protection agency. Children are especially susceptible to dietary pesticides since they eat more food on a body weight basis than adults.

Organochlorine (OC) pesticides were found as significantly higher levels in women. This probably reflects women’s higher body fat content; OC pesticides are stored in fatty tissue.

Mexican-Americans showed the highest pesticides exposure, probably due to their disproportionate employment in agriculture. However, the statistics did not include occupational information.

Many pesticides used widely in the past, such as DDT and chlordane, are still found in our bodies, even in children born years after they were banned.

Cause for Alarm?

The CDC, which tested for 116 environmental chemicals, stressed that presence of these chemicals in the body does not necessarily indicate disease and called for more study of the dosages that should cause concern. The Pesticide Action Network sharply criticized this approach as a “Failure to protect public health.” Much evidence links long-term, low-level exposure to chronic illnesses, the group said, and the problem is more acute when one considers the additive effects of combining chemicals.

Pesticides and the wellness Revolution

This study shows the need for a system that relies on organic agriculture and alternative pest controls. Listen up, guys. Masculinity isn’t Defined by what you eat. It’s all about how well you hold up through the years, which means taking care of yourselves. So ditch the doughnuts, double burgers and draft beer, and adopt a healthier diet. Here’s how!

Back in 1982, a best-selling, humorous manifesto of masculinity known as Real Men Don’t Eat Quiche epitomized the male backlash against feminism, by then a formidable force in the American cultural landscape. But the joke, it turns out almost 25 years later, is on the men- and not just because quiche doesn’t have that many fewer calories than a Quarter Pounder. We may have maintained out mach-ness all these years by eating “manly food,” but we’ve become unhealthy and ultimately weaker because of it.

In 2000, the National Health & Nutrition Examination Survey revealed that among men 20 years and older, a whopping 65.1 million (67.2%) were considered overweight and 26.6 million (27.5%) were considered obese. Only 30.6 million (31.8%) of men 20 to 74 were considered to have a healthy weight. The fallout from such a fatness factor is that more men are dying each year of heart disease and related illnesses and more money than ever is being spent on health care (to say nothing of how poor male health affects the women and children who depend on the men in their lives). Another cheeseburger, guys?

Those numbers, though shocking at first, shouldn’t be that surprising. As a gender, men are more vain, ego-driven and stubborn than women. How does this manifest itself when it comes to wellness? Until a man is hit with his first health crisis, no matter what the age, he thinks he’s indestructible.

That’s why it’s so difficult to convince men to get regular medical checkups (which they should do especially when they hit 50). It’s not that many American men aren’t trying to lose pounds. It’s just that they are a bit misguided in their efforts. Weight-conscious men really gravitated to the Atkins diet. Why? Because at the same time the plan says to cut carbohydrates and increase protein, it gives men carte blanche to eat mass quantities of high-fat “manly” foods like beef and pork. Trading pounds for clogged arteries doesn’t seem like a good deal.

So the time has come for all American men to turn their testosterone-driven energy into changing their nutritional lifestyle. We have to stop eating the same high-caloric and fat-laden foods we usually consume in large doses and start pursuing a diet based on variety, moderation and balance. It’s time to start eating “new” man food: the kind of foods that will make us feel (and look) like a new man.

Out With the Old

But before we can embrace the new, we must wean ourselves off the old, particularly the male habit of eating food in humongous portions. Easier said than done because all of us, men and women, have found it hard to resist the marketing power of super sizing. Who among us wants to feel like and idiot because we didn’t double the size of popcorn, soda or french fries for a mere 49 cents? But resist we must.

We also have to steer clear of the killer Fs-fried food and fat. New York-based nutritionist Annie Hauck-Lawson, PHD, RN, says that also requires willpower because fried foods can be addicting. “They taste so good and fat conveys a lot of flavor,” she admits. “So the best strategy is going cold turkey to get that taste off the palate.” Hauck-Lawson also suggests not beginning a meal with fried foods or fatty meats.

“The start of the meal is when you’re the most hungry so you’ll eat the most during the first course.” She says. “If you start most lunches and dinners with a broth-based soup or a big salad, you’ll load up on high-fiber, high nutrient foods rather than high-fat foods and you’ll be too full to eat the bad stuff. Besides, food can be broiled with herbs and spices instead of being fried and still be delicious.”

Nutritionists like Hauck-Lawson strongly advise men to eat more fiber-base foods, which means adding more fresh fruits and vegetables (about five servings a day), whole grains and beans to the diet. Fiber may not sound manly, but it aids digestion, reduces the risk of colon cancer by moving waste out of your system, supports healthy cholesterol levels and makes you feel full so you won’t gorge yourself on those super-sized portions.

Hydro Power

And when you’re eating all those nutritious and healthy new man foods, please don’t offset the benefits by washing it down with soft drinks. Did you know that a can of cola contains 39 grams of refined sugar, which is equivalent to seven teaspoons of the sweet stuff? Okay, we know what you’re going to say when we mention water as an alternative. B-O-R-I-N-G! But you can’t ignore a liquid that is crucial to your hydration, digestion and metabolism. If you must drink something interesting with your meal, try an organic red wine, which can have a positive effect on cholesterol and blood pressure. (When the liquid is the meal, a smoothie can fill the bill.)

During and after your transitional phase into the new man food lifestyle, nutritional supplements can ensure that you get enough vitamins and minerals from your diet. And to women, smart is sexy.”

    Studies

    Research has revealed that a number of herbs and
    spices have insulin-like activity.2 In a study by the U.S.
    Department of Agriculture (USDA), cinnamon demonstrated the
    greatest ability to stimulate cellular glucose metabolism among
    49 botanicals tested.3

    In a 2001 study, researchers at the
    USDA's Human Nutrition Research Center showed that bioactive
    compounds in cinnamon trigger an insulin-like response in fat
    cells.4 These compounds stimulated glucose uptake into cells and
    increased glycogen (stored glucose) production via activation of
    the enzyme, glycogen synthase.

    The bioactive compounds in
    cinnamon appear to potentiate insulin activity at the level of
    the cell receptor for insulin. It has been shown that insulin
    resistance involves down regulation of “insulin signaling”
    characterized by dephosphorylation of the receptor.5 Enzymes
    called “protein tyrosine kinases” (PTPases) are believed to
    decrease receptor phosphorylation, and increased PTPase activity
    has been observed in insulin resistant rats.6 Cinnamon compounds
    have demonstrated the in vitro ability to inhibit PTP-1 and
    increase autophosphorylation of the insulin receptor.7

    In a
    recent animal study, cinnamon (cassia) extract was administered
    to rats for three weeks. Following this, the rats were infused
    with insulin and glucose to assess their insulin response.
    Increased phosphorylation of the insulin receptor was observed
    in skeletal muscle of these rats, suggesting that cinnamon has
    the ability to potentiate insulin function by normalizing
    insulin signaling, leading to improved uptake of glucose into
    skeletal muscle.8

    Until recently, the precise molecular
    structure of the bioactive compounds in cinnamon had not been
    clearly Defined. The USDA has now determined that the bioactive
    compounds in cinnamon are water-soluble procyanidin Type-A
    polymers of catechin and epicatechin. In a 2004 study, type-A
    polymers were isolated from cinnamon and characterized by
    nuclear magnetic resonance and mass spectroscopy. Type-A
    polymers were found to increase in vitro insulin activity by a
    factor of 20. Type-A polymers also exhibited antioxidant
    activity, as measured by inhibition of free radical production
    in platelets. These results suggest that, in addition to
    regulating glucose metabolism, cinnamon may help protect cell
    membranes by controlling the lipid peroxidation associated with
    disruptions in insulin function.9

    HUMAN CLINICAL TRIALS

    The effect of cinnamon on glucose and blood lipids
    levels on people with type 2 diabetes was tested in a recent
    randomized, placebo-controlled trial. A total of 60 subjects
    were divided into six groups administered 1, 3, or 6 grams of
    cinnamon daily, in 500 mg capsules, or equal numbers of placebo
    capsules.

    The cinnamon or placebo capsules were consumed for
    two periods of 20 days each. Serum glucose, triglyceride,
    cholesterol, LDL cholesterol and HDL cholesterol were measured
    after 20 days, 40 days and again at the end of a 20-day wash-out
    period, during which neither cinnamon nor placebo was
    consumed.

    In all three cinnamon groups, statistically
    significant reductions in blood glucose levels occurred, with
    decreases ranging from 18 to 29 percent. Interestingly, glucose
    levels remained significantly lower after the 20-day wash-out
    period (60 days from the study start) only in the group that
    took the lowest cinnamon dose (1 gram daily). The placebo groups
    showed no significant changes.

    Decreases in triglyceride
    levels ranging from 23 to 30% were observed in all three
    cinnamon groups after 40 days. When the study ended at 60 days,
    triglyceride levels remained lower than at the study start in
    the 1 and 3 gram cinnamon groups, but not in the group taking 6
    grams daily. Cholesterol reductions also occurred with the three
    cinnamon doses, with decreases ranging from 13 to 25% that were
    maintained at the study end. For LDL, the 3 and 6 gram cinnamon
    groups showed significant reductions from 10 to 24%, while in
    the 1 gram cinnamon group, non-significant reductions occurred
    after 40 days; LDL levels continued to decrease, reaching
    statistical significance at 60 days. With respect to HDL,
    significant increases were seen only in the 3 gram cinnamon
    group after 20 days; non-significant changes occurred in the 1
    and 6 gram groups after 40 days.

    The overall results of this
    trial demonstrate that cinnamon exerts a beneficial effect on
    blood glucose and lipid levels in people with type 2 diabetes,
    at daily intakes of 1 gram, and that this low dose is equally
    efficacious as are the higher doses of 3 and 6
    grams.10

    Safety

    The various species of cinnamon are
    classified as GRAS (generally regarded as safe) herbs.11 The
    Botanical Safety Handbook lists Cinnamomum cassia a “Class 2b”
    herb; not to be used during pregnancy.12 The water-soluble
    cinnamon extract is largely free of the lipid-soluble components
    of cinnamon most likely to be toxic at high dose of cinnamon and
    long-term consumption of the herb.9

    Characteristics of Cancer Cells

One type of molecule cancer cells have in excess is galectin-3. Galectin-3 molecules function as "hands" and help cancer spread. First, they are important in reaching out and stimulating growth of new blood vessels; this allows the cancer to obtain the blood flow and nutrients it needs to grow out of control. Second, galectins allow cells that break off from the primary tumor to clump together in the blood stream, enabling them to move to new sites. Third, the galectin hand can grab hold of the new location and complete the metastasis, or spread, of the cancer.

    MCP Blocks the Spread and Growth of Cancer Cells

    Modified citrus pectin is a natural substance that can bind to galectin molecules and block their spread and growth. Early research on prostate cancer showed that oral administration of MCP to rodents resulted in a dramatic reduction in prostate cancer metastasis to the lungs. More recent research by the same scientists extended MCP protection to breast and colon cancer, and showed that MCP blocks primary tumor growth and formation of new blood vessels.

    Successful Clinical Trial

    A commercially available form of modified citrus pectin was developed in response to the positive animal studies and tested in men with prostate cancer. A pilot trial using MCP at 15 grams a day and a subsequent phase II trial both showed that MCP slows prostate cancer progression, as evidenced by a reduction in the rate of PSA rise. PSA (prostate-specific antigen) is a protein made by the prostate gland; elevated PSA blood levels may indicate prostate cancer. The phase II trial, published in Prostate Cancer and Prostatic Diseases (Dec 2003), involved men who at first experienced successful primary conventional treatment; subsequently their PSA again began to climb, representing cancer recurrence. Seventy percent of these men showed a significant reduction in the rise of their PSA climb! Because of the mechanism of action, it is expected people with other cancers (leukemia, breast, colon, lung, nasopharyngeal, brain, lymphoma, melanoma and others that express galectin molecules) also would benefit from MCP.

    MCP Chelates and Removes Toxic Metals

    Heavy metals, in conjunction with environmental toxins and xenoestrogens, constitute a dangerous insult to the body through DNA damage, hormonal modulation, immune suppression, oxidative stress, and hyper inflammation. The metal chelation properties of MCP (Eliaz, U.S. patent #6,462,029) have been confirmed in a recent pilot trial. In healthy individuals, MCP increased urinary excretion of the toxic metals mercury, cadmium, arsenic and lead. In addition, longterm administration of MCP has been shown to reduce the body burden of heavy metals such as mercury, arsenic, lead, and nickel. MCP's ability to remove heavy metals and environmental toxins on an ongoing basis may significantly benefit people with cancer and other diseases involving immune dysfunction.

    Clinically Validated MCP

    Only one form of MCP has been validated in human clinical trials. This is important since no other MCP on the market matches the chemical specifications of the clinically validated product. If the molecular weight of MCP is too high it can't be absorbed into the bloodstream. If it is too low it won't effectively block galectin sites. Another property, the degree of esterification, must be below 5% for optimal binding. The most effective specifications were Defined by cell culture studies and remain a trade secret. If you want the effects seen in the clinical studies, you must take the preparation used in those studies, at the recommended dose of 15grams/day.

    For over 50 years, the federal government has produced Recommended Daily Allowances (RDAs) as guidelines for vitamin and mineral intake. Then, in 1993, the Reference Daily Intakes (RDIs) superseded the RDAs. By applying this new designation, the government's guidelines are now supposed to represent the designated amounts that an average person should consume. With this in mind, and the fact that many experts think you should consume more than some of the RDIs, how does your nutritional scorecard add up? Answering a few nutritional questions can point you in the right direction.

    Perfect Protein

    Are you trying to lose weight? If you are, the latest thinking on weight loss opines that eating more protein may be the key to keeping your weight down. Two recent studies published in the Annals of Internal Medicine (5/18/04) found that people who ate a low-carbohydrate, high-protein diet lost more weight and had better cholesterol levels than dieters who ate fewer fatty foods. Both studies found that a low-carb diet can improve your triglycerides (blood fats) and boost your HDL, or good, cholesterol.

    Eating protein satisfies both tummies and taste buds. Researchers have found that the amount of protein eaten in a meal determines not only how much food you eat but also how satisfied you feel after eating (J Nutr 2004 Apr; 134(4):974S-9S). And when you feel satisfied after eating less food you improve your odds of losing weight.

    We need about 50 grams of protein a day to support the body's functions. The best sources of protein are eggs, meat, milk, protein shakes and yogurt.

    Classy Carbohydrates

    Does your energy level go up and down during the day? To get off the energy rollercoaster, cut down on carbohydrates, and make sure the carbs you do eat are complex.

    Carbohydrates have been getting some unflattering press lately. Yes, if you want to lose weight, you may want to go on a strictly low-carb diet. But for those not concerned with weight, carbohydrates are the principle source of energy for the body.

    What's more, even if you do restrict carbohydrates, you should still eat a tiny bit of them. Without some carbs in the diet your body cannot regulate protein or fat metabolism. According to Michael and Mary Eades, MD, authors of The 30-Day Low-Carb Diet Solution (Wiley), "Carbohydrates control insulin and insulin controls your metabolic health."

    So, make your carbohydrates count. Indulge in complex carbohydrates: whole grains, fruits and vegetables. In those foods, carbs are accompanied by fiber and larger amounts of vitamins and phytonutrients. Other reliable sources of complex carbohydrates are whole wheat bread, brown rice and oatmeal.

    Fabulous Fiber

    Are you concerned about your heart health? Fiber from beans, oats, legumes, nuts, rice bran, fruits and vegetables helps stabilize blood sugar and reduce cholesterol. Pectins, found in apples, pears, prunes and plums, are a particularly useful form of water-soluble fiber.

    Insoluble fiber, in cereals, wheat bran and vegetables, reduces the risk of colon-related problems. In addition to adding fiber to the diet, dried beans and soybeans have been shown to lower cholesterol, improve vascular health and kidney functioning, preserve bone mineral density and reduce menopausal discomforts (AJCN 1999 Sept; 70(3 suppl):464S-74S). Fiber also promotes good bowel health and encourages the growth of beneficial intestinal flora.

    You need 25 to 40 grams of fiber daily. If you have cut back on your carbohydrates, be sure to take a reliable fiber supplement.

    Fantastic Fats

    Do you have problems focusing on mentally challenging tasks? If so, you should eat more fish and get more of the omega-3 fatty acids that fish and flax contain. Higher levels of this type of fat have been linked to better concentration while performing demanding intellectual work (Lipids 2004 Feb; 39(2):117-23).

    Fats add flavor to food, making meals taste better. Monounsaturated fats like plain olive oil and canola are liquid at room temperature and are suitable for use in cooking at high temperatures. Researchers have found that a diet high in monounsaturated fat has the ability to decrease LDL (bad) cholesterol (J Nutr 2001; 131:1758-63). Other fats, such as extra virgin olive oil and flaxseed oil, are best used in dishes that don't need cooking, such as salads.

    Although the RDI for fat is less than 30% of the total calorie intake, some researchers believe that if you eat healthy fat, eating too much is not a concern. Omega-3 fats are available in supplement form.

    Wonderful Water

    Do you suffer from dry skin? You may not be drinking enough water. This precious liquid is used by every cell of our bodies and makes up 60% to 75% of our body weight. Water is important for kidney function. Researchers in Italy found that drinking adequate amounts of water can help prevent the formation of kidney stones (Urol Int 2004; 72 Suppl 1:29-33).

    Your activity level, environment and diet influence how much water you need daily. Try to drink at least eight cups of fluid a day from noncaffeinated, nonalcoholic sources.

    Voluptuous Vitamins

    Do you exercise frequently? If you do, you need more antioxidant vitamins like natural vitamin E and vitamin C as well as a healthy supply of carotenoids. A study at the School of Applied Medical Sciences and Sports Studies, University of Ulster, found that exercisers need more antioxidants. Otherwise, their exertion may release an excess number of free radicals (caustic molecules) in their bodies and do damage to the heart arteries and other internal organs.

    Vitamins, in general, are Defined as micronutrients that are necessary for life. They are necessary for the production of energy, a healthy immune system and hundreds of other functions in the body.

    Vitamins aren't the only substances that produce big benefits in small quantities. Phytonutrients are chemicals in plants that have health-promoting properties. These nutrients are getting more and more attention from researchers who are keeping score on our nutritional requirements.

    Mineral Crunch

    Do your meals contain plenty of calcium? If not, you may need supplements to keep your bones strong and help keep your weight down. One study, presented at the Experimental Biology 2003 meeting in San Diego, found that young women who consumed more calcium had better luck controlling their weight. In this research, it didn't take much calcium to make a difference in waistlines. Consuming just one more serving daily (a cup of milk or a thumb-sized piece of cheese, each of which contain about 300 mg of calcium) made, on average, about a two-pound difference.

    In addition, many experts recommend multimineral supplements (along with multivitamins) to promote better health. A recent study of people with immune problems, for instance, found that those kinds of supplements seem to help boost the immune system (AT News 2004 Feb 27; 398:4-5).

    Do you or don't you read food labels when you shop? If you don't, you're missing out on a prime source of information about your meals. If you want control of your health, focus on package labels and pick your foods carefully.

    The large print on food labels focus on what are called macronutrients: carbohydrates, fat and protein. Some of the smaller categories convey information about vitamins, fiber, and minerals, as well as the totals of fat and saturated fat contained in food. So, you have no excuse for claiming ignorance about your diet: the truth is in the labels.

    Food labels can be confusing to the uninitiated. Go into a big food store and you can be faced with what seems to be a forest of food information: more than 15,000 labels. Add to that fact that every year more than 30,000 new food products can be introduced to the marketplace, and what you're faced with is a jungle of food labels.

    That overwhelming wealth of food label information doesn't mean you should throw up your hands in dismay and give up reading and deciphering labels. You should arm yourself against that sea of labels with knowledge and, by understanding them, end your confusion and build your health.

    Label History

    A hundred years or so ago, food labels were only required to list the name of the food contained inside the package. The contents, quality and processes used to make the food were often a mystery. Little or no disclosure to consumers was made about how their food was created.

    By the early 1920s, the federal government, via the Food and Drug Administration (FDA), began requiring food companies to list the net weight of food on labels as well as the names and addresses of food processors and distributors. Finally, by the 1970s, listing basic nutritional information was mandated in a uniform way so that shoppers could have some basis for comparing foods. Then, in 1990, the Nutrition Labeling and Education Act made major alterations to the kinds of labels that had to be included on food packages.

    The FDA and the US Department of Agriculture (USDA) required significant changes to food labels that were supposed to make it easier for consumers to eat healthier diets. The labels requirements of 1994 included five major changes:

  • • The nutrition information on the label had to be printed in larger, more legible type.
  • • This condensed information had to be on the back or side of food packaging and titled as "Nutrition Facts." This type of information is also shown in grocery stores near the fresh food displays of fish, fruits and vegetables.
  • • The label had to include a column of information tagged as the "% Daily Value," designed to help consumers understand how the food could fit into a healthy diet.
  • • Each label had to include information about fat, cholesterol, fiber, sugar, calories from fat, and other information relevant to designing a healthy diet.
  • • The computed serving sizes were supposed to be more realistic and reflect the amount of food people actually eat at one sitting.

    Label Questions

    Consumer questions regarding food labels have led researchers to look into ways to help shoppers comprehend what food labels tell them. These studies are designed to help consumers match up their nutrition requirements with the foods they buy.

    For instance, at the University of Illinois at Urbana-Champaign, scientists have devised a label tool called See It, Do It, Teach It to help people improve their diets through comprehension of food label information. " One of the goals of the project was to help...teenaged girls and menopausal women understand how they can get the daily requirement for calcium into their diet in order to help prevent osteoporosis," says Karen Chapman-Novakofski, PhD, associate professor and nutritionist in the school's College of Agricultural, Consumer and Environmental Sciences.

    According to the See It, Do It, Teach It program, you should think of food labels as consisting of two sections:

  • • Food items you should limit: total fat, saturated fat, cholesterol, sodium and, if you're eating a low-carb diet, total carbohydrates
  • • What you may need to increase: vitamin A, vitamin C, calcium and iron

    " Much more attention has been paid to what people should limit rather than the nutrients needed. The average consumer doesn't know, for instance, how much vitamin A 10% of the Daily Value is, or how much calcium 25% of the Daily Value is," Dr. Chapman-Novakofski says.

    Upping Calcium Intake

    In their eight-week study of people's calcium consumption (Journal of Nutrition Education and Behavior 4/04), the University of Illinois research team found that people didn't know how much calcium was in the food they ate.

    After the initial part of the study, in which participants were shown how to look for calcium on labels, "the post-test revealed that the participants significantly increased their calcium intake to 821 mg per day, up from 372 mg per day," notes Dr. Chapman-Novakofski.

    " That's a lot closer to the daily requirements of 1,200 mg per day for men and women over 50, 1,000 mg for men and women aged 19 through 50 and 1,300 mg per day for [youths aged] 9 to [18] years," she adds.

    Parts of the Label

    The first item at the top of a nutrition food label tells you the portion size that the label measures. An important point to remember: these sizes are determined individually by each manufacturer. Consequently, all of the other values on the label are measured per portion.

    So, if you are comparing foods made by two different companies that employ very different portion sizes in their nutritional calculations, your label comparisons may be complicated.

    Another fact to be aware of: the listed portion size may be an odd division of the food within the container and not reflect a common-sense division. For instance, some food packages are labeled as containing 2.5 portions.

    And, to make things even more interesting, small boxes of candy that you might think contain barely enough for one helping may be labeled by the manufacturer as having two or more portions. As a result, if you eat the whole box, you often have to at least double the number of indicated calories, etc. to figure out the nutrients and calories you are consuming.

    The section of the label that notes calories, calories from fat and percent daily values is listed under the portion size. Here you are told how many calories you consume when you devour one portion and how many of those calories are derived from fat.

    This label focus on fat originated when consumers and dietitians were very concerned about Americans' fat consumption and hadn't yet switched their focus to carbohydrate consumption as a prevalent dietary health priority.

    Also included on the label: the daily value percentages aimed at showing you how much out of a total day's intake of various nutrients a portion bestows upon you.

    These percentage numbers are based on a theoretical analysis of a diet that contains 2,000 or 2,500 calories a day. (A notation at the bottom of the label tells you whether the calculation is based on 2,000 or 2,500.)

    Carb Facts

    If you've been eating a low-carb diet (or are planning this type of diet), the section of the label that lists carbohydrates may be especially useful. Under this heading, the label lists the totals for fiber and sugar.

    No matter what diet you are on, dietary fiber is desirable, since it represents indigestible carbohydrates that both pass through you without conveying any calories and keep beneficial bacteria in your digestive tract healthy.

    Most people want to limit their sugar totals, however, since this nutrient may raise your risk of being overweight and, when you eat a lot of it, may contribute to immune problems.

    Interestingly enough, when food chemists compute what is in food, they perform lab tests known as assays to distinguish its ingredients. (The manner in which these tests are performed are very strictly regulated by the FDA.)

    In fact, just about every nutrient listed on a food label is determined by laboratory test except for the carbohydrate content: the amount of water, fat, crude protein and ash are determined this way. But the total carbs are computed by simply subtracting the total of the other ingredients from the total amount of food, a kind of process of elimination.

    So while fat and protein are measured with precise lab tests, carbohydrate totals are figured by the leftovers. (The water and ash, by the way, are not usually listed on food labels.)

    Within the general carbohydrate group, are several categories of carbohydrates that produce very different effects in your body. These categories can be divided into sugar, sugar alcohols, dietary fiber and a collection of various chemicals that include organic acids, flavonoids, gums, lignans and others.

    According to the FDA, the food label only has to list the total carbs, sugar and dietary fiber. But some food companies now list things like sugar alcohols.

    Blood Sugar Effects

    Not all of these types of carbohydrates behave the same way in your body. For example, when your body digests table sugar, it turns immediately into blood sugar. So sugar and most other carbohydrate is what we call "digestible carbohydrate." Other carbs, such as sugar alcohol or glycerine, can be digested but do not turn to blood sugar. Still others, such as dietary fiber, are indigestible and pass through your body without impacting your blood sugar level.

    To date, the FDA has not focused on these important biochemical differences and treats all carbohydrates alike. This means that when you look at a food label, you do not see a number for the carbs that impact your blood sugar level. To do so, simply subtract the number of grams of fiber from the total number of carbohydrate grams.

    Net Carbs

    Recently, the phrases "low carb," "net carb" and "impact carbs" have begun to appear on food labels. These are not Defined by the FDA; they were put on labels by by companies to help consumers pick out foods that are acceptable on low-carb diets. To arrive at the total of net carbs, food companies subtract the total amount of fiber and sugar alcohol from the total carbohydrates.

    Fiber Calculations

    Since the body cannot digest fiber, this nutrient (which is still important for good health) is not calculated into the total amount of carbohydrates. As for sugar alcohols, while-technically speaking-these are carbs and they do have calories, they have little effect on blood sugar and usually are not counted in total carbohydrates.

    According to the American Dietetic Association, people with diabetes who are managing their blood sugars using the carbohydrate counting method should "count half of the grams of sugar alcohol as carbohydrates since half of the sugar alcohol on average is digested.

    " Fiber is not digested, however. If the serving of food has more then 5 grams of fiber one should subtract the grams of fiber from the total carbohydrate grams." As you can see, when it comes to food, as in most things, knowledge is power. If you want power over your health, you need power over the food you eat. The road to that power is by reading food labels. What's in the food you're eating every day may surprise you.

    What's in your food, and where does it come from? To most American consumers, that question may seem unimportant. But the answers might surprise you. Your food's origin and processing can make a big difference in its nutritional value, for better and for worse. Increasingly, concern over the quality of food and its influence on health are persuading shoppers to take a greater interest in their food. The result: More visits to natural food stores and more sales of organic food.

    Once upon a time, food used to be just food. Crops were grown on family farms, and animals were raised in barnyards. But today, corporations have conquered food production in a big way. Agribusiness is just that-a big business in which animals and plants are treated like assembly-line items and raised on factory farms.

    Organic Regulation

    While the term "organic" gets tossed around endlessly in the media, the term is often misconstrued. According to the United States Department of Agriculture (USDA), "Organic food is produced by farmers who emphasize the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations. Organic meat, poultry, eggs and dairy products come from animals that are given no antibiotics or growth hormones."

    In addition, organic farmers generally do not use pesticides, sewage sludge or synthetic fertilizers. This type of food is also produced without genetically modified organisms and is not subject to radiation used to zap the bugs on food. Today, USDA-approved certifying agents inspect the farms where organic food is raised to ensure organic standards are followed. In addition, the companies that process food and handle organic food have to be USDA-certified. Meeting these standards allows companies to use the USDA's organic label on foods that are at least 95% organic in origin. Labels for foods that contain between 70% and 95% organic content can use the words "Made With Organic Ingredients," but cannot use the seal.

    Solid Nutrition

    While the debate over the nutritional benefits of organic food has raged for decades, recent research is beginning to turn up evidence that organically grown fruits and vegetables may contain extra helpings of vitamins and other nutrients. A study at Truman State University in Kirksville, Missouri, found that organically grown oranges contain more vitamin C than conventional supermarket oranges (Great Lakes Regional Meeting, Amer Chem Soc, 6/02).

    Theo Clark, PhD, the Truman State professor who investigated the organic oranges, says that when he and his students began their research, "We were expecting twice as much vitamin C in the conventional oranges" because they are larger than organic oranges. To his surprise, chemical isolation combined with nuclear magnetic resonance (NMR) spectroscopy revealed that the organically grown oranges contained up to 30% more vitamin C than the conventionally grown fruits-even though they were only about half the size. "We speculate that with conventional oranges, (farmers) use nitrogen fertilizers that cause an uptake of more water, so it sort of dilutes the orange. You get a great big orange but it is full of water and doesn't have as much nutritional value," Dr. Clark says. "However, we can only speculate. Other factors such as maturity, climate, processing factors, packaging and storage conditions require consideration."

    Dodging Pesticides

    If you want to avoid pesticide residues in your food, research shows that going organic can make it much less likely that you or your family consumes these unwanted chemicals. Research, for instance, into the diets of children (Enviro Hlth Persp 3/03) shows that dining on organic fruits and vegetables, and organic juice, can lower kids' intake of pesticides.

    These scientists took a look at the organophosphorus (OP) pesticide breakdown products in the blood of kids ages two to five who ate conventional supermarket produce and compared it with the OP found in organic kids.

    The children on the organic diet had less OP in their blood than the other kids. As a matter of fact, the children on the conventional diet had six times the dimethyl metabolites, dimethyl being a pesticide suspected of affecting nerve function and growth. "Consumption of organic produce appears to provide a relatively simple way for parents to reduce their children's exposure to OP pesticides," note the researchers. "Organic foods have been growing in popularity over the last several years," says Jim Burkhart, PhD, science editor for the journal that published the study. "These scientists studied one potential area of difference from the use of organic foods, and the findings are compelling."

    GMO Development

    On the way to tonight's dinner, researchers have created genetically modified organisms (GMO), plants and animals that have been transgenically engineered. In the food world, that means organisms containing genes inserted from another species. Chances are if you eat food purchased at the typical supermarket, those comestibles contain GMO ingredients. In the United States, food companies are not required to label for GMO content.

    A growing number of American consumers are upset about not being told about the GMO products in their food. But industry scientists, worried that informed consumers may someday turn their back on GMO foods, consider consumer ignorance to be an acceptable state of affairs.

    For instance, the American Society of Plant Biologists (ASPB) is fighting regulations that would require GMO labeling. According to ASPB President Daniel Bush, PhD, of the University of Illinois at Urbana, "The language...(in these types of regulations) is based on a system of beliefs of what is 'natural,' rather than a scientifically Defined set of criteria focused on content and nutritional value. This is a radical departure from food labeling up to now, which is designed to maximize useful information for consumers concerning what is in the food they are buying."

    Dr. Bush continues, "There are, of course, examples of voluntary labeling standards in the food industry that reflect how foods are processed, such as organic foods. The voluntary organic labeling standards were sought by the organic food industry. Kosher foods are also labeled as having been produced in accordance with specific beliefs. However, mandatory labeling of targeted production methods has never before been required and we believe would obscure rather than clarify important issues of food safety."

    In other words, Dr. Bush opposes GMO labeling because he feels it would unnecessarily stigmatize GMO food items. Others are not so sanguine about the safety of GMO foods.

    GMO Objections

    The arguments against GMO foods include:

  • * The genes from GMO plants may end up in weeds and other unintended species, creating superweeds that will be difficult to eradicate. Animals, such as fish on fish farms, may interbreed with animals in the wild and cause harmful changes.

  • * People may grow ill or die from unexpected allergies to GMO foods (NEJM 1996; 334(11):688-92).

    These types of risks have motivated industry groups to urge more regulation of GMO crops. The Food Marketing Institute, the Grocery Manufacturers of America (GMA) and the National Restaurant Association, plus seven other food groups, are worried that GMO plants grown to produce pharmaceutical drugs could contaminate the food supply and destroy consumer trust in food.

    Mary Sophos, a vice president of GMA, warns, "To minimize the possible risks, a clear system of regulatory enforcement and liability needs to be in place. Until then, no permits for new field trials or for commercialization should be issued because there is no room for trial and error."

    These food industry groups have voiced their concerns to the Food and Drug Administration (FDA) and the USDA. Last year, the USDA forced ProdiGene Inc., a biotech firm, to dispose of 500,000 bushels of soybeans contaminated with a drug meant to treat diabetes. What are the chances of more GMO accidents?     Most folks wouldn't seek the distressing distinction of suffering chronic fatigue syndrome. Aside from a dizzying array of discomforts associated with the malady, the lack of a definitive cause, and few remedies offered by the medical establishment, scornful skeptics lob accusations of laziness or boredom or just plain moodiness. "Snap out of it!" they say, with little sympathy or understanding. "Just get moving!"

    But if you're one of more than 3 million Americans affected by chronic fatigue, you know your problem is not all in your head. Your symptoms are real and they extend far beyond mere tiredness. In addition to a debilitating sense of fatigue that can make everyday existence feel like an overwhelming struggle, you may suffer from impaired concentration and memory, recurrent sore throats, nagging headaches, muscle and joint pain, swollen lymph nodes and fitful sleep. The persistence of any one of these effects alone could be debilitating, but the overall diminished capabilities of the chronic fatigue sufferer can become the most discouraging aspect of the disease.

    But before you give up hope on kicking this energy-sucking ailment, look to natural ways to boost your immune system and regain your stamina for a more healthy and productive life. New research points to powerful, energy enhancing supplements which, combined with a nutritious diet and stress reducing techniques, can help you reclaim your body from a swamp of sluggishness.

    Yuppie Flu?

    Part of the public's misconceptions about chronic fatigue syndrome (CFS) may stem from vague definitions of exactly what it is and its causes.

    In the '80s, CFS was often mentioned in the same breath as the Epstein-Barr virus, which garnered much notoriety as the "yuppie flu": a state of chronic exhaustion that often plagued young, overworked professionals, as the media trumpeted. CFS was initially thought to be the result of the Epstein-Barr virus, and the two were often considered to be the same thing. Since the Epstein-Barr virus causes mononucleosis, the term "chronic mono" was also thrown around to refer to long-lasting states of fatigue.

    Today, CFS is Defined as a separate disorder from the Epstein-Barr syndrome. Researchers have found that CFS is not caused exclusively by the Epstein-Barr virus or any other single infectious disease agent. According to the Centers for Disease Control (CDC) in Atlanta, CFS may have multiple causes, in which viruses or other infectious agents might have a contributory role. Some of these additional possible culprits include herpes simplex viruses, candida albicans (yeast organisms), or parasites.

    According to the CDC, a person can be definitively diagnosed with CFS when she or he experiences severe chronic fatigue for six months or longer that is not caused by other medical conditions, and must have four or more of the following problems recurrently for six consecutive months: tender lymph nodes, muscle pain, multi-joint pain without swelling or redness, substantial impairment in short-term memory or concentration; sore throat, headaches, unrefreshing sleep and postexertional malaise lasting more than 24 hours.

    Even if you are not diagnosed with CFS, you could still probably use some help in fending off fatigue. You may suffer from another poorly understood condition like fibromyalgia, which causes similar symptoms of exhaustion and pain with additional stomach discomfort. You may cope with another ailment like hypoglycemia or low thyroid function that zaps your energy. Or you could be like almost every stressed-out American adult trying to do it all at the expense of your well-being. Though researchers still search for a definitive cause for CFS, one thing is certain: Constant stress and poor nutritional habits weaken the immune system's ability to ward off a host of debilitating viruses and organisms. So before you run yourself down and succumb to a chronic condition, learn how you can build up your defenses now.

    Some of the most exciting new research in CFS treatments focuses on NADH or Coenzyme 1, an energy-enhancing nutritional supplement. This naturally-occurring substance is present in all living cells including food, although cooking destroys most of it. Coenzymes help enzymes convert food and water into energy and NADH helps provide cellular fuel for energy production.     "You get more energy from juicing," she explains, "more accessible nutrients and carbohydrates that are not bound up in fiber." Brett's additional recommendation: oatmeal.

    "It's got protein and carbohydrates combined with a lot of minerals, which you may not get from a sugary cereal," she says. "Sure, they spray some vitamins on them, but if you don't drink the milk in the bottom of the bowl, you'll miss out on them. You might as well take a multivitamin."

    Fabulous Fiber

    Look to fiber for superior energy enhancement.     Kumquat juice is supposed to help clear up bronchitis. Lemon juice with a pinch of table salt eases a sore throat. Lime juice in warm water soothes aches and cramps from the flu. Tangerine juice can break up mucous congestion in the lungs. Along with citrus' vitamin C, these fruits also supply carotenoids, antioxidants that provide disease-preventing benefits. Citrus also often contain calcium, potassium, folate (a B vitamin that fights against heart disease), iron and fiber.

    Fruits are loaded with phytochemicals, naturally occurring chemicals that give fruit their vibrant colors. Yellow, red and orange fruits are also high in flavonoids, like quercetin, a substance which fights cancer. Quercetin also aids in prevention of cataracts and macular degeneration, according to author Stephanie Beling, MD, in her book Power Foods (Harper Collins).

    Even the US Department of Agriculture agrees on this flavonoid's benefits, noting in its phytochemical database that quercetin is an "antitumor promoter, antiasthmatic, anticarcinogenic, antiplaque, cancer-preventive, capillariprotective." (Quercetin is also available as a supplement.)

    Don't Avoid Avocados

    For a vitamin rich food, few items beat the avocado which holds vitamins E and C as well as some B vitamins (B6, niacin, riboflavin). A significant source of beta carotene, though not nearly as much as carrots or sweet potatoes, avocados also contain high amounts of the minerals potassium, magnesium, copper and zinc.

    Just 15 grams of avocado delivers about 81 international units of vitamin A as beta carotene. Beta carotene, a carotenoid in fruits and vegetables, is converted to vitamin A in the body. This vitamin, aside from providing antioxidant protection from damaging free radicals, is necessary for good eyesight, healthy skin and healing.

    In addition, the avocado, like all of these healthy foods, tastes great. Which means that you can pep up and not have to sacrifice taste for zest.

    Almost by definition, life is composed of cells, and cells are Defined by membranes. One theory suggests that, around four billion years ago, self-replicating molecules, similar to the ribonucleic acid or RNA in our own cells, were synthesized from organic molecules. These self-replicating molecules adapted to changes in their environment to increase their potential for survival. Thus began the process of evolution that has led, over the eons, to us. One turning point was when these molecules developed membranes - envelopes which could help concentrate chemicals needed for the cell's survival. There existed in the "primordial soup" substances uniquely suited to this purpose: a class of organic compounds we call lipids . Lipids are more commonly called fats, and in this health and image-conscious age people often think of them as something to be avoided. However, the word fat refers to a variety of substances with a diverse range of chemical properties, which are essential for survival and well-being . The simplest lipids, fatty acids such as palmitic acid, consist of a hydrocarbon "tail" connected to a carboxyl group (COOH). The majority of lipids in food and in the human body occur in the form of triglycerides - a molecular configuration in which three fatty acid chains are attached to a 'backbone' of glycerol (an organic alcohol composed of a 3-carbon chain with an alcohol group attached to each carbon). The major roles of lipids can be described as energy and storage, structural, and metabolic.

    Energy and Storage

    Molecules can contain more or less chemical energy. In living systems most of the energy needed to drive chemical reactions is derived from oxidation. Oxygen, the ultimate electron acceptor, is a strong oxidant: it has a marked tendency to attract electrons, becoming reduced in the process. When a molecule undergoes a chemical reaction from a high-energy reduced state to a low-energy oxidized state, energy is released. This is what happens in a fire: the high-energy carbohydrates in wood, such as glucose, react with oxygen, releasing heat and the low-energy molecules of carbon dioxide and water. This is similar to what happens in metabolism.

    Most of the carbon in a fatty acid chain is highly reduced, which makes fats more energy-rich than the other organic molecules that can be burned as food. This is what we mean when we say fats are high in calories - a measure of the amount of energy released when a substance is oxidized. Fats contain more than twice as many calories as carbohydrates. This makes fats an important storage fuel for most of the body.

    Structure

    Another important class of lipids in the human body consists of the phospholipids. Like triglycerides, phospholipids contain fatty acid chains- in this case two, one saturated and one unsaturated, attached to a glycerol backbone. Unlike triglycerides, in phospholipids the third carbon of the glycerol molecule is attached to a phosphate (a molecular group that contains phosphorus and oxygen), which is in turn attached to either an amino acid or, in the case of phosphatidyl choline, a molecule of the B-vitamin - like substance, choline.

    Their unique molecular structure makes phospholipids amphipathic, which means 'likes both':

  • The phosphate-containing head group is strongly dipolar (it has positive and negative charges and can mix with water, and thus is hydrophilic, which means 'water-loving').

  • The two fatty acid chains make up a long tail group which is nonpolar (it has no charge and cannot mix with water, and thus is hydrophobic, which means 'water-hating').

    Fats, being hydrophobic, tend to separate out from water. When fat is mixed with phospholipids in the presence of water, the phospholipid molecules attach themselves to the molecules of fat and bring them into the water solution, enabling the fats to dissolve in water.

    Phospholipids form a structure called a lipid bilayer, a two-ply sheet of phospholipid molecules in which the hydrophilic head groups face outward and are in contact with the water, and the hydrophobic tails face each other on the inside of the bilayer. This structure is one of the key constituents of the cell membranes that surround every living cell.

    The lipid bilayer of cell membranes is a fluid in which membrane-embedded proteins "float." These proteins serve a wide variety of different functions. Some are enzymes, serving to carry out chemical reactions in the adjacent solution. Some are involved in signaling, in which a biochemical action in a cell is 'commanded' by means of a hormone or some such other signaling molecule. Still others are involved in transporting substances across the membrane, into or out of the cell.

    The functions of membrane-embedded proteins are dependent on a very precise balance of phospholipids for their function. Phosphatidyl serine, for instance, has a negatively-charged head group that associates preferentially with a class of membrane-bound proteins called ATPases. ATPases regulate, among other things, the balance of sodium and potassium in intra- and extracellular fluids, a balance that is necessary for the integrity of our cells and also for the electrochemical impulses that make up our thoughts and feelings. Without phosphatidyl serine, these vitally important membrane-embedded proteins could not function.

    Cholesterol is a waxy substance that is essential to the structure of cell membranes, which depend for their function on a delicate balance between fluidity and solidity. Cholesterol provides a semifluid matrix, as well as enhancing membrane fluidity. About 80% of the cholesterol the body uses is manufactured by the liver; the other 20% is consumed in food. Elevated blood cholesterol levels are associated with heart disease. Saturated fats are converted into cholesterol more readily than unsaturated fats, and polyunsaturated fats usually depress blood cholesterol concentration to some degree. Researchers have thus recommended that people lower their consumption of saturated fats and increase their consumption of polyunsaturated fats. A process called hydrogenation , in which hydrogen molecules are added, is used to harden these unsaturated fats to create solid spreads, such as margarine. This process causes formation of altered fats called trans fatty acids. Although the results are not conclusive, human and animal studies have pointed to possible deleterious effects from consumption of trans - fatty acids, which are estimated to account for 5.5% of all fats consumed by Americans. These studies include one in men and women that showed harmful effects of trans - fatty acids on blood cholesterol ratios.

    Metabolic

    When each link of a fatty acid chain contains an atom of hydrogen, as in palmitic acid, that fatty acid is said to be saturated . If two carbon links are double bonded to each other, each has one less hydrogen atom, and the fatty acid chain is said to be unsaturated. If a fatty acid contains one double bond, it is said to be monounsaturated, and if it has two or more double bonds it is said to be polyunsaturated . Certain polyunsaturated fatty acids cannot be manufactured by the body and must be obtained from the diet. These nutrients are called essential fatty acids and are necessary for the normal function of all tissues. The essential fatty acids fall into two categories:

  • (1) Those with an unsaturated double bond between the 6th and 7th carbon in the chain, called omega-6 fatty acids, which include linoleic acid (LA), gamma-linolenic acid (GLA), and arachidonic acid (AA).

  • (2) Those with a double bond between the 3rd and 4th carbons, called omega-3 fatty acids, which include alpha-linolenic acid (ALA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA).

    In addition to being phospholipid precursors, essential fatty acids can be converted to a class of hormone like intracellular messengers called eicosanoids. The physiologic effects of eicosanoids are potent in minute quantities. Their effects are so powerful that they need to be produced near the site of their action and are quickly inactivated. The important eicosanoids include the thromboxanes, leukotrienes and prostaglandins (PGs ). Prostaglandin molecules consist of a five-carbon ring with two side chains. They can be distinguished from each other by numbers that refer to the number of double bonds in their molecular side chains: 1-series PGs have one double bond, 2-series have two double bonds, and so on. Prostaglandins mediate a variety of bodily processes, including inflammatory reactions, blood vessel contraction and dilation, and platelet aggregation. The different PGs have different effects on the body, and different essential fatty acids act as precursors for different PGs.

    Important essential fatty acids in humans are the omega-6 fatty acids, which include linoleic acid (LA), gamma-linolenic acid (GLA), and arachidonic acid (AA). 1-series PGs are derived from GLA and tend to cause blood vessels to dilate and reduce the stickiness of platelets (cell fragments in the blood that help initiate blood clotting). 2-series PGs are derived from arachidonic acid and tend to increase platelet stickiness and cause blood vessels to constrict. Meat and dairy products are dietary sources of the PG2 precursor, arachidonic acid; American diets tend to be rich in these foods. The rate-limiting step for production of GLA in the human body is an enzyme called delta-6-desaturase (D6D). The action of this important enzyme can be blocked by a number of different lifestyle factors, including a diet high in saturated or trans- fatty acids and chronic alcohol consumption. A modest increase in consumption of GLA will significantly increase the ratio of GLA to AA in the tissues, which may have a beneficial effect on the homeostasis of the cardiovascular system. Supplementation with omega-3 fatty acids, such as flaxseed oil or fish oil, is beneficial for similar reasons. Omega-3 fatty acids are precursors for 3-series PGs, which reduce platelet stickiness. Series-3 PGs also tend to inhibit conversion of AA into its metabolites, the 2-series PGs.

    The lipid composition of our diets has changed radically in the 20th century. Our intake of saturated fats has increased dramatically, and trans fatty acids, which did not exist before the advent of modern food processing technology, now form a major part of our diets. We eat less fish and green leafy vegetables, important sources of omega-3 fatty acids, than our ancestors did. Far from being an inert, homogeneous substance, fat is dynamic and varied - a subtle and interactive matrix for many of the biological processes taking place in our bodies, minute by minute.

    DNA Damage: Oxidants also can damage the cell’s DNA. Hydroxyl radicals cause DNA strands to break; if breaks occur in both strands of DNA, the cell cannot repair the damage and will die. Left unrepaired, DNA errors may be passed on when cells divide.
