The blood should be electrolytically neutral, or very slightly alkaline. The proper pH for blood should be 7 or just above it, and many claim that it should be 7.35. In fact the truth is that your blood pH should be between 7.2 and 7.6. Outside these limits and you could have serious health problems, with your brain particularly being affected. For those who have forgotten their school chemistry, pH is a measurement of the level of acidity or alkalinity of an aqueous solution. Anything over 7 is said to be alkaline, and below 7 is acidic. Where the pH has to be maintained at a certain level, a material called a buffer is used that counteracts the effects of other acids and alkalis to maintain the desired pH range. Buffers are very common in nature, as would be expected of life forms that depend upon water and aqueous solutions for their survival. Blood is an aqueous solution containing plasma, blood cells, nutrients and various other ingredients in both solution and dispersed solid form. The human body possesses a very effective pH maintenance system that depends on various buffers, the kidneys and the lungs. Lets have a closer look at buffers and how they work. pH is, in fact, a measurement of the concentration of hydrogen ions (H+) in a solution. The way a buffer works is to absorb or release H+ ions to keep the hydrogen ion concentration at a specific level. If there are too many H+ ions present in the blood, and it becomes too acidic, then the buffer will mop up the excess. If there are too few, and the blood becomes too alkaline, then the buffer will release more hydrogen ions into the blood. In this way the pH is maintained at the limits mentioned above. Buffers in the human body include some forms of protein, phosphates and also hemoglobin. However, if the pH variations are more than just occasional, the buffers have a limited capability, and a more permanent solution is needed. If the blood is continually becoming too acidic, the bicarbonate ion is used to clear them up. Just as bicarbonate of SODA is used to clear up excess acidity in your stomach that causes indigestion, so it can be used to clear up excess acidity in the blood. But how do we get the bicarbonate into the blood? When the lungs inhale oxygen, they then exhale carbon dioxide. The bicarbonate ion, also called the hydrogen carbonate ion, is formed in the blood by dissolved carbon dioxide. The faster we breathe the more carbon dioxide we exhale and the less is left in the blood to form bicarbonate. The slower we breathe, the more carbon dioxide is available in the blood for bicarbonate. Thus, when our blood acidity increases we breathe slower, and when it decreases we breathe faster since less carbon dioxide is needed in the blood to form bicarbonate to neutralize the acid. The kidneys also help to regulate the pH of the blood, although the biochemistry involved is fairly complex, and will not be covered here. It is enough to state that the body has a number of routes by which it can control the pH of the blood. Current thinking is that alkaline and acidic foods should be balanced in your diet in order to place less of a strain on the body’s pH control systems. Since the blood pH must be slightly alkaline, then it might make sense to eat a slightly alkaline diet. However, it is not the actual food that matters, but what happens when the food is digested. Hence, orange juice is classed as an alkaline food even though it is high in citric acid and itself has a low pH. The same is true of lemons. They taste very sour, yet the result after digestion is alkaline. It is the end result that counts. After all, the stomach acid is very strong and very highly acidic, and eating slightly alkaline foods is not going to alter that. The digestive juices have to be highly acidic to break down the organic matter. It had been calculated that a mix of around d 75% alkaline and 25% acidic food is a good combination of the two types to provide approximately the desired blood pH. Among the common acidic foods are meat, fish, poultry, plums, grains, eggs, wine, cheese and offal. The alkaline foods are most fruits and vegetables, orange and lemon juice, melons, potatoes and chocolate. Hence, it is possible to eat beef and chicken, and have the odd glass of wine so long as we eat plenty of fresh fruit and vegetables. There is nothing at all unusual with that diet, and it underlines the importance of eating a healthy balanced diet. While more greens and whole foods are definitely healthier for you, you should not eat exclusively an alkaline diet. If your blood pH is on the high side of the limit, then you can eat a bit more meat or fish, and if on the low side eat a more vegetarian style diet. It is important, however, that you eat healthily, irrespective of whether you are eating alkaline or acidic foods. Through history, the human race has adopted a more acidic diet than the ancient hunter gatherers. Grains are a relatively recent invention, introduced after the invention of stone tools to mill them, and dairy products are also relatively recent in terms of the whole of human history. Even the consumption of meat only began after mankind learned first how to trap and then developed tools to enable them to kill their prey. Human biochemistry, then, has developed from a predominantly vegetarian diet. However, protein is still very important, and while protein intake is necessary, should comprise no more than 20% - 25% of your total food intake. The rest should comprise of mainly fruits and vegetables, with whole rather than refined or processes foods predominating. Sugar was not eaten in quantity until the industrial revolution. Measuring the pH of your blood is easy to do. It is simply a matter of using pH paper strips and checking the color change with your blood. They are available at most pharmacies and health food stores. If your pH level varies from 7.4 or 7.5, then you should change your diet accordingly. Higher than this, then eat more acidic foods, and if lower you should eat more alkaline food. It is simple equation, and the changes you will have to make to your diet will be minimal. Some of these changes can be made by the use of supplements that are carefully balanced to maintain your blood in the proper pH.

Overweight young people are more likely than their normal weight peers to become over weight of obese adults, adding additional risk factors such as stroke, several types of cancer, and osteoarthritis. The consensus among pediatricians, school administrators, parents, and government officials is that healthy lifestyle habits, including healthy eating and physical activity, can lower the risk of becoming overweight and developing related diseases. Associated problems with a growing overweight population are reduced productivity, increased disability, and a greater number of overweight individuals requiring nursing home care as they move into retirement. A Food and Drug Administration (FDA) testing program has found cancer-causing benzene in soft drinks at levels averaging four times the standard for tap water. The brand names have not been released. The test data were uncovered by the Environmental Working Group (EWG), which posted the test results on the group’s website, www.ewg.org Highly elevated Benzene Levels Between 1995-2001 the RDA tested 24 samples of diet SODA for benzene. The result: 79% tested at levels above the federal limit for benzene in tap water, which is 5 parts per billion (ppb). The maximum benzene level detected was 55 ppb. In addition to the diet SODAs, the FDA tested a number of other non-diet soft drinks. One cola was contaminated at 27 times the tap water limit, and fruit drink had a 95 ppb level. “These results confirm our suspicions there are highly elevated benzene levels in some very popular drinks,” Richard Wiles, EWG’s senior vice president said in a press release. Reaction Triggered by Preservatives According to an article in beveragedaily.com, sodium benzoate and ascorbic acid in soft drinks can react together to form benzene. Sodium benzoate is a common preservative in soft drinks, and ascorbic acid is often added as an antioxidant to extend shelf life. Negotiations between the FDA and the beverage industry in 1990 resulted in an agreement that the industry would voluntarily reformulate its soft drinks to prevent this combination. The recurrence of benzene contamination may be due to new soft drink manufacturers in the market who were not a part of, or aware of, the original negotiations. Britain Pulls Soft Drinks from Shelves In contrast to the U.S. situation, food safety campaigners in England were successful in having benzene –containing soft drinks removed from the supermarket shelves. The British Food Standards Agency pulled four soft drink brands which contained more than 1 ppb of benzene, and rushed out the results of tests on 149 drinks, including a range of fruit juice, iced tea, squash, fizzy and low-sugar drinks, according to The Times of London. Breathing deeply allows more oxygen to arrive to the affected area, helping it heal more quickly. Lie on your back, close your eyes and slowly breathe in and out as deeply as you can. Visualize your body expanding and closing and the oxygen moving through your body to the muscles in pain. Continue this for 20–30 minutes. 4. MSM. MSM is a sulphur compound that can relieve pain associated with muscle cramps. It works by interrupting pain impulses heading to the brain. New Man Food Listen up, guys. Masculinity isn’t defined by what you eat. It’s all about how well you hold up through the years, which means taking care of yourselves. So ditch the doughnuts, double burgers and draft beer, and adopt a healthier diet. Here’s how! Back in 1982, a best-selling, humorous manifesto of masculinity known as Real Men Don’t Eat Quiche epitomized the male backlash against feminism, by then a formidable force in the American cultural landscape. But the joke, it turns out almost 25 years later, is on the men- and not just because quiche doesn’t have that many fewer calories than a Quarter Pounder. We may have maintained out mach-ness all these years by eating “manly food,” but we’ve become unhealthy and ultimately weaker because of it. In 2000, the National Health & Nutrition Examination Survey revealed that among men 20 years and older, a whopping 65.1 million (67.2%) were considered overweight and 26.6 million (27.5%) were considered obese. Only 30.6 million (31.8%) of men 20 to 74 were considered to have a healthy weight. The fallout from such a fatness factor is that more men are dying each year of heart disease and related illnesses and more money than ever is being spent on health care (to say nothing of how poor male health affects the women and children who depend on the men in their lives). Another cheeseburger, guys? Those numbers, though shocking at first, shouldn’t be that surprising. As a gender, men are more vain, ego-driven and stubborn than women. How does this manifest itself when it comes to wellness? Until a man is hit with his first health crisis, no matter what the age, he thinks he’s indestructible. That’s why it’s so difficult to convince men to get regular medical checkups (which they should do especially when they hit 50). It’s not that many American men aren’t trying to lose pounds. It’s just that they are a bit misguided in their efforts. Weight-conscious men really gravitated to the Atkins diet. Why? Because at the same time the plan says to cut carbohydrates and increase protein, it gives men carte blanche to eat mass quantities of high-fat “manly” foods like beef and pork. Trading pounds for clogged arteries doesn’t seem like a good deal. So the time has come for all American men to turn their testosterone-driven energy into changing their nutritional lifestyle. We have to stop eating the same high-caloric and fat-laden foods we usually consume in large doses and start pursuing a diet based on variety, moderation and balance. It’s time to start eating “new” man food: the kind of foods that will make us feel (and look) like a new man. Out With the Old But before we can embrace the new, we must wean ourselves off the old, particularly the male habit of eating food in humongous portions. Easier said than done because all of us, men and women, have found it hard to resist the marketing power of super sizing. Who among us wants to feel like and idiot because we didn’t double the size of popcorn, SODA or french fries for a mere 49 cents? But resist we must. New York-based nutritionist Annie Hauck-Lawson, PHD, RN, says that also requires willpower because fried foods can be addicting. “They taste so good and fat conveys a lot of flavor,” she admits. “So the best strategy is going cold turkey to get that taste off the palate.” Hauck-Lawson also suggests not beginning a meal with fried foods or fatty meats. “The start of the meal is when you’re the most hungry so you’ll eat the most during the first course.” She says. “If you start most lunches and dinners with a broth-based soup or a big salad, you’ll load up on high-fiber, high nutrient foods rather than high-fat foods and you’ll be too full to eat the bad stuff. Besides, food can be broiled with herbs and spices instead of being fried and still be delicious.” Nutritionists like Hauck-Lawson strongly advise men to eat more fiber-base foods, which means adding more fresh fruits and vegetables (about five servings a day), whole grains and beans to the diet. Fiber may not sound manly, but it aids digestion, reduces the risk of colon cancer by moving waste out of your system, supports healthy cholesterol levels and makes you feel full so you won’t gorge yourself on those super-sized portions. Hydro Power And when you’re eating all those nutritious and healthy new man foods, please don’t offset the benefits by washing it down with soft drinks. Did you know that a can of cola contains 39 grams of refined sugar, which is equivalent to seven teaspoons of the sweet stuff? Okay, we know what you’re going to say when we mention water as an alternative. B-O-R-I-N-G! But you can’t ignore a liquid that is crucial to your hydration, digestion and metabolism. If you must drink something interesting with your meal, try an organic red wine, which can have a positive effect on cholesterol and blood pressure. (When the liquid is the meal, a smoothie can fill the bill.) During and after your transitional phase into the new man food lifestyle, nutritional supplements can ensure that you get enough vitamins and minerals from your diet. THE FDA AND STEVIA While stevia in no way qualifies as an “artificial sweetener,” it has been subject to rigorous inquiry and unprecedented restraints. In 1986, FDA officials began to investigate herb companies selling stevia and suddenly banned its sale, calling it “an unapproved food additive.” Then in 1991, the FDA unexpectedly announced that all importation of stevia leaves and products must cease, with the exception of certain liquid extracts which are designed for skin care only. They also issued formal warnings to companies and claimed that the herb was illegal. The FDA was unusually aggressive in its goal to eliminate stevia from American markets, utilizing search and seizure tactics, embargoes and import bans. Speculation as to why the FDA intervened in stevia commerce points to the politics of influential sugar marketers and the artificial-sweetener industry. During the same year, the American Herbal Products Association (AHPA) began their defense of the herb with the goal of convincing the FDA that stevia is completely safe. They gathered documented literature and research on both stevia and other non-caloric sweeteners. The overwhelming consensus was that stevia is indeed safe, and the AHPA petitioned the FDA to exempt stevia from food additive regulations. Food Additive vs. Dietary Supplement FDA regulations of stevia were based on its designation as a food additive. The claim was that scientific study on stevia as a food additive was inadequate. Ironically, extensive Japanese testing of stevia was disregarde—regardless of the fact that this body of documented evidence more than sufficiently supported its safe use. Many experts who have studied stevia and its FDA requirements have commented that the FDA wants far more proof that stevia is safe than they would demand from chemical additives like aspartame. Stevia advocates point out that stevia not a food additive, but rather, a food. Apparently, foods that have traditionally been consumed do not require laborious and expensive testing for safety under FDA regulations. The fact that so many toxicology studies have been conducted in Japan, coupled with the herb’s long history of safe consumption, makes a strong case for stevia being accepted by the FDA as a safe dietary substance. Still, it was denied the official GRAS (generally recognized as safe) status and designated a food additive by the FDA. The FDA Reverses Its Position As a result of the Health Freedom Act passed in September of 1995, stevia leaves, stevia extract, and stevioside can be imported to the United States. However, ingredient labels of products that contain stevia must qualify as dietary supplements. Stevia had been redesignated as a dietary supplement by the FDA and consequently can be legally sold in the United States solely as a supplement. Its addition to teas or other packaged foods is still banned. Moreover, stevia cannot, under any circumstances, be marketed as a sweetener or flavor enhancer. SUGAR, SUGAR EVERYWHERE Ralph Nader once said, “If God meant us to eat sugar, he wouldn’t have invented dentists.” The average American eats over 125 pounds of white sugar every year. It has been estimated that sugar makes up 25 percent of our daily caloric intake, with SODA pop supplying the majority of our sugar ingestion. Desserts and sugar-laden snacks continually tempt us, resulting in an escalated taste for sweets. The amount of sugar we consume has a profound effect on both our physical and mental well-being. Sugar is a powerful substance which can have drug-like effects and is considered addictive by some nutritional experts. William Duffy, the author of Sugar Blues, states,“The difference between sugar addiction and narcotic addition is largely one of degree.” In excess, sugar can be toxic. Sufficient amounts of B-vitamins are actually required to metabolize and detoxify sugar in our bodies. When the body experiences a sugar overload, the assimilation of nutrients from other foods can be inhibited. In other words, our bodies were not designed to cope with the enormous quantity of sugar we routinely ingest. Eating too much sugar can generate a type of nutrient malnutrition, not to mention its contribution to obesity, diabetes, hyperactivity, and other disorders. Sugar can also predispose the body to yeast infections, aggravate some types of arthritis and asthma, cause tooth decay, and may even elevate our blood lipid levels. Eating excess sugar can also contribute to amino acid depletion, which has been linked with depression and other mood disorders. To make matters worse, eating too much sugar can actually compromise our immune systems by lowering white blood cells counts. This makes us more susceptible to colds and other infections. Sugar consumption has also been linked to PMS, osteoporosis and coronary heart disease. Why Do We Crave Sweets? Considering the sobering effects of a high sugar diet, why do we eat so much of it? One reason is that sugar gives us a quick infusion of energy. It can also help to raise the level of certain brain neurotransmitters which may temporarily elevate our mood. Sugar cravings stem from a complex mix of physiological and psychological components. Even the most brilliant scientists fail to totally comprehend this intriguing chemical dependence which, for the most part, hurts our overall health. What we do know is that when sugary foods are consumed, the pancreas must secrete insulin, a hormone which serves to bring blood glucose levels down. This allows sugar to enter our cells where it is either burned off or stored. The constant ups and downs of blood sugar levels can become exaggerated in some individuals and cause all kinds of health problems. Have you ever been around someone who is prone to sudden mood swings characterized by violent verbal attacks or irritability? This type of volatile behavior is typical of people who crave sugar, eat it and then experience sugar highs and lows. Erratic mood swings can be linked to dramatic drops in blood sugar levels. Hypoglycemia: Sign of Hard Times? It is rather disturbing to learn that statisticians estimate that almost 20 million Americans suffer from some type of faulty glucose tolerance. Hypoglycemia and diabetes are the two major forms of blood sugar disorders and can deservedly be called modern day plagues. Hypoglycemia is an actual disorder that can cause of number of seemingly unrelated symptoms. More and more studies are pointing to physiological as well as psychological disorders linked to disturbed glucose utilization in brain cells. One study, in particular, showed that depressed people have overall lower glucose metabolism (Slagle, 22). Hypoglycemia occurs when too much insulin is secreted in order to compensate for high blood sugar levels resulting from eating sugary or high carbohydrate foods. To deal with the excess insulin, glucagon, cortisol and adrenalin pour into the system to help raise the blood sugar back to acceptable levels. This can inadvertently result in the secretion of more insulin and the vicious cycle repeats itself. A hypoglycemic reaction can cause mood swings, fatigue, drowsiness, tremors, headaches, dizziness, panic attacks, indigestion, cold sweats, and fainting. When blood sugar drops too low, an overwhelming craving for carbohydrates results. To satisfy the craving and compensate for feelings of weakness and abnormal hunger, sugary foods are once again consumed in excess. Unfortunately, great numbers of people suffer from hypoglycemic symptoms. Ironically, a simple switch from a high sugar diet to one that emphasizes protein can help. In addition, because sugar cravings are so hard to control, a product like stevia can be of enormous value in preventing roller coaster blood sugar levels. One Colorado internist states: People who are chronically stressed and are on a roller coaster of blood sugar going up and down are especially prone to dips in energy at certain times of day. Their adrenals are not functioning optimally, and when they hit a real low point, they want sugar. It usually happens in mid-afternoon when the adrenal glands are at their lowest level of functioning. (Janiger, 71) Our craving for sweets in not intrinsically a bad thing; however, what we reach for to satisfy that craving can dramatically determine how we feel. Stevia can help to satisfy the urge to eat something sweet without changing blood sugar levels in a perfectly natural way and without any of the risks associated with other non-nutritive sweeteners. Diabetes: Pancreas Overload? Diabetes is a disease typical of western cultures and is evidence of the influence that diet has on the human body. When the pancreas no longer secretes adequate amounts of insulin to metabolize sugar, that sugar continues to circulate in the bloodstream causing all kinds of health problems. The type of diabetes that comes in later years is almost always related to obesity and involves the inability of sugar to enter cells, even when insulin is present. Diabetes can cause blindness, atherosclerosis, kidney disease, the loss of nerve function, recurring infections, and the inability to heal. Heredity plays a profound role in the incidence of diabetes, but a diet high in white sugar and empty carbohydrates unquestionably contributes to the onset of the disease. It is estimated that over five million Americans are currently undergoing medical treatment for diabetes and studies suggest that there are at least four million Americans with undetected forms of adult onset diabetes. Diabetes is the third cause of death in this country and reflects the devastating results of a diet low in fiber and high in simple carbohydrates. Sugar Overload My kids are getting completely overloaded on sugar at school from meals and treats -- my daughter comes unglued and cant study. When i went to grade school, there was no lunch and no sweets available. What a change in society... Amanda Shrewsbury - Spring City, Utah... You're right to be concerned about school food programs, especially since budget restrictions have led a number of districts to use major fast-food companies as food service providers -- and even worse, to let SODA companies stock school beverage machines. Fortunately, the tide is starting to turn. Los Angeles is just one of a number of cities that are banning SODA from their school buildings. Other districts are going so far as to offer organic lunches to there students. you may want to contact your school superintendent, as well as members of your local school board and let them know how you feel about what's best for your children.

Supports Healthy Blood Sugar Levels-Herbally The introduction of refined sugars into the modern diet has had tremendous negative health consequences on world health. For example, diabetes, especially insulin-independent diabetes (Type 2), is growing rapidly in the United States particularly among children. This type is partly due to the inability of insulin to effectively transport sugar to receptor sites and into cells, where the sugar can be metabolized. Instead of being "burned up," sugar builds in the blood, creating a potentially serious health problem. This inefficiency can occur for a number of reasons, including: insufficient insulin production due to pancreas dysfunction (though many Type 2 diabetics produce excess insulin); the inability of insulin to carry sugar to receptor sites; a defect in the insulin; or a defect in the receptor that does not allow for the sugar to be transported through the cell membrane. Even if one does not have diabetes, it is important to maintain healthy blood sugar levels through proper diet, exercise, and weight management. This is especially important in children who were recently found to obtain 14% of their daily calories from sweet drinks (SODAs), overtaking white bread as the primary source of total daily caloric intake. Regardless of the reason, a number of botanicals, in addition to key lifestyle recommendations, have been shown in modern research to support healthy blood sugar levels by enhance sugar metabolization. (Cinnamomum aromaticum syn. C. cassia*) is one botanical that has been shown to have a positive effect on potentiating the effects of insulin. *The study referrd to the material used as Cinnamomum cassia. The officially accepted botanical nomenclature has changed and is now Cinnamomum aromaticum. Ancient Spices for Modern health Spices have been used historically to increase metabolism, raise body heat (thermogenesis), improve digestion and assimilation, and potentiate the effects of other substances. For this reason, in many herbal traditions, small amounts of hot pungent spices were added to many traditional compounds. Regarding sugar metabolization, a study by the United States Department of Agriculture (USDA) looked at the potential effects of 49 spices on insulin function (Broadhurst et al. 2000). These researchers found that cinnamon was the most bioactive in directly stimulating cellular glucose metablosim, i.e. the ability of cells to utilize sugar. The same researchers followed up with constituent studies and determined that it was water-soluble compunds in the extract that had this insulin-potentiating effect. This was followed by a clinical trial (60 subjects), also with involvement of the USDA, on the effects of cinnamon for potentiating insulin. The equivalent of 1, 3, and 6 grams (g) of cinnamon powder (approximately 1/4 to 1.5 teaspoons) reduced blood glucose levels 18-29% in 40 days (Khan et al. 2003). There was a significant increase in efficency between the 1 and 3 g doses, but an insignificant increase between the 3 and 6 g doses. One mechanism of action that has been postulated is that cinnamon increases the activity of PI-3 kinase, an enzyme that is critical in regulating the ability of glucose to be transported into the cell, where it can be utilized as energy. In addition to its ability to potentiate insulin, the cinnamon also supported healthy triglyceride and cholesterol levels, both important health benefits in general. There is an additional benefit of using cinnamon for many Americans; like many spices it is a potent thermogenic agent. This means it can be used as a healthy adjunct to a weight loss program that includes dietary modification and proper exercise. The excessive consumption of simple sugars in conjunction with poor diet and sedentary lifestyles can cause unhealthy blood sugar levels while providing themogenic support can have long-lasting health benefits. There have been a number of popular articles on the recent studies. This had led some to ask if crude cinnamon powder can be used with the same effect and safety. This has not been tested. As with all spices, cinnamon is rich in essential oils. Essential oils have beneficial effects, but the insulin-potentiating effect was found to occur in the water extract. This would suggest that many of the oil soluble compunds were lost in the processing. Also, essential oils can be stimulating and irritating, one of the reasons they are generally used in small amounts as flavoring agents. Therefore, it would be best to look for products that contain the water extract to ensure you are delivering the preparation that most closely reflects the preparation used in the studies. Weight Loss & Lean Muscle Mass- An Important Key to Increased Insulin Sensitivity Maintaining healthy weight and increasing lean body mass are key components in the supporting healthy blood sugar levels. Recently it was reported that only two days of inactivity resulted in a decreased level of insulin sensitivity. Therefore, supporting healthy blood sugar levels is extremely important for those wanting to maintain a healthy lifestyle. In obesity, or in those with a significantly higher percentage of body fat over lean muscle (body mass index greater that 25), it is very difficult for insulin to do its job effectively. The reason is quite simple: fat cells can prevent insulin from actually reaching insulin receptor sites; the fat physically blocks the receptor, and the sugar that should have been burned off through cellular function remains in the blood. It is important to know that, in such cases, there is often nothing at all wrong with the pancreas (the insulin-producing organ), the insulin, or the receptor sites. The fat simply prevents insulin and sugar from reaching their target. In many cases, people are over-producing insulin in an attempt to get more sugar to the receptor sites. After awhile, the pancreas can become exhausted and no longer produce adequate amounts of insulin. Sources of Essential Fatty Acids Essential fatty acids are found in both plant and animal sources, although primarily in plants. The EFA family is composed of two main forms, Omega-3 and Omega-6. The following explains exactly what these forms are. OMEGA-3: The most common forms of Omega-3 are eicosapentaenioic acid (EPA), docosahexaenoic acid (DHA) and alpha-linolenic acid, which comes from plants and helps create EPA and DHA. Omega-3 is usually derived from fish oils. Dr. Roger Illingworth, associate professor of medicine and biochemistry at Oregon Health Sciences University, explains that Omega-3 fatty acids are “long-chained metabolic products from linolenic acid. . . When animals consume and metabolize plants rich in linolenic acid, they produce Omega-3.” EPA and DHA are liquid and remain that way, even at room temperature. It is said that they protect fish by providing a body fat that stays fluid even in cold temperatures. OMEGA-6: The most common form of Omega-6 is is gammalinolenic acid (GLA). GLA is known to provide the following benefits, among many others:
Omega-6 is usually found in plant sources. The oils of coldwater fish such as salmon, bluefish, herring, tuna, mackerel and similar fish are known as Omega-3 fatty acids. The freshpressed oils of many raw seeds and nuts contain Omega-6 fatty acids. The most popular sources of Omega-3 and Omega-6 include: BLACK CURRANT SEED OIL: This oil is rich in linoleic acid (44%) and provides almost twice as much gamma-linolenic acid as evening primrose oil. Black currant seed oil also is an excellent source of an Omega-3 precursor known as stearidonic acid. BORAGE OIL: This oil comes from Borago officinalis, a plant with blue flowers. These types of EFAs are known to thin the blood, prevent clotting, regulate cholesterol production and strengthen cell walls, making them less susceptible to viral and bacterial invasion. Salmon oil has a natural ability to help the body relieve inflammation. In the ground-breaking book The Omega-3 Breakthrough: The Revolutionary, Medically Proven Fish Oil Diet, professor Roger Illingworth writes that Linolenic acid is a fatty acid with 18 carbons and 3 double bonds. It is manufactured exclusively by plants. When animals consume and metabolize plants rich in linolenic acid, they produce Omega- 3. Fish eat the plankton, and the linolenic acid breaks down in their bodies in two types of Omega-3 fatty acids: EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid) . . . The liquidity of EPA and DHA serves a vital function in fish, who require body fat that remains fluid even in very cold water. Fish oils, besides containing Omega-3 fatty acids, have shown to benefit those suffering from migraine headaches, arthritis, and high cholesterol levels. FLAX: Flax is a plant said to date back as far as 5000 B.C. It has been used since approximately 5000 B.C., making it one of the oldest cultivated crops. S. population is drastically malnourished. According to the latest A. C. Nielsen survey, only 12% of Americans claim to eat the 5 recommended servings of fruits and vegetables each day (Warner, 2004). And approximately 1/3 of the calories that people do consume are from nutrient-poor foods such as alcohol and SODA (Yang, 2004). This combination has led to a population that consumes too few nutrients, which according to an article in the Journal of the American Medical Association (Fletcher, 2002) puts people at risk for long-term health concerns. With Americans eating fewer healthy foods, taking a daily multiple is one way for people to increase their intake of nutrients. But the search for what defines a good multiple can be confusing, even to health care professionals. The Confusing U.S. Government Standards Scientists first recognized the need for vitamins in the early 1900s (Levenstein, 1993). But setting U. S. government standards for vitamins and minerals didn't start until healthy soldiers were needed to fight World War II. And when a committee of scientists was asked to determine the levels of nutrients needed to maintain good health they could only agree on "recommended allowances" to prevent deficiency with a wide margin of safety. In 1941, these allowances became the first Recommended Dietary Allowances (RDAs) for the nation (Levenstein, 1993). In 1997, the Food and Drug Administration (FDA) used latest RDAs to set the new Dietary Reference Intake (DRI) standards, which included Adequate Intakes (AIs) for when there was insufficient evidence to determine an RDA, and Upper Intake Levels (ULs) as the safe daily upper limit. To simplify the information, food labels express nutrient information as a percentage of the Daily Value (DV), which includes RDA values for a healthy adult who consumes 2000 calories per day (Whitney, 2002). However, these values do not include AIs or ULs and many individuals need different levels of nutrients than these. Confusing Standards equals Confusing Recommendations
The RDAs and subsequent DRIs are the basis of the nutrient standards for at least 40 different nations and many professional health organizations. Currently, the American Dietetic Association (ADA) recommends that people who cannot reach the DRIs through diet take a multiple with nutrient levels that do not exceed the RDAs (JADA, 2001). And in 2002, the American Medical Association (AMA) published a paper that included a recommendation for all adults to take RDA levels of vitamin supplements in their Journal of the American Medical Association (Fletcher, 2002). Despite the benefits of having guidelines, most people only hear about the RDAs and DVs, which may be too low for preventing deficiencies while the ULs and AIs, which can be much more beneficial are rarely discussed. For example, the Daily Value of Vitamin E to prevent deficiency is 30 IU while the daily Upper Intake Limit is 1,467 IU. But, according to the ADA, as many as 75% of cardiologists recommend vitamin E to their patients to promote heart health, usually at a dosage of 400 IU (ADA, 2001; Meydani, 2004; & Whitney, 1998). And the Daily Value for Vitamin C is 60 mg while the daily Upper Intake Limit is 2000 mg, but in clinical studies it took 500 mg per day to help maintain healthy blood pressure (Whitney, 1998, & Hendler, 2001). Alternative Recommendations Lyle MacWilliam is a biochemist and former health advisor to the Canadian Ministry of Health, who decided to research, analyze and publish the Comparative Guide to Nutritional Supplements. In this book, the individually published recommendations from seven nutrition experts (Phyllis Balch, CNC, Dr. Michael Colgan, Ph.D., Dr. Earl Mindell, Ph.D., Dr. Michael Murray, N.D., Dr. Richard Passwater, Ph.D., Dr. Ray Strand, M.D., and Dr. Julian Whitaker, M.D.) were combined to create an ultimate blended standard of recommended median intakes for 39 nutrients to promote health. Those nutrients include vitamins, minerals, phytonutrients, and other supplements, that span 14 different health categories and are much closer to the Upper Intake Limit government standards. The guide also includes information about recommended forms, safety, purity and quality (MacWilliam, 2003). One of the most profound differences between MacWilliam?s compiled recommendations and the DRIs is the difference in the number of supplements: 39 vs. 26 respectively. SPA: Satisfying Personal Attention by Sylvia Whitefeather Energy Times, October 12, 2004 Feeling stressed out? Looking for some time to relax and cool off, but just too busy to get away? Give yourself a spa treatment at home. Creating your own home spa experience is easy and the benefits are many. With some common household items and a few essential oils, you can luxuriate in your own special spa experience while recharging and renewing mind, body and spirit. Indulge with a few close friends for a unique, shared experience. Aromatherapy Adventures Using concentrated plant oils derived from flowers and plants, aromatherapy offers an ancient healing art that has gained newfound respect in the modern world. Aroma chemicals transfer quickly into the body, and researchers are finding unique ways to employ this ancient technique, including medical applications. Studies find that lemon balm or lavender oil reduces behavioral problems in older people with dementia (BMJ 2002; 325:1312-3). Rosemary has been found to improve memory and enhance mental functioning (Int J Neurosci 2003 Jan; 113(1):15-38). Only a drop or two of an essential oil is needed to receive their unique healing benefits. (Always dilute essential oils; never use or apply them directly to your skin without watering them down.) Essential oils can help you relax, rejuvenate, improve your memory and increase your energy. Some essential oils are reputed to reduce pain, kill bacteria, speed healing of injuries and help fight inflammation and infection (Natl Meeting, Amer Chem Soc, 8/02). Bathing Beauties When you feel like you're ready to spa, take the phone off the hook, unplug the TV and set aside a special, unbothered time and day for your at-home spa experience. Next, turn your bathroom into your special place. Light fragrant candles, put on your favorite soft music and fill the tub. When running the water you should select a water temperature that fits the effect you desire, according to Valerie Gennari Cooksley, RN, author of Healing Home Spa (Penguin). Water temperature that approximates your normal body temperature produces a sedative effect. On the other hand, hotter water-that which hovers around 100 degrees-induces sweating and helps cleanse and detoxify. In any case, limit your time in hot water to about 20 minutes. If you use cold water, only stay immersed for a few short minutes to rejuvenate and close the skin's pores. Try adding about 10 drops of either lavender or ylang-ylang oil to a warm bath to aid in relaxation and to release tight muscles. Don't rush; soak for at least 20 minutes and let the fragrant water vaporize your cares. Dry off with a fluffy towel and wrap yourself in your favorite bathrobe. Other bath enhancers you can add to your soak include oatmeal to soften the skin, seaweed for deep cleansing, Epsom salts to relieve aches, and baking SODA to alkalize the body. Herbal sachets can be made by placing dried herbs in a muslin bag and dropping the bag into the water to release fragrances and healing chemicals. Fantastic Facial The facial is a standard spa procedure. Hold your face over a steaming bowl of hot water that contains lemon juice or a few drops of lemon essential oil for about 15 minutes. Use a towel over your head to hold in the steam. When your face is well moisturized, apply a facial mask. On dry skin, use either puréed, ripe avocado or a mask of honey and kelp. If your face is oily, apply either puréed, ripe bananas or a mask of peppermint oil and honey. If you are not sure of your skin type or have mixed skin, green clay can be used for a balanced facial. Green clay is rich in minerals while being antiseptic and healing, notes Valerie Ann Worwood, author of The Complete Book of Essential Oils and Aromatherapy (New World Library). With the addition of warm water, it creates an instant facial mask. (You can also use prepared facial masks; ask about them at your health food store.) To apply the mask, begin at the forehead using upward strokes. Go easy around the eyes. Afterwards, put cucumber slices over your eyes and relax. Keep the mask on for about 15 minutes. Wash your face with warm water and then apply a moisturizer. Your skin should feel supple and look radiant. Pleasant Pampering Worwood recommends a few drops of rosemary oil and one tablespoon of baking SODA in a basin of warm water to soothe your feet. Soaking your feet for about ten minutes softens the skin and nourishes the nails. After drying off, combine one-half cup sea salt with one-half cup of cooking oil, preferably olive, canola or sesame. Gently massage into each foot to stimulate reflex points and remove dead skin. Rinse and pat dry. Finish with a pedicure. This salt scrub can be used on any part of the body to eliminate toxins, increase circulation, improve lymphatic movement and cleanse the pores. A popular European treatment, it is especially helpful for parts of the body that store water, such as the tummy and thighs. Rinse completely after the scrub and apply moisturizer to dry areas. Since hands can age quickly, Worwood suggests using oils of rose, sandalwood and geranium for dry or neglected hands. You can also mix one-half cup of sugar with one-half cup cooking oil and a few drops of one of the above essential oils. Massage into each hand to moisturize and pamper your overworked hands. Rinse and apply your favorite lotion to seal in moisture. A gentle manicure adds the finishing touch. Healthy Hair Your special spa day wouldn't be complete without pampering your hair. Noted dermatologist David Bank, MD, suggests looking for shampoos that contain such gentle cleansers as avocado, borage oil, grapeseed oil, sunflower oil and wheat germ oil. Your shampoo should also contain moisturizing substances, such as aloe vera, to help give your locks shine and bounce. Check your hair's condition. Oily hair-that which feels greasy within a day of washing-responds best to frequent washing with minimal conditioning. A bad case of the frizzy tangles is a sign of dry hair, which needs a moisturizer-rich shampoo. Revive From the Inside With Green Drinks During your spa day, sip green drinks. Green drinks made from aquatic plants such as spirulina, seaweed and kelp contain needed minerals to nourish skin, hair and nails; these plants have been used for centuries to promote health and longevity. In addition to being high in minerals, they are also low in fat, high in fiber and rich in protein. The marine vegetables found in green drinks help detoxify the body, support the lymphatic system, alkalize the blood and tissues, and support a healthy thyroid. Many natural food stores carry green drink powders that can be added to juice or water. Sipping on a green drink can enhance the cleansing action of your home spa treatment, balance blood sugar levels and maintain your energy level during the day. Even those of us from the most culinary challenged households can recall the pleasures of the simple plump white dinner roll or flaky biscuit piled in a basket on the dinner table. Bread has blossomed from sideshow status beside the dinner plate to a full-scale mealtime headliner, a scrumptious star enriched by nutritious grains, herbs, fruits and vegetables. Contemporary cooks build meals around crunchy cornbread or chewy focaccia, presenting soups or salads as satisfying counterpoints. Want to jump into the bread baking basket or hone your skills? Two top vegetarian chefs shared with Energy Times their passion for bread and their expertise in baking. See if you don't find that ardor contagious. Nancy Lazarus is a chef at the famed Moosewood Restaurant in Ithaca, New York, established in 1973 to serve up natural fare with a homecooked, vegetarian emphasis. The bill of fare changes daily at Moosewood, but there's one constant: a cup or bowl of soup, a salad and a thick slice of bread. Some loyal customers have ordered the daily special for 20 years. That's why bread occupies a cherished spot at Moosewood. Nancy Lazarus tells why and offers some of Moosewood's favorite bread recipes: "Cooking is like art; baking is like science; bread is like magic. No matter how much science you apply, you'll never have complete control: It'll do its own thing on some level, which is part of its charm, if you're charmed by that sort of thing. Breads come out differently depending on heat and humidity, the heat of the oven; yeast is a variable that can be slower or faster acting. "There are bread machines, of course, and they work. But they're not as satisfying as the real thing, the kneading, which can be almost therapeutic, and the control over the ingredients to your own specifications. "Bread is not that difficult. Know your own oven, to begin: Good insulation is important and how the heat travels around inside. Convection ovens are a wonderful thing. "There are difficult breads we recommend you buy at a good bakery: baguettes, Italian, French and Cuban that are crusty outside and soft inside. "But focaccia is easy. It's a yeasted bread that's better to make at home than buy because it's so fresh and you can control the toppings. It only requires one slow and one quick rising but you have to be there for a while. "Then there are quick breads that use baking SODA or powder, like cornbread. If you want a good meal at home and can make only one thing, make a quick bread. They're satisfying and delicious warm from the oven; and the aroma of bread fills the house. A corn bread with tomato soup for supper is a nurturing meal good for vegans. "Popovers are fast and simple, a middle American 50s treat, but you do need a hot oven and 45 minutes. Also easy to make: sweet breads- carrot, banana, zucchini-and biscuits. "To reduce the fat in denser quickbreads and cakes, use applesauce. It gives body and moistness. "The number of wheat-sensitive people is rising dramatically. A theory I think makes sense is that in the last 30 years the varieties of wheat grown has been reduced to 1 or 2 that are more easily cultivated and harvested with the machinery available. People are overloaded with one type of wheat. "Gluten is the offending substance in wheat and some oats; try rice, tapioca and potato flours, which are denser and more fine and don't produce a good crust. Improve the crust by baking in a preheated cast iron skillet. "Also investigate chickpea flour. You don't make a loaf of bread with it- use it for flatbreads like papadam, which is in Indian cookbooks. And it's good for batter for vegetables. "Spelt is the closest to wheat flour in consistency but some people can be sensitive to it. "Visit a natural food store to check out the flours. The mills sometimes print handouts with recipes and a lot of those are real good, especially for what works with their flour. Or you may run into a baker who will whet your appetite with ideas and recipes. "Bread is the supreme comfort food. It can speak to us, and reassure us. The magic of bread and how it varies: There's something appealing in that. In today's world, food is predictable, and that's reassuring to some people. At Moosewood, things are always different, and that's good." Claire Criscuolo puts an intensely personal spin on the eclectically ethnic style of cooking at her esteemed vegetarian restaurant, Claire's Corner Copia. That 25-year-old institution in New Haven, Connecticut, reflects her zest for the freshest ingredients, robust flavors and inspired combinations. Claire, a teacher and advocate for healthful cuisine, pours her passion into her breadmaking as well: "Healthy bread is like anything else-it has healthy ingredients. We use the best organic unbleached flour and yeast, pure vanilla, whole eggs (not dried and powdered), whole milk and organic sour cream. You want to use good, fresh ingredients. It's the essence of healthy cooking. "I tell my staff, 'Don't use your soup pot as a garbage pail. Bread is the same. If the ingredients aren't at their freshest for serving, then they aren't right for other uses in the kitchen. "Our bread is very important at Claire's. We make a country white and a honey wheat in a pinwheel loaf-400 a day-and challah for the morning French toast with sauteed bananas or as buns for veggie burgers. "It's not practical to bake bread every day. We let our bread rise several times, punching it down again and again. For the home cook, it's time consuming. Even I'm happy to buy a good loaf of bread. "But anybody can bake bread. Combine flour, water and yeast and watch it grow! It's delights all your senses. And it a gratifies and satisfies. I was kneading it all by hand until we got up to 12 loaves a day. "I love a good oatmeal molasses bread; a whole wheat bread with walnuts, rosemary and finely chopped sweet onion sauteed in olive oil for a roasted vegetable sandwich; or an anadama bread with split pea soup. "Bread is part of a meal. It requires time and effort, but I can't think of many things worthwhile that don't."

A Seaweed Beauty Routine Incorporating the benefits of seaweed into your beauty routine is easy. You can "purchase dehydrated seaweed at a natural food store to make your bath a mini-ocean," says Janice Cox, author of Natural Beauty at Home (Henry Holt & Co). "Fill the tub to the point that you're covered when you lie down," says Dr. Page. "The idea is to make your body sweat, to open your pores, release toxins and take in the sea nutrient benefits by osmosis. Boost the effect with a few drops of aromatherapy bath oils like rosemary and lavender. It'll help hold the heat in and improve your cleansing program." "Seaweed and seaweed mud, especially, stimulate the cells to improve cellular activity and increase the efficiency of lymphatic fluid, which helps break down toxic deposits that can result in cellulite. It's great for an all-over exfoliation, and leaves the skin smooth and refreshed." "Sea salt has wonderful drawing properties, promoting the removal of toxins from the skin," says Galvez, author of Ooh La La Effortless Beauty (MQ Publications). "It's high in mineral content and nourishes the body." Sea salt also "guards against moisture loss, so it's ideal for dry skin and helps prevent aging," says Mok. In addition, it can be used to treat acne, eczema and psoriasis. Often done before a massage in spas, a "salt glow," which uses a vigorous scrub of coarse sea salts mixed with essential oils, rejuvenates and revitalizes the skin. "When bathing with Dead Sea salt you don't even need to use soap because the minerals remove redundant fat and dirt," says Mok. "Galvez adds, "Dead Sea mud mineral and vitamin content is very close to that of humans, and therefore treatments using the mud penetrate deeply." Ah! Home Spa It's easy to turn your bathroom into an oasis of calm and create a private spa to call your own. For a sea cure bath, mix together half a pound of sea salt and a pound of baking SODA, add to a warm water bath and soak until the water has cooled, says Mok. "It's excellent for soothing itchy and dry skin and helps detoxify by pulling out toxic waste from the pores." Aromatherapy oils, like lavender, make your soak in the tub even more relaxing and luxurious. "It's a great way to de-stress after a long day at work." A seaweed wrap can release water retention and leave legs looking their sleekest, notes Mok. "Just soak legs in a bath of warm water and Epsom salts for 5 minutes, then pat dry. Apply a seaweed mask and wrap legs with plastic wrap and a warm towel. Relax for 15 minutes. Remove towel and plastic wrap and rinse." You can also try a sea salt rub by mixing two cups of kosher salt with one cup of olive oil until it forms a thick paste. (Be careful: the oil is slippery.) "While in the tub or shower, massage it into your skin using long strokes toward the heart, starting with your feet," says Galvez. Rinse off with warm water, use a soft washcloth to remove any residue, pat dry and apply moisturizer. "Your skin will be silky smooth and wonderfully hydrated." To create a spa environment at home, details make all the difference. "Think of your favorite beach get-a-way and go with an ocean theme," says Cox. "Include something for each of the senses." For example, put on a CD that has nature sounds. To capture the color of the water, use sea-colored towels. For scent, light candles that produce the scents of flowering plants (such as plumeria or citrus). Add "ocean" fragrance beads. When taking a bath, "use shells to scoop out sea salts or dehydrated sea weed and put them around the tub as decoration," says Cox.
