The Versatility of Coconut Sugar: A Dive into its Culinary Uses, Glycemic Index, and Nutritional ProfileIn the world of health-conscious eating, coconut sugar has been gaining traction as a natural sweetener that boasts several benefits over traditional table sugar. Derived from the sap of coconut palm tree flowers, coconut sugar offers a unique flavor and versatile uses in a variety of culinary applications. This article delves into the numerous ways coconut sugar can be utilized in the kitchen, its glycemic index, and its nutritional profile, shedding light on why this sweetener has captured the hearts of many health enthusiasts.
Culinary Uses of Coconut SugarBAKING and DessertsOne of the most popular ways to incorporate coconut sugar into your diet is through BAKING. Coconut sugar can be used as a one-to-one replacement for white or brown sugar in recipes, making it an easy swap for those looking to reduce their intake of refined sugars. Its caramel-like flavor enhances the taste of cookies, cakes, muffins, and other baked goods. For example, coconut sugar can add depth to chocolate chip cookies or provide a rich, molasses-like sweetness to gingerbread.
BeveragesCoconut sugar can also be a delightful addition to both hot and cold beverages. It easily dissolves in liquids, making it a great sweetener for coffee, tea, smoothies, and even cocktails. For instance, adding a spoonful of coconut sugar to your morning coffee or afternoon chai tea can give your drink a subtle, tropical sweetness without the overpowering taste that sometimes accompanies artificial sweeteners.
Cooking and SaucesIn the realm of savory dishes, coconut sugar works exceptionally well in marinades, sauces, and dressings. Its ability to balance flavors makes it a staple in many Asian cuisines, particularly in Thai cooking. Use it to create a luscious teriyaki sauce or add it to a spicy barbecue marinade. Coconut sugar’s mild sweetness can complement and enhance the umami elements of soy sauce, ginger, and garlic, resulting in a harmonious blend of flavors.
Toppings and CondimentsDon’t overlook coconut sugar as a topping for breakfast or snacks. Sprinkle it over oatmeal, yogurt, or fresh fruit for a burst of flavor and a touch of sweetness. You can also use coconut sugar in homemade granola or energy bars. Its granular texture adds a pleasant crunch, and its rich taste pairs well with nuts, seeds, and dried fruits.
Glycemic IndexOne of the significant advantages of coconut sugar is its lower glycemic index (GI) compared to regular table sugar. The glycemic index is a measure of how quickly a food raises blood sugar levels after consumption. Foods with a high GI can cause rapid spikes and crashes in blood sugar levels, which can be particularly problematic for individuals with diabetes or those managing their weight. Coconut sugar has a GI of approximately 35, which is considerably lower than the GI of table sugar, which hovers around 60-65. This lower GI means that coconut sugar causes a slower, more gradual rise in blood sugar levels. As a result, it can help maintain more stable energy levels throughout the day and prevent the sudden energy crashes that often follow high-sugar snacks or meals.
Nutritional ProfileAside from its lower glycemic index, coconut sugar also offers a more nutrient-dense alternative to refined sugars. While it is still a type of sugar and should be consumed in moderation, coconut sugar contains trace amounts of vitamins and minerals that can contribute to overall health.
Vitamins and MineralsCoconut sugar retains some of the nutrients found in the coconut palm sap. These include small amounts of iron, zinc, calcium, and potassium, all of which play crucial roles in maintaining bodily functions. For example, iron is essential for oxygen transport in the blood, while calcium supports bone health.
AntioxidantsCoconut sugar also contains antioxidants, which help combat oxidative stress and reduce the risk of chronic diseases. Antioxidants can neutralize free radicals, unstable molecules that can damage cells and contribute to aging and diseases like cancer and heart disease.
Inulin ContentAnother noteworthy component of coconut sugar is inulin, a type of dietary fiber. Inulin acts as a prebiotic, feeding the beneficial bacteria in the gut and promoting a healthy digestive system. Its presence in coconut sugar can further contribute to its lower glycemic index by slowing down glucose absorption.
Choosing and Storing Coconut SugarWhen purchasing coconut sugar, it’s essential to select high-quality brands that don’t mix the sugar with other sweetening agents like cane sugar. Always check the label to ensure you’re buying 100% pure coconut sugar.
Storage TipsStore coconut sugar in an airtight container in a cool, dry place to maintain its texture and flavor. It’s important to keep it away from moisture, as this can cause clumping and affect its usability.
Ready to Sweeten up Your Life?Coconut sugar presents a versatile and nutritious alternative to traditional sweeteners, offering a wide range of culinary uses while providing a lower glycemic index and additional vitamins and minerals. Whether you’re BAKING your favorite dessert, sweetening your morning coffee, or enhancing a savory dish, coconut sugar can be a valuable addition to your pantry. Its unique flavor and health benefits make it an excellent choice for those looking to enjoy sweetness in a more wholesome form. By understanding and embracing the versatility of coconut sugar, you can make more informed and health-conscious decisions in your culinary endeavors.

Date:
June 04, 2024 04:57 PM
Agave Nectar: A Delicious AlternativeIn recent years, agave nectar has gained popularity as a natural sweetener, touted for its unique taste and potential health benefits. But what exactly is agave nectar, and how does it stack up against traditional sugar and other sweeteners? In this comprehensive guide, we will delve into the uses and nutritional benefits of agave nectar, comparing it to traditional sugar and other sweeteners to help you make an informed decision.
What is Agave Nectar?Agave nectar, also known as agave syrup, is a sweetener derived from the sap of the agave plant. The agave plant is native to Mexico and has been used for centuries in traditional medicine and as a sweetener. The sap is extracted from the core of the agave plant, then filtered and heated at low temperatures to break down the complex carbohydrates into simple sugars. The result is a sweet, viscous liquid with a taste similar to honey, but with a thinner consistency.
Nutritional Profile of Agave NectarAgave nectar is primarily composed of fructose, a simple sugar found in many fruits. Unlike traditional sugar (sucrose), which is made up of equal parts glucose and fructose, agave nectar usually contains about 70-90% fructose and 10-30% glucose. Here is a quick look at the nutritional content of one tablespoon (21 grams) of agave nectar:
Uses of Agave NectarUse agave nectar in various ways to add versatility to your kitchen. Here are some common uses:
Comparing Agave Nectar to Traditional SugarCaloric ContentBoth agave nectar and traditional sugar contain similar amounts of calories per serving, but agave nectar is sweeter than sugar, which means you can use less of it to achieve the same level of sweetness. This can result in a lower overall caloric intake when using agave nectar as a sugar substitute.
Glycemic IndexOne of the key differences between agave nectar and traditional sugar is their glycemic index (GI). The glycemic index measures how quickly a food raises blood sugar levels. Foods with a high GI cause a rapid spike in blood sugar, while those with a low GI release sugar more slowly and steadily. Agave nectar has a low glycemic index, typically between 13 and 30, which is significantly lower than that of traditional sugar (sucrose), which has a GI of around 65. This makes agave nectar a more suitable option for those trying to manage their blood sugar levels.
Fructose ContentWhile agave nectar's high fructose content may contribute to its low glycemic index, it also raises some concerns. Consuming high fructose intake in large amounts has been linked to obesity, fatty liver disease, and insulin resistance. However, when used in moderation, agave nectar can be a healthier alternative to traditional sugar and high-fructose corn syrup.
Comparing Agave Nectar to Other SweetenersHoneyHoney, often compared to agave nectar, provides a natural sweetener option with similar caloric content, allowing interchangeability in recipes. This sweetener has a higher glycemic index than agave nectar, meaning it can cause a quicker spike in blood sugar levels. However, honey also contains antioxidants, vitamins, and minerals, which can provide additional health benefits.
Maple SyrupMaple syrup, like agave nectar, is a natural sweetener with a lower glycemic index than sugar. It also contains some beneficial nutrients, such as manganese and zinc. However, agave nectar is sweeter than maple syrup, so you may need to use less of it to achieve the desired sweetness.
SteviaStevia, derived from the leaves of the Stevia rebaudiana plant, is a zero-calorie sweetener. It does not affect blood sugar levels and requires only a small amount due to its sweeter taste compared to agave nectar. If you want a super sweet brand of stevia, try Kal brand stevia, it has no after taste and contains over 1800 servings at a reasonable price. While stevia is a good option for those looking to reduce their caloric intake and manage blood sugar levels, some people find its aftertaste less appealing than that of agave nectar.
Potential Health Benefits of Agave NectarLower Glycemic IndexAs mentioned earlier, agave nectar has a lower glycemic index than traditional sugar, making it a potentially better choice for those managing diabetes or trying to maintain stable blood sugar levels.
Antioxidant PropertiesAgave nectar contains some antioxidants, which can help neutralize harmful free radicals in the body. While the antioxidant content is not as high as that found in honey or some fruits, it still provides some benefit.
Digestive HealthFructans, a type of carbohydrate found in agave, can act as prebiotics, promoting the growth of beneficial bacteria in the gut. This can contribute to better digestive health and overall well-being.
Moderation is KeyWhile agave nectar offers several advantages over traditional sugar and some other sweeteners, it is essential to use it in moderation. Its high fructose content can pose health risks if consumed in large amounts, so it's crucial to be mindful of your overall sugar intake.
Are You Ready For a New Kind of Sweetener?Agave nectar is a delicious and versatile natural sweetener that offers some nutritional benefits over traditional sugar and other sweeteners. Its lower glycemic index, antioxidant properties, and potential digestive health benefits make it an attractive option for those looking to reduce their sugar consumption. However, it is essential to use agave nectar in moderation and consider it as part of a balanced diet. By understanding the uses and benefits of agave nectar, you can make an informed decision about incorporating it into your culinary repertoire.

Date:
June 03, 2024 04:15 PM
Stevia: A Zero-Calorie SweetenerIn a world where health consciousness is increasingly important, finding the right sweetener can be a game changer. One such alternative that has gained significant attention is Stevia. Known for its zero-calorie content, Stevia offers a natural sweetness without the drawbacks associated with sugar. This article examines the properties of Stevia, how it’s harvested, its sweetness compared to sugar, and its benefits for those managing diabetes.
What is Stevia?Stevia is a natural sweetener derived from the leaves of the Stevia rebaudiana plant, native to South America. Unlike artificial sweeteners, Stevia is completely natural and has been used for centuries by indigenous people in countries like Brazil and Paraguay. The leaves of the plant contain sweet-tasting compounds known as steviol glycosides, which are the primary components used in Stevia sweeteners found on shelves today.
How Stevia is HarvestedTraditionally, Stevia leaves are harvested by hand. Farmers usually pluck the mature leaves, which are then dried to maintain their sweetness. Once dried, these leaves can be used in their whole form, or they can be processed to extract the steviol glycosides. Modern extraction methods involve soaking the leaves in water and then processing the extract to remove impurities. This results in a highly concentrated sweetener that is hundreds of times sweeter than sugar.
Sweetness Compared to SugarWhen it comes to sweetness, Stevia stands out. Stevia is approximately 200 to 300 times sweeter than sucrose (table sugar). This means a very small amount of Stevia is needed to achieve the desired level of sweetness, which also makes it an efficient option for those looking to cut down on sugar intake. However, it’s important to note that Stevia doesn’t have the exact same taste profile as sugar. Some people describe its sweetness as having a slight, licorice-like aftertaste, which not everyone finds appealing.
Benefits for Those Managing DiabetesFor individuals managing diabetes, Stevia can be an invaluable part of their diet. One of the primary concerns for people with diabetes is managing their blood sugar levels. Traditional sugar can cause spikes in blood glucose, making it difficult to control diabetes symptoms. Stevia, on the other hand, does not contain carbohydrates and has no impact on blood glucose levels. This makes it a suitable alternative for those who need to keep their sugar levels in check. Moreover, using Stevia can help diabetic individuals enjoy sweet foods and beverages without the fear of negatively affecting their health. The zero-calorie aspect of Stevia also contributes to maintaining a healthier weight, which is a crucial factor in managing diabetes.
Nutritional and Health BenefitsIn addition to its zero-calorie feature, Stevia also offers several nutritional and health benefits. Some research suggests that Stevia may help in lowering blood pressure and improving cholesterol levels. These potential benefits make Stevia not just a sugar substitute, but a supplement that can contribute to overall well-being.
Antioxidant PropertiesStevia leaves are rich in antioxidants, which help to combat oxidative stress in the body. Oxidative stress is linked to various chronic diseases, including heart disease and cancer. By incorporating Stevia into your diet, you might benefit from its antioxidant content, aiding in the reduction of inflammation and promoting better health.
Culinary UsesStevia is versatile and can be used in a variety of culinary applications. It’s available in different forms such as powders, liquid extracts, and even whole leaves. You can use Stevia to sweeten beverages like tea and coffee, baked goods, desserts, and even savory dishes that require a touch of sweetness. However, due to its high sweetness level, it is recommended to start with a small amount and adjust according to taste. Keep in mind that Stevia might behave differently than sugar in recipes, particularly in BAKING. Sugar contributes to the texture and volume of baked goods, while Stevia does not. Therefore, recipes using Stevia may require additional adjustments for the best results.
Economic and Environmental ImpactGrowing and harvesting Stevia can be advantageous from both economic and environmental perspectives. Stevia plants require less land and water compared to sugar cane or beet crops, making it a more sustainable option in the long run. Additionally, Stevia farming can provide economic opportunities for communities in developing countries where the plant is grown.
Are You Ready For a Zero-Calorie Sweetener?Stevia stands out as an exceptional zero-calorie sweetener, especially beneficial for those managing diabetes and looking to reduce their calorie intake. Its natural origin, coupled with its impressive sweetness and array of health benefits, make it a compelling alternative to traditional sugar and artificial sweeteners. Whether you are looking to alter your dietary habits or manage a health condition like diabetes, Stevia offers a promising solution for a healthier sweetening choice.

Traditional Use by the Guaraní PeopleThe historical journey of stevia begins with the Guaraní people of Paraguay and Brazil, who have used the plant for over 1,500 years. The Guaraní referred to stevia as "ka'a he'ê," which translates to "sweet herb." They traditionally used stevia leaves to sweeten beverages like yerba maté, a popular herbal tea, and to enhance the flavor of various traditional dishes. Stevia wasn't just a sweetener for the Guaraní; it also held medicinal importance. The leaves were used to treat a variety of conditions, including burns, stomach issues, and as a general tonic. This dual use of stevia as both a sweetener and a medicinal plant highlights its invaluable role in indigenous culture.
Stevia's Journey to the Modern WorldRediscovery by European ExplorersThe modern history of stevia began in the 16th century when European explorers first arrived in South America. Spanish botanist and physician Pedro Jaime Esteve (1500–1556) is often credited with the early European studies on stevia, although the plant was not widely documented until later. In 2008, the United States Food and Drug Administration (FDA) granted stevia the status of "Generally Recognized As Safe" (GRAS), which paved the way for its use in a wide range of food and beverage products. Following the FDA's approval, other countries, including those in the European Union, Canada, and Australia, also approved the use of stevia in food and beverages. Today, stevia is found in everything from soft drinks to baked goods, reflecting its widespread acceptance and global reach.
Challenges and Future ProspectsOvercoming ObstaclesDespite its many advantages, the path to widespread adoption of stevia has not been without challenges. One of the initial hurdles was the aftertaste associated with some of the early stevia extracts. However, advances in extraction and formulation techniques have significantly improved the taste profile of stevia, making it more palatable for consumers. Another challenge has been ensuring the sustainable cultivation of stevia. As demand grows, it is essential to implement agricultural practices that support environmental sustainability and fair labor conditions for farmers.

Debunking Myths About Stevia: Separating Fact from FictionStevia has gained significant popularity as a natural sweetener, but with popularity comes a wave of misconceptions and myths. As consumers become more health-conscious and seek alternatives to sugar, it’s essential to separate fact from fiction regarding Stevia. This article debunks stevia myths with evidence-based info to clarify consumer doubts.
Myth 1: Stevia Is ArtificialFact:One of the most prevalent myths about stevia is that it is artificial. In reality, stevia is a completely natural sweetener derived from the leaves of the Stevia rebaudiana plant. The plant has been used for centuries by indigenous people in South America for its sweetening properties. Unlike artificial sweeteners such as aspartame or saccharin, stevia is derived from a natural source and processed to extract its sweet components, known as steviol glycosides.
Myth 2: Stevia Is HarmfulFact:Another common misconception is that stevia is harmful to health. Scientific studies and regulatory organizations have repeatedly confirmed the safety of stevia. The Food and Drug Administration (FDA) classifies high-purity stevia extracts as "Generally Recognized as Safe" (GRAS) for consumption. Furthermore, research indicates that stevia can have health benefits like lowering blood pressure and blood sugar levels, making it a suitable sweetener for individuals with diabetes and hypertension.
Myth 3: Stevia Tastes BadFact:Some people believe that stevia has a bitter aftertaste, which makes it less appealing as a sweetener. While early formulations of stevia extracts indeed presented a noticeable bitter aftertaste, advancements in processing have minimized this issue. Modern high-purity stevia products are often combined with other natural sweeteners or flavor enhancers to improve taste, making them virtually indistinguishable from sugar in many applications.
Myth 4: Stevia Is Only for DiabeticsFact:While it’s true that stevia is an excellent sweetener for individuals managing diabetes due to its zero-calorie and zero-carbohydrate nature, it is not exclusive to them. Anyone looking to reduce sugar consumption or seeking a natural alternative can benefit from using stevia. It is a versatile sweetener that can be used in a variety of foods and beverages, making it suitable for the general population striving for a healthier lifestyle.
Myth 5: All Stevia Products Are the SameFact:Not all stevia products are created equal. The purity and quality of stevia extracts can vary significantly between products. It's crucial to read labels and choose products that contain high-purity stevia extracts, as some products on the market contain added fillers or lower-grade stevia. By selecting reputable brands and scrutinizing ingredient lists, consumers can ensure they are using high-quality stevia that meets their health standards. Kal Sure Stevia Extract is one of those high-quality brands that stand out in the market. Myth 6: Stevia Causes Allergic ReactionsFact:Some believe that consuming stevia can trigger allergies. However, stevia is generally considered hypoallergenic and does not commonly cause allergic reactions. There have been few documented cases of stevia allergies, and these are typically related to individuals with specific sensitivities. For the vast majority of people, stevia is a safe and well-tolerated sweetener, even for those with common food allergies.
Myth 7: Stevia Leads to Weight GainFact:The notion that stevia contributes to weight gain is counterintuitive, given its zero-calorie nature. Unlike sugar, which is high in calories and contributes to weight gain, stevia provides sweetness without adding calories. Using stevia instead of sugar can help reduce overall caloric intake, aiding in weight management efforts. Multiple studies have shown that replacing sugar with stevia can be an effective strategy for achieving and maintaining a healthy weight.
Myth 8: Stevia Disrupts MetabolismFact:Concerns about stevia disrupting metabolism are unfounded. Research indicates that stevia neither affects metabolic rates nor alters insulin sensitivity in a negative manner. On the contrary, stevia has been shown to have a neutral or even beneficial impact on metabolism, particularly for individuals with metabolic disorders like diabetes. It allows for sweetening without the metabolic consequences associated with high sugar consumption.
Myth 9: Stevia Can’t Be Used in BAKINGFact:There is a misconception that stevia is unsuitable for BAKING due to its chemical composition. While it is true that BAKING with stevia requires some adjustments—since it does not have the same physical properties as sugar—it can still be used effectively. Bakers often use stevia in combination with other ingredients to achieve the desired texture and sweetness. Many recipes and commercial products have successfully incorporated stevia, proving its versatility in BAKING applications.
Myth 10: Stevia Is ExpensiveFact:Consumers sometimes think that switching to stevia will significantly increase their grocery bills. While high-purity stevia products may be more expensive per ounce than sugar, they are much sweeter. A small amount of stevia goes a long way, which means that even a small container can last a long time. In the long run, the cost of stevia can be comparable to or even less than sugar, particularly when considering the health benefits and potential medical cost savings from reduced sugar consumption. Brands like Kal Stevia 3.5 oz contains 1800 servings per container.
Are You Ready to Sweeten Your Life?It is crucial to approach any information about stevia with a critical eye and rely on evidence-based data rather than myths. Date:
October 25, 2022 02:32 PM
Guar gum is a food additive that is derived from the guar bean. It is commonly used as a thickening agent, and can be found in a variety of products, such as frostings, ice cream, and sauces. Guar gum is also frequently used when BAKING with whole grain flours, as it helps to improve the texture and consistency of the finished product. Guar Gum vs. Xanthan Gum Guar gum and xanthan gum are both food additives that are derived from plant sources. They are both commonly used as thickeners, and can be found in a variety of foods, such as salad dressings, ice cream, and jams. Guar gum is made from the guar bean, while xanthan gum is made from fermented corn sugar. Both guar gum and xanthan gum are vegan-friendly and gluten-free. Xanthan gum is a more versatile thickener than guar gum, as it can be used in both hot and cold dishes. Additionally, xanthan gum has a longer shelf life than guar gum. Xanthan gum is also more effective than guar gum at creating viscosity, or thickness, in liquids. However, guar gum is less expensive than xanthan gum, which makes it a more popular choice for many home cooks and bakers. If you are looking for a thickening agent for your BAKING recipes that call for whole grain flour, then guar gum is a good option to consider. Guar gum will help to improve the texture of your baked goods, and can also be used in other dishes such as sauces and frostings. Keep in mind that xanthan gum is a more versatile thickener than guar gum, but it is also more expensive. Ultimately, the decision of which thickener to use will come down to personal preference and budget.

Cryotherapy can also be used, as well as cauterization, where the skin tag is essentially burned off, tying a string around it to cut off blood supply, and laser removal. However, these all require a doctor's supervision. Some natural at-home remedies can be used as well, such as apple cider vinegar, tea tree oil, oregano oil, iodine, garlic, vitamin E, the peel of a banana or papaya, castor oil and baking soda, and cinnamon. You can also prevent further skin tags by keeping your blood sugar at a healthy range through diet. Key Takeaways:
"The best practices for how to remove skin tags at home do not involve cutting; this is dangerous and may lead to a severe infection and permanent scarring." Read more: https://draxe.com/how-to-remove-skin-tags/

Date:
November 09, 2010 06:04 PM
Although aluminum is not a heavy metal, it can be toxic if present in excessive amounts or small amounts if it is deposited in the brain. Many of the symptoms of aluminum toxicity are similar to those of Alzheimer’s disease and osteoporosis. Aluminum toxicity can often lead to colic, rickets, gastrointestinal disturbances, poor calcium metabolism, extreme nervousness, anemia, headaches, decreased liver and kidney function, forgetfulness, speech disturbances, memory loss, softening of the bones, and weak, aching muscles. Since aluminum is excreted through the kidneys, toxic amounts of aluminum can often impair kidney function. When aluminum salts accumulate in the brain, seizures and reduced mental function can often result. In order to reach the brain, aluminum must pass the blood-brain barrier, which is an elaborate structure that filters the blood before it reaches the vital organ. Although elemental aluminum does not ordinarily pass through this barrier, certain aluminum compounds, such as aluminum fluoride, will. Many municipal water supplies are treated with aluminum sulfate and fluoride. These two chemicals readily combine with each other in the blood and are poorly excreted in the urine. The absorption of high levels of aluminum and silicon in the intestines can result in the formation of compounds that accumulate in the cerebral cortex and prevent nerve impulses from being carried to and from the brain in the proper manner. This situation can be aggravated by a chronic calcium deficiency. People who have spent their career in aluminum smelting plants for long periods have been known to experience dizziness, impaired coordination, and a loss of balance and energy. When aluminum accumulates in the brain, the above symptoms are often caused. Perhaps the most alarming thing to note it that there is evidence to suggest that long-term accumulation of aluminum in the brain may contribute to the development of Alzheimer’s disease. It has been estimated that an ordinary person ingests about 3 and 10 milligrams of aluminum a day. Aluminum, being the most abundant metallic element in the earth’s crust, is primarily absorbed in the body through the digestive tract, but can also be absorbed through the lungs and skin. Additionally, aluminum can be absorbed by and accumulate in the body tissues. Since aluminum permeates our air, water, and soil, it can be found naturally in varying amounts in almost all food and water. Aluminum is also used to make cookware, cooking utensils, and foil, along with being present in many other everyday products including over-the-counter painkillers, anti-inflammatories, douche preparations, antacids, BAKING powder, food processing, antiperspirants, toothpaste, dental amalgams, bleached flour, grated cheese, table salt, beer, and municipal water supplies. The following nutrients are very helpful when dealing with aluminum toxicity: apple pectin, calcium, magnesium, coenzyme A, garlic, kelp, lecithin capsules or granules, l-glutathione, a multivitamin and mineral complex, SAMe, vitamin B complex, N-Acetyl Cysteine, and vitamin E. Additionally, the following herbs are great for blocking damage to the body from toxic heavy metals and radiation when taken regularly: burdock root, Echinacea, ginseng, ginkgo biloba, and fiber. Other recommendations to help prevent aluminum toxicity include maintaining a diet that is high in fiber and includes apple pectin; using only stainless steel, glass, or iron cookware, with stainless steel being the best; and being aware of the products that contain aluminum by reading labels and avoiding those that contain aluminum. Sulfur container foods like N-Acetyl Cysteine can help find up heavy metals and eliminate them from the body. If you suspect you have heavy metal toxicity, consult your health care provider immediately. ~facebook~

Comments by Craig Gerbore, CEO of Madhava: Reading through the attack articles and blogs that have surfaced recently one could think that using agave is bad for one's health. These claims are utterly false and misleading. They are extreme views drawn from extreme examples and applied way out of context. They are propagandizing and clearly designed to frighten, not educate. All of the fears and concerns associated with the overconsumption of sugars and calories in general have been unfairly cast on agave. What is a "healthy" sweetener? One that you use moderately and sensibly. Health concerns related to fructose and caloric sweeteners are all dependant on the overconsumption of them. All foods have calories and it is the overall consumption of calories that lead to obesity and related issues, not any one food source. Agave's caloric value is comparable to the other sweeteners in the category. Due to its greater sweetness though, less agave is used compared to the others, so agave actually can reduce caloric consumption per serving. This is due to a higher fructose content. The higher content does not mean higher consumption though, due to the smaller portion used. But, it is not the single serving that matters, it is the number of servings which lead to the overconsumption issues which may result in health concerns. As a reference point, 9-10 teaspoon servings of agave would be the approximate caloric equivalent of one 16 oz soft drink. With this perspective, is agave really being overconsumed as a choice of sweetener for home use? Every single health issue which the attackers have tried to associate with agave is really the result of a caloric overconsumption issue. There are no documented issues with normal, moderate consumption of agave or sweeteners in general as part of our everyday diet. For reasons unknown, some have attempted to isolate agave from the real world and real world conditions with the goal of inhibiting agave's use. They play on people's fears, reference false information and fail to address health issues in any meaningful way. The purpose of this article is to debunk the controversial misinformation surrounding agave. All information debunking the myths and misinformation is based on current science and facts. It is our goal to provide you with useful information so that you can make your personal nutritional choices in a well-informed, science-based manner. The Agave Controversy: Exposing the fraudulent article by Rami Nagel By Dr. Susan Kleiner, PhD, RD, FACN, CNS, FISSN And Craig Gerbore, CEO Madhava The controversy about agave syrup was manufactured by the publication of a single article on the internet, which has been reproduced and adapted for virtually every other article produced on the internet and other media venues. That article, written by Rami Nagel and published on Naturalnews.com, was highly biased and full of inaccuracies, half-truths and misinformation about agave. Since the Naturalnews.com article has been the sole source of nearly all other popular articles in public media, we want to set the record straight with science-based, reliable information to offer a more balanced resource to those interested in learning more about agave syrup. Who is the author, Rami Nagel? According to the description on the Naturalnews.com website, Rami Nagel is a "citizen journalist". This means that Mr. Nagel is self-employed, and not employed as an in-house journalist by the website. He wrote and published the article without any editorial or content oversight, and the editor of the website, Mike Adams, makes it clear that the article was not checked for incorrect or inaccurate information or facts. The introduction to the article, written by Mr. Adams, states that readers had written to comment that Mr. Nagel's resources were biased with conflicts of interest due to their financial interests in competing sweeteners, such as brown rice syrup. So even the website editor himself states that the article is not fact-checked, and it is biased and unbalanced. Who is Russ Bianchi? The sole resource interviewed for the article is Russ Bianchi, identified by the author as Managing Director and CEO of Adept Solutions, Inc. Mr. Bianchi has clear conflict of interest ties to the sweetener industry. We have documentation of the fact that Mr Bianchi had plans to market a product named Replace. It was to be touted as a low calorie alternative sweetener composed of natural and artificial ingredients! Mr Bianchi was prevented from marketing this sweetener as the result of a lawsuit against him by the owner of the formula. Mr Bianchi is quoted by Nagel extensively and exclusively. Many, if not all, of his statements are blatantly false or misrepresentations of fact. He is clearly propagandizing against agave nectar. Was anyone else interviewed for this article? Yes. Craig Gerbore, president and owner of Madhava Agave Syrup, was extensively interviewed by the author but no parts of that interview were included in the article. It is important to note that neither Mr Nagel or Mr Bianchi have not made themselves available for questions on their statements since the articles appearance. They remain out of sight and have entirely avoided the controversy their statements created. What is agave nectar? The opening line of this paragraph in the article by Mr. Nagel states: "The principal constituent of the agave is starch, such as what is found in corn or rice." This is absolutely false. There is no starch in agave. The source of carbohydrate in agave syrup is inulin, a polysaccharide made up primarily of strings of fructose units. Starch is a polysaccharide made up of strings of glucose molecules. They are significantly different, and this difference is why agave syrup is naturally sweet. The very basis of the argument presented by Mr. Nagel is false. The Process The agave plant is a succulent, similar to a cactus. The agave sweetener comes from both the Salmiana agave plant and the agave Tequilana (Blue Agave) which are both organically farmed in Mexico and certified organic by USDA approved certifiers. As the salmiana plant grows it produces a stalk called the "quiote" and when this is removed, a natural liquid called "aquamiel". The liquid is collected from the plant, while Blue agave pinons are harvested and shredded to remove the similar juice. Either can be naturally processed thermally or by enzymes into agave nectar. The juice of the plant is not naturally sweet. The string of connected fructose units that makes up the major proportion of inulin does not have a sweet taste, but when the fructose units are separated (the process is called hydrolysis) by the addition of an enzyme, similar to digestion, or thermally for most blue agave, the syrup becomes quite sweet. That is the entire processing chain for agave nectar. There are no additives, other ingredients or chemicals in Madhava agave nectar. It is absolutely pure and organic and GMO free. ? Mr. Nagel claims that agave syrup is a "refined corn fructose" similar to high fructose corn syrup. This is absolutely false. There is no relationship between agave syrup and high fructose corn syrup in any way, including the source of the product, or the manufacturing process. ? Mr. Nagel refers to a "confidential FDA letter" from Mr. Martin Stutsman, claiming that agave is fraudulently labeled. We contacted Mr. Stutsman at the United States Food and Drug Administration, and his response made it clear that there was never a "confidential FDA letter". He did publish a public letter referenced in an FDA document as "FDA letter from Martin Stutsman to Dr. Eric Wilhelmsen (Wilhelmsen Consulting), May 8, 2000", regarding evaporated cane juice, a topic wholly unrelated to agave syrup. ? He continued in his response to us that the paragraph in Mr. Nagel's article inaccurately reflected the substance of his comments in the document. This link will take you to the original document in which the letter was referenced (reference #2): //www.fda.gov/Food/GuidanceComplianceRegulatoryInformation/GuidanceDocuments/FoodLabelingNutrition/ucm181491.htm In fact, Mr. Nagel fabricated the entire story of the letter. Mr. Stutsman is a lawyer, not a doctor. The quotes were completely taken out of context from the document, and the quotes never referred to agave syrup at any time. Nagel goes on to further misrepresent Mr. Stutsman's intent in the published document by weaving in other inaccurate information that is thoroughly unrelated to the original document. Mr Bianchi's subsequent statements on labeling issues are false and without merit. Mr. Nagel is clearly caught red-handed. He has misrepresented the words of a government official, lied about the facts, and twisted the information to achieve his own agenda. This strategy is repeated throughout the article. ? Mr. Nagel continues his deceptive writing by referring to a quote by the late Dr. Varro Tyler in his book, The Honest Herbal. The first line of the paragraph is a direct quote from the book. Nothing else in that paragraph remotely resembles anything else found in Dr. Tyler's book. Mr. Nagel is trying to claim that agave syrup contains large quantities of saponins, and that they can be harmful to health. Here is the debunking of that paragraph: 1. Dr. Tyler does not include the variety of agave plant used for agave syrup. 2. The entire discussion is about the use of the sword-shaped leaves and the stem. Agave syrup is produced from the natural liquid in the plant. The saponins are isolated from the leaves of the plant. 3. There is no documented evidence to suggest agave syrup contains worrisome levels of saponins and the entire rest of the discussion about health dangers is fabricated and false. Sugars People are going to continue to consume sweet food and drink. There are only three categories of choice to sweeten food. Those are artificial sweeteners, stevia, or caloric sweeteners from natural sources, sugars. Most people will not choose artificial. Many will not choose stevia. That only leaves the category of sugars. In this group, agave is a good choice due to its organic quality, ease of use, neutral flavor, low glycemic index and the fact that less is used to equal the sweetness of the others in the category. The sweeteners in this category are composed of three primary sugars used to sweeten foods: glucose, fructose and sucrose. These sugars belong to a class of compounds known as carbohydrates. "Saccharide" is a term that denotes sugar, or substances derived from sugar. Monosaccharides are simple or single sugars; disaccharides are derived from two joined monosaccharides and when they are hydrolyzed, or separated, they yield two molecules of simple sugar. Strings of more than two sugar molecules are called polysaccharides. This category includes compounds such as starches, cellulose and inulin. Glucose and fructose are monosaccharides. Glucose and fructose are found abundantly in nature in fruits and plants. Sucrose is the disaccharide formed by the joining of glucose and fructose, also known as table sugar. When comparing their relative sweetness, glucose is the least sweet tasting, sucrose is next, and fructose is the sweetest of the three sugars, measured as 1.4 times sweeter than table sugar. Because it is so sweet, people typically use less fructose when sweetening foods compared to sucrose. ? In the article by Mr. Nagel he states , "fructose is not what is found in fruit. Commonly, fructose is compared with its opposite and truly naturally occurring sweetener, known as ‘levulose' (made by nature)..." Another fabrication. In fact, levulose is just another name for fructose. There are various nomenclatures used in the scientific naming of compounds. Fructose and levulose are exactly the same thing; the names are interchangeable. It is no different than if you called your father, "dad", and your sibling called your father, "father". He would still be the exact same person. Fructose and levulose are different names for the exact same thing: a sugar found in nature. Mr. Bianchi also is quoted to say that the body does not recognize the fructose in agave. This is another false piece of propaganda which demonstrates just how far he is reaching. If this were true, it would have no impact on us. He immediately contradicts himself with the claims of detrimental effects caused by the overconsumption of fructose. Using Sugars Sugars can be compared to each other in their ability to raise blood sugar levels by using the Glycemic Index. The scale is set from zero to 100, where low numbers do not have much impact on blood sugar levels, and high numbers raise blood sugar levels quickly. Fructose is very low on the scale. Because agave syrup is high in fructose, it has a rating of 32 or lower. Honey, which has a higher proportion of glucose to fructose, has a Glycemic Index of 58. Sucrose has a Glycemic Index of 68, and glucose, serving as the index standard, is 100. All sugars, whether fructose, glucose, sucrose or others, contribute 4 calories per gram to our total diet. 1 teaspoon of sugar = 4 grams = 16 calories In addition to calories, sugars sweeten our foods offering a desirable taste and adding enjoyment and pleasure to our dining. During cooking and BAKING, sugars allow for browning and the unique consistencies of syrups, candies, frostings and frozen desserts. The varieties of sugars, such as crystallized table sugar, brown sugar, raw sugar, molasses, honey and agave nectar, among others, contribute different properties and flavors to foods. When you add your own sugar to foods you are in control of how much sugar you use. Most people would never add as much sugar as do the food manufacturers. Moderate amounts of sugar can certainly be enjoyed as part of a healthy diet for an active individual. Natural sugars are easily metabolized and utilized by the body, offering a very efficient source of fuel for physical and mental activity. Of course, sugars should be used in moderation in the diet. This can control calories and help create a diet that is dense in nutrients. Impact of sugar on health and disease ? The remainder of Mr. Nagel's article works to link agave syrup with the increased incidence of obesity, diabetes, metabolic disease, and the general rise of morbidity and mortality in the population. This is an overconsumption issue involving far more than the occasional use of agave. Here are the facts: • Rats that are fed a high fructose diet become obese and will develop the chronic diseases associated with obesity: insulin resistance, diabetes and metabolic disease. • No one should eat a diet that reflects this type of experimental diet. • Too much sugar in the diet, whether from fructose, glucose or sucrose, can be unhealthy. Diets high in sugar promote tooth decay and periodontal disease; create an overabundance of calories and a deficit of nutrients. This scenario typically leads to weight gain and the development of chronic disease. • Active individuals can include a moderate amount of added sugar in their diet without negative health consequences. When calorie intake is balanced with physical activity, sugar serves as an efficient source of fuel for muscles, the brain and the central nervous system. • According to the World Health Organization (2003), individuals can healthfully include 10% of their daily calories from added sugars. This translates into 200 calories for a 2000 calorie diet, or 12½ teaspoons of added sugar daily. Clearly, one can safely add a couple of teaspoons of sweetener to a cup of tea or coffee, or have a little sweetened food without worrying about their risk of developing disease. • Agave syrup, which is sweeter than other sugars and low on the Glycemic Index scale, is a good choice to include as one of the added sugars in your diet because you will use less sugar (and therefore fewer calories) and minimally raise blood sugar levels. Just a teaspoon of agave: the healthy use of sweeteners in your diet We all want to live healthier and longer lives. Diet and nutrition plays a key role, impacting our health and our ability to perform physically and mentally now and into the future. Food offers us not only sustenance, but also pleasure and enjoyment. Food is present in so many parts of our lives: at celebrations, business events, family events, religious and spiritual occasions, sports outings, the focus of our family meals, intimate dinners, and sometimes just the excuse to socialize. Sweet foods make us feel good. Sugar allows for the elevation of serotonin in our brains, the "feel good" neurotransmitter that elevates mood, helps us focus, and in the evening, helps us relax and sleep. Sugar is a source of energy for our muscles, brain and central nervous system. Without sugar our bodies will not function at peak capacity. Too much sugar, however, is not good. In small amounts sugar energizes us, but in large doses, repeated throughout the day, day in and day out, sugar puts stress on the body. The extra calories can lead to weight gain and obesity, which in time can lead to chronic disease. In the short term, high sugar intakes can lead to a nutritionally deficient diet and a sense of being on an emotional roller coaster. So be selective about your use of sugars and use them in moderation in your diet. Just like all foods, a variety will enhance the nutritional content of your diet and the flavor and tastes that you can enjoy. Since sugars come in different forms and have different flavors, they can be used most effectively in specific foods and beverages. For instance, agave syrup is liquid and less viscous than honey, making it easy to mix into cold liquids like iced tea and coffee, and is great to add to cold unsweetened cereals for a little sweet taste. Agave's mild flavor allows chefs and bakers to sweeten foods lightly, without overpowering the taste of the dish. Pay attention to how much sugar is added to your diet every day. Read labels so that you know when sugar is added to manufactured foods. Keep the consumption of added sugars in your diet to no more than 10% of your total daily calorie intake so that you have plenty of room for nutrient dense foods like fruits, vegetables, grains, dairy, protein-rich foods, nuts, seeds and healthy oils. Remember that nutrition is a science based on facts. We are making great advances in our understanding of the science of foods and nutrition. Beware of people with hidden agendas using fear tactics to influence your choices. Don't take their opinion at face value. What are their credentials? What conflicts of interest do they have? If they do not disclose conflicts, then assume that they are manipulating the truth. Most of all enjoy food. Think about what you need to eat to promote whole health. Don't overindulge, but don't deprive yourself of the bounty of wonderful tastes, either. Use celebrations as occasions to enjoy your favorite foods and try new ones. A teaspoon or two of sugar easily fits into the diet of an active, healthy person. Agave syrup offers an organic low-glycemic choice for those looking for that option. Most of the time, halitosis is caused by poor dental hygiene. However, there may be other factors involved such as gum disease, tooth decay, heavy metal buildup, infection of the respiratory tract, improper diet, constipation, smoking, fever, diabetes, foreign bacteria in the mouth, indigestion, inadequate protein digestion, liver or kidney malfunction, postnasal drip, stress, and too much unfriendly bacteria in the colon. Additionally, halitosis can be caused by a buildup of toxins in the gastrointestinal tract, salivary gland disorder, chronic bronchitis, sinusitis, or diabetes. It is also true that dieting, alcohol abuse, or fasting can also cause bad breath. “Morning breath” is the product of dehydration and the reduction in the amount of saliva. This saliva is necessary for washing away bacteria in the mouth. Dieters and people who are fasting may often experience bad breath. This is because the lack of food causes the body to break down stored fat and protein for fuel. The metabolic wastes that are a result of this process have an unpleasant odor as they are exhaled from the lungs. The following nutrients are beneficial for dealing with and preventing bad breath. One tablespoon of chlorophyll can be taken in juice twice daily, as green drinks are one of the best ways to combat bad breath. 2,000 to 6,000 mg of vitamin C with bioflavonoids should be taken daily. Vitamin C is important in healing mouth and gum disease and preventing bleeding gums. This nutrient also rids the body of excess mucus and toxins that cause bad breath. Acidophilus should be taken as directed on the label. It is needed to replenish the friendly bacteria in the colon. Insufficient friendly bacteria and an overabundance of harmful bacteria can often cause bad breath. Garlic acts as a natural antibiotic by destroying foreign bacteria in both the mouth and the colon. It is recommended that you take 2 capsules of the odorless form 4 times daily, with meals and at bedtime. 30 mg of zinc should be taken three times daily as it has an antibacterial effect and neutralizes sulfur compounds. These sulfur compounds are a common cause of mouth odor. Bee propolis should be taken as directed on the label. It is helpful in healing the gums, aiding control of infection in the body, and also has an antibacterial effect. 15,000 IU of vitamin A should be taken daily; it is needed for control of infection and also in healing of the mouth. Additionally, 100 mg of vitamin B complex is needed for proper digestion. The following herbs are also beneficial for dealing with halitosis. Alfalfa supplies chlorophyll, which cleanses the bloodstream and colon, where bad breath often begins. Gum disease, which is a major factor of bad breath, can be treated with goldenseal extract. This extract can heal the infected parts. Myrrh, peppermint, rosemary, and sage should be used to brush your teeth and rinse your mouth. Chewing a sprig of parsley after meals is an excellent treatment for bad breath. This nutrient is rich in chlorophyll, which happens to be a popular ingredient in breath mints. Other herbs that can be beneficial include anise, cloves, and fennel. Whether you want to take it into your own hands to heal your gums from disease, a gum disease can be a sign of a more significant health problem that should be looked at by our health care provider. In either case, vitamins and herbs can be found at your local or internet health food store.

Grilling meat over an open fire is something our ancestors have been doing for thousands of years. But people today who are indulging in chicken and cheeseburgers face a lot of concerns that our ancestors never even dreamed of. These include air pollutants and cancer-causing compounds. Research has proven that grilling meats creates two types of compounds that can lead to cancer. More so, both briquettes and lump charcoal spew hydrocarbons and soot particles as they burn, which encourage global warming contribute to many health problems. However, the majority of us cannot resist barbeque. So instead of dodging barbequed food, learn to grill without the guilt and fewer health risks. Barbeque emissions are well below those from motor vehicles and the industry in rank, but its environmental effects are just as harmful given that burning charcoal contributes to smog and global warming. Lump charcoal is actually made from charred wood, which is a factor in deforestation. It can be compared to fuels that we use in furnaces and water heaters, such as oil, gas, and wood. Like these other fuels, charcoal produces soot when it is burned. These particles in soot are air pollutants and microscopic solids which are inhaled and deposited in the lungs. Particle pollution is associated with asthma, strokes, heart attacks, lung cancer, and reduced life expectancy. Once animal fat drips onto the flame of a charcoal or gas grill, carcinogenic compounds rise with the smoke and are deposited on the meat. Other harmful chemicals are then formed on the food as it continues to char. The more time the meat spends on the grill, the more harmful chemicals that are created. These compounds do not form on vegetables, as it is a reaction with animal-based foods that generates the harmful effects. However, any food that is over-charred contains other types of cancer-causing substances. Grilling is a method of cooking that adds to the formation and deposit of cancer-causing substances on meat, as both substances deposited are undesirable and carcinogenic. The high heat of grill cooking produces more harmful chemicals than oven roasting or BAKING a lower temperature, but beef and chicken must both be cooked at temperatures high enough to destroy E. coli and other harmful bugs. Because cancer risk is influenced much more by long-term patterns than occasional patterns, the goal is to have a diet that balances calories you take in with calories you put out, and to eat a diet containing many fruits and vegetables. Grilling less meat and more vegetables can reduce pollution on many levels. Also, vegetarian sources of protein, such as veggie burgers, contain few or no harmful chemicals when grilled. So for those summer days when a barbecue is irresistible, be sure to use natural charcoal, which is made from environmentally friendly wood sources and low-emission plant wastes. Thankfully, all natural charcoals are chemical-free. In order to minimize cancerous compounds on the grill, cook at lower temperatures and flip meat every one to two minutes. Marinating meat or precooking it in a microwave for two minutes will also reduce hazardous compounds and carcinogenic compounds can be reduced by grilling lower-fat meats with fewer fat drippings.
By simply limiting the animal protein portion and making vegetables and grains a larger part of the meal, you can minimize the carcinogens and maximize your intake of cancer-protective vitamins and natural compounds. For most eliminating meat is undesirable, so supplementing with herbs and vitamins that help boost the immune system and act as antioxidants such as grape seed extract, vitamin c, and bioflavonoids can help the body fight off those nasty carcinogens produced from grilling.

Date:
January 21, 2008 01:57 PM
The majorities of baby boomers are looking for a way to loose weight and lower their cholesterol. Both of these are two important factors in heart disease, which still remains the number one killer in the United States. The good news is that you can dodge heart disease through your food choices. Below are six foods that can help boost your heart health. Many studies have proven the variety of health benefits given by fish, ranging from joint inflammation in arthritis sufferers to brain development in babies. The omega-3 fatty acids found in fish support circulation and improve blood vessel function. Researchers have also determined that omega-3s can prevent heart-attack deaths as they stop the electrical disturbance that causes death and half of all heart attacks are due to these arrhythmias. Each week, you should eat one to two 3-ounce servings of fatty fish such as an Alaskan salmon, anchovies, herring or mackerel. By BAKING or poaching these fish at low heart you can help to preserve the omega-3s. For vegetarians, omega-3 rich flaxseeds can be added to oatmeal, smoothies, or salads. For those who don’t care for fish there are omega-3 oil supplements available as well. Have you ever wondered why oatmeal is so good for you? In your body, this gluey beta-glucan, which is soluble fiber, binds to bile acids found in the intestines and stomach and excretes them as waste. In order to make more bile acids, the liver needs cholesterol and takes it from the blood. This results in lower blood cholesterol levels. You need 3 grams of soluble fiber each day to reduce your cholesterol by five percent. A cup and a half of cooked oatmeal is a good size serving that can be jazzed up in flavor with frozen berries, non-fat plain yogurt, almonds and much more. High-glycemic foods like potatoes, white bread, and white rice should be avoided because you get a harmful burst of glucose and insulin that’s harmful immediately after eating them. These bursts tire out the pancreas in the long run and increase the risk of diabetes and heart disease. Research also shows that having high-glycemic foods at one meal will make you even hungrier and eat more at the next, which is why these foods are associated with weight gain. People with excess fat are much more likely to develop heart disease and stroke even if there are no other risk factors. Because of this, focusing on true grains such as brown rice, quinoa, and barley and choosing them over refined grains as much as possible. Nuts are important for their unsaturated fats and their ability to help lower cholesterol. Walnuts actually contain omega-3 fatty acids, while almonds boost calcium, helping the heart muscle to contract, and Brazil nuts have selenium, which is a heart-protective antioxidant. About one ounce each day of nuts is good for you, but they do have a lot of calories so make sure to go easy on them. If you have a nut allergy, topping you salad with olives is a good alternative, as they contain unsaturated fats. Beans also contain soluble fiber like oatmeal which helps to reduce cholesterol and keep arteries clear. By choosing the protein from beans instead of meat, you can cut back on saturated fats which raise cholesterol. Eating beans four to five times a week is recommended, as they can be added to a lot of meals. If you don’t tolerate beans well, try adding kombu, a sea vegetable, to them to help break down the components that cause gas. Your body also does adapt to beans over time, so try building up your bean servings slowly. Food enzymes can help reduce gas as well so don’t forget to take your enzymes. Blueberries, strawberries, raspberries, and other berries all have strong antioxidant properties that can help fight heart disease and are also low in calories and high in fiber. Eating two cups of fruit each day for general health is recommended, but you should eat as many berries as you can tolerate. Free radicals can break down cholesterol that is flowing in your blood and make them sticky so to deposit on the arterial walls of your blood vessels. Fight this with antioxidant rich foods to reduce cholesterol build up.
Eating healthy is one step in boosting heart health and overall cardiovascular health. Exercise is also important in keeping your body strong and vibrant so one can live a healthier longer life.

Date:
December 09, 2007 03:23 PM
There are many natural sweeteners to choose from if you want to avoid sugar, but don’t want any of the artificial sweeteners over which there are a few questions. You can choose from xylitol, luo han, stevia and others, but before discussing these, let’s have a look at the problems with sugar, artificial sweeteners and the American sugar industry. Sugar as most people know it originates either from sugar cane or sugar beet, though by far the biggest American industry is in the cane. There are many different types of sugar, though that obtainable from cane sugar is sucrose. Sucrose is a disaccharide and carbohydrate, stored by plants as a reserve energy source to be used when needed. Humans cannot directly use sucrose, and it is metabolized in the body to glucose which needs the hormone insulin to help convert it into energy. Insulin is produced in the pancreas, and a lack of it, or the body’s failure to use it properly, is referred to as diabetes. There are two types of diabetes: Type 1: A total lack or deficiency of insulin due to the pancreas producing insufficient quantities of insulin, or even none at all. This is often seen in young people and is generally cause by the immune system attacking the insulin-producing sells in the pancreas. The treatment for type 1 diabetes is to introduce insulin to the blood, normally by means of injections, plenty exercise and the adoption of a high carbohydrate low fat diet. Type 2: This is strongly associated with obesity and weight, and is due either to insufficient insulin production by the pancreas (but not as deficient as for Type 1 diabetes) or an inability of the cells of the body to properly use insulin. Type 2 diabetes does not always require insulin injections, and can be treated by exercise, diet and weight control. However, there are occasions where insulin injections are also required. It tends to affect people older than those with Type 1 diabetes and 90% of cases are of this type. Both types, however, are connected with an excess of glucose in the blood, into which most sugars are converted. A diet low in sucrose will go a long way towards helping people that suffer from either type of diabetes, and control of carbohydrate intake should include a reduction in the intake of sucrose in the form or beet or cane sugar. This accepted, then if you need a sweetener, a saccharide free natural sweetener would appear to be the logical choice. You could opt for a synthetic sweetener, but they also have their problems. There is evidence that saccharin could be a carcinogen, and ‘aspartame’ disease is not a myth. The other artificial sweeteners also have sufficient questions that natural sweeteners would appear to be the obvious choice. But which? That is the question. Let’s have a look at some and check out their pros and cons. The first is Stevia. This is a South American herb that is 400 times sweeter than sucrose and yet is very low in calories and does not affect diabetics. Used throughout most of the world, it has not been approved by the FDA as a food additive due mainly, it would appear, to lobbying by the American sugar corporations. This is understandable, since mass substitution of sugar by stevia in processed foods is entirely possible, but would cost the sugar corporations billions. However, it is available to purchase from health food stores, and does not appear to possess the problems that aspartame does. Unlike that sweetener, it can be used in BAKING and cooking, and is ideal for diabetics and people suffering from yeast infections such as candida. Such infections are aggravated by sugar in the colon, since yeasts love sugar, but they cannot survive on stevia. The safety of stevia has been proven through hundreds of years of popular use without any problems. However, there are others. Luo Han Guo is a sweet Chinese fruit of which extracts are marketed as a natural sweetener. The plant it comes from is the Momordica grosvenori, a member of the cucumber squash family that grows in the mountainous areas of southern China. The sweeteners it contains are called mogrosides that are terpene glycosides, of which there are five different forms, the main one being termed mogroside-5. The extract is available in the form of a powder consisting of around 80% mogrosides, and possesses around 250% of the sweetness of sucrose. This, too, can be used in cooking; because it is stable to heat and contains about 2% of the calories of ordinary sugar (one half teaspoon is equivalent to 25 teaspoons sugar). You can help 50 medicines go down for the same calories of getting one down using sugar! Not only that but, like stevia, there are no known side effects. It has been used for many centuries in Chinese medicine in the treatment of gastrointestinal conditions and conditions of the respiratory tract. Unlike natural sweeteners, luo han has been found to be useful in helping to manage diabetes since it does not cause insulin levels to rise and are not involved in energy production, so have no effect on your weight. The mogrosides from luo han are also under study as inhibitors of certain tumors, and might be able to inhibit skin tumor growth. Other possible medical advantages include helping to reduce atherosclerosis and heart disease, so would appear to be a useful sweetener to use in your coffee! Finally, xylitol. It was during World War II that Finnish scientists rediscovered xylitol that had been previously used in Germany as a sweetener in the late nineteenth century. The sugar shortage resurrected this substance that can metabolize without the need for insulin. Xylitol is a substance that is found in some fruits and vegetables and also in corn cobs. In fact, it is a product that appears in animal metabolism, and so is perfectly safe. It is known to help support the immune system, and to help reduce the effects of aging. It possesses antibacterial properties due to its 5-carbon ring and has been approved by the FDA. Xylitol can replace sugar in most of its domestic uses, including in BAKING and as a natural sweetener. It is also used extensively in chewing gum as a sweetener that does not cause dental cavities due the acid caused by bacterial attack on the sugar. However, one use to which xylitol cannot be put, nor any of the other natural sweeteners mentioned here, is in fermentation. Try these for your wine or beer and you will be very disappointed at the low alcohol level of your brew! This is also, however, one of the benefits of xylitol: it cannot feed the yeasts that cause candida or any other yeast infection. Although it is a saccharide, it is the same as the others in this respect. So, which of these natural sweeteners should you take? The choice is yours since each has its own benefits with very few disadvantages and certainly no recorded side effects that we know of. Use stevia for superior sweetening effects, and make up a concentrated solution of it in water for your cooking. Use luo han if you have gastrointestinal problems, and use xylitol if you want fresher breath and to protect your teeth. Use none for brewing or winemaking, and use any of them if you are diabetic. The choice is yours. These sweeteners are available at your local or internet health food store.

Date:
October 04, 2006 04:53 PM
Health experts keep changing the storey on fats. First we were told that polyunsaturated fats were better than saturated fats. Then it was discovered that refined polyunsaturates were favorite targets for free radical attack. Next, monounsaturated fats took center stage and have remained in the spotlight ever since. The Mediterranean Diet, with its high intake of olive and other oils high in monounsaturates, offers several important safeguards against cardiovascular disease, cancer and overall mortality. (Laino, de Largeril, Kokkinos, Trichopoulou). While monounsaturated fats are important for maintaining optimum health and smooth supple skin, it’s the kind of fatty acids and antioxidants they contain that make up the real story. Designer Oils Dark green unrefined “extra Virgin” olive oil has a delightful full bodied flavor due to its natural antioxidants. Not only are the oils of various olive cultivars distinctive, they all help fight arterial plaque buildup. (Visioli) Olive oil has a long history in Europe as both food and medicine, and carbon dating of seeds found in spain have shown that the use of olive oil dates back 8,000 years. Gourmet chefs usually prefer particular oils for various uses in making dressing, marinades, and sauces for dipping. Olive orchards have now achieved a status second only to that of vineyards. Macadamia nut oil is another designer oil that is fast gaining a reputation among chefs and health experts. The nuts originated in Australia where they were staples in the diets of the Aborigines. In 1881, they were introduced in Hawaii and in the 20th century, made their way to California where several cultivars are now grown. Like olive oil, macadamia nut oil is rich in antioxidants and contains the highest levels, greater than 80 percent monounsaturates, primarily polmitoleic (omega-7) than other oils. (Hiraoka-Yamamoto) Macadamia nut oil products found in mass market are typically refined, with many of the antioxidants removed. The highest levels of antioxidants in macadamia nuts are found in the shells. During cold processing, some of these antioxidants leech into the oil, increasing its antioxidant potential. (Quinn) unrefined and organic oils have a golden color, pleasing nutty aroma and buttery flavor. Scientists have found that macadamia nut oil lowers, LDL cholesterol and triglycerides, and may help prevent stroke. (Yamori, Colquhoun) It is delightful on vegetables, in soups, on popcorn, and as a replacement for butter in BAKING. EFA Supplements The essential oils (Fish oils, flaxseed, GLA, DHA), which are available as liquid and packaged in black bottles, must be stored in the Refrigerator even when they have not been opened. You cannot heat or cook with them. Essential fatty acid supplements are convenient to take and have specific therapeutic value. Cardiovascular and Nerves – Consumers have been advised to eat more fish rich in Omega-3 to reduce their risk of cardiobascular disease. However, experts worry that eating several servings of fish each week may not be safe especially during pregnancy, dursing or trying to conceive. Instead they recommend fish oil supplements such as Omega-3 from Algae , Fish oil, and Omega-6 Evening Primrose and Borage oils. Pain Relief – A blend of cetylated fatty acids including myristate, myristoleate, laurate, oleate, palmitate and palmitoleate appear to be effective in reducing inflammation and pain in arthritis and other inflammatory conditions. (Vanderhaeghe) In a San Diego California study of sixty-four patients with osteoarthritis, an oral preparation of cetylated fatty acids known as celadrin significantly improved range of motion and flexibility. (Hesslink) Two other studies of osteoarthritis patients at the University of Connecticut, using a topical preparation of Celadrin, showed significantly greater knee stability, improvement in stair climbing ability, balance and strength, and reduction of pain. (Kraemer) Animal studies at the University of Minnesota have shown that cetylated fatty acids administered either topically or orally are well tolerated and rapidly dispersed throughout the body. (Gallaher) Doses for the oral form are 1500mg three times a day. The topical cream is applied two to four times a day.

Date:
July 15, 2005 12:52 PM
HOW TO USE STEVIA? The most frequent mistake people make with powdered stevia is measuring out too much. Very tiny amounts of the powder can greatly sweeten. Liquid extracts can be measured out in drops until the right amount of sweetening is achieved. Often just one half to one teaspoon of the liquid achieves the same effect as one cup of white sugar. If a powdered form is used, mixing it with hot water is recommended in order to create a more workable concentrate. Hot liquids seem to release the sweetening power of stevia more rapidly. This concentrate should be refrigerated and measured out with an eye dropper. Baked goods sweetened with stevia do not brown as much, and using stevia in recipes with distinct flavors like lemon, cinnamon, carob, etc. achieves better results than adding it to blander food items. BAKING with stevia takes some getting used to. Stevia can also be added to other sweeteners like honey to lower their caloric content. People who cook with stevia often add it to honey or molasses to potentiate sweetening power in smaller quantities. Stevia works particularly well on dairy products, fruit dishes, beverages and fresh desserts. It can be combined with other sugars such as molasses, honey, maple syrup, fructose etc. in order to minimize their use. (NOTE: Stevia does not work well with yeast breads which require caloric forms of sugar to rise.

Date:
July 15, 2005 12:24 PM
STEVIA (Stevia rebaudiana) SYNONYMS: sweet herb, honey leaf PARTS USED: leaves Description Stevia is a small perennial shrub with green leaves that belongs to the aster (Asteraceae) or chrysanthemum family of plants. They grow primarily in the Amambay mountain range of Paraguay but over 200 various species of stevia have been identified around the globe. Stevia rebaudiana is the only species at present which possesses an inordinate ability to sweeten. Its common form is known as stevioside, a fine white powder extracted from the leaves of the plant. Phytochemistry STEVIOSIDE/REBAUDIDOSIDE COMPOUND DUO: The leaves of the stevia shrub contain specific glycosides which produce a sweet taste but have no caloric value. Stevioside is the primary glycoside involved in this effect. Dulcoside and rebaudioside are also major glycosides contained in the herb. Glycosides are organic compounds which contain a sugar component (glycone) and a non-sugar component (aglycone). The glycone constituent may be comprised of rhamnose, fructose, glucose, xylose, arabinose etc. The other portion may be any kind of chemical compound such as a sterol, tannin, carotenoid, etc. Stevia leaves also contain protein, fibers, carbohydrates, phosphorus, iron, calcium, potassium, sodium , magnesium, rutin (flavonoid), iron, zinc, vitamin C and vitamin A. Human physiology cannot metabolize the sweet glycosides contained in stevia leaves, therefore they are eliminated from the body with no caloric absorption. Stevia, unlike aspartame, can be used in BAKING because its sweet glycosides do not break down when heated. Definition Stevia is an herb with incredible sweetening power. Its ability to sweeten is rated between 70 to 400 times that of white sugar. Typically, it has a mild licorice-like taste and is completely natural in its biochemical profile. What makes stevia so intriguing is that unlike other natural sweetening agents, its is completely calorie-free, never initiates a rise in blood sugar, and does not provide “food” for microorganisms like bacterias and yeasts. Stevia may well be the most remarkable sweetener in the world and yet its recognition in this country remains relatively low. Consider the extraordinary attributes of the stevia plant and its extracts:
A Brief History Stevia is a plant indigenous to mountainous regions of Brazil and Paraguay. For centuries, this herbal sweetener has been used by native cultures to counteract the bitter taste of various plant-based medicines and beverages. The Guarani Indians of Paraguay have used this potent sweetener in their green tea for generations. The name they designated for stevia leaves was “sweet herb.” In addition, these native peoples have historically used stevia as a digestive aid and a topical dressing for wounds and other skin disorders. In the sixteenth century, Europeans became aware of the herbal sweetener through the Spanish Conquistadors. In the late 1880s, Moises S. Bertoni, director of the College of Agriculture in Asunción, Paraguay, became extremely intrigued by the stevia plant. Its reputation was that it was so sweet that even just a small leaf part could sweeten an entire container of mate tea. Be rtoni wanted to find out if this was true. After several years of studying the plant, he wrote about it in a local botanical publication. In 1905, Bertoni published an important article about the incredible sweetening power of the stevia plant, which he considered superior to sugar and extremely marketable. Other articles written by Bertoni note that stevia is unquestionably superior to saccharine because it is nontoxic and has significant therapeutic benefits. It sweetens with unprecedented potency and can be used in its natural state. The first stevia crop was harvested in 1908 and subsequently, stevia plantations sprang up in South America. In 1921, the American Trade Commissioner to Paraguay, George S. Brady, wrote that although the herb is an extraordinary sweetener with remarkable properties, little had been done to commercially cultivate the plant. He suggested that stevia may be an ideal sugar product for diabetics and strongly advised that American companies pursue its importation. During the decade of the 1970s, the Japanese developed a new method which could better refine the glycosides contained in the stevia leaf. The result was a compound called ste-vioside which is from 200 to 300 times sweeter than white sugar. The Japanese approach artificial sweeteners with great caution and they believe stevioside to be safer and more effect i've than other non-nutritive, chemical products. Stevioside is considered superior in its ability to sweeten; however, it does not exhibit some of the other therapeutic actions found in whole stevia leaves . Stevia enjoyed substantial popularity during the 1980s as a natural sweetener and was found in a variety of consumer products. In 1986, however, the FDA abruptly seized stevia inventories and in 1991 claimed it was not suitable as a food additive. Advocates for stevia claim this happened because the herb is a natural, powerful, inexpensive and non-patentable sweetener, and therefore poses a threat to pharmaceutical sweeteners and sugar-alcohol sweeteners like mannitol, sorbitol and xylitol. At this writing, stevia has received approval by the FDA to be sold only as a dietary supplement, not as a sweetening agent. Currently, stevia is commercially grown in Paraguay, Brazil, Uruguay, Central America, Israel, China, Thailand, and the United States. It is considered an important natural sweetener in both Japan and Korea, and has been safely used in these countries for decades. Extracts of stevia and related products make up a considerable portion of the Japanese market for natural sweetening agents. They use stevia in sweet sauces, pickles, beverages, etc., making Japan one of the largest single consumers of stevia in the world. Today, because the demand for stevia is escalating, several Paraguayan organizations are looking to expand the commercial cultivation of the plant. Currently, Canadian researchers and chemists are working to provide even better stevia supplements and may even end up teeming with governmental agencies to raise stevia crops as economic replacements for tobacco leaves (Bonvie, 64). Stevia has not been officially approved by Canadian agencies, but it is still available for purchase in tea form.

Date:
July 15, 2005 12:15 PM
INTRODUCTION While aspartame and saccharine continue to dominate the non-caloric sweetener scene, a remarkable herb called stevia remains relatively obscure. Why would a substance that is much sweeter than sugar, can be used in BAKING (unlike aspartame), is diabetic-safe and calorie- free remain unknown and unused? Unfortunately, the FDA has managed to unfairly keep stevia out of the American market due to a long history of unwarranted regulation. Recently, however, due to the passage of specific legislation, limited purchase of stevia products is now available. Anyone who suffers from blood sugar disorders or who needs to limit their caloric intake should know about the remarkable properties of stevia. Stevia offers an ideal alternative to other sugars or sugar substitutes. Moreover, the herb has numerous therapeutic properties and has proven its safety and efficacy for hundreds of years. In spite of FDA efforts to ban this herbal sweetener, stevia’s comeback has begun amidst a glut of approved artificial, pharmaceutical products that pose significant health risks. The story of stevia illustrates the struggle which many natural products have experienced in gaining the FDA stamp of approval. Patents, politics and profits are all involved in determining the selection of products we are allowed to purchase. The history of stevia’s use in this country epitomizes the sad fact that effective natural supplements are often suppressed, while much riskier artificial chemicals are praised and aggressively marketed.

Fats and Oils: Clearing the Confusion By Fred Pescatore, M.D. Aside from tax forms, it's hard to find anything more confusing to consumers than fats and oils. Fat-free diehards still don't know that fat is essential for the brain, hormones, cellular membranes: life itself. The clueless still use shortening, margarine and damaged grocery store vegetable oils. But what worries me more is that supposedly educated consumers aren't even getting it right. Should we be surprised since their doctors probably don't know the truth? Mistakes made by your customers. They: Let's clear up these myths so consumers can get busy being confused about something else:
I hope this helps you educate consumers about the proper use of fats. Unfortunately, that still leaves a long list of other things they've been misled about.

SPA: Satisfying Personal Attention by Sylvia Whitefeather Energy Times, October 12, 2004 Feeling stressed out? Looking for some time to relax and cool off, but just too busy to get away? Give yourself a spa treatment at home. Creating your own home spa experience is easy and the benefits are many. With some common household items and a few essential oils, you can luxuriate in your own special spa experience while recharging and renewing mind, body and spirit. Indulge with a few close friends for a unique, shared experience. Aromatherapy Adventures Using concentrated plant oils derived from flowers and plants, aromatherapy offers an ancient healing art that has gained newfound respect in the modern world. Aroma chemicals transfer quickly into the body, and researchers are finding unique ways to employ this ancient technique, including medical applications. Studies find that lemon balm or lavender oil reduces behavioral problems in older people with dementia (BMJ 2002; 325:1312-3). Rosemary has been found to improve memory and enhance mental functioning (Int J Neurosci 2003 Jan; 113(1):15-38). Only a drop or two of an essential oil is needed to receive their unique healing benefits. (Always dilute essential oils; never use or apply them directly to your skin without watering them down.) Essential oils can help you relax, rejuvenate, improve your memory and increase your energy. Some essential oils are reputed to reduce pain, kill bacteria, speed healing of injuries and help fight inflammation and infection (Natl Meeting, Amer Chem Soc, 8/02). Bathing Beauties When you feel like you're ready to spa, take the phone off the hook, unplug the TV and set aside a special, unbothered time and day for your at-home spa experience. Next, turn your bathroom into your special place. Light fragrant candles, put on your favorite soft music and fill the tub. When running the water you should select a water temperature that fits the effect you desire, according to Valerie Gennari Cooksley, RN, author of Healing Home Spa (Penguin). Water temperature that approximates your normal body temperature produces a sedative effect. On the other hand, hotter water-that which hovers around 100 degrees-induces sweating and helps cleanse and detoxify. In any case, limit your time in hot water to about 20 minutes. If you use cold water, only stay immersed for a few short minutes to rejuvenate and close the skin's pores. Try adding about 10 drops of either lavender or ylang-ylang oil to a warm bath to aid in relaxation and to release tight muscles. Don't rush; soak for at least 20 minutes and let the fragrant water vaporize your cares. Dry off with a fluffy towel and wrap yourself in your favorite bathrobe. Other bath enhancers you can add to your soak include oatmeal to soften the skin, seaweed for deep cleansing, Epsom salts to relieve aches, and BAKING soda to alkalize the body. Herbal sachets can be made by placing dried herbs in a muslin bag and dropping the bag into the water to release fragrances and healing chemicals. Fantastic Facial The facial is a standard spa procedure. Hold your face over a steaming bowl of hot water that contains lemon juice or a few drops of lemon essential oil for about 15 minutes. Use a towel over your head to hold in the steam. When your face is well moisturized, apply a facial mask. On dry skin, use either puréed, ripe avocado or a mask of honey and kelp. If your face is oily, apply either puréed, ripe bananas or a mask of peppermint oil and honey. If you are not sure of your skin type or have mixed skin, green clay can be used for a balanced facial. Green clay is rich in minerals while being antiseptic and healing, notes Valerie Ann Worwood, author of The Complete Book of Essential Oils and Aromatherapy (New World Library). With the addition of warm water, it creates an instant facial mask. (You can also use prepared facial masks; ask about them at your health food store.) To apply the mask, begin at the forehead using upward strokes. Go easy around the eyes. Afterwards, put cucumber slices over your eyes and relax. Keep the mask on for about 15 minutes. Wash your face with warm water and then apply a moisturizer. Your skin should feel supple and look radiant. Pleasant Pampering Worwood recommends a few drops of rosemary oil and one tablespoon of BAKING soda in a basin of warm water to soothe your feet. Soaking your feet for about ten minutes softens the skin and nourishes the nails. After drying off, combine one-half cup sea salt with one-half cup of cooking oil, preferably olive, canola or sesame. Gently massage into each foot to stimulate reflex points and remove dead skin. Rinse and pat dry. Finish with a pedicure. This salt scrub can be used on any part of the body to eliminate toxins, increase circulation, improve lymphatic movement and cleanse the pores. A popular European treatment, it is especially helpful for parts of the body that store water, such as the tummy and thighs. Rinse completely after the scrub and apply moisturizer to dry areas. Since hands can age quickly, Worwood suggests using oils of rose, sandalwood and geranium for dry or neglected hands. You can also mix one-half cup of sugar with one-half cup cooking oil and a few drops of one of the above essential oils. Massage into each hand to moisturize and pamper your overworked hands. Rinse and apply your favorite lotion to seal in moisture. A gentle manicure adds the finishing touch. Healthy Hair Your special spa day wouldn't be complete without pampering your hair. Noted dermatologist David Bank, MD, suggests looking for shampoos that contain such gentle cleansers as avocado, borage oil, grapeseed oil, sunflower oil and wheat germ oil. Your shampoo should also contain moisturizing substances, such as aloe vera, to help give your locks shine and bounce. Check your hair's condition. Oily hair-that which feels greasy within a day of washing-responds best to frequent washing with minimal conditioning. A bad case of the frizzy tangles is a sign of dry hair, which needs a moisturizer-rich shampoo. Revive From the Inside With Green Drinks During your spa day, sip green drinks. Green drinks made from aquatic plants such as spirulina, seaweed and kelp contain needed minerals to nourish skin, hair and nails; these plants have been used for centuries to promote health and longevity. In addition to being high in minerals, they are also low in fat, high in fiber and rich in protein. The marine vegetables found in green drinks help detoxify the body, support the lymphatic system, alkalize the blood and tissues, and support a healthy thyroid. Many natural food stores carry green drink powders that can be added to juice or water. Sipping on a green drink can enhance the cleansing action of your home spa treatment, balance blood sugar levels and maintain your energy level during the day. Throughout your home spa experience, drinking spring water with a touch of lemon or lime can facilitate the elimination of toxins and keep you hydrated. Indulge in plenty of high-fiber fruits and vegetables, and avoid processed sugars and high-fat foods. Eating lightly allows your body to eliminate toxins from the inside out while you work on the outside. As Valerie Cooksley says, "...sound health occurs when the mind, body and spirit are in perfect harmony and balance." A home spa experience takes you a step closer to that harmony.

Best Breads by Jane Lane Energy Times, December 9, 1999 Few of us can resist the seductions of freshly baked bread, warm and fragrant, poised on the edge of a steaming bowl of soup or painted with an aromatic swath of rosemary scented oil. Even those of us from the most culinary challenged households can recall the pleasures of the simple plump white dinner roll or flaky biscuit piled in a basket on the dinner table. Bread has blossomed from sideshow status beside the dinner plate to a full-scale mealtime headliner, a scrumptious star enriched by nutritious grains, herbs, fruits and vegetables. Contemporary cooks build meals around crunchy cornbread or chewy focaccia, presenting soups or salads as satisfying counterpoints. Want to jump into the bread BAKING basket or hone your skills? Two top vegetarian chefs shared with Energy Times their passion for bread and their expertise in BAKING. See if you don't find that ardor contagious. Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years. That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; BAKING is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting. "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications. "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing. "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside. "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while. "Then there are quick breads that use BAKING soda or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans. "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits. "To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness. "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat. "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by BAKING in a preheated cast iron skillet. "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables. "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it. "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes. "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good." Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well: "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen. "Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine flour, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day. "I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with split pea soup. "Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."

Ocean Treasures by Chrystle Fiedler Energy Times, January 3, 2004 For centuries, people have flocked to the sea to take advantage of its healing and restorative powers. "The ocean is alive with energy and abundant sea life," says Susie Galvez, owner of Face Works Day Spa in Richmond, Virginia and author of Hello Beautiful (MQ Publications). "It's an abundant source. Sea products are rich in minerals like magnesium, potassium, iron and zinc, all of which are known for their deeply cleansing and antibiotic properties. When we think of the sea, we think of health, invigoration, the feeling of being alive and yet peacefully calm." "To the ancient Greeks, the image of Aphrodite rising out of the sea was beautiful because of the nutrients that the sea plants had given her," says Linda Page, ND, in Healthy Healing (Healthy Healing Publications). Today, sea plants still provide beauty benefits. "They have a complete spectrum of chelated minerals, which makes them easier to absorb, that add lustre and shine to your hair and eyes and improve skin texture and tone." Thalassotherapy (seawater treatment) includes using salts, mud, foliage, sand and water from the sea to stimulate, hydrate and nourish the skin, making it smoother, firmer and more resilient. "Using sea products in treatments is both restorative and detoxifying," says Galvez. "Now with modern technology, you don't have to live anywhere near the sea to take advantage of the wonderful health and wellness benefits. Your sea retreat source can be as close as your health food store." Seaweed's Beauty Benefits "Pollution, stress, fatigue and bad eating habits all affect the body," says Anne Mok, LaC, a certified Chinese herbalist and co-owner of Cornerstone Healing in Brooklyn, New York. This leads to vitamin and mineral deficiencies that can result in broken capillaries, loss of firmness, skin lesions, dry scaliness and more. The good news, Mok says, is since seaweed is packed with easy-to-absorb proteins, vitamins, minerals and lipids, it can protect against environmental pollution and ward off aging by nourishing and moisturizing the skin. "The seawater in seaweed is similar to human plasma, so it's an ideal way to get the nutritive benefits from the sea, vitamins A, C and E, and the minerals zinc, selenium and magnesium we need through the process of osmosis. Seaweed cleanses, tones and soothes the skin and regenerates body tissues, offering a new vitality and helping to maintain a youthful appearance. It also improves circulation, which has a positive effect on local fatty overloads and helps maintain the tone of the tissue." No wonder seaweed is used to firm the skin and reduce the appearance of cellulite! Seaweed captures all the richness from the sea. "There is no genetic manipulation, fertilizer or pesticides, just the sea, light and the tides," says Mok. "[S]eaweed is ten times richer in trace elements than land plants." Beauty aids from the sea include: * Kelp (laminaria), a large leafy brown algae, grows along cold climate coastlines and can bring a healthy glow to skin. "Kelp powder has exfoliating properties that make it a great addition to a facial mask," Galvez adds. "It increases blood circulation and stimulates lymph production to eliminate toxins. It's also a mineral-rich body scrub for removing surface impurities." * Crushed algae is often used in seaweed masks. * Carrageenan, a gel extracted from Irish sea moss, is commonly used as a cosmetic thickening agent. "It's a great moisturizer that holds nutrients and water in," says Mok. * Bladderwrack (fucus), a brown seaweed, is often used in cellulite-reducing creams to eliminate excess fluid from the skin. A Seaweed Beauty Routine Incorporating the benefits of seaweed into your beauty routine is easy. You can "purchase dehydrated seaweed at a natural food store to make your bath a mini-ocean," says Janice Cox, author of Natural Beauty at Home (Henry Holt & Co). "Fill the tub to the point that you're covered when you lie down," says Dr. Page. "The idea is to make your body sweat, to open your pores, release toxins and take in the sea nutrient benefits by osmosis. Boost the effect with a few drops of aromatherapy bath oils like rosemary and lavender. It'll help hold the heat in and improve your cleansing program." Rinse off and "you'll feel your skin tighten, due to the high iodine content of the seaweed," says Cox. "Your skin should also feel softer and firmer." Seaweed and algae body wraps are ideal ways to beautify the skin, rid your body of toxins and boost well-being and health. "It starts a program of detoxification very rapidly," says Dr. Page, who has also written Detoxification: All You Need to Know (Healthy Healing Publications). "It's amazing how it encourages weight loss and cellulite reduction." "Seaweed wraps are the most effective cellulite treatments," says Mok. "Seaweed and seaweed mud, especially, stimulate the cells to improve cellular activity and increase the efficiency of lymphatic fluid, which helps break down toxic deposits that can result in cellulite. "It's excellent conditioning for the skin and leaves it soft and glowing," says Claudia Spagnolo, spa director for the DeFranco Spagnolo Salon and Day Spa in Great Neck, New York. Revitalize With Sea Salts Sea salts contain minerals-such as calcium, potassium, magnesium, sodium, iron, sulphur, phosphorus and chlorine-that have a delightfully rejuvenating and revitalizing effect on skin. "Sea salts enhance the youthful healthy glow of the skin," says Spagnolo. "It creates a deep pore cleansing from shoulder to toe, removing rough, dry skin, helping to purify and slough off dead skin cells. It's great for an all-over exfoliation, and leaves the skin smooth and refreshed." "Sea salt has wonderful drawing properties, promoting the removal of toxins from the skin," says Galvez, author of Ooh La La Effortless Beauty (MQ Publications). "It's high in mineral content and nourishes the body." Sea salt also "guards against moisture loss, so it's ideal for dry skin and helps prevent aging," says Mok. In addition, it can be used to treat acne, eczema and psoriasis. Often done before a massage in spas, a "salt glow," which uses a vigorous scrub of coarse sea salts mixed with essential oils, rejuvenates and revitalizes the skin. Sea salt is also readily available at health food stores so you can do the same at home. Mineral-rich Dead Sea salts pack a salinity of 32%. "When bathing with Dead Sea salt you don't even need to use soap because the minerals remove redundant fat and dirt," says Mok. Dead Sea minerals are often used in shampoos, conditioners and shower gels. "Galvez adds, "Dead Sea mud mineral and vitamin content is very close to that of humans, and therefore treatments using the mud penetrate deeply." Ah! Home Spa It's easy to turn your bathroom into an oasis of calm and create a private spa to call your own. For a sea cure bath, mix together half a pound of sea salt and a pound of BAKING soda, add to a warm water bath and soak until the water has cooled, says Mok. "It's excellent for soothing itchy and dry skin and helps detoxify by pulling out toxic waste from the pores." Aromatherapy oils, like lavender, make your soak in the tub even more relaxing and luxurious. "It's a great way to de-stress after a long day at work." A seaweed wrap can release water retention and leave legs looking their sleekest, notes Mok. "Just soak legs in a bath of warm water and Epsom salts for 5 minutes, then pat dry. Apply a seaweed mask and wrap legs with plastic wrap and a warm towel. Relax for 15 minutes. Remove towel and plastic wrap and rinse." You can also try a sea salt rub by mixing two cups of kosher salt with one cup of olive oil until it forms a thick paste. (Be careful: the oil is slippery.) "While in the tub or shower, massage it into your skin using long strokes toward the heart, starting with your feet," says Galvez. Rinse off with warm water, use a soft washcloth to remove any residue, pat dry and apply moisturizer. "Your skin will be silky smooth and wonderfully hydrated." To create a spa environment at home, details make all the difference. "Think of your favorite beach get-a-way and go with an ocean theme," says Cox. "Include something for each of the senses." For example, put on a CD that has nature sounds. To capture the color of the water, use sea-colored towels. For scent, light candles that produce the scents of flowering plants (such as plumeria or citrus). Add "ocean" fragrance beads. When taking a bath, "use shells to scoop out sea salts or dehydrated sea weed and put them around the tub as decoration," says Cox. Smooth on a moisturizer with a sea-scented lotion when you finish your spa treatment. When you make an at-home sea spa experience a regular part of your routine, you reap a bounty of beauty and health benefits. "In just 20 minutes you can have a mini-vacation," says Galvez. "It's cleansing and relaxing." Then you will be ready to dive back into reality with renewed zest.

ALUMINUM has been the focus of much negative attention lately– numerous studies have indicated that aluminum accumulates in the body, especially in nerve tissues, potentially causing harm. Recently, scientific researchers have discovered that one compound may have the powerful effect of diminishing this unwanted aluminum accumulation. On the cutting edge of nutrition science, Source Naturals is one of the first companies to introduce this powerfully protective compound: MAGNESIUM MALATE. THE DANGERS OF ALUMINUM Aluminum is a naturally occurring metal. It has been the subject of recent studies on aging, and some scientists consider it to be harmful. It may come as a surprise that aluminum can be found in a wide variety of foods and manufactured products, such as BAKING powder, non-dairy creamers, antacids, deodorants, cookware, and food containers. Even tap water contains aluminum. With so many possible avenues for ingesting aluminum, we may be consuming more than nature originally intended. Mounting evidence that aluminum tends to accumulate in the body is even more cause for alarm. Unfortunately, there are no overt warning signs of excess aluminum accumulation, until levels become high enough to have adverse effects on health. THE ALUMINUM-MAGNESIUM LINK Researchers have suggested that aluminum may be more likely to accumulate in the brains of persons whose diets are Magnesium-deficient — which, unfortunately, includes 90% of Americans! Several studies have shown that animals fed diets low in Magnesium accumulate high concentrations of aluminum in the Central Nervous System. One of Magnesium’s many functions is to activate the enzyme tubulin involved in the maintenance of nerve tissue cells. It has been suggested that when there is not enough Magnesium in the body to plug into the appropriate receptor site on the tubulin enzyme, aluminum takes its place instead. This leads to the inactivation of tubulin and, consequently, inadequate nerve function. Because a Magnesium-deficient diet may increase the amount of aluminum taken up and stored by the body, it is vitally important that we take in sufficient amounts. MAGNESIUM MALATE — A ONE-TWO PUNCH MAGNESIUM MALATE supplies a one-two punch in combating excess aluminum accumulation. In addition to providing 45% of the U.S. R.D.A. for Magnesium, MAGNESIUM MALATE also supplies Malic Acid. Found abundantly in fruits such as apples, Malic Acid is also produced in the human body. It is a metabolite of the Krebs cycle, the set of biochemical reactions used to produce 90% of all energy in the cells of the body. Malic Acid readily crosses the Blood-Brain-Barrier and has been shown to bind to aluminum. It functions in the body by drawing aluminum away from the tubulin enzyme, so that Magnesium can plug into the receptor sites instead. Malic Acid’s unique ability to bind with aluminum means it can be flushed out of the body, preventing unwanted build-up. THE PRO-ACTIVE APPROACH With all of the negative evidence mounting against aluminum, educated consumers will want to take precautions in order to maintain their health and well being. Of course, the best way to avoid excess aluminum is to cut back on aluminum intake from known sources. Use only stainless steel or cast iron cookware, and look for aluminum- free deodorants and antacids. Always use filtered or spring water for drinking and cooking. And for those who want to take a pro-active approach, adding MAGNESIUM MALATE to your supplement regimen may be your best bet in depleting unwanted aluminum build-up in the body.
