Acne treatment therapies focus upon two aspects of acne: its prevention and management, and the removal of its more lasting effects.

Looking at the latter first, acne scars can be unsightly, and there are several methods currently used either to remove them or to hide them. Some of the more radical are surgical, while others involve modifications the surface of the skin by means of techniques akin to sandpapering, and also cosmetic techniques.

However, such therapies are needed only if the condition is permitted to have a significant effect on your skin. There are therapies that can be used to mitigate the condition if not remove it altogether. Before discussing these it will be necessary to consider what causes acne, because without that knowledge there can be no effective treatment.

Acne is cause by blockage of the sebaceous pores in the skin. That blockage is generally caused by a mixture of dead skin cells and skin oil, otherwise known as sebum. Why should this occur with acne sufferers and nobody else, when all of us have the ingredients of acne as normal components of our skin? The answer lies in our hormones.

The reason that acne is most prevalent in teenagers is that the generation of sebum is promoted by our hormones: specifically the male hormones known as androgens that both males and females begin to create in quantity during puberty. These cause the sebaceous pores to enlarge, and sebum to be produced in larger than normal quantities.

The hormones also tend to disrupt the usual desquamation rate, or shedding of dead skin cells. What happens is that the skin cells within the pores begin to shed in clumps, rather than singly, and when mixed with the excess skin oil form a plug that clogs up the pores. This plug of oils and skin cells then gets contaminated with bacteria that in time initiate the immune reaction, resulting in pus being formed through the action of macrophages on the bacteria.

The therapy needed to reduce the incidence of acne, then, can be either proactive or retroactive. Proactively, they can reduce the production of the sebum/skin cell plug. Gamma linolenic acid (GLA) as found in Omega-6 oil can block androgen receptors and so decrease the amount of dihydrotestosterone (DHT) produced. The less the amount of DHT, then the less will be the severity of your acne.

Evening primrose oil contains large quantities of GLA, and even applying this topically on your skin will dilute the sebum and reduce the likelihood of sebum and skin cells blocking your pores. This is an extreme simplification of what GLA does, but it does accurately represent the end result of its use. There are also medications you can take to reduce the rate of shedding of your skin cells, so that your pores have less chance of being blocked.

Retroactively, you can apply antibiotics to kill off the bacterial that act on the plug and that initiate the immune response responsible for the lesions. You can also give your skin a good wash with an effective skin cleanser, including a mild antibiotic to enhance the cleansing of the bacterial plug. However, there are alternative treatments, such as the proactive diet control, and the use of vitamins and appropriate herbs to control or even prevent the condition.

When you think of diet, don't think chocolate. Acne is not caused by eating too much chocolate, or even by fatty foods. We have already discussed the causes of acne, and if we can find any components in our diet that can create these conditions, then by eliminating them we should be able to avoid the condition. As a corollary, if we can identify any substances that could prevent androgens from creating excess sebum, or even control the androgens themselves, or that could help the skin cells to shed more evenly, then we could include these in our diet.

In fact such substances do exist. By going deep into the science, we will find that the secretion of testosterone is promoted by a hormone known as IGF-1 and also by insulin. IGF-1 stands for Insulin-like Growth Factor 1, and is important in the growth of children. It also promotes acne! Insulin does the same, and what that infers that anything in the diet that promotes the production of insulin will also promote acne.

What promotes insulin? Sugars and carbohydrates! Therefore, if you eat a diet low in sugars and carbs then you should have less production of sebum, and hence less acne. What this is leading to is that if you have a tendency to get acne; then switch your diet from carbohydrates and sugary foods to vegetables, grains and seafood. The Japanese get very little acne, which supports this theory.

You should also take foods rich in zinc, since a zinc deficiency has been found to lead to acne. Nobody knows why yet, but use the information and either take a zinc supplement or eat zinc rich foods such as shellfish. Strangely, it is a deficiency of zinc that causes an increase in testosterone, not the surplus of zinc provided by eating oysters! These have another effect.

There are also herbal treatments that can be effectively used for acne. Most are topical, and tea tree oil is one the more recent such treatments used to treat acne. Among the chemical constituents of tea tree oil is terpinen-4-ol, with powerful antimicrobial properties. Little wonder then that it is effective in preventing the bacterial infection of the sebaceous gland pores. The oil helps to dry out the skin, again creating conditions alien to bacteria.

You could use tea tree oil by itself, though many people simply mix it with the acne creams they are currently using. That makes them much more effective. Another option goes back to the zinc again, but rather than take it as a supplement, use it topically. Chamomile and lavender are useful in calming skin that has been inflamed both by over-zealous use of skin scrubs and also the immune system's inflammatory response to the infection of the pores.

There are many healthy options to the severe pharmaceutical treatments offered by your physician. These can be used in place of, but preferably as supplements to, the treatment recommended by your doctor. Each of the natural treatments has a sound scientific basis, and if you suffer from acne can be well worth trying.

Guar gum is what is known as a soluble fiber, and it is well known that it promotes a healthy colon. You will not find soluble fiber in what you believe to be 'high fiber foods', yet it is a very important part of your diet, particularly if you have problems with your colon such as Irritable Bowel Syndrome (IBS) or even colon cancer.

Traditional high fiber foods, such as bran, leafy vegetables and cereals, contain insoluble fiber that mechanically act as an aid to digestion and the movement of your food through your gastrointestinal system. Soluble fiber, on the other hand, is found in what are more commonly regarded as starchy foods, although unlike starch, the chemical bonds that attach the various sugar molecules together cannot be broken by the acids and enzymes used by your gastric system to digest them.

They thus pass through the body undigested, in the same way as insoluble fibers, and so contribute to the mechanical system upon which the peristaltic pumping motion of the intestine depends. Because it is not digested, soluble fiber contains practically no calories since it does not contribute to the metabolism of your body. Fiber imparts many benefits in addition to enabling your intestine peristalsis to move your food through your digestive system.

For a start they don't contribute to your nutrition, either negatively or positively, but provide bulk to what you eat and provide help to your bowel movements by giving the intestinal muscles something to bite on. One of the benefits of such foods is their effect on your blood sugar and preventing the onset of diabetes. They can also help you to avoid obesity through providing virtually calorie-free bulk to your meals. Some fibers can bind chemically to toxins and certain fats, and can clean out your colon. So what's the benefit of soluble fiber over the insoluble type, and where does guar gum enter the equation?

Basically, soluble fiber is water soluble while insoluble fiber is not. Maintains Healthy Visual Function*

It has been well established that lutein is present in high concentrations in the retinal tissue of the human eye. However, a study was conducted in human volunteers to determine whether taking lutein in supplement form actually increased the density of the carotenoid pigments present in the macula. In this study of eight individuals, researchers estimated the density of the macular pigments prior to having each individual take 10 mg of lutein daily in supplement form for 12 weeks. Plasma lutein concentrations were measured at 4-week intervals. During the first four weeks of the study, plasma levels increased five-fold from pre-supplement measures, and then remained at this level for the duration of the study. It was also shown that, due to increased deposition of lutein in optical tissues, macular pigment density increased by an average of 5.3% at the 4-week mark, and continued to increase until the duration of the study.1

A study was also conducted to investigate the possible role of specific nutrients in protecting the lens of the eye against aging, a risk factor for compromised visual function. The study was comprised of 376 individuals aged from 18 to 75. Of the nutrients measured, it was found that the lenses of individuals with higher concentrations of lutein and zeaxanthin showed less of an effect from the aging process. The investigators concluded that these carotenoids might play a protective role in supporting the maintenance of healthy vision.2

The Age-Related Eye Disease Study (AREDS) was a landmark study of the effects of diet and antioxidant supplementation on eye health. The study enrolled over 3500 subjects aged 55 to 80 years who were followed for approximately 6 years. Among the data collected in this multi-faceted study was a self-administered Food Frequency Questionnaire (FFQ). The AREDS Report No. 22 examined the data from the FFQs and determined that, of the nutrients evaluated, only lutein and zeaxanthin were directly related to maintaining eye health with statistical significance3. These findings corroborated similar results of an earlier multi-center study published in the Journal of the American Medical Association that also found that those with a higher intake of lutein and zeaxanthin maintained healthier eye function.4 These promising results have spurred the design of a second major clinical trial (AREDS2), which is currently enrolling participants to study the impact of supplemental xanthophylls (FloraGLO® Lutein and zeaxanthin) and other nutrients on age-related eye health.5

In addition, a double-blind placebo controlled trial was performed in ninety individuals who had signs of compromised visual function. Individuals were divided into three groups and received either 10 mg FloraGLO® lutein, 10 mg FloraGLO® lutein plus a multivitamin/multimineral formulation, or placebo for 12 months. In both the FloraGLO® lutein and FloraGLO® lutein plus other nutrients groups, improvements were seen in mean eye macular pigment optical density, visual acuity and contrast sensitivity. No improvements were noted in the placebo group.6 These results demonstrate FloraGLO® lutein’s beneficial effect on maintaining healthy visual function.

Newly published research has demonstrated that lutein and zeaxanthin supplementation may enhance visual performance under glare conditions. Forty healthy subjects took daily doses of 10 mg FloraGLO® Lutein plus 2 mg zeaxanthin for six months. They were evaluated for changes in macular pigment, glare disability and photostress recovery at the onset of the study, and at 1, 2, 4 and six months. After six months, subjects experienced an average increase in macular pigment optical density (MPOD) of 39% compared to baseline, and all but two participants experienced some increase in MPOD. This increase in MPOD was also directly related to measured improvements in visual performance after exposure to bright light, as well as photostress recovery.7 This study suggests another way in which lutein and zeaxanthin can help support optimal visual function in healthy individuals.

Potent Antioxidant Protection*

Most of the beneficial effects of lutein are ascribed to its potent free radical scavenging abilities. It is well-known that lutein is a carotenoid related to beta-carotene and possesses antioxidant activity against a number of reactive oxygen species.8

More direct evidence for the free radical scavenging activity of lutein is found in studies of its effects on human lens epithelial cells. Cell cultures were exposed to ultraviolet light after pretreatment with lutein or alpha-tocopherol. Both nutrients were found to reduce ultraviolet-induced damage to lens epithelial cells. However, lutein was shown to have significantly higher photoprotective activity than alpha-tocopherol9 demonstrating its potential as a high-powered antioxidant.

A further review of the mechanisms of lutein in conferring a protective role reveals evidence for its antioxidant activity in various body tissues. Lutein has been shown to be an effective antioxidant in vitro as well as in experimental models of a number of body systems.10

Supports Healthy Skin*

A recent randomized, double blind, placebo-controlled study has demonstrated the positive effects of oral and topical administration of lutein on skin health parameters (surface lipids, hydration, photoprotective activity, skin elasticity and skin lipid peroxidation). Forty female subjects were divided into four treatment groups. Treatment options included oral administration of 5 mg of FloraGLO® Lutein twice daily or placebo and topical administration of 50 ppm FloraGLO® Lutein twice daily or placebo. Each treatment group received either an active oral treatment with a placebo topical treatment, a placebo oral treatment with an active topical treatment, both active treatments, or both placebo treatments. Statistically significant improvements were seen in all five parameters tested in all treatment groups compared to the group receiving only placebos. The greatest overall improvements were seen in the group receiving both active oral and topical treatments, while lesser but still significant improvement was seen in both the active oral only and the active topical only groups. Additionally, oral administration of lutein conferred superior photoprotective activity (as measured by skin surface redness after exposure to ultraviolet light) and prevention of lipid peroxidation (as indicated by levels of malondialdehyde in skin lipids after exposure to ultraviolet light) than either topical lutein or placebo.11

Found growing on trunks or stumps of trees in deciduous forests in temperate climates, the maitake mushroom is native to Eastern Canada and the Northeastern and Mid-Atlantic regions of the United States. Maitake also can be found thriving in northeastern Japan and parts of Europe. With fan-shaped caps on stalks that may be fused together in masses, the mature maitake plant can weight up to twenty pounds. Also called dancing mushroom because of people dancing for joy when they found the maitake mushroom, one legend explains that the name refers to the fact that maitake overlaps other forms of fungi and has the appearance of butterfly wings flapping in a dance.

Only thirty years ago this type of mushroom had yet to become cultivated or well-known. Before 1979 maitake could only be found in the wild. However, now cultivation techniques have made it possible for maitake to be enjoyed all over the world, with some Japanese research finding that it is useful for the healing of a variety of ailments. Maitake is quickly becoming more and more important in the field of natural health. Like other mushrooms, maitake is rich in polysaccharides, which are complex natural sugars that have great benefits in healing as they work to strengthen the immune system to help it fight disease. Beta D-glucan is the powerful polysaccharide that is found in maitake, a compound that helps to stimulate the immune response.

Studies have found that maitake mushroom has the ability to reduce blood pressure in laboratory experiments that took place on animals. A study that was conducted in 1994 at the Ayurvedic Medical Center of New York found that maitake can also be of great value for humans too. As cancer continues to be leading cause of death in the western world, Human studies are beginning to find that D-fraction polysaccharides in maitake mushroom can help to treat various types of cancer. CLA is conjugated linoleic acid, a compound known as a trans fatty acid due to its stereochemistry, and while trans fatty acids are generally regarded as harmful, CLA is not because it is conjugated. This means that it has alternate single and double bonds in the backbone carbon chain, and the overall energy of the molecule is therefore reduced.

Linoleic acid itself is one of the omega-6 fatty acids, the 6 referring to the double bond at the sixth carbon from the omega and of the carbon backbone chain. It is believed to be the cause of heart disease and obesity due to its increasing use in the diet at the expense of omega-3 fatty acids. When the molecule is conjugated, however, the fatty acid has different chemical properties to the standard isomer, and natural CLA is mainly found in cattle products, such as beef and dairy products.

Conjugated linoleic acid is present in cattle because it is formed when linoleic acid is converted to oleic acid by rumen bacteria, that are responsible for the microbial fermentation of the feed of ruminant animals such as sheep and cattle. When oleic acid is formed, so too is CLA. However, the form used in supplements is manufactured from vegetable oils, and therefore suitable for use by vegetarians. The usual vegetable oils used are safflower oil and sunflower oil.

It is believed to possess several beneficial properties, including antioxidant and anti-cancer properties, but it is for its ability to reduce body fat that it is best known to most people. A growing amount of information is being collected on the use of CLA as a supplement in the weight loss industry, although there are as yet no definitive mechanisms that explain its action. However, recent studies have indicated it possess properties that can help to reduce the levels of low density lipoproteins in the blood, and reduce the possibility of atherosclerosis due to LDL oxidation by free radicals.

It is also theorized that CLA in some way regulates the prostaglandin biosynthesis that controls the level of hormones in the body that can regulate growth. An increase in growth hormones is one way in which athletes promote an increase in muscle bulk, while reducing their fatty tissue mass. CLA is also purported to increase thermogenesis, and so promote the loss of body fat and overall weight.

Although most studies on the effect of conjugated linoleic acid in reducing body weight have been carried out on animals, recent animal studies have indicated that might not so much reduce weight, as to increase muscle bulk while reducing that of body fat. The end result, therefore, is not a loss of weight, but a leaner body that has more muscle and less fat. All it needs is the results on animals to be transferred to humans, and this, of course, is frequently the case. However, initial studies on the use of CLA in the human diet have been very positive, so the signs are good.

Most scientific progress in human biochemistry has been obtained by virtue of prior studies on animals. These studies, of course, have been beneficial to the animals, making them leaner and much fitter than they otherwise would have been. It is believed that the same will be true of humans taking CLA as a supplement. In fact, recent studies are split about 50/50 with regard to the effects on humans.

While some studies have shown no benefit, about an equal number have shown a positive benefit in the reduction in the mass of fat in the body. Some of the negative studies may have been flawed in measuring total body weight, and not the relative amounts of muscle and fat, and also basing their results on people already with a low level of fat in their body. In that respect, then, the results look very favorable, and taking CLA as a supplement is likely to help you to reduce fat and increase muscle, if not altogether lose total body weight. However, is that not the end result that most people want? They might not want to be lighter in weight, just to have more muscle mass and less fat tissue.

In a study shown at a 2002 Experimental Biology meeting, it was shown that is was possible to substantially reduce body fat mass by taking CLA alone, and when it was taken in association with guarana, both the size and the number of fats cells in the body were reduced by 50%. However it has also been shown that CLA can be oxidized by free radicals shortly after ingestion, and that sesame lignans help to prevent this. Since sesame lignans can also be used in conjunction with CLA to reduce fat by increasing the level of fatty acid oxidation in the liver, than the benefit of CLA seems obvious.

The antioxidant effect of CLA is one possible explanation for its anti-cancer properties, though there are others. Its antioxidant properties also have an anti-catabolic effect, in that it can help to prevent the wastage of muscle tissue. The FDA has published studies that attest to these anti-cancer properties. Diabetics, however, should consult with their physician before taking CLA as a supplement, since there is a body of thought that it reduces sensitivity to insulin. Others believe the opposite, so more studies might be needed in this aspect of the substance before it can be said to be safe for use by diabetics.

Over recent years, the American diet has increased significantly in its content of the undesirable linoleic acid, due to its ubiquitous presence in margarines, and has reduced in CLA due to modern farming methods. Cattle feeding techniques have resulting in a reduction of CLA in meat products and milk, although eggs are still a rich source, and the CLA in eggs can resist temperatures used in normal cooking methods such as frying, boiling, etc.

It is this CLA deficiency in the diet that has been proposed as one of the reasons for the current obesity problem in the USA. The European diet contains more beneficial fatty acids in general than the American diet.

However, there is an increasing body of evidence being accumulated that collectively that suggests almost unequivocally that CLA can help you lose body fat. Unless you are diabetic, there are few if any contra-indications and an increasing number of people are finding it effective not only to lose body fat, but to replace it with hard lean muscle.

Butterbur extract is taken mainly from the rhizome, root and leaves of the butterbur, a member of the daisy family. They are very hardy and have creeping underground rhizomes and large leaves like those of rhubarb. Another name given to it is the sweet Coltsfoot, and they generally grow in the temperate climates of Europe, North Africa and South west Asia. They like damp conditions, specifically marshes and ditches, and also riverbanks where there are always plentiful supplies of moisture.

It has been used by Native Americans for headaches and inflammation, and has been shown to be an effective remedy for hay fever and to provide relief from painful menstrual cramps. Butterbur has also been used throughout the middle Ages to treat fever and the plague, and has been recorded in the seventeenth century as being used for asthma, wounds and coughs. However, one of its most important applications is in restore bladder function in the incontinent and semi-incontinent.

Urinary incontinence is typified by an unusually high frequency of urination – more than 8 times a day, an immediate strong urge to pass water or leaking and involuntary urination. Any two of these three indicates urinary incontinence. As people age their bladders become smaller, and by definition the periods between urination will reduce. This does not, however, suggest that bladder size is the cause of urinary incontinence.

Urination is caused by the contraction of the smooth layered muscle that surrounds the bladder, called the detrusor, a contraction in turn caused by neurons both in the brain and in the detrusor itself. This naturally contracts and expands according to the volume of urine in the bladder, and once the bladder is about half full the brain will tell you that the detrusor is ready to contract to expel the urine. However, if the time is not convenient, the cortex will suppress this desire until a more convenient time.

In incontinence, the desire is suppressed but the neurons still fire to contract the detrusor, expelling urine at inconvenient moments. Butterbur contains the sesquiterpenes petasin and isopetasin, which are known to reduce spasms in smooth muscle tissue and in vascular walls. It can therefore be used to control the involuntary spasms that cause urine leakage or expulsion against the patient’s wishes. These sesquiterpenes are at highest concentration in the roots of the plant.

The effect that the sesquiterpenes have in inhibiting the synthesis of leukotriene in leukocytes tends to support this effect, since leukotrienes can cause contraction of vascular and smooth muscle tissue. Not only this, but the spasmolytic effect could also be explained by the inhibition of cellular calcium caused by the petasin isomers.

Many studies have indicated that the effectiveness of butterbur extract is also useful in the prevention of migraines. There has been a lot of research carried out on the use of butterbur extract on migraine sufferers, and the effective dose appears to about 75 mg twice daily. There is little evidence of it being a cure but as a prophylactic there appears no doubt of its efficacy: there have been too many positive results against placebos for its effect to be deniable.

It is significant that leukotriene can cause constriction of the small blood vessels in the veins, and so affect the flow of blood. Butterbur, in inhibiting its biochemical production, helps to keep these blood vessels open. Lekotrienes are also important components of inflammation, and altogether it appears that whatever the real cause of migraine, the petasin isomers in butterbur have an effect in inhibiting its initiation. Add to that the potential reduction in calcium content that can cause blood vessels to become less flexible, and the argument for its effectiveness is both irrefutable and well explained.

In one example of such a double blind study that is representative of many, a group of patients given 50 mg butterbur extract twice a day for twelve weeks experienced a 60% reduction in the frequency of attacks, a reduction in the severity of the attacks they did have, and a reduction in the length of the attacks. Although the vascular theory of the cause of migraine is no longer supported, maintenance of the vascular system appears to at least reduce the likelihood of attacks.

The effect of butterbur on asthma and other allergic reactions is also well documented. This again is due to its anti-spasmodic properties and inhibitory effect on the inflammatory immune response through the inhibition of leukotriene synthesis and the consequent positive effect on the metabolism of prostaglandin. Prostaglandins also constrict vascular smooth muscle cells, regulate the mediation of the inflammatory response and constrict general smooth muscle cells. All of these can lead a to a variety of disorders cause by smooth muscle spasms in additional to urinary incontinence, such as menstrual cramps, liver and gastrointestinal disorders and asthmatic conditions.

In one study of allergic rhinitis, administration of butterbur extract appeared to result in a reduction in the histamine and leukotriene content of nasal fluids and no difference was noticed between this treatment and histamine treatment. This was a useful study because histamines causes drowsiness and butterbur can be used as a substitute for histamine without the sedative effect. A study in Germany in 1993 has shown that the stomach ulceration caused by the anti-inflammatory medications for arthritis was reduced by the administration of butterbur extract

Cetirizine is a commonly prescribed prescription treatment for allergic conditions, and studies comparing that with butterbur demonstrated them to be equally effecting in reducing the symptoms typical of allergic reactions such as sneezing, runny nose and nasal congestion. 50% of the patients in the group took each and there was no difference in results. Again it was explained by the petasin limiting the production of leukotriene and histamine, both of which are produced by the immune response and promote mucous secretions and inflammation. They also constrict airways that can be serious to asthma sufferers

These studies are simply providing scientific evidence and explanations for the tradition use of this plant for such conditions. Butterbur has been used for centuries to treat such conditions all over Western Europe, and once again the use of traditional medicine has been supported by modern investigative techniques.

Chlorella is what is known as a micro alga, a single celled vegetable organism that grows in fresh water. Microalgae are microscopic species of plant life that are likely responsible for the biological evolutionary history of our planet. Most people associate algae with seaweed: marine plant life. However, this is a restricted view since algae are also common on land, although are rarely conspicuous and still require an aqueous environment if not necessarily a salt water ocean.

The reason for this is that algae have no vascular tissue to draw moisture up into the body of the plant as terrestrial plants do, and they tend to be found in tropical regions, on snow in areas of the Arctic and also on exposed areas of stone and rock in symbiosis with fungi in the form of lichens. They can also be found in freshwater ponds and rivers, and chlorella is one of these.

Its scientific name is Chlorella pyrenoidosa, and it occurs worldwide. It is said to have the highest concentration of chlorophyll of any other known plant in addition to its other highly nutritional content. The superlatives are almost limitless for such a small plant that most of the general population is unaware of. It is the first plant known to have a true nucleus, it has been around for about two and half billion years, and it can multiply itself fourfold making it the fastest growing species of plant known on earth. It beats other fast-growing algae and bamboo out of site.

So what of its nutritional content? It is believed by NASA to be the ultimate foodstuff for long-term travel in space and an ideal crop for colonizing communities. Were a space community to be established on Mars, chlorella would be the first to be cultivated under these big glass domes we all see in the movies! It is more than just a foodstuff though; it is also the most powerful known natural detoxifier for the human body, which makes it practically the ideal food. Why is this?

If any food deserves to be referred to as a ‘superfood’ it is chlorella. It consists of over 60% bioavailable protein, and contains six members of the vitamin B complex (1, 2, 3, 5, 6, 12) and also vitamins A, C, E and K. It is therefore very high in antioxidants and excellent for destroying free radicals as soon as they are formed, and before they can cause problems such as atherosclerosis and excessive cell damage.

It also contains more than its fair share of minerals such as calcium, manganese, magnesium, phosphorus and zinc, and also iodine, folic acid and a high proportion of iron. Subject: Detox your Body with Wasabi Rhizome

The Wasabi rhizome, the underground fleshy stem of the wasabia japonica plant, is prized not only for its fiery flavour but also its effect in detoxifying the liver. However, make sure that you are getting the real McCoy since many restaurants in the USA do not use the genuine paste.

The wasabi is a plant of the cruciferous family, the same family as cabbage, broccoli, turnip, radish, horseradish and mustard, and is native to Japan and Korea and now grown on the Pacific coast of Canada. It grows best in temperate to cold climates, especially in mountainous areas where there are plenty of cold streams.

Anybody who regularly enjoys sashimi and sushi should be familiar with the wasabi rhizome, that green lump of paste lying on the side of the plate. It is hot and fiery, although not in the same way as the chilli pepper that is fiery on the tongue and in the mouth. This tends to affect the sinuses more, and leaves a sweetish taste once the initial heat has dissipated. However, it is not always what it should be.

The last comment there refers to the practise, especially in the USA, of using dyed common horseradish as wasabi paste, so be careful of that since the two are not equivalent in the health benefits they impart to your body. Although of the same family as the horseradish, and sometimes termed the Japanese horseradish, ordinary horseradish does not have the same health benefits as genuine wasabi, and does not contain the same active ingredients so do not confuse the two.

Real wasabi is normally used grated, and there are specific techniques that should be used to grate wasabi rhizomes to bring out the fullness of the flavour. True grated wasabi should be of a natural pale greenish color rather than the brighter green normally associated with sushi restaurant wasabi.

Traditionally, wasabi rhizome is used as a condiment with sushi, although their leaves can also be used in salad dressings and or as a delicacy pickled in soy sauce or sake brine. The genuine vegetable is difficult to cultivate which explains why ordinary horseradish is dyed and used in its stead, and the vast majority of non-Japanese do not know the difference because it is likely to be all they have consumed under the name of wasabi. The health benefits of the genuine article, however, are considerable greater.
