Niacin

Xylitol is the 5-carbon sugar which is found within the birch tree sap and it's naturally found in the fibers of various vegetables and fruits. This is a sugar-alcohol sweetener commonly used as the sugar substitute.

History of xylitol

Although discovered in the 19th century during the Second World War, Xylitol has been recognized ever since the tardy 1800s. The researchers from Germany and France were the first individuals to try to produce this product approximately 100 years ago, but ended up creating syrup-like consistency mixture. This product became commercially available in the 1960s and the commercial process is still the same as it was during the 1960s.

Before 1943, the scientists' categorized this sugar with various sugary carbohydrates (polyols) and it lingered so till the beginning of the war-associated deficiency of sugar which initiated the call for an alternate sugar. This initiated further research in to the xylitols insulin-independent properties, this resulted in discovery of its other biological benefits. In 1962 this chemical was introduced in the infusion therapy demonstrating that it can be introduced to ill individuals.

The commercial production process involves extraction of Polysaccharides rich in Xylose from various agricultural by-products and hardwoods. These are hydrolyzed with various intense acidic treatments and then it is purified before hydrogenation is done. This process needs a lot of harsh chemicals and is quite expensive and inefficient.

It was until 1970 that the odontological benefit of xylitol was ascertained in Finland, Turku. The initial study of the effects of this sugar on the dental plaque began during the same year. This resulted in large scale production of xylitol, in 1974 by the Finnish sugar company. Sugar-free dental product was first launched in Finland which was a xylitol chewing-gum.

How xylitol works

This sugar can prevent cavity in various ways by actually blocking the tooth decaying process. The bacteria causing decay cannot ferment this sugar into acids as it does with other sugars including dextrose, fructose, glucose and sucrose. This results in production of less acidic by-product thus interfering with the dental plaque environment which favors decaying. This results in prevention of tooth demineralization.

The high pH condition caused by xylitol sugar is not favorable for the cariogenic bacteria which are responsible for decaying. This results in fewer bacteria in the plaques and long-term exposure has an effect on which type of bacteria will prevail within the plaque. This also inhibits the growth of specific xylitol-Sensitive bacteria strain. Since they cannot breakdown this sugar, they end up not reproducing and growing in population. The lack of fermentable sugars results in creation of anti-cavity effect.

The starvation effect created by this sugar prevents accumulation of cariogenic bacteria in the plaques. Long term xylitol exposure results in change of predominant cariogenic bacteria to xylitol-resistant strains from xylitol-Sensitive. This xylitol-Sensitive strain of bacteria cannot colonize the plaque since they have less adhering capabilities.

The less acidic condition in the dental plaque interface created by this sugar can initiate demineralization. Demineralization occurs when the plaque interface is at a pH of 5.5 or below since fewer bacteria live in the plaques. Studies have showed that demineralized tooth samples immersed in a solution containing 20% xylitol experienced a great remineralization degree. This is noted in the deep and middle tooth layers.

Sulfites are chemical compounds which occur naturally in several animal and plant products. These chemicals are sulfur - based which is commonly used as food enhancer or preservative. Sulfites can effectively prolong the shelf life of food and also prevent discoloration of food. Foods which may contain sulfite include baked products, canned goods, junk foods, vegetable juices, fruit juices, apple cider, some teas and other processed food items. Sulfite - containing ingredients may include sulfur dioxide, potassium bisulfite or potassium metabisulfite and sodium bisulfite, sodium metabisulfite, or sodium sulfite.

Allergic reaction to sulfite is not that rare. In fact, the Food and Drug Authority have established "1 out of 100 people" prevalence rate that is hyperSensitive to sulfite and its products. Any person may develop allergic reaction to sulfites any time of his/her life. Studies revealed that the cause of such hypersensitivity is still unknown. More studies are still ongoing. Initial results have stated that the allergic effects can be mild or life – threatening. In late 1980's, the FDA released a memorandum on prohibiting the use of sulfite on fruits and vegetables that are commonly eaten fresh and raw such as lettuce, apples, guavas and the like. Regulations are also released for manufacturers to put labels on sulfite – containing processed food items. Sulfites also occur naturally among wines and beers.

One theory revealed that sulfite allergic reaction may be caused by a significant insufficient amount of the enzyme necessary for the breakdown and elimination of such compound known as sulfite oxidase. This enzyme works hand in hand with the element molybdenum which acts as a cofactor. Nonetheless, asthma, nasal and sinus congestion, rhinitis, postnasal drip, headache and bronchospasm may also be experienced by the individual as an effect of sulfite consumption. In addition, vertigo may also be a manifestation of sulfite hypersensitivity.

Studies have found that the allergic reaction brought about by the compound sulfite can significantly lower blood pressure thus resulting to decreased cardiac output which can eventually lead to insufficient tissue perfusion. Thus, dizziness is experienced or even loss of consciousness. Vertigo or dizziness is a kind of feeling in which your surroundings seem to be moving around even though there is no actual movement. Not everyone has the same skin type, and if you have acne, then the treatment could be dependent on your skin type. Before discussing the different acne treatments available, therefore, it will be necessary to discuss the various skin types.

Skin types are graded in a number of ways, anything from 3 types to several. Here we shall discuss more than the normal three (oily, dry and normal) but instead look at seven.

1. Normal Skin

Normal skin looks evenly colored and textured, firm and smooth without larger pores. People with normal skin probably had mild acne when at high school, but cleared up fairly quickly during the teenage years without specialized treatment or scarring. Acne in this type of skin normally requires only mild topical treatment and a mild antibiotic face wash to keep the pores clean of dead skin cells.

Treatments designed to reduce sebum production could result in dry skin susceptible to environmental damage. What must be kept in mind is that the prime cause of acne is excessive production of skin oil, correctly known as sebum, becoming mixed with shed skin cells within the sebaceous pores and plugging them. When this plug gets infected with bacteria, the immune system leaps into action to produce puss through leucocytes attacking the bacteria, and inflammation designed to create temperature conditions alien to bacteria.

If you use treatments formulated to reduce sebum production in oily skin, then you might lose the natural skin oil needed to keep your skin waterproof and resistant to the pollution and chemical agents that can cause dermatitis.

2. Dry Skin

If you got through adolescence with few or no skin problems, and you have dry hair and your skin feels dry after washing, then you have dry skin. It is even more important with dry skin that you do not use sebum-reducing treatments, if you even get acne at all. Only the mildest acne treatments should be used if you have dry skin, thought is unlikely that you will get anything other the very mildest case if you really have dry skin.

Your skin can dry through age, so to be of a dry skin type, you should have suffered, or be suffering, these problems while you are 35 years old or under. After that age your skin tends to dry out naturally.

3. Oily Skin

This completes the trilogy of the classic skin types. Oily skin is associated with acne, and if your hair is oily, you tend to tan very easily rather than go red in the sun, and if oily make-ups, such as some foundations, tend to last only a short time, then you likely have oily skin.

You will also have suffered from acne as a teenager, and your skin will have a particular 'look'. It will often appear shiny, and will also seem to have a coarse texture with larger pores than most others seem to have. You will tend to get a lot of blackheads, not only as a teenager.

Oily skin is classically associated with acne, and it is for those with that skin type that classic treatments will be prescribed, such as antibiotics and Accutane.

Apart from these three skin types, there are others that have been defined involving a combination of these and also age.

Sensitive Skin

Sensitive skin is associated with broken blood vessels beneath the surface of the skin, and such skin types should be treated very carefully. If creams or lotions are applied to Sensitive skin they should be rubbed in very gently as it could cause bruising.

Sensitive skin is no more susceptible to acne than most other skin types although significantly less so than oily skin. For that reason, treatments for Sensitive skin should be similar to that for dry skin or in most cases normal skin.

Combination skin

Combination skin has an oily zone across the forehead, and down the nose and chin, the other areas of the face being normal or dry. Such skin can also be oily along the jaw line and normal to dry everywhere else. In such cases aggressive acne treatment might be necessary in the oily zones, and more mild treatments used in the areas which are normal.

There are three other classes or skin type based upon age or condition, one being mature skin and other ailing skin and the final type, surprise, surprise, being known as acne skin. Ailing skin is caused by skin conditions other than acne, and you should get the advice of a dermatologist if you believe you have this type of skin. Mature skin on the other hand is natural and occurs with age: the skin becomes slack and loose due to a slowing down of cell growth which causes the skin to lose elasticity. There is no cure for this type of skin other than cosmetic surgery, and it is rarely affected by acne.

Acne Skin

Acne skin is normally oily and associated with blackheads, pimples and spots. It is not normally applied to serious acne conditions, being mostly associated with skin which is generally 'spotty', as opposed to mostly clear. It is debatable whether acne skin is any different from oily skin which also tends to be covered with spots and pimples, and the treatments for acne skin are no different to those for oily skin: these are Accutane, antibiotics and topical treatments such as face washes and scrubs.

If you have acne skin you must be careful about the type of cosmetics and face cleansers you use, since either could aggravate your condition. This is not restricted only to those with oily skins of course, since everyone should be aware of the effect of cosmetics and face cleansers on their skin but it is more significant with those who suffer from acne. Cosmetics cannot cause acne, but they can help to aggravate infections which have already occurred.

Although most focus is placed on those with oily skins which are more susceptible to acne, people with any type of skin should consider carefully the types of cosmetic and cleansers which they use. Contrary to what you may have heard or read, acne has nothing to do with your diet - eating fatty foods or chocolates do not cause acne, which is caused only through production of excess sebum, or skin oil, by the sebaceous glands.

Irrespective of your skin type your physician will determine the best treatment that is appropriate for your particular case of acne. This may be different for individuals and may or may not change according to skin type. Antiseptic face washes or scrubs may be appropriate for some acne cases, Accutane might be the best treatment for others, while a course of internal antibiotics such as tetracyclines may be deemed appropriate for yet other cases.

Treating acne has three distinct phases:

1. Removal of the blackheads and lesions. The removal of lesions can also involve a degree of scar removal, although that is another topic. Black heads, whiteheads and other papules can be treated by the use of facial cleansers and scrubs. They should not be squeezed since the puss inside them could be forced deeper into the skin and so lead to a more generalized infection.

2. Treatment of the bacterial infection. The typical symptoms of acne, the papules, whiteheads and blackheads, are caused by bacterial infection of the plug of sebum and dead skin cells within the sebaceous follicles. The general treatment for such infections is antibiotics, both topically and internally. Tetracycline has already been mentioned as a common internal antibiotic, and several forms of antibiotics are used in facial scrubs of which peroxides and benzoates may perhaps be rather severe for dry and Sensitive skins.

3. The third phase is treatment of the causes of excessive sebum production. This is generally not entirely treatable since it is predominantly due to excessive hormonal activity at certain times of your life such as puberty, menstruation, pregnancy and menopause. However, your physician may offer treatments such as the contraceptive pill which should be used with care.

Other treatments include agents that aid desquamation, so preventing the irregular shedding of skin cells that lead to the mixture of sebum and dead skin cells that form the plug that is so easily affected by bacterial infection.

Together these three stages of acne treatment can, if not prevent the condition, certainly reduce its extent and have less of an effect on your skin, particularly if you are the off the oily skin type. Doctors will take your skin type into consideration when determining the best acne treatment for you, although all generally this will only be with respect to topical treatments: treatments that are applied to the surface of your skin.

There are also a number of herbal treatments which are used in the treatment of various stages of acne, and many sufferers find these equally as effective as the more traditional forms of topical applications as prescribed by physicians. It is also an essential amino acid, since it cannot be manufactured by your body and hence must be taken as a supplement or as part of your diet. Foods rich in leucine include nuts, whole wheat products such as wholemeal bread, and brown rice. It is a hydrophobic amino acid, meaning that it does not like water.

It is also one of three essential branched chain amino acids, the other two being L-valine and L-isoleucine, and offers many benefits to athletic performance that shall be discussed below It also helps to preserve the body's stores of glycogen, used as an emergency energy source. Other than these properties, it possesses others, such as the maintenance of the nitrogen balance in the body.

So how does it work to fuel your body while you are exercising? The answer is not as you might think. L-leucine doesn't increase your energy levels as creatine does when it elevates your ATP (adenosine triphosphate) levels. ATP is the molecule of energy that is synthesized in your body cells, and is then converted back to ADP, the diphosphate, with the release of energy in the form of muscular contractions.

This amino acid is what is referred to as a 'limiting' substance, in that the other amino acids cannot do their jobs in your body unless you have sufficient L-leucine in proportion to them. Specifically, you need two parts of L-valine and two parts of L-leucine to one part of L-isoleucine for optimum usage of the food that you eat.

Therefore you cannot just take the supplement without considering how much should be taken to ensure this balance. Excess will be wasted and a deficiency would fail to make proper use of the protein content of your food.

If you suffer from a deficiency, therefore, your body cannot make best use of the protein in your diet to the extent that muscle tissue will not be generated during exercise. In fact it causes catabolism, or the breakdown of muscle tissue, resulting in a loss of performance and possible increase in fatty tissue as opposed to lean muscle. The only way to build muscle is take in sufficient nitrogen in the form of amino acids and protein, along with L-leucine to put that protein to best use.

One of the major properties of L-leucine is in stimulating the synthesis of skeletal muscle tissue and by using a supplement, the protein balance can be positive after a workout. It has been shown that this protein balance is generally negative until specifically L-leucine is consumed.

The way it works is to activate a muscle-generating pathway known as mTOR (mammalian Target of Rapamycin). mTOR is normally activated when the levels of ATP in the muscle cells is high, and when these levels drop then mTOR is deactivated. The activity of mTOR is Sensitive to the concentration of L-leucine, and when the concentration of the amino acid in the body rises it informs mTOR that the protein in the diet is sufficient to manufacture skeletal muscle tissue, and so mTOR s activated.

Exactly how this is done is unknown, but is a fact the mTOR depends upon both L-leucine concentration and also ATP levels. This amino acid also decreases catabolism through a number of different mechanisms, one of which involves increasing insulin levels.

In fact, when insulin and L-leucine levels increase at the same time, there is a synergy that promotes the synthesis of new protein. Not only that, but the response of insulin to the presence of carbohydrates is enhanced, this resulting in an enhancement of your body's metabolism.

The amino acid can also be used to help those suffering from kidney and liver problems because it increases liver protein synthesis. It is therefore a useful adjunct both to diabetics and those suffering from liver and kidney disease.

However, because L-leucine is an essential amino acid with so many important properties, a deficiency can have specific consequences. Catabolism has been stated earlier as one such reaction to a deficiency, and others include decreased energy levels and irregularities in the levels of blood sugar.

Everything about this substance is not good however, and when taken by itself in excess, it can reduce the amount of the other amino acids in the blood, particularly of the other two branched chain amino acids (BCAAs). This in turn upsets the balance of amino acids, and reduces further the ability of the body to produce muscle tissue until a balanced supplement is taken.

L-citrulline is an alpha-amino acid, first isolated from the watermelon in 1930: hence the name, citrullis being Latin for that fruit, the skin of which is rich in the substance. It is used to enhance performance in sports, particularly through aiding recovery after exercise, and also helps the liver to detoxify the blood.

It is not an essential amino acid in that it is produced by the body and need not be part of your diet. It is a precursor to arginine, which involves the sustained release of nitric oxide in the endothelium that promotes increased flow of blood and the blood vessels as described further below. One of the biochemical pathways for its biosynthesis involves the urea cycle, whereby the toxic ammonia is detoxified into an easily excreted form through its conversion to urea.

The urea cycle consists of five reactions, and citrulline is formed in the second of these. In the first of these, ammonia reacts with bicarbonate to form carbamoyl phosphate, the phosphate coming from the two molecule of ATP used to energize the reaction. These are converted to adenosine diphosphate (ADP), and the carbamoyl phosphate then reacts with ornithine to form citrulline, which takes part in step three that eventually leads to the formation of urea.

The second way in which L-citrulline can be biosynthesized is from the oxidation of arginine, a natural amino acid. Arginine is oxidized into N-hydroxyarginine, and then into L-citrulline with the release of nitric oxide.

So that's how it is produced in the body, but how does it help sportsmen, and what part does it play in detoxification? Its effect on recovery after exercise is connected with blood flow. Energy is created in the mitochondria that are contained in every cell off the body. Among the raw materials needed for the production of energy are glucose and oxygen: glucose obtained from the carbohydrates in your diet, and oxygen transported by the hemoglobin or red blood cells.

Both of these rely on blood flow: greater the volume of blood transported to the cells then the greater the ability of these cells to produce energy. During periods of exercise, a good supply of blood is required to provide the raw materials needed for the energy demand of the muscles involved in the exercise. Not only that however, but recovery after exercise involves the replacement of electrolytes, the glycogen used in extensive aerobic and anaerobic exercise and protein replacement, particularly where catabolism has occurred.

In order to supply these raw materials at an adequate rate, it is necessary for the flow of blood to the appropriate muscles to be sufficient. A major restriction to increase blood flow is elasticity of the blood vessels and cells. Although a healthy heart is capable of providing the necessary quantities of blood, and hence of nutrients, any restriction to the flow could cause dangerously high blood pressure.

Nitric oxide plays a signaling role in enlarging blood vessels to allow an increased blood flow when it is needed by the body. It can provide more blood to the stomach during digestion and to the muscles during exercise and recovery.

During hard exercise, nitric oxide can act as a pump that provides blood during exercise and also during recovery. It can therefore provide more rapid gains in lean mass, increased endurance and faster muscle recovery. The way it does this is to send a signal to the smooth muscles to relax; smooth muscles such as those found in veins and arteries, so resulting in vasodilation therefore allowing increased blood flow.

It is the endothelium, the inner lining of blood vessels, which uses the nitric oxide to provide the relaxation signal to the smooth muscles surrounding it. In fact, it is the effect of nitric oxide that enables those living at high altitudes to develop increased stamina and speed over those at lower altitudes, and find more world records seem to be broken during athletics meetings, such as Olympic Games, held at high altitudes. This is because the production of nitric acid is increased at higher altitudes with slightly lower oxygen levels. This is the same effect that is used by vasodilators such as amyl nitrite and Viagra that work by increasing nitric oxide levels in the smooth muscle wall of the blood vessels.

It should not be surprising therefore, that L-citrulline should work in a similar way, since it is intimately involved in the production of nitric oxide. Although this is now generally understood, what part does supplemental citrulline play in the body if it is a non-essential amino acid?

Supplemental L-citrulline is useful in supporting the detoxification of ammonia in the liver when supplies of ornithine carbamoyl transferase is naturally in short supply. This is the enzyme that catalyzes the reaction between ornithine and carbamoyl phosphate to form citrulline. Hay fever, which is an allergy to proteins in the pollen of trees, grasses, some plants, or mold, affects the mucous membranes of the nose, eyes, and air passages. Symptoms of hay fever include itchy, red eyes; watery discharge from the nose and eyes; sneezing; fatigue; and nervous irritability. Many of the symptoms of hay fever can be confused with those symptoms of the common cold. The non-essential amino acid glycine is needed to generate muscle tissue and also for the conversion of blood glucose into energy. It is referred to as being ‘non-essential’ because the body can manufacture its own glycine, and is therefore not an essential component of your diet. Other uses to which glycine is put by the body includes the maintenance of a healthy nervous system, and is necessary for the proper functioning of the digestive system.

Amino acids play three essential roles in the human body:

1. They are the building blocks of proteins: proteins comprise about half of the dry weight of the majority of your body cells, and without them there would be no life. They are produced using monomers known as amino acids, and there are about 20 different amino acids used to make the vast variety of proteins that make up the human body. Proteins are needed to form enzymes, the catalysts that permit the majority of chemical reactions within our bodies, and also genes, the building blocks of DNA.

2. More relevant here, amino acids play an important role in the production of ATP (adenosine triphosphate) from ADP (adenosine diphosphate) by phosphorylation with creatine phosphate. The more creatine phosphate available, the more ATP can be produced. Since ATP is the molecule responsible for the generation of energy, then the more ATP available the more energy is generated. Although creatine is available from many food sources, it is destroyed by cooking, and over half of what you use is made from the three amino acids, glycine, arginine and methionine. The energy produced in this way is very short-lived, and last only a few seconds - more on that later.

3. Glycine is heavily involved in the production of collagen, which is the substance that maintains the flexibility of your skin and other connective tissues while still maintaining their strength and firmness. Without glycine your skin would become slack due to the degrading effect of sunlight, free radicals and oxidation.

The non essential amino acid, glycine, is believed to offer other benefits to the human body, but it is the second of those above, the production of ATP, which interests us here. ATP is an extremely important nanomolecule, second in importance to the body only to DNA, and possibly also RNA since the two are linked. RNA makes copies of your DNA structure for use in cell division and growth.

When a cell expends energy for whatever reason, such as when I am typing this, or when your heart beats, or even when your liver synthesizes a protein, one of the phosphate groups is removed from the adenosine triphosphate molecule, and converts it to adenosine diphosphate (ADP). The ATP is then said to be 'spent', just as your energy is spent when you are tired and can exercise no more.

The ADP is then immediately reconverted to ATP in the mitochondria, a part of every cell in your body. A cell can contain hundreds, or even thousands, of mitochondria, the number depending upon that particular cell's need for energy. Hence, cells in your muscles, or in your liver where most of the body's chemistry takes place, contain thousands of mitochondria whereas those in your scalp contain a lot less. Once changed to ATP, a phosphate is again lost when energy is expended, and so the cycle continues.

Glucose is needed allow the ADP to be converted to ATP, hence the need for sugars, or the carbohydrates from which they are manufactured in your body. Each cell can contain up to a billion molecules of ATP, although the couch potatoes among you probably have a lot less! Your store of ATP molecules last about 2 to 5 seconds before being changed to ADP although more rapidly for athletes that expend a lot of energy. Then the energy stored in the form of glycogen in the liver kicks in for another 4 - 6 seconds.

Additionally, you cannot expend more energy that the (eventual) sugars that you take in your diet, which can be in the form of ordinary 'sugar' (sucrose), fruit (fructose), glucose, carbohydrates that are metabolized into sugars, or any other member of the sugar family (e.g. lactose, maltose, etc.).

Glycine is one of what are called glucogenic amino acids, which refers to their ability to provide glucose to the blood. Because it helps to maintain proper blood glucose levels, it is often prescribed for conditions that are caused by low glucose levels, such as hypoglycemia that shows symptoms of fatigue and tiredness, and also anemia and what is known as CFS (chronic fatigue syndrome).

The one activity of the human body, in fact that of any mammal, for which ATP is essential, is the heartbeat. Without that no mammal could survive, or any other creature that relies on a circulation system for life. The only reason you heart has to beat is to pump your blood around your body, and it is your blood that contains the oxygen and nutrients needed to sustain life. Your cardiovascular health relies on lots of ATP being available to power each and every heartbeat.

Analysis of the heart during the final stages of heart failure has revealed that there is a general decrease in the myocardial arginine: glycine amidinotraferase (AGAT) gene expression, which is indicative of the necessity of this enzyme for proper heart function. The enzyme is responsible for the first stage in the biosynthesis of creatine from glycine.

Creatine is well known to athletes, and while it is available naturally from some food sources, it can be destroyed during cooking, and at least 50% of the creatine needed by the body is produced in the liver, pancreas and kidneys. It is creatine phosphate that is broken down into creatine and phosphate, the latter of which is used by the mitochondria to regenerate ATP from ADP.

The study carried out on the reduced AGAT levels found in heart failure patients indicates the importance of glycine to heart health. Without a good supply of glycine, there will insufficient creatine produced biochemically to generate the phosphate needed to for the ATP to produce the energy required to keep the heart pumping with the required strength. The energy provided by the mitochondria is used locally by the cells in which it is produced, and within a few seconds of that production. As explained earlier, ATP stores are used up within 2 - 5 seconds, and glycogen stores within another 4 - 6 seconds.

That is why sprinters cannot keep running at maximum speed for more than around 10 seconds or so, because the immediate availability of glycine, and hence creatine, are insufficient to last longer than that. That is one reason why they have to finish those 100 meters as fast as possible, because otherwise they would run out of energy. Other than trying to win, of course!

However, when it comes to the heart, ATP stores are essential, and the cells in your heart require a constant supply of ATP from creatine, which itself depends upon your intake or biosynthesis of glycine. Since dietary sources are insufficient to meet all your needs, and destroyed by cooking, a glycine supplement is the only way to ensure a sufficient intake. You cannot undernourish your heart and remain healthy.

ATP biosynthesis is essential if that of glycine theoretically is not, but the fact that 50% of your glycine requirement has to be produced by your body and the other 50% is Sensitive to heat during cooking, a supplement of glycine could be essential to many people.

Acidophilus is correctly named Lactobacillus acidophilus, and is one species of Lacobacillus used commercially in the preparation of certain types of yoghurt. The name refers to the fact it is found in milk (lacto), is rod-like in shape like many bacteria (bacillus) and it likes acidic conditions (acidophilus). It not only likes them, but creates them.

In fact, acidophilus thrives at a pH of 4-5 or less, and occurs naturally in the gastrointestinal tract of humans and animals, and also the mouth and vagina. It ferments milk to lactic acid, and dies in the presence of sunlight, excessive moisture and at high temperatures. Some, but not all, strains are probiotic, or ‘friendly’ bacteria that aid digestion and help to protect against harmful bacteria and their toxic emissions.

The fermentation of nutrients by friendly bacteria produce acids, such as the lactic acid previously referred to, hydrogen peroxide and other substances hostile to harmful organisms, and also reduces the population of harmful bacteria by competing for their food. There are additional health benefits that shall be discussed later, but first some comments about the stability of acidophilus to heat.

The growth rate of acidophilus reaches an optimum at around 36-37F (2.2C), and it tends to die off at temperatures much above this over a period of time. It also tends to be Sensitive to oxygen and moisture, and if exposed to heat, moisture and oxygen, a supplement will lose its potency over time. This is true of all such supplements, and after purchase must be quickly refrigerated. It is possible, however, to purchase stabilized forms of acidophilus that die off slower than normal. This extra resistance is built in during the manufacturing process, and many forms of acidophilus claim to be stable. Although there will never be a truly stable form of the probiotic, these stabilized versions do last longer than those not claimed to be so.

During manufacture, the bacteria are first concentrated by removing the excess liquid by means of sedimentation, ultra-filtration, reverse osmosis and centrifuging. A substance is then added to protect the bacteria from the shock of freezing and the acidophilus freeze dried. A stabilizer is then added to maintain its properties between freezing and consumption.

It has also been found that bacteria grown at higher pH levels last longer than those at lower pH. The packaging is also important, and since the bacteria are Sensitive to oxygen, nitrogen flushing the bottles will improve the stability of the product. Glass bottles are less porous than plastic, and so is the preferred packaging material for maximum stability and life. Another factor is refrigeration. If you keep the bottle in the fridge it was last a lot longer than at room temperature, but take care not to freeze it since acidophilus does not freeze well. If it is not refrigerated then it will quickly lose its potency.

The form in which you take the supplement is immaterial regarding the potency: at least initially. However, through time the powder will become less potent quicker, because it will adsorb oxygen and moisture. Otherwise the form in which it used is immaterial. So, yes, acidophilus can be stabilized, but only for a while, and if allowed to warm up to room temperature in the presence of oxygen will quickly degrade, although this takes more than just a day or two.

Many health benefits are claimed for Lactobacillus acidophilus, although your daily consumption to achieve these should be at least 2 billion CFU, and preferably 5 billion. You can also fortify the bacteria with a prebiotic of fructooligosaccharides (FOS). These provide nutrition for the acidophilus and accelerate its growth.

One thing to be careful of is assuming that yoghurt contains acidophilus. It does not contain sufficient to be of benefit to you. Commercial yoghurt acidifies over time and kills off the bacteria, so commercial yoghurt sitting on a supermarket shelf has very little beneficial bacterial content. Natural yoghurt is better, and certainly contains beneficial bacteria, but not enough to make a significant difference. A supplement is therefore needed if you are to keep your intestinal tract sufficiently healthy. If you cannot take dairy products, acidophilus is available in non-dairy form. The major health benefits they impart are:

1. Digestive Problems.

Acidophilus can control many types of digestive disorder, particularly traveler’s diarrhea. In fact if you are traveling to countries where drinking water might be a problem, also take some acidophilus and this will tend to prevent you from becoming ill. Even if you drink bottled water, there are still washed salads, beverages made with local water and showers and the like whereby you could ingest some dodgy water.

2. Constipation

3. Yeast Infections (Candidiasis)

Acidophilus possess antifungal properties that kill off yeasts, particularly Candida albicans found in the vagina. This is due to the lactic acid produced by the bacteria, and there is evidence that gastrointestinal yeasts are affected in the same way by the oral probiotic. Furthermore, when bacteria and yeasts are killed off by medication, including friendly bacteria, the sites they occupied on the intestinal walls become free and acidophilus should be present to take these up and prevent any more yeast or bacterial infections. Studies have found that D-glucarate has therapeutic actions; among these are cancer prevention and serum cholesterol reduction.
