Fructooligosaccharides, which shall henceforth be referred to as FOS for obvious reasons, are sugars with chemical linkages known as osidic covalent bonds that resist enzymic hydrolysisis, and so are broken down by neither the salivary nor the digestive enzymes. In other words, they are indigestible. However, before discussing the biochemistry further, let's have a look at what they can be used for. Your body depends upon certain bacteria for its health. Quercetin is one of the more powerful of the body’s antioxidants, and it can also be used to reduce the rate of histamine release by the body normally initiated by contact with an allergenic substance (for which your immune system has designed an antigen). We shall examine the biochemical mechanism which this is achieved, but first let’s have a closer look at quercetin and what it actually is. Quercetin is what is known as a phytochemical, which is simply the scientific name for a chemical that is naturally produced by plants. Other phytochemicals include vitamin C and omega 3 fatty acids, so the term is very broad ranging for any substance that is produced by plants. It is commonly known as a flavanol, one of a family of compounds known as flavonoids that give color to plants. It is a very active flavonoid, with very powerful antioxidant properties, in addition to acting as an anti-histamine and anti-inflammatory. Histamine is an amine released as part of the body’s immune response to allergenics, and quercetin inhibits its manufacture and release. This amine is an irritant and can itself cause inflammation and the other symptoms associated with allergies such as runny and itchy eyes, a stuffy nose, sneezing and itchy spots. Quercetin can be used to alleviate these symptoms by blocking the manufacture in the body of the histamine that causes them. It demonstrates other anti-inflammatory properties such as alleviating the symptoms of arthritis, and also helps to destroy free radicals in the body through its strong antioxidant properties, but before we discuss how it does this we shall have a closer look at the mechanisms used in its effect in inhibiting histamine. Calmodulin is a protein that is used to transport calcium ions, Ca++, across the membranes of certain cells in the body, and by doing so it helps to mediate a number of biochemical processes within the body, among them the immune response and inflammation. It should not be thought these are always unwelcome responses: on the contrary, they are the body’s way of reacting to foreign bodies and preventing more serious conditions from developing. However, there are instances where the body can become sensitized to certain substances and overreact to their presence leading to conditions such as hay fever or, considerably more serious, asthma. These are just two of the undesirable manifestations of the human immune system that we would be better without. What quercetin does is to prevent calmodulin from properly binding to certain enzymic proteins and so suppress the effect of these proteins. Among these are the enzymes that control the secretion of histamine from mast cells. Mast cells are found mainly in areas prone to injury and at the interface between internal tissues and outside world, such as the nose, mouth, lungs, eyes, blood vessels and feet. They contain granules rich in histamine that degranulate and released the histamine when the immune system detects foreign bodies such as pollen grains and dust mites, especially when the body has created antigens against them. Quercetin suppresses the release of histamine from the granules in the mast cells by preventing the degranulation. The release of the histamine is not completely halted, but its effects are reduced and quercetin is used in the treatment of asthma where it is believed to help reduce the symptoms by reducing histamine-induced swelling in the airways. A similar application of this flavonoid is in reducing the inflammatory response to arthritis, the main cause of the swelling of this painful condition. Your skin can also be affected by inflammation that is partially controllable by quercetin. Collagen and fibronectin biosynthesis is increased that help to maintain not only healthy joints, but also to speed up the healing of wounds and repair damaged nerves. It is also believed that quercetin can hold back the effects of aging on the skin, and slow down the formation of wrinkles. There are other applications of this versatile flavanol, including its effect on acute prostatitis where it reduces oxidative stress and the accompanying inflammation of the prostate gland. In fact, it is believed to have positive effect on many conditions caused by free radical oxidation and excessive reaction by the immune system causing inflammation. Apart from the allergies and arthritis previously referred to, quercetin is believed to have been effectively used in the treatment of gout, macular degeneration and heart disease, and it can also help to prevent the oxidation of low density lipoproteins (LDL) responsible for transporting cholesterol to where it is needed to repair major blood vessels. When these lipoproteins become oxidized by free radicals then the cholesterol associated with them tends to be excessively deposited in the arteries it is meant to be repairing, and lead to atherosclerosis. This condition can lead to heart failure or to strokes if the blood vessels are in the brain. Studies have indicated that the flavonoid might help to prevent certain cancers by preventing the nutrition of some types of cancerous cells, effectively killing them. Due to its phytoestrogen properties, quercetin can be used to bind to the sites in cancerous cells that are receptive to estrogen and so prevent their growth. Many types of cancerous cells need estrogen for their growth and proliferation, and phytoestrogens mimic the effect of this hormone. However, these are laboratory studies, and more work is required. More certain is the effect of quercetin on heart disease due largely to the aforementioned control of cholesterol deposition in your arteries, but also through its ability to strengthen the capillaries. However, when all things are considered, it is in the properties of this non-allergenic bioflavonoid to fight histamine release that it finds it’s most popular and effective use. So what is the best way to take quercetin? Like most bioflavonoids, it is available naturally in the majority of plant foods. Particularly rich sources are broccoli, red onions, red apple skins, black tea, red wine, red and purple berries and almost all dark green leafy vegetables. However, the name of the game these days is to take measured doses, and while you should continue to eat these foods, you can also receive controlled doses by use of supplements. From 200 to 500 milligrams thrice daily is a good average dose, depending on the severity of your immune reaction or allergy. The effects of cranberry on bladder and other urinary tract infections are well known. The infections are caused by a bacterium, Escherichia coli, known to most people as E. coli that attaches to the wall of the bladder or the urinary tract, and is very difficult to dislodge with antibiotics once it is there. Cranberry contains a glycoprotein that prevents the E. coli from doing this, and so acts by preventing, not the invasion of the bacterium itself, but the mechanism by which it causes the disease. Drinking cranberry juice on a regular basis can prevent cystitis occurring in women, or at least reduce the frequency of incidences. Now, however, there is a growing body of evidence that cranberry may have more uses than just for bladder infections. It is known to help prevent gum disease by the same mechanism: the bacteria are prevented from sticking to the teeth and gums by means of the same glycoprotein that is effective with E. coli and urinary tract infections There is also evidence that cranberry juice can be helpful in resolving ear and respiratory infections. A study of a group of children in 2002 has indicated that cranberry juice can inhibit the adhesion to red blood cells of certain strains of the bacterium Haemophilus influenza that might cause a large proportion of middle ear infections. It seems to have an effect on the hair-like pili, by which bacteria stick to surfaces. This has been supported by results that indicated no effect on the bacteria strains that lack these pili. These tests, however, were carried out experimentally in test tubes, but it is worth keeping in mind that such studies are under way, and that the results are looking very promising. However, they have not yet reached the stage where they can be stated to have been proved, though there is no reason why you should not try cranberry juice if any of your family is prone to such infections, especially of the middle ear. Yet another study has established that cranberry might be effective in reducing the risk of heart disease by reducing the oxidation of blood cholesterol that makes it very sticky. There are two type of cholesterol, LDL cholesterol that carried the cholesterol from the liver through the blood to areas of your arteries that need repair. Your blood also contains high density lipoproteins (HDL) that carry excess cholesterol back to the liver for destruction and ejection from the body – that is the so-called ‘good’ cholesterol. The LDL cholesterol works much like putty, covering the cracks in arterial walls, and without it you could have even more severe problems than with high levels of LDL cholesterol. However, when the LDL cholesterol gets oxidized by, for example, free radicals in the blood, then it becomes sticky and too much of it gets laid down on the artery walls. Free radicals are produced through many agents, but the most common are smoking, environmental pollution and pesticides. These sticky coatings tend to build up after a time and lead to a condition known as atherosclerosis whereby the build up of coating can severely restrict the artery. This causes high blood pressure and can even lead to the artery becoming completely blocked. This can lead to serious heart problems and, if the artery is in the brain, even strokes. In the study, a group taking one, two then three glasses of 27% cranberry juice daily for a month at a time were found have a 40% reduced risk of heart disease at the end on month three due to a 10% increase in the good HDL cholesterol. This was due to the antioxidant effect of the cranberry juice preventing the oxidation of the LDL cholesterol which causes the problems. Antioxidants mop up free radicals before they can do any damage. Cranberries contain a high polyphenol content, and it is believed that it is these antioxidants that are responsible, though this has still to be proved. This antioxidant effect can also reduce the risk of cancer, render you less liable to inflammatory conditions and also give your immune system a boost by helping to clear up the free radicals that are one of your body’s worst enemies. However, that is not all that cranberries can do. There are even more exciting new developments that could have an impact on women suffering from ovarian cancer. The Centers for Disease Control and Prevention record that ovarian cancer is the 7th most common type of cancer in the USA, and the 5th most common cause of cancer deaths amongst women. The general treatment for ovarian cancer is by chemotherapy using the platinum drugs Paraplatin and Cisplatin. The problem with these drugs is that cancer cells can become resistant to them, and if higher doses are used it can lead to side effects including renal failure and nerve damage. Tests were carried out using ovarian cancer cells and a 27% solution of cranberry juice, a common commercially available concentration. The cells were then treated with Paraplatin. It was found that the Paraplatin was six times more effective at killing the ovarian cancer cells than when the cells had not come into contact with the cranberry juice. This is a considerable difference. The rate of spread and growth of some of the other cancer cells were also reduced. The reason that the cranberry was used was due to its wide range of potential health benefits in fighting stomach ulcers, cystitis and some other cancers. It is believed that the effect is due to very powerful antioxidants known as A-type proanthocyanidins, which are found only in cranberries. Other studies have found this chemical to have had an effect in inhibiting the growth of cancer cells in lung cancer, colon cancer and leukemia, all involving different types of cancer cell. Other antioxidants such as flavenoids and querticin in cranberry juice might also contribute, but the proanthocyanadin is believed to be the principal active agent due it being found only in cranberries. The researchers temper their results with the caution that these are tests only, but that theoretically a cranberry supplement could be used as a part of a chemotherapy course. Animal studies are commencing shortly though it will be some time before a new therapy has been developed. It is possible; however, that the therapy could consist of a simple oral dose of cranberry juice taken during the course, but you should consult your physician for the most appropriate treatment for you. A. One theory of aging is that harmful molecules called free radicals wreak havoc in our cells. Many of our body’s normal metabolic processes produce free radicals. For example, free radicals are a normal by-product in the production of ATP (the energy molecule) from glucose. Certain types of white blood cells destroy invading microbes by the production of free radicals. Free radicals are also formed by the many normal enzymatic actions that take place every minute every day.
However, outside sources can also cause free radical formation, as well. If we are exposed to pollutants in the environment, chemicals, additives and preservatives in the food we eat, or even direct sunlight, excess production of free radicals can occur, causing profound damage. This free radical frenzy is called oxidative stress, and is linked to almost every disease of aging including arthritis, heart disease, cataracts, Alzheimer’s disease, Parkinson’s disease, and cancer. In fact, the reason why these are called diseases of aging is because the longer we are alive, the longer we are subjected to these free radical assaults.
Q. How does FPP affect the decline of our immune systems as we age?
A. Our immune systems consist of specialized tissues, organs, and cells, including several different kinds of white blood cells. Each type of white blood cell works in specific ways to keep us healthy and free of disease. They not only stand guard – on the alert for invaders – they can fight and eradicate microbes, too.
However, as we age, our white blood cells become less efficient in keeping viruses and bacteria from infecting us. They often mistake invaders for good guys, like nutrients. As they age, white blood cells may recognize foreign invaders, but be too tired to fight and let them in. This age-associated immune decline also results in single cancer cells being able to “take hold” and grow into tumors. By the time the white blood cells realize their mistake, the cancer is a widespread disease.
That’s why older members of society have more urinary tract infections, more pneumonia, more cases of bacterial meningitis, tuberculosis, herpes zoster, and much more cancer than younger adults do. Moreover, mortality rates for these diseases are often 2-3 times higher among adults than younger people with the same disease.
FPP steps in and takes charge. One kind of white blood cells, the macrophage “eats” and digests bacteria, viral particles, and free radical fragments. Research has shown that FPP helps macrophages work faster and ingest more disease-causing microbes. Scientists have also discovered that FPP increases the production of a chemical protein called interleukin that’s secreted by macrophages. Interleukin plays an important part in wound healing and keeping minor infections from becoming major infections.
Another important immune system cell is the natural killer (NK) cell, a white blood cell that is continually on the prowl for cancer cells. As the immune system ages, NK cells have trouble “seeing” cancer cells. Researchers have discovered that FPP boosts the activity of NK cells. Increased NK cell activity can result in the increased killing of cancer cells as well as cells infected by viruses.
Q. How does FPP help protect us from free radical damage?
A. FPP contains unique and powerful antioxidants. Antioxidants are molecules that neutralize free radical damage. Antioxidants do this by donating an extra electron to the free radical without becoming frenzied or worked up into a free radical themselves. Although the antioxidant has donated an electron, it has a more stable “personality” and is less reactive. This action stops the domino effect and ongoing free-radical damage.
If you consider your body a temple, think of free radicals as stealing bricks from your temple’s foundation. FPP acts not only as policeman, but as a builder as well. It doesn’t just stop the theft of bricks; it helps create new ones, keeping the foundation strong and young.

A comparison study was performed on blood from 10 fermentation plant workers compared to that from 10 age and gender matched controls. The fermentation plant workers had several immune cell parameters that appeared superior to the control group. NK cells are one of the first lines of defense used by the immune system. An in vitro study performed on human cells showed that NK cells were activated after incubation with EpiCor®, as evaluated by expression of the CD69 activation marker. Beneficial Antioxidant Activity*

In another study, freshly isolated human neutrophils were treated with EpiCor® followed by the free radical generator hydrogen peroxide. Cells were treated with a dye that fluoresces when attacked by free radicals. Those cells treated with EpiCor® showed decreased fluorescence intensity compared to control cells not treated with EpiCor®, verifying antioxidant activity in vitro.2
Safety
Numerous safety tests have been conducted on EpiCor®, revealing an extremely safe profile. Animal studies performed by a leading toxicology laboratory showed no indication of any toxic effects of EpiCor®. An acute oral toxicity study on 20 rats showed that the product was safe when given to rats at a single oral dose of 2000 milligrams per kilogram of body weight (equivalent to a human ingesting 280 capsules at once). After 2 weeks the rats showed no clinical symptoms, no deaths, no abnormalities in body weight, and no gross pathological changes. The same safety results were found in a subchronic toxicity study where rats were given up to 1500 milligrams daily for 90 days (equivalent to a human ingesting up to 210 capsules daily for 1.5 years). Again, absolutely no signs or symptoms of toxicity were noted in these animals.1,3
In addition, a standard bacterial reverse mutagenicity test (AMES test) as well as a mammalian cell mutation assay using mouse lymphoma cells revealed no evidence of any increase in mutation rates after exposure to EpiCor®. EpiCor® also showed no evidence of mitogenicity (inducing increased cell division) in a human lymphocyte proliferation assay. This suggests that EpiCor® does not cause over-reactivity of cells1,3.
The effect of EpiCor® on specific liver enzymes CYP1A2 and CYP3A4 (enzymes involved in metabolizing certain drugs and other compounds) was assessed. Immortalized hepatocytes (liver cells) were treated with various concentrations of EpiCor® and compared to both positive and negative controls. EpiCor® did not increase the expression or activity of the liver enzymes, suggesting that it may not affect the metabolism of other substances or medications metabolized by these enzymes if they are taken simultaneously. It also did not appear to be toxic to the cells as measured by lactate dehydrogenase assays and microscopic analysis.1
Lastly, EpiCor® was tested for safety in humans in an open label study on 15 adult men and women given a single 500 milligram dose for 30 days. On various days throughout the study vital signs were monitored, and blood and urine samples were analyzed. No clinically relevant abnormal effects on the participants were found1.

Safe Solutions for Chronic Pain One of the biggest challenged in healthcare today is the problem of pain. There are simply too many people living each and every day with ongoing, unremitting chronic pain. Adding to the challenge are the almost daily news announcements about dangerous side effects in certain pain medications. While chronic pain differs in its origin and where it occurs, it is generally your body’s way of saying that something urgently needs attention, and will not o away unless its underlying causes are addressed. These causes can usually be determined if you remember the acronym “SHIN”. This stands for Sleep, Hormonal deficiencies, Infections/Inflammation/Impingement, and Nutritional deficiencies. When these are treated, pain often resolves. Q. Why is it so hard to effectively reduce chronic pain? A. Unfortunately, many physicians’ entire education in pain management consists of “giving nonsteroidal anti-inflammatory drugs or NSAIDs (pronounced en-sayds), COX-2 inhibitors, or acetaminophen and considering narcotics if the patient has cancer. Some NSAIDs, like aspirin and ibuprofen, are available over-the-counter, while others, like the synthetic COX-2 inhibitors are only available with a doctor’s prescription. These mediations are usually inadequate and often toxic when used for chronic pain. And they do not address the problem(s) that the pain is trying to alert you to. Q. What exactly are COX-2 inhibitors? A. COX-2 inhibitors do pretty much what their name implies – they inhibit a natural enzyme in our body called the clclooxygenase-2, or COX-2, enzyme. There are two COX enzymes – COX-1 and COX-2 and both complete several actions in our bodies. One very important action that both COX-1 and COX-2 enzymes share is the speeding up of our body’s production of prostaglandins. These hormone-like substances are made by the cells of the body and have several important functions. Some of the most powerful prostaglandins cause inflammation, pain, and fever when we are sick or injured. Prostaglandins also protect the lining of the stomach from the damaging effects of acid. Other prostaglandins make sure our platelets (important blood cells) make blood clots when needed. Still others help our kidneys get rid of unwanted salt and water. And just as needed is the protection of our stomach lining, blood clotting ability, assisting kidney function, and keeping our blood vessels healthy. And scientists are beginning to understand if you interfere with one natural response, you may be disrupting the body’s ability to prevent extremes and imbalances. The ongoing, close scrutiny of large group of people taking these medications by scientists who were conducting these studies has resulted in the discovery of these dangers. Q. On March 04, 2001, at the American Academy of Dermatology Meeting in Washington DC, scientists presented the findings of a study done on 1% ketoconazole shampoo which had good news for hair loss sufferers. In the study presented, one hundred male volunteers with mild to moderate dandruff and somewhat oily scalp, were using in a double-blind fashion either a 1% ketoconazole shampoo or a 1% zinc pyrithione shampoo, 2-3 times a week for 6 months. Analysis of the different parameters set up in the study shows that the hair diameter gradually increased with ketoconazole use (+8.46%) over a 6 month period, whereas the diameter showed a trend to decrease with zinc pyrithione use over the same period (-2.28%). The sebum excretion rate was reduced with ketoconazole (-6.54%) while it increased with zinc pyrithione (+8.2%) over the same period of time. The number of hairs shed over a 24-hour period was reduced by 16.46% with ketoconazole and 6.02% with zinc pyrithione after 6 months. Finally, the percentage of hairs in the anagen phase increased by 6.4% and 8.4% respectively during the study. The results are similar to a previous study done on 2% prescription strength Ketokonazole where it was shown that use of 2% ketoconazol yielded an increase in hair shaft diameter similar to what was achieved by the control group using 2% Minoxidil and a non-medicated shampoo. Rooibos - Rooibos or Red Bush Tea - a hardy shrub indigenous to the North Western Cape of South Africa – is an exciting new botanical ingredient with potent antioxidant and anti-inflammatory properties well documented in medical literature. In alternative medicine Rooibos is often prescribed for nervous tension, allergies, stomach and digestive problems. Results from an independent study also showed a significant improvement in hair loss. Studies were initiated at an independent laboratory (Dermascan, France) to study the effect of the use of Rooibos in a hair lotion on a group of healthy persons who were suffering from the problem of hair loss. A 90 day trial was conducted comparing a hair lotion containing Rooibos with a placebo lotion. One of the most potent bio-actives that significantly increases cellular ATP content is carnitine tartrate. The scientists also discovered that POA cat’s claw extract increases the production of a chemical protein called interleukin that is secreted by macrophages. Why are the Ashaninka willing to share their cat’s claw? They are generous people. The Ashaninka see no benefit in hoarding cat’s claw for themselves alone. They also want to make sure that the plant’s healing properties continue on. As their homelands continue to be destroyed by deforestation, rainforest peoples are also disappearing. There were an estimated ten million tribal and indigenous peoples living in the Amazonian Rainforest in 1510. Today there are less than 200,000. Since the 1900’s more than 90 indigenous tribes have died out and disappeared. Each time a rainforest medicine man or woman dies without passing their arts on to the next generation, the tribe and the world loses thousands of years of irreplaceable knowledge about medicinal plants. With them, centuries of accumulated knowledge of the medicinal value of rainforest species have been lost. A good example of the impact of this loss can be seen in cat’s claw. When European explorers began venturing into the Amazon River basin, t hey were skeptical of the stories the Ashaninka people told them of U. tomentosa’s amazing healing powers. Q. What’s the big deal about fruits and vegetables?
A. Well, for the main reason that they are whole foods – created by nature (or at least generations of farming) and are rich in a variety of nutrients. Processed foods can’t match the health benefits of strawberries or broccoli – items that have fiber, vitamins, and enzymes built right in.

Let’s take a look at some of the most well-studied and important nutrients:
Quercetin is found in apples, onions and citrus fruits (also is hawthorn and other berries and apple-related fruits usually used in traditional herbal remedies and modern supplements). It prevents LSL cholesterol oxidation and helps the body cope with allergens and other lung and breathing problems.
Clinical studies show that quercetin’s main points of absorption in the body appear to be in the small intestine – about 50%. The rest – at least 47% is metabolized by the colonic micro flora – the beneficial bacteria such as Lactobacillus acidophilus and Bifidobacterium longum. You may consider adding these beneficial bacteria (found in yogurt) either through the diet or a supplemental form.
Ellagic Acid is a component of ellagitannins – dietary polyphenols with antioxidant (and possibly anticancer) properties. Polyphenols are the basic building blocks of many plant-based antioxidants. More complex phenolic compounds, such as flavonoids are created from these molecules.
Ellagic acid is found in many fruits and foods, namely raspberries, strawberries, pomegranates, and walnuts. Clinical studies suggest that ellagitannins and ellagic acid act as antioxidants and anticarcinogens in the gastrointestinal tract.
Ellagitannins are durable antioxidants, and happily, they do not appear to be diminished by processing, like freezing. This means the benefits are still strong, even in frozen packs of raspberries or strawberries, or some of the better multi-ingredient supplement drink mixes.
In scientific studies, ellagic acid also showed an anti-proliferative effect on cancer cells, decreasing their ATP (adenosine triphosphate) production. ATP is the molecule that provides the primary energy source for the cells in our bodies. In a sense, ellagic acid seems to deprive cancer cells of their fuel.
Beta-Carotene: Probably the best-known of the carotenoids, beta-carotene is converted by the body into vitamin A. Many vegetables, especially orange and yellow varieties, are rich in this nutrient. Think summer squash, yams and of course, carrots.
Beta-carotene has long been associated with better eyesight, but it has other benefits, too. In a scientific study, beta-carotene decreased cholesterol levels in the liver by 44% and reduces liver triglycerides by 40%.
Lycopene is a carotenoid mostly found in tomatoes, but also in smaller amounts in watermelon and other fruits. Clinical studies have shown that lycopene consumption may decrease the risk of prostate cancer. In fact, high intakes of lycopene are associated with a 30% to 40% reduced risk. And, as good as beta-carotene is, its cousin, lycopene, seems to be an even stronger nutrient, protecting not just against prostate cancer, but heart disease as well.
Lutein is found in many fruits and vegetables, including blueberries and members of the squash family. Lutein is important for healthy eyes, and in fact it is found in high concentrations naturally in the macular region of the retina – where we see fine detail. It is one of the only carotenoids, along with its close sibling zeaxanthin, that is found in the macula and lens of the eye.
Lutein also supports your heart, too. In a scientific study, lutein reduced atherosclerotic lesion size by 43%. In other words, high intakes of lutein may actually help prevent coronary artery disease!
Interestingly, as is the case with lycopene, cooking or processing foods with lutein may actually make it more easily absorbed.
In clinical studies, men with high intakes of lutein (and its close cousin, zeaxanthin, found in broccoli and spinach) had a 19% lower risk of cataract, and women had a 22% decreased risk, compared to those whose lutein intakes were much lower.
Vitamin C: One of the best-known nutrients out there, vitamin C keeps our immune system strong; speeds wound healing, and promote strong muscles and joints. A free-radical fighter, vitamin C prevents oxidative damage to tissues, builds strength in collagen and connective tissue, and even reduces joint pain.
Sources of vitamin C are scattered throughout the spectrum of fruits and vegetables.
Potassium: Most Americans are deficient in potassium. For the most part, it’s hard to get too much of this valuable mineral. Potassium does great things for our hearts. Higher intakes of dietary potassium from fruits and vegetables have been found in clinical research to lower blood pressure in only 4 weeks.
Many researchers believe that the typical American diet has led to a state of chronic, low-grade acidosis – too much acid in the body. Potassium helps change pH balance to a more alkaline environment in the body and increases bone density.
This was proven in the long-running Framingham Heart Study which showed that dietary potassium, (along with magnesium and fruit and vegetable intake) provided greater bone density in older individuals.
Fiber is another food component many just don’t get enough of – especially if they’re eating a “typical American diet.” Fruits, vegetables and whole grains are excellent sources of fiber. However, fiber from a good fruits and vegetable drink mix should be derived from inulin and chicory root. This soluble fiber source not only adds to the overall amount of fiber you need (25 to 38 grams a day), but also provides a nice “nesting ground” for the beneficial bacteria that populate the intestines. Flavonoids are an overarching term that encompasses flavonols, anthocyanidins, and flavones, isoflavones, proanthocyanidins, Quercetin and more. Flavonoids are responsible for the colors in the skins of fruits and the leaves of trees and other plants.
Flavonoids have many health benefits. They can help stop the growth of tumor cells and are potent antioxidants. Additionally, flavonoids have also been studied for their ability to reduce inflammation.
Anthocyanins: High on the list of important “visible” nutrients are anthocyanins. They color fruits and vegetables blue and red.
Anthocyanins are members of this extended family of nutmeats, the flavonoids. Typically found in high amounts in berries, anthocyanins are readily absorbed in the stomach and small intestine.
As antioxidants, anthocyanins dive deep into cell membranes, protecting them from damage. IT may be one reason why the anthocyanins from blueberries are considered such an important component in battling neuronal decline, like Alzheimer’s. Blackberries, raspberries, and strawberries are also excellent sources of this flavonoids group.
SDG lignans, (short for secoisolariciresinol diglucoside) are polyphenolic components of flaxseed, pumpkin and other herbal sources. Much of the recent research surrounding lignans has focused on flaxseed. In scientific and clinical studies, lignans from flaxseed support hormonal balance and may have cancer-preventing abilities. In fact, in one study, flaxseed lignans reduced metastatic lung tumor by 82% compared to controls.
The lignans in pumpkin seed, also considered a major source, target 5-alpha reductase activity.
This enzyme catalyzes the conversion of testosterone into the more potent dihydrotestosterone (DHT). DHT, like testosterone, is a steroid hormone or androgen. Androgens are responsible for the development and maintenance of masculine sex characteristics in both men and women. Excess levels of DHT can cause serious problems with prostate or bladder health. That’s why modulation of the 5-alpha reductase enzyme is so important – it helps maintain healthy testosterone and DHT levels. By balancing the levels of these key hormones, pumpkin seed lignans provide protection for prostate and bladder cells.
In addition, pumpkin seed has been shown to modulate the enzyme aromatase. Aromatase is present in the estrogen-producing cells of the adrenal glands, ovaries, testicles, adipose tissue, and brain. Aromatase converts testosterone, an androgen, into estradiol, and estrogen.
Inhibition of the aromatase conversion can help maintain a balance of healthy testosterone levels in women, which has been shown to strengthen pelvic muscles and reduce incidence of incontinence.
In fact, a clinical study, involving a pumpkin extract in conjunction with soy, resulted in significant support for bladder health. After two weeks of supplementation, 23 of the 39 postmenopausal women enrolled in the study showed great improvement in urinary frequency and sleep. By the end of the six week study, 74.4 percent of participants found pumpkin extract safely and significantly improved “nocturnia,” that is, the need to urinate frequently at night. For individuals with 2 to 4 episodes of nocturnia prior to the stud, and 81.8% improvement was seen – also showing great improvement in sleep quality. After all, if you don’t have to wake up every couple of hours to go to the bathroom you’re bound to get better sleep.
Beta glucan: Mushrooms are intense immune-boosting powerhouses due to their beta-glucan content. Three well-studied power-house mushrooms that contribute beta glucan to the diet include maitake, reishi and shiitake.
The most significant constituents of mushrooms are long chain polysaccharides (molecules formed from many sugar units) known as beta-glucan. These huge molecules act as immunoregualtors in the human body, helping to stabilize and balance the immune system.
This includes specific support of white blood cells, or lymphocytes, the primary cells of the immune system. Lymphocytes fall broadly into three categories: T cells, B cells, and natural killer (NK) cells.
In one clinical study, 165 patients with various types of advanced cancer were given maitake mushroom compounds alone or with chemotherapy. Cancer regression or significant symptom improvement was observed in 58% of liver cancer patients, and 62% of lung cancer patients. While beta-glucan are distributed throughout the mushroom body, the beta-glucan concentrations are significantly higher in the mycelium – the interwoven fibers or filaments that make up the “feeding structure” of the mushroom.
Bioflavonoids are commonly found in bright yellow citrus fruits, including lemons, limes and oranges. They are responsible for the bright pigment found in the skin of the fruit, and are considered a “companion” to vitamin C, seeming to extend the value of the nutrient within the body.

Q. I’ve been seeing articles about fruits, vegetables and supplements touting “high ORAC value.” What does this mean?
ORAC is an acronym for Oxygen Radical Absorption Capacity, and is simply a measurement of antioxidant activity of nutrients. Oxygen radicals, or free radicals, are unstable molecules. They grab electrons from other cells to use for themselves, and in the process can damage them. It is believed that free radical activity plays a role in the development of many diseases such as heart disease and cancer, and also plays a role in aging.

Plus, when Maitake was taken in addition to chemotherapy, the immune cell activities were enhanced 1.2 to 1.4 times, compared with chemotherapy alone. Coriolus(Coriolus Versicolor) Versicolor compounds show great promise as cancer immunotherapy agents in all cancer stages. In one clinical trial, 34 patients with advanced terminal lung cancer were given Coriolus versicolor polysaccharides or a placebo (dummy pill) for 28 days. While the group getting the Versicolor felt less fatigued and sick, very important considerations at the end-of-life, there were no changes in the placebo group. Reishi (Ganoderma Lucidum) Reishi mushrooms are too tough to eat, but they’ve been used medicinally for centuries and have been extensively researched. In a safety study to determine Reishi’s effect on blood thinning mechanisms, healthy volunteers received 1.5 gm Reishi or placebo daily for 4 weeks. There were no significant changes in either group and all blood clotting measurements remained within the normal range, demonstrating its safety. In a recent clinical study, researchers determined that Reishi increased the number of cancer killing white blood cells and made them more deadly to cancer cells. Not only do Agaricus, Maitake, Coriolus, and Reishi have incredible amounts of immune boosting polysaccharides, when they are grown on Purple Kculli Corn, they also have a much higher ORAC value than mushrooms grown on other substrates. The FDA pretends to protect the safety of the public. Medical journals pretend to print only rigorous, scientifically-sound research papers. Drug companies pretend to care about the lives and health of patients. Non-profit disease front groups pretend to be searching for the cure while, in reality, most of them are only searching for more ways to recruit patients into conventional medicine treatments like drugs, surgery, chemotherapy and radiation. How do we know it’s all pretend? Aside from the junk science, corruption fraud, collusion, conflicts of interest and intellectual dishonesty that characterizes modern medicine, there’s one more all-important thing to consider. The results. If modern medicine really worked, and wasn’t just pretend, wouldn’t we be the healthiest population in the world? (Instead of being 38th?) Seriously. We Americans pay more for health care, per capita, than any nation in the world. We take more drugs, undergo more surgical procedures, and log more hospital visits than anyone else. Conventional medicine exists in a fantasy. While cancer groups, researchers and drug companies promise enhanced health and quality of life, the reality is far different: accelerating chronic disease, skyrocketing health care costs that are putting U.S. companies like General Motors flat out of business, and hundreds of thousands of Americans being literally killed by medication side effects – an atrocity that the FDA still hasn’t seemed to notice. THE PRECARIOUS ACT OF BALANCING HORMONES The very delicate relationship between progesterone and estrogen levels is what creates hormonal balance. Today we frequently hear the phrase, “she’s suffering from a hormonal imbalance.” What exactly does a hormonal imbalance imply, and why is it so prevalent among women of all ages? The simple truth is that our twentieth-century life style creates a great deal of health risks not previously experienced by earlier generations. Many of these new, modern factors adversely effect our endocrine systems, not to mention our overall health as well. Consequently, when we need to synthesize certain levels of progesterone, we may be lacking the proper nutrients or, as may be the case with women who have used birth control pills, our ovarian functions may be impaired. As a result, an excess of estrogen may develop predisposing us to a number of unpleasant symptoms. Unprecedented degrees of mental stress combined with exposure to toxins, pollutants, preservatives, chemicals, and drugs can impair a woman’s ability to produce progesterone. But, then, the depression spurred by the disconsolate persistence of arthritic pain can make the condition worse. Part of the trick is not to give in. If you can keep a bright mood even as your joints start to ache, the pain may lessen. While nobody can offer a guaranteed, 100% effective cure for arthritis, you don't have to be a passive victim. Exercise, the proper nutrients and a positive, can-do attitude can ease arthritis pain so effectively that scientists have been able to measure the difference. While medical researchers recognize the existence of over 100 types of arthritis, most people with achy joints suffer from osteoarthritis, which is caused by everyday wear and is found in just about everyone over age 60. When this condition occurs, the body's cushioning, its cartilage, thins and the inner surfaces of joints grind together painfully. Although aging itself increases your chances of enduring achy joints, other factors can also put you in the way of osteoarthritis. If you carry too much weight, it can wear on your joints. In addition, suffering a joint injury when you're young can increase your risk of developing osteoarthritis as you age. While that might sound counterintuitive, a study out of the Netherlands shows that folks in the early stages of rheumatoid arthritis who work out twice a week for about an hour each session may enjoy better physical and mental health than couch potatoes who receive physical therapy. The Dutch study took 150 people, many of whom had just started to suffer from rheumatism, and enrolled them in RAPIT, an acronym for Rheumatoid Arthritis Patients in Training. Rather than letting these folks rest their inflamed joints, twice a week the research team took them to the gym where they did:
When the researchers compared the physical changes in these arthritis sufferers with 150 others with similar arthritis complaints who underwent physical therapy without organized physical activity, they found that after two years the exercisers had benefited greatly. They were stronger and more aerobically fit, could perform everyday tasks more effectively and possessed a better, more optimistic mental attitude (Arthritis and Rheumatism 2003; 48(9):2415-24). However, the exercisers who were already suffering severe rheumatoid arthritis did experience some extra joint damage, so the researchers believe this kind of program is better for those in the early stages of the disease. " This study demonstrates that participation in long-term high-intensity exercise classes decreases the level of psychological distress in RA patients," says researcher Zuzana de Jong, MD, a professor at the Leiden University Medical Center in the Netherlands. Fish Oil Lowers Arthritis Risk Fish oil-in particular, cod liver oil-may be able to help ease osteoarthritis. In looking at the effects of fish oil, researchers at Cardiff, Wales, discovered indications that "...the omega-3 fatty acids in cod liver oil can reduce cartilage degradation and inflammation in arthritic disease," according to Bruce Caterson, PhD, one of the scientists involved. Dr. Caterson adds, "Our most recent work shows that by exposing human osteoarthritic cartilage to cod liver oil in the laboratory for just 24 hours we can turn off, or reverse, the action of the degradative enzymes and inflammatory factors affecting the tissue." John Harwood, PhD, another member of the Cardiff research team, adds, "This is where science and old wives' tales coincide. Our findings are consistent with advice that taking cod liver oil in early adulthood could prevent the onset of osteoarthritis and would reduce the harmful symptoms associated with the disease." Dr. Caterson further explains that the omega-3 fatty acids in cod liver oil inhibit enzymes that break down aggrecan and collagen, substances that cushion joints. Consequently, cartilage stays healthier, inflammation is lessened and arthritic pain decreases. The anti-inflammatory action of omega-3s in fighting rheumatoid arthritis is also supported by studies performed in the US (Am J Clin Nutr 2000; 71(1 Suppl):349S-51S). Other research shows that if you take natural vitamin E along with fish oil, you may improve even further your odds of relieving arthritis or lessening its effects (JACN 10/30/00). Glucosamine Repair Glucosamine, the stuff that cartilage is made from, has been shown to lower the risk of arthritis and possibly relieve its pain. This natural substance, made from a sugar and a molecule called an amine, is a building block of joint tissue. As a result, experts believe, when you take it in supplemental form, the body may use it to repair joints that have been damaged by arthritis. For instance, an investigation of osteoarthritis of the knee performed at the University of Liege in Belgium showed that taking glucosamine could stop joints from deteriorating. The study, which involved more than 200 people suffering from osteoarthritis, found that in three years of taking glucosamine supplements, many arthritis sufferers found that their condition actually improved (Lancet 2001 Jan 27; 357). Other Arthritis Fighters Chondroitin sulfate is another material that goes into the making of cartilage. Chondroitin helps cartilage stay hydrated and permits the flow of nutrients through the joint tissues. In addition, researchers believe that chondroitin helps fight inflammation, which can otherwise cause pain and stiffness as well as joint destruction. Taken together with glucosamine, chondroitin is believed to hasten the healing of bone and cartilage. Another substance that may help ease the ache of arthritis is methylsulfonylmethane (MSM), a naturally occurring sulfur-bearing compound. "MSM appears to have anti-inflammatory effects when administered orally, intravenously or topically," says MSM researcher Stanley Jacob, MD, FACS, of the Oregon Health & Science University. That means it has shown an ability to reduce the heat, pain and swelling associated with arthritic conditions. MSM may also be able to reduce muscle spasms around joints and reduce the formation of scar tissue. Herbal Aid Herbal medicine has long been used by folks with achy joints. The yellow spice turmeric (Curcuma longa), a staple of Indian cooking, is a traditional Indian remedy for arthritis because of its painkilling properties.
